The aims of this study were to estimate genetic parameters of image analysis traits of cross-sectioned dry-cured hams and carcass weight (CW) and to investigate effects of some nongenetic sources of variation on these traits. Computer image analysis (CIA) had been carried out for digital images of the cross-section of 1,319 San Daniele dry-cured hams. The cross-sectional area (SA, cm(2)); the average thickness of subcutaneous fat (FT, cm); and the proportions of lean (LA, %), fat-eye (FEA, %), and subcutaneous fat area (SCF, %) to SA, and of biceps femoris (BFA, %) and semitendinosus muscle area (STA, %) to LA were recorded. Bivariate analyses were carried out for pairs of traits for estimation of genetic parameters using Bayesian methodology and linear models. Linear models included the nongenetic effects of slaughter groups and sex and the additive genetic effects of pigs and their ancestors (1,888 animals). Variation of FEA was nearly 4-fold that of SA and LA. Variation of CIA traits due to sex effect was not large, whereas slaughter group effects were relevant sources of variation for all traits. For all traits, with the exception of FEA, the posterior probability for the true heritability being greater than 0.1, was greater than 0.95. Point estimates of heritabilities for FT and SCF were 0.42 and 0.51, respectively. Heritability estimates for FEA, LA, BFA, and STA were 0.13, 0.44, 0.44, and 0.36, respectively. The genetic correlations between CW and CIA traits were positive and large for SA (0.86), positive and moderate for FT, FEA, and STA (0.47, 0.40, and 0.45, respectively) and negative with LA (-0.28). Although FEA, FT, and SCF were all measures of the extent of fat deposition in the ham, the genetic correlations between FT or SCF and FEA were very low. A very large estimate (0.74) was obtained for the genetic relationship between SA and FEA, suggesting that reduction of ham roundness through selective breeding would be beneficial for decreasing FEA. On the basis of the estimated parameters, genetic selection is expected to be effective in changing size of fatty and lean areas of the cross-section of dry-cured hams. Causes related to the abnormal development of the fat-eye depot remain unknown, but this study provided evidence that influences of polygenic effects on phenotypic variation of FEA are limited. 相似文献

This study was designed to evaluate Duroc (DU) crossing for Carso dry-cured ham production. One hundred fifty-four pigs (81 females and 73 castrates) of four different genotypes, pure Landrace pigs (LAN), offspring of LAN females crossed with Large White (LW) males (LWxLAN), offspring of LAN females crossed with DU males (DUxLAN), and offspring of LWxLAN females crossed with DU males (DUx[LWxLAN]), were chosen in the weight range of 105 to 120 kg (112.7 +/- 0.4 kg). Raw material quality was evaluated for ham fatness (intra- and intermuscular and subcutaneous) and meat quality (pH, color, water-holding capacity) of longissimus dorsi, biceps femoris, and semimembranosus muscles. Ham weight losses were recorded at different stages of processing. The biceps femoris and semimembranosus muscles were analyzed for chemical composition before (lipid, moisture, total nitrogen, nonprotein nitrogen) and after (moisture, salt, total nitrogen, nonprotein nitrogen) processing. Chemical and sensory analyses were performed on 96 dry hams (12 castrates and 12 females per genotype). Biceps femoris and semimembranosus muscles were evaluated for color, saltiness, aroma, and texture. Pigs of the four genotypes had similar ham fatness as estimated by subcutaneous fat thickness. Duroc crosses exhibited higher intramuscular fat content, marbling, and intermuscular fat. Crossing with DU resulted in lower weight losses during ham processing. Castrates were fatter and had more intra- and intermuscular fat and lower ham processing weight losses than females. A strong negative relationship between ham fatness and ham processing losses was observed. Chemical and sensory traits of dry ham muscles were little affected by DU crossing. Lower salt content of biceps femoris was found in DU crosses. Dry hams from female pigs had higher total and nonprotein nitrogen, but drier, firmer texture and higher resistance to cutting force compared to dry hams from castrated pigs. Crossing with DU demonstrated some disadvantages (more intermuscular fat, more slice visible fat) and advantages (lower weight loss and salt intake) for the quality of dry-cured ham. 相似文献

Effect of conjugated linoleic acid on meat quality,lipid metabolism,and sensory characteristics of dry-cured hams from heavy pigs 总被引:8,自引:0,他引:8
We investigated conjugated linoleic acid (CLA) supplementation administered to heavy pigs, assessing carcass characteristics, meat quality, and sensory characteristics of dry-cured (Parma) ham. Thirty-six pigs, averaging 97 kg BW, were assigned randomly to three feeding groups in which diets were supplemented with either 0, 0.25, or 0.5% (as-fed basis) of a CLA preparation containing 65% CLA isomers. All pigs were slaughtered at 172 kg BW. No (P > 0.05) differences were observed in dressing percentage, loin and ham weight, or pH and color of longissimus and semimembranosus muscle. Tenth-rib backfat thickness tended to be lower (P < 0.10) in carcasses from CLA-fed pigs. The oxidative stability of longissimus muscle was greater (P < 0.05) in pigs fed CLA than control, but only at the longer (300 min) oxidation time. Acetyl-CoA carboxylase activity in adipose tissue of CLA-fed pigs was less (P < 0.05) than that of pigs fed diets devoid of supplemental CLA. Composition of ham fat was markedly affected (P < 0.01) by dietary CLA, with higher saturated fatty acids, lower monounsaturated fatty acids, and higher CLA in the fat of CLA-fed pigs regardless of supplementation level. Although melting quality was improved (P < 0.05), most sensory characteristics and the chemical composition of dry-cured hams were not (P > 0.05) affected by incorporation of CLA. Results indicated that dietary CLA alters lipid metabolism, producing lower concentrations of monounsaturated fatty acids and increased concentrations of CLA isomers in the fat of heavy pigs. Moreover, supplementing diets with CLA produced only minimal improvements in Parma ham sensory traits and had no appreciable effects on fresh pork quality. 相似文献

Computer image analysis of intramuscular adipocytes and marbling in the longissimus muscle of cattle
The deposition of fat in muscle, recognized by the consumer as marbling, is an important meat quality trait. The objective of the study was to provide additional insights into the quantitative extent of marbling by means of computer image analysis. Fifty-one F(2) generation German Holstein and Charolais crossbreed cattle, 18 mo of age, were used to determine relationships among marbling traits, adipocyte size, and the amount of adipose tissue in different depots. Differences were recorded among the size of i.m. adipocytes in different groups of marbling flecks, divided according to the location in the muscle cross-section and to the size of the marbling flecks. The results showed positive correlation between i.m. adipocyte size and the weight of s.c. fat, intestinal fat, omental fat, and perirenal fat (r = 0.50, 0.61, 0.70, and 0.63, respectively, P < 0.001). The i.m. adipocyte size was correlated with i.m. fat content, number of marbling flecks, proportion of marbling fleck area, and total length of marbling flecks (r = 0.71, 0.44, 0.62, and 0.55, respectively, P < 0.01). The number of marbling flecks was also correlated with i.m. fat content, proportion of marbling fleck area, and total length of marbling flecks (r = 0.58, 0.62, and 0.91, P < 0.01, respectively). The ventral marbling flecks had a 5-fold larger fleck area, 4-fold more adipocytes, and larger adipocytes (P < 0.001). Larger marbling flecks contained larger adipocytes (P < 0.001). Moreover, compared with the small marbling flecks, there was a 48-fold larger fleck area and 26-fold more adipocytes in the large marbling flecks. The results indicate that i.m. fat deposition increases concurrently with the other fat depots but is still independent. Furthermore, the i.m. fat is preferentially deposited in the ventral area of LM. Although the i.m. adipocyte size has an important effect on the traits of marbling flecks, cell number plays a greater role in i.m. fat deposition than cell size. 相似文献

The percentage of MUFA to total fatty acids of beef differs among intermuscular, intramuscular, and subcutaneous fat even within an individual cow. Our objective was to investigate the variation of the percentage of MUFA by geometric and sectional change of marbling flecks in rib eye. Longissimus muscles of 8 Japanese Black steers from a common sire and a common maternal grand sire were used. Three slices (1 from rib roast and 2 from sirloin) from each animal were selected for analysis. Five marbling flecks from each slice were randomly taken to obtain the percentage of MUFA using gas chromatography. High-quality digital images of all slices were taken with a mirror-type camera. The area and location of each marbling fleck were calculated by image analysis. The marbling flecks were categorized by area [small <0.4 cm(2), medium 0.4 to 2.0 cm(2), large >2.0 cm(2)], by location (dorsal and ventral), and by slice section through the LM (front, middle, and back). The effects of classification according to the area, location, and slice section were statistically significant (P < 0.05) for the percentage of MUFA. Least squares means of the percentage of MUFA for marbling flecks of sizes small, medium, and large were 56.8, 58.4, and 60.2%, respectively, indicating that larger marbling flecks had greater MUFA (P < 0.05). Those of dorsal, ventral, front, middle, and back were 59.1, 57.8, 55.4, 59.9, and 60.1%, respectively. The percentages of MUFA of the marbling flecks located in the dorsal part were greater than those in the ventral part (P < 0.05). The percentages of MUFA from middle and back were greater than those from front (P < 0.01). We suggest that the area, location, and slice section of marbling would be the determining factors for the percentage of MUFA of marbling. 相似文献

The aim of this study was to investigate piglet preweaning survival and its relationship with a total merit index (TMI) used for selection of Large White terminal boars for dry-cured ham production. Data on 13,924 crossbred piglets (1,347 litters), originated by 189 Large White boars and 328 Large White-derived crossbred sows, were analyzed under a frailty proportional hazards model, assuming different baseline hazard functions and including sire and nursed litter as random effects. Estimated hazard ratios (HR) indicated that sex, cross-fostering, year-month of birth, parity of the nurse sow, size of the nursed litter, and class of TMI were significant effects for piglet preweaning survival. Female piglets had less risk of dying than males (HR = 0.81), as well as cross-fostered piglets (HR = 0.60). Survival increased when piglets were nursed by sows of third (HR = 0.85), fourth (HR = 0.76), and fifth (HR = 0.79) parity in comparison with first and second parity sows. Piglets of small (HR = 3.90) or very large litters (HR >1.60) had less chance of surviving in comparison with litters of intermediate size. Class of TMI exhibited an unfavorable relationship with survival (HR = 1.20 for the TMI top class). The modal estimates of sire variance under different baseline hazard functions were 0.06, whereas the variance for the nursed litter was close to 0.7. The estimate of the nursed litter effect variance was greater than that of the sire, which shows the importance of the common environment generated by the nurse sow. Relationships between sire rankings obtained from different survival models were high. The heritability estimate in equivalent scale was low and reached a value of 0.03. Nevertheless, the exploitable genetic variation for this trait justifies the inclusion of piglet preweaning survival in the current breeding program for selection of Large White terminal boars for dry-cured ham production. 相似文献

ABSTRACT1. Reducing excessive chicken body fat deposition is a main goal of the poultry industry. Preadipocytes are important in adipose tissue growth and development.2. To discover proteins related to chicken fat deposition, two-dimensional fluorescence difference gel electrophoresis (2-D DIGE) was used to identify differentially expressed proteins in preadipocytes derived from Northeast Agricultural University broiler lines divergently selected for abdominal fat content (NEAUHLF).3. A total of 46 differentially expressed protein spots were found in the preadipocytes between fat and lean broilers. Matrix-assisted laser desorption-ionisation time-of-flight mass spectrometry (MALDI-TOF-MS) analysis showed the protein spots corresponded to 33 different proteins. The proteins were mainly related to biological oxidation, cell proliferation, cytoskeleton, lipid metabolism, molecular chaperone, protein synthesis and signal transduction.4. A study of the effects of conjugated linoleic acid (CLA) on the belly firmness and fatty acid composition of genetically lean pigs was conducted. From 75 to 120 kg live weight, 30 gilts were allowed ad libitum access to a corn-soybean meal diet supplemented with either 1% CLA oil (CLA-60) or 1% sunflower oil (SFO) or were fed the sunflower oil-supplemented diet restricted to the amount consumed by pigs fed the CLA-60 diet (RSFO). Conjugated linoleic acid oil consists of 60% positional and geometric isomers of CLA. Pigs fed SFO exhibited higher average daily gains (0.98 vs 0.80 kg/d, P < 0.01) than RSFO-fed pigs, but there were no effects of dietary treatment on feed intake or feed efficiency. Dietary treatment did not affect (P > 0.05) backfat thickness or longissimus muscle area. Bellies of gilts fed CLA-60 were subjectively evaluated to be firmer (2.91 vs 2.43 or 2.07 +/- 0.13, P < 0.01) than those of SFO- or RSFO-fed gilts, respectively. The longissimus muscle of gilts fed CLA-60 contained more saturated fatty acids (39.77 vs. 36.04 or 36.73 +/- 0.74%, P < 0.001) and less unsaturated fatty acids (60.23 vs 63.96 or 63.27 +/- 0.74%, P < 0.001) than that of gilts fed SFO or RSFO, respectively. The belly fat of gilts fed CLA-60 contained more saturated fatty acids (44.45 vs. 37.50 or 36.60 +/- 0.46%, P < 0.001) and less unsaturated fatty acids (54.78 vs. 61.75 or 62.47 +/- 0.46%, P < 0.001), resulting in lower iodine values (57.69 vs 66.37 or 65.62 +/- 0.91, P < 0.001) than that of gilts fed SFO or RSFO, respectively. Gilts fed CLA-60 accumulated more CLA in the longissimus muscle (0.55 vs 0.09 or 0.09 +/- 0.03%, P < 0.01) and belly fat (1.56 vs. 0.13 or 0.13 +/- 0.15%, P < 0.001) than did gilts fed SFO or RSFO, respectively. Dietary treatment did not affect (P > 0.05) 24-h pH, drip loss or subjective quality evaluations of the longissimus muscle. The effect of supplemental CLA to improve belly firmness is of practical significance and may provide a nutritional solution to carcass fat and belly firmness problems, thereby enhancing the overall value of extremely lean carcasses. 相似文献

When the ratio of lean to fat deposition is improved, so is feed conversion efficiency. Net benefits may include lower production costs, better product quality, less excretion of nitrogenous wastes into the environment, decreased grazing pressure on fragile landscapes, and reduced pressure on world feed supplies. However, finding a way to achieve these goals that is reliable, affordable, and acceptable to the majority of consumers has proved to be a major challenge. Since the European Union banned hormonal growth promoters (HGPs) 15 years ago, countries such as Australia and the United States have licensed new products for livestock production, including bovine growth hormone (GH), porcine and equine GH, and the beta-agonist ractopamine. There has also been considerable research into refining these products, as well as developing new technologies. Opportunities to improve beta-agonists include lessening their effects on meat toughness, reducing adverse effects on treated animals, and prolonging their duration of action. In the last regard, the combined use of a beta-agonist with GH, which upregulates beta-adrenoceptors, can produce an outstanding improvement in carcass composition and feed efficiency. Insulin-like growth factor-1 (IGF-1) mediates many of the actions of GH, but has proved to be of more use as a growth reporter/selection marker in pigs, than as a viable treatment. However, a niche for this product could exist in the manipulation of neonatal growth, causing a life-long change in lean:fat ratio. Another significant advance in endocrinology is the discovery of hormones secreted by muscle and fat cells, that regulate feed intake, energy metabolism, and body composition. Leptin, adiponectin and myostatin were discovered through the study of genetically obese, or double-muscled animals. Through genetic manipulation, there is potential to exploit these findings in a range of livestock species, although the production of transgenic animals is still hampered by the poor level of control over gene expression, and faces an uphill battle over consumer acceptance. There are several alternatives to HGPs and transgenics, that are more likely to gain world-wide acceptance. Genetic selection can be enhanced by using markers for polymorphic genes that control fat and lean, such as thyroglobulin, or the callipyge gene. Feed additives of natural origin, such as betaine, chromium and conjugated linoleic acid, can improve the fat:lean ratio under specific circumstances. Additionally, 'production vaccines' have been developed, which alter the neuro-endocrine system by causing an auto-immune response. Thus, antibodies have been used to neutralise growth-limiting factors, prolong the half-life of anabolic hormones, or activate hormone receptors directly. Unfortunately, none of these technologies is sufficiently well advanced yet to rival the use of exogenous HGPs in terms of efficacy and reliability. Therefore, further research is needed to find ways to control fat and lean deposition with due consideration of industry needs, animal welfare and consumer requirements. 相似文献

Lean growth rate (LGR) in pigs is a nonlinear biological function of growth rate and lean quantity. According to animal breeding theory, genetic progress for LGR is maximized with selection on a linear index of its component traits, but selection on direct EBV for LGR is also common. In this study, the performance of five criteria for selection on estimated LGR in pigs was evaluated through simulation over five generations: linear indexes of multiple-trait EBV of component traits with or without updating index weights in each generation; a nonlinear index of multiple-trait EBV of component traits; and direct selection on EBV for LGR from a single-trait model or a multiple-trait model that included LGR and component traits. The nonlinear index yielded the highest response in LGR in Generation 5, but the linear index with updating performed almost as well. Not updating weights for the linear index reduced response in LGR by 1.1% in Generation 5 (P < 0.05). Direct selection on single-trait EBV for LGR yielded the lowest responses in Generation 5. Direct selection on EBV for LGR from a multiple-trait animal model yielded a 3.1% greater response in LGR in Generation 5 than direct selection on EBV for LGR based on a single-trait animal model (P < 0.05), but yielded a 1.9% lower response than the nonlinear index. Although differences in response in LGR were limited, alternative selection criteria resulted in substantially different responses in component traits. Linear index selection for LGR placed more emphasis on lean quantity, whereas direct selection for LGR emphasized growth rate. Based on the relative changes in the responses in LGR, selection for estimated LGR based on a nonlinear index or a linear index with updating is recommended for use in the swine industry. 相似文献

Effect of dietary energy supply and fat source on the fatty acid pattern of adipose and lean tissues and lipogenesis in the pig 总被引:1,自引:0,他引:1
Forty Large White barrows were used to determine whether the effects of dietary fat source (tallow or soy oil at 5% of the diet) on lipogenesis and fatty acid profile of porcine adipose and lean tissue were dependent on dietary digestible energy density (8.8 vs 14.0 MJ DE/kg). Barrows were allocated to one of four groups and offered a fixed amount of feed (170 g x BW0.569/d) from 27 to 105 kg BW. The fatty acid composition of the backfat layers (BF), omental fat (OF), and i.m. adipose tissue of longissimus muscle as well as the activity of lipogenic enzymes of the adipose tissues were determined. Growth performance and carcass characteristics were affected by the dietary energy level (P < 0.01) but not by fat source. In accordance with the lower carcass fat deposition, the activity of lipogenic enzymes were decreased in the low-energy groups (P < 0.01). Within dietary energy level, inclusion of soy oil resulted in increased proportion of PUFA that was compensated by decreased saturated (SFA) and monounsaturated fatty acid (MUFA) proportions (P < 0.01). The SFA changes accounted for 23 (BF) and 24% (OF) of the PUFA changes in the high-energy and 31 (BF) and 39% (OF) in the low-energy diets. The differences in the fatty acid proportions between the soy oil and tallow group were more pronounced in the low-energy groups (fat source x energy density interactions: P < 0.01). Pigs fed the soy oil, low-energy diet had decreased SFA (BF: 28%; OF: 30%) and MUFA (BF: 13%; OF: 19%) concentration, whereas PUFA concentration was increased (BF: 59%; OF: 88%) compared with pigs fed the soy oil, high-energy diet. However, in the tallow groups, pigs fed the low-energy diets had slightly decreased SFA (BF: 14%; OF: 12%) and relatively constant MUFA (BF: 3%; OF: 1%), whereas PUFA concentration increased (BF: 39%; OF: 62%) relative to pigs fed the tallow high-energy diet. Lipid content of the i.m. adipose tissue was decreased in the low-energy groups (P < 0.05). Contrary to what was observed in the adipose tissues, increased PUFA concentration in the neutral and polar lipid fractions of the longissimus muscle was predominantly compensated by reduced MUFA deposition. In the polar lipid fraction, the proportions of both SFA and MUFA were decreased by the low-energy diet. Thus, the extent to which tissue concentration of fatty acids are altered from dietary fats differing in the degree of unsaturation depends on the dietary energy level. 相似文献

Improvement in feed efficiency when selection is based on gain:feed ratio has often been accompanied by a reduction in feed intake. The following four criteria were used in mass selection for improved lean gain efficiency in mice with an objective of evaluating changes in lean gain and intake: 1) gain deviation, animals selected had the greatest gain in fat-free mass (FFM) after adjustment to a constant intake; 2) intake deviation, mice selected had the least feed intake after adjustment to a constant gain in FFM; 3) intrinsic efficiency, similar to the second criterion except that adjustment was also made for average weight maintained during the period; and 4) a positive control that used the ratio of gain in FFM: feed intake as the selection criterion. A fifth line, in which a male and a female were selected at random from each litter, served as a negative control. Experimental animals were outbred mice of the CF1 strain. Two replicates of the five lines were included in the study. Twelve males and females were pair-mated within each line-replicate combination each generation. Feed disappearance was measured from 25 to 42 d. Mice were scanned to obtain an electrical conductivity measurement for prediction of FFM. After six generations of selection, realized heritabilities for gain:feed, gain deviation, intake deviation, and intrinsic efficiency were .00 +/- .04, .04 +/- .29, .35 +/- .08, and .28 +/- .06, respectively. There were no differences among lines for gain:feed ratio. The correlated response in feed intake reduction was significant in the intake deviation and intrinsic efficiency lines (-.17 +/- .05 and -.21 +/- .04 g x d(-1) x generation(-1), respectively). The realized genetic correlations between the ratio and gain deviation, intake deviation, and intrinsic efficiency were .83 +/- .15, .01 +/- .04, and .21 +/- .12, respectively. A unique line of Duroc pigs was established by intensive selection for increased lean growth efficiency. The objective of this study was to determine the influence of this selection strategy on fresh pork quality traits. Two lines of Duroc pigs originating from the same foundation herd were evaluated. One line was selected for lean growth efficiency over five generations (Select line), and the other was a contemporary line maintained from the foundation herd (Control line). All pigs in the trial tested negative for the halothane gene. Selection for lean growth efficiency resulted in improved lean gain, carcass lean, increased loin eye area, and less overall carcass fat. The Select line had significantly lower subjective firmness scores in longissimus and significantly greater amounts of moisture and protein lost as measurable drip in longissimus, semimembranosus, and semitendinosus. There were no differences in subjective color scores or in Hunter L, a, and b values between lines. No selection line differences were observed in glycolytic potential or ultimate pH. The longissimus and the semitendinosus exhibited significantly lower early postmortem pH values in Select line pigs. Warner-Bratzler shear values were higher for Select line longissimus chops. Degradation of troponin-T was decreased in the Select line longissimus samples. This result suggests that reduced degradation of myofibrillar proteins may be associated with increased moisture and protein lost during storage. This research points out that elimination of the halothane gene will solve some but not all of the genetically influenced pork quality problems faced by the industry. The Select line of pigs appears to be more prone to producing pork that is soft and exudative, indicating a link between soft and exudative pork and some genetic selection strategies may exist.
