This work was carried out to investigate the pulp composition of four mango cultivars (Haden, Tommy Atkins and Ubá) at the ripening stage in relation to three components with antioxidant potential (total phenolics, carotenoids and ascorbic acid). Total phenolic compound content was estimated by the Folin-Ciocalteu reagent and total carotenoid content by spectrophotometry at 450 nm. The contents of β-carotene and total vitamin C (ascorbic acid and dehydroascorbic acid) were quantified by high performance liquid chromatography. Differences were found among the four mango cultivars in all the components analyzed. The content of phenolic compounds ranged from 48.40 (Haden) to 208.70 mg/100 g (Ubá); total carotenoid from 1.91 (Haden) to 2.63 mg/100 g (Palmer); β-carotene from 661.27 (Palmer) to 2,220 μg/100 g (Ubá) and total ascorbic acid ranged from 9.79 (Tommy Atkins) to 77.71 mg/100 g (Ubá). These results corroborated previous information that mangoes are a good source of antioxidants in human diet.  相似文献

The effect of blanching on the antinutritional content was studied in cabbage, turnip, collard, sweetpotato and peanut leaves. All the vegetables contained various amounts of phytic acid, tannic acid and/or oxalic acid. Tannic acid was found in largest amounts ranging from 1266.00 mg/100 g in cabbage to 491.00 mg/100 g in sweetpotato. Phytic acid content ranged from 0.31 mg/100 g in sweetpotato to 3.97 mg/100 g in collard. Oxalic acid was in trace amounts in cabbage and turnip; but high concentrations were found in sweetpotato (469.67 mg/100 g) and peanut greens (407.00 mg/100 g). Levels of both tannic acid and phytic acid were significantly (p<0.05) reduced by conventional and microwave blanching methods while oxalic acid levels were not significantly (p<0.05) reduced in most of the treatments by either of the blanching methods. In general, blanching is recommended as an effective method for reducing the antinutritional factors in green vegetables, however, further investigation on the heating times for both conventional and microwave blanching methods has been suggested.  相似文献

As important supplementary to major edible oils, comparative chemical advantages of minor edible oils decide their development and usage. In this study, chemical composition of 13 kinds of specific edible vegetable oils were investigated. The comparative advantages of chemical compositions of these edible oils were obtained as follows: (1) camellia, tiger nut and almond oil were rich in oleic acid, the contents of which accounted for 79.43%, 69.16% and 66.26%, respectively; (2) safflower oil contained the highest content of linoleic acid (76.69%), followed by grape seed (66.85%) and walnut oil (57.30%); (3) perilla seed, siritch, peony seed and herbaceous peony seed oil were rich in α-linolenic acid (59.61%, 43.74%, 40.83% and 30.84%, respectively); (4) the total phytosterol contents of these oils ranged from 91.46 mg/100 ​g (camellia oil) to 506.46 mg/100 ​g (siritch oil); and (5) The best source of tocopherols was sacha inchi oil (122.74 mg/100 ​g), followed by perilla seed oil (55.89 mg/100 ​g), peony seed oil (53.73 mg/100 ​g) and herbaceous peony seed oil (47.17 mg/100 ​g). The comparative advantages of these specific edible oils indicated that they possess the high potential nutritional values and health care functions.  相似文献

从1986年开始,开展了降低芥酸含量,提高油酸和亚油酸含量,提高抗病性,以杂优利用为中心的优质强优势杂交油菜的选育。育成了自交结实指数在1以下,不育株率100%,芥酸含量0.03-2.51%,亚油酸含量28.30-33.09%的89S181等6个不育系。育成了恢复株率97.92-100%的ZKC和89S016等5个低芥酸恢复系。 在三系配套的基础上,经测交,选育出亩产110.5-185.6公斤的5个强优势组合,组合的芥酸含量0.31-0.64%,亚油酸含量31.06-35.09%。并发现亚油酸含量亦有优势表现,6个F1组合的亚油酸含量,全部高于双亲平均值,有5个组合则超过高亲值。 5个强优势组合都导入了花叶苦菜(蔬菜芥菜)的抗病毒病性状(基因),经冬夏两季自然诱发鉴定,强优组合的发病率都低于邻近对照。优质、抗病、强优组合的选育研究已初告完成,1992年以后将陆续投产使用。  相似文献

Ascorbic acid contents of the juice of four different pineapples species grown in the Rivers State of Nigeria were determined before and after storage of whole pineapple and processing and storage of the juice for two months. Ascorbic acid of the fresh juice ranged from 22.5 mg to 33.5 mg/100 g sample. After storage at room temperature (30–32 °C) of whole pineapple for two weeks, ascorbic acid was reduced to between 59 and 65 percent of the fresh juice. Processing the juice by pasteurisation reduced the ascorbic acid to between 28 and 46 percent while storage in plastic bottles for two months further reduced the ascorbic acid content to between 10 and 21 percent.  相似文献

The oxalate, hydrocyanic acid, phytic acid and phosphorus contents of twelve leafy vegetables were determined. The values ranged from 47.7–194.3 mg/100 g DM, 4.32–23.8 mg/100 g DM, 90–260 mg/100 g DM and 215–1110 mg/100 g DM, respectively. The ratio of phytic acid to phosphorus ranged from 13.9–90.7. The leaves contained low levels of hydrocyanic acid, while the oxalate, phytic acid and phosphorus contents were high. The results are discussed in terms of their clinical implications and nutritive values.  相似文献

The fruits of some wild plants were examined for their contents of mineral elements and ascorbic acid.High levels of ascorbic acid were found in fruits ofSclerocarya birrea (403.3 mg/100 g) andAdansonia digitata (337 mg/100 g). In nine of the fruits examined, the mineral contents (Ca, P) were comparable with average values found in common fruits. Strawberries represent the main source of ellagic acid derivatives in the Brazilian diet. They are also good sources of flavonoids, mainly anthocyanins, and phenolic acids, to which many beneficial effects have been attributed. However, as the fruit is not available all the year, the objective of this work was to determine whether the jams could also represent a good source of bioactive compounds. In the current study, five different commercially available strawberry jams were characterized in relation to flavonoids, total phenolics, free and total ellagic acid contents, and antioxidant capacity. Anthocyanins were detected only in two jams at very low content. Kaempferol glycosides were the main flavonoids present (from 0.38 to 1.05 mg/100 g fresh weight, FW), while quercetin glycosides were present in the range 0.14–1.20 mg/100 g FW. Free and total ellagic acid content ranged from 0.4 to 2.9 mg/100 g FW, and from 17.0 to 29.5 mg/100 g FW, respectively. Total phenolics varied from 58 to 136 mg/100 g FW, and the antioxidant capacity from 0.55 to 0.76 μmol BHT (Butylhydroxytoluene) equivalents/g FW. Overall, results indicated that jams can also represent a good source of antioxidant compounds, although compared to the fruit important losses seem to occur.  相似文献

A clone, 8380-1, selected fromSolanum chacoense (PI 458310) for its high foliage content of the leptine glycoalkaloids, a factor in resistance to Colorado potato beetle, was doubled in chromosome number from 2n=2x=24 to 2n=4x=48. Three 4x clones were crossed with sixS. tuberosum (4x) clones. Foliage glycoalkaloid contents were measured for 452 F1 hybrids from 15 crosses. The 4xchacoense parental clones were not different in respect to glycoalkaloid contents and were similar to the original 2x clone. All F1 hybrids synthesized foliage leptines ranging from 9 to 369 mg/100 g fresh weight (fw) with a mean content of 113 mg/100 g fw. The proportion of leptines in the total glycoalkaloid content ranged from 1% to 62% with a mean of 25%. The 4xchacoense parent mean leptine content was 1482 mg/ 100 g fw which was 90% of the total glycoalkaloid content. Tubers from 136 hybrids and the threechacoense parental clones were tested for glycoalkaloid contents. The tuber solanine + chaconine contents of the 136 hybrids ranged from 30 to 180 mg/100 g fw with a mean of 79. The mean tuber content of the threechacoense parental clones was 157 mg/100 g fw. Leptines were not found in any of the tubers.  相似文献

Seeds of sixty four genotypes ofBrassica campestris L. (Toria) were analyzed for oil content and fatty acid composition. Oil content varied from 38.9% to 44.6%. Major fatty acids viz. oleic, linoleic, linolenic, eicosenoic and erucic acids exhibited ranges from 10.1% to 17.3%, 5.9% to 14.5%, 5.2% to 15.0%, 7.7% to 13.7% and 39.6% to 59.9%, respectively. Compared to the standard cultivar ITSA, four genotypes contained 5 to 8% lower content of erucic acid; and six genotypes contained significantly higher content of linoleic acid. Oil was positively correlated with erucic acid. The observed inverse relationship between linoleic and erucic acid contents might be utilized in breeding nutritionally better Toria cultivars with both high linoleic and low erucic acid contents.  相似文献

Phytic acid, saponin and polyphenol contents in grains of various varieties of black gram (Vigna mungo) Mung bean (Vigna radiata L.) amphidiploids ranged from 697 to 750, 2746 to 2972 and 702 to 783 mg/100 g, respectively. Domestic processing and cooking methods including soaking, ordinary and pressure cooking of soaked and unsoaked seeds, and sprouting significantly lowered phytic acid, saponin and polyphenol contents of the amphidiploid seeds. Soaking for 18 h removed 31 to 37% of the phytic acid; the extent of removal was higher with long periods of soaking. Saponins and polyphenols were relatively less affected. Loss of the antinutrients was greater when soaked instead of unsoaked seeds were cooked. Pressure cooking had a greater effect than ordinary cooking. Antinutrient concentrations declined following sprouting; the longer the period of germination the greater was the reduction.  相似文献

分析了我国不同产区不同品种亚麻籽的组成及体外抗氧化特性。结果表明,除基本组成成分外,不同品种亚麻籽主要活性组分含量和体外抗氧化活性具有显著差异。α-亚麻酸、木酚素、总酚酸、黄酮、生育酚、植物甾醇含量范围分别为33.42%~59.74%,120~918 mg/100g,209~491 mg/100g,33.04~75.63 mg/100g,8.68~20.75 mg/100g,340~596 mg/100g。亚麻籽提取物DPPH值和FRAP值分别为4 357~8 146 μmol Trolox/100g, 8 289~15058 μmol Trolox/100g。此外,不同品种亚麻籽抗营养因子生氰糖苷含量差异较为显著(5.57~11.34 mg HCN/100g)。相关性分析结果表明,亚麻籽提取物体外抗氧化活性与木酚素、总酚酸和黄酮含量具有显著相关性(p<0.05)。主成分分析和聚类分析结果表明,亚麻籽主要酚类化合物及其抗氧化活性主要依赖于亚麻籽品种特性,而非种植区域。  相似文献

The nutrient and antinutrient components of tubers from seven cultivars ofDioscorea alata were determined. The average crude protein content ofD. alata tubers was 7.4%. Starch (75.6–84.3%) was the predominant fraction of the tuber dry matter. Significant differences in crude protein and starch contents were observed among cultivars. Vitamin C content of the yam tubers ranged from 13.0 to 24.7 mg/100 g fresh weight. The results showed yams to be reasonably good sources of minerals. Phytic acid contents of the yams were low, with values ranging from 58.6 to 198.0 mg/100 g dry matter. Total oxalate levels in yam tubers were found to be in the range of 486–781 mg/100 g dry matter, but may not constitute a nutritional concern since 50–75% of the oxalates were in the water-soluble form. The overall results are suggestive of the nutritional superiority of yams compared to other tropical root crops.  相似文献

The chemical and nutritional composition of theaerial parts of Amaranthus muricatus wasassessed. This is a wild plant growing well in aridand poor soil, which are not suitable for cereals. Thematerial under study was boiled, dried and ground andthen evaluated for chemical, nutritional andantinutritional properties. Protein concentration ofthe amaranth flour was 15.74 g/100 g and total dietaryfiber content was high (53.81 g/100 g), with 79%coming from insoluble dietary fiber. The calciumcontent was 1533 mg/100 g and the Ca/P ratio (5.94)was markedly higher than the value suggested in the1989 Recommended Dietary Allowances. Fifty-ninepercent of the fatty acids present were unsaturatedwith linoleic acid accounting for 40% of the totalfatty acid content. Nitrate, hemagglutinin, trypsininhibitor and saponin contents were within thenon-critical values. Net protein utilization (NPU),true digestibility (tD) and biological value (BV)measurements indicated a nitrogen gain of 74% that ofcasein. The results of this study indicate a nutritivepotential for the A. muricatus leaves, therefore,domestication of this plant is suggested along withassessment of its chemical and nutritionalproperties.  相似文献

Purple- and red-fleshed potatoes (Solanum tuberosum L.) were evaluated for their total anthocyanin (ACY), total phenolic (PHEN), and antioxidant capacity. The ACY and PHEN compounds were distributed throughout the tubers; however, a higher concentration was found at the stem-end than the bud-end. Although ACY and PHEN concentrations in potato peel were 0.9-to 1.6-fold higher than in potato flesh, overall contribution of the peel to ACY and PHEN contents of a potato slice was ~20%. These observations differ from the widespread idea that phytonutrients are mostly accumulated in the peel of tubers. The ACY and PHEN contents of different purple- and red-fleshed potato genotypes ranged from 11 to 174 mg cyanidin-3-glucoside/100 g fresh weight and from 76 to 181 mg chlorogenic acid/100 g fresh weight, respectively, and were genotype and location dependent. High positive correlations between antioxidant capacity and ACY and PHEN suggest that these compounds are mainly responsible for the antioxidant capacity. These results provide useful and important information for potato breeders and researchers in order to increase the antioxidant capacity and functional value of purple- and red-fleshed potatoes for the food and nutraceutical industries.  相似文献

Twenty two lines/accessions belonging to 5 species ofCelosia were analysed for their nutritional and antinutritional composition. The nutrient contents, vitamin C varied from 18.8 to 53.6 mg/100 g, carotenoids 9.1 to 15.1 mg/100g, protein 2.1 to 5.9%, while the antinutritional factors, nitrate 0.18 to 0.46% and oxalate 0.98 to 3.93%. Moisture ranged 81 to 89%. Variation of these parameters with leaf position and the amino acids profile of some promising lines was also evaluated.  相似文献

Ascorbic acid, thiamine, niacin, riboflavin, pantothenic acid and folic acid contents were determined in four different species ofPleurotus mushroom grown on wet chopped unfermented rice straw. The estimated values for the respective vitamins ranged from 92–144, 1.36–2.23, 60.6–73.3, 6.66–8.97, 21.1–33.3 mg and 1222–1412 µg per 100g mushrooms on dry weight basis. Significant differences in tuber glycoalkaloid (TGA) content were found among parents and among family means in a two year study of 10 tetraploid crosses. TGA contents of the parents ranged from 3.6–36 mg/100 g, with an average content of 10 mg/100 g. Offspring variations within families were generally continuous, indicating polygenic inheritance. Heritability (1-year—1-replicate base) ranged from 86–89% in the broad sense and from 66–84% in the narrow sense. It was concluded that TGA content is highly heritable. The use of parents with high TGA contents in a breeding program is discussed.  相似文献

Six non-conventional leafy vegetables consumed largely by the rural populace of Nigeria were analyzed for mineral composition. Mineral contents appeared to be dependent on the type of vegetables. Amaranthus spinosus and Adansonia digitata leaves contained the highest level of iron (38.4 mg/100 g and 30.6 mg/100 g dw, respectively). These values are low compared to those for common Nigerian vegetables but higher than those for other food sources. All the vegetables contained high levels of calcium compared to common vegetables, thus they could be a rich source of this mineral. Microelement content of the leaves varied appreciably. Zinc content was highest in Moringa oleifera, Adansonia digitata and Cassia tora leaves (25.5 mg/100 g, 22.4 mg/100 g and 20.9 mg/100 g dw, respectively) while the manganese content was comparatively higher in Colocasia esculenta. The concentrations of the mineral elements in the vegetables per serving portion are presented and these values indicate that the local vegetables could be valuable and important contributors in the diets of the rural and urban people of Nigeria. The mean daily intake of P, Mg, Ca, Fe, Cu and Zn were lower than their recommended dietary allowances (RDAs). However, the manganese daily intake was found not to differ significantly ( p = 0.05) from the RDA value.  相似文献

Eleven red currant varieties (Ribes rubrum L.) cultured in Serbia were evaluated for some of their biochemical properties such as total phenolics, anthocyanins, ascorbic acid, invert sugar, soluble solid content, and acidity. The average amount of ascorbic acid varied from 50.5–71.6 mg/100 g FW, while concentration of invert sugars ranged from 6.0%–9.0%. The highest amounts of total phenolics and anthocyanins were detected in variety Redpoll (153.4 mg GAE/100 g FW and 19.3 mg/100 g, respectively). Red currants were processed to juice, and the phenolic and anthocyanin contents changed as a result of processing. Berries and juices were long-term stored at −18 °C and changes in phytochemicals were monitored. In berries, storage caused the decrease of ascorbic acid content up to 49%, and a general reduction of total phenolics was also noticed. In juices, total phenolics content increased after one year of storage. In both berries and juices total anthocyanins increased during storage by up to 85% and 50%, respectively. This study demonstrates that certain varieties, namely Redpoll, Jonkheer and London Market are good source of phytochemicals, retaining the nutritional value during processing and storage.  相似文献
