Left sides from 18 beef carcasses (9 steers and 9 heifers) were divided equally among three marbling groups (low = traces or slight; intermediate = small or modest; high = slightly abundant) and evaluated to determine the relationship between longissimus composition and the percentage each major muscle contributes to the weight of the beef carcass. The adductor (A), biceps femoris (BF), deep pectoral (DP), gluteal group (GL), infraspinatus (I), longissimus (L), psoas major (PM), rectus abdominis (RA), rectus femoris (RF), semimembranosus (SM), semitendinosus (ST), serratus ventralis (SV), spinalis (SP), supraspinatus (SU) and triceps brachii (TB) were removed, trimmed of external fat and weighed. Muscle weights were expressed as a percentage of hot carcass weight: A = .76%; BF = 3.30%; DP = 1.89%; GL = 1.81%; I = 1.10%; L = 3.35%; PM = .95%; RA = 1.12%; RF = .94%; SM = 2.35%; ST = 1.14%; SV = 2.26%; SP = .82%; SU = .69% and TB = 1.83%. The deep pectoral and triceps brachii were heavier (P less than .05) in steer carcasses than in heifer carcasses. No other significant sex effects were noted. Percentage of muscle tended to decrease with increasing marbling level; however, the linear regression of relative muscle weight on marbling level was significant for the BF, DP, PM, SM, SU and TB. Using marbling score or yield grade factors to predict the percentage of individual muscles in the carcass resulted in R/ values greater than .4 in 7 of the 15 muscles evaluated.(ABSTRACT TRUNCATED AT 250 WORDS)  相似文献

Ninety-eight calves were studied to determine if anemia and poikilocytosis were related to iron or copper status or hemoglobin type. No significant differences were found in serum iron, total iron binding capacity, marrow iron, plasma copper or hemoglobin type between affected and normal calves. Poikilocytes were strongly inversely correlated (-0.9177) with age. Calves less than six weeks of age had more poikilocytes, lower serum iron, higher total iron binding capacity, less adult hemoglobin and more neonatal and fetal hemoglobin than calves greater than six weeks of age.  相似文献

Reduced levels of total iron binding capacity and unsaturated iron binding capacity were observed in the blood of trichinous and iron-injected trichinous pigs. No change was observed in their serum iron and saturation concentration levels. Also, reduced iron concentration levels were observed in the livers of trichinous pigs, while increased iron concentration levels were observed in the spleens of trichinous pigs and the livers and spleens of iron-injected pigs. No difference was found with regard to weight gains, number of larvae per gram of tissues, or histologic characteristics of 'nurse cells'.  相似文献

选择35日龄、体重相近的杜×长×大三元杂交仔猪84头,按遗传基础相似、公母各半的原则,随机分成4组,第I组为对照组,其余为试验组,每个处理组设3个重复,分别用0%、1%、2%、3%的血红蛋白粉替代其日粮中相应比例的鱼粉(其中试验Ⅲ组中替代2%的鱼粉和1%的豆粕),并进行了为期30d的饲养试验。试验结果表明,仔猪的日增重试验Ⅱ组和试验Ⅲ组显著高于试验Ⅰ组和对照组(P<0.05),且试验Ⅲ组显著高于试验Ⅱ组(P<0.05);仔猪的血红蛋白浓度随血红蛋白粉添加量的增加而成正相关;仔猪血浆中转铁蛋白的含量随日粮中血红蛋白粉添加比例的增加而上升,并且各组间差异是显著的(P<0.05);仔猪的血浆铁含量试验Ⅲ组显著高于其它组(P<0.05)。  相似文献

Sixty-one finishing pigs (53.4 kg) were fed a control diet (containing soybean meal) or diets containing 20% intact canola (IC) or 20% ground canola (GC) for 8 wk. Diets were not isocaloric. Daily gain and feed efficiency were not affected by dietary treatment, but pigs fed GC ate less than pigs fed either IC or the control diet. Carcass measurements, obtained on 43 of the pigs, were not affected by diet. For 27 pigs, fatty acid composition of perirenal adipose tissue (PRF), subcutaneous adipose tissue (SCF), and longissimus muscle (LDM) was analyzed. Nine pigs (three per treatment) were randomly selected for fatty acid composition analysis of intramuscular adipose tissue (IMF) and for cholesterol analysis of several tissues. Pigs fed canola had greater (P less than .05) proportions of mono- and polyunsaturated fatty acids and less (P less than .05) saturated fatty acids in PRF and SCF. The differences were more pronounced for PRF than for SCF. In the LDM, pigs fed canola tended to have elevated levels of unsaturated fatty acids at the expense of the saturated fatty acids, but this effect was significant for linolenic acid only. The fatty acid composition of IMF was not affected by diet (P greater than .05). Diet did not alter the cholesterol content of the tissues, but cholesterol in IMF was higher (P less than .05) than in PRF, SCF, and LDM. In conclusion, 20% IC or GC did not alter growth performance or carcass characteristics of pigs. Feeding of canola increased the degree of unsaturation of PRF and SCF, but it had less effect on IMF and LDM.  相似文献

A method for studying iron absorption in humans was adapted to veal calves. Three 10-week-old calves with moderate (calves 1 and 2) or severe (calf 3) iron deficiency were given an abomasal injection of59Fe and51Cr and all their faeces were collected over 15 days in order to measure mucosal uptake, mucosal transfer and retention of iron. The mucosal uptake was 62.2, 53.4 and 71.8% in calves 1, 2 and 3, respectively. The iron retention measured 14 days after administration of the test dose was 57.4, 52.3 and 56.4% in calves 1, 2 and 3, respectively. Maximal plasma activity was found in all three calves between 1 1/2 and 2 h after injection of the test dose. The plasma activity decreased rapidly, with a slight increase between the 5th and the 10th hour. After 21 h, less than 0.25% of the injected dose was still present in 1 litre of plasma. Not all the51Cr was recovered in the faeces. No59Fe was found in the urine but some51Cr could be detected. Growth performance, forestomach development, and carcass and meat quality of veal calves fed a milk replacer diet (Control) were compared to those obtained from calves fed the same liquid diet plus 250 g x calf(-1) x d(-1) of dried beet pulp or wheat straw. Three groups of 46 Polish Friesian calves, balanced according to initial BW, were assigned to the three dietary treatments in a fattening trial, which lasted 160 d. The provision of either solid feed did not affect the milk replacer intake. However, calves' ADG was increased (P < 0.01) only by feeding the beet pulp diet. The administration of both solid feeds improved calves' health status; calves fed solid feeds required fewer iron treatments for low hemoglobin and needed less medical treatments for respiratory or gastrointestinal diseases. In comparison to the Control calves, the provision of wheat straw and beet pulp increased iron intake throughout the fattening period by 41 and 130%, respectively. However, only calves fed beet pulp showed higher levels of hemoglobin and plasma iron concentrations (P < 0.05), whereas the same blood parameters were similar between Control calves and those fed wheat straw. At slaughter, both solid feeds led to empty forestomach weights heavier than those of Controls without reducing dressing percentage. The reticulorumen was heaviest in calves fed beet pulp, whereas wheat straw promoted omasal development. The administration of beet pulp resulted in a better carcass conformation than did the Control diet or wheat straw, but it had a detrimental effect on carcass color, which was graded as the darkest (P < 0.001). Consistent with this result, meat color of calves fed beet pulp was darker than that of Control calves and those fed wheat straw, because of the higher hematin concentration measured at the muscle level. No differences in carcass and meat color were observed between Control calves and calves fed wheat straw. The administration of solid feeds for welfare purposes does not always prevent the production of veal meat fulfilling the color standards required by the market. There is not a straight-forward relationship between a solid feed's iron content and the "redness" of veal meat, which should be related to the capability of the calves to use the iron provided by the roughage.  相似文献

Positive relationships between circulating leptin concentrations and body fat content have been established in sheep when covering a rather broad range of age and/or body weight. The usefulness of leptin measurements for predicting carcass fat has yet to be evaluated specifically in fattening lambs. We therefore measured plasma leptin concentrations in 56 male lambs half and half Merino Mutton and Blackheaded Mutton. Subcutaneous fat thickness was measured by ultrasound 1 day before the lambs were slaughtered at 35 or 45 kg live weight. Carcass composition was determined by tissue dissection. The coefficients of correlations between leptin and the different amounts in fat depots ranged from 0.40 to 0.56 within the two live weight groups, and from 0.53 to 0.64 when taking the two groups together. Carcass fat percentage was estimated by leptin concentrations with the same accuracy (R2 = 0.34) as with ultrasound fat thickness. The accuracy was higher for leptin in the 35 kg-group whereas the accuracy was higher for ultrasound fat thickness in the 45 kg-group (R2 = 0.26 vs. 0.31). A combination of leptin and ultrasound fat thickness clearly enhanced the precision of estimation in all groups. Further investigations on the influence of factors such as breed, gender, duration of feed withdrawal or photoperiod on the association between leptin and carcass composition are necessary before the suitability of plasma leptin concentration for practical application can be evaluated.  相似文献

Six Belgian Blue bulls (double-muscled type) and six Friesian bulls were offered a fattening diet for 34 weeks. Plasma samples were obtained once a week and also every 20 min over a 24 h period, 7 weeks before slaughter.No differences were observed between the breeds in plasma glucose, urea and free amino nitrogen concentrations, while creatinine was significantly higher in the Belgian Blue bulls. Tri-iodothyronin, tetra-iodothyronin, insulin-like growth factor 1, insulin and testosterone concentrations were higher in the Holstein group. In contrast, the Belgian Blue bulls appeared to produce more growth hormone. The slaughter weight, carcass weight, dressing percentage and proportion of lean meat were significantly higher in the Belgian Blue group. The characteristics of muscle mass (carcass weight, dressing percentage and proportion of lean meat) were positively correlated with creatinine and with the total peak area or peak amplitude of growth hormone. The insulin concentration was positively correlated with the proportion of adipose tissue in the carcass and negatively correlated with the proportion of muscle. There were no correlations between the carcass characteristics and insulin-like growth factor 1 or testosterone. No further information was provided when the ratios of the hormones were correlated with carcass characteristics.  相似文献

Twenty veal calves were fed milk substitute containing 19 mg Fe/kg; ten calves were supplemented with iron in accordance with their requirements and the other 10 were unsupplemented controls. Serum iron (SI), hemoglobin (Hb) and packed cell volume (PCV) were determined at the start of the experiment and then every third week. From 3 weeks after the start to the end of the experiment there were significant differences between SI mean values between treated and untreated calves. In the treated group the Hb mean values were unchanged during the experiment while the untreated group had a significant decrease. The mean PCV values were also decreased. The daily gain was 1.36 g higher per calf in the treated group. The feed consumption per kg gain was 18 g lower and the carcass weight was 4.2 kg higher per calf in the treated group. The points for color and structure of carcass were 2.5 units higher per calf in the untreated group. The incidence of enteritis was less in the treated calves than in the untreated ones.  相似文献

The perilipins (PLIN) belong to a family of structural proteins that play a role regulating intracellular lipid storage and mobilization. Here, PLIN1 and PLIN2 have been evaluated as candidate genes for growth, carcass and meat quality traits in pigs. A sample of 607 Duroc pigs were genotyped for two single‐nucleotide polymorphisms, one in intron 2 of the PLIN1 gene (JN860199:g.173G>A) and the other at the 3′ untranslated region of the PLIN2 gene (GU461317:g.98G>A). Using a Bayesian approach, we have been able to find evidence of additive, dominant and epistatic associations of the PLIN1 and PLIN2 polymorphisms with early growth rate and carcass length. However, the major effects were produced by the dominant A allele at the PLIN2 polymorphism, which also affected the carcass lean weight. Thus, pigs carrying an additional copy of the A allele at the g.98G>A PLIN2 polymorphism had a probability of at least 98% of producing carcasses with heavier lean weight (+0.41 kg) and ham weight (+0.10 kg). The results obtained indicate that the PLIN2 polymorphism could be a useful marker for lean growth. In particular, it may help to reduce the undesired negative correlated response in lean weight to selection for increased intramuscular fat content, a common scenario in some Duroc lines involved in the production of high quality pork products.  相似文献

选取120头28日龄断奶仔猪,随机分成4个处理组,即1个对照组和3个试验组,每组3个重复,每个重复10头。对照组饲喂基础日粮,试验1、2、3组分别饲喂基础日粮中血红素铁净添加量为27.5、55.0、85.0 mg/kg的3种试验日粮,研究日粮中添加血红素铁对断奶仔猪的生长性能、血液指标(血红蛋白浓度、免疫球蛋白浓度)的影响。试验正试期13 d。结果表明,血红素铁各添加量组均能够提高仔猪的生长性能,日粮中血红素铁添加量为55 mg/kg时,仔猪平均日增重、饲料转化率较对照组分别提高12.02%和10.27%(P<0.05)。血红素铁对断奶仔猪有良好的促生长作用,也在一定程度上提高了仔猪血液中血红蛋白和IgG浓度。  相似文献

The partitioning of propofol within the blood, when administered in its usual emulsion carrier, has been determined in vitro in sheep. The blood:plasma ratio was found to be 1.13 and the blood-cell:plasma ratio 1.42. When oxalate was used as the anticoagulant, the plasma protein binding was calculated to be 92.6% - slightly lower than reported for dog, rat, rabbit and man. However, when heparin was the anticoagulant, the binding was significantly less, 83.0%. Differences from some results in the literature may be attributable to other workers using propofol without the lipid emulsion carrier. From the results of this study it is argued that anaemia and plasma levels of protein and lipid may affect propofol requirements.  相似文献

The effect of true milk use in the diet of Spanish Brown Swiss male calves on animal performance, carcass and meat quality, and fatty acids composition was studied. In experiment 1, the effect of milk intake [ad libitum continuous (ADLIB) feed vs. restricted 0.7 during 75 days followed by ad libitum feed (RESTR)] and slaughter endpoint (225 kg vs. 5 month) were studied. In experiment 2, ad libitum concentrate feeding [grain-fed (GF)] was compared with milk supplementation until slaughter [milk-fed (MF)] in calves slaughtered at 345 kg. As regards to milk intake, carcass weight and degree of fatness were higher in the ADLIB group (P<0.05). The RESTR group revealed a higher percentage of saturated fatty acids (P<0.05). In experiment 2, the MF group exhibited a higher fat percentage (P<0.05), lower press and cooking losses (P<0.05), and higher scores for tenderness and juiciness (P<0.05) than the GF group. The percentage of saturated fatty acids was higher in the MF group (P<0.05). The results suggest that true milk use in veal production could be an advantageous alternative in terms on production costs, animal performance, and carcass and meat quality.  相似文献

The rate of gain, carcass measurements and three muscles were evaluated in 65 crossbred boars representing 13 litters that were allotted at 4 wk of age to slaughter weight and treatment groups as follows: 1) 105 kg, castrated; 2) 105 kg, intact; 3) 118 kg, intact; 4) 132 kg, intact and 5) 145 kg, intact. One barrow and four boars within a litter constituted a replicate and each replicate was penned separately. The growth rate of all boars to 105 kg constituted one group and was compared with the growth rate of barrows to 105 kg live body weight. Average daily gain from 4 wk until 105 kg did not differ significantly between boars and barrows. Growth rate of the boars continued at an increasing rate until they reached 87.3 kg live weight, while maximum daily gain of barrows occurred at 76.3 kg live weight or 11 kg less than that of boars. At 105 kg, boars had 31.3% less 10th rib backfat thickness and 2.9% greater carcass length than barrows, but longissimus muscle area did not differ. Barrows had greater backfat thickness at 105 kg than 145-kg boars. As live weight increased from 105 to 145 kg, carcass length, 10th rib backfat thickness and longissimus area of boars increased (P less than .01) linearly. Fat-free muscle weights of the brachialis (BR), semitendinosus (ST) and longissimus (L) did not differ between boars and barrows at 105 kg. Boars at 105 kg had 1.3 and 1.7% more moisture in the BR and ST, respectively, than barrows. Percentage protein, total intramuscular fat and fiber diameter in the BR, ST and L muscles did not differ between boars and barrows at 105 kg or with increasing live weight in boars. Total RNA increased linearly (P less than .05) in the BR and ST as boars increased in live weight from 105 to 145 kg.  相似文献
