Feeding dried distillers grains with solubles (DDGS) during the late stage of the fattening period of Holstein steers was studied in regard to the influence on meat quality. Sixteen Holstein steers approximately 18 months old were used in this study. Eight animals were fed commercial concentrated feed for the entire fattening period. The other eight animals were fed 15% DDGS in the concentrated feed for 3 months before slaughtering. The moisture, ether extract and crude protein from both groups was approximately the same. The thiobarbituric acid reactive substance (TBA) value of storage for 7 days at 5°C from the animals fed DDGS showed a tendency to be lower (P = 0.059). The change in the TBA value during storage was also lower for the animals not fed DDGS (P < 0.05). There were no differences in the subcutaneous fat color between the two groups. The a*(measure of redness) and b*(measure of yellowness) of the M. longissimus from the animals fed DDGS showed a tendency to be lower (P = 0.051, 0.070). The fatty acid composition of the M. longissimus, subcutaneous and perirenal fat were not widely influenced by the feeding of DDGS. It is suggested that feeding 15% DDGS during the late stage of the fattening period for Holstein steers reduced the oxidation of the beef.  相似文献

Information on the initial and final weights, length of feeding period, grade of the live animal before slaughter, carcass weight and dressing percentage of 2,498 stall fed Malawi zebu (MZ) and crossbred steers from Southern Region and 2,085 steers from the Central Region of Malawi is analysed. Agricultural and household residues were the basis of the feeding system. The genetic composition of individual animals was not known; weight groups were therefore used as proxies for breed types. Final weights were significantly influenced by breed, month and year when the feeding period was started and breed by month interactions. The mean stall feeding period in the South was 188 days and the average daily gain was 0.59 kg. Steers in the Central Region were fed for 213 days and gained on average 0.50 kg per day. Breed did not exert a significant effect on weight gain. However, when daily gain was compared on the basis of metabolic body size, MZ i.e. smaller steers gained significantly more rapidly than crossbred steers. The dressing percentage of animals from both regions was 52.3%. The carcass weight of crossbred steers was higher than that of MZ steers. It is concluded that an effective fattening system can be based on locally available resources and a similar system could be suitable for other parts of the developing world.  相似文献

The present study investigated the influence of feeding a large amount of grass hay to steers from the early to middle fattening period on growth, carcass characteristics, and meat characteristics. Steers were randomly divided into grass hay‐fed (GHF, n = 6) and concentrate‐fed (CF, n = 6) groups. The dressed weight of the GHF steers was lower than that of the CF steers, but the final body weight was not significantly different between the groups. The GHF steers had decreased subcutaneous fat and rib thickness compared with the CF steers. Lipid content, monounsaturated fatty acids, and drip loss in the muscles were lower in the GHF steers than in the CF steers. Furthermore, n‐3 polyunsaturated fatty acids were higher in the GHF steers compared with the CF steers. The GHF steers had lower body weight during the middle fattening stage, which may have occurred as a result of muscle growth suppression caused by increased Myostatin expression; an increase in daily gain during the finishing period may have occurred as a result of muscle growth activation caused by decreased Myostatin expression. Feeding steers a grass hay‐based diet during the early fattening period possibly maintains the quantitative productivity of beef similarly to feeding a concentrate‐based diet.  相似文献

This study was designed to compare the fatty acid profiles of four types of fat depots from bulls, steers, and heifers. All animals were Polish Holstein-Friesian and Limousin crossbreds fattened semi-intensively—silage at libitum and concentrate in the amount corresponding to 30% of their net energy requirements. The fatty acid profile in intramuscular, intermuscular, and external and internal fat was determined. The intramuscular fat of bulls was most abundant in total PUFAs and n-6 PUFAs, and functional fatty acids C 18:2, C 20:4, and C 22:5 in comparison with steers and heifers. Regardless of sex category, intramuscular and external fat were characterized by higher levels of UFAs and a more desirable MUFA/SFA ratio than the remaining fat types. It should also be noted that external fat was more abundant in CLA than other fat types, and that the highest CLA content was found in bull fat, compared with the remaining sex categories of cattle.  相似文献

We summarized experimental data to quantify the change in final BW due to a particular implant strategy when cattle are adjusted to the same final body composition. The database developed for this study included 13 implant trials involving a total of 13,640 animals (9,052 steers and 4,588 heifers). Fifteen different implant strategies were used among these trials, including no implant (control), single implants, and combinations of implants. Individual carcass data collected at slaughter were used to calculate the adjusted final shrunk BW at 28% empty body fat (AFBW) for each treatment group within a trial, then the implant treatments were grouped into categories according to their effect on weight at 28% empty body fat (four groups for steers and two groups for heifers). All differences in AFBW between categories were significant (P < 0.01), indicating an incremental anabolic implant dose response in AFBW over unimplanted animals. Values for AFBW ranged from 520 kg in unimplanted steers to 564 kg in steers implanted and reimplanted with Revalor-S. For heifers, AFBW ranged from 493 kg in unimplanted heifers to 535 kg in heifers implanted and reimplanted with Revalor-H. After accounting for differences in mean BW and composition of gain, implanted steers and heifers had 4.2 and 3.1% higher apparent diet ME values, respectively. Increasing the anabolic implant dose increases the weight at which animals reach a common body composition. This study indicates that anabolic implant response is due to a combination of a reduced proportion of the DMI required for maintenance, reduced energy content of gain, and efficiency of use of absorbed energy.  相似文献

The effects of grazing and supplemental protein concentrations, provided during the grazing period, on subsequent finishing performance and carcass quality were investigated. This experiment was carried out using 15 Japanese Black cattle (Wagyu) steers. The steers were fed as follows: (i) grazing supplemented with moderate protein concentrate (GMP) (18% crude protein (CP); dry matter (DM) basis) before finishing, followed by feeding in a barn until slaughter; (ii) grazing supplemented with low protein concentrate (GLP) (14% CP; DM basis) before finishing, followed by feeding in the barn until slaughter; and (iii) no grazing before finishing (NG). From the end of the grazing season to the end of the growing period, the GMP and GLP steers were managed in the same way as the NG steers. All of the animals were fed the same diet in the finishing period (9 months to 28 months). None of the three treatments affected the average daily gains. For all treatments, chilled carcass weights were more than 450 kg and did not differ significantly among the groups. The longissimus muscle areas in the grazed steers were numerically larger than in those receiving the NG treatment. Fat thickness was significantly greater (P < 0.05) in the NG steers than in the grazed steers. The intramuscular fat and marbling scores were not affected in the grazed steers. In conclusion, the carcass quality of grazed steers was similar to that of the NG steers at a similar final age, and the quantity of meat in the NG steers would be less than that of the GMP and GLP steers. Therefore, spring‐born Wagyu steers should be grazed using the GLP supplement before fattening.  相似文献

本试验旨在研究育肥后期锦江去势公牛的能量代谢规律及需要量。在育肥前期不同能量水平饲喂的基础上(育肥前期5种肉牛日粮综合净能(NEmf)依次为6.02、6.38、6.74、7.10、7.46 MJ/kg,每组10头牛,育肥116 d)继续育肥,育肥前期试验结束后,保持分组不变,挑选35头体型接近、体重(355.94±35.11) kg锦江牛继续育肥。按照中国《肉牛饲养标准》(NY/T 815-2004)中350 kg肉牛日增重1.2 kg/d所需净能的100%(A组)、106%(B组)、112%(C组)、118%(D组)、124%(E组)配制5种不同能量水平的试验日粮,5种日粮的NEmf依次为6.21、6.58、6.95、7.33、7.70 MJ/kg。采用饲养试验和消化代谢试验测定育肥后期锦江去势公牛生长性能及能量代谢指标,并建立消化能和代谢能能量需要模型。预试期10 d,正试期128 d。结果表明:①D、E组育肥后期锦江去势公牛的总能采食量较其他组显著降低(P<0.05)。②B组肥后期锦江去势公牛能量利用效率最高,总能消化率、总能代谢率分别为90.59%和83.36%。③育肥后期锦江去势公牛日增重与消化能采食量和代谢能采食量存在高度线性正相关(R^2=0.997、R^2=0.993),其消化能、代谢能需要量的回归方程分别为:DE_m=0.770W0.75+40.088×ADG;ME_m=0.645W0.75+38.603×ADG(其中DE为消化能总需要量(MJ/d);ME为代谢能总需要量(MJ/d);W0.75为单位代谢体重(kg);ADG为平均日增重(kg/d))。综上所述,育肥后期锦江牛的维持消化能总需要量(DE_m)和代谢能总需要量(ME_m)分别为0.770、0.645 MJ/(kg W0.75·d),每千克增重的消化能和代谢能需要量分别为40.088、38.603 MJ。  相似文献

The effects of the fattening period on carcass characteristics, fatty acid composition of fat deposits, and muscle free amino acid (FAA) and inosinic acid (IMP) contents were evaluated in Japanese Black steers. Ten castrated, 10-month-old calves derived from the same sire were divided into five to be slaughtered at the age of 30 months after a 20-month fattening period (20-month group) and five to be slaughtered at the age of 34 months after a 24-month fattening period (24-month group). Concerning the fatty acid composition of subcutaneous fat, the percentage of palmitoleic acid was higher ( P  < 0.05) in the 24- than in the 20-month group, but no difference was noted in any other fatty acids. For intermuscular fat, no difference was observed in any fatty acids. The percentages of oleic acid and total monounsaturated fatty acid of intramuscular and perinephric fat were higher ( P  < 0.05) in the 24- than in the 20-month group. Of the FAAs in the longissimus thoracis muscle, the threonine and tyrosine contents were lower ( P  < 0.05) in the 24- than in the 20-month group. The IMP content was higher ( P  < 0.05) in the 24- than in the 20-month group, suggesting an effect of prolongation of the fattening period.  相似文献

The aim was to compare the effects of two production systems on performance, carcass traits and physical‐mechanical characteristics of leather from Beefalo‐Nellore steers and heifers and to determine if the response to the production system was similar for both genders. A total of 40 Beefalo‐Nellore cattle, 20 steers and 20 heifers, were evaluated. Animals were divided into two production systems: slaughtered at 15 (intensive system) or 26 (extensive system) months of age. In the intensive system, all animals received a ration containing 600 g/kg corn silage and 400 g/kg concentrate. In the extensive system, animals were kept on a pasture predominantly based on Brachiaria sp. and supplemented with 2 kg/day concentrate. In the intensive system, there was no difference in slaughter weight (470 kg body weight) between steers and heifers but steers in the extensive system had greater slaughter weight than heifers (463 and 428 kg body weight, respectively). Leather weight was higher for animals in the intensive than extensive system but there was no difference in leather weight once excess fat was removed. Leather quality from Beefalo‐Nellore cattle slaughtered at 15 or 26 months of age is similar although carcass yield is higher for cattle slaughtered at a younger age.  相似文献

Fatty acid composition and carcass traits of 2,275 Japanese Black steers and heifers were analyzed to estimate the heritabilities and genetic correlations using the REML procedure. Slices of LM at the 6th to 7th rib section were minced and homogenized, and total lipids were extracted for the analysis by a gas chromatograph. Oleic acid accounted for the majority (51.3%), followed by palmitic (26.4%) and stearic (10.8%) acids. Heritabilities of carcass traits were moderate to high, ranging from 0.34 to 0.61, and heritabilities of individual fatty acids varied largely from 0.00 to 0.78. Those of MUFA, SFA, and PUFA were estimated to be 0.68, 0.66, and 0.47, respectively. Predicted breeding values for MUFA in 99 sires ranged from -3.0 to 5.4%. Genetic correlations of fatty acid compositions with carcass traits were generally weak (-0.28 to 0.39). Low but positive genetic correlations were obtained between beef marbling, on which emphasis of selection has been placed, and oleic acid (0.19) or MUFA (0.23). The results indicated the possibility not only for genetic improvement in fat quality traits but also simultaneous improvements with carcass traits by appropriate selection program.  相似文献

This study compared the growth performance, plasma testosterone and cortisol levels around castration at 10 months of age, and plasma insulin‐like growth factor (IGF)‐I concentration and flight speed, in intact bulls and steers from 10 to 21 months of age in a feral Spanish breed. Fourteen bulls (366.5 ± 48.5 kg live weight) were assigned at random to one of two treatments: surgically castrated (steers) or intact (bulls), and submitted to an identical fattening period. Steers reared until heavy live weights (21 months of age) grew slowly and had lower plasma IGF‐I concentrations than intact bulls. These differences were mainly highlighted the month after surgery (11 months of age) and the last part of the fattening period (from 19 to 21 months of age). After surgical castration (11 and 12 months of age), steers showed a tendency to display greater flight speed values than intact bulls but baseline plasma cortisol concentration did not differ between groups at this time. At the end, steers and bulls reached nearly similar temperament, as flight speed did not differ between them. The results confirm the role of IGF‐I as a key anabolic hormone in male beef cattle and thus it may reflect growth differences due to altered sex steroids production.  相似文献

In order to obtain available biochemical parameters related to the marbling score (MS), by which the meat was graded from 1 to 12 in Japan, serum biochemical values were examined in 13 Japanese Black steers during the fattening stages. The steers were divided into high MS (8-11) and low MS (4-5) groups and the fattening stage was also divided into 4 stages according to their feed contents; Stage I (11-13 month-old; 0-4 months after the fattening (af)), II (5-9 months af), III (10-14 months af), and IV (15-20 months af). High MS group showed significantly higher levels in glucose and urea nitrogen (at Stage I), albumin/globulin ratio (at Stage II), and magnesium (at Stage I and III), and lower level in vitamin A (at Stage III) than low MS group. These biochemical parameters, indicating conditions of steers during the fattening stages, are considered to have a possibility related to MS in fattening steers.  相似文献

We examined the effect of grazing during the growing phase on plasma glucose and insulin behavior at the end of the growing phase and at the early stage of the subsequent fattening phase in beef steers. From 13 to 45 weeks of age (growing phase), crossbred beef steers were grazed with minimal supplement (group G: n = 5) or housed while being fed on hay and concentrate (group H: n = 5). Following this phase, both groups were housed for finishing (fattening phase). At the end of the growing phase, group G showed faster plasma glucose disappearance after intravenous glucose infusion, with a smaller plasma insulin response, compared with group H. At the third week of the fattening phase, group G still showed higher glucose tolerance, although they experienced abrupt changes in nutritional and environmental factors. The results suggest that grazing during the growing phase probably improves the glucose tolerance and insulin response to glucose infusion in steers compared with animals that were housed during the corresponding period, and the improved properties may persist at least a few weeks after the commencement of fattening.  相似文献

This study aimed to examine the effects of feeding kraft pulp (KP) on the growth performance, feed digestibility, and rumen fermentation of Japanese Black fattening steers. Ten Japanese Black fattening steers (aged 26 months) were randomly divided into control and KP groups. The control group (n = 5) was fed concentrate feed without KP, and the KP group (n = 5) was fed concentrate feed containing 10% KP. Both the groups were provided rice straw as roughage. The experiment was conducted over a period of 12 weeks. There was no significant difference in dry matter intake, daily body weight gain, and nutrient digestibility between both groups. No difference was observed in the ruminal concentrations of volatile fatty acids among the groups. At weeks 8 and 12 after the onset of the experiment, the acetate‐to‐propionate ratio in the ruminal fluid of the KP group was significantly higher than that of the control group. The average daily pH of ruminal fluid and activity of ruminal lipopolysaccharide did not differ between the groups. Our results suggested that the growth performance and feed digestibility in the Japanese Black fattening steers were not influenced by replacing concentrate feed with KP.  相似文献

We investigated the effects of wood kraft pulp (KP) feeding on feed digestibility and rumen fermentation of Japanese Black (JB) steer in the middle fattening stage. The feeding experiment was carried out a replicated 3 × 3 Latin square design using six JB steers (16.2 ± 0.8 months of age). Steers were fed rice straw and three concentrated feeds: commercial formula feed (control), formula feed containing 7.5% KP on a dry matter (DM) basis (7.5% KP), and formula feed containing 15% KP on a DM basis (15% KP). Feed digestibility and rumen fermentation parameters were recorded for 3 days during the measurement period, after an adaptation phase of 11 days. There was no significant difference in DM intake per day among diets. A slightly higher digestibility of neutral detergent fiber was observed in steers fed 15% KP, compared with those fed other diets (P = 0.059). The butyric acid ratio in rumen fluid was higher in steers fed KP diets than in steers fed control (P = 0.083). The average ruminal pH was unaffected by KP diets. This study suggests that replacing 15% of concentrated feed with KP has little effect on feed digestibility and rumen fermentation in JB fattening steer.  相似文献

We proposed that stearoyl-CoA desaturase (SCD) activity dictates fatty acid composition of adipose tissue and muscle in beef cattle, regardless of ruminal or hepatic fatty acid hydrogenation or desaturation. Twelve Angus steers were assigned to a calf-fed (CF) group and slaughtered at weaning (8 mo of age; n=4), 12 mo of age (n=4), or 16 mo of age (n=4). Twelve steers were assigned to a yearling-fed (YF) group and slaughtered at 12 mo of age (n=4), 16 mo of age (n=4), and 17.5 mo of age (n=4; 525 kg, market weight). Data were analyzed based on time on the corn-based finishing diet, with terminal age as a covariate, and orthogonal polynomial contrasts were tested on the main effects of treatment group and time on the finishing diet. Fatty acids from duodenal digesta, plasma, liver, LM, and subcutaneous and intramuscular adipose tissue were measured, and SCD gene expression was measured in intramuscular and subcutaneous adipose tissues. In duodenal digesta, palmitic and linoleic acids increased by 100% over the sampling period, α-linolenic acid decreased over the sampling period, and trans-vaccenic acid was greater in YF than in CF steers (all P < 0.01). The proportion of α-linolenic acid decreased over time in all tissues, including liver. The SCD index (ratio of SCD fatty acid products to SCD fatty acid substrates) increased over time in LM and in intramuscular and subcutaneous adipose tissues. The SCD:glyceraldehyde 3-phosphate dehydrogenase mRNA ratio was virtually undetectable at the initial sampling periods in subcutaneous adipose tissue of YF and CF steers, and it increased over time (P < 0.01). The SCD index and SCD:glyceraldehyde 3-phosphate dehydrogenase ratio were greater in intramuscular adipose tissue of CF steers than in that of YF steers. The SCD index did not change over time in liver and decreased over time in duodenal digesta. We conclude that, unlike essential fatty acids, the SFA and MUFA composition of adipose tissue is regulated by adipose tissue fatty acid desaturation, with little contribution from hepatic or duodenal fatty acids.  相似文献

Factors thought to influence monthly body weight and average daily gain of 122 first and second generation Canadian Holstein calves aged six to 24 months were studied. All factors (generation, sex, parity, season, age and year) studied accounted for 55.9 to 71.2% and 35.6 to 69.1% of the variation in body weight and average daily gain respectively. Parity, year and generation were the most important factors influencing all traits and accounted for 34.4 to 64.3% and 22.9 to 66.8% of the variation in body weight and average daily gain. Least squares means were, for body weight 144.2, 222.6, 330.5 and 377.9 kg at six, 12, 18 and 24 months and for average daily gain 0.42, 0.37, 0.50 and 0.39 kg at six to nine, nine to 12, 12 to 18 and 18 to 24 month intervals. It was concluded that offspring of Canadian Holsteins in this environment under adequate management and nutrition will be of adequate size for heifers to calve under 30 months of age and steers to reach 400 kg slaughter weight in 24 months.  相似文献

Two hundred ninety-three Japanese Black Wagyu steers derived from 34 sires were used to investigate genetic effects on the fatty acid composition of carcass fat. All steers were fed identical diets for 365 d and slaughtered at similar ages. If the percentage of genetic contribution of sire A, B, or C was not lower than 25%, steers were classified into groups A, B, and C, respectively. Fatty acid compositions differed depending on deposit sites. Mean percentage of monounsaturated fatty acids (MUFA) tended to be higher in the outer parts than in the inner parts of the body. Percentage of MUFA in carcass fat was negatively correlated with withers height and BW and positively correlated with meat quality score and marbling score. Fatty acid compositions of the 34 sire groups varied, and mean percentages of MUFA in i.m. fat ranged from 47.71 to 54.77%. Steers in the C group grew larger than those in the A or B group. Mean percentages of MUFA for i.m. fat in the A, B, and C groups (52.83, 51.88, and 50.33%, respectively) differed (P < 0.05) from each other. Steers in the C group had higher (P < 0.05) percentages of saturated fatty acids than those in the A or B groups. Percentages of genetic contribution of sires B (P < 0.05) and C (P < 0.001) were negatively correlated with percentage of MUFA in i.m. fat. These results suggested that genetic factors affected fatty acid composition of carcass fat in Japanese Black Wagyu cattle and that some sires had potent genetic factors affecting this composition.  相似文献

This experiment was undertaken to examine the effect of dosing of a mechanical stimulating brush (RF) in the rumen on dressed carcass characteristics and on the fatty acid composition of dressed carcass fat in fattening beef cattle. The fattening trial was carried out with high-concentrate diets (organic cell wall contents: 27.5% on a dry mater basis) in eight Holstein steers (12 months of age). Four of the experimental animals were orally dosed with three RF/head (RF group); the other four animals without RF dosing were allotted as the control group. Grass hay was fed to the animals (0.2 kg/head/day) until 19 months of age. Concentrate diet was given ad libitum during the experiment. There were no statistical differences between the RF group and the control group in yield score and meat quality score of dressed carcass characteristics. Regarding fatty acid composition of dressed carcass fat, the proportion of C18 : 2 fatty acids in subcutaneous fat in the RF group was greater ( P  < 0.05) than that in the control group. C16 : 0 fatty acids in kidney fat in the RF group was lower ( P  < 0.05), and C18 : 2 fatty acids and total unsaturated fatty acids of 18 carbon number in kidney fat in the RF group were higher ( P  < 0.05) compared with the control group. The proportion of C18 : 2 fatty acids in rib eye fat in the RF group was greater ( P  < 0.05) than that in the control group. C18 : 1 fatty acids, C18 : 2 fatty acids and total unsaturated fatty acids of 18 carbon number in rib fat in the RF group were greater ( P  < 0.05) than those in the control group. The results suggest that in fattening Holstein steers fed with high-concentrate diets, the effect of ruminal RF dosing on dressed carcass characteristics is not significant, but the proportion of unsaturated fatty acid of carcass fat is increased.  相似文献

The aim of this study was to determine the effect of disease incidence on selected parameters of cattle fattening performance and carcass quality, and the fatty acid profile of beef. The experimental materials comprised 16 bulls and 16 steers, Polish Holstein‐Friesian × Limousin crossbreeds (including 10 healthy and six treated animals of each category). At 5 weeks of age, bloodless castration was carried out using a rubber elastrator. The calves were fed milk replacer provided in automatic feeding stations. Until 540 days of age, the animals were fattened in an Animal Research Laboratory equipped with the Roughage Intake Control (RIC) system (Insentec, the Netherlands). In comparison with healthy (untreated) bulls and steers, sick (treated) animals had lower average body weight at 180 days of age, by 37 kg (P ≤ 0.05) and lower average final body weight at 540 days of age, by 56 kg (P ≤ 0.05). Sick animals were characterized by lower feed intake and worse feed efficiency (not statistically significant differences). Hot carcass weight reached 318 kg in healthy animals and 258 kg in treated bulls (P ≤ 0.05). In treated steers, the percentage of lean meat and bones in the three‐rib section was higher and the percentage of fat was lower, compared with their healthy counterparts (P ≤ 0.01). There was a category × health status interaction for carcass tissue composition. There were no significant influences of type of sickness on analyzed traits. In comparison with healthy steers, intramuscular fat of Musculus longissimus dorsi (MLD) from treated steers had significantly (P ≤ 0.05) higher concentrations of polyunsaturated fatty acids (n‐6 and n‐3) and a lower content of conjugated linoleic acid.  相似文献
