ABSTRACT

Lipid and protein oxidation in catfish (Clarias lazera) surimi during processing and storage were assessed. Catfish surimi were washed in deionized water: M0 (no washing step), M1 (one washing step), and M2 (two washing steps). Lipid, protein, water, and iron contents were determined. M0, M1, and M2 were stored for 0, 1, 4, 7, or 10 days at 4 ± 1°C; at each time point, samples were removed for analyses. Lipid oxidation was assessed by measuring malondialdehyde content. Protein oxidation was assessed by measuring protein solubility and protein sulfhydryl and carbonyl group contents. Based on the results, lipid content, L* and a* (color parameters), and fatty acid content in M1 and M2 were significantly reduced. Lipid oxidation development was faster in M1, and the ranking was as follows: M1 > M2 > M0, with M0 being significantly less oxidized than M1. Increasing the number of washes increased protein oxidation, and the ranking was follows: M2 > M1 > M0. Altogether, lipid and protein oxidation and physicochemical changes occurred simultaneously to different degrees in surimi during various processing and storage conditions.  相似文献

ABSTRACT

Various physicochemical properties of New Zealand hoki and southern blue whiting (SBW) roes and the biological activities of their extracts were investigated. Protein, moisture, and ash contents in both roes were similar; however, the lipid content of hoki roe was higher (p < 0.05) than SBW roe (11.0 ± 0.9 and 2.5 ± 0.1, respectively). Both fish roe extracts contained active protease inhibitors toward trypsin and papain. Neither of the roe extracts agglutinated erythrocytes, indicating the absence of lectins. Both fish roe extracts at 5 mg/mL concentration exhibited slight inhibitory effects on the proliferation of breast cancer cells, but neither of the roe extracts exhibited RNase or antifungal activity.  相似文献

This research work evaluates the impact of 1.2% pomegranate peel extract (Pp) (Punica granatum), 0.1% grapefruit seed (Gfs) (Citrus paradisi) extract, and synthetic preservative 1.25% sodium bisulfite on shelf life extension of Litopenaeus vannamei stored at 4 and 15°C. The application of isothermal titration calorimetry (ITC) for comparison of the extracts and chemical preservative on shrimp quality retention based on the overall heat production by microbial and enzymatic degradation was addressed. The occurrence of probable bioactive responsible for antimicrobial and antioxidant activity components in the extracts was examined through gas chromatography-mass spectrometry (GCMS). At 4°C, Pp-treated shrimps resulted in 6.73 logCFU/g, 6.93 logCFU/g, 5.31 mgN/100 g, and 0.58 mgMDA/kg for aerobic plate count, psychrotrophic bacterial count, trimethylamine, and thiobarbituric-acid reactive substance, respectively, on the 15th day. At 15°C, Pp-coated shrimps retained quality until day 4. Isothermal calorimetric analysis resulted in a rapid and sharp peak for fresh samples, whereas there was broad and delayed peak for shrimp treated with Pp and sodium bisulfite. These observations prove that Pp counterpart the chemical preservative and outperform Gfs on shrimp quality retention. Results also indicate that isothermal calorimetry can be a useful technique for shelf life predictions and comparative evaluation of extract impact on shrimp quality retention.  相似文献

The effect of marcela extract (ME) on the shelf life of minced tilapia sausages was evaluated in this study. The level of phenolic compounds in the ME was 114.1 ± 2.9 mg GAE/g extract, and the DPPH free radical scavenging activity was 94.95 ± 1.34%. The ME protected the samples from color changes during storage. The addition of 0.5 and 0.75% ME significantly decreased lipid oxidation and microbial growth. The ME did not impact the sausages’ sensory quality, and the addition of 0.75% prevented sensory rejection during storage.  相似文献

ABSTRACT

In this study, the degreasing technology using alkaline lipase hydrolysis for Chinese dried shrimp (Acetes chinensis) was investigated, with the purpose of decreasing lipid oxidation during dried shrimp preservation. The salt, moisture, and lipid contents of the shrimp were 6.01, 32.51, and 2.95%, respectively. The optimum enzymatic hydrolysis condition for effective decrease of shrimp lipid was obtained: lipase concentration 40 U/mL, pH 10, soaking time 60 min, soaking temperature 30°C, and shrimp/liquid ratio 1:20 (w:v). Under this optimum condition, the residual lipid of the shrimp was reduced to 2.28%, and the degreasing rate reached 49%. During 30-day preservation, the thiobarbituric acid-reactive substances (TBARS) value (0.185 mg/kg of dried shrimp and 0.131 mg/kg of degreased dried shrimp at Day 30) of degreased shrimp was lower than the shrimp without degreasing, indicating alkaline lipase hydrolysis could effectively prevent lipid oxidation and inhibit oxidative rancidity during dried shrimp preservation.  相似文献

This study aimed to investigate the efficiency of turmeric (Curcuma longa L.) extract, applied as a marinade or glaze, as an antioxidant for frozen streaked prochilod (Prochilodus lineatus) fillets. The turmeric extract contained 5.5 ± 0.1 mg curcumin/mL, and the experiment was performed using a diluted extract with 100 µg curcumin/mL. Analysis of the antioxidant activity with 2,2-diphenyl-picrylhydrazyl (DPPH) and 2,2-azinobis-(3-ethylbenzothiazoline-6-sulfonic acid) (ABTS) radicals confirmed the high antioxidant activity of curcumin. However, under the experimental conditions, curcumin extract presented no effectiveness for inhibiting lipid oxidation in frozen streaked prochilod fillets, as the concentration of thiobarbituric acid reactive substances did not differ (p > 0.05) between treated and control fillets. Sensory evaluation of the fillet appearance indicated that the change toward a more yellow color in treated fillets negatively affected its acceptance. However, the acceptability of the odor of raw and cooked fillets was similar for treated and control samples. These results may be explained by the fact that good in vitro performance of antioxidants is not always replicated in foodstuffs owing to the complexity of food matrices. Additionally, the low lipid content of the fish and the low amount of curcumin applied to the fillets may have contributed to the inefficiency of turmeric extract.  相似文献

The main aim of the present work was to evaluate the effect of dietary butylated-hydroxytoulene (BHT as an antioxidant) and dietary lipid level on flesh lipid quality of Beluga sturgeon during frozen storage. An initial 135-day feeding trial evaluated practical-type diets containing 0 or 250 mg BHT kg?1 with two lipid levels (12 and 24% diet on dry matter basis) in a factorial arrangement. Fillet samples were analyzed fresh or after storage at ?18 ± 1°C for 12 months. Dietary antioxidant supplementation had no significant effect on fat content and fatty acid composition in the studied fish muscle, but increasing the lipid concentration in the feed increased muscle lipid concentration. Lipid oxidation in fish muscle is related to increasing lipid concentration in the feed. In addition, oxidation was reduced for fish fed BHT. Results showed that dietary BHT supplementation can slow down the level of lipid oxidation in Beluga sturgeon muscles during frozen storage, but it had a direct relationship with dietary lipid level.  相似文献

In this study, total phenolic and flavonoid contents of grapefruit peel extract (GPE) were equal to 117.3 ± 0.3 µg of gallic acid/mg and 39.30 ± 0.1 µg of quercetin/mg respectively. Caspian white fish (n = 180, 4 ± 0.9 g body weight) was fed with supplemented diets, including 0, 6.25, 12.5 and 25 mg of GPE/kg for 60 days at 25 ± 1°C. The growth performance was markedly improved in fish fed with 25 mg/kg of GPE compared to others (p < 0.05). Moreover, fish fed with 25 mg/kg of GPE showed a significant increase in red blood cell (2.65·106 cell/mm3), white blood cell (17.75·103 cell/mm3), packed cell volume (48%) and haemoglobin concentrations (8.75 g/dl) compared to the control (p < 0.05). However, the highest alanine aminotransferase (140 U/L), alanine transaminase (14.5 U/L), and alkaline phosphatase (18.5 U/L) were observed in control group. Morphological analysis of intestine revealed the highest amount of villus width (8.4 µM), height (32.86 µM) and surface area (342.7 µM2) in fish fed with 25 mg/kg of GPE (p < 0.05). In conclusion, supplementing feed with GPE at 25 g/kg can improve growth performance and haemato‐biochemical parameters of Caspian white fish fry.  相似文献

ABSTRACT

The effects of a short chilled storage period before freezing, frozen storage temperature, and freezing rate on lipid oxidation of bluefin tuna (Thunnus thynnus) meat during frozen storage were investigated. After 12-months storage, all samples had increased in peroxide value though they were less at the lower temperatures (?45 and ?60°C). Peroxide values in all samples stored at ?20°C increased after 3 months storage, particularly those processed and stored 51 h after harvest. The lowest increase in peroxide value occurred in the samples frozen rapidly 3 h after harvest. Vitamin E levels decreased faster during frozen storage at ?20°C. There were no apparent differences in levels of triacylglycerides nor in n-3 fatty acid levels between treatments, storage periods, and storage temperatures. After 12-months storage, headspace oxidative volatiles were highest in samples stored at ?20°C and lowest in those stored at ?60°C. Lipid oxidation in tuna meat stored at ?45°C is similar to that at ?60°C, and rapid freezing rather than slow freezing should be used.  相似文献

Antioxidant activity of the marine alga Kappaphycus alvarezii was investigated. Methanol, acetone, petroleum ether, aqueous methanol, ethyl acetate, and chloroform extracts (1 mg/mL) of K. alvarezii were tested for their 2, 2-diphenyl-1-picrylhydrazyl (DPPH) radical scavenging activity. The values were compared with those of Vitamin C and butylated hydroxytoluene (BHT). Extracts showing positive results, when tested for DPPH free radical scavenging, were examined for dose effect, in-vivo hydrogen peroxide (H2O2) and hydroxyl radical scavenging assays. All extracts showed dose-dependent DPPH scavenging and significant hydroxyl radical scavenging activities (> 82.6%). The acetone, aqueous methanol, and methanol extracts of K. alvarezii showed the highest scavenging activity. Ethyl acetate extract showed a moderate activity of 62.9%. In the DPPH method, petroleum ether and hexane extracts showed less activity with IC50 values of 118.58 ± 8.94 and 116.25 ± 7.14 μg/mL, respectively. Acetone, methanol, and ethyl acetate extracts exhibited IC50 values of 57.32 ± 1.07, 61.31 ± 0.67, and 79.50 ± 1.59 μg/mL, respectively. K. alvarezii showed higher antioxidant activity in both in vitro and in vivo studies. Proton NMR studies revealed signals in the region 0.5 to 2.0 ppm suggesting the presence of steroidal identity in the extracts.  相似文献

ABSTRACT

The use of dietary antioxidants to increase the shelf life of farmed southern bluefin tuna (SBT) flesh was examined over a 10-week period using either a standard pellet (Control) or high-vitamin pellet (HV) fortified with vitamin E, vitamin C, and selenium. Following harvest, muscle samples were taken and assessed for antioxidant content. Flesh color shelf life was assessed in muscle stored at 4°C for 8 days. Muscle vitamin levels were significantly higher in the HV group than the Control group for vitamin E (20.4 ± 1.74 vs 9.7 ± 0.89 mg/kg) and vitamin C (29.1 ± 4.36 vs 4.3 ± 0.41 mg.kg–1), but selenium levels were not higher. Muscle samples from the HV group had a slower rate of browning than did those from the Control group, particularly over days 4 to 7 of storage. Results indicated that feeding a diet approximately 10 times higher in dietary antioxidants raised levels of vitamin E and vitamin C, but not selenium, in tuna flesh and increased the shelf life of tuna.  相似文献

New cultured ornamental fish namely Lake Kurumoi rainbowfish Melanotaenia parva (Allen) run into reduced of colour performances when reared in the aquaria, consequently, fish feed must be added with carotenoids as a pigment source. The aim of this study was to evaluate the digestibility, growth and pigmentation of astaxanthin, canthaxanthin and lutein in diet. Apparent digestibility coefficients (ADC) of dry matter, lipid, protein, carotenoids, growth and pigmentation were studied in twenty fish after 14 and 56 days of observation. The single‐dose supplementation of 100 mg/kg of astaxanthin, canthaxanthin, or lutein diets on fish was fed by apparent satiation. The basal diet without carotenoids was used as control. The result showed that the ADC of carotenoids of test diets was higher compared to control. Fish fed astaxanthin diet had higher survival rate (96.67 ± 2.89%), colour measurements of lightness (57.60 ± 7.46%), a*‐values (4.66 ± 1.20), total carotenoids content in skin (33.75 ± 5.02 mg/kg) and muscle (2.16 ± 0.74 mg/kg). Astaxanthin also increased the growth after 14 days (2.00% ± 0.19%/days) but there was no significantly different at the end of experiment. The yellowish‐orange colour performance was more rapidly achieved by fish fed astaxanthin diet after 28 days experimentation. These values suggested that dietary carotenoids were required and astaxanthin diet was superior to other diets for skin pigmentation of Lake Kurumoi rainbowfish.  相似文献

Freshwater fishes contain long chain omega-3 and omega-6 polyunsaturated fatty acids (PUFAs) of highest nutritional value. PUFAs in fish are susceptible to oxidative damage during processing and subsequent storage. Sardines (Rastrineobola argentea) are an important fish species of Lake Victoria, constituting 72.3% of the total landings by weight on the Tanzanian side of the lake. Fatty acid profiles and lipid oxidation status of sun-dried, deep-fried, and smoked sardines were investigated. Lipid oxidation was assessed by peroxide value, thiobarbituric acid reactive substances (TBARS), and free fatty acids. Fatty acids were analyzed by gas chromatography with flame ionization detector. The three omega-3 PUFAs: docosahexaenoic acid (C22:6n-3), docosapentaenoic acid (C22:5n-3), and eicosapentaenoic acid (C20: 5n-3) contributed 57–60, 63, and 38% of PUFAs in sun-dried, smoked, and deep-fried sardines, respectively. Lipid oxidation reactions were more pronounced in sardines dried on sand and rocks, with TBARS values 97.87 and 84.18 µmolMDA/kg, respectively. The polyene index was significantly lower (p < 0.05) in deep-fried sardines, indicating lower retention of PUFAs in the product. Lake Victoria sardines are a rich source of omega-3 PUFAs. PUFAs in sun-dried sardines are prone to oxidative damage. Smoking resulted in relatively higher retention of omega-3 fatty acids in products.  相似文献

The kinetics of astaxanthin degradation and lipid oxidation in shrimp oil from hepatopancreas of Pacific white shrimp (Litopenaeus vannamei) as affected by storage temperature were studied. When shrimp oil was incubated at different temperatures (4, 30, 45 and 60 °C) for 16 h, the rate constants (k) of astaxanthin degradation and lipid oxidation in shrimp oil increased with increasing temperatures (p < 0.05). Thus, astaxanthin degradation and lipid oxidation in shrimp oil were augmented at high temperature. When shrimp oils with different storage conditions (illumination, oxygen availability and temperature) were stored for up to 40 days, astaxanthin contents in all samples decreased throughout storage (p < 0.05). All factors were able to enhance astaxanthin degradation during 40 days of storage. With increasing storage time, the progressive formation of primary and secondary oxidation products were found in all samples as evidenced by the increases in both peroxide values (PV) and thiobarbituric acid reactive substances (TBARS) (p < 0.05). Light, air and temperatures therefore had the marked effect on astaxanthin degradation and lipid oxidation in shrimp oils during the extended storage.  相似文献

ABSTRACT

This study was conducted to evaluate the effects of marshmallow extract (Althaea officinalis L.) administration on blood cells and biochemical parameters of carp liver. A total of 150 carps (Cyprinus carpio, initial body mass of 37.7 ± 4.4 g) were fed diets containing 0.0 (control diet), 2.5, 5, and 10 g marshmallow extract for 60 days. On days 30 and 60 of the experiment blood samples were collected and hematological parameters and liver enzyme activities—aspartate aminotransferase (AST), alanine amino transferase (ALT), lactate dehydrogenase (LDH), and alkaline phosphatase (ALP)—were measured. No significant difference was found (p > .05) in red blood cells (RBC); hemoglobin concentration (Hb); hematocrit (Htc); mean corpuscular volume (MCV); mean corpuscular hemoglobin concentration (MCH); or the percentage of neutrophils, basophils, and eosinophils in fish fed with different concentrations of marshmallow extract on days 30 and 60. However, the white blood cell (WBC) count was increased significantly in the fish fed for 60 days with feed supplemented with 5 g marshmallow extract (p < .05). The MCHC was increased signi?cantly in ?sh fed with diets supplemented with 2.5 g marshmallow extract for 60 days (p < .05). Administration of marshmallow extract (5 g) significantly increased (p < 0.05) lymphocytes on days 30 and 60. However, dietary intake of 10 g marshmallow extract had significantly decreased the monocyte percentage after 60 days. A significant increase was observed in AST, ALT, ALP, and LDH levels in livers of fish fed with extract 10 g, which may be attributed to cytotoxicity. However, marshmallow extract 2.5 and 5 g did not have adverse effects on liver enzymes. These results indicate that preclinical dietary supplementations of 2.5 and 5 g marshmallow extract per kg diet have no side effects on common carp.  相似文献

An eight‐week study was conducted to determine the optimum dietary choline level in juvenile olive flounder, Paralichthys olivaceus. Seven diets were prepared to contain 0, 250, 500, 750, 1,000, 2,000 and 3,000 mg/kg diet. Juveniles (5.9 ± 0.03 g; 5.5 ± 0.4 cm; mean ± SD) were randomly distributed into 21 tanks (25 fish/tank) and fed one of the diets in triplicates. Survival rate of fish fed the diet containing the lowest choline level was significantly lower than those of fish fed the other diets (p < 0.05). Final body weight, weight gain, specific growth rate, feed efficiency and protein efficiency ratio significantly increased with increasing choline levels up to 1,000 mg/kg diet. Whole‐body protein and lipid contents increased in accordance with choline levels up to 750 mg/kg diet, beyond which they plateaued. Liver and muscle lipid contents elevated with increasing choline levels up to 2,000 mg/kg diet. Plasma cholesterol esters, triglycerides, cholesterol and total lipids were significantly influenced by the graded choline levels; however, responses of those indices were not identical. Broken‐line analyses of weight gain and liver choline concentrations responding to the graded choline levels revealed that choline requirements of the juvenile flounder could be between 847 and 1,047 mg/kg diet.  相似文献

ABSTRACT

Lipid oxidation and functional properties were monitored in spray dried fish powder made from saithe (Pollachius virens) by-products. The fresh powder exhibited slight antioxidant activity in a model system of linoleic acid emulsion. The freshly made powder had low lipid extract-ability in polar solvents and over 30% free fatty acids (FFA). Further lipid oxidation took place during storage, independent of storage temperatures. Functional properties measured by color changes, water-binding capacity, apparent viscosity and protein solubilty changed more during storage at 30°C than 0°C.  相似文献

The effect of Ultraviolet radiation type C (UV-C) radiation (0.100 ± 0.010 J/cm2) on shelf life of Arapaima gigas fillets stored at 4 ± 1°C for 18 days was investigated. The samples were analyzed for total aerobic mesophilic bacteria (TAMB) counts; total aerobic psychrotrophic bacteria (TAPB) counts; Enterobacteriaceae; purge loss; pH; lipid oxidation; total volatile bases (TVB-N); ammonia; biogenic amines (BAs); and L*, a*, and b* values. UV-C radiation increased (< 0.05) the generation time of all bacterial groups evaluated, increasing the shelf life by 2 days. UV-C-treated fillets showed lower (< 0.05) L* values, purge loss, pH, TVB-N, ammonia, and BAs levels than their control counterparts throughout the storage period. Moreover, UV-C treatment did not result (P > 0.05) in detrimental effects on lipid oxidation or a* and b* values. UV-C at 0.100 J/cm2 demonstrated a good potential for use in A. gigas fillets and, therefore, it could be applied at industrial scale.  相似文献

Two groups of Anguilla japonica were treated with hormone, one on a weekly basis, the other on a biweekly basis. Intramuscular injection was applied at a dose of 0.75 mg/kg BW carp pituitary extract (CPE) plus 150 IU/kg BW human chorionic gonadotropin (hCG) for female fish, while males received half of this dose. The average total lipid content of the gonads from the weekly treated group, i.e. 20.6 ± 1.2 % for females and 18.0 ± 2.3 % for males, was significantly higher than the biweekly treated group, 16.8 ± 0.7 and 15.5 ± 1.3 %, respectively (p < 0.05). For both muscle and liver, the readings were not significantly different. The gonads from the weekly treated fish had more fatty acids, particularly saturated fatty acids, polyunsaturated fatty acids, highly unsaturated fatty acids, eicosapentaenoic acid (20:5n-3, EPA), docosahexaenoic acid (22:6n-3, DHA) and arachidonic acid (20:4n-6, ARA). Histological examination showed that the ovaries of both the weekly and the biweekly treated fish were mainly at stage IV. However, the weekly treated females had bigger oocyte diameter (722.0 ± 60.9 μm) than the biweekly females (611.6 ± 22.6 μm). These results suggest that CPE and hCG promoted the maturation process for both scheduled induction and that the frequency of hormone injection influenced the biochemical composition of gonads, especially their lipids. Our study describes for the first time the effect of hormone injection frequency on the lipid content and fatty acid composition in the gonads of A. japonica during artificial maturation.  相似文献

ABSTRACT

The objective of the current study was to determine the effects of chitosan (CH) coatings containing Mentha spicata essential oil (MSO; 0.2 and 0.4%) and zinc oxide nanoparticle (ZnO; 0.2 and 0.4%) on chemical (total volatile basic nitrogen (TVB-N), 2-thiobarbituric acid reactive substances (TBARS) and peroxide value (PV)), microbial (total viable count, psychrotrophic count, Pseudomonas spp., and Enterobacteriaceae) and sensory (odor, color, and overall acceptability) properties of raw rainbow trout fillets during 14 days of refrigerated storage. Final microbial population of CH + MSO 0.4% + ZnO 0.4% and CH + MSO 0.4% + ZnO 0.2% retarded approximately 3–5 log CFU/g as compared to control groups (P < 0.05). At the end of storage time in control samples, TVB-N, TBARS, and PV reached 49.3 mg N/100 g, 3.31 mg malonaldehyde/kg, and 2.04 meq peroxide/kg lipid, while the values for the treated samples with MSO (0.2 and 0.4%) in combination with ZnO (0.2 and 0.4%) remained lower than 25 mg N/100 g, 2 mg malonaldehyde/kg, and 1.1 meq peroxide/kg lipid, respectively. The results indicate a potential use of CH coating containing MSO and ZnO as an effective type of antimicrobial packaging to maintain quality of rainbow trout fillets.  相似文献
