Phytosterols were quantified in nuts and seeds commonly consumed in the United States. Total lipid extracts were subjected to acid hydrolysis and then alkaline saponfication, and free sterols were analyzed as trimethylsilyl derivatives by capillary GC-FID and GC-MS. Delta5-Avenasterol was quantified after alkaline saponification plus direct analysis of the glucoside. Sesame seed and wheat germ had the highest total phytosterol content (400-413 mg/100 g) and Brazil nuts the lowest (95 mg/100 g). Of the products typically consumed as snack foods, pistachio and sunflower kernel were richest in phytosterols (270-289 mg/100 g). beta-Sitosterol, Delta5-avenasterol, and campesterol were predominant. Campestanol ranged from 1.0 to 12.7 mg/100 g. Only 13 mg/100 g beta-sitosterol was found in pumpkin seed kernel, although total sterol content was high (265 mg/100 g). Phytosterol concentrations were greater than reported in existing food composition databases, probably due to the inclusion of steryl glycosides, which represent a significant portion of total sterols in nuts and seeds.  相似文献

In this study, the in vitro low-density lipoprotein oxidation model was used to assess the relative antioxidant activity of the polyphenolic beverages tea, coffee, and cocoa on a cup-serving basis. The beverages were prepared as 0.7-2.5% soluble coffee and 1.5-3.5% cocoa; teas (green, black, or herbal) were prepared as one tea bag infused over 5 min in 220 mL of hot water. Under these standard cup serving conditions, the antioxidant activity as determined by the lag time was in the range of 292-948 min for coffee, 217-444 min for cocoa, 186-338 min for green tea, 67-277 min for black tea, and 6-78 min for herbal tea. Addition of milk did not alter the antioxidant activity. The influence of coffee bean source and degree of roasting was further investigated. Green coffee beans of Robusta coffee exhibited a 2-fold higher antioxidant activity than Arabica coffee, but after roasting this difference was no longer significant. In conclusion, these commonly consumed beverages have a significant antioxidant activity, the highest being soluble coffee on a cup-serving basis.  相似文献

Levels of total phenol, catechins, and caffeine in teas commonly consumed in the United Kingdom have been determined using reversed phase high-performance liquid chromatography. Tea bags or tea leaves were purchased from local supermarkets and extracted in boiling water for 5 min. The resulting data showed considerable variability in both total phenols [80.5-134.9 mg/g of dry matter (DM) in black teas and 87-106.2 mg/g of DM in green teas] and catechins (5.6-47.5, 51.5-84.3, and 8.5-13.9 mg/g of DM in black, green, and fruit teas, respectively); this was most probably a result of differing agronomic conditions, leaf age, and storage during and after transport, as well as the degree of fermentation. Caffeine contents of black teas (22-28 mg/g of DM) were significantly higher than in less fermented green teas (11-20 mg/g of DM). The relative concentration of the five major tea catechins ranked EGCG > ECG > EC > EGC > C. The estimated U.K. dietary intakes of total tea catechins, calculated on the basis of an average tea consumption of three cups of tea (200 mL cup, 1% tea leaves w/v), were 61.5, 92.7, and 405.5 mg/day from fruit teas, black teas, and green teas, respectively. The coefficients of variation were 19.4, 88.6, and 17.3%, respectively, indicating the wide variation in these intakes. The calculated caffeine intake ranged between 92 and 146 mg/day. In addition, many individuals will consume much larger quantities of tea, of various strengths (as determined by the brewing conditions employed). This broad spread of U.K. daily intakes further emphasizes the need for additional research to relate intake and effect in various population groups.  相似文献

1,2-Dicarbonyl compounds, formed from carbohydrates during thermal processing in the course of caramelization and Maillard reactions, are intensively discussed as precursors for advanced glycation endproducts in foods and in vivo. To obtain information about the uptake of individual compounds with commonly consumed foods, a comprehensive analysis of the content of 3-deoxyglucosone (3-DG), 3-deoxygalactosone (3-DGal), and methylglyoxal (MGO) together with 5-hydroxymethylfurfural (HMF) in 173 food items like bakery products, pasta, nonalcoholic and alcoholic beverages, sweet spreads, and condiments was performed. Following suitable cleanup procedures, 1,2-dicarbonyl compounds were quantitated after derivatization with o-phenylenediamine via RP-HPLC with UV detection. 3-DG proved to be the predominant 1,2-dicarbonyl compound with concentrations up to 410 mg/L in fruit juices, 2622 mg/L in balsamic vinegars, and 385 mg/kg in cookies, thus exceeding the corresponding concentrations of HMF. 3-DGal was found to be of relevance in many foods even in the absence of galactose. MGO was only of minor quantitative importance in all foods studied, except for manuka honey. Dietary intake was estimated to range between 20 and 160 mg/day for 3-DG and 5 and 20 mg/day for MGO, respectively.  相似文献

Both lipophilic and hydrophilic antioxidant capacities were determined using the oxygen radical absorbance capacity (ORAC(FL)) assay with fluorescein as the fluorescent probe and 2,2'-azobis(2-amidinopropane) dihydrochloride as a peroxyl radical generator on over 100 different kinds of foods, including fruits, vegetables, nuts, dried fruits, spices, cereals, infant, and other foods. Most of the foods were collected from four different regions and during two different seasons in U.S. markets. Total phenolics of each sample were also measured using the Folin-Ciocalteu reagent. Hydrophilic ORAC(FL) values (H-ORAC(FL)) ranged from 0.87 to 2641 micromol of Trolox equivalents (TE)/g among all of the foods, whereas lipophilic ORAC(FL) values (L-ORAC(FL)) ranged from 0.07 to 1611 micromol of TE/g. Generally, L-ORAC(FL) values were <10% of the H-ORAC(FL) values except for a very few samples. Total antioxidant capacity was calculated by combining L-ORAC(FL) and H-ORAC(FL). Differences of ORAC(FL) values in fruits and vegetables from different seasons and regions were relatively large for some foods but could not be analyzed in detail because of the sampling scheme. Two different processing methods, cooking and peeling, were used on selected foods to evaluate the impact of processing on ORAC(FL). The data demonstrated that processing can have significant effects on ORAC(FL). Considering all of the foods analyzed, the relationship between TP and H-ORAC(FL) showed a very weak correlation. Total hydrophilic and lipophilic antioxidant capacity intakes were calculated to be 5558 and 166 micromol of TE/day, respectively, on the basis of data from the USDA Continuing Survey of Food Intakes by Individuals (1994-1996).  相似文献

In this study, phosphorus(P) sorption of thirteen light-weight aggregates(LWAs) from USA was compared during batch equilibrium experiments in order to identify those materials which had the highest P sorption capacity for further study. Seven different levels of sorption activity were observed, which were broadly grouped into three categories—high performing, middle performing, and low performing aggregates. Chemical analysis of Ca, Al, Fe, and Mg was used to describe the differences between LWAs. There was a significant correlation between cation(especially Al, Ca, Fe, and Mg) content and P sorbed. Langmuir isotherms were used to describe P sorption maximum and binding affinity for four of the top five performing LWAs, Universal, Stalite "D", Stalite "Mix", and TXI.The fifth aggregate, Lehigh, exhibited more complex sorption, and was better described by the Freundlich isotherm. Universal had a mean P sorption at the highest concentration of 824 mg kg-1, well above its calculated sorption maximum(702 mg kg-1), and also had the highest binding affinity(1.1 L mg-1). This experiment suggests that the top performing LWA(Universal) may perform poorly in column and field studies due to observed precipitates, which could degrade constructed wetland performance. Other LWAs may exhibit superior field performance due to their high calculated sorption maxima. In general, these results highlight the importance of batch experiments as a first step in identifying materials suitable for column and field experiments.  相似文献

The objective of this work was to quantify the flavonoids present in foods most commonly consumed by the Brazilian population. The predominant flavonoids found in largest abundance in all of the analyzed vegetables were glycosides of quercetin. In lettuce, a small amount of luteolin was also detected. In sweet pepper, quercetin and luteolin were both present. White onion [48-56 mg/100 g of fresh weight (FW), expressed as aglycon], red onion (40-100 mg/100 g of FW), red lettuce (67-67.2 mg/100 g of FW), arugula (41-118 mg/100 g of FW), and chicory (18-38 mg/100 g of FW) were highest in total flavonoids. In fruits, the highest concentrations of flavonoids were found in the peel (125-170 mg/100 g of FW) and pulp (35-44 mg/100 g of FW) of oranges and in some apple varieties (14-36 mg/100 g of FW). Variability in flavonoid content due to time of harvesting was high for leafy vegetables and red onions. The estimated ingestion by Brazilian population ranged from 60 to 106 mg/day.  相似文献

In the United States, more farms are composting than municipalities, commercial/institutional establishments, and other private sector groups combined. To obtain an overview of agricultural composting in the United States, industry, government, and university representatives from the top 10 beef and dairy cattle, poultry, and swine producing states were contacted between January and April of 1995. These states represent at least 70 percent of the nation's production of these commodities (except for beef cattle at 52 percent). The representatives provided information about the number of farms composting, the materials composted, composting methods, how the compost is used, and motivating and impeding factors for farms to compost. In addition, information was gathered concerning composting crop residues. In this case, specific applications of crop residue composting were identified and individuals knowledgeable about the applications were contacted for background information.

Note the estimated numbers of composting operations presented here represent a best attempt to quantify the composting activity taking place on various types of farms. In many cases, the numbers are rough estimates, based on the assessments of the representatives contacted in each state. Also, they only include the composting operations in the top 10 producing states. A considerable amount of composting occurs outside of these states. Therefore, Tables 1 and 2 underestimate the number of farms that compost.  相似文献

The need to conserve United States populations of Lepidoptera has been recognised for a century, but intensive programmes to do so have only recently come into being. The evolution of the butterfly and moth conservation movement in the United States is followed from the earliest instances to the present state of progress. The origin and growth of the Xerces Society as the chief body for terrestrial arthropod conservation in America are described. Currently, ecological research and political action aimed at specific lepidopteran protection issues are under way. Several of these are examined and the most acute needs for further study and action indicated. Habitat alteration emerges dramatically as the chief problem in the decline of butterfly and moth populations. The relative importance of pesticides and overcollecting is discussed and reinforces the conclusion that the habitat is paramount. Introductions of organisms for purposes of conservation likewise receive consideration, showing this strategy to be problematical and subject to careful review prior to its use. The various levels of government as well as private bodies and individuals have distinct roles in insect conservation. Greater public awareness of beneficial insects must precede optimal effectiveness of conservation schemes. The appointment of an official federal insect conservator is announced along with his initial proposal for endangered species listings for certain North American butterflies. The prognosis for a national programme is suggested. Lepidoptera conservation in the United States has become a fully fledged movement with numerous successes and with many difficult problems to face. The situation is viewed with immediate alarm but cautious long-term optimism as well.  相似文献

Samples of catsup from 13 commercial sources, representing at least 10 U.S. manufacturers, were analyzed for carotenoid content, antioxidant activity, and percentage solids. The solids content of these catsup brand samples varied from 26.31 to 38.06% solids. The lycopene content ranged from 59.42 to 183.36 microg, and total carotenoids were as high as 216.6 microg/g fresh weight, respectively. In addition, both hydrophilic and lipophilic antioxidant activities were measured using the Trolox equivalent antioxidant capacity (TEAC) assay. These measurements of samples of the various catsup brands ranged from 176.5 to 356.8 total TEAC units.  相似文献

Plant sterols (PS) stability, antioxidant parameters, and color were studied during 6 months of storage at 4, 24, and 37 °C in three PS-enriched functional beverages. Beverages were skimmed milk with fruit juice and PS (MFJPS), fruit juice and PS (FJPS), and skimmed milk with PS (MPS). No loss in total PS content occurred during storage observing the same values at any given storage time point. Total carotenoids decreased 36% with storage at two months and then remained stable. Total polyphenols showed fluctuations throughout the storage, remaining stable at 6 months and reaching initial values. The antioxidant capacity (TEAC method) increased 18% at 6 months, and there was an increase in color over time and temperature, probably due to Maillard reaction compound formation. The increase in total antioxidant capacity might have helped PS maintenance throughout storage, these beverages being a good PS source even after 6 months of storage.  相似文献

Both soybean composition and processing conditions impact the nutritional quality of soybean meal. The objective of this experiment was to compare nutrient compositions of soybeans grown under diverse environmental conditions in a variety of locations. Dry matter, organic matter, and ash concentrations differed in soybeans collected within the countries of Brazil, China, and the United States, although these differences were generally small or due to uniqueness of a particular source. Large differences in dry matter were detected among countries. Differences in crude protein, amino acid, and lipid concentrations of soybeans were detected both within and among countries. Soybeans from China had a greater crude protein concentration (42.14%) than those from Brazil (40.86%), whereas soybeans from China had a lower lipid concentration (17.25%) than those from either Brazil or the United States (18.66 and 18.70%, respectively). Environmental conditions under which soybeans are grown have a great impact on chemical composition and nutrient quality.  相似文献

Mercury (Hg) contamination from a variety of point and non-point sources, including atmospheric inputs, is currently considered to be the most serious environmental threat to the well being of fish and wildlife resources in the southeastern United States. Fish consumption advisories have been issued in all ten states comprising the U.S. Fish and Wildlife Service's Southeast Region. Both freshwater and marine species have been affected with levels ranging as high as 7.0 ppm in some individuals. Many other species, including various species of reptiles, birds and mammals (including humans) are also contaminated. Impacts noted range from reproductive impairment to mortality.  相似文献

This article summarizes the trends in agricultural injuries and illnesses in the past decade, as well as the needs for surveillance in the future. Agriculture is one of the most hazardous industries in the U.S. The fatality rate in agriculture remained high (about 22/100,000 workers) through the 1990s. and tractors remained the leading source of death, causing approximately 300 fatalities each year. Non-fatal injuries and illnesses decreased in the employed agricultural worker population. There are no adequate injury and illness data for self-employed farmers and family members to show trends over time. The reported injury rates have been 0.5 to 16.6/100 workers, based on the source of information. Many studies have shown high rates of respiratory and musculoskeletal symptoms, hearing loss, and skin disorders in agriculture. The overall cancer rate is lower; however, certain cancers are elevated in farmers. Surveillance information has not improved significantly in the past decade; however, many studies have provided more insight into the prevalence, incidence, and risk factors for injury and illness. Further efforts are needed to better define the populations at risk, including farmers and ranchers, family members, workers, migrant and seasonal workers, and others exposed to farm hazards. Fatalities are well documented, and it is important to continue existing surveillance in the future. Surveillance systems should be developed to collect information on agriculture-related non-fatal injuries and illnesses.  相似文献

Perchlorate has the potential to cause thyroid dysfunction by inhibiting iodide uptake by the sodium iodide symporter. Perchlorate-contaminated waters may lead to human exposure through drinking water and food chain transfer in crops by way of irrigation water. Perchlorate has been found in dairy milk collected nationally and internationally. This study was conducted to evaluate perchlorate in the feed-dairy continuum in the southwestern United States. All feed products collected at dairies in this study had detectable levels of perchlorate as analyzed by ion chromatography-tandem mass spectrometry. The calculated total perchlorate intake across dairies ranged from 1.9 to 12.7 mg/cow per day. The variation in total perchlorate intake across dairies was largely associated with variation in forage and silage products. Alfalfa products were the single most important source of perchlorate intake variability among dairies. The estimated perchlorate intake from drinking water ranged from 0.01 mg per cow per day and was generally less than 2% of the total perchlorate intake. The perchlorate content of milk ranged from 0.9 to 10.3 microg/L and was similar to levels reported by the Food and Drug Administration's Total Diet Study. The perchlorate content of milk was significantly related to the presence of perchlorate in feed but the variation of perchlorate in milk could not be explained by feed intake alone.  相似文献

A total of 60 food samples commonly consumed in China were analyzed for phytate using the anion-exchange method and for calcium, iron, and zinc using atomic absorption spectrophotometry. The foods analyzed included those based on cereal grains and soybean. Phytate contents expressed on a wet weight basis ranged from 0 for foods made from starches to 1878 mg/100 g for dried stick-shaped soybean milk film. The calcium contents were between 2.08 mg/100 g for ground corn and 760.67 mg/100 g for diced fried soybean curd. The lowest values of iron and zinc were 0.04 mg/100 g for Panjin pearl rice cooked with discarding extra water and 0.08 mg/100 g for potato and bean starches, while the highest values of iron and zinc were observed in dried stick-shaped soybean milk film. Although many foods were relatively rich in calcium, zinc, and iron, many also contained a higher level of phytate. Of the 60 food samples, 34 foods had a phytate/calcium molar ratio >0.24, 53 foods had a phytate/iron molar ratio >1, 31 foods had a phytate/zinc molar ratio >15, and only 7 foods had a phytate x calcium/zinc >200. Phytate in foods impair the bioavailability of calcium, iron, and zinc, which to some extent depends upon food processing and cooking methods.  相似文献

Soil Taxonomy was developed primarily for the practical purpose of supporting the National Cooperative Soil Survey Program in the United States. The previous system of classification was limited in its usefulness and could not be applied consistently by a large cadre of soil scientists with diverse levels of skill and experience. The first edition of Soil Taxonomy, published in 1975, was developed under the leadership of Dr. Guy Smith over a period of about 25 years. The magnitude and complexity of the information favored the use of a hierarchical system presented as a key for consistent application. Operational definitions were used to identify taxonomic limits and diagnostic horizons and features, so that each taxon conveyed the same meaning to every user. The application of Soil Taxonomy had several important impacts on the soil survey program in the United States. The emphasis on objective, measurable diagnostic horizons and features to define classes made all competent soil scientists, regardless of experience and rank, equally capable of accurately and consistently classifying soils. The use of quantitative class differentia improved the quantity and quality of the field data collection. The property ranges of soil series and their geographic distribution have generally been narrowed over time, thus, allowing more precise interpretations to be made. Soil Taxonomy has benefited the soil correlation process by grouping the nearly 22 000 series currently established in the United States in ways that allow us to efficiently compare and differentiate competing soil series and coordinates their use among survey areas. After publication in 1975, Soil Taxonomy was further refined through the work of nine international committees and many individuals. This work culminated in the publication of the second edition in 1999 and, most recently, the 9th edition of the Keys to Soil Taxonomy in 2003. Today, two international committees are considering revisions to the moisture and temperature regimes and improvements to the classification of anthropogenic soils. Acid rain has become a major environmental concern, the current extent of which is illustrated in this paper. Maps of both pH and H+ deposition in precipitation have been developed for the continental United States by analyzing laboratory pH data from nine precipitation chemistry networks and two single stations spread across the continental United States and southern Canada during the late 1970's. Average laboratory pH values were obtained or calculated for approximately 100 stations, and isopleths of weighted mean pH and mean annual H+ deposition in precipitation were drawn. Results of this analysis show that in spite of a wide variety of collection methods and sampling intervals, there is remarkable uniformity in the average pH among the various stations. The northeastern United States continues to exhibit the most acidic precipitation, with remaining portions of the eastern United States, states along the western coastline and a pocket in central Colorado also experiencing acid precipitation.  相似文献
