Summary Several clones from a potato breeding programme at the Scottish Crop Research Institute (SCRI) produced acceptable (pale) coloured fry products after five months' storage at 4°C. Chemical analysis of tuber samples taken at five-week intervals during storage at 4°C and 10°C gave a substantial variation in glucose, fructose and sucrose concentrations among the 22 clones examined. Several unnamed SCRI clones showed little accumulation of reducing sugars when stored at 4°C. In marked contrast, the cultivars Record and Pentland Dell, currently the most widely used cultivars for fry processing in the UK, accumulated far greater levels of sugar during low temperature storage. Glucose concentration proved more important than fructose concentration in determining fry colour. Clones with the lowest concentrations of glucose after storage at 4°C also showed lowest concentrations when stored at 10°C. These results are in agreement with previous reports on the predictive value of glucose levels at harvest, but this is the first identification of such low temperature, low sweetening variants in agronomically adapted clones of the cultivated tetraploid potato.  相似文献

Summary Three crisping potato cultivars, Record, Saturna and Hermes, were stored at 5 or 10°C in gas mixtures of either 0.5% CO2 and 21.0% O2 (control) or 9.4, 6.4, 3.6 or 0.4% CO2 all combined with 3.6% O2. There was almost complete sprout inhibition, low weight loss and maintenance of a healthy skin for all cultivars stored in 9.4% CO2 with 3.6% O2 at 5°C for 25 weeks. When tubers from this treatment were stored for a further 20 weeks in air at 5°C the skin remained healthy and they did not sprout. The fry colour of crisps made from these potatoes was darker than the industry standard but when they were reconditioned, tubers of cv. Saturna produced crisps of an acceptable fry colour while crisps from the other two cultivars remained too dark. Reducing sugar levels were related to fry colour both after storage and after reconditioning. The other gas combinations and the controls did not have the same effect on sprouting and none of the controlled atmosphere treatments controlled sprouting at 10°C.  相似文献

Summary Low temperature sweetening is a major problem to chip and crisp manufacturers as it results in the production of unacceptably dark fry products. Cryo-electron microscopy was used to examine the changes which occur to the surface morphology of starch granules from tubers of cultivars Record and Brodick stored at 4°C and 10°C. At harvest, the surface of the starch granules was smooth but during storage the surface of the granules became progressívely more pitted. The feasibility of using this technique to determine whether increased starch breakdown occurs at low storage temperatures is discussed. Deceased.  相似文献

The affirmation of acrylamide as a probable carcinogen by the European Food Safety Authority has reinforced the need to lower acrylamide content in fried potato products. Selected for low reducing sugars and acrylamide-forming potential, recently released cultivars ‘Alpine Russet’, ‘Dakota Trailblazer’, and ‘Ivory Crisp’ were evaluated for their processing quality when grown with varying nitrogen (N) fertilizer regimes. The objective of this study was to determine the effects of N fertilizer rate (34, 135, 202, 269 and 336 kg ha?1) on tuber glucose and acrylamide concentration following processing of new cultivars relative to standard cultivars ‘Russet Burbank’ and ‘Snowden’ at harvest, and after 3, 6 and 9 months of storage at 7.2 °C over 2 years. Glucose and acrylamide responses to N rate were similar for chip cultivars, which linearly decreased in 2011, and quadratically increased then decreased in 2012 with increasing N rate. The N rate effect on French fry glucose concentration varied by cultivar and either decreased or did not respond to elevated N rate. Glucose and acrylamide concentrations of chip cultivars generally increased during storage, with a dramatic increase in ‘Snowden’ resulting from senescence sweetening after 9 months of storage. Environmental conditions significantly affected glucose and acrylamide responses of French fry cultivars to storage time. Glucose and acrylamide concentrations of all French fry cultivars generally increased during storage in 2011. In contrast, glucose concentrations of French fry cultivars were stable or increased, while acrylamide concentrations generally decreased during storage in 2012. The relationship between chip color and glucose concentration was significant, but differed by year. Glucose and acrylamide concentrations of French fry and chip cultivars were significantly correlated (R2?=?0.52 and 0.66, in 2011 and 2012, respectively). Generally, acrylamide in fried potato products can be minimized by using low reducing sugar cultivars supplied with a N fertilizer rate that optimizes yield and quality during growing seasons with minimal environmental stress.  相似文献

Summary Tubers of the potato cultivars Record, Wilja, Pentland Dell and Brodick (formerly clone 137371) were sampled before and after storage at either 4°C or 10°C. Reducing sugar content stayed constant during storage at 10°C in all four cultivars but rose greatly during the first 6–12 weeks of storage at 4°C in Record, Wilja and Pentland Dell but not in Brodick. Amylolytic activity was determined after 5 weeks storage using blockedp-nitrophenyl maltoheptaoside as substrate for α-amylase,p-nitrophenyl maltopentaoside as substrate for β-amylase, andp-nitrophenylglucopyranoside as substrate for α-glucosidase. The values obtained from tubers stored at 4°C were higher than those from tubers stored at 10°C, the differences being much less in Brodick than in the other three cultivars.  相似文献

Most commercial potato processing cultivars rapidly accumulate reducing sugars at storage temperatures below 10 C, producing an unacceptably dark fried product. Development of cultivars with the ability to process with a light color out of 4 to 6 C storage is a major breeding objective worldwide. Low temperature storage reduces the need for chemical sprout inhibitors and pesticides used to control storage pathogens. The genetic control of the ability to fry out of cold storage temperature was studied in a diploid population and in tetraploid breeding populations of the Western Canadian Potato Breeding Program. Based on the segregation ratios observed in the study, a two-independent-loci genetic model is proposed with either homozygous recessive alleles or at least one dominant allele at both loci required to ensure acceptable fry color out of low temperature storage.  相似文献

Tubers of 11 clones ofSolanum tuberosum subsp.andigena (andigena) and 12 cultivars ofS. tuberosum subsp.tuberosum (tuberosum) were inoculated with water suspensions (5.5 × 104 5.5 × 105, 5.5 × 106 CFU/ml) ofErwinia chrysanthemi. Tubers were inoculated immediately after harvest and after 6 and 16 wk of storage at 4 and 23°C. Tuber rot incidence in andigena and tuberosum increased as inoculum concentration increased. Based on tuber rot severity, clones of andigena were classified as resistant, intermediate, or susceptible and cultivars of tuberosum were classified as intermediate or susceptible. Rot severity increased in all tubers stored at 4°C and in tubers of tuberosum stored at 23°C; rot did not increase in tubers of andigena stored at 23°C. Electrolyte leakage (EL), total sugars (TS), reducing sugars (RS), non-reducing sugars (NRS) and dry matter (DM) were determined in non-inoculated tubers. There was a significant positive correlation between the rate of EL, concentration of RS and tuber rot in andigena and tuberosum. Tuber rot and DM were negatively correlated in tubers of andigena; but they were not correlated in tuberosum. Clones of andigena with low EL, TS, RS, and high DM were resistant to tuber rot, and the incidence of tuber rot in these clones was much less influenced by temperature and length of storage. The influence of temperature and length of storage on susceptibility toE. chrysanthemi may be explained by increased cell membrane permeability; increased leakage of accumulated sugars in potatoes stored at 4°C could favor bacterial proliferation resulting in more disease.  相似文献

Summary Four experiments (three with four cultivars, one with twenty cultivars) investigated the effect of different storage temperature regimes on the duration of dormancy of seed potatoes harvested immature. Regimes included constant temperatures (18 and 28°C), hot pre-treatments (20 days at 28°C and subsequently 18°C) and cold pre-treatments (20 days at 2°C and subsequently 18°C). Compared with 18°C, storage at 28°C slightly prolonged dormancy of some cultivars with a genetically short dormancy and shortened dormancy by up to 45 days in cultivars with a long dormancy. Some tubers of one cultivar lost their ability to sprout after storage at 28°C for 90 days. A hot pre-treatment shortened dormancy by 2–3 weeks on average, for all cultivars examined. A cold pre-treatment shortened dormancy by 2 weeks on average in some cultivars with a short dormancy and in all cultivars with a long dormancy.  相似文献

Pomerelle Russet is an early maturing fresh potato variety, which produces moderately high early-season (95–110 days after planting) yields of long tubers with brown-russet skin. It is notable for its very attractive, smooth tubers and resistances to internal and external defects with a high percentage of U.S. No. 1 tubers. Fresh merit ratings for Pomerelle Russet in trials conducted in Idaho, Oregon and Washington were consistently higher than Russet Burbank and Russet Norkotah. Early harvest yields for Pomerelle Russet are generally comparable to Russet Norkotah with a higher percentage of U.S. No. 1 tubers. Compared to Russet Burbank and Russet Norkotah, Pomerelle Russet has greater resistance to Potato mop-top virus, soft rot, corky ringspot and tuber infections from late blight. It also has higher protein and vitamin C concentrations than Ranger Russet, Russet Burbank and Russet Norkotah, indicating that it can provide an enhanced level of dietary protein and vitamin C relative to these standard potato varieties. Pomerelle Russet has moderate specific gravity and good resistance to sugar ends. It also has moderately long dormancy, about 30 days shorter than Russet Burbank. Average post-harvest processing ratings for Pomerelle Russet were similar to Ranger Russet and greater than Russet Burbank. Pomerelle Russet also has maintained acceptable fry color for about 180–200 days in storage at 8.9 °C, indicating potential for processing out of mid-term storage, with improved fry color uniformity relative to industry standards. However, its primary use appears to be as a high quality, early fresh variety.  相似文献

Abscisic acid (ABA), sucrose, reducing sugars and proline contents were monitored over an eleven-month period in tubers of three potato cultivars that varied in tuber dormancy. ABA and proline levels increased after top pulling the haulms and were not affected by harvest date. Proline did not change in either a storage temperature or cultivar-specific manner. The highest concentrations of ABA were found in tubers stored at 2°C while the lowest concentrations occurred in tubers stored at 20°C. At 10°C, the end of tuber dormancy in the cultivars Kennebec and Nooksack (but not Sebago) coincided with the decline in ABA content. There was no evidence of a threshold concentration of ABA below which sprouting would occur. Tuber samples of 10 different cultivars were removed from 10°C and placed in 20°C storage (in darkness). Initial ABA concentrations (i.e., at the time of removal from 10°C storage) were positively correlated with duration of dormancy and negatively correlated with subsequent rates of sprout elongation at 20°C. Sucrose content was negatively correlated with duration of dormancy. Reducing sugars responded primarily to storage temperature and did not appear to be related to dormancy or sprouting.  相似文献

The processing of potatoes into chips is expanding in China. There is a need for new processing cultivars that are well-suited for the local ecological environment. Eleven potato varieties were bred from hybridization and backcrossing between the local cultivated potato varieties (Solanum tuberosum L.) and wild potato species. Lines from different wild species’ germplasms showed that the ability to accumulate reducing sugars was significantly different during low temperature storage (4 °C). A correlation analysis was conducted to determine the correlation coefficient among reducing sugars, acid invertase, free amino acids, chip colors and the content of acrylamide after storage at room and low temperatures. The lines 0706-116, 0737-6 and 0726-205 had low levels of reducing sugars, acrylamide content and acceptable chip colors for potato chip processing. The results indicated that the transfer of wild species’ processing traits into local cultivars by hybridization and continuous backcrossing is an effective potato breeding method and that the wild germplasm resources S. phureja and S. chacoense are suitable for improving the processing traits of local varieties.  相似文献

Ethylene is an effective potato (Solanum tuberosum L.) sprout inhibitor, but it often darkens fry colour. Trials were conducted over nine consecutive storage seasons to identify ethylene application methods which would mitigate darkening while retaining adequate sprout inhibition, using cv. Russet Burbank plus cvs Shepody, Asterix and Santana in some years. Tubers were stored for up to 35 weeks in closed chambers with ethylene gas delivered via the ventilation airstream. Exposure to continuous 4 μl l−1 ethylene after suberization and cooling were completed was designated the ethylene check. Alternative ethylene treatments included commencing exposure either before or after suberization was completed; gradually introducing the ethylene either by a concentration gradient of eight steps over 4 or 8 weeks or by increasing the duration of exposure from 6 to 24 h per day in four weekly steps; repeatedly interrupting exposure for several hours per day or for durations of 1 or more days; and warm storage. Selected ethylene treatment combinations were applied in each year, plus untreated controls, chlorpropham-treated (CIPC) checks and ethylene checks. Sprout growth, fry colour, loss of mass and disease incidence were evaluated at regular intervals. In all cultivars and all years, the ethylene check darkened fry colour more than the other treatments. Commencing before suberization ended, gradually introducing the ethylene by either concentration or time gradient and interrupting the exposure all reduced the negative effect of ethylene sprout inhibitor on fry colour. Continuous ethylene treatments inhibited sprout growth as effectively as CIPC, except at 13 °C storage. Interruptions of 18 h and 2 or more days reduced sprout inhibition. Regardless of cultivar variations, an early start using either a concentration or time-increment gradient had the least effect on fry colour while maintaining good sprout inhibition.  相似文献

Payette Russet is a full season, russet-skinned potato cultivar notable for its cold-sweetening resistance and associated low acrylamide formation, making it ideally suited for processing into French fries and other potato products. Low asparagine and reducing sugar concentrations in Payette Russet tubers contribute to an 81 % reduction in acrylamide content in French fries relative to cultivars Ranger Russet and Russet Burbank following eight months storage at 9 °C. In three years of evaluations in the Western Regional Potato Variety Trials, average yield of Payette Russet was intermediate between Ranger Russet and Russet Burbank, but Payette Russet had the highest U.S. No. 1 yield when averaged across all eight trial locations. Acceptably low tuber glucose concentrations (<0.10 % glucose FWB) were maintained in Payette Russet following up to nine months storage at temperatures as low as 5.6 °C with consistently acceptable French fry color scores obtained (USDA value ≤2.0). Reducing sugars are also maintained uniformly throughout Payette Russet tubers, resulting in a low incidence of sugar ends and reduced mottling in French fries relative to standard processing cultivars. Long tuber dormancy also benefits long-term storage for processing. With its russet skin, Payette Russet could also be used for fresh-pack, and its assemblage of disease resistances makes it especially suitable for organic production, or for use by growers and companies seeking greater sustainability in their production. Payette Russet is resistant to foliar and tuber late blight, common scab, and has extreme resistance to PVY conferred by the presence of the Rysto resistance gene. Payette Russet also has a moderate level of resistance to Verticillium wilt, early blight, and corky ringspot. It is susceptible to Fusarium dry rot (F. sambucinum), therefore production and storage management guidelines are provided to minimize tuber infection. Payette Russet displays a low incidence of second growth and growth cracks, especially relative to Russet Burbank, and is intermediate between Ranger Russet and Russet Burbank for incidence of hollow heart/brown center. Blackspot bruise expression for Payette Russet is similar to Russet Burbank and reduced relative to Ranger Russet. Payette Russet was more susceptible to shatter bruise, internal brown spot, and tuber weight loss in storage relative to the industry standard cultivars. Payette Russet was released in 2015 by the USDA-ARS and the Agricultural Experiment Stations of Idaho, Oregon, and Washington, and is a product of the Northwest (Tri-State) Potato Variety Development Program.  相似文献

The effect of low storage temperature (4 to 8 C) and maleic hydrazide (MH) treatment on sprouting, sucrose and reducing sugar (glucose and fructose) concentrations in tubers, and fry color-sugar relationships of Shepody were determined and compared to Russet Burbank. Sprouting of Shepody was delayed by 3 to 15 weeks when the temperature was lowered from 8 to 6 or 5 C, respectively. Shepody accumulated more sugars at all storage temperatures than Russet Burbank. The reducing sugars accumulated in Shepody at 5 and 6 C could be lowered to levels acceptable for processing for about 24 weeks after harvest by reconditioning at 18 C for at least two weeks. MH increased glucose in Shepody stored at 5 C compared to untreated tubers. Excessive sprouting (> 10 cm sprout length) of nonsprout inhibited Shepody occured late in storage with four weeks reconditioning. Although not statistically significant, MH tended to cause darker fry color per unit of reducing sugar in Shepody compared to tubers from untreated plants. Storage of Shepody tubers not treated with MH could be extended a few weeks by temperatures < 8 C only if there is precise control over temperature, sugars are closely monitored, and reconditioning is rapid to minimize sprouting.  相似文献

Seven named varieties and three numbered selections from the University of Maine potato breeding program were compared for chip color at various conditions and lengths of storage. Although all selections tested were equal to or better than Kennebec in chip color, only Allagash Russet equaled Monona. Storage at 45° F (7.2° C) produced acceptable chip color at all time periods tested. After long term storage at 45° F, reconditioning at 55° F(12.8° C) was ineffective in improving chip color. Following storage at 38° F (3.3° C) acceptable chip color could be produced only by reconditioning at 70° F (21.1° C) for at least two weeks.  相似文献

Cold-chipping cultivars could reduce microbial spoilage and chemical use due to cold storage of chipping potatoes. Sexual polyploidization breeding schemes that introgress cold chipping from diploid potato species may develop improved cultivars at an accelerated rate. The research objectives were (1) to determine the breeding behavior of cold chipping introgressed from 2× 2 Endosperm Balance Number (EBN) potato species into 4×(4EBN) progeny using sexual polyploidization, and (2) to determine if differences exist between 2n gametes and n tetrasomic gametes for transmission of cold chipping. Experimental families of 4×(4EBN) progeny were synthesized using sexual polyploidization (2× × 4× and 4× × 2×) and 4× × 4× matings using cold-chippingS. phureja and cultivated potato -wild species (C -W) hybrid parents. Control families from 4× × 4× matings using as parents current industry leading germplasm were also made. Progeny were field grown and evaluated for chip color (1 light-10 dark, ≤4.0 is industry acceptable) after 3 and 6 months storage at 4 C. A larger percentage of progeny from experimental families had acceptable chip color compared to control families, likely due to introgression of cold-chipping alleles from diploid potato species. Out of experimental families, the best chip color means, highest phenotypic variance, and greatest percentage of acceptable chipping progeny resulted in 2× × 4× and 4× × 2× matings. The ability of 2n gametes to transmit dominant alleles to high frequencies of 4× progeny may contribute to the superiority of 4× -2× crosses. Breeding schemes that use sexual polyploidization in conjunction with early generation selection should rapidly develop 4× cold-chipping germplasm.  相似文献

Summary After three weeks curing at 10°C, potato tubers cv. Record were stored at 4°C under different controlled atmospheres (CA) for six months to study the effect on crisp fry colour, sprout growth and rotting. Combinations of low levels of CO2 (0.7–1.8%) and low levels of O2 (2.1–3.9%) gave a significantly lighter crisp colour, low sprout growth and fewer rotted tubers compared with 0.9% CO2 and 21.0% O2. Tubers stored in these conditions. showed a significantly higher weight loss and shrinkage after reconditioning. High CO2: low O2 combinations during storage completely inhibited sprout growth and caused the darkest crisp colour, but after reconditioning tubers gave the same level of sprouting and crisps as light as the other CA combinations. Furthermore these combinations, especially CO2 at 10 or 15%, increased the onset of rotting. Also our results showed that at low concentrations of CO2 (0.7–1.6%), and low O2 (2–2.4%) there was an increase in tuber rotting.  相似文献

Two North Dakota breeding clones, ND860-2 and ND2221-6 accumulate very little reducing sugar in low temperature storage and will produce acceptably colored chips with little reconditioning. Progeny from diallel crosses of ND860-2, ND2221-6, Norchip and Kennebec were evaluated for reducing sugar and total sugar accumulation after 100 days of cold storage (3–4°C). Crosses of the North Dakota clones with Norchip or Kennebec produced families whose distributions were skewed towards the high parent with respect to reducing sugar values; about 2% had levels near the two low parents. Crosses between ND860-2 and ND2221-6 produced reciprocal families in which an average of 8% of the progeny had levels as low as these two parents.  相似文献

Summary Reducing sugar content, and activities of three starch hydrolysing enzymes, alpha-amylase, beta-amylase and debranching enzyme were measured over several months in tubers of five cultivars stored at 4°C or 10°C. Cultivars differed in their sensitivity to storage temperature. Reducing sugar content of tubers and the activities of three starch hydrolysing enzymes increased sharply during the first weeks of storage at 4°C. Rice fragrance, cooked rice elongation and amylose content are some of the traits used in determining rice grain quality. 2-acetyl-1-pyrroline (2-AP) is the major compound that is responsible for fragrance in rice.This experiment was conducted with two indica rice cultivars: Meixiangzhan 2 and Xiangyaxiangzhan. Three temperature-controlled chambers: High (32 °C from 06:00 to 17:59 and 26 °C from 18:00 to 05:59), medium (27 °C from 06:00 to 17:59 and 21 °C from 18:00 to 05:59) and low (22 °C from 06:00 to 17:59 and 16 °C from 18:00 to 05:59) were used for the study. At the onset of heading, both cultivars were transferred to the three temperature-controlled chambers. Our results showed that in both cultivars, low temperature growth had the highest 2-AP content, while high temperature growth recorded the lowest 2-AP content. Principal component analysis showed remarkable differences in the metabolomes of rice grown in high, medium and low regimes. In the grains of both cultivars, we observed significant reduction in 2-AP content after 6 and 9 months of storage, however; 2-AP retention differed greatly in both cultivars. We also reported that low temperature growth increased cooked rice elongation percentage and the biosynthesis of amylose in rice. In conclusion, our findings will provide more information to breeders working on the improvement of rice grain quality.  相似文献
