Differences in muscular activity and rates of decline in the pH of the M. longissimus dorsi of lambs subjected to different methods of stunning and slaughter were observed. Lambs electrically stunned by a “head-to-leg” method had significantly lower initial pH values as compared to animals stunned by an electrical “head-only” method, or by captive bolt, or without any form of stunning prior to slaughter. When electrical stunning by a “head-to-leg” method was combined with low voltage (24V) electrical stimulation during slaughter and bleeding, mean pH values declined at the highest rate and fell to approximately 6.0 within two hours of slaughter. This last procedure, therefore, has the potential to greatly reduce times between slaughter and freezing without increasing the risk of cold shortening and the associated toughness of meat.  相似文献

Ever since the middle of the nineteen-eighties electrical stunning of cattle is used in industrial slaughter plants in New Zealand. Today electrical stun boxes operate in export slaughter plants throughout New Zealand. The reversible stun is utilised on the vast majority of slaughtered cattle. The electrical stunning (head only) immediately followed by bleeding is an alternative to ritual slaughter without prior stunning. Electrocardiograms (ECG's) were made from cattle and pigs after slaughter using only the left arm and right arm recording electrodes of a portable electrocardiogram with 12 recording electrodes. Functional heart activity was demonstrated in cattle after stunning with a captive bolt, nonpenetrative percussive methods and a head-only electrical technique. Recordings compatible with ventricular fibrillation were made in the majority of cattle and pigs subjected to a head-to-chest form of electrical stunning. In cases where the placement of stunning electrodes was defective, functional cardiac activity could be detected. Movement artefact on the ECG trace associated with epileptiform seizures following head-only electrical stunning was a technical problem. This was reduced by restunning the animal with a captive bolt before taking an ECG. The examination of ECG's made subsequent to slaughter could form an important component of the quality control of Halal slaughter or a slaughter process using the head-to-body electrical stunning techniques. Adoption of this would be facilitated by the development of a more simple and less sensitive electrocardiograph than that used in the present investigation.  相似文献

The onset of insensibility during slaughter was studied in five, 31-day-old pigs. The state of sensibility was determined from the study of electroencephalograms (EEC) which were of a bipolar transhemispheric derivation. In 3 pigs slaughtered by bilateral severance of both common carotid arteries and jugular veins, it was judged that insensibility occurred within 25s and there was no resurgence of cerebrocortical activity following subsequent respiratory gasps. The EEGs became isoelectric within 115s. These results are compared with previous findings by the authors that adult sheep and lambs slaughtered by similar techniques became insensible within 7s whereas, in calves, the onset of insensibility was delayed for up to 85s and there were resurgences of cerebrocortical activity, following a respiratory gasp, for more than 300s.

These differences in the apparent onset of insensibility in the 3 species of animal are discussed in relation to the anatomical features and possible dynamics of the blood supply to the brain during slaughter.

It is concluded that for humane reasons, “head-to-back” electrical stunning of pigs is preferable to a “head-only” method.  相似文献

A report is given on history and procedures of ritual slaughter from the point of view of a Moslem representative. The term sacrifice and the religious meaning of the offering feast are explained on the basis of the Abrahamian tradition. The social aspect of ritual slaughter is that two thirds of the slaughtered animal are given to the poor or served as meal to guests and relatives. One third is saved for the own family only. The Islamic religion acknowledges the responsibility of man for animals as creatures of god whose life and well-being have to be protected, nobody is allowed to subject animals to pain, suffering and damage without a sound reason. The ritual slaughter aims at complete debleeding. Blood is symbol life and soul and the breath of life. It must leave the body completely before consumption because it is not allowed to eat animals alive. Electric stunning is allowed if the animal is unconscious and not dead. The consumption of dead animals is forbidden by religion. It is recommended to introduce more veterinarian expert knowledge in the discussion.  相似文献

Until recently it had been widely assumed that some form of electrical stunning would be the only practical method for use in New Zealand freezing works. The captive bolt device has been used for stunning cattle at abattoirs for more than 100 years and is now one of the stunning devices used most widely. The aim of this review article was to assess the effects that are decisive during cattle slaughter on the quality of stunning with the use of a captive bolt stunning device. The basis of effective stunning is the use of a suitable type of device, with the speed of the bolt and the kinetic energy corresponding to the anatomical parameters of the slaughtered animal. The importance of the regular cleaning and maintenance of stunning devices and monitoring of the effectiveness of stunning goes without saying. The immediate loss of sensibility in the animal must occur after the first shot. The effectiveness of the stunning process can be quantified by regular monitoring of the behavior of animals after stunning with an emphasis on the loss of reflexes (corneal reflex, regular breathing, attempts to regain physiological posture) and checks on the shot location on the skulls of slaughtered animals.  相似文献

Investigations were carried out on the response of slaughter pigs to CO2 stunning with two different gas concentrations (80 vol%, 90 vol%, 73 s) under practical conditions in a one gondola-dip-lift system. EEG measurements were performed and blood constituents such as catecholamines (adrenaline, nor-adrenaline) and lactate as well as clinical reactions (nasal septum and corneal reflex, heart beats) investigated. Special EEG-electrodes were adapted for the measurement on pigs and a mobile data logger was prepared for the use in the lairage of the slaughter house and in the stunning unit. The CO2 concentrations were measured continuously close to the head of the pigs when transported up and down in the stunning gondola. The results show that the technique is suited to monitor the effects of different CO2 gas concentrations on the EEG of the pigs under practical conditions. There is strong evidence that CO2 concentrations of 80 vol% applied over 70 s as required by law are not sufficient to stun pigs properly. A large part of the animals still showed typical reflexes when leaving the stunning pit. When an atmosphere of 90 vol% CO2 is applied, most animals are already dead before bleeding commences. This may create problems in respect to meat hygiene. The blood analysis revealed very high concentrations of catecholamines after stunning. The values for adrenaline and nor-adrenaline in the sticking blood rose by a factor of about 1000 as compared to the concentrations in blood samples taken in the lairage before stunning. It seems necessary to revise the current legislation on gas stunning and to look in greater detail in the effects of CO2 stunning on the welfare of slaughter pigs.  相似文献

Cerebral venous and femoral arterial blood samples were collected from 21 young calves either during electrical stunning and recovery or electrical stunning and slaughter by carotid severance or slaughter without stunning. The blood samples were analysed for PO2, PCO2, pH, glucose and lactate. The results were compared with simultaneous recordings of spontaneous electrocortical (ECOG) activity. Calves subjected to head-only electrical stunning and slaughter became permanently insensible at the time of the stun. The six calves slaughtered without stunning lost sensibility within 10 seconds. One calf, in which a clot formed in the carotid arteries inhibiting bleeding, maintained some evidence of cortical activity beyond 52 seconds; this was high amplitude low frequency activity and analysis by Fast Fourier Transform showed sensibility was not regained. In the remaining calves the ECOG activity was lost on average within 49 +/- 3.5 (SEM) seconds after slaughter. The cerebral extraction of metabolites increased after carotid severance, indicating inadequacy of cerebral bloodflow after slaughter. No correlations were found between indices of cerebral metabolism and the time of loss of cortical function.  相似文献

  1. The study assesses the effectiveness of reversible head-only and back-of-the-head electrical stunning of chickens using 130–950 mA per bird at 50 Hz AC.

  2. Three trials were conducted to compare both stunning systems: (a) behavioural assessment of return of consciousness, (b) insensibility to thermal pain, and (c) assessment of return of brain activity with visually evoked potentials (VEPs).

  3. Assessment of behaviour suggested that the period of unconsciousness following head-only electrical stunning was shorter in hens compared to broilers.

  4. Stunning across the back-of-the-head delayed the time to return of brainstem function compared to stunning with standard head-only electrodes. Additionally, back-of-the-head stunning produced a more prolonged period of electroanalgesia compared to head-only.

  5. Based on examination of return of brain function with VEPs in hens, back-of-the-head stunning produced a shorter-lasting stun than standard head-only. However, even for standard head-only, the stun was notably shorter than previously reported. In some birds, brain function had returned within 9 s after the end of stunning.

  6. The results suggest that some birds may recover consciousness prior to or during the neck cut. Based on these findings, back-of-the-head stunning and standard head-only stunning of hens should not be recommended without further development.

This review summarises research of management practices that potentially impact on the welfare of farmed deer. The processes of capture and initial domestication of feral deer caused many welfare problems but are now essentially complete in New Zealand. The health and production status of farmed deer, and readily visible indicators of their welfare are generally good, although preventive medicines and optimum management practices have not been universally adopted. Research into social behaviour, effects of yarding, weaning, mating, calving, shelter, shade and nutrition has identified ways of improving the welfare of farmed deer and has provided recommendations for deer industry quality assurance programmes. Research has identified transport design and practices that minimise the impact of transport on deer welfare and reduce carcass wastage caused by bruising during transport. Time in lairage prior to slaughter should be minimised and electrical stunning is a humane method of slaughter. Ongoing research is needed on management practices and farm environments to further improve the welfare of farmed deer, consistent with the goals of the New Zealand deer industry and its proactive approach to date.  相似文献

Brain function was examined in adult cattle after conventional captive bolt stunning or shechita slaughter, using eight animals in each treatment. The times to loss of evoked responses (visual and somatosensory) and spontaneous activity in the electro-corticogram were used to determine the onset of brain failure. Captive bolt stunning followed by sticking one minute later resulted in immediate and irreversible loss of evoked responses after the stun. Spontaneous cortical activity was lost before sticking in three animals, and in an average of 10 seconds after sticking in the remaining five animals. The duration of brain function after shechita was very variable, and particularly contrasted with captive bolt stunning with respect to the effects on evoked responses. These were lost between 20 and 126 seconds (means of 77 seconds for somatosensory and 55 seconds for visual evoked responses) and spontaneous activity was lost between 19 and 113 seconds (mean 75 seconds) after slaughter.  相似文献

Many small slaughter facilities use head-only electrical stunning to render swine unconscious and insensible to pain before slaughter. Head-only electrical stunning is a reversible procedure that is optimally effective for approximately 15 s after stun completion. In many small North American slaughter plants, the authors have observed hoist speeds that are too slow to achieve a short enough stun-to-bleed interval to maintain insensibility through exsanguination. Unlike many European plants, there is no separate high-speed hoist for pigs and exsanguination on the floor is not condoned. As a result, a 2-stage stunning method was proposed where head-only stunning for 3 s was immediately followed by application of the same stunning wand to the cardiac region of the animal for 3 s while lying in lateral recumbancy. A paired-comparison study was conducted on 89 pigs in a small slaughter facility to compare the head-only method applied for 6 s with the head/heart method. The objective was to evaluate signs of return to sensibility, stun-to-bleed time, blood lactate concentration, muscle pH, drip loss, and fresh meat color to validate the head/heart electrical stunning method for small slaughter plants. Incidence of corneal reflex was not different (P > 0.05) between head/heart (93.8%) and head only (85%) stunning. Nose twitching was more common (P < 0.05) in head only (26.5%) than head/heart (5%) stunning. Head/heart stunning eliminated rhythmic breathing, natural blinking, eye tracking to moving objects, and righting reflex, which were all observed in head-only stunned pigs. Eye tracking to moving objects was observed in 40.8% of head-only stunned pigs. Blood lactate was not different (P > 0.05) between stunning methods (head only: 8.8 ± 0.7 mmol/L, head/heart: 7.8 ± 0.7 mmol/L). Stun-to-bleed time did not differ (P > 0.05; head only: 32 ± 1 s, head/heart: 33 ± 1 s). Mean time to loss of heartbeat with the head-only method was 121 ± 5 s. No heartbeat was observed with the head/heart method. Longissimus thoracis pH, color, and drip loss were not different (P > 0.05) between stunning methods. This study determined that the head/heart electrical stunning method reduces the incidence of signs of return to sensibility without significant effects on meat quality, plant operation speed, or blood lactate concentration. In addition, the head/heart method requires no capital investment for plants that are currently using the head-only method.  相似文献

Sir;- In New Zealand, calves are often electrically stunned before slaughter. However, electrical stunning is not usually used for adult cattle, primarily because the large size of the adult animal makes restraint more difficult, resulting in less reproducible stunning, with potential danger to personnel from animal movement. In addition, the slaughter of cattle may be inhumane if the stunning process does not ensure immediate and permanent insensibility (Newhook and Blackmore 1982b). The use and humaneness of electrical stunning of sheep and cattle have been the subject of our recent research, in which we have addressed and resolved many of these problems. We wish to relate our observations in the context of head-only electrical stunning of cattle followed by electro-immobilization to maintain insensibility and ensure carcass stillness.  相似文献

1. According to the loading density there is a significant increase of the physical burden (strain) during a transport of pigs to the slaughterhouse. Keeping up minimal requirements (kgs pigs/sqm) the stress reaction decreases and the meat quality becomes better. 2. Each transport produces excitement which can be shown in higher respiratory and heart frequencies. The slaughtering of excited animals shows a higher percentage of carcasses with bad meat quality. Waiting times from at least 2 hours up to a maximum of 4 hours shows that the percentage of carcasses with a better meat quality increases. 3. Handling of animals at the slaughterhouse prior to stunning by dividing the number of pigs into small groups of at least 9 animals is very important especially because it reduces the excitement of the pigs prior to stunning. The stunning results are getting better. Mistakes in handling pigs prior to stunning especially in guiding them to the stunning place usually destroy all positive efforts for optimal transparent conditions and keeping up waiting times after transport. 4. The last step ahead to the stunning equipment. No good solution does exist which makes the pigs willingly do this last step and enter the place where the stunning is performed. This results in the CO2 stunning system itself as well as in the automatic electrical stunning equipment using a restrainer. 5. Stunning with CO2.  相似文献

Pre-slaughter and slaughter stressors are considered major concerns in animal welfare. Halal slaughtering method is considered one of the slaughtering stressors in livestock. This method seems to cause fear followed by stress in animals mainly due to inhuman handling. In this review, empathy and animal welfare are discussed in light of Islamic sharia and has further linked with animal’s physiology and behavioral responses during slaughtering. Islam as a religion forbids slaughtering an animal in front of another animal as through optic, olfactory, and cochlear senses animals can perceive the stress state of conspecifics. This suggests and strengthens the hypothesis that animals being slaughtered in front of each other may produce stress in them. This argument further leads to a claim that animals can experience empathy of each other through olfaction of semiochemicals (stress pheromones) emitted from animals slaughtered in the stressful condition that can be detected by other animals in abattoirs. Hence, research is needed to find out these specific stress pheromones and legislation needs to be adopted in slaughterhouses to isolate the areas of butchery from slaughtering lines to ensure proper guidelines of Halal slaughtering in slaughterhouses.  相似文献

AIM: To identify whether cutting neck tissues or cutting major blood vessels initiates the mechanisms responsible for electroencephalographic (EEG) responses to slaughter by ventral-neck incision without prior stunning in halothane-anaesthetised calves.

METHODS: Calves were assigned to two groups, viz transection of neck tissues with intact blood circulation through the brain (n=10), or transection of the major blood vessels of the neck but not most other neck tissues (n=7). They were minimally anaesthetised with halothane, using an established anaesthesia protocol. The animals in the neck-tissue transection group had their carotid arteries and jugular veins exposed and cannulated proximal and distal to the proposed site of subsequent ventral-neck incision; this diverted blood fl ow through these vessels so that cerebral perfusion and drainage were preserved. In animals in the blood-vessel transection group, the carotid arteries and jugular veins were exposed bilaterally by surgical dissection. They were then transected without further damage to the remaining structures of the neck. Changes in the median frequency (F50), 95% spectral edge frequency (F95), total power of the EEG (Ptot), and arterial blood pressure were compared within each group before and after neck-tissue or blood-vessel transection, and between groups following treatments.

RESULTS: Neck-tissue transection resulted in little overall change in the F50, an increase in the F95, and an initial increase in Ptot followed by a transient decrease and eventual return to pre-treatment values. There was between-animal variation in these EEG parameters. Transection of the major blood vessels of the neck resulted in a decrease in F50 in most animals; changes in F95 were highly variable, and there was a decrease in Ptot.

CONCLUSIONS: The EEG responses seen following necktissue and blood-vessel transection were qualitatively distinct, and suggested that cutting neck tissues caused greater noxious sensory input than transection of only the major blood vessels of the neck. These observations support the conclusion that the EEG responses seen after ventral-neck incision in intact animals are primarily due to noxious stimulation as a result of incision of ventral-neck tissues and not mainly as a result of loss of blood flow through the brain.  相似文献

The judgement of the German Constitutional Court from February the 15th in 2002 allows Moslems to perform ritual slaughter, provided that they can state compelling religious reasons. Animal protection was assessed just as a public interest in contrast to the constitutional rights of religious and professional freedom. However this can not be kept up any more as it is aimed to integrate animal protection into the German constitutional law. The authorities now have the duty to investigate each request for ritual slaughter carefully. This investigation must include a close look at the compelling religious reasons, the expert knowledge of the applicant (which includes stunning methods), the local facilities of the slaughterhouse and which is more for whom the meat is for. It is also important whether the animal is slaughtered for sacrificial or commercial reasons. Furthermore the consequences which threaten the religious community, if their members don't live according to the rules, have to be shown. Electric stunning and the fact that it is accepted by Islamic authorities has also to be pointed out. It seems to be possible to turn down a request for ritual slaughter referring that to the fact that animal protection is aimed to be part of the constitutional law.  相似文献
