A diet with high glycaemic index, which causes rapid spikes in blood sugar level, can lead to disorders such as significantly increased risk for type 2 diabetes, cardiovascular disease and obesity. These conditions are also linked to the progression of cognitive decline and neurodegenerative diseases including Alzheimer’s disease. Blackcurrant powder (BC) is a rich source of dietary fibre and bioactive compounds. Wholemeal wheat, barley and oat flours contain high amount of fibre. In this study, a model food (cookie) was developed and used to investigate the in vitro glycaemic glucose equivalent and antioxidant activities of the cookies made with three different wholemeal flours (wheat, barley and oat) with different replacement levels (5, 10 and 15%) of blackcurrant powder. Increasing the proportion of blackcurrant powder in the cookie resulted in a significant (P < 0.05) decrease in glucose release after in vitro digestion compared to the control. In addition, incorporation of blackcurrant powder in cookies up to 15% increased the antioxidant capacity. The combination of wholemeal flour and the bioactive compound rich blackcurrant has the potential to improve the nutritional value and reduce the glycaemic index of such foods.  相似文献

Black ear mushroom (Auricularia auricula) is an important genus of cultivated mushroom, which contains health benefits. Incorporating black ear (BE) mushroom into brown rice by extrusion changed the physicochemical, and more importantly, the nutritional characteristics of the extrudates. With increased incorporation of BE mushroom in the extrudates in vitro starch digestion of the different extrudates revealed significantly reduced starch digestion, suggesting a lower glycaemic index. In addition, incorporation of BE in brown rice extrudates increased the total phenolic concentration of the samples, which led to higher % scavenging effect against free-radicals in DPPH assay. In the ORAC assay for anti-oxidant activity, BE powder exhibited the highest anti-oxidant activity, followed by 10% BE and 15% BE, and 5% BE extruded products. The extruded brown rice control exhibited the lowest antioxidant activity. Inclusion of black ear mushroom was shown to improve the nutritional qualities of the food product illustrating the connection between plant bioactive ingredients and human health.  相似文献

β-glucan is a commonly researched plant cell wall component that when incorporated into food products has been associated with cholesterol and glycaemic response reductions. This study focusses on β-glucan rich fractions from barley and mushroom used in the production of extruded ready to eat snacks. Inclusion of barley β-glucan rich fractions and mushroom β-glucan fractions at 10 % levels increased the total dietary fibre content of extrudates compared to the control (P?<?0.05). Product expansion increased with the introduction of both barley and mushroom fraction (P?<?0.05) which in turn resulted in a reduction in product hardness (P?<?0.05). In vitro digestion protocol illustrated that inclusion of barley and mushroom β-glucan rich fractions manipulated the starch digestibility profile and hence rate of glucose release during digestion compared to the control sample. This in turn resulted in a significant (P?<?0.05) reduction in potential glycaemic response of the samples of between 20 and 25 % for barley β-glucan rich fractions and between 17 and 25 % for mushroom β-glucan rich fractions. We conclude that the inclusion of these fractions could be utilised by the food industry to manipulate the glycaemic response of extruded snack products.  相似文献

Awareness on nutritive value and health benefits of rice is of vital importance in order to increase the consumption of rice in daily diet of the human beings. In this study, a total of six aromatic and two non-aromatic rice accessions grown in India were analysed for their nutritional quality attributes including proximate composition, mineral contents and fatty acids. Data with three replications were used to measure Pearson's simple correlation co-efficient in order to establish the relationship among various nutritional quality attributes. The result on proximate composition showed that Govind Bhog had the highest moisture (13.57%) and fat (0.92%) content, which signifies its tasty attribute. Badshah Bhog exhibited the highest fibre content (0.85%), carbohydrate content (82.70%) and food energy (365.23 kCal per 100 g). Among the minerals, the higher Ca (98.75 mg/kg), Zn (17.00 mg/kg) and Fe (31.50 mg/kg) were in Gopal Bhog, whereas the highest Na (68.85 mg/kg) was in Badshah Bhog, the highest K (500.00 mg/kg) was in Swetganga, Khushboo and Sarbati. The highest contents of unsaturated fatty acids viz. oleic acid (49.14%), linoleic acid (46.99%) and linolenic acid (1.27%) were found in Sarbati, whereas the highest content of saturated fatty acids viz. myristic acid (4.60%) and palmitic acid (31.91%) were found in Govind Bhog and stearic acid (6.47%) in Todal. The identified aromatic rice accessions Gopal Bhog, Govind Bhog and Badshah Bhog and non-aromatic rice accession Sarbati were found nutritionally superior among all eight tested accessions. The nutritional quality oriented attributes in this study were competent with recognized prominent aromatic and non-aromatic rice accessions as an index of their nutritional worth and recommend to farmers and consumers which may be graded as export quality rice with good unique nutritional values in international market.  相似文献

A 2‐year whole‐farm study compared pasture‐based systems increasing milk production per ha by increasing either stocking rate (from 2·5 to 3·8 cows ha?1) or milk yield per cow (from 6000 to 9000 kg cow?1 lactation?1) or both. Four treatments (systems), comprising 30 cows each, were compared under the same management and grazing decision rules. The diet was based on grazed pasture, whereas pellets and conserved fodder were fed when deemed necessary. Milk production per ha increased by 0·49, 0·1 and 0·66 in the systems that increased either stocking rate, milk yield per cow or both respectively. Cows in the ‘high milk yield per cow’ systems had a significantly higher body condition score throughout the lactation, but reproductive performance was similar among all groups. Total pasture utilized (11 t DM ha?1 year?1) and pasture nutritive value were similar across all systems. This was associated with the grazing rules applied and the ability of accurately supplementing to meet deficits in available pasture. At the whole‐system level, there was a higher marginal efficiency of supplement use when increasing stocking rate than when increasing milk yield per cow or increasing both (0·18, 0·07 and 0·12 kg milk MJ?1 of metabolizable energy of supplements respectively).  相似文献

Cassava (Manihot esculenta Crantz) native starch was treated with pyroconversion and enzymatic hydrolysis to produce a pyrodextrin and an enzyme-resistant maltodextrin. Some nutritional characteristics were quantified for both compounds. Pyroconversion was done using a 160:1 (p/v) starch:HCl ratio, 90 °C temperature and 3 h reaction time. The resulting pyrodextrin contained 46.21% indigestible starch and 78.86% dietary fiber. Thermostable α-amylase (0.01%) was used to hydrolyze the pyrodextrin at 95 °C for 5 min. The resulting resistant maltodextrin contained 24.45% dextrose equivalents, 56.06% indigestible starch and 86.62% dietary fiber. Compared to the cassava native starch, the pyrodextrin exhibited 56% solubility at room temperature and the resistant maltodextrin 100%. The glycemic index value for the resistant maltodextrin was 59% in healthy persons. Its high indigestible starch and dietary fiber contents, as well as its complete solubility, make the resistant maltodextrin a promising ingredient for raising dietary fiber content in a wide range of foods, especially in drinks, dairy products, creams and soups.  相似文献

Selected Lactobacillus plantarum DSM 32248 and Lactobacillus rossiae DSM 32249, isolated and identified from wheat germ, were used to ferment a milling by-products mixture. Lactic acid bacteria metabolisms improved the functional properties of wheat bran and germ, which are considered important sources of functional compounds. Wheat breads were manufactured using 15% (w/w) of fermented (and unfermented) milling by-products, and compared to baker’s yeast wheat bread manufactured without the addition of milling by-products. The use of the fermented ingredient improved the biochemical, functional, nutritional, textural, and sensory features of wheat bread, showing better performances compared to the solely use of wheat flour. Protein digestibility, nutritional indexes, and the rate of starch hydrolysis markedly improved using fermented milling by-products as ingredient. Enriched bread was also characterized by high content of dietary fibre and low glycaemic index determined in vivo.This study exploited the potential of fermented milling by products as functional ingredient. According to the Regulations the bread made under this study conditions can be defined as “high fibre content” and “low glycaemic index”. A number of advantages encouraged the manufacture of novel and healthy and functional leavened baked goods.  相似文献

Cereal products are consumed daily by the majority of the population. Popular belief is that these cereal products, rich in carbohydrates, produce a high glycaemic response and may not be a contributing factor to the obesity epidemic throughout the world. Recently the food industry has investigated ways of improving the overall nutritional balance of carbohydrate rich foods and focused on increasing their dietary fibre (DF) contents at the expense of readily digestible carbohydrates. It is well documented that dietary fibre is involved in disease prevention and enhanced health of consumers. Moreover, the food industry can take advantage of the physicochemical properties of fibre to improve the viscosity, texture, sensory characteristics and shelf-life of their products. The focus of this review paper is on the influence of DFs (inulin, fructo-oligofructose, β-glucans, arabinoxylans and resistant starch) supplementation on the quality and nutritional aspects of common foods containing cereals- pasta, bread, muffins/cakes and extruded snacks. This review reports on the evidence regarding fibre enrichment of cereal foods and looks at the advances and future trends in enriched dietary fibre cereal products.  相似文献

Grass silage made in May from S24 perennial ryegrass was offered ad libitum to twelve Ayrshire cows in a 12-week feeding experiment. The silage had a DM concentration of 217 g kg -1, contained 147 g crude protein per kg DM and had a D-value of 64·6. In addition each cow consumed 1 kg hay per d plus concentrate supplements of dried sugar-beet pulp with (A) soya bean meal, (B)‘Pruteen’, a single-cell protein (C) groundnut cake. The three concentrate supplements each contained 250 g crude protein per kg DM and were offered at the rate of 2·9 kg per 10 kg milk. The daily intakes of silage DM were 8·38, 7·94 and 7·49 kg on treatments A, B and C, respectively, with the extreme values being significantly different. The mean daily yields of milk on treatments A and B were both 16·2 kg per cow, and were significantly higher than the yield of 15·2 kg per cow on treatment C. The fat and lactose contents of the milk on the three treatments were not significantly different, but the CP content on treatment C was significantly lower than that on the other treatments. It is concluded that soya bean meal and‘Pruteen’were superior to groundnut cake as a protein supplement in a silage-based ration.  相似文献

为提升富含ω-3功能油脂的系列油料作物在植物乳饮品中的应用,基于亚麻籽和火麻仁的营养特性,以亚麻籽、火麻仁为主要原料,探究了剪切粉碎时间(1~9 min)及火麻仁添加量(1/2~1/6)对亚麻籽-火麻仁植物乳(FHPM)的稳定性和营养成分溶出等的影响,对最优组(剪切粉碎3 min,火麻仁∶亚麻籽=1∶5)所得植物乳的营养素与风味物质组成进行剖析。结果表明,随着剪切粉碎时间增加,植物乳的自稳定性逐渐下降,大于3 min时明显分层,有絮凝现象。研究1~3 min的粉碎时间对营养的影响,发现剪切时间对蛋白质、油脂、膳食纤维、总酚、木酚素的溶出均有显著影响;且随着植物乳中火麻仁所占比例提高,蛋白质和油脂的含量明显提高,但植物乳的自稳定性显著下降,表明植物乳的稳定性与植物乳体系黏度、粒径、电位、颗粒组成等理化特性有关。最优组所得亚麻籽-火麻仁植物乳粒径为4.53 μm,电位为-32.15 mV,固形物含量为5.17 g/100 mL,蛋白质含量为1.32 g/100 g,脂肪含量为3.45 g/100 g,膳食纤维含量为0.47 g/100 g,碳水化合物含量为0.57 g/100 g;植物乳具有合适的表观黏度,可在无外源稳定剂条件下4℃稳定储藏21 d。分析显示该植物乳含有小分子酮类、醛类、醇类等,呈现果味、花香味等良好风味;含有合理的氨基酸和脂肪酸组成。  相似文献

This study evaluated the prediction accuracy of grass dry‐matter intake (GDMI) and milk yield predicted by the GrazeIn model using a large database representing 8787 per cow GDMI measurements. In this study, the animal input variables (age, parity, week of lactation, potential peak milk yield, milk fat content, milk protein content, bodyweight, body condition score (BCS), week of conception, BCS at calving and calf birth weight) were investigated. The mean actual GDMI of the database was 15·9 kg DM per cow d?1 and GrazeIn predicted a mean GDMI for the database of 15·5 kg DM per cow d?1. The mean bias was ?0·4 kg DM per cow d?1. GrazeIn predicted GDMI for the total database with an RPE of 15·5% at cow level. The mean actual daily milk yield of the database was 21·3 kg per cow d?1 and GrazeIn predicted a daily milk yield for the database of 22·2 kg per cow d?1. The mean bias was +0·9 kg per cow d?1. GrazeIn predicted milk yield for the total database with an RPE of 16·7% at cow level. From the evaluation, GrazeIn predicted milk yield of all cows in late lactation with a larger level of error than in early and mid‐lactation. This error appears to be due to the persistency of the lactation curve used by the model, which results in a higher predicted milk yield in late lactation compared with the actual milk yield.  相似文献

Canary seed (Phalaris canariensis) is used to feed birds but it has been recently considered a promising cereal with nutraceutical potential for humans. The aim of this work was to analyze the protein fractions from canary seed flour and from milk substitutes (prepared by soaking the seeds in water 12 and 24 h), and to evaluate antioxidant and antihypertensive capacity of peptides obtained after in vitro digestion. Prolamins were the major protein fraction, followed by glutelins. After digestion, albumins and prolamins fractions from milks presented higher levels of peptides than flour, globulins showed more peptides in flour and glutelins were found in similar concentrations in all samples; 24 h milk prolamins had the highest concentration of peptides. Purification by high performance liquid chromatography (HPLC), sequencing of peptides, in vitro antioxidant ABTS (2,2′-azino-bis, 3-ethylbenzothiazoline-6-sulphonic acid) and DPPH (2,2-diphenyl-1-picrylhydrazyl) assays, and antihypertensive capacity (angiotensin converting enzyme (ACE) assay), indicated that peptides from canary seed prolamins were the most efficient compounds with antioxidant and antihypertensive activity. Canary seeds may be considered an accessible and cheap source to prepare milk substitutes with high contents of bioactive peptides with remarkable functional properties to promote better human health and healthy ageing.  相似文献

Grazing plays an important role in milk production in most regions of the world. In this review, some challenges to the grazing cow are discussed together with opportunities for future improvement. We focus on daily feed intake, efficiency of pasture utilization, output of milk per head, environmental impact of grazing and the nutritional quality to humans of milk produced from dairy cows in contrasting production systems. Challenges are discussed in the context of a trend towards increased size of individual herds and include limited and variable levels of daily herbage consumption, lower levels of milk output per cow, excessive excretion of nitrogenous compounds and requirements for minimal periods of grazing regardless of production system. A major challenge is to engage more farmers in making appropriate adjustments to their grazing management. In relation to product quality, the main challenge is to demonstrate enhanced nutritional/processing benefits of milk from grazed cows. Opportunities include more accurate diet formulations, supplementation of grazed pasture to match macro- and micronutrient supply with animal requirement and plant breeding. The application of robotics and artificial intelligence to pasture management will assist in matching daily supply to animal requirement. Wider consumer recognition of the perceived enhanced nutritional value of milk from grazed cows, together with greater appreciation of the animal health, welfare and behavioural benefits of grazing should contribute to the future sustainability of demand for milk from dairy cows on pasture.  相似文献

The increasing demand for high-fiber products has favored the design of numerous bakery products rich in fiber such as bread, cookies, and cakes. The objective of this study was to evaluate the dietary fiber and estimated glycemic index of cookies containing extruded wheat bran. Wheat bran was subjected to extrusion process under three temperature profiles: TP1;(60, 75, 85 and 100 °C), TP2;(60, 80, 100 and 120 °C), and TP3;(60, 80, 110 and 140 °C) and three moisture contents: (15, 23, and 31 %). Cookies were elaborated using extruded wheat bran (30 %), separated into two fractions (coarse and fine). The dietary fiber content of cookies elaborated with extruded wheat bran was higher than the controls; C0 (100 % wheat flour) and C1 (30 % of no extruded bran coarse fraction) and C2 (30 % of no extruded bran fine fraction). The higher values of dietary fiber were observed on cookies from treatments 5 (TP1, 31 % moisture content and coarse fraction) and 11 (TP2, 31 % moisture content and coarse fraction). The estimated glycemic index of cookies ranged from 68.54 to 80.16. The dietary fiber content of cookies was increased and the lowest glycemic index corresponded to the cookies elaborated with extruded wheat bran. Cookie made with the treatment 11 had a better dietary fiber content and lower estimated glycemic index.  相似文献

The goal of this work was to analyze nutritional value of various minimally processed commercial products of plant protein sources such as faba bean (Vicia faba), lupin (Lupinus angustifolius), rapeseed press cake (Brassica rapa/napus subsp. Oleifera), flaxseed (Linum usitatissimum), oil hemp seed (Cannabis sativa), buckwheat (Fagopyrum esculentum), and quinoa (Chenopodium quinoa). Basic composition and various nutritional components like amino acids, sugars, minerals, and dietary fiber were determined. Nearly all the samples studied could be considered as good sources of essential amino acids, minerals and dietary fiber. The highest content of crude protein (over 30 g/100 g DW) was found in faba bean, blue lupin and rapeseed press cake. The total amount of essential amino acids (EAA) ranged from 25.8 g/16 g N in oil hemp hulls to 41.5 g/16 g N in pearled quinoa. All the samples studied have a nutritionally favorable composition with significant health benefit potential. Processing (dehulling or pearling) affected greatly to the contents of analyzed nutrients.  相似文献

The beneficial effect of dietary fiber (DF) consumption has long been recognized. The global economy and open market trade policies have increased the availability of food products in Mexican markets, resulting in a wide variety of ready-to-eat commercial breakfast cereals classified as ‘high fiber’. This research was aimed to evaluate the total dietary fiber contents, its fractions (soluble and insoluble) and β-glucan in 13 commercial ‘high-fiber’ breakfast cereals, as well as to evaluate their protein quality by rat bioassays. Commercial ‘high-fiber’ breakfast cereals had 7.42–39.82 % insoluble dietary fiber, 2.53–12.85 % soluble dietary fiber, and 0.45–4.96 % β-glucan. These ready-to-eat commercial ‘high-fiber’ breakfast cereals differed significantly in their total dietary fiber, their soluble and insoluble DF fractions, and also in their β-glucan contents. When supplied as experimental diets, in 14-day rat feeding trials, the ‘high-fiber’ breakfast cereals showed an adverse effect on the % N digestibility but protein utilization, as measured as net protein ratio (NPR), was not significantly affected. The consumption of these commercial breakfast cereals, especially those made of oats as the basic ingredient, is highly recommended, since these products, being a concentrated source of dietary fiber, do not affect their protein quality.  相似文献

New plant-based milk protein substitutes that do not exhibit immune-mediated adverse effects are in high demand. In-vitro digestibility (oral, gastric and duodenal) of rice was investigated at flowery, milky, dough and mature stages using SDS-PAGE and band densitometry. Possible allergenic proteins found were 13–14, 22–23, 37–39, and 52 kDa. Protein content in young rice at flowery-to-milky stage (9.19–11.48%) was higher than rice bran (8.90%). Possible allergens of young rice rapidly decreased and completely disappeared after digestion. Digestibility of dough-to-mature stage was much slower especially for colored rice. Proteins at 13–14, 52 kDa and 13–14, 37–39 kDa were indigestible in the mature stage of PT1 and RB respectively. High protein content and low allergic potential of young rice supported its possible use as a new plant-based protein alternative.  相似文献

The objective of this study was to determine molecular weight subunit distributions of soy protein isolate (SPI) by SDS-PAGE and gel size exclusion chromatography, and further to investigate the differences of thixotropy, viscosity, in vitro digestibility and immunoreactivity of SPI for infant formula produced in Chinese domestic companies and world famous SPI manufacturers such as Dupont and Fuji. The molecular subunit distributions were analyzed by SDS-PAGE and gel size exclusion chromatography, indicating that Solae and Fuji were hydrolyzed by proteolytic enzymes. The thixotropy of Fuji and Solae significantly reduced around by 95 %, compared with those of Mantianxue and Dupont Zhengzhou. The allergen contents of Fuji and Solae strikingly decreased by 60 and 84 % respectively, in contrast to that of Mantianxue. The in vitro protein digestibility of Solae at the end of pepsin and trypsin digestion markedly increased by 11.7 and 11.3 %, respectively, in comparison to those of Mantianxue. Suitable enzymatic hydrolyzed SPIs showed lower thixotropy, viscosity, immunoreactivity and higher in vitro protein digestibility than those from the other SPIs. The lower thixotropy indicates low difficulty or shear stress in swallowing for infants. The lower immunoreactivity will improve the safety of SPI for cow milk allergic babies.  相似文献

The objective of this study was to compare the biological and economic efficiency of a seasonal pasture‐based spring calving system of milk production on a high‐rainfall, heavy‐clay soil [Kilmaley (KMY)] to that on a lower‐rainfall free‐draining soil [Moorepark (MPN)] in Ireland. The physical performance data were obtained from a 3‐year study (1998–2000) carried out at both sites. Analysis of the system of milk production at the two sites was undertaken using the Moorepark Dairy System Model. Herbage dry‐matter production was greater at the MPN site with a greater proportion being produced between 1 September and 1 May. On average, over the 3 years, the system of milk production at the MPN site had a higher stocking rate (2·34 vs. 1·89 cows ha?1), higher milk production per cow (6421 vs. 5781 kg per cow), longer grazing season (250 vs. 149 d) and a higher proportion of the diet of the herd from grazed grass (0·70 vs. 0·40) than at KMY. Economic analysis showed that, in a 468 100 kg European Union milk quota scenario, the profitability at the MPN site was €28 417 greater than at the KMY site. At similar milk production per cow it was €19 138 greater. Monte Carlo simulation showed that the MPN site was stochastically dominant over the KMY site. Sensitivity analyses showed that farm profit was most sensitive to changes in milk price. The results also indicated that milk production in the future may not be sustainable economically on high‐rainfall, heavy‐clay soils in Ireland.  相似文献

Grass silage of hjgh digestibility made in late May from S23 perennial ryegrass was offered to twelve Ayrshire cows in a 16-week winter-feeding experiment. The silage had a DM content of 27.2% and contained 147% crude protein and 70.3% digestible organic matter in the DM. The silage was fed ad libitum and was the sole feed in the control treatment. In the other three treatments the silage was supplemented with barley, groundnut cake or a mixture of barley and groundnut supplying 4.7, 1.5 and 4.7 kg DM per cow per day respectively. The daily intakes of silage DM were 10.8 kg per cow in the control treatment and 8.6, 11.1 and 9.3 kg per cow in the barley, groundnut and barley plus groundnut treatments, respectively. The daily yields of milk were 14.6 kg per cow in the control, and 16.1, 17.6 and 17.9 kg per cow in the three supplement treatments, respectively. The fat content of the milk was highest in the barley treatment, whereas the SNF and CP contents were highest in the barley plus groundnut treatment. It is concluded that with a high digestibility silage, a supplement of groundnut cake was superior to barley for milk production.  相似文献
