The objective of this study was to evaluate the influence of different feed withdrawal and lairage times prior to slaughter on the gastrointestinal tract (GIT) weight and on the fermentation pattern and numbers of Enterobacteriaceae in the cecum of pigs. A total of 72 finishing pigs (6 pens, 12 animals each) were included in the study and were sent to the slaughterhouse on three consecutive days. On each day pigs from two pens were deprived of feed for either 2 or 12 h before leaving the farm. Pigs from each of the two pens were divided in sub-groups (4 pigs each) on the moment of loading onto the truck and followed the same distribution at the slaughterhouse. Once there, each sub-group corresponding to the same feed withdrawal time was held in different holding pens for 0, 5 or 10 h before slaughter. The weight of the gastro-intestinal tract (GIT) was determined and cecal content was collected to evaluate pH, short chain fatty acids (SCFA) and ammonia (NH3) concentrations as well as lactobacilli and Enterobacteriaceae numbers. Total GIT weight decreased as feed withdrawal (P < 0.0001) and lairage time (P < 0.001) increased within a range between 6.69 and 4.59 kg. Cecal pH increased with feed withdrawal (P < 0.0001) and lairage time (P = 0.0001) (ranging from 5.79 to 6.79) in parallel to a decrease in the total SCFA concentration (P < 0.005) (from 211 to 100 mM). The percentages of acetic and propionic acid were not modified by the experimental treatments but significant decreases were registered in the percentage of butyric acid with the increased times of both withdrawal (P < 0.0001) and lairage (P < 0.005). The percentage of valeric and branched SCFA and also NH3 concentration showed an increase with withdrawal (P < 0.005, P < 0.0001 and P < 0.005 respectively) and lairage (P < 0.005, P < 0.0001 and P < 0.001 respectively). Lactobacilli numbers decreased as lairage time increased (from 9.97 to 8.63 log 16S rRNA gene copies/g FM; P < 0.05) and Enterobacteriaceae numbers increased with both, feed withdrawal (P < 0.05) and lairage (P < 0.05) (ranging from 8.53 to 9.95 log 16S rRNA gene copies/g FM).The previous to slaughter increase in feed withdrawal and lairage times decreased the GIT weight but involved changes in the gut microbial ecosystem caused through changes in the fermentation pattern that lead to the increase of Enterobacteriaceae numbers. This increase could represent a higher risk of carcass contamination by the enteropathogens of this group such as Salmonella. However this potential risk should be further investigated.

Foodborne disease caused by Salmonella is of public health and economic significance. In order to assess the practical effectiveness of a new intervention strategy, experimental chlorate preparations (ECP) were administered via the drinking water to weaned and finished pigs that had been orally challenged the previous day with 10(9)-10(10) colony-forming units of Salmonella serovar Typhimurium. After 24 or 36 h ad libitum access to 0X, 1X or 2X ECP treatment (where X is the concentration estimated to deliver a minimal daily effective dose), the pigs were euthanized and gut contents and lymph tissue collected at necropsy were cultured for the challenge Salmonella. Drinking water administration of ECP effectively reduced (p < 0.05) caecal Salmonella concentrations and, with the weaned pigs, tended (p < or = 0.10) to reduce rectal Salmonella concentrations. No negative effects of ECP treatment on water intake and animal wellbeing were observed and only marginal effects on gut fermentation characteristics occurred. The bactericidal effect of administering ECP in drinking water was relatively rapid, with reductions in caecal Salmonella concentrations occurring within 24 h. These results suggest that ECP administered to pigs just days before slaughter may reduce gut concentrations of Salmonella; however, the impacts of such reductions on slaughter hygiene have yet to be determined.

Epidemiological studies showed that the use of fermented feed could significantly reduce Salmonella prevalence in pigs compared to the use of normal feed. Experimental challenge experiments with Salmonella have however never been conducted to reveal the efficacy of fermented feed in reducing Salmonella shedding and/or reducing the number of Salmonella-positive pigs. A longitudinal study was conducted to measure the effect of fermented feed, in particular of its components lactic acid and Lactobacillus plantarum, on gastrointestinal bacterial ecology (Salmonella, Enterobacteriaceae, lactobacilli, volatile fatty acids (VFAs), pH). Seeder pigs were used as a mode for Salmonella transmission within a pig herd. Bacteriological measurements were performed in faeces of the pigs. The results showed that fermented feed affected/reduced the Enterobacteriaceae population in faeces of the pigs. No differences were found in the number of positive pigs infected or in the number of shedding with Salmonella serovar Typhimurium fed fermented feed and between the normal feed group. S. serovar Goldcoast could not establish an infection in the seeder pigs in the fermented feed group as well as in the normal feed group. The pH of the faeces in the fermented feed groups was significantly higher than the pH of the faeces of the normal feed groups. The role of the undissociated form of the faecal VFAs on the significantly lower Enterobacteriaceae number in faeces of the pigs of the fermented feed groups could not be demonstrated because of the significant higher pH in the faeces of the pigs fed fermented feed.

An experiment was conducted to evaluate the effects of including canola meal (CM) in diets for weaning pigs challenged with a F18 strain of Escherichia coli on growth performance and gut health. A total of 36 individually housed weaned pigs (initial body weight [BW] = 6.22 kg) were randomly allotted to one of the three diets (12 pigs/diet). The three diets were corn–soybean meal (SBM)-based basal diet (control diet) and the basal diet with 0.3% zinc oxide, 0.2% chlortetracycline, and 0.2% tiamulin (antibiotic diet) or with 20% CM diet. The diets were fed in two phases: Phase 1: days 0 to 7 and Phase 2: days 7 to 20. All pigs were given an oral dose of 2 × 109 CFU of F18 strain of E. coli on day 7. Fecal score was assessed daily throughout the trial. Dietary antibiotics increased (P < 0.05) overall average daily gain (ADG) and average daily feed intake (ADFI) compared by 48% and 47%, respectively. Dietary CM increased (P < 0.05) overall ADG and ADFI by 22% and 23%, respectively; but the ADG and ADFI values for CM-containing diet did not reach those for the antibiotics-containing diet. Dietary antibiotics reduced (P < 0.05) fecal score; however, dietary CM unaffected fecal score. Dietary antibiotics decreased (P < 0.05) liver weight per unit live BW by 16% at day 20, whereas dietary CM did not affect liver weight per unit live BW (29.2 vs. 28.6). Also, dietary antibiotics increased (P < 0.05) serum triiodothyronine and tetraiodothyronine levels for day 14, whereas dietary CM did not affect the serum level of these hormones. Dietary antibiotics reduced (P < 0.05) the number white blood cells and neutrophils by 38% and 43% at day 20, respectively, whereas dietary CM tended to reduce (P = 0.09) the number white blood cells by 19% at day 20. The number white blood cells for CM diet tended to be greater (P < 0.10) than that for antibiotics diet. The dietary antibiotics decreased (P < 0.05) the concentration of individual volatile fatty acids and hence of total volatile fatty acid in cecum by 61% at day 20, whereas dietary CM decreased (P < 0.05) cecal butyric acid concentration by 61% and tended to reduce (P < 0.10) total volatile fatty acid concentration by 30% at day 20. In conclusion, the dietary inclusion of 20% CM improved ADG and tended to reduce white blood cell counts. Thus, inclusion of CM in antibiotics-free corn-SBM-based diets for weaned pigs that are challenged with F18 strain of E. coli can result in their improved performance partly through a reduction of the inflammatory response.

Salmonella Typhimurium infections in pigs are a major source of human foodborne salmonellosis. To reduce the number of infected pigs, acidification of feed or drinking water is a common practice. The aim of the present study was to determine whether some frequently used short- (SCFA) and medium-chain fatty acids (MCFA) are able to alter virulence gene expression and to decrease Salmonella Typhimurium colonization and shedding in pigs using well established and controlled in vitro and in vivo assays. Minimal inhibitory concentrations (MIC) of 4 SCFA (formic acid, acetic acid, propionic acid and butyric acid) and 2 MCFA (caproic and caprylic acid) were determined using 54 porcine Salmonella Typhimurium field strains. MIC values increased at increasing pH-values and were two to eight times lower for MCFA than for SCFA. Expression of virulence gene fimA was significantly lower when bacteria were grown in LB-broth supplemented with sub-MIC concentrations of caproic or caprylic acid (2 mM). Expression of hilA and invasion in porcine intestinal epithelial cells was significantly lower when bacteria were grown in LB-broth containing sub-MIC concentrations of butyric acid or propionic acid (10 mM) and caproic or caprylic acid (2 mM). When given as feed supplement to pigs experimentally infected with Salmonella Typhimurium, coated butyric acid decreased the levels of faecal shedding and intestinal colonization, but had no influence on the colonization of tonsils, spleen and liver. Uncoated fatty acids, however, did not influence fecal shedding, intestinal or tonsillar colonization in pigs. In conclusion, supplementing feed with certain coated fatty acids, such as butyric acid, may help to reduce the Salmonella load in pigs.

This study was conducted to investigate the effects of bacteriophages in different environments on growth performance, digestibility, ileal and caecal microbiota, gut morphology and immunity of weanling pigs. Two hundred piglets were randomly assigned to four treatment groups with five replicate pens with 10 pigs per pen. A 2 × 2 factorial arrangement of treatments was used to investigate the response of weanling pigs to supplemental bacteriophages (0 and 1.0 g/kg of diet) in contaminated or hygienic environments. Bacteriophages supplementation did not affect average daily gain (ADG), average daily feed intake (ADFI) and gain:feed in phases I and III; however, there was a significant improvement in ADG and gain:feed in phase II. The supplementation of bacteriophages increased the overall gain:feed of pigs. The overall result showed a greater ADG and ADFI in hygienic room. There were reductions in population of both ileal (p < 0.05) and caecal (p < 0.01) Clostridium spp. and ileal coliforms (p < 0.01) with the inclusion of bacteriophages in the diet. Bacteriophages increased ileal Lactobacillus and caecal Bifidobacterium and tended to increase ileal Bifidobacterium (p = 0.08). Contaminated environment decreased ileal Lactobacillus and caecal Bifidobacterium and tended to increase ileal Clostridium (p = 0.08) and coliforms (p = 0.08). Total anaerobic bacteria was tended to decrease (p = 0.06) in contaminated environment. Jejunal villus height increased in pigs received bacteriophages, but they did not affect other morphological items. The interaction between bacteriophages and environment tended to be significant (p = 0.06) for ileal villus height and ileal villus height to crypt depth ratio. The overall faecal score was significantly greater in hygienic environment and bacteriophages groups. The present findings indicate that there is an interactive effect on feed efficiency between bacteriophages and contaminated environment. In addition, bacteriophages improve jejunum morphology, and intestinal microbiota of pigs.

Background: Pork produced by outdoor-reared pigs raised mostly on alfalfa pastures attracts increasing population of consumer from most of the world. In China, pigs were raised with alfalfa-containing diets to seek for good quality pork. However, the influence of dietary alfalfa involving high level of insoluble dietary fiber(IDF) on pig intestinal luminal microbiota composition remains unclear. The objective of this study was to investigate the effects of alfalfa on luminal microbiota and short chain fatty acids(SCFA) production, and gene expressions involved in SCFA sensing, transporting and absorbing in pig caecal mucosa. Results: Twenty-four growing pigs were randomly allotted to four diets containing 0%, 5%, 10% and 15% alfalfa meal for a 28-d experiment. Ingestion of alfalfa meal-contained diets significantly increased the ratio of body weight gain to feed consumption. Illumina MiS eq sequencing of the V3 region of the 16 S r RNA genes showed that alfalfa-containing diet significantly decreased the relative abundance of genera Turicibacter, Acidiphilium, Paracoccus, Propionibacterium,Corynebacterium, Pseudomonas, Acinetobacter, and Staphylococcus, and increased the relative abundance of genera Lachnospira, Marvinbryantia, and Desulfovibrio in the caecal digesta. Butyrate concentration was significantly increased in the hindgut by the supplementation of alfalfa meal in diets. The m RNA gene expressions of FFAR3, SMCT1, MCT1,PYY, and GCG were significantly increased in the caecal mucosa of pigs fed alfalfa meal. Conclusions: Our results suggested that alfalfa-containing diet has exerted significant impacts on caecal microbiota composition, butyrate concentration and significantly upregulated m RNA expression of host caecal mucosal genes involved in SCFA sensing and absorption as well as regulation of satiety.

OBJECTIVE: To determine whether stress associated with transportation or feed withdrawal increased fecal shedding of Salmonella Typhimurium among pigs experimentally infected with the organism. ANIMALS: 86 healthy pigs. PROCEDURE: Pigs were challenge exposed with Salmonella Typhimurium at 4 weeks old and reared conventionally. When pigs reached market weight, they were assigned to groups and subjected to various combinations of transportation and feed withdrawal. Ileocecal contents were collected after slaughter and tested for Salmonella Typhimurium. RESULTS: Salmonella Typhimurium was not detected in feces collected from pigs just prior to slaughter. When feed was withheld for 24 hours prior to slaughter, the proportion of transported pigs with Salmonella Typhimurium in ileocecal contents at the time of slaughter was not significantly different from the proportion of nontransported pigs. However, when feed was not withheld prior to slaughter, the proportion of transported pigs with Salmonella Typhimurium in ileocecal contents at the time of slaughter was significantly higher than the proportion of nontransported pigs. CONCLUSIONS AND CLINICAL RELEVANCE: When carrier pigs remained on feed, transportation stress increased the proportion positive for Salmonella sp. On the basis of results reported here, it is suggested that producers withhold feed from pigs for 24 hours prior to transportation to a slaughter plant.

Increasing concern for animal well-being and food safety has stimulated the investigation of feed additives such as ractopamine (RAC), a beta-agonist widely used to improve production performance of finishing pigs. The objective of this study was to determine effects of RAC feeding, delivered as a "step-up" program (5 mg/kg for 2 wk followed by 10 mg/kg for 2 wk), on growth performance, Enterobacteriaceae shedding, including Salmonella, and hoof lesions, also taking into account sex and social rank of pigs. A total of 64 barrows and gilts (balanced by treatment and sex) were assigned to pens of 4 (by sex) as either control (CTL) or RAC treatment. Social ranks (dominant, intermediate, and subordinate) of pigs in each pen were determined by behavioral observation during 48 h post-mixing. Fecal samples were collected once per week for 5 wk. At slaughter, the 32 dominant and subordinate barrows and gilts (16/sex) were examined for hoof lesions, and luminal contents from ileum, cecum, and rectum were collected. Pigs fed RAC had increased growth performance (P < 0.05) with social rank of animals affecting overall ADG (P < 0.05). Gilts gained more backfat than barrows when comparing to baseline values at both 10th and last ribs (P < 0.05), whereas loin eye area increased at a similar rate for both barrows and gilts (P > 0.10). No significant effect of RAC feeding was found on backfat or loin eye area (P > 0.10). At slaughter, RAC-fed pigs had greater BW (P < 0.05). Despite the positive effects of RAC feeding on growth performance, pigs fed the compound had a greater frequency of front and rear hoof lesions as did barrows and dominant individuals (P < 0.05). Detectable concentrations of Salmonella shedding were not identified at any time during the experiment. Enterobacteriaceae shedding concentrations from RAC-fed pigs peaked at the first week of feeding and progressively decreased until slaughter. At slaughter, rectal and cecal Enterobacteriaceae concentrations were less in RAC-fed pigs than in CTL pigs (P < 0.05). Social rank tended to affect gut Enterobacteriaceae populations of barrows more than in gilts (P < 0.10). The effects of RAC feeding on hoof soundness and Enterobacteriaceae populations in the gastrointestinal tract of finishing pigs warrant further investigation. It is also proposed that the integration of the social rank status of the individual into future studies should be considered, because it may affect treatment responses.

OBJECTIVE: To determine whether withholding feed from pigs prior to slaughter had any effects on meat quality, percentage of pigs with Salmonella spp in cecal contents during slaughter, or percentage of pigs with lacerations of the gastrointestinal tract during slaughter. DESIGN: Split-plot design. ANIMALS: 873 pigs. PROCEDURES: At the finishing barn, pigs were assigned to 30 pens. Feed withdrawal times were assigned to pens at random, and pigs in each pen were marketed in 3 groups. The first marketing group consisted of the 10 heaviest pigs in each pen, the second consisted of the next 10 heaviest pigs, and the third consisted of all remaining pigs. RESULTS: Withdrawing feed improved the redness score assigned to the meat but did not have any other significant effects on carcass composition or meat quality. The percentage of pigs with Salmonella spp in the cecal contents decreased from the first (73%) to the second (64%) to the third (52%) marketing group. However, isolation of Salmonella spp from cecal contents was not associated with feed withdrawal time or with pen prevalence of Salmonella shedding during the 2 months prior to slaughter. Feed withdrawal time and marketing group did not have any significant effects on overall prevalence of gastrointestinal tract lacerations. CONCLUSIONS AND CLINICAL RELEVANCE: Results suggest that withdrawal of feed from pigs prior to slaughter does not increase the prevalence of Salmonella colonization or the risk of carcass contamination associated with gastrointestinal tract lacerations during slaughter but only slightly enhances meat quality.

Background: Commercial pre-weaning diets are formulated to be highly digestible and nutrient-dense and contain low levels of dietary fibre. In contrast, pigs in a natural setting are manipulating fibre-rich plant material from a young age. Moreover, dietary fibre affects gastrointestinal tract(GIT) development and health in older pigs. We hypothesised that supplemental diets that contain vegetal fibres are accelerating GIT development in suckling piglets in terms of size and functionality. From d 2 of life, sow-suckled piglets had access to a low fibre diet(CON),a diet with a fermentable long-chain arabinoxylan(lc-AXOS), a diet with a largely non-fermentable purified cellulose(CELL), or a diet containing both fibres. During the initial 2 weeks, the control diet was a high-density milk replacer, followed by a dry and highly digestible creep meal. Upon weaning at 25 d, 15 piglets from each treatment group, identified as eaters and originating from six or seven litters, were sacrificed for post-mortem examination of GIT morphology, small intestinal permeability and metabolic profile of the digesta. The microbiota composition of the mid-colon was evaluated in a sub-set of ten piglets. Results: No major statistical interactions between the fibre sources were observed. Piglets consumed the fibrecontaining milk supplements and creep diets well. Stomach size and small intestinal permeability was not affected.Large intestinal fill was increased with lc-AXOS only, while relative large intestinal weight was increased with both fibre sources(P 0.050). Also, CELL decreased ileal pH and tended to increase ileal DM content compared to CON(P 0.050). Moreover, the concentration of volatile fatty acids was increased in the caecum(P 0.100) and midcolon(P 0.050) by addition of CELL. lc-AXOS only stimulated caecal propionate(P 0.050). The microbiota composition showed a high individual variation and limited dietary impact. Nonetheless, CELL induced minor shifts in specific genera, with notable reductions of Escherichia-Shigella.Conclusions: Adding dietary fibres to the supplemental diet of suckling piglets altered large intestinal morphology but not small intestinal permeability. Moreover, dietary fibre showed effects on fermentation and modest changes of microbial populations in the hindgut, with more prominent effects from the low-fermentable cellulose.

The aim of this study was to investigate the effect of organic acids in diets for entire male pigs on growth performance, composition of microbiota in the gastrointestinal tract (GIT), on concentration of skatole and indole in digesta, plasma and adipose tissue, and concentration of volatile fatty acids (VFA) in digesta. Restrictively-fed pigs (n = 60) (28 and 113 kg initial and final BW, respectively) were used. The dietary treatments consisted of a basal diet and the basal diet added either 1.0% formic acid, 0.85% benzoic acid, 0.85% sorbic acid, 1.2% fat coated Ca-butyrate or 1.5% fat and inulin coated Ca-butyrate. All levels of organic acids corresponded to 0.85% of pure acid. Digesta samples for microbiological examinations were taken from the proximal jejunum, colon descendens, and rectum. Digesta samples for skatole, indole and VFA analyses were taken from colon descendens. The results showed that the addition of organic acids to diets had no effect on daily weight gain or feed intake, but formic, benzoic and sorbic acid tended to improve FCR of pigs compared with the control pigs. Organic acid supplementation did not affect levels of skatole, indole, or VFA in the digesta or levels of skatole or indole in adipose tissue compared with the control. Plasma skatole levels were reduced in pigs fed diets containing formic and benzoic acid compared with the control pigs. Pigs fed organic acids had lower levels of coliforms, enterococci and lactic acid producing bacteria in all three sampling sites of the GIT. Supplementing diets with organic acids did not affect levels of skatole in digesta or adipose tissue of entire male pigs.

Background

Limited availability of fish meal and whey protein concentrate increases overall feed costs. Availability of increased number of supplemental amino acids including Lys, Met, Thr, Trp, Val, and Ile allows replacing expensive protein supplements to reduce feed costs. This study was to evaluate the effect of replacing fish meal and/or whey protein concentrate in nursery diets with 6 supplemental amino acids on growth performance and gut health of post-weaning pigs. Treatments were 1) FM-WPC: diet with fish meal (FM) and whey protein concentrate (WPC); 2) FM-AA: diet with FM and crystalline amino acids (L-Lys, L-Thr, L-Trp, DL-Met, L-Val, and L-Ile); 3) WPC-AA: diet with WPC and crystalline amino acid; and 4) AA: diet with crystalline amino acid.

Results

Pigs in FM-AA, WPC-AA, and AA had greater (P < 0.05) ADG and gain:feed than pigs in FM-WPC during wk 1 (phase 1). Plasma insulin concentration of pigs in AA tended to be greater (P = 0.064) than that of FM-WPC at the end of wk 1(phase 1). Plasma concentrations of IgG in AA was lower (P < 0.05) compared with WPC-AA and FW, and FM-AA had lower (P < 0.05) IgG concentration than WPC-AA at the end of wk 1 (phase 1). Concentration of acetate in cecum digesta in FM-AA tended to be greater (P = 0.054) than that of FM-WPC and WPC-AA. Concentration of isovalerate in cecum digesta of pigs in FM-AA was greater (P < 0.05) than that of FW and WPC-AA.

Conclusions

This study indicates that use of 6 supplemental amino acids can replace fish meal and/or whey protein concentrate without adverse effects on growth performance, immune status, and gut health of pigs at d 21 to 49 of age. Positive response with the use of 6 supplemental amino acids in growth during the first week of post-weaning may due to increased plasma insulin potentially improving uptake of nutrients for protein synthesis and energy utilization. The replacement of fish meal and/or whey protein concentrate with 6 supplemental amino acids could decrease the crude protein level in nursery diets, and potentially lead to substantial cost savings in expensive nursery diets.

The fermented feed has been identified as a potential alternative to antibiotics in feeds that markedly affects gut health and growth performance of pigs. Two recent studies performed in our laboratory investigated that the fermented corn–soybean meal (fermented feed, FF) improved the gut health of pigs. This study was conducted to determine the effect of a FF on the carcass, meat quality, muscle fatty acids profile, muscle amino acid and antioxidant ability of grower-finisher pigs. In this study, a total of 48 crossbred barrows (Duroc × Landrace × Large White) were randomly divided into 2 treatments with unfermented corn–soybean diet (Ctrl) and FF diet. Compared with control pigs fed a standard diet, the results showed that FF significantly increased the muscle colour of redness and significantly reduced muscle moisture loss rate. Furthermore, FF significantly increased the content of aromatic amino acids such as aspartic acid, glutamic acid and alanine. More importantly, FF increased monounsaturated fatty acid and polyunsaturated fatty acid content. Collectively, FF could be a promising feed strategy in improving meat quality and nutritional value in grower-finisher pig.

Two trials were carried out to determine the effect of feed acidification upon Salmonella carriage in market-age pigs. In the first trial, the administration for the last 14 weeks of the fattening period of a commercial pelleted feed added with 0.6% lactic acid plus 0.6% formic acid (Lac-Formic-1.2) was compared to an unacidified standard diet (STD). A second experiment was carried out in two herds of growing pigs (Herd I, 3000 pigs; Herd II, 900 pigs) in which three different diets were assayed during the last 8-9 weeks of the fattening period: a diet containing 0.8% formic acid (Formic-0.8), a diet containing 0.4% lactic acid plus 0.4% formic acid (Lac-Formic-0.8) and a STD. In the first experiment, serological evolution of the infection was examined by ELISA and microbiological cultures (rectal samples and mesenteric lymph nodes) were also done. Feed intake by pen and the individual weight of the animals were also measured. In the second trial, blood, rectal samples and mesenteric lymph nodes were collected at slaughter in both herds (30 pigs per experimental group). In the first experiment, the acidified diet (Lac-Formic-1.2) reduced Salmonella carriers in mesenteric lymph nodes (Fisher's exact P < 0.01). In the second trial, Lac-Formic-0.8 diet significantly reduced Salmonella seroprevalence compared to the STD (P = 0.001) in both herds. Also Lac-Formic-0.8 and Formic-0.8 diets in Herd II showed a lower faecal excretion and Salmonella carriage in mesenteric lymph nodes than the STD (P < 0.05). Our results suggest that the administration of a combination of lactic and formic acids at the levels used in this study could be used to reduce Salmonella prevalence in finishing pigs.

The purpose of this study was to investigate the effects of drinking water supplementation with graded increases of Na and K salts on the performance and gut contents of broilers before processing. Birds had no water, tap water, or water supplemented with sodium bicarbonate or potassium chloride in the concentrations of 0.15, 0.30, and 0.45% in the last 12 and 24 h before processing. The last 12 h coincided with preslaughter feed withdrawal. Cobb × Cobb 500 male broilers (46 d old) were set in a completely randomized experimental design with 8 treatments and 9 replications of 9 birds each. Birds were individually processed within a period of 12 h of feed withdrawal every 2 h. Individual weighing was followed with electrical stunning and removal of intestinal contents of the upper (crop through the gizzard) and lower segment (duodenum through cloaca). Water intake increased linearly with greater salt concentrations in the water (P < 0.05). Body weight loss increased linearly through the feed withdrawal; however, it was greater with birds without water access (P < 0.0001). There were no effects of treatments on the yields of carcass and cuts as well as on the intestinal contents at all evaluated times. Intestinal contents from upper and lower segments were decreased with time, but responses to the water treatments were not observed (P > 0.05). It is concluded that increasing water intake through the use of Na and K salts did not affect the rate of gut emptying before processing.

A 2 x 3 factorial experiment, encompassing three 28-d trials involving a total of 420 weanling pigs, was conducted to determine the effect of dietary Cu (5 or 250 ppm) and animal fat (0, 2.5, or 5%) on the performance and serum fatty acid profiles of weanling pigs. Pigs had ad libitum access to corn-soybean meal-based diets containing 10% whey and 5% fish meal and similar lysine:calorie ratios. Pigs were weighed and pen feed intakes were recorded weekly. Weekly blood samples were collected during the first two trials (n = 270) for serum fatty acid analysis. There was a Cu x fat interaction for ADG from d 1 to 14 (P less than .07) and over the 28-d experiment (P less than .05). The ADG of pigs fed 250 ppm of Cu increased, whereas the ADG of pigs fed 5 ppm of Cu was not affected as dietary fat increased. The addition of 250 ppm of CU increased (P less than .01) ADFI throughout the 28-d experiment. The addition of fat quadratically increased ADG (P less than .05) during d 14 to 28 and gain:feed ratios (P less than .01) during d 14 to 28 and over the 28-d experiment. The addition of fat decreased (P less than .05) the weight percentage of serum saturated fatty acids and increased (P less than .01) the weight percentage of serum monounsaturated fatty acids on d 28. The addition of 250 ppm of Cu decreased (P less than .01) the weight percentage of monounsaturated fatty acids on d 14 and 28.(ABSTRACT TRUNCATED AT 250 WORDS)
