Changes in biochemical and sensory attributes of chub mackerel (Scomber japonicus) fillets during storage treated by immersion in a 12% NaCl brine with or without 0.2% liquid smoke were investigated. Brine-treated chub mackerel fillets were packaged in modified atmosphere or under vacuum and were stored at 4°C. The brined fillets were stored and evaluated raw and after heat treatment as cooked samples. Fish fillets were assessed organoleptically to determine acceptability and by measuring the pH, oxidation levels (TBARS test), and total volatile basic nitrogen (TVBN). Fillets treated in brine with liquid smoke exhibited similar pH and significantly lower TBARS and TVBN values (p < 0.05). The combination of the use of brines containing liquid smoke and subsequent vacuum packaging produced the lowest TBARS and TVBN values and resulted in extended acceptability.  相似文献

本文对东海南部的鲐鲹鱼类的叉长、体重及性腺成熟度等进行了初步分析,认为1999年5月份东海南部鲐鱼优势叉长组为26~28cm,优势体重组为200~300g;7、8月份优势叉长组为24~26cm,优势体重组为100~200g。蓝圆鲹优势叉长组为20~21cm。2000年7、8月份鲐鱼优势叉长组为24~26cm。1999年鲐鱼叉长组成基本呈正态分布,2000年鲐鱼叉长组成明显存在两个峰值。2000年相同叉长的鲐鱼体重要略低于1999年,认为跟1999年、2000年海洋环境因子变化有关。从相关系数来看,2000年的曲线更贴近实际情况。并认为5月份北上参加产卵洄游的鲐鱼群体、其性腺已开始发育成熟,并沿途产卵。  相似文献

Abstract

Over the past 20 years many studies and clinical investigations have addressed the beneficial effects of polyunsaturated fatty acids in general and ω3 fatty acids in particular. It is currently known that ω3 fatty acids play important role in the prevention of several pathologies like the coronary heart disease, hypertension, diabetes and other. The protection played by ω3 fatty acids against coronary heart disease may be related to antiatherogenic effects and/or to the modification of risk factors through mechanisms related to lipid metabolism. The objective of this work was to evaluate, in healthy volunteers, the effect of a diet supplementation with canned sardine, which is rich in co3 fatty acids on the profile of plasma and erythrocytes, lipids, phospholipids and fatty acids.

The serum levels of total cholesterol and high density lipoproteins (HDL) did not change during the period of the supplementation, tri-acylglycerol levels showed a trend for a decrease and low density lipoproteins (LDL)-derived thiobarbituric acid-reactive substances (LDL TBARS) levels showed a decrease. Incorporation of eicosapentaenoic and docosahexaenoic fatty acids (EPA and DHA, respectively) into plasma and erythrocyte phospholipids was observed. The results suggest that the undergone dietary supplementation may have allowed the incorporation of co3 polyunsaturated fatty acids into cell membranes and has increased the resistance of LDL to oxidative stress. This may represent protection factors against atherosclerosis and cardiovascular disease.  相似文献

We compared a wide range of environmental data with measures of recruitment and stock production for Japanese sardine Sardinops melanostictus and chub mackerel Scomber japonicus to examine factors potentially responsible for fishery regimes (periods of high or low recruitment and productivity). Environmental factors fall into two groups based on principal component analyses. The first principal component group was determined by the Pacific Decadal Oscillation Index and was dominated by variables associated with the Southern Oscillation Index and Kuroshio Sverdrup transport. The second was led by the Arctic Oscillation and dominated by variables associated with Kuroshio geostrophic transport. Instantaneous surplus production rates (ISPR) and log recruitment residuals (LNRR) changed within several years of environmental regime shifts and then stabilized due, we hypothesize, to rapid changes in carrying capacity and relaxation of density dependent effects. Like ISPR, LNRR appears more useful than fluctuation in commercial catch data for identifying the onset of fishery regime shifts. The extended Ricker models indicate spawning stock biomass and sea surface temperatures (SST) affect recruitment of sardine while spawning stock biomass, SST and sardine biomass affect recruitment of chub mackerel. Environmental conditions were favorable for sardine during 1969–87 and unfavorable during 1951–67 and after 1988. There were apparent shifts from favorable to unfavorable conditions for chub mackerel during 1976–77 and 1985–88, and from unfavorable to favorable during 1969–70 and 1988–92. Environmental effects on recruitment and surplus production are important but fishing effects are also influential. For example, chub mackerel may have shifted into a new favorable fishery regime in 1992 if fishing mortality had been lower. We suggest that managers consider to shift fishing effort in response to the changing stock productivity, and protect strong year classes by which we may detect new favorable regimes.  相似文献

Abstract

The ultrasonic velocity of Atlantic mackerel (Scomber scombrus) samples of varying composition was measured using a handheld device over the temperature range 5 to 30°C. The lipid, water and solids-non-fat contents of mackerel could be determined by analyzing the ultrasonic velocity versus temperature profiles using a semi-empirical equation developed in an earlier study. Measurements at 25°C could be used to provide information about the fat content of the mackerel. These results show that a relatively low-cost hand-held ultrasonic device could be used to analyze the proximate composition of mackerel. The availability of a hand-held ultrasonic device that is simple to use would be useful for grading mackerel according to their composition.  相似文献

The stock size of chub mackerel (Scomber japonicus) in the East China Sea and the Japan/East Sea has shown a continuous decrease, with fluctuations, from 1975 to 1990. After a remarkable increase in 1992–96, the stock size fell to its lowest level in 1997–99. The spawning success (number of recruits/spawning biomass) fluctuates periodically with a period of several years, although there are no clear relationships between the spawning biomass and the number of recruits. Spawning success was inversely correlated with sea surface temperature (SST). On the contrary, the catch amount and the catch per unit effort (CPUE) of spotted mackerel (Scomber australasicus) has increased since 1997.  相似文献

利用2010–2012年春季在东海中部获得的日本鲭产卵群体样品的生物学及繁殖力测定数据,对其群体结构、性腺指数GSI和繁殖力特征进行了研究。结果显示,目前东海中部日本鲭产卵群体年龄结构由1–5龄组成,以2–4龄占优势。日本鲭的个体绝对繁殖力为24770–734684粒,平均为(145575±10067)粒;纯体重相对繁殖力为175–1404 grain/g,平均为(524±24)grain/g;叉长相对繁殖力为102–2070 grain/mm,平均为(483±29)grain/mm。ANOVA分析结果显示,不同叉长组间的性腺指数GSI(F=2.34,P0.05)、绝对繁殖力(F=8.57,P0.01)和叉长相对繁殖力(F=5.59,P0.05)均有显著性差异,但体重相对繁殖力差异不明显(F=2.03,P0.05)。多元逐步线性回归和非线性回归分析显示,绝对繁殖力与体高、肝重关系密切。为了应对高强度的捕捞压力,日本鲭主要采用降低性成熟年龄,减小最小性成熟叉长和卵径、增加繁殖力等策略来维持种群的延续。  相似文献

Climatic warming is affecting oceanic circulation patterns in coastal upwelling areas, but the impact of this climatic change on pelagic fish populations remains unclear. From juvenile landings collected over 38 years, the thresholds of environmental factors were determined that limited the optimal environmental window (OEW) for sardine (Sardina pilchardus recruitment success in the northwestern Iberian peninsula. The environmental factors considered were: water column stability in February, offshore water transport in March–April (QxMA), upwelling intensity in the preceding year from May to August (QxMJJA), and the winter North Atlantic Oscillation (NAO) index. From 1875 to the mid‐1920s, the mean number of years within the OEW was relatively constant. However, since the mid‐1920s, there have been oscillations and alternating decades with high and low number of years within the OEW, which were related to oscillations in sardine landings. From 1906 to 2000, there were four record, low sardine catches in the 1920s, 1950s, 1970s and 1990s, related to a high number of successive years with prevailing conditions out of the OEW. From 1875 to the present, a high year‐to‐year variation of the NAO, QxMJJA and water stability in February was observed, although with mean values usually within the OEW. The collapse in the 1950s was related, partly, to successive years with low QxMJJA. Successive years with high NAO values may be related to the collapse of the sardine fishery in the 1990s. QxMA has been the most significant factor controlling SRS in this area, being the factor related to the low catches observed in the 1920s, 1950s and 1970s. Water stability was not responsible for any of the collapses observed, but since the 1920s, there has been a significant trend toward decreasing water column stability before the onset of the spring bloom.  相似文献

分布于东、黄海的日本鲭(Scomber japoncus)在我国海洋渔业中具有重要的地位,随着中韩、中日渔业协定的生效,开展日本鲭等重要经济鱼类的种群归属研究显得尤为重要。关于东、黄海日本鲭种群划分,20世纪中日两国学者利用标志放流和渔业调查数据分别进行了研判,但中日间以及国内对其种群划分存在不同见解。21世纪以来,中国一些研究者利用形态框架法和分子遗传学方法对前辈的种群划分进行了验证并提供了一些证据,但分析结果值得商榷。总结相关研究结果,多数中国学者将分布于东、黄海的日本鲭划分为东海西部种群、五岛西部种群和闽南—粤东地方种群,也有中国学者将其划分为东海群系和闽南—粤东地方种群;日本学者将分布于东海不同越冬场日本鲭归属为对马暖流群系,也有日本学者将分布于东、黄海和日本海西部的日本鲭划分为九州西部群系和东海西部群系。针对东、黄海日本鲭种群划分存在的不同观点,今后研究者应同时利用目前较为先进的、相对可操作的鱼类框架形态和分子遗传等判别技术,增加产卵场样本采集覆盖面,以获得判别东、黄海日本鲭种群相对最为科学的证据。  相似文献

鱼类栖息地模拟的比较研究—以东海鲐鱼为例   总被引:2,自引:0,他引:2  
利用东海海域1997年10月、1998年3月、1999年7月和2000年1月鲐鱼渔获率及表层温度、盐度和初级生产力等环境因子数据,构建东海鲐鱼资源空间分布与环境因子间的一般线性模型(GLM)和广义加性模型(GAM),并将GLM和GAM模拟值的均值分别与实测值进行独立样本t检验及其误差分析.分析结果表明,GLM与GAM模型的独立样本t检验P值均大于0.05,因此两者都可模拟东海鲐鱼栖息地的空间分布.其中,GLM模型对鲐鱼渔获率空间分布趋势的模拟更为准确;而GAM模拟值对鲐鱼栖息地环境因子的变化比较敏感,能够解释更多空间数据的变化,因而GAM在分析鱼类栖息地与环境因子间关联程度或资源评估方面具有优势.  相似文献

The aim of the present study was to evaluate the effects of various sous-vide time–temperature regimes and their interactions on quality parameters of Atlantic mackerel (Scomber scombrus) during chilled storage. The mackerel ?llets were exposed to sous-vide treatment at 60, 75, and 90°C for 10, 15, and 20 min and further stored for 1, 3, and 7 days at 4 ± 1°C before analysis. Changes in pH, water content and cook loss, amount of water- and salt-soluble proteins, texture, and color parameters, as well as accumulation of lipid oxidation products in sous-vide-cooked mackerel were assessed. Sous-vide cooking time and temperature had the lowest contribution to the formation of primary and secondary products of lipid oxidation, as well as increase in yellowness of the fish flesh due to their accumulation; whereas duration of chilled storage led to a significant increase in oxidation and yellowness (p < 0.05). Duration of chilled storage also affected structural and textural properties of the fish muscle, leading to a decreased cook loss. At the same time, sous-vide cooking decreased the firmness of the fish muscle. Duration of chilled storage was found to have the highest significant effect (p < 0.001) on all physicochemical characteristics of sous-vide-cooked mackerel.  相似文献

The extent of lipid oxidation and retention of omega (ω)-3 fatty acids in milk protein concentrate (MPC)-added mackerel and salmon mince and nuggets during 4-months frozen storage were investigated in order to develop high ω-3 seafood products. Mechanically deboned fish mince formulated with MPC and other ingredients was formed into batter-breaded nuggets with or without par-frying. The addition of MPC at 4% resulted in significantly lower thiobarbituric acid reactive substances (TBARS) values and helped retain significantly (p < 0.05) higher amounts of docosahexaenoic acid (DHA) in both salmon and mackerel mince and eicosapentaenoic acid (EPA) in the mackerel mince. There were no significant differences in peroxide values (PV) and TBARS values between nugget products with and without par-frying. EPA and DHA were retained less in par-fried than raw nuggets probably due to oil leaching and thermal degradation during frying. The reductions of EPA and DHA in salmon were 67% and 53% for raw and 57% and 39% for par-fried nuggets, while in mackerel they were 63% and 73% for raw and 57% and 56% for par-fried nuggets, respectively. Results suggest that although MPC provided some protection against lipid oxidation, additional measures are needed to improve retention of ω-3 fatty acids in mince-based seafood products during frozen storage.  相似文献

Spawning habitats of two eastern Mediterranean sardine, Sardina pilchardus (Walbaum, 1792), stocks (coastal waters of central Aegean and Ionian Seas) are characterized from daily egg production method (DEPM) surveys conducted during the peak of the spawning period. The latter occurs earlier in the Aegean Sea (December) than in the less‐productive Ionian Sea (February). Single‐parameter quotient analysis showed that the preferred bottom depth for spawning was 40–90 m in both areas but sardine selected sites of increased zooplankton in the Aegean Sea during December and increased fluorescence in the Ionian Sea during February. Estimates of daily egg production (P) and spawning stock biomass (B) were about four times lower for the Ionian Sea (P = 7.81 eggs m?2, B = 3652 tonnes) than the Aegean Sea (P = 27.52 eggs m?2, B = 16 174 tonnes). We suggest that zooplankton biomass might not be sufficient to support sardine reproduction in the highly oligotrophic Ionian Sea where the very small sardine stock may rely on the late‐winter phytoplankton bloom. Actively selecting sites with increased zooplankton or phytoplankton and feeding plasticity (the well‐known switching from selective particle feeding to non‐selective filter feeding in sardines) are interpreted as adaptations to grow and reproduce optimally at varying prey conditions. Despite differences in temperature and productivity regimes, reproductive performance of sardine in the Ionian Sea was very similar to that in the Aegean Sea during the peak of the spawning period. In comparing adult parameters from DEPM applications to Sardina and Sardinops stocks around the world, a highly significant linear relation emerged between mean batch fecundity (F) and mean weight of mature female (W, g) (F = 0.364W, r2 = 0.98). The latter implies that, during the peak of the spawning period, mean relative batch fecundity (eggs g?1) of sardine is fairly constant in contrasting ecosystems around the world.  相似文献

In recent years, kisspeptin peptides, encoded by kiss genes have been used to manipulate reproductive processes in farmed animals, including fish. Our previous studies demonstrated that the chub mackerel brain expresses kiss1 and kiss2 and intramuscular injection of synthetic Kiss1 pentadecapeptide (Kiss1‐15) but not Kiss2 dodecapeptide (Kiss2‐12) accelerates spermatogenesis in prepubertal male chub mackerel (Scomber japonicus). In the present study, we evaluated their effects in prepubertal female chub mackerel. The gonadosomatic index (GSI) values of experimental fish did not show any significant changes. Condition factor (CF) values increased significantly in Kiss1‐15 treated fish, in comparison with control and GnRH analogue (GnRHa) injected fish. Histologically, only perinucleolar oocytes were found in all experimental fish. However, Kiss and GnRHa treated fish showed a significant increase in the perinucleolar oocyte diameter, in comparison with the control fish. Gene expression analyses revealed decreased expression of gnrh1 in the telencephalon‐preoptic region of the brain of Kiss2‐12 and GnRHa injected fish, in comparison with control fish. In contrast, GnRHa injected fish exhibited higher levels of fshβ in the pituitary, with no changes in the levels of lhβ among different treatments. Levels of circulating sex steroids, testosterone, and estradiol‐17β were significantly higher in Kiss1‐15 injected fish, in comparison with control fish. These results indicate that synthetic kisspeptin peptides and GnRHa can induce oocyte growth in prepubertal female chub mackerel.  相似文献

The study of the discharge of metallic pollutants into the marine environment through biological material such as sardines makes it possible to evaluate the quality of the biological resources and of the marine environment. The sardine (Sardina pilchardus) is the most popular species for fishing and the most consumed species by the Algiers population. Two toxic metals that can affect human health are studied in this fish. A year of sampling with fishermen was conducted. Sampling was done in the spring, in the autumn, and in April between April 2014 and April 2015. Sampled sardines were grouped by size classes. The gills and muscle were recovered by size classes. The results were explored using a principal components analysis and compared by a Mann-Whitney distribution test. An atomic absorption spectrophotometer was used in the laboratory for analysis. The most important results show that lead levels were higher than those of cadmium in the gills and muscle. For sardines, lead contamination appears to have both gill and food origins. Mann-Whitney comparison tests confirmed this homogeneous distribution of lead between the gills and muscle. The correlation between cadmium in the gills and height or weight is more substantial than that with muscle. The origin of cadmium in sardines is branchial. The food origin appears secondary. From our point of view, the effect of season, i.e., winter (December) and spring (April), favors an increase in metal levels in parallel to the production reserves planned for spawning. The effect of season was observed by use of a biplot. A significant reduction in cadmium and lead content was observed in September. The high temperature, an environmental factor, induced stress that reduced the metal concentrations and the decontamination induced by the issuance of genital products in early summer.  相似文献

Atlantic mackerel was stored at refrigeration or frozen temperatures under vacuum or in air with various treatments to determine lipid hydrolysis and oxidation in the fish muscle. Lipid oxidation in the fish minces occurred continually as long as the samples were exposed to air independent of hydrolytic activity which was deactivated or retarded by cooking the sample or by lowering the storage temperature (-40°C). Lipid oxidation was observed not only in the free fatty acids, but also in the triacylglycerides and the phospholipids extracted from mackerel mince.  相似文献

Large amplitude variations in recruitment of small pelagic fish result from interactions between a fluctuating environment and population dynamics processes such as spawning. The spatial extent and location of spawning, which is critical to the fate of eggs and larvae, can vary strongly from year to year, as a result of changing population structure and environmental conditions. Spawning habitat can be divided into ‘potential spawning habitat’, defined as habitat where the hydrographic conditions are suitable for spawning, ‘realized spawning habitat’, defined as habitat where spawning actually occurs, and ‘successful spawning habitat’, defined as habitat from where successful recruitment has resulted. Using biological data collected during the period 2000–2004, as well as hydrographic data, we investigate the role of environmental parameters in controlling the potential spawning habitat of anchovy and sardine in the Bay of Biscay. Anchovy potential spawning habitat appears to be primarily related to bottom temperature followed by surface temperature and mixed‐layer depth, whilst surface and bottom salinity appear to play a lesser role. The possible influence of hydrographic factors on the spawning habitat of sardine seems less clear than for anchovy. Modelled relationships between anchovy and sardine spawning are used to predict potential spawning habitat from hydrodynamical simulations. The results show that the seasonal patterns in spawning are well reproduced by the model, indicating that hydrographic changes may explain a large fraction of spawning spatial dynamics. Such models may prove useful in the context of forecasting potential impacts of future environmental changes on sardine and anchovy reproductive strategy in the north‐east Atlantic.  相似文献

Chub mackerel (Scomber japonicus Houttuyn) is one of the most commercially important scombroid fish used as a food resource. Recently, there has been a demand for efficient rearing methods of this fish for a full‐life cycle aquaculture. In the present study, we evaluated the physiological responses in the juvenile S. japonicus to different ambient salinities. A significantly higher gain of the body mass was observed in the juveniles reared in 24 g/L and 13 g/L seawater than in those reared in natural seawater (34 g/L) within 40 days of the experimental period without affecting mortality. A principal enzyme for osmoregulation, Na+/K+‐ATPase, was expressed in the ionocytes located in the gill filaments of the juveniles. The number and the cell size of ionocytes and the enzymatic activity of Na+/K+‐ATPase in the gills decreased within 10 days after the low‐salinity challenge, which implies the reduction of the energy‐consuming active ion secretion under the low‐salinity environment. The physiological capacity for adaptation to low‐salinity seawater in chub mackerel could be basic knowledge to carry out culturing of these fish in coastal sea pens where ambient salinity fluctuates. The improvement of the growth performance by rearing in low‐salinity seawater will contribute to the efficient production of the seed juveniles for aquaculture.  相似文献

To clarify the effects of temperature on the recruitment of chub mackerel (Scomber japonicus) in the North Pacific, we investigated the influence of winter surface temperature (WST) on spawners at the time of maturity around the spawning grounds and the influence of ambient spring temperature on larvae using estimated temperature (ET) obtained from particle tracking experiments. We found a significant positive correlation between ET approximately 10 days following hatching and the recruitment per spawning stock biomass (RPS) after 2000. The closer (more meandering) the Kuroshio Current (KC) axis was in relation to the spawning ground, the higher (lower) the spring surface temperature and the higher (lower) RPS was in the spawning ground. In contrast, WST inside KC near the maturity/spawning ground was significantly negatively correlated with RPS. A significant negative correlation between the temperatures in winter and spring was detected in the area after 2000, when the conditions of the Pacific decadal oscillation index and the stability of the Kuroshio Extension were synchronous, indicating that KC shifted northward during this time. The reversed temperature pattern was consistent with the winter–spring movement of KC axis in the offshore direction and was correlated with the winter–spring difference in the intensity of the Aleutian low. These results suggest that the annual variation in chub mackerel recruitment after 2000 was strongly affected by the combined effects of ambient temperature because of the reversal of conditions that occurred between winter and spring around the maturity/spawning ground, which was related to the KC path.  相似文献
