Abstract

Desalted cod products are already marketed, although still presenting some problems. Fresh raw materials and good manufacturing practices during salting, drying and desalting are essential to improve their quality and shelf life. The production of off-odor, hydrogen sulfide, trimethylamine, ornithine, putrescine, cadaverine, histamine, indole, hydrolyzed gelatin and ammonia was investigated in 127 bacterial strains isolated from dried/wet salted cod, later desalted either at 4 or 24°C. Desalting could either introduce or recover off-odor, sulfide hydrogen and/or ornithine producing strains. Cod desalting at 4°C is of great importance in order to improve the shelf life and safety of cod desalted products.  相似文献

ABSTRACT

Livers of Atlantic cod (Gadus morhua) are traditionally used in cod liver oil production or consumed cooked or canned. The farming of cod is a relatively new industry in Norway. The aim of this study was to determine quality and shelf life of fresh liver from farmed cod during chilled storage on ice by hydrolysis and oxidation state and sensory quality and the influence on canned liver. In two experiments, livers from farmed cod were stored chilled and sampled from Days 0 to 13, respectively. Quality, measured as hydrolytic and oxidation degradation, was reduced after 7 days of storage, while sensory quality was reduced after 4 days. Free fatty acids increased from Day 7 in both experiments, while peroxide value and anisidine value showed no change when the livers were single wrapped. Rancid odor was the first sign of oxidation and was registered after three to four days of storage. Canning within 2 days of storage prevented leakage of oil from the canned livers. Sensory analyses of oxidation are recommended as a sensitive and rapid method to detect oxidation of chilled cod liver.  相似文献

The aim of this study was to assess electrical stunning of Atlantic cod and turbot in seawater to develop a protocol for the process of stunning and killing. An induced general epileptiform insult (unconscious) had a duration of 40 ± 27 s (n =14) in cod (2.6 ± 0.5 kg) and 34 ± 18 s (n = 19) in turbot (520 ± 65 g). Seven cod and 3 turbot displayed a physical reaction, and 11 turbot registered an electroencephalogram (EEG) response to pain stimuli administered 30 s post-stun. The heart rate was 32 ± 6 beats/min in cod and 25 ± 7 beats/min in turbot prior to stunning. Post-stunning, the electrocardiogram (ECG) revealed fibrillation and reduced activity post-stun. EEG, ECG recordings, and behavioral observations indicate that when a bipolar square wave current was applied with a frequency of 133 Hz and 43% duty cycle side to side (turbot) and at 170 Hz and 33% duty cycle (cod) head to tail, both species were stunned in seawater at current densities of 3.2 A/dm2 and 2.5 A/dm2, respectively. For turbot, a 5 s exposure to electricity followed by chilling in ice water for 15 min is sufficient to prevent recovery. For cod, a killing method needs to be established.  相似文献

Different levels of pressure were investigated to see if it was possible to induce triploidy at a lower pressure than previously used (600 bar) for Atlantic cod (Gadus morhua). Newly fertilized eggs were exposed to different levels of pressure: 400, 500, and 600 bar, and one control group (no pressure). Induction of triploidy occurred at each pressure level used in this experiment. Mean weight and length at the termination of the trial period was significantly lower, in the 400 bar group, compared to the other treatment groups. Microsatellite loci analysis revealed over 90% triploid outcome in each experimental group. Lower incidence of deformities was seen in the 400 bar group compared to the 500 and 600 bar groups. Overall this study demonstrated successful triploid induction at both low (400 bar) and medium (500 bar) pressures.  相似文献

An experiment was conducted to examine (a) the effects of photoperiod on timing of sexual maturation (b) the relationship between plasma steroid levels, appetite and growth in male and female Atlantic cod (Gadus morhua L.). Wild caught Norwegian coastal cod were subjected to either a 6L/18D photoperiod typical of January at 60° N-(Short day group) or a simulated natural photoperiod (Normal day group) from June 2000 until spawning started. Appetite of individual fish were measured twice weekly, while weight, length and plasma levels of the sex steroids testosterone (T), 11 keto-testosterone (11-KT) and estradiol-17β (E2) were monitored bimonthly. Cod in the Short day group matured 3 months ahead of the cod in the Normal day group and started spawning in early November. Appetite decreased in both sexes 2–3 months prior to spawning in both groups, but this reduction was stronger among males. In both sexes, length growth was reduced concurrently with the appetite loss. Overall, females had significantly higher somatic growth, put relatively less energy into length growth and had developed larger livers compared to males at the time of spawning in the Short day group. Plasma steroid levels increased in both groups throughout the experiment, reaching peak levels of ca 10 ng ml−1 (T) and 15–20 ng ml−1 (11-KT) in males, and 1.5–2 ng ml−1 (T) and 12–18 ng ml−1 (E2) in females at the onset of spawning. Steroid levels increased more rapidly among Short day cod verifying the earlier onset of maturation. These results confirm that photoperiod is a major cue to maturation in cod and imply that the high cost of spawning for females incur differences in appetite between the sexes.  相似文献

Abstract

Textural properties, protein solubility, water holding capacity and activity of collagenolytic enzymes of salmon (Salmo salar) and cod (Gadus morhua) fillets were measured during iced storage. Breaking strength and hardness of fillets were reduced during iced storage. Elasticity of cod fillets was reduced, while cohesiveness of salmon increased during storage. Salmon was softer and less elastic than cod. During storage, total amount of extracted proteins was reduced for cod, and increased followed by a reduction for salmon. The fraction of salt soluble proteins increased during storage, and values for cod were higher than those for salmon. The activity of collagenolytic enzymes was higher in cod than salmon during the whole storage period.  相似文献

Piscine mycobacteriosis causes losses in a number of fish species both in the wild and in aquaculture worldwide. Mycobacterium salmoniphilum infections have on several occasions been reported in farmed Atlantic salmon, Salmo salar L. The present study tested and confirmed the susceptibility of Atlantic cod, Gadus morhua L., an important yet relatively novel aquaculture species, to infection with M. salmoniphilum. Atlantic cod injected intraperitoneally with a suspension of this bacterium were maintained together with cohabitant (COH) fish in a flow-through marine water system at 10-11 °C. The fish were supervised daily and samples taken at 2, 7, 14, 23, 34 and 53 weeks post-infection and examined pathologically, bacteriologically and using molecular biology. Injected mycobacteria were re-isolated in high concentrations from both injected and COH fish groups. Death attributable to mycobacterial infection was observed in both injected (47%) and COH (28%) fish groups. Extensive development of granuloma in visceral organs, mainly the mesenteries, spleen, kidney and liver (lesser extent) and at later stages of the infection in heart tissues and gills, was observed in both injected and COH fish. Granulomas underwent a temporal progression of distinct morphological stages, culminating in well-circumscribed lesions surrounded by normal or healing tissue. Acid-fast bacilli were detected in both granulomas and non-granulomatous tissues. This study confirms that Atlantic cod is highly susceptible to M. salmoniphilum infection and that this bacterial species may be a threat to cod both in the wild and in the aquaculture.  相似文献

Digestive capacity and compensatory growth in Atlantic cod (Gadus morhua)   总被引:1,自引:0,他引:1  
The objective of this study was to examine whether digestive capacity correlates with growth rate in Atlantic cod (Gadus morhua). Ninety fish (1035±240 g; 478±36 mm) were assigned to one of three treatments: deprived of food for 5 weeks and then re-fed for 24 days, deprived for 10 weeks and then re-fed for 24 days, or fed for 24 days without deprivation (controls). Three times a week during feeding, the fish were provided with meals of capelin (Mallotus villosus) in excess. Within each treatment, ten fish were sacrificed before and twenty after the feeding period. The relative masses of the pyloric caeca, intestine, and white muscle were determined. Cytochrome c oxidase (CCO), citrate synthase (CS), and nucleoside diphosphate kinase (NDPK) activities were assayed in the pyloric caeca, intestine, and muscle as was trypsin activity in the pyloric caeca. During the re-feeding period, fish that had been deprived of food for 10 weeks showed compensatory growth, growing 1.9 times faster than the controls (0.94±0.26 versus 0.50±0.31% body mass ⋅ day−1). Fish that displayed compensatory growth had a lower relative white muscle mass than controls (66.5±4.1% vs. 69.6±7.4%) while the relative masses of the pyloric caeca (2.21±0.49% vs. 1.78±0.31%) and intestine (0.95±0.20% vs. 0.77±0.15%) were greater than the controls, suggesting that the sizes of these digestive tissues might correlate with compensatory growth capacity. Citrate synthase in the pyloric caeca was the only enzyme that showed higher activity during compensatory growth (8.57±0.94 U ⋅ g tissue−1 compared to 7.13±1.03 U ⋅ g tissue−1 in the control group). This suggests that aerobic catabolic capacity of pyloric caeca could be related to growth capacity during recovery, possibly via the energetic cost of digestive enzyme synthesis. This study has investigated the muscle growth of diploid and triploid Atlantic cod (Gadus morhua) juveniles raised in replicate tanks over a period of 29 weeks and analysed at three sampling points (February, June and September). Data for weight, length, condition factor (K), muscle fibre growth and myogenic progenitor cells (MPCs) number were collected and results were analysed in relation to body growth and ploidy status. Diploids were significantly heavier than triploids throughout the trial (~10–20%) and had K in June and September samplings. Over the whole period, the rate of muscle fibres' recruitment was 318 fibres per day and 252 fibres per day for diploid and triploid cod respectively. The larger body weight of diploids resulted in a total number of fast fibre number of 114 979 compared to 91 086 in triploids. The average diameter of the 2.5% of the smallest fibres (2.5th percentile) was higher in diploids than triploids at the start of the trial, with a reversed picture for the average of the upper 2.5% (97.5th percentile) at the end of the trial. The probability density function of the estimated muscle fibre diameters showed similar fibre size distribution between size‐matched diploids and triploids at all sample points. The peak fibre diameter was approximately 25 μm in February and increased to approximately 50 μm in June and September, irrespectively of ploidy. Pax 7 were used as molecular markers for MPCs. A positive correlation between Pax 7+ cells and total body length was observed only among triploid fish at the onset of the experiment.  相似文献

利用Genbank中大西洋鳕的7对微卫星引物,对太平洋鳕基因组DNA进行PCR扩增。这7对引物均可较稳定地扩增出条带,它们分别是Gmo2、Gmo3、Gmo8、Gmo19、Gmo35、Gmo36、Gmo37,并且扩增出的7个位点均表现出多态性,共获得69个等位基因,每个位点的等位基因数目为4~17,大小为111~227bp。在7个位点上2种鱼的等位基因的大小存在着不同程度的差异。其中Gmo37在大西洋鳕和太平洋鳕中扩增出的条带的长度差异最大,基本无重合部分,分别为220~290bp和144~226bp,本研究结果以期对2种鳕科鱼类遗传结构的进一步研究提供帮助。  相似文献

Abstract

The effects of light salting by brine injection and brine immersion on physicochemical and textural properties of cod fillets were evaluated. Light salting significantly increased yield and water holding capacity. Adding brine injection to the process can be used to shorten the process time needed to obtain the desired salt content and increase yield. The effects on chemical composition were most significant in salt content, but water and protein content were also affected. Water content decreased from the tail to head direction of the fillets, both in unsalted and light salted fillets. Changes in protein content were in opposite proportion to changes in water content. This could be seen in the fresh fish and also after freezing, both in unsalted and light salted fillets. Texture of the fish was not significantly affected by salting and freezing.  相似文献

Convenience products of fish that are heat processed in-pack are often subjected to a compromise between quality and durability within the framework of required safety. The purpose of this study was to provide knowledge for optimizing pasteurization of cod muscle by quantifying changes in water holding capacity (WHC), cook loss, color, and texture within a wide range of processing times and temperatures. A heat load equivalent to 2 min at 70°C may be applied to the cod while maintaining the WHC above 66%, the cook loss below 5.6%, and keeping hardness and whiteness low, provided that the processing temperature is kept in the range 68 ± 4°C.  相似文献

In the present experiment, the characteristics of minimally handled, directly slaughtered farmed Atlantic cod were compared to cod subjected to 2 h preslaughter handling stress. The results strongly indicate that increasing the storage temperature from 0 to 5°C had a larger negative impact on the quality characteristics than the handling stress applied. Further, there may be interaction effects between handling, storage temperature, and storage time.  相似文献

Sequential ichthyoplankton surveys were used to determine the spatial and temporal distribution of eggs and larvae over coastal spawning grounds of Atlantic cod (Gadus morhua) in Smith Sound, Trinity Bay, Newfoundland, during the spring and summer of 2006 and 2007. Egg densities showed similar patterns for both years with two peaks in abundance in spring (March–April) and late summer (late July). A clear progression of development stages (1–4) was observed in spring and summer in 2006 and summer in 2007, suggesting retention of eggs within the Sound during these periods. Modelled predictions of vertical egg distributions indicated eggs were broadly distributed near the surface during spring (March–April), but were concentrated below the pycnocline (>10 m) within the inner portions of the Sound during the summer months (July–August). Back‐calculated peaks in spawning based on water temperatures were estimated at 11 and 4 April for 2006 and 2007, respectfully, with late season peaks centred on 21–24 July for both years. Environmental data indicated cooler water temperatures and periods of high wind stress in spring, and warmer, calmer periods late summer, consistent with higher retention and faster development times on the spawning grounds later in the season. We conclude that spring and summer spawning events result in different distributions of early life stages and may lead to different distributions of juvenile and adult fish.  相似文献

Information derived from archival tags (digital storage tags, DSTs) were used to backtrack the migration of 11 tagged Atlantic cod (Gadus morhua) during 2001 in Massachusetts Bay, the Gulf of Maine, and Georges Bank. The DST tags continuously recorded time, temperature and depth. To geolocate fish positions during its time at large, we first extracted the tidal signal from the pressure recordings on the DST tags, and then compared the resulting data to data predicted with a Massachusetts Bay tidal model that provided us with geographical coordinates at a given date and time. Using least‐squares criteria within an estimated geographical region of confidence that was constrained by biological and statistical information (e.g. swimming speed, known release and recapture location, and bottom depth) we were able to geolocate the fish. The resultant geolocated migration tracks indicate a large degree of movement of Atlantic cod in the region and an elevated importance of the Great South Channel (GSC) migration corridor between Massachusetts Bay and the western Georges Bank and Nantucket Shoals region. This observation contrasts strongly with inferences of limited movements by Atlantic cod based on conventional tag recapture methods (mean of 1200 km traveled versus 44 km traveled as measured by conventional tagging and geolocation, respectively). This study demonstrates that geolocation methodologies applied to archival tag studies hold great promise of becoming an important new tool for fisheries managers to quantify the movements of fishes. It also points out the need for greater collaboration between fisheries scientists and oceanographers, and particularly for the development of improved tidal models to cover stock regions more accurately and with higher precision.  相似文献

In an effort to optimize the efficiency of high‐density incubation of Atlantic cod Gadus morhua and haddock Melanogrammus aeglefinus eggs, the per cent hatch of eggs treated with four disinfectants (3% hydrogen peroxide, 1% polyvinylpyrrolidone iodine, 0.1% sodium hypochlorite and a 0.005% antibiotic solution – penicillin/streptomycin) was compared in both species. The per cent hatch of eggs of each species was greatest after a 24 h treatment with the antibiotic solution. The hatching success of eggs treated within the different disinfectant treatments depended upon the embryonic developmental stage in both species. The sodium hypochlorite treatment had the lowest % coverage of colony growth after disinfected haddock eggs were plated onto sterile agar media, highest survival rates to the end of the embryonic period, but the lowest per cent hatch.  相似文献

The present trials aimed to investigate the effects of replacing fish meal with plant proteins in diets for cod, using a regression design where fish meal constituted the control. The plant protein diets were formulated to meet the amino acid requirements according to NRC (1993) and contained corn gluten meal, soybean meal, a mixture of these, or a mixture of wheat gluten meal and soybean concentrate. The plant protein fraction constituted up to 440 g kg−1 of the extruded diet. Two feeding experiments were conducted, one at high (11 °C) and one at low (6.5 °C) temperature. High growth and feed utilization were obtained in all diet groups at both temperatures. However, only in Exp.1 (11 °C), growth and feed utilization were linearly reduced by increases in dietary soybean and corn gluten meal, while no such effect was detected in Exp.2 (6.5 °C). Reductions in protein retention were seen at both temperatures with use of all evaluated plant protein sources. Due to large amounts of plant protein ingredients in diet, differences in diet amino acid composition were seen. These were partly reflected in the muscle free amino acid pool. Dietary plant ingredients did not affect whole body, liver or muscle proximate compositions, or liver indices. In both experiments, blood parameters were within the range of earlier reported normal values and indicated, together with low mortality, good fish health status. The results show that there is high potential to use protein‐rich plant ingredients in diets for Atlantic cod.  相似文献

Aquaculture is promising in increasing the amount of fresh Atlantic cod available all year around. The aim of this study was to investigate the effects of pre‐rigour filleting on fillet quality of wild and farmed cod. Pre‐rigour filleting resulted in significantly less fillet gaping than in fillets produced post rigour. The pre‐rigour fillets were, however, 12–13% shorter post rigour. In spite of the significantly lower water content of the muscle 6 days post mortem, a significantly higher liquid loss was seen in the pre‐rigour group. Differences in gaping score and muscle pH were dependent on whether the fish were wild or fed. Fillet gaping increased with storage time and was particularly pronounced for well‐fed cod. Fed cod had a significantly higher hydroxyproline (Hyp) content and significantly lower amount of glycosaminoglycans (GAGs) than wild cod. The ratio between GAGs and Hyp was thus significantly lower in fed cod. A connection between connective tissue components and fillet gaping may exist.
