ABSTRACT

Experts in the oyster supply chain (farmers, retailers, and gourmet chefs) in The Netherlands have suggested that the European flat oyster (Ostrea edulis) has superior sensory qualities compared to the Pacific cupped oyster (Crassostrea gigas). However, scientific evidence is lacking. The aim of this study was to evaluate consumer preferences for these two oyster species and to determine the sensory properties of both species by consumers. Two-alternative forced choice tests were performed with the oysters involving a panel of 74 naïve consumers. No significant differences in preferences between the oyster species were observed by the consumers. Nine sensory attributes of both oyster species were evaluated. Consumers did not observe significant differences between species in the sensory attributes: overall odor intensity, sea odor, mud odor, sweetness, pungency, and firmness. The Pacific cupped oyster was perceived as significantly saltier and more intense in greenness than the European flat oyster. We concluded that only a few sensory properties of the European flat oyster and the Pacific cupped oyster are perceived as being different by untrained consumers.  相似文献

将270尾均质量约500 g的大西洋鲑随机分为5组,每组2个重复,分别以3次/d、2次/d、1次/d、1次/2 d、1次/3 d的投喂频率饱食投喂56 d,以研究投喂频率对大西洋鲑生长性能、消化率、激素水平和抗氧化指标的影响。试验结果表明,随着投喂频率的降低,大西洋鲑质量增加率和摄食量明显降低,1次/2 d试验组和1次/3 d试验组质量增加率较3次/d试验组分别显著降低50%和75%,摄食量显著降低53%和72%。饵料系数、死亡率、皮质醇和抗氧化指标呈先降后升的趋势;饵料系数和皮质醇2次/d试验组最低,1次/3 d试验组最高,较其他组分别高1.2~2.1倍和0.38~4.78倍。血浆生长激素和甲状腺激素与之呈相反趋势,2次/d试验组各项指标较好;各试验组消化率均呈升高—降低—升高的变化趋势,2次/d和1次/3 d试验组值较高。试验结果表明,500~900 g大西洋鲑的最佳投喂频率为2次/d,在此基础上提高或降低投喂频率均会对大西洋鲑造成应激,对生长和饲料利用率产生负面影响。  相似文献

ABSTRACT

Eleven commercial processing lines for the slaughter of Atlantic salmon were evaluated to investigate the efficiency of the refrigerated seawater live chilling method with respect to stunning fish and reducing body temperature. The method is commonly used in the Norwegian salmon industry to both stun and chill fish before killing. Carbon dioxide gas was added to the live chilling tanks, or in some cases, to a subsequent carbon dioxide stunning tank. Criteria used for evaluation were water quality parameters (dissolved oxygen, carbon dioxide, pH, temperature, total ammonium, ammonia, alkalinity, color, total organic carbon, and ferric ion), fish behavior, white muscle pH, and body and core temperatures. At two processing plants, fillet quality (Roche color, texture, ultimate pH, and water content) was also determined. The results are discussed in terms of fish acclimation temperatures, water quality, welfare, handling stress, chilling efficiency, pre-live chilling factors, refrigerated seawater live chilling process parameters, and fillet quality. Even though the live chilling method can be used to minimize fish handling stress during slaughter and may serve as an efficient chilling method, it was found in most cases that under commercial conditions when large biomasses were slaughtered, both handling stress and chilling efficiency were less than optimal. However, no adverse effects on the fillet texture and color were observed as a result of fish processing.  相似文献

This study investigated potential production reforms of wakame aquaculture in Japan through modification of processing standards. The research focused on the destemming process and examined both the consumers’ and producers’ perspectives. An auction experiment was conducted to measure consumer preferences for wakame with different destemming standards (1, 4, 7, and 10 mm). It was found that, although consumer preferences were diverse, there was no preference between the present (1-mm) and 4-mm standards. In addition, a production experiment was used to measure the amount of labor that could be saved (and thereby the improvement in profit) by relaxing the standard from 1 mm to 4 mm. It was concluded that this new standard would increase productivity by 13.3% without affecting consumer demand, which will improve the structure of this industry for competition against cheaper foreign products.  相似文献

Models used to employ waste dispersion from sea cages rarely take into account the physical characteristics of fish feed and faeces. In this study we determine the hardness, friability, water absorption properties and settling velocity of a range of commercial Atlantic salmon (Salmo salar L.) feeds, under defined laboratory conditions.Hardness of large, high energy pellets ( 8.5 mm) was generally greater than that of 6 mm high energy pellets. With the exception of 100 mm pellets, the friability of large pellets was also greater than that of the smaller pellets. Settling velocities were significantly greater at 20 psu than at 33 psu and significantly higher for most pellet types at 10 °C than at 20 °C. Settling velocities for unsoaked pellets were found to increase with pellet size, from a mean of 5.6 cm s–1 for the smallest pellet (2 mm) to 13.9 cm s–1 for the 10 mm standard (20 to 24% fat) pellets. The smallest feed pellets (2 mm) had the greatest percentage wet weight increase on immersion, irrespective of salinity. Settling velocities of pellets were not significantly affected by immersion time (0–15 min).Given the water depths at fish cage sites and the settling times involved, it is concluded that it is unnecessary to take account of changes in food pellet settling velocity as a result of immersion. Effects of pellet size and salinity on settling velocity are best incorporated into waste dispersion models through the use of 'look-up' tables.  相似文献

Atlantic salmon, Salmo salar L., were fed nine experimental diets containing from 0 to 200 mg astaxanthin per kg?1 for six time periods, ranging from 3 to 21 months, in sea cages at Matre Aquaculture Research Station, Matredal, Norway. The sampled fish had an initial mean weight of 115 g and reached a weight of 3.2 kg at the termination of the experiment. Every third month, 10 fish from each dose and time group were sampled and the astaxanthin concentration in the flesh determined. The amount of astaxanthin in the flesh ranged from 0.7 to 8.9 mg kg?1 at the termination of the experiment. This paper discusses deposition of astaxanthin in the flesh of Atlantic salmon in relation to dietary carotenoid levels in the 0–200 mg kg?1 range and feeding times of 3–21 months. Under the conditions of this experiment, no significant effect on astaxanthin deposition rate could be achieved by increasing the astaxanthin level above 60 mg kg dry feed?1. Atlantic salmon should be fed astaxanthin-supplemented diets during the whole seawater stage in order to obtain maximal astaxanthin level in the flesh.  相似文献

Atlantic salmon, Salmo salar , were fed four levels of dietary fat (256, 308, 346 and 389 g kg−1 of diet) for 138 days, with the purpose of studying quality characteristics in raw and smoked fish fillets. Dietary fat levels up to 346 g kg−1 resulted in increased fat content of the raw fillets. The dietary fat levels had a less systematic effect on perceived fatness of the smoked fillets and caused a trend towards better odour and flavour. The fat content of raw fillets was significantly ( P ≤ 0.05) correlated to lower smoke odour, greater rancid flavour, fatness, and a yellower hue of the smoked fillets. Astaxanthin levels of the raw fillets varied between 6 and 11 mg kg−1 of fillet and were significantly ( P ≤ 0.05) correlated with greater intensity of smoke odour, lower off-odour, and less whiteness, greater colour intensity and a redder hue of the smoked fish. It is proposed that salmon fillets can be graded according to weight, fat content and colour values prior to smoking to obtain more standardized quality characteristics of the final product after processing.  相似文献

Three embryonic stages of Atlantic salmon (Salmo salar L.) were subjected to eight constant incubation temperatures (4, 7, 10, 12, 14, 16, 19 and 22 °C) exceeding the range usually experienced in natural conditions. A change in thermal tolerance during the embryonic and larval development was registered: pre-hatching stages showed an upper thermal limit at about 16 °C, while hatched larvae survived until 22 °C. Temperature significantly affects developmental rate, resulting in a faster development and, consequently, lower yolk weight percentage at higher temperatures. We found positive relationships between incubation temperature and body size (length and weight) in the less developed stages, in which some yolk remained, but size decreased at increasing temperatures when yolk was completely exhausted.  相似文献

Pancreas disease (PD) caused by salmonid alphavirus (SAV) has a significant negative economic impact in the salmonid fish farming industry in northern Europe. Until recently, only SAV subtype 3 was present in Norwegian fish farms. However, in 2011, a marine SAV 2 subtype was detected in a fish farm outside the PD‐endemic zone. This subtype has spread rapidly among fish farms in mid‐Norway. The PD mortality in several farms has been lower than expected, although high mortality has also been reported. In this situation, the industry and the authorities needed scientific‐based information about the virulence of the marine SAV 2 strain in Norway to decide how to handle this new situation. Atlantic salmon post‐smolts were experimentally infected with SAV 2 and SAV 3 strains from six different PD cases in Norway. SAV 3‐infected fish showed higher mortality than SAV 2‐infected fish. Among the SAV 3 isolates, two isolates gave higher mortality than the third one. At the end of the experiment, fish in all SAV‐infected groups had significantly lower weight than the uninfected control fish. This is the first published paper on PD to document that waterborne infection produced significantly higher mortality than intraperitoneal injection.  相似文献

The main objective of this field experiment was to investigate whether ration level affected utilization of carotenoids, macronutrients, and minerals in 1,300 g Atlantic salmon (Salmo salar) during rapid growth. Salmon fed ration levels of either 1.2% or 0.6% of biomass of a commercial diet supplemented with astaxanthin and canthaxanthin (37 and 39 mg kg?1, respectively) in two consecutive 6-day feeding periods had carotenoid digestibility coefficients of 11.8% and 32.1% at the high and low feed rations, respectively. Thus, low carotenoid digestibility, but good macronutrient digestibility, may explain poor pigmentation and good feed conversion in rapidly growing salmon. Spinal deformities in Atlantic salmon, Salmo salar L., have been described as a disease of multifactorial origin for which vaccines and time of vaccination have been suggested as risk factors. A vaccine efficacy trial where spinal deformity became evident was continued by the observational study reported here. In the preharvest part of the study 17 months post-sea transfer, there was a prevalence of 11.3% spinal deformity, with deformities present only in one vaccine group indicating a strong vaccine involvement. At slaughter, the prevalence of spinal deformities was 11.7%, and deformed fish had only 62% of normal slaughter weight. Visual analogue scales (VAS) were used for continuous recordings of vaccine-induced abdominal lesions and deformity. A logistic regression model associating presence of spinal deformity with markers of abdominal lesions was developed. The odds ratio for spinal deformity was 5.7 (95% CI: 3.4–9.4) for each unit increase in adhesion score (0–6) and 4.9 (2.9–3.4) for each unit increase in melanin on abdominal organs (0–3). Lesions in the dorsal caudal part of the abdomen gave an odds ratio for spinal deformity of 2.2.  相似文献

Piscine orthoreovirus genotype 1 (PRV‐1) is widespread in farmed Atlantic salmon (Salmo salar L.) populations in northern Europe, Canada and Chile. PRV‐1 occurs in wild fish in Norway and Canada; however, little information of its geographical distribution in wild populations is currently available, and the effect of PRV‐1 infection in wild populations is currently unknown. In this study, we present the findings of a survey conducted on 1,130 wild salmonids sampled in Denmark, Sweden, Ireland, Faroe Islands, France, Belgium and Greenland between 2008 and 2017. PRV‐1 is reported for the first time in wild salmonids in Denmark, Sweden, Faroe Island and Ireland. The annual PRV‐1 prevalence ranged from 0% in France, Belgium and Greenland to 43% in Faroe Islands. In total, 66 samples tested positive for PRV‐1, including Atlantic salmon broodfish returning to spawn and Atlantic salmon collected at the feeding ground north of Faroe Islands. The phylogenetic analysis of S1 sequences of the PRV‐1 isolates obtained in this survey did not show systematic geographical distribution. This study sheds light on the spread and genetic diversity of the virus identified in populations of free‐living fish and provides rationale for screening wild broodfish used in restocking programmes.  相似文献

Many studies have evaluated the adequacy of alternate ingredient diets for Atlantic salmon, Salmo salar, mainly with focus on fish performance and health; however, comprehensive analysis of fillet quality is lacking, particularly for salmon fed these diets in recirculation aquaculture systems (RAS). To this end, a study was conducted comparing fillet quality and processing attributes of postsmolt Atlantic salmon fed a fishmeal‐free diet (FMF) versus a standard fishmeal‐based diet, in replicate RAS. Mean weight of Atlantic salmon fed both diets was 1.72 kg following the 6‐mo trial and survival was >99%. Diet did not affect (P > 0.05) processing and fillet yields, whole‐body proximate composition(fat, moisture, protein), fillet proximate composition, cook yield, fillet texture, color, or omega‐3 fatty acid fillet content, including eicosapentaenoic acid and docosahexaenoic acid levels. Whole‐body ash content was greater in salmon fed the FMF diet. The FMF diet resulted in a wild fish‐in to farmed fish‐out ratio of 0:1 per Monterey Bay Aquarium's Seafood Watch criteria due to its fishmeal‐free status and use of lipids from fishery byproduct. Overall, fillet quality and processing attributes were generally unaffected when feeding a diet devoid of fishmeal to postsmolt Atlantic salmon cultured in RAS. Use of crystalline methionine to optimize amino acid profiles in feeds for Atlantic salmon (Salmo salar L.) was studied in three experiments. A basic experimental diet with 25% of dietary protein from marine origin and the remaining 75% from soya protein concentrate was used either with or without supplementation of L ‐methionine, D ‐methionine or DL ‐methionine. A fishmeal‐based diet was used as control. In experiment 1, growth performance of 100 g salmon in seawater was improved by supplementation with the different methionine products. Growth performance was, however, inferior to that of fish fed the control. Feed conversion ratios (FCR) exhibited similar trends to specific growth rate (SGR) with methionine supplementation, but again not as the control. Protein retention, measured as productive protein value (PPV), was significantly better in the control and D ‐methionine groups as compared with either L ‐methionine or the nonsupplemented group. These trends were confirmed in experiment 2, using fish of the same size, where an absorption and digestibility study of D ‐ and L ‐methionine clearly indicated that D ‐methionine was absorbed as well as L ‐methionine. Results indicated that racemization of D ‐ into L ‐methionine occurs in liver and kidney in Atlantic salmon. Ornithine decarboxylase (ODC) activity in liver was significantly affected by dietary treatment and there was a good correlation with growth and feed utilization data. In experiment 3, a growth study with large salmon (1 kg) was performed using increasing supplementation of DL ‐methionine to the basic diet. Results indicated a methionine requirement for maximum growth of 9.2 g kg–1 feed dry matter (DM) kg–1 growth. This is slightly higher than that reported in the literature. The present study clearly shows that optimizing the amino acid profile by inclusion of a single crystalline amino acid (crystalline methionine) does not give the same protein utilization as that of a diet in which the amino acids are mainly protein bound. D ‐methionine was found to result in better protein utilization than L ‐methionine when measured as PPV.  相似文献

The effect of treating immature, masculinized, Atlantic salmon, Salmo salar, with testosterone or [Des-Gly10] D-Ala6-LHRH ethylamide (LHRHa), either alone or in combination, over an 81 day period was evaluated as a method for accelerating maturation. Two sustained-release LHRHa implants were compared: ethylene vinyl acetate copolymer (EVAC) and silicone elastomer. Animals primed with testosterone did not express advanced spermatogenesis when compared against control salmon (p > 0.05). However, fish primed with testosterone, followed by sham, LHRHa EVAC, or LHRHa silicone elastomer implants expressed increased (p < 0.05) gonadosomatic index (GSI) when compared with values derived from day 0 of the study. Neither spermatogenesis nor GSI were affected when salmon were treated with LHRHa alone, irrespective of the vehicle employed. In contrast, spermatogenesis was significantly (p < 0.05) advanced in testosterone-treated fish, which were administered LHRHa by EVAC, when compared with groups that received individual treatment only. © Rapid Science Ltd. 1998  相似文献

The opportunistic examination of factors associated with an outbreak of piscirickettsiosis (SRS) is described in Atlantic salmon Salmo salar post-smolts held in an open netpen or in tanks supplied with raw sea water at a research aquarium in western Canada. During the outbreak, seawater temperature was significantly higher and salinity significantly lower in the netpen compared with the tanks. Mortality in the netpen began approximately 3 weeks prior to that in the tanks, and cumulative mortality in the netpen (34%) was significantly higher than in the tanks (12%). Piscirickettsia salmonis was confirmed by qPCR in tissues from moribund and dead fish and from colonies grown on enriched blood agar medium. Neither P. salmonis nor SRS were observed in salmon held concurrently in UV-irradiated sea water. The elevated mortality was curtailed by treatment with oxytetracycline. These observations further indicate warmer, less saline and periodically hypoxic seawater are risk factors for SRS. UV irradiation of sea water is shown to be a tool for SRS management in fish-holding facilities.  相似文献

The distribution of infectious salmon anaemia (ISA) was examined among 80 cages from three Atlantic salmon grow-out farms in Maine, USA that were stocked with smolts from a single hatchery. Cage-level disease was broadly defined as one or more moribund fish testing positive for infectious salmon anaemia virus (ISAV) by RT-PCR and a second confirmatory test (IFAT, culture or genotype sequence). Spatio-temporal and cage-level risks were explored using logistic regression and survival analysis. Non-spatial risk factors associated with ISA, or shortened survival time to disease, included increased predation, trucking company choice for smolt transfers, a finely-sedimented benthic substrate, and smaller average size of smolts at stocking. Univariable analysis identified the time-dependent spatial factor 'adjacency to newly infected cages' to be predictive of new infection in neighbouring cages 11-12 weeks later. However, none of the spatial factors, or their lags retained relevance in multiple-variable models. The results suggest a diffuse distribution of virus exposure throughout infected sites, with host-susceptibility factors probably influencing disease manifestation in individual cages. The narrow focus of the current study may limit application of the findings to other sites and year-classes. However, these data support the relevance of husbandry efforts to optimize fish health in regions affected by ISAV.  相似文献

Abstract At the River Bush salmon station in Northern Ireland, a genetically marked strain of Atlantic salmon, Salmo salar L., was established, with a low frequency (0.194) of a glucose-6-phosphate isomerase genotype (GPI-3* 100/93). As part of a salmon enhancement programme, 43500 of these fish were stocked as swim-up fry into a tributary of the nearby Margy River in Spring 1990, following a baseline genetic survey which indicated an absence of the GPI–3*93 allele in the wild population. This survey also indicated a significant frequency difference of a malate dehydrogenase allele (MDH-B1,2*85) present both in the stocked and wild fish. A post-stocking electrofishing survey in summer 1990 indicated higher summerling densities in stocked sections compared with unstocked (control) sections, with an estimated survival of stocked fry to summerling ranging from 24% to 29%. Genetic analysis based on GPI-3*100/93 and MDH-B1,2*100/85 genotypes provided similar estimates of the overall contribution of stocked fish at 59.8% to 61.9%, respectively, although there was a disparity between markers in estimated contributions to stocked and control sections. A further genetic survey in 1991 estimated that 32.2% (MDH) to 69.1% (GPI) of the 1 + parr population consisted of stocked fish, the MDH-based estimate having declined greatly between summerling and 1 + parr stages. Possible reasons for the disparity of marker results are outlined, and the implications for use of low-frequency genetic marking discussed.  相似文献

Atlantic salmon were fed extruded diets based on either 100% fish oil (FO) or 100% vegetable oil blend (VO) substitution for 22 months. A total of seven distinct feeding periods were studied that incorporated higher levels of dietary oil inclusion, and larger pellet size as fish size increased. Whole fish levels of polychlorinated dibenzo‐p‐dioxins and dibenzofurans (PCDD/F) and dioxin‐like PCBs (DLPCB) were analysed at the beginning and end of each of the seven feeding periods. The PCDD/F and DLPCB concentrations in the FO diets increased from 2.43 to 4.74 ng WHO‐TEQ kg?1 (TEQ, toxic equivalents), while VO diets decreased from 1.07 to 0.33 WHO‐TEQ kg?1 as oil inclusion increased. Partial least square regression analyses identified feed concentration, growth rate and feed utilization, but not variations in lipid content, as factors significantly affecting fish PCDD/F and DLPCB levels. Accumulation efficiencies for DLPCB (740 ± 90 g kg?1) were significantly (P < 0.01) higher than for PCDD/F (430 ± 60 g kg?1), explaining the increasing dominance of DLPCB levels over PCDD/F levels in whole fish (DLPCB : PCDD/F ratio of 2.4 ± 0.1 for both VO and FO fed fish) compared with feed (DLPCB : PCDD/F ratio of 1.5 and 0.34 for FO and VO feed respectively). Vegetable oil substitution significantly reduced the level of PCDD/F and DLPCB (eightfold and twelve‐fold, respectively) in the fillet of a 2 kg salmon, but, also negatively affected beneficial health components such as fillet n‐3/n‐6 fatty acid ratio.  相似文献
