The feasibility of partially replacing wheat flour with malted rice flour in bread making was evaluated in several formulations, aiming to find a formulation for the production of malted rice-wheat bread with better nutritional quality and consumer acceptance. The whole grains of a local rice variety (Oryza sativa L. subsp. indica var. Mottaikaruppan) were steeped in distilled water (12 h, 30°C) and germinated for 3 days to obtain high content of soluble materials and amylase activity in bread making. The quality of bread was evaluated by considering the physical and sensorial parameters. When the wheat flour was substituted with malted rice flour, 35% substitution level and the malted rice flour from 3 days of germination was the best according to the physical and sensory qualities of bread. The quality of bread was improved by the addition of 20 g of margarine, 20 g of baking powder and 20 g of yeast in 1 kg of flour. Among different ratios of yeast and baking powder, 2:1 was the best. Bread improver containing amylases and oxidizing agents at the concentration of 40 g/kg was selected as the best concentration. When comparing the final formulation made in the bakery with wheat bread, malted rice-wheat bread contains more soluble dietary fiber (0.62%), insoluble dietary fiber (3.95%), total dietary fiber (4.57%) and free amino acid content (0.64 g/kg) than those in wheat bread (0.5%, 2.73%, 3.23% and 0.36 g/kg, respectively). 相似文献

以‘粤椹大10’品种的桑叶粉为原料,选择乙醇浓度、料液质量浓度、超声时间、超声功率、超声次数等5个因素做单因素实验,在这个基础上采用Box-Behnken中心组合试验设计法进行3因素3水平的实验,得到桑叶多酚提取的最佳工艺参数。最终得出的最佳提取工艺条件为:提取次数1次、超声功率400 W、乙醇浓度70%(V/V)、料液质量浓度0.030 g/m L、超声时间60 min,在此条件下桑叶多酚含量为8.33 mg/g。此结果的模型适合桑叶多酚超声波提取,可用于实际生产。 相似文献

以豆粕、麸皮、糖蜜为原料,利用米曲霉和酿酒酵母混菌发酵生产高蛋白饲料。通过单因素试验研究了菌液接种量、温度、发酵时间、料水比、麸皮添加量、糖蜜添加量对粗蛋白含量的影响。在此基础上进行响应面优化,得出最佳发酵工艺条件:装料量25 g(其中91%豆粕、7%麸皮、2%糖蜜),1.5%MgSO_4,1%(NH_4)_2SO_4,1%尿素,1%K_2HPO_4,料水比1∶1.1,接种13%的菌液,在31.3℃发酵78.6 h。在最佳发酵条件下,粗蛋白含量达到56%,比发酵前提高13.96%;真蛋白含量达到52.43%,比发酵前提高21.39%;活菌数达到1.38×109;脲酶活性降低了95.93%。该复合菌株发酵模式可以有效提高产品的蛋白含量,降低脲酶活性,降解大分子蛋白质和抗原蛋白,且发酵过程中产生曲香味和酒香味,适用于豆粕发酵的工业化生产。 相似文献

为了研究不同改良剂对宁麦15面条品质的影响,以宁麦15面粉为基础粉,采用响应面法中心组合试验设计,研究了谷朊粉、瓜尔豆胶和羟丙基淀粉含量对面条感官得分的影响,并建立了面条感官得分与因素变量的二次回归模型方程,该模型回归显著。响应面分析结果表明,最佳配粉工艺条件为:谷朊粉含量1.2%、瓜尔豆胶含量1.5%、羟丙基淀粉含量2.5%。在此工艺条件下面条感官得分预测值为80.9分,验证值为80.2分,与预测值的相对误差为0.87%。因素之间的交互作用显著影响面条感官得分,与不使用改良剂的感官评分70分相比提高了14.6%。 相似文献

为提高小麦加工副产物麦麸的利用率,从中提取植物酯酶,并优化麦麸酯酶的提取工艺,本研究以NaNO_3-磷酸缓冲液为溶剂对麦麸酯酶进行水浴静置提取,在单因素试验的基础上,利用Box-Behnken试验,进一步研究了NaNO_3浓度、提取时间、提取温度3个因素的交互作用对麦麸酯酶活力的影响。最终确定麦麸酯酶的最佳提取工艺为NaNO_3浓度0.15moL·L~(-1)、提取温度35℃、提取时间60min,此条件下单位酶活的预测值为23 338U·mL~(-1),验证值为23 018.7U·mL~(-1),达到预测值的98.63%。综上所述,此优化条件能够较好地从麦麸中提取植物酯酶,并保持较高的酶活性。 相似文献

以针叶樱桃和粳米为原料,在单因素实验的基础上,采用Box-Behnken响应面法对针叶樱桃黄酒发酵工艺进行优化。结果表明,在酒曲添加量0.8%、糖化温度31℃、糖化时间68 h、酿酒酵母添加量0.8%、液料比为1.1∶1、针叶樱桃果浆添加量33%、发酵温度26℃、发酵时间4 d时为最佳发酵工艺参数。该最佳酿造工艺条件下,研制得针叶樱桃黄酒的色泽橙黄,清亮透明,特征香气浓郁,口感醇厚柔和,酒精度13.8%vol,感官评分96.4。果粮混酿酒一直是热带水果酿酒的发展方向。酿制针叶樱桃黄酒,开发黄酒新品种,对丰富市场具有重要的现实意义。 相似文献

根据Box-Behnken中心组合试验设计原理,在单因素试验的基础上,采用响应面分析法,建立了生产高不饱和脂肪酸大豆油脂的二次多项数学模型,并以产出大豆油脂的碘值为响应值做响应面和等高线,考察了结晶时间、结晶温度、回调时间和回调温度对不饱和脂肪酸含量的影响。通过自制的油脂结晶器,制得富含高不饱和脂肪酸的大豆油脂。得出最佳工艺参数为:降温速度5℃/h,结晶温度-15℃,结晶时间24h,搅拌速度20rpm。利用温度回调至-5℃的方法,使所得油脂产品高不饱和脂肪酸含量达到86.41%。 相似文献

为优化低值豆粕液态发酵生产大豆多肽工艺,应用Minimum Run Equireplicated Res IV析因设计进行了主效因子的筛选,根据主效因子影响及变化方向进行爬陡坡试验,最后,应用二次旋转中心复合响应面设计对液态发酵多肽工艺进行了优化,优化工艺条件为豆粕浓度6.0%、pH 8.0、装瓶量93.0 mL.300 mL-1。最优条件下模型预测多肽含量为707.204μg.mL-1,验证试验结果为683.023±9.23μg.mL-1(n=6)。 相似文献

MRPs作为天然抗褐变剂,可抑制引起果蔬酶促褐变的酪氨酸酶的酶活。为进一步优化美拉德反应以制备酪氨酸酶活性抑制组分,本研究采用响应面法对MRPs制备工艺进行研究。在单因素实验基础上,确定美拉德反应初始pH、反应温度、反应时间、底物浓度比(糖∶氨基酸)4个因素,设计4因素5水平的二次回归中心组合试验。经响应面法分析,为方便实际操作,确定最佳工艺条件为:初始pH为2.94,反应时间为1.9 h,反应温度为110.09℃,底物浓度比(糖∶氨基酸)为0.57。经实验验证,得出结果与理论值相对误差较小,故采用二次回归中心组合设计得到的最优MRPs制备条件参数准确可靠。 相似文献

本试验以日照红茶为材料,在单因素试验基础上,采用Box-Behnken响应面设计法对茶多酚超声波辅助提取清除DPPH的工艺进行优化,建立了乙醇体积分数、超声时间、超声温度、乙酸乙酯萃取静置时间4因素与DPPH清除率之间的回归优化模型,确定了最佳提取工艺为:乙醇体积分数86.54%,超声时间69.61min,超声温度60℃,静置萃取时间82.26min,在优化后的最佳工艺参数下,红茶茶多酚对DPPH的清除率最高可达74.84%,研究表明红茶茶多酚具有较强的清除DPPH的能力。 相似文献

Lipid production is an important indicator for assessing microalgal species for biodiesel production. In this work, the effects of medium composition on lipid production by Scenedesmus sp. were investigated using the response surface methodology. The results of a Plackett–Burman design experiment revealed that NaHCO3, NaH2PO4·2H2O and NaNO3 were three factors significantly influencing lipid production, which were further optimized by a Box–Behnken design. The optimal medium was found to contain 3.07 g L−1 NaHCO3, 15.49 mg L−1 NaH2PO4·2H2O and 803.21 mg L−1 NaNO3. Using the optimal conditions previously determined, the lipid production (304.02 mg·L−1) increased 54.64% more than that using the initial medium, which agreed well with the predicted value 309.50 mg L−1. Additionally, lipid analysis found that palmitic acid (C16:0) and oleic acid (C18:1) dominantly constituted the algal fatty acids (about 60% of the total fatty acids) and a much higher content of neutral lipid accounted for 82.32% of total lipids, which strongly proved that Scenedesmus sp. is a very promising feedstock for biodiesel production. 相似文献

为了考察挤压膨化生产大豆组织蛋白过程中相关参数对系统参数的影响,以豆粕为原料,利用响应面模型,以豆粕含水率、膨化机螺杆转速和机筒温度为输入变量,以扭矩为响应变量,探索豆粕挤压膨化系统的相关参数对扭矩影响规律和挤压膨化系统最佳参数。结果表明:豆粕含水率、膨化机螺杆转速和机筒温度对扭矩具有显著的影响;膨化机转速是影响扭矩的主要因素。采用优化方法对试验参数进行了优化计算,当豆粕含水率为17.2%、膨化机转速为202.5 r.min-1、机筒温度为110℃时,膨化机工作性能指标达到最优。 相似文献

Polysaccharide production from tea flower (TFPS) was carried out using supercritical fluid extraction (SFE).Response surface methodology (RSM),based on a five level,four variable small central composite design,was employed to obtain the best possible combination of extraction time,pressure,temperature and ethanol content of modifier for maximum production.The optimum conditions were as follows:extraction time of 170 min,pressure of 45 MPa,temperature of 75 ℃,and 50% aqueous ethanol solution as modifier.Under these conditions,the experimental yield was 6.56 ± 0.37%,which was similar to the value predicted by the model.Monosaccharide composition of TFPS was fucose,rhamnose,arabinose,xylose,galactose,glucose,mannose,fructose,ribose,galacturonic acid and glucuronic acid in a molar percent of 31.69,0.21,0.49,1.29,35.82,0.97,1.63,18.34,7.88,1.06 and 0.63.Compared to other extraction methods,SFE could achieve higher yield and gain more types of monosaccharide. 相似文献
