This research was focused on the lipid fraction of an undervalued crustacean (lobster krill; Munida spp.) and the comparative study of individuals captured at winter and summer seasons. For this purpose, seasonal variations were analyzed in the muscle (i.e., tail meat) for proximate composition, lipid class distribution, and fatty acid (FA) profile. Mean total lipids ranged from 0.75 ± 0.08% (summer) to 0.92 ± 0.06% (winter), moisture from 77.94 ± 0.25% (winter) to 78.62 ± 0.38% (summer), and protein from 17.93 ± 0.46% (summer) to 18.22 ± 0.46% (winter). Regarding lipid class content (% of total lipids), phospholipids ranged from 64.85 ± 1.29 (summer) to 67.85 ± 2.56 (winter), sterols from 12.15 ± 0.35 (winter) to 13.54 ± 0.54 (summer), triacylglycerols from 0.04 ± 0.02 (summer) to 1.25 ± 0.88 (winter), and free FA from 1.14 ± 0.72 (winter) to 2.19 ± 0.34 (summer). In both seasons, the most abundant FA were C22:6ω3, C16:0, C18:1ω9, and C20:5ω3. Polyunsaturated fatty acids (PUFA) were found to be the most abundant group in samples from both seasons (50.4–55.3%). Higher PUFA values were determined in summer samples, while a highly valuable ω3/ω6 ratio (from 9.11 ± 1.12 in summer to 10.40 ± 1.39 in winter) was observed. It is concluded that in spite of being a low-fat product, the lipid fraction of this underutilized crustacean can provide highly valuable constituents.  相似文献

ABSTRACT

The proximate content, fatty acids composition, and nutritional quality index (NQI) of Macrobrachium nipponense at three habitats in the Anzali wetland in Iran were investigated as a potential source for human consumption. The highest amounts of protein, lipid, ash, and energy contents in muscle of M. nipponense were showed in autumn (non-reproductive season) (p < 0.05). The main monounsaturated fatty acids (MUFA) were oleic acid (C18:1 n9 C, C18:1 ω9 T) and palmitoleic acid (C16:1). Moreover, the main polyunsaturated fatty acids (PUFA) were docosahexaenoic acid (DHA, C22:6 n3), eicosapentaenoic acid (EPA, C20:5n3), arachidonic acid (ARA, C20:4 n6), linoleic acid (LA, C18:2 ω6), and α-linolenic acid (ALA, C18:3 n3). The predominant individual saturated fatty acid (SFA) was palmitic acid (0.07–13.4%), while oleic acid (14.7–26.3%), EPA (3.5–12.7%) and linoleic acid (0.04–14.9%) represented the most abundant individual MUFA and PUFA in M. nipponense. The highest mean value of EPA+DHA (14.0), n3/n6 (1.02), ΣMUFA/ΣSFA (1.05), ΣPUFA/ΣSFA (1.04), and EPA/DHA (3.8) ratios in M. nipponense was in autumn. The range of atherogenicity index (AI) and thrombogenicity index (TI) was much lower, from 0.42 to 0.6 and from 0.33 to 0.57, respectively, in terms of season. The results obtained in the present study show that M. nipponense is an excellent nutritional food source in the Anzali wetland.  相似文献

Kesuhong No. 1 with high concentration of astaxanthin was a newly approved aquaculture variety of ridgetail white prawn (Exopalaemon carinicauda) in China, and the information on the nutrient composition and quality evaluation of this new variety is insufficient. Thus, the proximate composition, amino acid and fatty acid profiles were analysed and compared between the new variety and the wild‐typed prawn in the present study, for its better application of the new variety. It showed that there were no significant differences (p > 0.05) of the proximate composition, essential amino acid and saturated fatty acid (SFA) of muscle tissue between the wild‐typed prawn and the new variety. However, for the content of some delicious amino acids (Ala and Tyr), it was significantly higher (p < 0.05) than that in the wild‐typed prawn. Similarly, for some ω3 polyunsaturated fatty acids (ω3 PUFA), such as docosahexaenoic acid (DHA) and eicosapntemacnioc acid (EPA), it was also significantly higher (p < 0.05) than that in the wild‐typed prawn. In addition, higher PUFA/SFA ratio and lower ω6/ω3 ratio also improved muscle quality in the new variety. Information obtained in the present study indicates a promising natural source of ω3 PUFA with high nutritional value, and has strong potential application value in this new variety of E. carinicauda.  相似文献

Three diets were formulated to be iso‐nitrogenous (450 g kg?1), iso‐lipidic (65 g kg?1) and iso‐energetic (18.5 KJ g?1), varying only in their lipid sources and designated as 100% fish oil (FO), 100% crude palm oil (CPO) and 100% palm fatty acid distillate (PFAD). Feed were hand fed to homogenous groups of 12 Channa striatus fingerlings (mean weight 3.5 ± 0.3 g) per tank in triplicate for 12 weeks, in a recirculation system. The growth performance and feed intake in the CPO and PFAD treatments were significantly (P<0.05) higher than those in the fish fed the control diet (FO), respectively, whereas the feed conversion ratio was better in PFAD than that in the other treatments respectively. The biological indices monitored (hepatosomatic index and viscerosomatic index) as well as carcass yield did not vary significantly among all the treatments respectively. The muscle fatty acid (FA) profile of fish was influenced by the composition of the diets fed, whereas no differences were recorded in the activities of the hepatic lipogenic enzymes monitored (fatty acid synthetase, citrate cleavage enzyme and malic enzyme). Whole‐body proximate composition analysis revealed that PFAD treatment, compared with others, contained significantly higher protein and ash, but lower lipid contents, although the muscle content of these nutrients was similar among all the treatments. Based on the results of this trial, CPO and PFAD could be used to partially substitute FO in the diet for C. striatus fingerling, to achieve good growth performance without any negative effects or compromising the muscle n‐3 FA composition (especially in the docosa hexaenoic acid and eicosa pentaenoic acid content).  相似文献

Proximate chemical composition and fatty acid (FA) profile of different parts and sexes of ray (Raja clavata) were compared. The proximate values of liver samples significantly differed from other body parts (p < 0.05). Pectoral fin had the highest moisture, protein, and ash contents (78.6, 20.5, and 1.2%, respectively). The highest fat content (39.7%) was observed for liver samples. A significant variation was also observed between sexes in terms of proximate and FA values (p < 0.05). The levels of saturated (SFA), monounsaturated (MUFA), and polyunsaturated fatty acids (PUFA) varied between 27.1–32.1, 14.9–19.0, and 34.3–39.5%, respectively, in total fatty acid methyl esters (FAME). The highest total PUFA and docosahexaenoic acid (DHA) values were observed in the edible portion of liver for both sexes due to high contents of fat, despite the low values of % total FAME in comparison with other body parts. Significant variations among FA levels were observed for different body parts (p < 0.05). The highest DHA and eicosapentaenoic acid (EPA) values were found in the edible portion of the liver and calculated as 6.8 and 2.3 g/100 g, respectively, indicating the importance of utilizing the liver of this species.  相似文献

The effects of frying methods and covering processes on the proximate composition, fatty acid profile, amino acid profile, cholesterol, acrylamide, and microbiological content of fried mussel (Mytilus galloprovincialis 1819) were investigated in the present study. The group of mussels that were purchased for study was divided into six groups (control – unprocessed mussel meat; Group A – covered mussels fried in deep fat; Group B – mussel fried in low fat; Group C – uncoated mussel meat fried in deep fat; Group D – uncoated mussel fried in low fat; and Group E – mussel served in restaurants). It was determined that the mussel frying methods can affect the nutritional composition and cause changes in the amino acid, fatty acid, and cholesterol content.  相似文献

This study provides information about nutrient composition of adult males of southern king crab (Lithodes santolla). Proximate composition of raw and cooked meat (g/100 g meat) averaged: moisture?=?80.9 and 78.6, protein?=?14.6 and 16.3, fat?=?0.70 and 0.76, and ash?=?2.03 and 2.10, respectively. Arginine, glutamic acid, leucine, and aspartic acid (20.4, 9.4, 8.0, and 7.9 g aa/100 g protein, respectively) were the major amino acids. The predominant fatty acid was 18:1n-9c (21.8 and 22.1%), followed by 20:5n-3 (17.1 and 21.8%), 16:0 (15.8 and 15.3%), and 22:6n-3 (11.0 and 13.5%). Cooked meat contained more cholesterol (51.0 mg/100 g meat) and phospholipids (60.1 mg/100 g meat) than raw meat (37.3 and 13.9 mg/100 g meat, respectively), with phosphatidylcholine representing over 80% of the total phospholipid content. The main tocopherol was α-tocopherol (raw meat?=?1.30 mg/100 g meat, cooked meat?=?1.14 mg/100 g meat). Major mineral contents of raw and cooked meat (mg/100 g meat) were: Na?=?509 and 594, K?=?179 and 203, Ca?=?114 and 197, P?=?126 and 143, Mg?=?34 and 41, Fe?=?1.26 and 1.86, and Zn?=?1.88 and 2.64, respectively. Thus, the nutritional quality of the cooked meat of the southern king crab makes it especially adequate for cholesterol-restricted, balanced low-fat meat diets.  相似文献

ABSTRACT

On-growing of horse mackerel is not known in the world. Recently, we have initiated on-growing of the Mediterranean horse mackerel in the Black Sea. Therefore, we aim to compare proximate composition and fatty acid profile of on-growing and wild horse mackerels to evaluate the effect on their nutritional value. Captured horse mackerels less than 13 cm were kept on-growing in sea cages and fed sea bass feed for a year in the southern Turkish Black Sea. Results showed seasonal variations in the proximate contents and fatty acid profile of both on-growing and wild fish groups (p < 0.05). Protein contents of the wild horse mackerel group were significantly higher than the on-growing mackerel group, while the opposite situation was observed for lipid contents (p < 0.05). Despite higher eicosapentaenoic acid (EPA) and docosahexaenoic acid (DHA) levels (as fatty acid methyl esters %) of wild horse mackerel in comparison with on-growing group, much higher EPA + DHA contents were accounted for in on-growing fish in the edible portion resulting from higher lipid contents of these samples. The results suggest that lower amounts of fish meat, 50–90 g, from on-growing mackerel would cover the daily suggested value of EPA + DHA; this level is calculated as 51–150 g for wild fish meat.  相似文献

The effect of fasting on spawning performance, maternal, and egg nutrient composition, and on embryo/larval development was monitored in gilthead seabream (Sparus aurata). Two broodstocks were fasted during two consecutive years, for a period of 43 and 54 days within the spawning season, in a preliminary (year 1, 5-year-old breeders) and the main study (year 2, 6-year-old breeders), respectively. Mean daily fecundity showed a declining trend during fasting in the main study only, while fertilization success was high in both years and it was not affected by fasting, as was hatching and 5-day larval survival. There was a loss of 23.5% of maternal body mass due to fasting, and a reduction in gonadosomatic and hepatosomatic indexes, as well as crude protein in maternal muscle and gonads, but not in the liver. After fasting, muscle Σω-6 PUFA and C18:3ω-3 were reduced while C20:4ω-6, 20:5ω-3/20:4ω-6, and C22:6ω-3/20:4ω-6 increased; in the liver, significant reductions were observed in C16:0, C18:3 ω-3, 20:5ω-3/C22:6ω-3 and increases in C18:0, C20:5ω-3, Σω-6 PUFA, and 20:5ω-3/20:4ω-6; in gonads, C15:0, ΣMUFA, 20:5ω-3/C22:6ω-3, 20:5ω-3/20:4ω-6 were increased, while C18:1ω-9 and C20:5ω-3 decreased. Contrary to maternal tissues, the energy density and proximate composition of the eggs did not change due to fasting. The study suggests that fasting of gilthead seabream breeders for 6–8 weeks during the spawning period does not affect spawning performance, egg proximate composition, or embryo and early larval development since maternal nutrient reserves are mobilized to maintain optimal egg nutrient composition.

Bivalves are known for their high nutritional value and are considered a healthy food for human consumption. The effect of different cooking methods (steaming, boiling, grilling, and frying) on proximate and fatty acid composition of Arca noae (Bivalvia: Linnaeus 1758) were determined. The comparison of raw and cooked Ark shell showed that the cooking had considerable effects on the nutritional quality of this species. Significant changes in moisture (%), protein (mg/g of flesh), total lipid (mg/g of flesh), and fatty acid composition (mg/g dry weight) were observed after cooking as compared to fresh Ark shell (p < 0.05). However, the analysis of malondialdehyde (MDA) and peroxide value (PV) showed that all cooking treatments led to lipid oxidation. Steaming, boiling, and grilling were found to be a suitable and healthier cooking processes for A. noae, since they conserve the amount of n-3 PUFA better as compared to frying.  相似文献

This study represents a first report on the proximate composition and fatty acid profile of Lagocephalus sceleratus from the Mediterranean Sea as well as seasonal changes and sexual differences. Significant variations in the proximate composition were observed during the months of the study (p < 0.05). The highest moisture, fat, protein, and ash contents were found to be 78.47, 0.33, 21.62, and 1.63%, respectively. Total saturated and monounsaturated fatty acid values were similar throughout the year despite individual variations of 24.22–29.46 and 7.87–13.94%, respectively. However, significant variations were observed in total polyunsaturated fatty acids as well as significant differences between sexes (p < 0.05) with some exceptions. The major fatty acid was found as docosahexaenoic acid (DHA), between 24.17 and 32.65%. Due to the low fat content of this species, the highest eicosapentaenoic acid (EPA) + DHA values were calculated as 80.93 mg/100 g of edible muscle. The results indicated that this species contains high nutritional properties in terms of protein content and fatty acid values.  相似文献

Ready-to-cook clean label products were formulated based on two ratios (50:50 and 30:70, R1 and R2) of mechanically separated European sea bass and rainbow trout. R1 and R2, tested as raw and oven-cooked, were stable during 90 days at ?18°C in terms of proximate and fatty acid (FA) composition, shear force, pH, color, and lipid oxidizability. Raw and cooked R1 and R2 were rich in protein (13.76 g/100 g) and unsaturated n3 FA. Shear force and b* of raw R2 were higher than R1 (P < .05). Overall, R2 (more trout) better preserved its characteristics and oxidizability than R1.  相似文献

In this study, the effect of the depuration period on proximate composition, metals, fatty acids, and bacteria in the edible tissue of warty venus (Venus verrucosa) collected from ?zmir Bay in the Aegean Sea was investigated. In addition, benefit and risk for human health associated with the consumption of warty venus were determined by atherogenic index (AI), thrombogenic index (TI), polyene index (PI), fish lipid quality (FLQ), target hazard quotient (THQ), and hazard index (HI). The depuration process did not show a significant (P > .05) effect on proximate composition, except for ash. The depuration process was successful in reducing bacteria growth and the concentrations of all metals, except for copper. Total aerobic mesophilic bacteria count of 1.94 log CFU/g in the fresh samples was uncountable at 24 h of depuration. The concentrations of cadmium, lead, copper, iron, and zinc were below the limit values allowed for safe consumption. The analyzed metals were safe for human consumption based on provisional tolerable weekly intake (PTWI), THQ, and HI. Significant variations were also observed in the fatty acid values depending on the depuration periods (P < .05). The n3/n6 and polyunsaturated/saturated fatty acid ratios were greater than those recommended by the FAO/WHO. Moreover, the AI and TI of samples were under established limits.  相似文献

Pike perch (Sander lucioperca) has been identified as specie destined to diverse European inland aquaculture, but knowledge on the nutritional requirements is weak. Therefore, we investigated the effect of varying dietary fatty acid (FA) profile by partial replacement of fish oil (FO) with vegetable oils on growth, FA and body composition of juvenile pike perch. An extruded basal diet containing 59 g kg?1 crude lipids (FO) was added with 60 g kg?1 FO, 60 g kg?1 linseed oil (LO) or 60 g kg?1 soybean oil (SO). The resulting dietary FA composition differed mainly in the triglyceride fraction and was characterized by highest amounts of linolenic acid (18:3 n‐3) in the LO diet and linoleic acid in the SO diet. Diet enriched with FO contained highest contents of highly unsaturated FA 20:5 n‐3 (eicosapentaenic acid) and 22:6 n‐3 (docosahexaenic acid). Pike perch were held in a recirculation system and each feeding group (in triplicate) was fed with experimental diets at a daily rate of 35 g kg?1 of biomass for 57 days by automatic feeders. Weight gain and specific growth rate of experimental feeding groups ranged between 18.47 and 19.58 g and 1.37–1.45% day?1 and was not affected by the dietary composition indicating that FO can be replaced by vegetable oils without negative impact on growth performance. In contrast to the whole body and muscle composition, liver tissue was affected by the varying diets. Liver tissues of fish fed diets enriched with vegetable oils showed significantly increased lipid contents of 162 (LO) and 147 (SO) g kg?1 and indicate decreased lipid utilization compared with fish fed FO diet (liver lipid content 112 g kg?1). Nevertheless, hepatosomatic index of pike perch was not influenced by dietary lipid composition. The FA profile of pike perch was generally determined by the dietary FAs.  相似文献

This study investigates the changes in fatty acid profile of gamma irradiated frog legs (Rana esculenta) during cold (2°C) storage period. Instead of freezing the frog legs for a prolonged shelf life, gamma irradiated fresh frog legs can be used for consumer satisfaction, because consumers prefer fresh frog legs and are willing to pay more than for frozen in the European market. Frog legs were irradiated at doses of 0, 4, and 5 kGy using 60Co sources. The main fatty acids of nonirradiated and irradiated frog legs (4 and 5 kGy) were palmitic acid (C16:0), stearic acid (C18:0), oleic acid (C18:1ω9), linoleic acid (C18:2ω6), and eicosatrienoic acid (C20: 3ω3, ETE). Low doses (4 and 5 kGy) of irradiation treatment had no effect on fatty acid components of frog legs compared to the nonirradiated ones (p > 0.05). The fatty acid composition of frog meat was characterized by its high linoleic acid content (17.1–21.4%). At the initial stage of the storage, eicosapentaenoic acid (EPA) and docosahexaenoic acid (DHA) levels of frog legs remained unchanged with low doses of irradiation (p < 0.05). These fatty acids decreased significantly in the irradiated group (p < 0.05) at the end of the storage period. However, there were no significant changes in nonirradiated frog legs after 10 days of storage.  相似文献

The variation of the proximate composition and mineral content of nine seaweeds available in the Lakshadweep group of islands were studied to evaluate their nutritional quality. The proximate composition and the mineral contents were determined as per standard methodologies. The nutritional quality was found to be comparable with common vegetables and fruits. Hansen’s nutritional quality index has shown the seaweeds U. lactuca, H. valentea, and H. muciformis, in particular, to be safe for their versatile use and that they can contribute to a healthy balanced diet.  相似文献

A study was conducted to determine the effects of different sources of dietary lipid that differ in fatty acid (FA) composition on growth, feed conversion ratio (FCR), survival, and whole‐body proximate and FA composition of juvenile red claw. Juvenile red claw (0.55 ± 0.02 g) were reared over a 12‐week period. Five practical diets were supplemented with 70 g kg?1 oil (by weight) from either linseed oil (LO), canola oil (CAO), corn oil (CO), beef tallow (BT) or menhaden oil (MO) and formulated to contain 400 g kg?1 crude protein. Red claw were fed three times daily (800, 1200 and 1600) to controlled excess. At the conclusion of the experimental period, there were no significant differences (P > 0.05) found in percentage survival and FCR among dietary treatments and values averaged 85.4% and 3.4, respectively. However, final mean weight and specific growth rate of red claw fed Diet 1 (LO) was significantly higher (16.44 g and 3.95% day?1, respectively) compared with that of red claw fed Diet 4 (BT; 12.24 g and 3.43% day?1, respectively), but not different from red claw fed the other three diets. Likewise, red claw fed Diets 1 (LO) and 2 (CAO) had significantly higher percentage weight gain (2990 and 2880%, respectively) compared with the BT diet (2124%), but not different from red claw fed Diets 3 (CO) and 5 (MO). Whole‐body fat and ash composition was significantly affected (P < 0.05) by source of added lipid, but no differences were found in whole‐body moisture and protein. Moreover, whole‐body FA composition showed differences among the varying oil sources and primarily reflected the FA in the diets. Results of the present study indicate that plant oils LO, CAO and CO rich in linolenic acid (18:3n‐3), linoleic acid (18:2n‐6) and oleic acid (18:1n‐9) perform as well as MO containing high levels of n‐3 highly unsaturated fatty acids eicosapentanoic acid (20:5n‐3) and docosahexaenoic acid (22:6n‐3) for juvenile red claw crayfish grown indoors lacking natural food items. Further, red claw fed a diet containing BT, which has a high percentage of saturated FA, performed poorly compared with LO and CO in regards to weight gain. It appears that juvenile red claw can be fed diets containing less expensive plant‐based oils with high levels of 18‐carbon unsaturated fatty acids. This could reduce diet costs for producers and allow for profitability.  相似文献

This study investigated the growth performance and nutritional composition of scale artificially cultured cuttlefish Sepia pharaonis. Juveniles were cultured in an open‐culturing cement pool system for 120 days. The body weight increased from 10.21 ± 1.44 g to 570.71 ± 126.32 g from 50 days old to 170 days old, and the average growth rate was 4.67%. The proximate, amino acid and fatty acid compositions of S. pharaonis muscles were analysed every 40 days to compare the quality. The cultured S. pharaonis were rich in essential amino acids (EAAs), functional amino acids (FAAs), docosahexaenoic acid (DHA) and polyunsaturated fatty acids (PUFAs), which accounted for 32%, 46%, 28% and 54% (dry weight) respectively. Total amino acids (TAAs) and EAAs exhibited a clear distinction between ages, and significant differences were observed among the levels of individual amino acids, including Pro, Ala, Asp and Lys, which were significantly higher at 130–170 days old than at 50 days old (< 0.05). Although the total saturated fatty acids, monounsaturated fatty acids and PUFAs were statistically similar between ages, C17:0, C22:6 n‐3 and PUFAs were higher at 130–170 days old than at 50 days old (< 0.05). The results indicate that large‐scale artificial culture of S. pharaonis can be achieved under the conditions of a cement pool. This study also provides new information regarding the growth performance and nutritional composition of cultured S. pharaonis, which will contribute to the development of aquaculture practices for this species.  相似文献

The aim of this work was to study the seasonal variations of the proximate compositions, fatty acids contents, and related lipid indices (atherogenic index [AI], thrombogenic index [TI], and polyene index [PI]) of golden grey mullet (Liza aurata) and gold band goatfish (Upeneus moluccensis) caught from the northeastern Mediterranean Sea. Proximate compositions and fatty acid contents of both fish species showed statistically significant seasonal variations (p < 0.05). The lipid contents were highest in autumn and lowest in winter in golden grey mullet and gold band goatfish. The main saturated and unsaturated fatty acids were palmitic acid (C16:0), stearic acid (C18:0), palmiteoleic acid (C16:1n-7), oleic acid (18:1n-9c), arachidonic acid (C20:4n-6), eicosapentaenoic acid (EPA, C20:5n-3), and docosahexaenoic acid (DHA, C22:6n-3). The total polyunsaturated fatty acids in gold band goatfish did not show any differences among the seasons, whereas that in golden grey mullet was highest in winter. Levels of EPA, DHA, and n-3/n-6 ratios, as well as AI, TI, and PI, were significantly changed among seasons. The results show that golden grey mullet and gold band goatfish, which are among the important fish in Turkey and of commercial value, are a good source for human consumption in terms of their nutritional quality.  相似文献

A 12‐week feeding trial was conducted to elucidate the interactive effects of dietary fat, protein contents and oil source on growth, whole body proximate composition, protein productive value (PPV) and fatty acid (FA) composition of muscle and liver in Atlantic salmon (Salmo salar L.)` at low water temperatures (4.2 °C). Triplicate groups of Atlantic salmon (initial weight 1168 g) were fed six isoenergetic diets, formulated to provide either 390 g kg−1 protein and 320 g kg−1 fat (high‐protein diets) or 340 g kg−1 protein and 360 g kg−1 fat (low‐protein diets). Within each dietary protein/fat level, crude rapeseed oil (RO) comprised 0, 30 or 60% (R0, R30, R60, respectively) of the added oil. After 12 weeks, the overall growth and feed conversion ratio (FCR) were very good for all treatments [thermal growth coefficient (TGC): 4.76 (±0.23); FCR: 0.85 (±0.02)]. Significant effects were shown owing to the oil source on specific growth rate and TGC only. The liver and muscle FA compositions were highly affected by the graded inclusion of RO. The PPV was significantly affected by the dietary protein level. The results of this study suggest that more sustainable, lower protein diets with moderate RO inclusion can be used in Atlantic salmon culture at low water temperatures with no negative effects on growth and feed conversion, no major detrimental effects on lipid and FA metabolism and a positive effect on protein sparing.  相似文献
