In the present study, three recently patented decontamination agents: peroxyacetic acid combined with lactic acid, and two different combinations of hydrogen peroxide with citric acid (with and without propylene glycol), were compared with sodium hypochlorite and tap water washing regarding their effect on equilibrium modified atmosphere packaged (EMAP) fresh-cut iceberg lettuce. Effects of these sanitizers on respiration rate, electrolyte leakage, microbial levels, and sensory quality of the product after decontamination and during storage (3 d at 4 °C followed by 4 d at 7 °C) were elucidated. Hydrogen peroxide based sanitizers provoked a significant increase in the respiration rate and the electrolyte leakage of fresh-cut iceberg lettuce compared with tap water washing. Peroxyacetic acid combined with lactic acid resulted in similar results to those of tap water washing for all the parameters analyzed. However, other aspects of the combination of peroxyacetic and lactic acids (e.g. efficacy for cross-contamination avoidance) should be assessed in the future in order to determine its suitability for fresh-cut iceberg lettuce processing.  相似文献

‘Galia’ (Cucumis melo var. reticulatus L. Naud. cv. Galia) fruit were harvested at the three-quarter slip stage and treated with 1 μL L−1 1-methylcyclopropene (1-MCP) at 20 °C for 24 h. The fruit were processed and stored as fresh-cut cubes and intact fruit for 10 d at 5 °C. Ethylene production of fresh-cut cubes was approximately 4–5-fold higher than intact fruit at day 1. Afterward, the ethylene production of fresh-cut cubes declined significantly whereas that of intact fruit remained relatively constant at about 0.69–1.04 ng kg−1 s−1. 1-MCP delayed mesocarp softening in both fresh-cut and intact fruit and the symptoms of watersoaking in fresh-cut fruit. Continuously stored fresh-cut cubes and cubes derived from intact fruit not treated with the ethylene antagonist softened 27% and 25.6%, respectively, during 10 d storage at 5 °C while cubes derived from 1-MCP-treated fruit softened 9% and 17%, respectively. Fresh-cut tissue from 1-MCP-treated fruit exhibited slightly reduced populations of both total aerobic organisms and Enterobacterium, although the differences did not appear to be sufficient to explain the differences in keeping quality between 1-MCP-treated and control fruit. Based primarily on firmness retention and reduced watersoaking, 1-MCP treatment deferred loss of physical deterioration of fresh-cut ‘Galia’ cubes at 5 °C by 2–3 d compared with controls.  相似文献

In this study, the efficacy of UV-C illumination for inactivate Escherichia coli, Listeria innocua or Salmonella enterica, individually or in a mixture, in vitro and on apple slices was determined. Apple slices inoculated with a 107 cfu/mL suspension of above indicated pathogens were irradiated on both sides with UV-C illumination, with doses of 0.5 and 1.0 kJ/m2. UV-C illumination disinfection efficacy was compared to that of washings with sodium hypochlorite at 100 ppm of free chlorine and with distilled water. Bactericidal activity of each treatment was assessed after 30 min and after 7 and 15 days of storage at 4 °C. Results showed that UV-C illumination at 1.0 kJ/m2 could be an alternative to the wash with hypochlorite solutions. On the in vitro study, these doses completely inhibited the growth of the three bacteria either as pure cultures or in a mixture. In fresh-cut apple, the pathogens were also affected by the UV-C illumination, the 1.0 kJ/m2 dosage being the one that resulted in higher bacteria inhibition in almost every case. The UV-C treatment did not affect the quality properties of fresh-cut apple.  相似文献

Fumigation by plant volatile compounds and hot water treatment were tested in vitro and in vivo for their activity against Neofabraea alba (anamorph Phlyctema vagabunda), the cause of lenticel rot in apple fruit. In vitro trials with volatile compounds showed a consistent inhibition of pathogen growth by carvacrol, trans-cinnamaldehyde, citral and trans-2-hexenal, while (?)-carvone, hexanal, p-anisaldehyde, 2-nonanone and eugenol showed progressively lower inhibition. The greatest inhibition of mycelial growth was demonstrated by carvacrol (effective doses for 50 and 95 inhibition [ED50 and ED95] = 5.9 and 17.0 μL L?1, respectively; minimum inhibitory concentration [MIC] = 36.9 μL L?1) and of conidial germination by trans-2-hexenal (ED50 and ED95 = 4.1 and 6.9 μL L?1, respectively; MIC = 9.2 μL L?1). Hot water showed a complete inhibition of conidial germination in vitro after 10, 2 and 1 min of exposure at 40, 45 and 50 °C, respectively, and a complete inhibition of mycelial growth after 20 min of exposure at 75 °C. Among the volatile compounds tested, only 25 μL L?1 of carvacrol slightly reduced fungal infection on artificially infected apples (11.4% efficacy). Hot water treatment at 45 °C for 10 min showed high efficacy in the control of lenticel rot on apples. Reduction of infection was 80% in artificially inoculated fruit (cv Golden Delicious) and 90% in naturally infected fruit (cv Pink Lady) after 90 and 135 d of storage, respectively.  相似文献

Brown rot caused by Monilinia spp. is the most important postharvest disease of stone fruit. From preliminary studies, the combination of 0.25% hydrogen peroxide, 0.02% peracetic acid (PAA) and 0.075% acetic acid, corresponding to 300 mg L−1 of PAA, was selected to control Monilinia fructicola. Brown rot control was similarly controlled when the same concentration of PAA was applied with a PAA-based commercial product. In order to reduce PAA concentration, combinations of different concentrations and temperatures were evaluated. A treatment of 200 mg L−1 of PAA at 40 °C for 40 s was selected to control pre-existing and future infections, different inoculum concentrations of M. fructicola and to control brown rot on naturally infected fruit. Brown rot was completely controlled with the selected treatment when peaches and nectarines were inoculated 0 h before the treatment but it was not controlled when infection time was increased to 24, 48 and 72 h. Also, the treatment significantly controlled brown rot at all inoculum concentrations evaluated (103, 104, 105 and 106 conidia mL−1) in both peaches and nectarines, but no protection against future infections was observed. In naturally infected fruit, brown rot incidence was slightly but significantly reduced to 61 and 36% in ‘Roig d’Albesa’ and ‘Placido’ peaches, respectively, but not in nectarines. Immersion for 40 s in 200 mg L−1 of PAA at 40 °C provides an alternative treatment to control only recent infections of Monilinia spp. whatever their concentration without generally affecting fruit quality.  相似文献

The effects of 40, 70 or 100 mg L?1 free chlorine neutral and acidic electrolyzed water (NEW and AEW) during the washing and disinfection step, on quality attribute changes during shelf life of fresh-cut mizuna baby leaves, were studied. Physiological, nutritional, enzymatic, sensory, and microbial changes throughout 11 days at 5 °C were monitored. Results were compared to those reached with a conventional industrial treatment of 100 mg L?1 NaClO at pH 6.5 and with a control washing with deionised water. Both NEW and AEW showed an inhibitory effect on natural microflora growth and retained the main quality attributes. Total chlorophyll content was preserved after shelf life. Initial total phenolic contents ranged between 1868 and 2518 mg CAE kg?1 fw for AEW 40 and AEW 100 treatments respectively and slightly increased throughout shelf life. In contrast, after shelf life the total antioxidant activity recorded on the processing day decreased around 35%. Throughout shelf life EW induced an increase in catalase activity while superoxide dismutase activity decreased. Scanning electron microscopy of the leaves showed that neither NEW nor AEW affected their surface structure. To the best of our knowledge, the effects of NEW and AEW on bioactive quality parameters, as well as on antioxidant enzyme activities for fresh-cut baby leaves are first reported here. EW provides an alternative sanitizing technique to NaClO for maintaining the quality of fresh-cut mizuna baby leaves up to 11 days at 5 °C.  相似文献

The use of biopreservation is a promising technique to ensure microbial safety of fresh-cut produce. The objective of this work was to test the effectiveness of the strain CPA-7 of Pseudomonas graminis against a cocktail of Salmonella spp. and Listeria monocytogenes on fresh-cut melon, and evaluate its effect on its quality during shelf-life when tested in conditions simulating commercial application.Fresh-cut melon was artificially inoculated with Salmonella spp. and L. monocytogenes and with or without the biopreservative strain at different concentrations and stored at 20, 10 and 5 °C. Moreover, the effect of the strain was tested in conditions simulating commercial application. Fresh-cut melon was packaged using passive modified atmosphere (MAP) and AIR conditions and stored at 5 and 10 °C. Quality of fresh-cut melon was evaluated in CPA-7 treated and untreated samples. At laboratory scale trials, P. graminis reduced Salmonella and L. monocytogenes growth on fresh-cut melon stored at 5, 10 and 20 °C. Effectiveness depended on their concentration and on storage temperature. At low pathogen concentration and 20 °C, L. monocytogenes growth was reduced between 2.1 and 5.3 log cfu g−1 units after 2 days of storage and Salmonella growth between 2.0 and 7.3 log cfu g−1 depending on CPA-7 dose. At 10 °C, similar reductions of pathogens were observed after 5 days of storage. In studies simulating commercial conditions, packaging atmosphere and temperature influenced P. graminis effectiveness, with better results in samples packaged under AIR conditions and 10 °C. Reduction of pathogen growth was <1-log unit in fresh-cut melon stored in MAP whilst it was >4-log units in AIR. Soluble solids content, titratable acidity, pH and firmness of fresh-cut melon were not significantly different in CPA-7 treated and untreated (control) melon. In general, lightness, chroma and hue values of fresh-cut melon stored in AIR decreased faster in CPA-7 samples than on control ones. At 5 °C, CPA-7 treated melon was visually scored lower than untreated melon. P. graminis has demonstrated promising results at 10 °C, which is a temperature more compromised for safety. Nevertheless more detailed studies on the modified atmosphere are required because AIR packaging is not recommended due to the rapid loss of quality.  相似文献

Quality, microbiological and enzymatic characteristics of fresh-cut lettuce (Lactuca sativa var. longifolia, ‘Duende’), grown in floating system with three electrical conductivities of nutrient solutions (2.8, 3.8 and 4.8 mS cm?1), were investigated in order to evaluate the effect of salinity on product shelf-life during cold storage (9 d at 4 °C). Pre-harvest salinity of 3.8 and 4.8 mS cm?1 improved the properties of fresh-cut lettuce, since CO2 production was reduced with a subsequent control of the decay process. Fresh-cut processing caused an activation of polyphenol oxidase and peroxidase; in all cases the product obtained by salinity treatments was less subject to oxidase activity and browning phenomena during storage. Increased salinity reduced the number of mesophilic bacteria and of moulds and yeasts, assessed by plate counts on different culture media; in contrast, Enterobacteriaceae levels were unaffected by pre-harvest treatments. The research demonstrated that an increase in nutrient solution electrical conductivity, through the use of floating system, affects fresh-cut lettuce characteristics, improving shelf-life of the product.  相似文献

The antifungal activities of cinnamon extract (CE), piper extract (PE) and garlic extract (GE) were evaluated on banana crown rot fungi (Colletotrichum musae, Fusarium spp. and Lasiodiplodia theobromae) in vitro. The assay was conducted with extracts of CE, PE and GE with concentrations of 0, 0.1, 0.5, 1.0, 5.0, 10.0 and 0.75 g L−1 of carbendazim (CBZ) on potato dextrose agar at room temperature. CE completely inhibited conidial germination and mycelial growth of all fungi at 5.0 g L−1. PE totally suppressed mycelial growth of all fungi at 5.0 g L−1 and conidial germination at 10.0 g L−1 except for Fusarium spp. GE had no significant effects but low concentrations (0.1 and 0.5 g L−1) enhanced germ tube elongation of the three fungi. The ED50 values were higher for mycelial growth than for conidia except for Fusarium spp. Combined treatments were investigated on crown rot development in banana fruit (Musa AAA group ‘Kluai Hom thong’). Treatments included 5.0 g L−1 CE, 1% (w/v) chitosan solution, hot water treatment (HWT, 45 °C for 20 min), CE plus chitosan, CE plus HWT and 0.75 g L−1 of CBZ, applied before and after inoculation of the fruit. Crown rot development was assessed during storage at 13 °C for 7 weeks. Disease development was least (25%) on CE treated fruit after inoculation compared to CBZ but was higher when CE was applied before inoculation. Chitosan significantly delayed ripening as in terms of peel color, firmness, soluble solids and disease severity. CE showed no negative effects on quality of fruit. CE plus HWT caused unacceptable peel browning.  相似文献

To control postharvest decay, table grapes are commercially fumigated with sulfur dioxide. We evaluated ozone (O3) fumigation with up to 10,000 μL L?1 of ozone for up to 2 h to control postharvest gray mold of table grapes caused by Botrytis cinerea. Fumigation for 1 h with 2500 or 5000 μL L?1 of ozone were equal in effectiveness. Both treatments reduced postharvest gray mold among inoculated ‘Thompson Seedless’ grapes by approximately 50% when the grapes were examined after storage for 7 d at 15 °C following fumigation. In a similar experiment, ‘Redglobe’ grapes were stored for 28 d at 0.5 °C following fumigation for 1 h with 2500 or 5000 μL L?1 of ozone. Both treatments were equal in effectiveness, but inferior to fumigation with 10,000 μL L?1. Ozone was effective when grapes were inoculated and incubated at 15 °C up to 24 h before fumigation. The cluster rachis sustained minor injuries in some tests, but berries were never harmed. Ozone was applied in three combinations of time and ozone concentration (10,000 μL L?1 for 30 min, 5000 μL L?1 for 1 h, and 2500 μL L?1 for 2 h) where each had a constant concentration × time product (c × t) of 5000 μL L?1 × h. The effectiveness of each combination was similar. The incidence of gray mold was reduced by approximately 50% among naturally inoculated, organically grown ‘Autumn Seedless’ and ‘Black Seedless’ table grapes, and by 65% among ‘Redglobe’ table grapes, when they were fumigated with 5000 μL L?1 ozone for 60 min in a commercial ozone chamber and stored for 6 weeks at 0.5 °C. Residues of fenhexamid, cyprodinil, pyrimethanil, and pyraclostrobin were reduced by 68.5, 75.4, 83.7, and 100.0%, respectively, after a single fumigation of table grapes with 10,000 μL L?1 ozone for 1 h. Residues of iprodione and boscalid were not significantly reduced. Ozone is unlikely to replace sulfur dioxide treatments in conventional grape production unless its efficacy is improved, but it could be an acceptable technology to use with grapes marketed under “organic” classification, where the use of SO2 is prohibited, or if SO2 use were to be discontinued.  相似文献

Fresh-cut fruits and vegetables can release significant amounts of metabolites from damaged tissues on cut edges. These metabolites can potentially quench oxidative sanitizers and hence lead to loss of their antimicrobial effectiveness. In this study, the effects of organic acids, carbohydrates, phenolics, other metabolites and hydrogen peroxide on depletion of chlorine were evaluated by quantitative monitoring chlorine loss in simulated wash solutions. Gallic acid, caffeic acid and most amino acids had the greatest capacities for depleting chlorine, requiring concentrations in the range of 10 μmol L−1 or less to deplete free chlorine by half. Pyruvic, ascorbic, chlorogenic, malonic and oxalic acids had slight lower capacities, with concentrations ranging from 17 to 100 μmol L−1 leading to half depletion. All nitrogen containing metabolites had relatively high capacity in depleting chlorine at concentrations in the range of 10 μmol L−1, whereas hydrogen peroxide had a half depletion concentration of 21.3 μmol L−1. In contrast, all sugars and most carboxylic acids had lower free chlorine depletion capacities. These results demonstrate that not all organic molecules potentially exuded from cut fruit or vegetable tissue had equal or similar potential to quench free chlorine from wash water.  相似文献

Aureobasidium pullulans strains Ach 1-1 and 1113-5 are two effective biocontrol agents against Botrytis cinerea and Penicillium expansum on stored apples. In the present work, a monitoring system allowing their identification and quantification was developed. The methodology used consisted of the development of both molecular markers and a semi-selective medium. The random amplified polymorphic DNA (RAPD) technique was applied to a collection of 15 strains of A. pullulans, including Ach 1-1 and 1113-5. Five specific RAPD fragments were amplified for strain Ach 1-1 and three others for strain 1113-5. Among them, a fragment of 528 bp specific to strain Ach 1-1 (generated with the OPR-13 RAPD primer) and another one of 431 bp specific to strain 1113-5 (amplified with the OPQ-03 RAPD primer) were selected, cloned, sequenced, and used to design sequence-characterized amplified region (SCAR) primers. Three different SCAR markers were amplified: two specific to strain Ach 1-1 (189 bp and 387 bp) and one specific to strain 1113-5 (431 bp). These SCAR primers can clearly identify strains Ach 1-1 and 1113-5 among 14 strains of A. pullulans and among eight yeast strains commonly present on apple fruit surfaces. Their selectivity was also tested using DNA extracted from epiphytic microflora of the apple surface. As a semi-selective medium, PDA medium supplemented with 0.5 mg L−1 euparen, 1 mg L−1 sumico, 2.5 mg L−1 hygromycin B, 30 mg L−1 streptomycin sulphate, and 1 mg L−1 cycloheximide was selected. It inhibited the development of the air microflora and appeared highly toxic for the epiphytic microflora of apple surface without altering the growth of the targeted strains Ach 1-1 and 1113-5. The combination of the semi-selective medium and SCAR markers provides a valuable monitoring tool to specifically identify and quantify A. pullulans strain Ach 1-1 and strain 1113-5 and could be used in future studies to evaluate their population dynamics under various laboratory and practical conditions.  相似文献

Fresh-cut banana slices have a short shelf-life due to fast browning and softening after processing. The effects of atmospheric modification, exposure to 1-MCP, and chemical dips on the quality of fresh-cut bananas were determined. Low levels of O2 (2 and 4 kPa) and high levels of CO2 (5 and 10 kPa), alone or in combination, did not prevent browning and softening of fresh-cut banana slices. Softening and respiration rates were decreased in response to 1-MCP treatment (1 μL L−1 for 6 h at 14 °C) of fresh-cut banana slices (after processing), but their ethylene production and browning rates were not influenced. A 2-min dip in a mixture of 1% (w/v) CaCl2 + 1% (w/v) ascorbic acid + 0.5% (w/v) cysteine effectively prevented browning and softening of the slices for 6 days at 5 °C. Dips in less than 0.5% cysteine promoted pinking of fresh-cut banana slices, while concentrations between 0.5 and 1.0% cysteine delayed browning and softening and extended the post-cutting life to 7 days at 5 °C.  相似文献

A number of studies have shown that responses of apple fruit to 1-methylcyclopropene (1-MCP) vary considerably among cultivars. This study was designed to determine if cultivars show differences in accumulation of gaseous 1-MCP. Apple fruit were placed in 1.76 L jars that were sealed and injected with 20 μL L−1 1-MCP. After 12 h, samples of intercellular atmosphere were removed and analyzed for 1-MCP concentration. Accumulation of internal gaseous 1-MCP varied markedly among cultivars, ranging from 0.14 ± 0.06, 0.22 ± 0.03, and 0.77 ± 0.30 in ‘Redcort’, ‘McIntosh’, and ‘Empire’, respectively, to 2.10 ± 0.28, 3.33 ± 0.13, and 6.93 ± 0.35 μL L−1 in ‘Gala’, ‘Cameo’, and ‘Honeycrisp’, respectively. Accumulation of gaseous 1-MCP was reduced an average of 51% in fruit treated with Sta-Fresh 8711 fruit wax. The role of the epidermis in modulating 1-MCP ingress was determined by measuring gaseous 1-MCP accumulation in fresh-cut tissue. Fresh-cut cortical tissue rapidly depleted headspace 1-MCP (>95%) over a 1-h exposure yet accumulated negligible quantities of internal gaseous 1-MCP. By contrast, cortical tissue treated with ascorbic acid or hypotaurine, or aged for several hours prior to exposure to 1-MCP, showed reduced consumption of headspace 1-MCP and high accumulation of internal gaseous 1-MCP. Levels of internal 1-MCP in cortical tissue from the cultivars generally paralleled those for intact fruit, ranging from 0.23 ± 0.07, 0.37 ± 0.18 and 1.09 ± 0.14 μL L−1 in ‘Empire’, ‘McIntosh’ and ‘Redcort’, respectively, to 2.40 ± 0.71, 4.55 ± 0.15, and 6.24 ± 0.85 in Gala’, ‘Cameo’, and ‘Honeycrisp’, respectively. Although commercial fruit wax influences gaseous 1-MCP accumulation, the comparable accumulation patterns in unwaxed whole and fresh-cut apple fruit suggest that epidermal tissue/native waxes alone do not account for cultivar differences.  相似文献

Surface browning is an important cause of deterioration of fresh-cut apples during postharvest handling. ‘Granny Smith’ apple slices treated with NO gas (10 μL/L) and the NO donor compound 2,2′-(hydroxynitrosohydrazino)-bisethanamine (diethylenetriamine nitric oxide (DETANO) (10 mg/L) dissolved in phosphate buffer (pH 6.5) showed delayed development of surface browning during storage at 5 °C and also resulted in a lower level of total phenols, inhibition of PPO activity, reduced ion leakage and reduced rate of respiration but had no significant effect on ethylene production or lipid peroxide level as measured by malondialdehyde (MDA) and hydrogen peroxide levels. The two control treatments of phosphate buffer (pH 6.5) and water dips also had significant effects compared to untreated slices. The relative effectiveness of treatments in extending postharvest life and reducing total phenols, PPO activity, ion leakage and respiration was DETANO > NO gas > phosphate buffer > water > untreated. Apple slices dipped in chlorogenic acid dissolved in water showed surface browning soon after application but dipping in DETANO solution negated the effect of chlorogenic acid whether applied before or after dipping in chlorogenic acid solution while the buffer and NO gas were also effective. It is suggested that an increase in phenols occurs on the apple surface soon after cutting, possibly as a defensive mechanism of the apple to limit damage to surface cells. The effectiveness of the applied treatments to inhibit development of surface browning may relate to their ability to minimize the level of phenols active on the cut surface possibly in conjunction with a reduced PPO activity.  相似文献

Modified atmosphere packaging (MAP) has the potential to extend the shelf-life of fresh-cut lettuce mainly by limiting the oxidation processes. However, exposure to light conditions has been described as causing browning and quality loss. The influence of O2 partial pressures (pO2) and light exposure during storage on the shelf-life of fresh-cut Romaine lettuce was studied. Fresh-cut lettuce was exposed daily during storage to different light conditions: light (24 h), darkness (24 h) and photoperiod (12 h light + 12 h darkness). Changes in respiration rate, headspace gas composition, sensory quality, colour, electrolyte leakage, stomatal opening, water loss, texture and compositional constituents related to browning such as vitamin C and individual and total phenolic compounds were evaluated. Different weight samples (75–275 g), packaged with an initial pO2 of 0.5–2.0 kPa balanced with N2, reached pO2 from 0.1 to 1.5 at the steady-state. Atmospheres with low pO2 (0.2–0.5) at the steady-state preserved lettuce quality by the control of browning and the prevention of off-odours and off-flavours. Light exposure during storage positively influenced the number of open stomata (74% in light vs 24% in darkness) which contributed slightly to weight loss. Consumption of O2 in samples exposed to light differed significantly from those stored in photoperiod or darkness (10.6 ± 7.0, 18.3 ± 3.5 and 25.8 ± 8.6 nmol O2 kg?1 s?1, respectively). Packages exposed to light showed higher pO2 compared with packages stored in darkness while those exposed to photoperiod had intermediate values. Moreover, location of the packages in the shelves affected package headspace gas composition and thus, packages near the front of the shelves showed higher pO2 than those at the back. The different light conditions did not influence the content of vitamin C or the individual and total phenolic compounds. This study shows that under light conditions respiration activity was compensated by photosynthesis resulting in a higher pO2. Thus, browning of fresh-cut Romaine lettuce can be promoted by light exposure during storage as it increases headspace pO2.  相似文献

A novel hybrid muskmelon has been bred specifically for use by the fresh-cut industry in winter. Quality characteristics of fresh-cut pieces from the hybrid were compared to those of its inbred parental lines and to those of a commercial netted muskmelon (cantaloupe) and a non-netted muskmelon (honeydew) fruit available in winter. Pieces from hybrid and female line fruit had higher soluble solids content (SSC) and firmness, and lower aromatic volatile concentrations compared to those from the male line fruit. Pieces from hybrid fruit also had higher SSC (>3%) and were firmer (>5 N) than commercial fruit available during the winter, and had twice the aromatic volatile concentration of commercial honeydew and a more intense orange hue than commercial muskmelon. Consumers rated the flavor, texture, sweetness and overall eating quality of the hybrid higher than its inbred parents and winter-available honeydew and as well as or better than winter-available muskmelon. Hybrid fruit stored 5 weeks at 1 °C under modified atmospheric conditions, then fresh-cut and stored 14 d in air at 5 °C maintained good quality (firmness = 51 N, SSC > 12%, β-carotene and ascorbic acid concentrations = 18 and 182 mg kg?1, respectively), and showed no signs of tissue translucency or surface pitting despite microbial populations >11 log10 kg?1. The results indicate that the novel hybrid muskmelon is a promising new melon type for fresh-cut processing and marketing, at least during the winter season.  相似文献

The feasibility of non-destructive estimation of internal ethylene concentration (IEC) in apple fruit via fruit reflectance using recently developed approaches and a fiber-optics reflectometer was investigated. The relationships between IEC and fruit reflectance in the 400–800 nm range were studied in stored apple (Malus × domestica Borkh., cv. Antonovka) fruit. A strong correlation between IEC and optical reflectance spectra taken from sunlit surfaces of the fruit was detected whereas reflectance of the shaded fruit surface showed a weak correlation with IEC. The increase of the reflectance in the red occurred along with IEC build-up during ripening resulting a strong (r2 > 0.80) correlation. By contrast, reflectance in the blue-green part of the spectrum remained low and was negatively (r2  0.65) correlated with IEC. These observations are consistent with the phenomenon of degradation of chlorophylls which often occurs in parallel with the retention of carotenoids in ripening apple skin. As a result, IEC showed a significant correlation (r2 > 0.69; P < 0.001) with the index based on reflectances in the red and blue-green regions of the spectrum (R678 ? R480)/R800. The effects of strong solar light on the relationships between IEC and fruit reflectance are considered. The possibilities and limitations of a non-destructive reflectance-based assay of IEC in apple fruit are discussed.  相似文献

Ethylene production is enhanced by wounding during fresh-cut processing and the accumulation of this gas within the packages of fresh-cut fruit can be detrimental to their quality and shelf-life. The effect of 1-methylcyclopropene (1-MCP), an ethylene action blocker, applied before or after processing, on the quality of fresh-cut kiwifruit, mangoes and persimmons was evaluated during storage at 5 °C. Fresh-cut ‘Hayward’ kiwifruit slices softened at a slower rate and their ethylene production rate was decreased in response to 1-MCP application (1 μL L−1 for 6 h at 10 °C) either before or after processing. A 2-min dip in 0.09 M (1%, w/v) CaCl2 synergistically increased the effect of 1-MCP on firmness retention and 1-MCP did not affect the color (L* value) of fresh-cut kiwifruit slices. Softening and browning (decreasing L* value) were delayed when 1-MCP was applied directly on fresh-cut ‘Kent’ and ‘Keitt’ mango slices. Respiration rate of mango slices was not influenced by 1-MCP whereas the ethylene production was affected only towards the end of their shelf-life. Fresh-cut ‘Fuyu’ persimmons treated with 1-MCP after processing presented higher ethylene production rate, slower softening rate and slower darkening of color (decrease in L* value), whereas the respiration rate was not affected.  相似文献

The present research investigated the effects of a non-volatile formulation of 1-methylcyclopropene (1-MCP) embedded in different cyclodextrin (CD)-based nanosponges (NSs) to extend the postharvest longevity of an ethylene-sensitive carnation cultivar. Cut flowers of Dianthus caryophyllus L. ‘Idra di Muraglia’ were treated with α- and β-CD-based nanosponge-1-MCP complexes (α- and β-NS complexes) in tap water to achieve two different concentrations of active ingredient (0.25 and 0.5 μL L?1). Treated flowers were compared to cut stems exposed to equivalent concentrations of volatile 1-MCP as well as a tap water control with or without pure α- and β-NS. Identical nanoporous compounds were applied by perfusion to yield a total of 15 treatments. Twenty-four hours after the treatments were applied, the cut flowers were exposed to exogenous ethylene (1 ± 0.2 μL L?1) for 24 h. The postharvest carnation flower and leaf quality in addition to ethylene production levels were determined daily (beginning 24 h after treatment). None of the α-NS complex applications statistically improved the vase life of cut flowers; however, β-NS complexes were effective in preventing senescence, reducing ethylene production (measured at nearly nil after 11 d), and maintaining original petal color longer. These results were particularly strong at the lowest concentration (0.25 μL L?1) of β-NS complex. Overall, this method promoted cut flower longevity (loss of ornamental value after 14.7 d; complete damage at day 18.5) better than the commercial 1-MCP gaseous application method.  相似文献
