Strawberries were processed to juice, nectar, wine, and puree. For investigation of the antioxidant capacity as well as the contents of ascorbic acid, total phenolics and total anthocyanins, samples were taken after different stages of production to determine the effects of processing. The content of vitamin C was measured spectrophotometrically. The total phenolic content was analyzed by using the Folin-Ciocalteu method, and the amount of total anthocyanins was determined by using the pH-differential method. Two different methods-the trolox equivalent antioxidant capacity assay and the ferric reducing antioxidant power test-were used to determine the hydrophilic antioxidant capacity. This study showed the decrease of all investigated parameters within processing strawberries to different products. The content of ascorbic acid decreased with production time and processing steps, especially during heat treatment. The investigations on total phenolics in strawberry products proved fining to be a mild method to clarify berry juices and wines without removing high amounts of total phenolics. Fermentation did not lead to heavy losses of total phenolics, probably due to polymerization and condensation of monomer phenolics such as anthocyanins. Total anthocyanins and the hydrophilic antioxidant capacity decreased while using high temperatures. Anthocyanins also decreased considerably during the processing of wines, mainly caused by fermentation and pasteurization.  相似文献

The fruit industry requires rapid, economical, and nondestructive methods for classifying fruit by internal quality, which can be built into the processing line. Total soluble solid content and firmness are the two indicators of plum internal quality that most affect consumer acceptance. These parameters are routinely evaluated using methods which involve destruction of the fruit; as a result, only control batches can be analyzed. The development of nondestructive analytical methods would enable the quality control of individual fruits. Near-IR spectroscopy (NIRS) was used to assess total soluble solid content (SSC, degrees Brix) and firmness (N) in intact plums. A total of 720 plums (Prunus salicina L. cv. 'African Pride', 'Black Diamond', 'Fortune', 'Laetitia', 'Larry Anne', 'Late Royal', 'Prime Time', 'Sapphire', and 'Songold') were used to obtain calibration models based on reference data and near-IR spectral data. Standard errors of cross-validation (SECV) and coefficients of determination for cross-validation (r(2)) were (0.77 degrees Brix; 0.83) for total soluble solids content and (2.54 N; 0.52) for firmness. Results suggest that NIRS technology enables fruit to be classified in terms of total soluble solid content and firmness, thus allowing increased sampling of each production batch and ensuring a given quality with greater precision and accuracy.  相似文献

The contribution of each phytochemical to the total antioxidant capacity of apples was determined. Major phenolic phytochemicals of six apple cultivars were identified and quantified, and their contributions to total antioxidant activity of apples were determined using a 2,2'-azinobis(3-ethylbenzothiazoline-6-sulfonic acid) radical scavenging assay and expressed as vitamin C equivalent antioxidant capacity (VCEAC). Average concentrations of major phenolics and vitamin C in six apple cultivars were as follows (mg/100 g of fresh weight of apples): quercetin glycosides, 13.20; procyanidin B(2), 9.35; chlorogenic acid, 9.02; epicatechin, 8.65; phloretin glycosides, 5.59; vitamin C, 12.80. A highly linear relationship (r (2) > 0.97) was attained between concentrations and total antioxidant capacity of phenolics and vitamin C. Relative VCEAC values of these compounds were in the order quercetin (3.06) > epicatechin (2.67) > procyanidin B(2) (2.36) > phloretin (1.63) > vitamin C (1.00) > chlorogenic acid (0.97). Therefore, the estimated contribution of major phenolics and vitamin C to the total antioxidant capacity of 100 g of fresh apples is as follows: quercetin (40.39 VCEAC) > epicatechin (23.10) > procyanidin B(2) (22.07) > vitamin C (12.80) > phloretin (9.11) > chlorogenic acid (8.75). These results indicate that flavonoids such as quercetin, epicatechin, and procyanidin B(2) rather than vitamin C contribute significantly to the total antioxidant activity of apples.  相似文献

该研究的目的是建立可见/近红外光谱与梨果实坚实度之间的数学模型,评价可见/近红外光谱技术无损测量梨果实坚实度的应用价值。在可见/近红外光谱区域(350~1800 nm),试验对比分析了不同测量部位、不同光谱预处理方法和不同校正建模算法的梨果实坚实度校正模型。结果表明:赤道部位吸光度一阶微分光谱的偏最小二乘回归所建梨果实坚实度校正模型的预测性能较优,其校正和预测相关系数分别为0.8779和0.8087,校正和预测均方误差分别为1.0804 N和1.4455 N。研究表明:可见/近红外光谱技术无损检测梨果实坚实度是可行的。  相似文献

This study was conducted to investigate the antioxidant vitamin C, the polyphenol content, and the hydrophilic antioxidant capacity of tomato juice, baked tomatoes, tomato sauce, and tomato soup. During the production of tomato juice and during the preparation of the other tomato products, samples were taken after different times, respectively, after each particular production step. High-performance liquid chromatography was used to determine the content of vitamin C. The total phenolics content was analyzed spectrophotometrically by using the Folin-Ciocalteu method. The hydrophilic antioxidant capacity was measured by using three different methods: the Trolox equivalent antioxidant capacity assay, the ferric reducing antioxidant power test, and the photochemiluminescence assay. The vitamin C contents of the tomato products decreased during the thermal processing of tomatoes. In contrast, the total phenolics concentration and the water soluble antioxidant capacity increased.  相似文献

The purpose of this investigation was to report on the total phenolics, anthocyanins, and oxygen radical absorbance capacity (ORAC) of strawberry, peach, and apple, the influence of dehydration and ascorbic acid treatments on the levels of these compounds, and the effect of these treatments on fruit color. Results showed that fresh strawberry had the highest levels for total phenolics [5317.9 mg of chlorogenic acid equivalents (CAE)/kg], whereas lower levels were found in fresh apple and peach (3392.1 and 1973.1 mg of CAE/kg, respectively), and for anthocyanins (138.8 mg/kg), whereas lower levels were found in fresh apple and peaches (11.0 and 18.9 mg/kg, respectively; fresh strawberry had an ORAC value of 62.9 mM/kg Trolox equivalents. The fresh apple and peach were found to have ORAC values of 14.7 and 11.4 mM/kg of Trolox equivalents, respectively. The color values indicated that the addition of 0.1% ascorbic acid increased the lightness (L) and decreased the redness (a) and yellowness (b) color values of fresh strawberry, peach, and apple, sliced samples, and the puree made from them. Also, results showed that dehydration is a good method to keep the concentrations of total phenolics and anthocyanins and ORAC values at high levels.  相似文献

The influence of high oxygen concentrations on total phenolic, total anthocyanin, individual phenolic compounds, and antioxidant capacity (measured as oxygen radical absorbance capacity, ORAC) in highbush blueberry fruit (Vaccinium corymbosum L. cv. Duke) was investigated. Freshly harvested blueberries were placed in jars ventilated continuously with air or with 40, 60, 80, or 100% O(2) at 5 degrees C for up to 35 days. Samples were taken initially and at 7-day intervals during storage. Whereas the quality parameters of titratable acidity, total soluble solids, and surface color were only slightly affected by the superatmospheric O(2) treatments, the antioxidant levels were markedly increased by 60-100% O(2) treatments as compared with 40% O(2) treatment or air control during 35 days of storage. Elevated O(2) between 60 and 100% also promoted increases of total phenolics and total anthocyanins as well as the individual phenolic compounds analyzed by HPLC. Fruit treated with O(2) concentrations of >/=60% also exhibited significantly less decay. Data obtained in this study suggest that high-oxygen treatments may improve the antioxidant capacity of blueberry fruit. Furthermore, antioxidant capacity may be correlated with total phenolic and anthocyanin contents in blueberries.  相似文献

为了实现牛肉在整个货架期内(4℃环境)pH值的无损快速检测,该文采用可见/近红外光谱技术并结合遗传算法(GA,genetic algorithm),搭建了可见/近红外光谱检测系统,采集储藏在4℃下1~18d的120个牛肉样品400~1700nm范围的光谱,用不同预处理方法处理,并分别建立全波段光谱和经过遗传算法提取有效光谱的预测牛肉pH值的多元线性回归(MLR,multiple linear regression)模型、偏最小二乘回归(PLSR,partial least-squares regression)模型和最小二乘支持向量机(LS-SVM,least square-support vector machine)模型。结果表明,多元散射校正(MSC,multiplicatives catter correction)结合Savitzky-Golay(SG)平滑为最佳预处理方法,遗传算法提取光谱后所建模型的预测精度均高于全波段光谱所建模型,其中LS-SVM为最佳预测模型,其预测相关系数和标准差分别为0.935和0.111,相比全波段LS-SVM模型预测,精度得到了提高。研究表明可见/近红外光谱技术结合遗传算法所建LS-SVM预测模型能够实现4℃下牛肉整个货架期内pH值的无损快速检测。该研究为进一步开发实用的牛肉pH值无损快速检测设备提供依据。  相似文献

A rapid transmittance near-infrared (NIR) spectroscopic method has been developed to characterize the lignin content of solid wood. Using simple, multiple regression, and partial least-squares statistical analysis the lignin contents of wood wafers, taken from increment cores, and synthetic wood, prepared by blending milled wood lignin and holocellulose, were compared and quantified. Strong correlations were obtained between the predicted NIR results and those obtained from traditional chemical methods. In addition to the experimental protocol and method development, NIR results from wood samples with different particle sizes and various lignin contents are discussed.  相似文献

Characterizing spatial variability of soil attributes, using traditional soil sampling and laboratory analysis, is cost prohibitive. The potential benefit of managing soils on a site-specific basis is well established. High variations in glacial till soil render detailed soil mapping difficult with limited number of soil samples. To overcome this problem, this paper demonstrates the feasibility of soil carbon and clay mapping using the newly developed on-the-go near-infrared reflectance spectroscopy (NIRS). Compared with the geostatistics method, the partial least squares regression (PLSR), with NIRS measurements, could yield a more detailed map for both soil carbon and clay. Further, by using independent validation dataset, the accuracy of predicting could be improved significantly for soil clay content and only slightly for soil carbon content. Owing to the complexity of field conditions, more work on data processing and calibration modeling might be necessary for using on-the-go NIRS measurements.  相似文献

运用偏最小二乘法(PLS)和人工神经网络(ANN)方法分别建立了0.9 mm筛分风干黑土土壤碱解氮、速效磷和速效钾含量预测的近红外光谱(NIRS)分析模型。使用偏最小二乘算法建立的碱解氮、速效磷和速效钾校正模型的决定系数R2分别为0.9520、0.8714和0.7300,平均相对误差分别为3.42%、13.40%和7.40%。人工神经网络方法建立的碱解氮、速效磷和速效钾校正模型的决定系数分别为0.9563、0.9493和0.9522,相对误差分别为2.67%、6.48%和2.27%,测试集仿真的相对误差分别为5.44%、16.65%和7.87%。结果表明,人工神经网络方法所建立的校正模型均优于偏最小二乘法所建模型;用近红外光谱分析法预测土壤碱解氮含量是可行的,而速效磷、速效钾模型的测试集样品仿真的相对误差较大,其预测可行性还需做进一步研究。  相似文献

Dietary fibers, major phenolics, main minerals, and trace elements in persimmons and apples were analyzed and compared in order to choose a preferable fruit for an antiatherosclerotic diet. Fluorometry and atomic absorption spectrometry following microwave digestion were optimized for the determination of major phenolics and minerals. Total, soluble, and insoluble dietary fibers, total phenols, epicatechin, gallic and p-coumaric acids, and concentrations of Na, K, Mg, Ca, Fe, and Mn in whole persimmons, their pulps, and peels were significantly higher than in whole apples, pulps, and peels (P < 0.01-0.0025). Conversely, the contents of Cu and Zn were higher in apples than in persimmons. In persimmons and apples all of the above components were higher in their peels than in whole fruits and pulps. The relatively high contents of dietary fibers, total and major phenolics, main minerals, and trace elements make persimmon preferable for an antiatherosclerotic diet.  相似文献

A rapid predictive method based on near-infrared spectroscopy (NIRS) was developed to measure acid detergent fiber (ADF), neutral detergent fiber (NDF), and acid detergent lignin (ADL) of rice stem materials. A total of 207 samples were divided into two subsets, one subset (approximately 136 samples) for calibration and cross-validation and the other subset for independent external validation to evaluate the calibration equations. Different mathematical treatments were applied to obtain the best calibration and validation results. The highest coefficient of determination for calibration (R2) and coefficient of determination for cross-validation (1-VR) were 0.968 and 0.949 for ADF, 0.846 and 0.812 for NDF, and 0.897 and 0.843 for ADL, respectively. Independent external validation still gave a high coefficient of determination for external validation (r2) and a low standard error of performance (SEP) for the three parameters; the best validation results were SEP = 0.933 and r2 = 0.959 for ADF, SEP = 2.228 and r2 = 0.775 for NDF, and SEP = 0.616 and r2 = 0.847 for ADL, indicating that NIR gave a sufficiently accurate prediction of ADF and ADL content of rice material but a less satisfactory prediction for NDF. This study suggested that routine screening for these forage quality parameters with large numbers of samples is possible with NIRS in early-generation selection in rice-breeding programs.  相似文献

The effect of cultivation practices on fruit quality and antioxidant capacity in highbush blueberries var. Bluecrop (Vaccinium corymbosum L.) was evaluated from random samples of commercial late harvest fields in New Jersey. Results from this study showed that blueberry fruit grown from organic culture yielded significantly higher sugars (fructose and glucose), malic acid, total phenolics, total anthocyanins, and antioxidant activity (ORAC) than fruit from the conventional culture. In organically cultured fruit, the average values for the ORAC, total anthocyanins, and total phenolic content were 46.14 micromol of Trolox (TE)/g of fresh weight (fwt), 131.2 mg/100 g of fwt, and 319.3 mg/100 g of fwt, respectively. In conventionally cultured fruit, the average values for the ORAC, total anthocyanin, and total phenol content were 30.8 micromol of TE/g of fwt, 82.4 mg/100 g of fwt, and 190.3 mg/100 g of fwt, respectively. The organic culture also produced fruit with higher contents of myricetin 3-arabinoside, quercetin 3-glucoside, delphinidin 3-galactoside, delphinidin 3-glucoside, delphinidin 3-arabinoside, petunidin 3-galactoside, petunidin 3-glucoside, and malvidin 3-arabinoside than conventional culture. There was a significant correlation between the ORAC values and total phenolics and total anthocyanins. These results indicate that even though there were variations in phytonutrient content among individual farms within each cultural system, significant differences between two cultivation practices were evident.  相似文献

Scottish-grown red raspberries are a rich source of vitamin C and phenolics, most notably, the anthocyanins cyanidin-3-sophoroside, cyanidin-3-(2(G)-glucosylrutinoside), and cyanidin-3-glucoside, and two ellagitannins, sanguiin H-6 and lambertianin C, which are present together with trace levels of flavonols, ellagic acid, and hydroxycinnamates. The antioxidant capacity of the fresh fruit and the levels of vitamin C and phenolics were not affected by freezing. When fruit were stored at 4 degrees C for 3 days and then at 18 degrees C for 24 h, mimicking the route fresh fruit takes after harvest to the supermarket and onto the consumer's table, anthocyanin levels were unaffected while vitamin C levels declined and those of elligitannins increased, and overall, there was no effect on the antioxidant capacity of the fruit. It is concluded, therefore, that freshly picked, fresh commercial, and frozen raspberries all contain similar levels of phytochemicals and antioxidants per serving.  相似文献

Fruits from 107 genotypes of Vaccinium L., Rubus L., and Ribes L., were analyzed for total anthocyanins (ACY), total phenolics (TPH), and antioxidant capacities as determined by oxygen radical absorbing capacity (ORAC) and ferric reducing antioxidant power (FRAP). Fruit size was highly correlated (r = 0.84) with ACY within Vaccinium corymbosum L., but was not correlated to ACY across eight other Vaccinium species, or within 27 blackberry hybrids. Certain Vaccinium and Ribes fruits with pigmented flesh were lower in ACY, TPH, ORAC, and FRAP compared to those values in berries with nonpigmented flesh. ORAC values ranged from 19 to 131 micromol Trolox equivalents/g in Vaccinium, from 13 to 146 in Rubus, and from 17 to 116 in Ribes. Though ACY may indicate TPH, the range observed in ACY/TPH ratios precludes prediction of ACY from TPH and vice versa for a single genotype. In general, TPH was more highly correlated to antioxidant capacity than ACY was. This study demonstrates the wide diversity of phytochemical levels and antioxidant capacities within and across three genera of small fruit.  相似文献

Near-infrared (NIR) spectroscopy has been used in foods for the rapid assessment of several macronutrients; however, little is known about its potential for the evaluation of the utilizable energy of foods. Using NIR reflectance spectra (1104-2494 nm) of ground cereal products (n = 127) and values for energy measured by bomb calorimetry, chemometric models were developed for the prediction of gross energy and available energy of diverse cereal food products. Standard errors of cross-validation for NIR prediction of gross energy (range = 4.05-5.49 kcal/g), energy of samples after adjustment for unutilized protein (range = 3.99-5.38 kcal/g), and energy of samples after adjustment for unutilized protein and insoluble dietary fiber (range = 2.42-5.35 kcal/g) were 0.053, 0.053, and 0.088 kcal/g, respectively, with multiple coefficients of determination of 0.96. Use of the models on independent validation samples (n = 58) gave energy values within the accuracy required for U.S. nutrition labeling legislation. NIR spectroscopy, thus, provides a rapid and accurate method for predicting the energy of diverse cereal foods.  相似文献

为了对优质蛋、次品蛋和劣质蛋这3种皮蛋进行检测及分级,该文应用机器视觉结合近红外光谱技术,研究利用皮蛋凝胶品质无损检测的分级方法。首先采集皮蛋透射光图像,提取18个图像颜色特征值,然后将所提取的18维特征利用主成分分析(principal component analysis,PCA)进行降维,对PCA降维后的3个主成分建立遗传算法优化支持向量机(genetic algorithm-support vector machine,GA-SVM)分级模型,把皮蛋样本分为两大类:可食用蛋(优质蛋与次品蛋)与不可食用蛋(劣质蛋),劣质蛋测试集识别率为100%。然后在机器视觉分类结果的基础上,利用近红外光谱技术获取可食用蛋(优质蛋与次品蛋)的原始光谱,并进行多元散射矫正(multiplicative scatter correction,MSC),利用竞争性自适应重加权算法(competitive adaptive reweighted sampling,CARS)降维提取特征波长,基于支持向量机(support vector machine,SVM)对特征波长变量建立分级模型,区分出优质蛋与次品蛋,优质蛋测试集识别率为96.49%,次品蛋识别率为94.12%。研究结果表明:基于机器视觉和近红外光谱进行皮蛋凝胶品质无损检测分级是可行的。  相似文献

为了研究费菜中总黄酮的碱法提取工艺及其抗氧化活性,该文以总黄酮得率为试验指标,考察了料液比、溶液pH值、提取温度及提取时间等因素对提取效果的影响,并通过正交试验优化了提取工艺参数。结果表明,碱法提取最适宜的工艺条件为:料液比1:10,溶液pH值9,提取温度100℃,提取时间6?h,在该条件下,总黄酮的得率为5.37%。所得的费菜总黄酮对DPPH、羟基自由基及超氧阴离子自由基具有较强的清除作用,半抑制浓度(IC50)分别为0.013、0.109和0.996?mg/mL,表明费菜总黄酮具有一定的抗氧化活性。该试验结果为费菜的进一步开发利用提供了科学依据。  相似文献

Near-infrared reflectance spectroscopy (NIRS) was used as a rapid and nondestructive method to determine the oil content and fatty acid composition in intact seeds of perilla [Perilla frutescens var. japonica (Hassk.) Hara] germplasms in Korea. A total of 397 samples (about 2 g of intact seeds) were scanned in the reflectance mode of a scanning monochromator, and the reference values for the oil content and fatty acid composition were measured by gravimetric method and gas-liquid chromatography, respectively. Calibration equations for oil and individual fatty acids were developed using modified partial least-squares regression with internal cross validation (n = 297). The equations for oil and oleic and linolenic acid had lower standard errors of cross-validation (SECV), higher R2 (coefficient of determination in calibration), and higher ratio of unexplained variance divided by variance (1-VR) values than those for palmitic, stearic, and linoleic acid. Prediction of an external validation set (n = 100) showed significant correlation between reference values and NIRS estimated values based on the standard error of prediction (SEP), r2 (coefficient of determination in prediction), and the ratio of standard deviation (SD) of reference data to SEP. The models for oil content and major fatty acids, oleic and linolenic acid, had relatively higher values of SD/SEP(C) and r2 (more than 3.0 and 0.9, respectively), thereby characterizing those equations as having good quantitative information, whereas those of palmitic, stearic, and linoleic acid had lower values (below 2.0 and 0.7, respectively), unsuitable for screening purposes. The results indicated that NIRS could be used to rapidly determine oil content and fatty acid composition (oleic and linolenic acid) in perilla seeds in the breeding programs for development of high-quality perilla oil.  相似文献
