The aim of the present study was to investigate the effect of oral supplementation of creatine on the muscular responses to aerobic training. Twelve purebred Arabian horses were submitted to aerobic training for 90 d, with and without creatine supplementation, and evaluated with respect to BW and BCS and to the area and frequency of the different types of muscle fibers in the gluteus medius. Supplementation consisted of the daily administration of 75 g of creatine monohydrate mixed into the ration for the 90 d of training. Physical conditioning was conducted on a high-performance treadmill, and training intensity was stipulated by calculating the velocity at which blood lactate reaches 4 mmol/L, determined monthly for each animal. The individual intensity of physical force at 80% of aerobic threshold was established. Morphometry of gluteus medius muscle fibers was performed on frozen sections processed for histochemical analysis of myosin adenosine triphosphatase and immunohistochemistry of slow-contracting myosin. The results demonstrated that the animals maintained a moderate BCS without alteration of BW during the course of training, providing evidence of equilibrium between food intake and caloric expenditure during the study period. The present study demonstrated that aerobic training for 90 d caused hypertrophy of fiber types I (P = 0.04), IIA (P = 0.04), and IIX (P = 0.01), as well as an increase in the relative area occupied by type I fibers (P = 0.02) at the expense of type IIX fibers (P = 0.03), resulting in modifications of the contractile and metabolic characteristics of the gluteus medius muscle. It was not possible to show any beneficial effect from creatine on the skeletal muscle characteristics examined.  相似文献

Our objective was to determine the influence of season (winter, spring, summer, and fall) on travel patterns, hoof growth, and longissimus dorsi muscle (LM) height and fat thickness between 13th and 14th ribs in 16 horses aged <4 years (eight males and eight females) of Morgan, Quarter Horse, and Moriesian breeds. Real-time ultrasound images of LM height and fat thickness as well as measures of hoof growth were obtained at the end of each season. Global positioning system tracking was conducted for four randomly selected days and one storm day in each season. Data were analyzed using a linear mixed model procedure in SAS. Season influenced fat deposition (P < .01) with the greatest increase in fall (P < .05) but had minimal effect on muscle growth. Hoof growth was greatest in summer and least in winter (P < .01). The average distance traveled was greater in spring and summer than in fall and winter (P < .01). The horses moved for less time and traveled less distance on storm days (P < .05) compared with nonstorm days. Young horses also traveled less on storm days, which indicates that it may be especially important to provide shelter for them. It was concluded that season influenced fat deposition, distance traveled, and hoof growth of domestic young horses. A better understanding of these factors could help equine professionals manage young horses more efficiently to benefit the horses’ physical well-being.  相似文献

The pattern of electromyographic activity of the equine long back muscle at the walk has not yet been reported. The aim of this study was to use surface electromyography to measure activity of the longissimus dorsi muscles of horses walking on a treadmill. Fifteen horses without back pain were used and electromyographs were recorded bilaterally from the longissimus dorsi muscles at the level of T12, T16 and L3. Mean electromyograph activity and mean motion were calculated for each horse. At the walk, only one maximum activity for each longissimus dorsi muscle was detected during each motion cycle and this was highest at T12 and lowest at L3. Activity of the longissimus dorsi muscles at the walk is mainly responsible for stabilisation of the vertebral column against dynamic forces. At T12 the high maximum activity could contribute to the development of muscle pain at this site.  相似文献

本试验旨在研究饲粮添加不同水平的过瘤胃保护性精氨酸(rumen protectedarginine,RP Arg)和大豆油对细毛羊肌内脂肪和脂肪酸组成的影响。试验选用健康、体重相近的 15只细毛羊,随机分为5组,对照组饲喂基础饲粮,试验组分别饲喂在基础饲粮中添加1.5g/dRP Arg、2.0g/dRP Arg、1.5g/dRP Arg+3%大豆油和 2.0g/dRP Arg+3%大豆油的饲粮。预试期为5d,正试期为 45d。试验结束后每组选 2只羊进行屠宰,取背最长肌样用于测定肉质指标和脂肪酸组成。结果表明:试验组肌肉 pH、系水率和熟肉率与对照组差异不显著(P>0.05),而肌内脂肪含量显著高于对照组(P<0.05);试验组肌肉多不饱和脂肪酸含量与对照组相比显著提高(P<0.05);添加 RP Arg和大豆油有提高肌肉过氧化物酶体增生物激活受体 γ(PPARγ)、脂蛋白脂酶(LPL)mRNA表达量,降低激素敏感性甘油三酯脂肪酶(HSL)mRNA表达量的趋势。综合指标,以 1.5g/dRP Arg组与 1.5g/dRP Arg+3%大豆油组添加效果较好。  相似文献

为分析陇东黑山羊肉品质及脂肪酸特性,本研究在庆阳市随机选取3只12月龄陇东黑山羊公羊,测定其肉品质、营养成分和肌内脂肪酸。结果表明:背最长肌的pH在5.67~6.22,属于鲜肉的正常范围,剪切力为71.74 N,熟肉率为56.37%,肉色评分为3.33;背最长肌的水分含量(73.82%)高于前腿肌和后腿肌(P<0.05),背最长肌和前腿肌中的粗脂肪含量高于后腿肌(P<0.05),粗灰分和粗蛋白质含量在3个肌肉组织中差异均不显著;3个肌肉组织中单不饱和脂肪酸含量高于多不饱和脂肪酸(P<0.05),其中背最长肌中的油酸(C18:1n9c)含量为27.00%;多不饱和脂肪酸与饱和脂肪酸的比值(PUFA/SFA)在背最长肌中的含量为0.33。综合分析,胴体不同部位间营养成分和脂肪酸的组成及含量有一定差异性,背最长肌肉质最优,具有较好的食用价值和生产高档羊肉产品的潜力。  相似文献

试验旨在研究发酵麸皮多糖(FWBP)对肉羊肉品质、肌肉氨基酸组成及肌肉抗氧化酶和肌纤维类型相关基因表达的影响。选用50只体重为(20.17±3.33)kg的6周龄杜泊×小尾寒羊F1代杂交羔羊,随机分为5组,每组10只。对照组(Ⅰ组)饲喂基础饲粮,试验组(Ⅱ、Ⅲ、Ⅳ、Ⅴ组)分别饲喂在基础饲粮中添加50、100、200、400 mg/kg FWBP的试验饲粮,预试期14 d,正试期56 d。结果表明:1)Ⅱ和Ⅲ组肉羊背最长肌剪切力显著低于Ⅰ组(P<0.05)。2)Ⅱ、Ⅲ和Ⅳ组肉羊背最长肌中蛋氨酸(Met)含量显著高于Ⅰ组(P<0.05);Ⅳ组肉羊背最长肌中的半胱氨酸(Cys)含量显著高于Ⅰ组(P<0.05),而谷氨酸(Glu)和亮氨酸(Leu)含量显著低于Ⅰ组(P<0.05);Ⅴ组肉羊背最长肌中丝氨酸(Ser)含量显著高于Ⅰ组(P<0.05),而缬氨酸(Val)含量显著低于Ⅰ组(P<0.05)。3)各试验组肉羊背最长肌中过氧化氢酶(CAT)的mRNA相对表达量显著高于Ⅰ组(P<0.05),且Ⅲ组肉羊背最长肌中CAT的mRNA相对表达量显著高于Ⅱ、Ⅳ、Ⅴ组(P<0.05)。Ⅲ组肉羊背最长肌中谷胱甘肽过氧化物酶(GSH⁃Px)和超氧化物歧化酶(SOD)的mRNA相对表达量显著高于Ⅰ组(P<0.05)。4)Ⅲ组肉羊背最长肌中肌球蛋白重链(MyHC)Ⅰ和MyHCⅡa的mRNA相对表达量显著高于Ⅰ组(P<0.05),且MyHCⅡx的mRNA相对表达量显著低于Ⅰ组(P<0.05)。Ⅲ、Ⅳ和Ⅴ组肉羊背最长肌中MyHCⅡb的mRNA相对表达量显著高于Ⅰ组(P<0.05)。综上所述,饲粮中添加FWBP可以降低肉羊背最长肌剪切力,改善其氨基酸组成,提高肌肉抗氧化能力,诱导Ⅱx型肌纤维向Ⅰ和Ⅱa型肌纤维的转化,且以添加100 mg/kg效果较佳。  相似文献

The effects of three finishing systems on carcass composition and other characteristics of meat were studied in 15 young Eastern Anatolian Red bulls in Eastern Turkey. For 93?days, five bulls grazed pasture (P), five grazed the same pasture and were given concentrate supplementation (P + C), and five grazed the same pasture for 93?days, and then for an additional 40?days, they received concentrate in a barn (PF). In order to investigate DNA methylation and expression levels of myostatin (MSTN) gene in mscule and fat, 5 months of age of Bashiby sheep were selected, the promoter region and exon 1 methylation levels of MSTN gene was analyzed using bisulfite sequencing PCR (BSP). Real-time PCR was used to detect the expression level of MSTN gene in biceps femoris, femoral triceps, semitendinosus, semimembranosus, longissimus dorsi muscle and tail fat of Bashiby sheep. The results showed that the methylation probability of muscle was higher than fat, the methylation probability of biceps femoris, femoral triceps, semitendinosus, semimembranosus, longissimus dorsi muscle and tail fat were 74.2%, 74.2%, 83.2%, 83.7%, 82.1% and 25.3%, respectively. The expression levels of MSTN gene in biceps femoris, femoral triceps, semitendinosus, semimembranosus, longissimus dorsi muscle were significantly lower than tail fat in Bashiby sheep (P < 0.05), but there were no significant difference among biceps femoris, femoral triceps, semitendinosus, semimembranosus and longissimus dorsi muscle (P > 0.05).The DNA methylation was negatively correlated with the expression levels in muscle and fat of Bashiby sheep (r=-0.886, P < 0.05).  相似文献

为了探究肌肉生长抑制素(myostatin,MSTN)基因在肌肉和脂肪中的DNA甲基化模式及mRNA表达水平,试验以5月龄巴什拜羊羔羊为研究对象,采用亚硫酸氢盐测序法(bisulfite sequencing PCR,BSP)检测MSTN基因启动子区和第1外显子甲基化模式,并通过实时荧光定量PCR检测MSTN基因在巴什拜羊股二头肌、股三头肌、半腱肌、半膜肌、背最长肌和尾脂中的mRNA表达水平。结果显示,肌肉组织甲基化概率高于脂肪组织,其中,股二头肌、股三头肌、半腱肌、半膜肌、背最长肌和尾脂的甲基化概率分别为74.2%、74.2%、83.2%、83.7%、82.1%和25.3%,MSTN基因在股二头肌、股三头肌、半腱肌、半膜肌、背最长肌中的表达水平显著低于尾脂(P < 0.05),股二头肌、股三头肌、半腱肌、半膜肌和背最长肌之间差异不显著(P > 0.05),巴什拜羊肌肉和脂肪MSTN基因DNA甲基化水平与MSTN基因表达量呈显著负相关(r=-0.886,P < 0.05)。  相似文献

试验研究德州驴不同部位肌肉组织中常规营养成分、氨基酸(AA)和矿物质元素含量的变化。选取年龄、体重相近的健康德州驴32头采用单因素完全随机试验设计。结果显示,粗蛋白的含量以臂三头肌最高,臀肌最低。粗脂肪含量呈相反变化规律,臀肌脂肪沉积较好,嫩度更佳。臂三头肌中的多数单一AA以及必需氨基酸(EAA)、非必需氨基酸(NEAA)、总氨基酸(TAA)、支链氨基酸和功能性氨基酸含量均较高,背最长肌次之,股二头肌较少。背最长肌与臀肌AA的平衡性AA较好,具有较高的EAA/NEAA、EAA/TAA,蛋白质营养价值较高。从鲜味方面来看,臂三头肌的甘氨酸(GLy)、精氨酸(Arg)、丙氨酸(Ala)、谷氨酸(Glu)及呈味氨基酸的含量最高、口感更好、鲜味更佳。矿物质含量测定中,不同部位肌肉中大多数矿物元素没有差异,Cu元素和Zn元素的含量由高到低依次为:臂三头肌>股二头肌>背最长肌和臀肌,且差异显著(P<0.05)。  相似文献

The study aimed to explore the mRNA expression pattern of insulin-like growth factor binding protein-5 (IGFBP-5) gene in different tissues of Kazakh and Yanqi horses.The expression of IGFBP-5 gene in different tissues of heart,liver,spleen,lung,kidney,small intestine,large intestine,cecum,intercostal muscles,longissimus dorsi muscles,brachialis muscle and gluteus in two horses were detected by Real-time quantitative PCR and compared the mRNA expression in the same tissues of two breeds.The results showed that the expression of IGFBP-5 in longissimus dorsi muscle and brachialis muscle of two breeds were significantly higher than other tissues including heart,liver,spleen,lung,kidney,small intestine,large intestine and cecum (P<0.05),and was the lowest in large intestine.The expression of IGFBP-5 in kidney,small intestine,large intestine,cecum,longissimus dorsi muscle and brachialis muscles of Yanqi horse were higher than in the same part of Kazakh horse,and among those in longissimus dorsi muscle and large intestine of Yanqi horse were extremely significantly higher than in the same part of Kazakh horse (P<0.01),and in small intestine and cecum of Yanqi horse were significantly higher than in the same part of Kazakh horse (P<0.05).The test was for further researching the biological function of IGFBP-5 gene,and it could provide a theoretical basis for genetic improvement of production performance of horse in our country.  相似文献

试验旨在探求胰岛素样生长因子结合蛋白-5(insulin-like growth factor binding protein-5,IGFBP-5)基因在哈萨克马和焉耆马不同组织部位中的mRNA表达规律。采用实时荧光定量PCR技术检测在哈萨克马和焉耆马心脏、肝脏、脾脏、肺脏、肾脏、小肠、大肠、盲肠、肋间肌、背最长肌、臂肌和臀肌等不同组织中IGFBP-5基因mRNA表达量,同时比较该基因在哈萨克马和焉耆马相同组织中的表达差异。结果表明,哈萨克马和焉耆马表达量最高的均为背最长肌,其次是臂肌,并显著高于心脏、肝脏、脾脏、肺脏、肾脏、小肠、大肠、盲肠等内脏组织表达量(P<0.05),大肠中的表达量最低;焉耆马的肾脏、小肠、大肠、盲肠、背最长肌和臂肌中表达量高于哈萨克马相同部位的表达量,其中焉耆马背最长肌和大肠中的表达量极显著高于哈萨克马的相同部位(P<0.01),小肠和盲肠中的表达量显著高于哈萨克马的相同部位(P<0.05)。本试验为深入研究IGFBP-5基因的生物学功能,以及对中国马生产性能的遗传改良提供理论依据。  相似文献

Forty-two pigs (German Landrace and commercial hybrids) were subjected to harpoon biopsy. A possibility of using the biochemical (adenosine triphosphate, creatine phosphate, glucose-6-phosphate, glucose, lactate, glycogen) and biophysical (pH value, R-value, water-binding capacity) parameters of muscle (m. longissimus dorsi) for forecasting the quality of pork was demonstrated. The post-mortem processes were simulated in muscle bioptate (1 hour of incubation at 39 degrees C). The highest correlations with meat quality in slaughtered animals (pH) were recorded in adenosine triphosphate, creatine phosphate, R-value, pH value, lactate and glycogen. No significant differences were found between the left and right side of the muscle (m. longissimus dorsi) in the studied parameters.  相似文献

采用单因子随机区组试验设计,选用128只50日龄体重相近的健康新西兰兔,随机分为4组,1个对照组和3个处理组,每组32个重复,每个重复1只。对照组饲喂基础饲粮,3个处理组分别在基础饲粮上添加10、20、30 mg/kg的盐酸小檗碱。预试期为7 d,正试期为27 d。结果表明:对照组屠宰率极显著低于其余3组(P<0.01);20 mg/kg组和30 mg/kg组背最长肌总能含量分别显著(P<0.05)和极显著(P<0.01)低于10 mg/kg组和对照组;对照组背最长肌粗脂肪含量极显著高于其余3组(P<0.01),而10 mg/kg组显著高于20 mg/kg组和30 mg/kg(P<0.05);对照组和10 mg/kg组背最长肌pH和熟肉率均极显著低于20 mg/kg组和30 mg/kg组(P<0.01),而失水率和剪切力均极显著高于20 mg/kg组和30 mg/kg组(P<0.01);对照组背最长肌滴水损失极显著高于其余3组(P<0.01),30 mg/kg组分别显著(P<0.05)和极显著(P<0.01)低于20 mg/kg组和10 mg/kg组。结果提示,饲粮添加小檗碱可提高肉兔屠宰率,改善肉品物理性状,但会降低肉品粗脂肪含量。  相似文献

The aim of the present study was to investigate the effect of creatine (Cr) supplementation on muscle metabolic response in connection with a maximal treadmill exercise test, known to cause a marked anaerobic metabolic response and adenine nucleotide degradation. First, 6 Standardbred trotters performed a standardised maximal exercise test until fatigue (baseline test). The test used was an inclined incremental treadmill test in which the speed was increased by 1 m/s, starting at 7 m/s, every 60 s until the horse could no longer keep pace with the treadmill. After this baseline test, the horses were separated into 2 equal groups. One half received a dose of 25 g creatine monohydrate twice daily, and the other group were given the same dose of lactose (placebo). The supplementation period was 6.5 days, after which the maximal treadmill exercise test was performed again. A washout period of 14 days was allowed before treatments were switched between groups and a new supplementation period started. After this second supplementation period a new maximal exercise test was performed. After supplementation with creatine or placebo, horses were stopped after performing the same number of speed steps and duration of exercise as they had in the baseline test. Blood samples for analysis of plasma lactate, creatine (Cr), creatinine, hypoxanthine, xanthine and uric acid concentrations were collected at rest, during each speed step and during recovery. The total blood volume (TBV) was also determined. Muscle biopsies for analysis of muscle metabolites (adenosine triphosphate [ATP], adenosine diphosphate [ADP], adenosine monophosphate [AMP], inosine monophosphate [IMP], creatine phosphate [CP], lactate [La] and glycogen) were taken at rest, immediately post exercise and after 15 min recovery. The results showed no significant increase in plasma Cr or muscle total creatine concentration (TCr) after supplementation with Cr. At the end of exercise ATP and CP concentrations had decreased and IMP and lactate concentrations increased in muscle in all groups. Plasma lactate concentration increased during exercise and recovery and plasma uric acid concentration increased during recovery in all groups. No influence could be found in TBV after supplementation with creatine. These results show that creatine supplementation in the dosage used in this study had no influence on muscle metabolic response or TBV.  相似文献

本试验旨在研究纳米氧化锌对育肥牛生产性能、血清指标及背最长肌肌内脂肪(IMF)沉积相关酶活性和基因表达的影响。选用16头西杂阉公牛(西门塔尔牛×本地黄牛),随机分2组,每组8个重复,每个重复1头牛。对照组饲喂基础饲粮(不添加锌),纳米氧化锌组在基础饲粮的基础上添加80 mg/kg锌(纳米氧化锌形式)。试验期为60 d。结果表明:1)与对照组相比,添加纳米氧化锌显著提高了育肥牛的平均日增重(P<0.05),显著降低了料重比(P<0.05)。2)与对照组相比,添加纳米氧化锌极显著提高了血清游离脂肪酸、甘油三酯、总胆固醇、高密度脂蛋白、低密度脂蛋白、葡萄糖和胰岛样生长因子-Ⅰ含量(P<0.01),显著提高了胰岛素含量(P<0.05),极显著降低了葡萄糖/胰岛素比值(P<0.01)。3)与对照组相比,添加纳米氧化锌显著提高了背最长肌IMF含量和乙酰辅酶A羧化酶(ACC)活性(P<0.05),极显著降低了激素敏感脂肪酶(HSL)活性(P<0.01),显著降低肉碱转移酶-1(CPT-1)和脂蛋白脂肪酶(LPL)活性(P<0.05)。4)与对照组相比,...  相似文献

A study was conducted to determine if supplement withdrawal (omission of dietary vitamin and trace mineral premixes and a two-thirds reduction in dietary inorganic phosphorus) for 28 d preslaughter and the feeding of wheat middlings (dietary concentrations of 5, 15, and 30% from weaning to 16, 16 to 28, and 28 kg to slaughter, respectively) affect growth performance, carcass characteristics, and fecal mineral concentrations ofthe pig, as well as the nutrient content and oxidative stability of the longissimus dorsi muscle. Crossbred pigs (n = 64) were blocked by weight and assigned to one of four dietary treatments in a 2 x 2 factorial design (with or without supplement withdrawal, and with or without wheat middlings). Supplement withdrawal and wheat middling inclusion did not influence average daily gain (ADG), average daily feed intake, gain/feed, or carcass traits, except for a decrease (P < 0.01) in the ADG of pigs from 28 to 65 kg when fed wheat middlings. Supplement withdrawal decreased (P < 0.01) fecal Ca, P, Cu, Fe, Mn, and Zn concentrations. In diets containing full vitamin and mineral supplementation, wheat middling inclusion decreased (P < 0.01) fecal Ca, Cu, Fe, and Zn concentrations and increased (P < 0.01) fecal Mn. Supplement withdrawal decreased (P < 0.05) concentrations of riboflavin, niacin, and P in the longissimus dorsi muscle, but did not affect longissimus dorsi thiamin, vitamin E, Fe, Cu, Zn, and Ca concentrations. Inclusion of wheat middlings increased (P < 0.04) longissimus dorsi thiamin, niacin, riboflavin, and vitamin E concentrations and decreased (P < 0.04) Cu concentrations. However, wheat middling inclusion did not affect (P > 0.05) longissimus dorsi Ca, P, Fe, and Zn concentrations. Dietary treatment did not affect either Cu/Zn superoxide dismutase or glutathione peroxidase activity in the longissimus dorsi. The results from this study indicate that supplement withdrawal and dietary wheat middling inclusion alter pork nutrient content and fecal mineral concentration, but not the oxidative stability of pork.  相似文献

为了研究不同猪种背最长肌中氨基酸沉积规律,试验采用高效液相色谱检测了不同体重梯度(90、110和130 kg)的川藏黑猪和杜长大(DLY)猪背最长肌中氨基酸含量。结果表明,谷氨酸在两猪种肌肉中含量最高,含硫氨基酸总量在90和130 kg体重梯度时表现为川藏黑猪显著高于DLY猪(P〈0.05),110 kg体重梯度时极显著高于DLY猪(P〈0.01),而同一猪种不同体重梯度间各种氨基酸组成差异均不显著(P〉0.05),鲜味氨基酸占总氨基酸比例(FAA/TAA)在90 kg体重梯度表现为川藏黑猪极显著高于DLY猪(P〈0.01),130 kg体重梯度时显著高于DLY猪(P〈0.05)。本研究说明川藏黑猪肌肉中与风味相关的氨基酸含量高于DLY猪,我们认为这也是川藏黑猪的肌肉风味比DLY猪更浓郁的重要原因之一。我们的研究初步揭示了不同猪种背最长肌中氨基酸的沉积规律及构成差异,为进一步研究猪肉风味形成机理提供数据。  相似文献

试验旨在研究饲粮中添加乳酸菌制剂对肥育猪生长性能、肉品质及风味物质含量的影响。选取平均体重为(55±2)kg的杜×长×大三元杂猪240头,随机分为3个处理组,每组4个重复,每个重复20头试猪,公、母各半。对照组饲喂基础饲粮(玉米-豆粕型),2个试验组饲粮分别在基础饲粮中添加0.3%乳酸菌干粉和0.3%乳酸菌菌液,这2种制剂中乳酸菌含量均为1.2×10~9 CFU/g。试验期57 d,在饲养试验结束时,每个重复选择2头(1公1母)接近平均体重的试猪进行屠宰,测定胴体性状、肉品质和风味物质含量。结果表明:饲粮中添加乳酸菌干粉和乳酸菌菌液均对肥育猪的平均日增重、平均日采食量及耗料增重比无显著影响(P0.05),对肥育猪胴体直长、斜长、背膘厚、皮厚及眼肌面积也无显著影响(P0.05),对肌肉的肉色、大理石纹、pH、滴水损失率及剪切力无显著改善(P0.05);与对照组相比,饲粮中添加乳酸菌菌液显著降低背最长肌中次黄嘌呤含量(P0.05),但2个试验组肌苷酸、谷氨酸和肌内脂肪均无显著差异(P0.05)。综上所述,饲喂乳酸菌制剂对肥育猪生长性能、胴体性状和肉质无显著影响,但可降低肌肉中次黄嘌呤含量,有利于改善猪肉的风味。  相似文献

本研究以育肥的小尾寒羊和寒泊羊的羔羊为试验动物,采集背最长肌、臂三头肌、股二头肌和臀中肌样品,测定了肌纤维横截面积、直径、粗脂肪含量和氨基酸种类及含量。结果表明,寒泊羊背最长肌肌纤维直径和横截面积均小于小尾寒羊(P<0.01),股二头肌肌纤维直径和横截面积大于小尾寒羊 (P<0.05)。寒泊羊背最长肌和股二头肌粗脂肪含量高于小尾寒羊(P<0.01,P<0.05),臂三头肌和臀中肌粗脂肪含量略高于小尾寒羊(P>0.05)。小尾寒羊肉中牛磺酸含量高于寒泊羊(P<0.01),其余17种氨基酸含量两品种羊肉间差异不显著(P>0.05)。与肉鲜味有关的5种氨基酸,寒泊羊肌肉的含量高于小尾寒羊。除赖氨酸和色氨酸外,其余6种人体必需氨基酸寒泊羊肌肉的含量高于小尾寒羊。  相似文献
