The aim of this study was to evaluate the production of the vasoactive amines, histamine and tyramine, and of other biogenic amines (putrescine, cadaverine, spermidine, and spermine) during the ripening of pecorino Carmasciano cheese, a traditional Italian cheese produced with raw sheep milk. Vasoactive amines, which may pose health risks for consumers, showed relatively low levels near the end of Carmasciano ripening (136.41 mg/kg tyramine and 65.5 mg/kg histamine). The other biogenic amines were also detected and showed increasing levels with time. Results demonstrated that the concentrations of the vasoactive amines were always below the limits established for other foods. However, the data concerning raw materials and the increasing trend of certain biogenic amines highlight the need to control indigenous bacterial populations responsible for amine production, including the implementation of Good Manufacturing Practices and adequate training of staff.

In managing risks associated with the human consumption of honey, all sectors of the production chain must be considered, including the primary production phase. Although the introduction of the Hazard Analysis Critical Control Point (HACCP) system has not been made compulsory for purposes of quality and safety control in farming operations, European legislation makes many references to the key role of primary production in food safety management and the HACCP system has been indicated as the preferred tool to ensure that consumers are provided with safe foods. This article describes a systematic HACCP-based approach to identifying, preventing and controlling food safety hazards occurring in primary apicultural production. This approach serves as a useful tool for beekeepers, food business operators, veterinary advisors, and for Food and Veterinary Official Control Bodies in their planning and conducting of audits and for establishing priorities for the evaluation of training programmes in the apicultural sector.  相似文献

Viral infection damages honeybee colony health. Viruses can be carried by queen bees and apicultural production materials when imported from foreign countries. We investigated seven honeybee viruses in worker bees (Apis mellifera) from 26 healthy apiaries in Gifu, Japan between 2018 and 2019. Black queen cell virus (BQCV) was detected in 23 (88.5%) of the apiaries, followed by Israeli acute paralysis virus (42.3%), deformed wing virus (DWV) (38.5%), and sacbrood virus (3.8%). In phylogenetic analysis, BQCV and DWV in Gifu were related to those in China and South Korea. Additionally, a high prevalence of BQCV was observed among worker bees in BQCV-positive colonies. Therefore, BQCV horizontal transmission among worker bees may contribute to the high prevalence of BQCV in Gifu.  相似文献

Bull semen production centres (SPC) generally present satisfactory quality control for sperm processing, but non‐standardized hygiene procedures. This study describes a Hazard Analysis and Critical Control Points (HACCP) system developed for bull SPC and subsequently implemented in a commercial SPC. After the identification of hazards at each step of semen processing and the determination of their risk and severity, monitoring and corrective procedures were designed to assess the system's efficiency. The HACCP system identified six microbiological hazards, 10 physical hazards, four chemical hazards and three critical control points. After the establishment of Good Processing Practices, Standard Operating Procedures and Standard Sanitizing Operating Procedures, the system was validated through an audit, to identify eventual failures and to define measures to correct them.  相似文献

Endo and ectoparasites of domestic ruminants directly or indirectly contribute to reduce sustainability affecting food security in subsistence or small scale farming systems, food safety (food borne diseases and pesticide residues), environment (pesticides, pollution and ecotoxicity) and farmer's equity (limited or uneven access to relevant technical information/training). This is especially true for some regions of Latin America where there still are huge areas of natural grazing land for cattle, sheep and goats. Sustainable parasite control is not an absolute concept given the different regions and productive systems of the world and therefore, could have different levels of adoption and impact on farmers. This article develops a conceptual framework to better understand where each region or country is situated in terms of attaining a reasonable increase in animal production while preserving sustainability. Within this context the capacity to prioritize the target parasite species for control according to local epidemiology and production systems, the early diagnosis and monitoring of parasite resistance as well as the availability of well trained field professionals acquire a major role, creating an enabling environment for present and future decision support system approaches. Until new and different means of controlling parasites become available; the challenge is to utilize Good Animal Husbandry Practices and Integrated Parasite Management (IPM) principles in a pragmatic way allowing the rational use of pesticides.  相似文献

Lactic acid as a decontaminant in slaughter and processing procedures   总被引:1,自引:0,他引:1  
An attempt was made to interrelate the data obtained in experiments conducted by our Department along beef, veal and pig slaughter lines, using lactic acid (LA) for the decontamination of carcasses, cold and hot boned primal cuts, slaughter byproducts, and butcher's knives. First and foremost it was observed, that provided Good Manufacturing Practices are strictly followed, the microbial load of carcass surfaces will be substantially reduced. LA-decontamination may result in an additional reduction. Since in the early post-mortem period bacteria are not yet attached to the meat surface, LA-decontamination should preferably be applied to the hot carcass. It was demonstrated that, dependent on mode and duration of application, LA sprays not exceeding 1% v/v (beef), 1.25% v/v (veal) and 1.5% v/v (pork) resulted in acceptable carcass colour scores. Blood spots, which are particularly prone to discolouration by lactic acid application, should be removed at an early post-mortem stage e.g. by strong showering. The difference in surface pH between LA-treated and control carcasses disappeared within 72 hours post-mortem. Veal longissimus chops treated with LA solutions up to 2% v/v were not identified by a consumer taste panel as significantly different from controls. The 'immediate' bactericidal effect of LA-decontamination for beef, veal and pig carcasses, as well as for pig liver and veal brain, amounted to approximately 1.5 log cycles for the aerobic colony counts, strongly dependent on substrate and conditions of decontamination. In addition, a 'delayed' bacteriostatic effect was observed during storage, which is probably the result of a prolonged lag phase of acid-injured micro-organisms surviving lactic acid decontamination.(ABSTRACT TRUNCATED AT 250 WORDS)  相似文献

The mode of transmission between hosts (horizontal versus vertical) of disease agents is important for determination of the evolution of virulence in pathogens. For disease management, it is imperative that the epidemiology of the disease is understood and pathogen transmission rates between hosts is a key factor for this understanding. Surprisingly little is known about transmission rates in honey bee pathology. We have studied the rate of vertical transmission of Paenibacillus larvae, the causative agent of American foulbrood (AFB) in honey bee colonies, as colonies reproduce by colony fission (swarming), by culturing for the spores from repetitive samples of adult bees. The results demonstrate vertical pathogen transmission to daughter swarms. The spore density declines over time in both mother colonies and daughter swarms if mother colonies do not exhibit clinical disease symptoms. Occasional positive samples more than a year post swarming, also in daughter swarms, indicate production of infectious spores from diseased larvae, without clinical disease observable by beekeepers, and/or maintenance of infective spores in the hive environment, allowing both horizontal and vertical transmission to be maintained. The results suggest that the virulence of AFB, being lethal at colony level in contrast to other bee diseases shaped by evolution, could be dependent on apicultural practices and that the pathogen probably would be maintained without causing frequent colony mortality in a natural system.  相似文献

OBJECTIVE: To measure rabies preexposure vaccination rate and identify factors potentially associated with lack of vaccination among veterinarians and at-risk staff. DESIGN: Cross-sectional survey. STUDY POPULATION: At-risk veterinary medical association (VMA) members, their staff members, and animal shelter and wildlife rehabilitation center personnel located in a California county. PROCEDURE: A questionnaire was mailed to VMA members and managers of animal shelters and wildlife rehabilitation centers. Respondents were requested to provide data on vaccination history and potential factors associated with vaccination status for themselves and their at-risk staff members. Vaccinated and unvaccinated individuals were compared by use of univariate and logistic regression analyses to identify factors associated with vaccination status. RESULTS: Fifty-eight percent (79/137) of persons who received questionnaires responded; 74 were eligible for the study. Respondents provided data for 47.6% (219/460) of their staff members. The vaccination rate was greater among respondents (85.1 %) than among their staff members (17.5%). Among staff members, age and duration of employment were significantly associated with vaccination status. CONCLUSIONS AND CLINICAL RELEVANCE: A large proportion of at-risk staff members working in veterinary clinics, animal shelters, and wildlife rehabilitation centers in the study area did not receive rabies preexposure vaccination per the Centers for Disease Control and Prevention's published recommendations of the Advisory Committee on Immunization Practices (ACIP). The cost of the preexposure vaccine series may be a barrier, particularly for young employees who are commonly short-term, part-time, or volunteer workers. Efforts are needed to increase awareness of the ACIP recommendations and to increase access to vaccination through agencies such as public health clinics.  相似文献

The income margin in modern pig farming is generally narrow. Controlling the cost of production, therefore, is of great importance. Improving health and fertility can play a major role in this context. In this paper three interrelated issues are discussed from a farm management point of view: (1) the financial losses of common health and fertility problems, (2) the costs and benefits of disease control, and (3) the decision to replace individual sows in case of poor health and/or reduced productive performance. Studies to determine baseline levels of microbial contaminants and foodborne bacterial pathogens are needed to evaluate the effectiveness of Hazard Analysis Critical Control Point (HACCP) programs, Good Manufacturing/Production Practices, and various interventions. In 2004 and 2005 poultry carcass rinses from provincially inspected abattoirs in Alberta, Canada, were tested to determine the levels of aerobic plate count bacteria, coliform bacteria, and generic Escherichia coli, the prevalence and levels of Campylobacter spp., and the prevalence of Salmonella spp. and Shiga toxin-producing E. coli (STEC). Samples were collected from 3 high volume and 62 low volume abbatoirs. All samples (1296) were positive for aerobic plate count bacteria, with 98.8% of samples having counts of 100 000 or less colony forming units (CFU)/cm2. Coliform bacteria were isolated from 99.7% of the 1296 carcasses and were recovered at levels of ≤ 1000 CFU/cm2 for 98.3% of the samples. Generic E. coli were recovered from 99.1% of the 1296 carcasses at levels of ≤ 1000 CFU/cm2 for 98.6% of the samples. Seventy five percent of 1234 samples that were tested for Campylobacter were positive; 37.5% of 1295 samples that were tested for Salmonella were positive; and only 2 of 1296 samples tested for STEC were positive (0.15%).  相似文献

Animal rabies cases have increased steadily in South Carolina (SC) for the past decade. An understanding of the population's awareness and understanding of the disease is needed to tailor public health interventions. A marketing list-serv of SC residents' email addresses was used to recruit anonymous respondents for a Knowledge Attitudes and Practices (KAP) electronic survey. A total 516 South Carolinians completed the 31-question survey. Quantile regression and a Pearson's correlation evaluated potential associations between respondent's rabies knowledge and their attitudes and practices. Knowledge was assessed on topics of rabies biology, state animal case counts and rabies pet-related laws. Level of concern and level of knowledge were positively correlated. Additionally, statewide hotspot analysis revealed geographic areas warranting targeted public health interventions; counties with low public concern juxtapositioned with high animal rabies case counts. This study demonstrates the utility of statewide KAPs to gauge populations rabies perception and related preventative actions to tailor appropriate educational programs to limit human-animal rabies exposures.  相似文献

Genetic strategies aimed at improving general immune competence (IC) have the potential to reduce the incidence and severity of disease in beef production systems, with resulting benefits of improved animal health and welfare and reduced reliance on antibiotics to prevent and treat disease. Implementation of such strategies first requires that methodologies be developed to phenotype animals for IC and demonstration that these phenotypes are associated with health outcomes. We have developed a methodology to identify IC phenotypes in beef steers during the yard weaning period, which is both practical to apply on-farm and does not restrict the future sale of tested animals. In the current study, a total of 838 Angus steers, previously IC phenotyped at weaning, were categorized as low (n = 98), average (n = 653), or high (n = 88) for the IC phenotype. Detailed health and productivity data were collected on all steers during feedlot finishing, and associations between IC phenotype, health outcomes, and productivity were investigated. A favorable association between IC phenotype and number of mortalities during feedlot finishing was observed with higher mortalities recorded in low IC steers (6.1%) as compared with average (1.2%, P < 0.001) or high (0%, P = 0.018) IC steers. Disease incidence was numerically highest in low IC steers (15.3 cases/100 animals) and similar in average IC steers (10.1 cases/100 animals) and high IC steers (10.2 cases/100 animals); however, differences between groups were not significant. No significant influence of IC phenotype on average daily gain was observed, suggesting that selection for improved IC is unlikely to incur a significant penalty to production. The potential economic benefits of selecting for IC in the feedlot production environment were calculated. Health-associated costs were calculated as the sum of lost production costs, lost capital investment costs, and disease treatment costs. Based on these calculations, health-associated costs were estimated at AUS$103/head in low IC steers, AUS$25/head in average IC steers, and AUS$4/head in high IC steers, respectively. These findings suggest that selection for IC has the potential to reduce mortalities during feedlot finishing and, as a consequence, improve the health and welfare of cattle in the feedlot production environment and reduce health-associated costs incurred by feedlot operators.  相似文献

Ecological surveys revealed that LA resulted in a shift towards a Gram positive bacterial association acting as an antagonist of enteropathogenic Gram negative bacteria. Electrostatic application of LA solutions may contribute to limiting the amount of LA needed for effective decontamination.

Adding 2.7% v/v LA to the spray water of a specially designed disinfection unit for butchers’ knives effected a reduction in aerobic colony counts at 45° C which exceeded that achieved by conventional sanitizers at 82° C.  相似文献

1. Implementation of Good Manufacturing Practice and HACCP (Hazard Analysis Critical Control Points) in the production of poultry feed requires efficient tools for profiling risks associated with pesticide use in the production of crops for feed. 2. This paper describes a simple model that may be of use in the first tiers of risk profiling of feeds. 3. The model adequately reproduced the pattern of residues in fat and eggs of laying hens dosed with a selection of lipophilic pesticides that may be used in the production of crops for poultry feeds: deltamethrin, diflubenzuron, fipronil, lindane, piperonyl butoxide and spinosad. 4. Simulations suggest results derived from studies on laying chickens can be extrapolated to other laying birds. 5. Poultry meat production systems focus on maximising growth of birds giving rise to significant potential for dilution of residues that transfer to fat from feed. 6. Simulations of residues in fat of chickens, ducks, geese and turkeys exposed to a lipophilic pesticide with an elimination half-life of one day at 10 mg/kg body weight/d from hatching to typical market ages suggest residues in fat that are highest in turkeys > chickens > geese > ducks. 7. The model is of use in interpreting published dosing studies and predicting likely residues in birds at times after last exposure/dosing.  相似文献

The objective of this study was to report observed radiation safety practices among equine workers using portable X-ray units at 3 veterinary practices in Canada. Practice 1 was comprised of equine field service workers from an academic institution, whereas Practices 2 and 3 were comprised of workers from private equine referral practices. Out of 2969 exposure-worker observations, protective aprons were worn for > 99% (2968/2969), thyroid shields for 87% (2584/2969), and eyeglasses for 10% (310/2969). The cassette was held by hand for 97% (1078/1114) of observations, and the X-ray unit was held by hand for 100% (1293/1293) of observations. Gloves were used for 54% (606/1114) and < 1% (5/1293) of observations involving cassette holders and X-ray tube operators, respectively. Use of gloves was more frequent among technologists than DVMs (P = 0.004), and among workers in Practices 1 and 3 than in Practice 2 (P < 0.001). In conclusion, given that workers commonly hold cassettes and X-ray tubes by hand, improvement in shielding use is needed. Consideration should be given to specific behavior recommendations in radiation regulations.  相似文献

The Regulation (EC) No. 854/2004 refers in particularly to a broad spectrum of official supervision of products of animal origin. The supervision should be based on the most current relevant information which is available. The proposal presented includes forms for implementation of Food Chain Information (FCI) as laid down in the Regulation (EC) No. 853/2004 as well as suggestions for the implementation of the visual inspection and criteria for a practical approach to assist the competent authority and the business operator. These suggestions are summarised in two forms including the FCI and practical information from the farm of origin as well as from the slaughterhouse needed for the competent authority to permit the visual meat inspection of fattening pigs. The requested information from the farm level include i.e. an animal loss rate during the fattening period and diagnostic findings of carcasses and respectively on organs of the animals during meat inspection procedure. The evaluation of findings in liver and pleura at the slaughterhouse level indicate a correlation to the general health status of the fattening conditions at farm level. The criteria developed are in principle suited for a "gold standard" of the health status of fattening pigs and the criteria may serve as practical implementation of the term Good Farming Practice in relation to consumer protection. Only for fattening pigs deriving from farms fulfilling this "gold standard" the visual meat inspection shall be permitted. It is proposed to integrate the two forms for FCI and additional information for authorisation of visual meat inspection for fattening pigs in the working document of the DG SANCO titled "Commission regulation of laying down specific rules on official controls for the inspection of meat" (SANCO/2696/2006).  相似文献
