Freezing and prolonged frozen storage of dough results in constant deterioration in the overall quality of the final product. In this study the effect of wheat bran and wheat aleurone as sources of arabinoxylan (AX) on the quality of bread baked from yeasted frozen dough was investigated. Wheat fiber sources were milled to pass through a 0.5 mm screen, prehydrated for 15 min, and incorporated into refined wheat flour at 15% replacement level. Dough products were prepared from refined flour (control A), whole wheat flour (control B), aleurone composite flour (composite flour A), and bran composite flour (composite flour B) and stored at –18°C for 28 weeks. Dough samples were evaluated for breadmaking quality at zero time, 14 weeks, and 28 weeks of storage. Quality parameters evaluated were loaf weight, loaf specific volume, and crumb firmness. Composite flour bread samples showed the most resistance to freeze damage (less reduction in the overall product quality), indicating a possible role of some fiber components (e.g., AX) in minimizing water redistribution in the dough system and therefore lessening adverse modifications to the gluten structure. The data suggest that the shelf life of frozen dough and quality of obtained bread can be improved with the addition of an AX source.  相似文献

The improving effects of transglutaminase (TGase) were investigated on the frozen dough system and its breadmaking quality. Rheological properties and microstructure of fresh and frozen doughs were measured using a Rapid Visco‐Analyser (RVA), dynamic rheometer, and scanning electron microscopy (SEM). The frozen doughs with three storage periods (1, 3, and 5 weeks at –18°C) were studied at three levels (0.5, 1.0, and 1.5%) of TGase. As the amount of TGase increased, hot pasting peak viscosity and final viscosity from the RVA decreased, but breakdown value increased. The TGase content showed a positive correlation with both storage modulus G′ (elastic modulus) and the loss modulus G″ (viscous modulus): G′ was higher than G″ at any given frequency. The SEM micrographs showed that TGase strengthened the gluten network of fresh, unfrozen dough. After five weeks of frozen storage at –18°C, the gluten structure in the control dough appeared less continuous, more disrupted, and separated from the starch granules, while the dough containing 0.5% TGase showed less fractured gluten network. Addition of TGase increased specific volume of bread significantly (P < 0.05) with softer bread texture. Even after the five weeks of frozen storage, bread volume from dough with 1.5% TGase was similar to that of the fresh control bread (P < 0.05). The improving effects of TGase on frozen dough were likely the result of the ability of TGase to polymerize proteins to stabilize the gluten structure embedded by starch granules in frozen doughs.  相似文献

Recent attention to dietary fiber in wheat (Triticum aestivum L.) has invigorated research in the nonstarch carbohydrate arabinoxylan (AX). AX molecules are composed of a linear xylose backbone with arabinose substitutions along the backbone. These arabinose substituents can also carry a ferulic acid moiety. AX molecules can be fractionated into two categories based on extraction properties that have a structural and conformational basis: water‐extractable (WEAX) and water‐unextractable (WUAX) molecules. The ferulic acid moieties also allow for oxidative cross‐linking between AX molecules or the tyrosine residues of proteins. The contents of total AX and WEAX molecules are primarily influenced by genetic differences; however, there is also evidence of environmental influence on content. There are several useful methods for quantifying AX molecules, providing varying levels of structural information as well as accuracy and precision. The high water‐absorption capacity of AX molecules results in a strong influence of AX on end‐use quality. Whereas WEAX molecules, in particular, tend to be detrimental for the quality of soft wheat products such as cookies, WEAX molecules are beneficial to the quality of hard wheat products such as bread. The role of WUAX molecules among the range of soft wheat products is as yet unclear; however, WUAX molecules tend to have a detrimental influence on bread. Because of the variable influence of AX structure on end‐use product functionality, closer examination of structure–function relationships may provide key insights into how to direct breeding efforts to maximize these relationships between AX molecules and other ingredients. Further investigation is necessary to obtain a more complete understanding of how the arabinose substitution levels and patterns affect end‐use quality and how the genetic basis of these traits can be resolved and manipulated for optimum end‐use quality.  相似文献

In situ enrichment of bread with arabinoxylan‐oligosaccharides (AXOS) through enzymic degradation of wheat flour arabinoxylan (AX) by the hyperthermophilic xylanase B from Thermotoga maritima (rXTMB) was studied. The xylanolytic activity of rXTMB during breadmaking was essentially restricted to the baking phase. This prevented problems with dough processability and bread quality that generally are associated with thorough hydrolysis of the flour AX during dough mixing and fermentation. rXTMB action did not affect loaf volume. Bread with a dry matter AXOS content of 1.5% was obtained. Further increase in bread AXOS levels was achieved by combining rXTMB with xylanases from Pseudoalteromonas haloplanktis or Bacillus subtilis. Remarkably, such a combination synergistically increased the specific bread loaf volume. Assuming an average daily consumption of 180 g of fresh bread, the bread AXOS levels suffice to provide a substantial part of the AXOS intake leading to desired physiological effects in humans.  相似文献

The effects of Trametes hirsuta laccase and Pentopan Mono BG xylanase and their combination on oat, wheat, and mixed oat-wheat doughs and the corresponding breads were investigated. Laccase treatment decreased the content of water-extractable arabinoxylan (WEAX) in oat dough due to oxidative cross-linking of feruloylated arabinoxylans. Laccase treatment also increased the proportion of water-soluble polysaccharides (WSNSP) apparently due to the beta-glucanase side activity present in the laccase preparation. As a result of the laccase treatment, the firmness of fresh oat bread was increased. Xylanase treatment doubled the content of WEAX in oat dough and slightly increased the amount of WSNSP. Increased stiffness of the dough and firmness of the fresh bread were detected, probably because of the increased WEAX content, which decreased the amount of water available for beta-glucan. The combination of laccase and xylanase produced slight hydrolysis of beta-glucan by the beta-glucanase side activity of laccase and enhanced the availability of AX for xylanase with concomitant reduction of the amount and molar mass of WSNSP. Subsequently, the volume of oat bread was increased. Laccase treatment tightened wheat dough, probably due to cross-linking of WEAX to higher molecular weight. In oat-wheat dough, laccase slightly increased the proportion of WSNSP between medium to low molecular weight and increased the specific volume of the bread. Xylanase increased the contents of WEAX and WSNSP between medium to low molecular weight in oat-wheat dough, which increased the softness of the dough, as well as the specific volume and softness of the bread. The results thus indicate that a combination of laccase and xylanase was beneficial for the textures of both oat and oat-wheat breads.  相似文献

The combination of Rhizopus chinensis lipase (RCL) and transglutaminase (TG) was previously reported to improve the quality of frozen dough bread. In this study, the effects of RCL, TG, and their combination on the modification of glutenin macropolymer (GMP) and rheological properties of dough during frozen storage were investigated. Frozen storage changed both GMP and rheology properties of dough. TG treatment significantly decreased the ratio of high‐molecular‐weight glutenin subunits to low‐molecular‐weight glutenin subunits and GMP content in fresh dough, and GMP particle size increased. The effect of RCL on GMP properties was not significant, but its combination with TG dramatically increased the proportion of the larger particles and weighted average volume (D4.3) in GMP. The treatment with the enzyme combination could have inhibited the depolymerization of GMP, which slowed down the decrease rate of some parameters such as GMP content, proportion of larger particles, D4.3, and release of free amino and thiol groups during frozen storage. The modification of GMP properties by enzyme treatment weakened the effect of the freezing process on rheological properties of dough, especially TG treatment and its combination with RCL. Correlation between GMP particle size and dough properties (dough tensile force and elastic modulus) after freezing and enzyme treatment were confirmed.  相似文献

Breadmaking properties (bread height, mm, and specific volume, cm3/g ) showed marked deterioration when bread dough was frozen and stored at ‐20°C for one day. However, these properties of bread dough baked after storage for three to six days were not further deteriorated as compared with that baked after one day of storage. A large amount of liquid was oozed from the frozen‐and‐thawed bread dough. The liquid was separated from the bread dough by centrifugation (38,900 × g for 120 min at 4°C), and collected by tilting the centrifuge tube at an angle of 45° for 30 min. There was a strong correlation between the amount of centrifuged liquid and breadmaking properties (bread height and specific volume). The mechanism responsible for the oozing of liquid in frozen‐and‐ thawed bread dough was studied. The presence of yeast and salt in bread dough was suggested to be closely related to the amount of centrifuged liquid, and fermented products particularly had a large effect on the amount of centrifuged liquid.  相似文献

This study investigated the antifreeze activity (AF) of γ‐polyglutamic acid (γ‐PGA), freezing resistance of yeast cells and sweet dough, and the mechanism influenced by γ‐PGA. Properties studied included AF of γ‐PGA, water‐holding capacity of flour, survival ratio and oxidation resistance capability of yeast cells, ice melting enthalpy (ΔH), and fermentation and breadmaking properties of sweet dough. The AF of γ‐PGA was 8.03 g of unfrozen water/g of sample, indicating good AF. γ‐PGA was tested on yeast cells and sweet dough stored frozen for 0, 1, 2, 4, and 8 weeks at four levels (0, 0.5, 1, and 3%). Survival ratio of yeast cells with γ‐PGA was significantly higher than the corresponding control. A possible mechanism might be related to the modulation of oxidation resistance capability of yeast cells by γ‐PGA. A decrease in glutathione release from frozen yeast cells and an increase in water‐holding capacity of wheat dough were observed with the addition of γ‐PGA. In the presence of γ‐PGA, ΔH, ice melting temperature, and proofing time of frozen sweet dough decreased significantly, and fermentation parameters improved, compared with the corresponding control sample. Specific volume of bread made from frozen sweet dough with 0.5, 1, and 3% γ‐PGA increased by 6.3, 8.9, and 3.3%, respectively, after 8 weeks of frozen storage. γ‐PGA enhanced the freezing resistance of yeast cells and sweet dough effectively, and the effect on specific volume of bread was not linear, with 1% showing better results.  相似文献

A Bacillus subtilis endoxylanase (XBS) with a strong selectivity for hydrolysis of water‐unextractable arabinoxylan (WU‐AX) and an Aspergillus aculeatus endoxylanase (XAA) with a strong selectivity for hydrolysis of water‐extractable arabinoxylan (WE‐AX) were used in straight‐dough breadmaking with two European wheat flours. Dough, fermented dough, and bread characteristics with different levels of enzyme addition were evaluated with a strong emphasis on the arabinoxylan (AX) population. The WU‐AX solubilized by XBS during breadmaking were mainly released during mixing and had higher molecular weight, in contrast to their counterparts solubilized by XAA, which were mainly released during fermentation and had lower molecular weight. This coincided with increased loaf volume with XBS and a negative to positive loaf volume response with XAA. Bread firmness and dough extract viscosity also were affected by endoxylanase addition. Results confirmed that WU‐AX are detrimental for breadmaking, while WE‐AX and solubilized AX with medium to high molecular weight have a positive impact on loaf volume.  相似文献

The beneficial effects of a new recombinant lipase (Rhizopus chinensis lipase [RCL]) and transglutaminase (TG) were investigated on frozen dough systems and their breadmaking quality. Rheological properties and microstructure of doughs were measured using a dynamic rheometer, rheofermentometer F3, and scanning electron microscopy (SEM). Measurements of viscoelastic properties showed that both G′ and G″ of dough containing RCL and TG were greater than those of the control after 35 days of frozen storage. The SEM micrographs showed that dough containing RCL and TG had the most starch granules embedded in or attached to the gluten network, and the gluten seemed more powerful and resilient than for the control dough after 35 days of frozen storage. Results of the gas production and dough development tests indicated that RCL and TG improved the rheofermentative characteristics of frozen dough. RCL and TG could improve water‐holding capacity and significantly increase the glycerol content of the control dough. Image analyses showed that bread crumbs containing RCL and TG had a more open network and uniform crumb structure, which resulted in higher specific volume. This combination also yielded a product with higher sensory scores for test breads.  相似文献

The effects of freezing and frozen storage of bread dough and compressed yeast on bread quality were studied. Besides, the effects of compressed yeast freezing on cell viability, gas production and release of substances by the yeast cells were examined. Freezing and frozen storage of dough made with fresh yeast had more negative effects on baking quality than the addition of frozen yeast to dough. When the compressed yeast is frozen and stored at ‐18°C, the CO2 production decreased, while the amount of dead cells, the total protein, and the total reducing substances leached from the yeast increased as the length of yeast frozen storage increased. SDS‐PAGE showed that the substances leached from frozen yeast caused an increase in the solubility of some gluten proteins. On the other hand, size‐exclusion chromatography (SEC) pointed out that the relative amount of two protein fractions of low molecular weight leached from frozen yeast increased for longer yeast frozen storage periods. The yeast leachates had an adverse effect on loaf volume.  相似文献

为了探讨全燕麦粉面包、馒头加工品质及燕麦粉冷冻面团品质特性,以燕麦全粉为原料,研究了添加沙蒿籽和谷朊粉对燕麦全粉食品(含冷冻面团食品)加工品质改良效果。试验结果表明,谷朊粉对面包制作影响较大;沙蒿籽粉对馒头制作影响较大;沙蒿籽粉和谷朊粉共同使用的效果优于两者单独使用;加入2.5%沙蒿籽粉和8%谷朊粉对燕麦全粉面包和馒头品质改善效果最好。对冷冻面团加工而言,随着冷冻时间的延长面团品质不断下降,冻藏4 d后燕麦全粉冷冻面团面包、馒头品质显著降低。  相似文献

为了探究酶制剂对非发酵面团在冻融循环后的品质的影响,该文比较了2种酶制剂转谷氨酰胺酶(TGase)与木聚糖酶(xylanase)对非发酵面团冻融品质的改良效果。结果表明,与对照组相比,添加转谷氨酰胺酶和木聚糖酶均能改变冻融后面团蛋白各组分的含量。添加转谷氨酰胺酶使醇溶蛋白以及谷蛋白含量显著下降(P0.05)、谷蛋白大聚合体含量有所上升。添加木聚糖酶则使醇溶蛋白含量上升,使谷蛋白含量显著降低(P0.05)。转谷氨酰胺酶对面团中戊聚糖含量影响不显著(P0.05),而添加木聚糖酶使面团中可溶性戊聚糖含量显著上升(P0.05)。转谷氨酰胺酶的添加加速了冻融循环后非发酵面团的失水,木聚糖酶则显著降低了其失水率(P0.05)。除在10 g/kg转谷氨酰胺酶显著降至1.32 ms外,弛豫时间T2(1)基本维持在1.75 ms,而弛豫时间T2(2)均有所减小;添加转谷氨酰胺酶后,深层结合水相对含量呈逐渐上升趋势;而木聚糖酶则反之。木聚糖酶使冻融面团强韧性与对照组相比显著增强(P0.05),剪切力小幅下降,硬度显著下降(P0.05);与转谷氨酰胺酶相比,木聚糖酶更能缓解冻融面团的质构劣变;转谷氨酰胺酶改善冻融熟面坯的黏性、弹性与内聚性,木聚糖酶则改善"硬度上升,弹性下降"的劣变现象。在改善冻融面团流变特性方面,转谷氨酰胺酶效果更为显著(P0.05)。因此,添加转谷氨酰胺酶与木聚糖酶均能在一定程度上改善冷冻非发酵面团在冻融条件下的品质劣变,但它们的作用方面有所差异。研究结果为两者能够在冷冻非发酵面制品中被广泛地应用提供理论基础。  相似文献

The effects of freezing and storage in frozen conditions on bread quality, crumb properties, and aggregative behavior of glutenins were analyzed. The effect of different additives on bread quality was also studied. The results obtained showed that freezing and storage at -18 degrees C decreased the bread quality. Samples stored in frozen conditions supplemented with diacetyl-tartaric acid ester of monoglycerides, gluten, and guar gum produced breads of greater volume and more open crumb structure than those prepared with the base formulation (without additives). All additives analyzed increased the proof time. Crumb firmness increased with dough frozen storage and bread aging time at 4 degrees C. A decrease in the amount of glutenin subunits of high molecular mass was observed by electrophoresis analysis of the SDS-soluble proteins aggregates extracted from the frozen dough. This result suggested that the protein matrix of bread underwent depolymerization during storage in frozen conditions.  相似文献

为了找出使冷冻面团和馒头综合品质较稳定的酵母产品,采用动态流变仪和F3发酵仪对低糖型国光高活性干酵母(1#)、英联马利苹果即发高活性干酵母(2#)、品一高活性干酵母(3#)、高糖型马利即发高活性干酵母(4#)、高糖型丹宝利即发高活性干酵母(5#)和耐高糖安琪高活性干酵母(6#)冷冻面团冻藏35 d过程中的流变学特性和发酵特性进行研究,并对由此面团制作馒头的质构、色泽、比容和感官品质进行分析。结果表明:不同市售酵母冷冻面团在不同冻藏时间下的流变学特性和发酵特性不同。不同酵母冷冻面团制作馒头后硬度、弹性、回复性、咀嚼性、亮度、红度、黄度、比容和感官品质分别差异显著,不同冻藏时间下同种酵母冷冻面团馒头的质构、色泽、比容和感官品质也分别差异显著。6种酵母在冻藏35 d内,1#和2#酵母冷冻面团的发酵活力始终较大,6#酵母冷冻面团的发酵特性参数始终最稳定;1#、5#和6#酵母冷冻面团的弹性模量与黏性模量较大,其中面团流变学特性最稳定的是5#;1#和6#酵母冷冻面团制作馒头的感官品质较好的同时,比容较高,色泽品质较好,质构品质也较好。因此整个冻藏期间,使冷冻面团和馒头综合品质较好较稳定的是1#,其次是6#。研究结果为冷冻面团馒头工业化生产中酵母的选择提供参考。  相似文献

Arabinoxylans (AX) are well known to have a wide‐ranging influence on wheat (Triticum aestivum L.) end‐use quality and are associated with health benefits. There is little information on the effects of processing on AX properties in high‐water‐content batter‐based products and on the associations between AX properties and end‐use quality in such products. The objective of this study was to track total and water‐extractable AX (TAX and WEAX, respectively) contents and determine changes in AX characteristics throughout the baking process of pancakes, a batter‐based wheat product. The TAX and WEAX contents along with the arabinose‐to‐xylose (A/X) ratio were quantified in refined flour and wholemeal as well as batter and pancakes from two soft and three hard wheat varieties. ANOVA F values indicated that the variation in TAX content was influenced most by sample type differences (flour versus batter versus pancakes), whereas varietal differences were responsible for the greatest differences in WEAX. In separate analyses on refined and wholemeal flours, the highest F values were for variety WEAX, largely attributed to the higher WEAX content of the three hard varieties. WEAX levels generally increased slightly from flour to batter to pancakes in refined flour. The WEAX content in flour, batter, and pancakes of both refined flour and wholemeal was highly correlated with pancake volume. These observations suggest moderate changes in wheat AX characteristics during processing and a positive association of WEAX levels with end‐product volume in a batter‐based product.  相似文献

Water transport from the gluten to the starch paste during frozen storage of a dough was studied by analysis of the differential scanning calorimetry (DSC) peak shape for gluten and dough. The results indicate that in gluten stored at ‐15°C, the water content in the gluten phase decreased by ≈1% over the first three weeks. An apparent steady state was attained over this period and the amount of ice did not increase further. Such changes were not observed for samples stored at ‐25°C. Qualitatively similar observations were made for dough stored at either ‐15 or ‐25°C. The greater sensitivity of dough to frozen storage is tentatively attributed to a slightly lower glass transition temperature in dough.  相似文献

Flours differing in water content of 10% (F10), 12% (F12), and 14% (F14) were stored for 16 weeks at 22, 32, and 45°C. The major changes in lipids concerned the free fatty acids (increase) and the triglycerides (decrease). In all cases, the changes increased with increasing storage temperature and water content. After 16 weeks of storage, the losses in lipoxygenase (LOX) activity increased with increasing flour moisture and storage temperature from 10% for F10 at 22°C to 100% for F14 at 45°C. At the end of storage at 22 and 32°C, the bread volumes decreased by 10 and 25%, respectively, with no statistical differences (P < 0.05) between the samples. At 45°C, the volume losses were equal to 35, 46, and 61% for the F10, F12, and F14 samples, respectively. In the same time, the flour oxidative ability (oxygen uptake during dough mixing) increased for the F10 and F12 samples with increasing storage temperature, whereas it decreased for the F14 samples stored at 45°C. Therefore, provided the residual LOX activity is sufficient (omission of the F14 samples stored at 45°C), the flour oxidative ability increased during storage and is positively correlated to its oxidable PUFA content.  相似文献

A green tea extract (GTE) was incorporated into bread as a source of tea catechins. The stability of tea catechins in the breadmaking process including unfrozen and frozen dough was studied. A method was developed for the separation and quantification of tea catechins in GTE, dough, and bread samples using a RP-HPLC system. The separation system consisted of a C18 reversed-phase column, a gradient elution system of water/methanol and formic acid, and a photodiode array UV detector. Tea catechins were detected at 275 nm. GTEs at 50, 100, and 150 mg per 100 g of flour were formulated. The results obtained showed that green tea catechins were relatively stable in dough during freezing and frozen storage at -20 degrees C for up to 9 weeks. There were no further detectable losses of tea catechins in bread during a storage of 4 days at room temperature. It was also revealed that (-)-epigallocatechin gallate (EGCG) and (-)-epigallocatechin (EGC) were more susceptible to degradation than (-)-epicatechin gallate (ECG) and (-)-epicatechin (EC). (-)-EGCG and (-)-ECG were normally selected as the quality indices of green tea catechins, and their retention levels in freshly baked bread were ca. 83 and 91%, respectively. One piece of bread (53 g) containing 150 mg of GTE/100 g of flour will provide 28 mg of tea catechins, which is approximately 35% of those infused from one green tea bag (2 g).  相似文献

The effect of bran prehydration on the composition and bread‐baking quality was determined using bran and flour of two wheat varieties. Bran was hydrated in sodium acetate buffer (50mM, pH 5.3) to 50% moisture at 25 or 55°C for 1.5 or 12 h. The soluble sugar content in bran increased with prehydration. Decreases in phytate and soluble fiber were observed in prehydrated bran, but insoluble fiber was not affected by prehydration. Likewise, free phenolic content decreased, and there was little change in the content of bound phenolics in prehydrated bran. The compositional changes were greater in the bran prehydrated at 55 than at 25°C, and for 12 than for 1.5 h. Addition of prehydrated bran delayed dough development of bran and flour blends and slightly increased water absorption of dough. A higher loaf volume of fresh bread and lower crumb firmness of bread stored for 10 days were observed in bread containing bran prehydrated at 25°C than in bread containing nonhydrated bran or bran prehydrated at 55°C. The prehydration of bran at 25°C before being incorporated into refined flour for dough mixing improved bread quality by altering bran compositional properties, allowing enough water to be absorbed by fibrous materials in the bran and preventing water competition among dough constituents.  相似文献
