Comparisons were made of the behaviour, physiology and meat quality of 24-week-old male veal calves (mean live weight 234 kg) that were slaughtered either at the veal unit (the control group) or following 3 h transportation at space allowances of either 0.7 or 0.95 m2 calf−1 and 1.5 h of lairage. Compared with nontransported calves, transported calves had a greater heart rate during the journey and during lairage; greater plasma cortisol concentration immediately after the journey, but not after 1.5 h of lairage; and greater plasma creatine kinase activity immediately after the journey and after 1.5 h of lairage. The transported calves did not lie down during the journey. There was no effect of space allowance on either the heart rate or frequency of potentially traumatic events during the journey or the plasma cortisol concentration and plasma creatine kinase activity sampled after the journey. There was no effect of transport on either carcase bruising or muscle pH 24 h after slaughter. Although compared with ‘on-farm’ slaughter, the transport and handling associated with the journey to the slaughterhouse were stressful to the calves; there were no adverse effects of transport on either carcase bruising or meat quality.  相似文献

Steers representative of the most common type, weight and conformation slaughtered in Chile were transported for either three or 16 hours and held in lairage for three, six, 12 or 24 hours. Measurements of liveweight, carcase weight, and the postmortem pH and colour of muscle were made to assess the economic and welfare effects of the different transport and lairage times. Compared with the short journey, the longer journey was associated with a mean (se) reduction in liveweight of 8.5 (2.8) kg, and there was a further decrease of 0.42 (0.18) kg for every hour that the animals were kept in lairage after 16 hours of transport, an increase in final muscle pH, a decrease in muscle luminosity and an increase in the proportion of carcases downgraded because they were classified as 'dark cutting The carcase weights also tended to be lower after the longer journey and after longer periods in lairage.  相似文献

Friesian steers were exposed to natural trichostrongyle infection and left untreated (controls) or treated with either a morantel sustained release bolus or fenbendazole at two week intervals (clean) in each of two consecutive grazing seasons. In the second grazing season the mean liveweight gains of the clean, morantel treated and control groups of cattle over 152 days were 105, 131 and 109 kg respectively (morantel treated greater than clean, control P less than 0.02). The cattle were slaughtered following an indoor fattening period. The dressed carcase weight, killing out percentage and related carcase measurements were superior in the treated groups. Eighty per cent of the clean and morantel treated cattle graded satisfactorily and qualified for subsidy payment whereas less than 30 per cent of the control cattle were successful. Rib joint analyses showed significantly lower total weight, eye muscle weight and area together with a higher bone content in control cattle.  相似文献

A total of 144 male crossbred calves were allocated to four management treatments (bulls; steers; bulls implanted with zeranol at 100 d of age and re-implanted at 69, 93 and 56 d thereafter; bulls implanted with zeranol at 168 d of age and re-implanted at 93 and 56 d thereafter), and two pre-slaughter shipping treatments (minimum pre-slaughter stress with cattle shipped and slaughtered within 4 h of leaving the feedlot pen; moderate pre-slaughter stress with cattle mixed, trucked 160 km and slaughtered up to 24 h of leaving the feedlot pen) in a 4 X 2 factorial arrangement. Management treatment had no significant effect on carcass pH (45 min), carcass muscle temperature (45 min), or peak shear-force of cooked longissimus muscle. Steers had significantly lower dressing percentage, warm-carcass weight, hide weight and carcass-lean content, but higher marbling score, fat thickness and intramuscular-fat content than all treatments with bulls. Minimum pre-slaughter stress resulted in significantly lower dressing percentage, warm-carcass weight, and carcass pH (45 min), but generally had no effect on carcass tissue-yield measurements compared with the moderate stress treatment. Implanted bulls produced carcasses with significantly darker meat, higher 24-h pH and lower meat expressible juice than bulls and castrates for the moderate pre-slaughter stress treatment. These results provide evidence that zeranol implantation in bulls had a minor influence on carcass characteristics, and did not reduce the incidence of dark-cutting carcasses in young bulls subjected to moderate pre-slaughter shipping stress.  相似文献

From a total of 32 717 cattle slaughtered, 183 whole carcass condemnations were attributable to 9 diseases and conditions, namely, tuberculosis (TB), cysticercosis, emaciation, generalised lymphadenitis, jaundice, abscesses, moribund, sarcosporidiosis and odour. Bovine TB was the most important cause of condemnations (152/183, 83.1%). Bovine cysticercosis and sarcosporidiosis accounted for 5/183 (2.7%) and 8/183 (4.4%), respectively, while each of the remaining conditions contributed less. Among the many conditions responsible for offal/organ condemnations were fascioliasis, contagious bovine pleuropneumonia, hydatidosis and TB. In terms of number and weight, Fasciola gigantica infections made livers and lungs the most condemned offals (20.1% and 0.7%, respectively). Hydatidosis was the cause of 0.9% lung and 0.1% liver losses. Cysticercus bovis contributed to only 0.05% of all inspected tongues, hearts, and heads. TB was very rare in heads (0.01%). The financial impact of whole carcasses and offals condemned during the study period was enormous and deprived livestock farmers of the much needed revenue and consumers of protein sources. Much or all of the condemned material that could have been useful was wasted by not being retrieved for conversion to processed meat, bone meal or pet food. Failure to detect lesions of potential zoonotic diseases at slaughter poses a health risk to consumers especially when meat is eaten undercooked.  相似文献

The effects on bruising and muscle pH of mixing cows and steers at loading, and 96 hours before loading, for transport to slaughter were examined. A second experiment investigated the effect on bruising of mixing two strange groups of steers at loading, 24 and 96 hours before loading. All cattle were hornless Bos indicus crossbreds from the same property in north Queensland. The bruise score, bruise trim weight and muscle pH of mixed cows and steers did not differ significantly from that of those transported separately. Mixing of two strange groups of steers did not significantly affect bruising. Time of mixing had no noteworthy effect on bruising. Cows bruised significantly (P less than 0.01) more than steers. These results have important implications for low cost beef management.  相似文献

The second beef quality audit was conducted in Canada in 1998-99 to determine the prevalence of quality defects in slaughtered cattle and to monitor changes since the first audit in 1995. Approximately 0.6% of the number of cattle processed annually in Canada were evaluated. Brands were observed on 49% and tag was observed on 43% of the hides. Both brands and tag had increased from 1995. Seventy percent of the cattle were polled and 5% had full horns; thus, the number of horned cattle had decreased from 1995. Bruises were found on 54% of the carcasses, which was a decrease from 78% in 1995. Sixty-eight percent of the bruises were minor, 28% major, and 4% critical in severity. The distribution of bruises on the carcass was 17% on the chuck, 36% on the rib, 30% on the loin, and 16% on the round. Grubs were observed on 0.008% of the carcasses, and surface injection site lesions were observed on 0.2% of the whole carcasses, a decrease from the 1.3% seen in 1995. Seventy-two percent of the livers were passed for human food and 14% for pet food; 14% were condemned. Approximately 64% of the liver losses were due to abscesses. Five percent of the heads and tongues and 0.3% of the whole carcasses were condemned. The hot carcass weight was highly variable in all cattle, averaging 353 kg (s = 43). The average ribeye area was 90 cm2 (s = 13). Both hot carcass weight and ribeye area had increased from 1995. The average grade fat was 9 mm (s = 5), ranging from 0 mm to 48 mm. Lean meat yield averaged 58.8% (s = 4.6). One percent of the carcasses were devoid of marbling, 17% were Canada A, 49% were Canada AA, 32% were Canada AAA, and 1% were Canada Prime, which was an increase in marbling from 1995. Dark cutters were found in 1% of all carcasses; 1% of steers, 0.5% of heifers, 3% of cows, and 14% of bulls. Three percent of the carcasses were underfinished and 13% were overfinished. The number of overfinished carcasses had increased from 1995. Stages, steers with bullish traits, were infrequently observed in 0.5% of the steers, and 0.2% of the steers and 0.3% of the heifers had poor conformation. Yellow fat was not observed in any steers or heifers, but it was found on 65% of the cow carcasses. Only 0.6% of the heifers had an aged carcass, based on skeletal maturity. Based on August 1998 to July 1999 prices, it was estimated that the Canadian beef industry lost $82.62 per head processed, or $274 million annually, from quality nonconformities, which was an increase from 1995. Additional improvements in management, feeding, handling, genetics, marketing, and grading are needed in the beef industry to reduce quality defects.  相似文献

Ninety-six pure-bred Large White pigs weighing 80 to 100 kg were either not transported or transported for eight, 16 or 24 hours, and then either slaughtered immediately on arrival at the abattoir or kept in lairage for six hours before being slaughtered. The pigs travelling for eight, 16 or 24 hours lost 2.2, 2.0 and 4.3 per cent of liveweight, respectively, and the pigs travelling for 24 hours lost 2.6 per cent of hot carcase weight Both liveweight and hot carcase weight recovered during the lairage period although there was a net liveweight loss in comparison with the control animals. Only transport for 24 hours led to losses in carcase weight The concentration of non-esterified fatty acids increased with the time spent travelling. The concentrations of cortisol, creatine phosphokinase and lactate were all low in comparison with the levels found in commercially slaughtered animals. Plasma albumin and protein concentrations indicated that the animals were becoming dehydrated during the longer journeys. The animals lay down for most of the journey and appeared to be asleep. During the period in lairage, the animals transported for eight hours had two distinct periods of feeding and drinking but spent most of the time lying down, but those transported for 16 and 24 hours showed far more eating and drinking activity. All the groups appeared tired, but the urge to eat of the groups transported for 16 hours, and especially 24 hours appeared to be more important. There were behavioural and the physiological differences between the transported groups and the controls. Six hours in lairage with access to food and water allowed most of the physiological parameters to return to pretransport levels.  相似文献

OBJECTIVE: To determine whether feeding sweetpotato cannery waste (SPCW) to cattle had adverse effects on dental wear, growth performance, or ruminal tissues. DESIGN: Clinical trial. ANIMALS: 36 Holstein steers. PROCEDURE: Steers were assigned to 1 of 3 groups. All steers received ryegrass hay ad libitum. In addition, steers in group 1 were fed 3.2 kg of corn and soybean meal/steer/d, steers in group 2 were fed 0.45 kg of soybean meal/steer/d and SPCW ad libitum, and steers in group 3 were fed a mixture of SPCW and broiler litter ad libitum. Samples of rumen fluid were collected on day 56. Steers were slaughtered on day 84, and samples of rumen were submitted for histologic examination. Teeth from control steers were removed, and calcium ion loss in response to etching with 2.28% lactic acid solutions buffered to pH of 3.75, 4.0, 4.25, 4.5, and 4.75 was determined. RESULTS: Average daily gain was lower for steers fed SPCW than for steers in the other 2 groups. Steers fed the SPCW-broiler litter mixture had only mild increases in tooth wear and tooth color scores, compared with control steers, whereas steers fed unbuffered SPCW had substantial increases in tooth wear and tooth color scores. Histologic abnormalities were detected in rumens from steers fed diets containing SPCW. Calcium ion loss decreased as pH of the etching solution increased. CLINICAL IMPLICATIONS: Results indicate that feeding cattle unbuffered SPCW can cause dental erosion, ruminal epithelial changes, and poor growth; however, SPCW buffered with broiler litter can be used as a cattle feed.  相似文献

[目的]为了研究阉割对早胜黄牛公牛肉质的影响,[方法]试验选择健康无病、发育正常、养殖环境一致的12月龄早胜黄牛公牛和阉牛(6月龄早期阉割处理)各3头,短期育肥3个月,屠宰后取背最长肌,对蒸煮损失、滴水损失、剪切力、pH值、肉色(L*、a*和b*)、系水力、粗蛋白、粗脂肪、水分、粗灰分及氨基酸组成和含量进行了研究。[结果]试验结果表明:阉割公牛背最长肌的pH、红度(a*)、黄度(b*)、系水力、粗脂肪、Glu、Leu含量显著高于公牛(P<0.05);而背最长肌蒸煮损失、滴水损失、剪切力、亮度(L*)、粗蛋白、水分显著低于公牛(P<0.05),在公牛和阉牛的氨基酸组成及含量中,多数氨基酸含量不存在显著差异,但阉牛氨基酸含量略高于公牛氨基酸含量。[结论]阉割处理可以显著提高12月龄早胜黄牛的嫩度和系水力,改善牛肉的色泽,增加牛肉干物质和氨基酸含量,说明阉割有助于提高早胜黄牛育肥公牛的肉品质。  相似文献

SUMMARY Livers were examined from 5,647 grain-fed and 621 grass-fed cattle of similar breed, age and weight, killed at a Queensland abattoir in 1980–81. The prevalences of disorders found in grain-fed cattle were liver abscesses 5.6% and 11.1% (after 80 and 120 days in the feedlot), telangiectasis 8.4%, Echinococcus granulosis 3.3%, Fasciola hepatica 0.4%, unclassified lesions 7.4%, and contamination 3.2%. In grass-fed cattle liver abscesses were 0.2%, telangiectasis 1.0%, E. granulosis 18.9%, F. hepatica 5.4%, unclassified lesions 6.5%, and contamination 1.0%. Liver abscess disease was the main cause of loss in grain-fed cattle and the mean carcase weight of affected steers was 298kg±42kg, compared wiith 308kg±40kg in non-affected (p 0.01). Liver weights of grain-fed and grass-fed cattle were highly significantly correlated with carcase weights (r - 0.78 and 0.49 respectively). Total losses were $2.25 per head in grain-fed steers and $0.90 in grass-fed steers.  相似文献

Postmortem proteolysis is an important determinant of beef tenderness. Caspase 3 is a protease that functions in apoptosis and has been shown to degrade myofibrillar proteins. Our objective was to evaluate whether caspase 3 activity is related to beef tenderness and muscle growth, and whether caspase 3 is activated in postmortem beef muscle. In experiment 1, longissimus thoracis (LT) and sternomandibularis muscle samples were obtained at 0, 0.25, 1, 3, 24, 72, and 240 h postmortem from 5 steers. In experiment 2, a group of 40 beef cattle was slaughtered at the University of Wyoming Meat Lab with 10 steers of different tenderness and growth characteristics chosen for the analysis of caspase 3 activity in the LT. In experiment 3, 10 steers with different tenderness but matched growth characteristics were chosen for analyses. In experiment 1, no significant activation (P = 0.70) of caspase 3 activity was detected; only a decreased activity at 72 (P = 0.05) and 240 h (P = 0.02) postmortem was observed. Western blot analysis of both muscle samples showed only the pro-caspase 3 form and failed to detect the activated enzyme. In experiment 2, caspase 3 activity in the LT immediately postmortem was greater (P = 0.05) for the cattle with increased Warner-Bratzler shear force values. No difference in caspase 3 activity was detected for experiment 3. Our results demonstrate that caspase 3 activity is not activated, with its activity decreasing with time postmortem, and caspase 3 activity is not associated with Warner-Bratzler shear force at slaughter. Therefore, caspase 3 is not anticipated to be involved in postmortem tenderization of beef.  相似文献

The aim of this study is to assess the effect of CO2 gas stunning which has not been conducted until now in comparison with captive bolt stunning on the meat quality of cattle. A total of 40 steers were slaughtered following two stunning processes: CO2 gas stunning (n=20), exposure at 70% CO2 gas atmosphere for 140 sec; and captive bolt stunning (CBS, n=20). The slaughtered steers were classified into Group A (620–710 kg) and Group B (720–790 kg) by their live weight. CO2 gas stunning decreases pH value (p<0.05) but increases lightness (p<0.001) and sarcomere length (p<0.001 and p<0.01 for Group A and Group B, respectively) in all live weight groups. Drip loss was increased with CO2 gas stunning in Group A (620–710 kg of live weight) (p<0.05), whereas WBSF was decreased with CO2 gas stunning in Group B (720–790 kg of live weight) (p<0.001). Therefore, CO2 gas stunning negatively affects muscle pH and water-holding capacity in steers but CO2 gas stunning can improve the tenderness and lightness compared with captive bolt stunning in cattle.  相似文献

The long-term effects of a single dose of meloxicam (Metacam 20 mg/ml; Boehringer Ingelheim Vetmedica) in conjunction with antibiotic therapy in cattle with clinical signs of bovine respiratory disease (BRD) was evaluated in a blind, controlled, randomised study. Two hundred animals with clinical signs of brd received a single subcutaneous injection of 20 mg/kg oxytetracycline; 100 of them also received a subcutaneous injection of 0.5 mg/kg meloxicam, and the other 100 received an injection of isotonic saline. The animals were weighed before they were treated and seven, 35, 70 and 105 days later, and finally before they were slaughtered. The mean bodyweight of the meloxicam-treated animals was significantly higher from day 70 until slaughter, and the mean average daily weight gain until slaughter and the mean carcase weight of the animals treated with meloxicam were significantly higher. In the animals with lung lesions, significantly less lung tissue was affected in those that had been treated with meloxicam.  相似文献

The aim was to compare the effects of two production systems on performance, carcass traits and physical‐mechanical characteristics of leather from Beefalo‐Nellore steers and heifers and to determine if the response to the production system was similar for both genders. A total of 40 Beefalo‐Nellore cattle, 20 steers and 20 heifers, were evaluated. Animals were divided into two production systems: slaughtered at 15 (intensive system) or 26 (extensive system) months of age. In the intensive system, all animals received a ration containing 600 g/kg corn silage and 400 g/kg concentrate. In the extensive system, animals were kept on a pasture predominantly based on Brachiaria sp. and supplemented with 2 kg/day concentrate. In the intensive system, there was no difference in slaughter weight (470 kg body weight) between steers and heifers but steers in the extensive system had greater slaughter weight than heifers (463 and 428 kg body weight, respectively). Leather weight was higher for animals in the intensive than extensive system but there was no difference in leather weight once excess fat was removed. Leather quality from Beefalo‐Nellore cattle slaughtered at 15 or 26 months of age is similar although carcass yield is higher for cattle slaughtered at a younger age.  相似文献

Twelve young bulls and 12 steers were slaughtered and the carcasses were fabricated at 48 h postmortem. Top rounds, bottom rounds, and rib eyes were vacuum-packaged and stored at 0 degrees C until 21 d postmortem. After subprimal storage, steaks were removed from each cut and displayed under simulated retail conditions for 3 d. Consumer panelists (n = 110) showed little difference in buying preference for top round, bottom round, and rib eye steaks from steers vs bullocks. Also, consumer panelists could not detect color differences between steaks from steers and bullocks. Experienced panelists (n = 6) detected brighter (P less than .05) muscle color for top round and rib eye steaks from steers but detected no difference in muscle color of bottom round steaks from bullocks and steers. Generally, overall desirability scores favored steaks from steer carcasses. This was particularly true of rib eye steaks. Sex-class of carcass did not affect aerobic plate counts of top round, bottom round, or rib eye steaks either before or after 3 d of retail display. Muscle pH was lower for top round and rib eye steaks from steer carcasses; however, the magnitude of this difference was not large enough to affect retail display stability. Muscle pH of bottom round steaks was not affected by sex-class. Although experienced panelists could detect differences in visual appearance of beef retail cuts from steers and bullocks, consumer panelists did not show a clear purchase preference for steer vs bullock beef. These data suggest that beef retail cuts from bullocks are acceptable in visual appearance.  相似文献

Holstein steer calves (n = 25) were used to evaluate the effects of treadmill exercise (TME) on blood metabolite status and formation of dark-cutting beef. Calves were blocked by BW (156 +/- 33.2 kg) and assigned randomly within blocks to 1 of 5 TME treatments arranged in a 2 x 2 factorial design (4 or 8 km/h for a duration of 10 or 15 min) with a nonexercised control. Venous blood was collected via indwelling jugular catheters at 10, 2, and 0 min before TME and at 2-min intervals during exercise. Nonexercised steers were placed on the treadmill but stood still for 15 min. Serum cortisol levels, as well as plasma concentrations of glucose, lactate, and NEFA, were similar (P > 0.05) before TME. Serum cortisol concentrations were unaffected (P > 0.05) during the first 6 min of TME, but between 8 and 15 min of TME, cortisol concentrations were greater (P < 0.05) in steers exercised at 8 km/h than those exercised at 4 km/h or controls (speed x time, P < 0.001). Although TME did not affect (P > 0.05) plasma glucose levels, plasma lactate concentrations in steers exercised at 8 km/h increased (P < 0.05) sharply with the onset of the TME treatment and remained elevated compared with steers exercised at 4 km/h or unexercised controls (speed x time, P < 0.001). Exercised steers had the lowest (P < 0.05) plasma NEFA concentrations during the first 6 min of TME compared with unexercised steers; however, NEFA concentrations were similar after 10 and 12 min of TME, and by the end of TME, steers exercised at 8 km/h had greater (P < 0.05) NEFA levels than nonexercised controls or steers exercised at 4 km/h (speed x time, P < 0.001). Even though muscle glycogen levels and pH decreased (P < 0.001) and muscle lactate concentrations increased (P < 0.001) with increasing time postmortem, neither treadmill speed nor TME duration altered postmortem LM metabolism. Consequently, there were no (P > 0.05) differences in the color, water-holding capacity, shear force, or incidences of dark-cutting carcasses associated with preslaughter TME. It is apparent that preslaughter TME, at the speeds and durations employed in this study, failed to alter antemortem or postmortem muscle metabolism and would not be a suitable animal model for studying the formation of the dark-cutting condition in ruminants.  相似文献

A 23 factorial design was used to examine the following treatments on the finishing of steers fed diets of 90% sorghum grain and 10% roughage: cottonseed hulls v. lucerne as the roughage component; nil v. 3% tallow; free-choice supplements of (a) sodium chloride, (b) 50/50 mixture of sodium chloride and rock phosphate, and (c) soil; a decrease in the crude protein level of the diet from 14 to 11% after body weight exceeded 350 kg.
Nine groups, each of 10 Shorthorn steers aged between 12 and 15 months, of an initial mean shrunk liveweight of 215.8 ± SE 0.35 kg were used. Individual steers were slaughtered either at 390 kg liveweight or after 177 days.
The mean growth rate was significantly higher in steers receiving cottonseed hulls than in those fed lucerne (1.27 v. 1.13 kg/day) and was significantly higher in those receiving tallow treatments than in those without tallow (1.28 v. 1.12 kg/day). Steers receiving 14% crude protein throughout showed an increased rate of carcase weight gain of 0.059 kg/day compared with steers receiving 11% from 350 kg body weight. The supplements had no effect on performance.
The overall mean carcase weight gain and dressing percentage were 0.68 kg/day and 59.0%, respectively.
Feed conversion (dry matter) was lower in steers receiving tallow than in those not receiving tallow (5.3 v. 6.3).
Steers fed lucerne exhibited intermittent mild to moderate bloat which did not require treatment.  相似文献

A study was conducted in 4 Canadian processing plants in 1995-96 to determine the prevalence of quality defects in Canadian cattle. One percent of the annual number of cattle processed in Canada were evaluated on the processing floor and 0.1% were graded in the cooler. Brands were observed on 37% and multiple brands on 6% of the cattle. Forty percent of the cattle had horns, 20% of which were scurs, 33% were stubs, 10% were tipped, and 37% were full length. Tag (mud and manure on the hide) was observed on 34% of the cattle. Bruises were found on 78% of the carcasses, 81% of which were minor in severity. Fifteen percent of the bruises were located on the round, 29% on the loin, 40% on the rib, 16% on the chuck, and 0.02% on the brisket. Grubs were observed in 0.02% of the steers, and injection sites were observed in 1.3% of whole hanging carcasses. Seventy percent of the livers were passed for human food and 14% for pet food; 16% were condemned. Approximately 71% of the liver condemnations were due to liver abscesses. Four percent of the heads, 6% of the tongues, and 0.2% of whole carcasses were condemned. The pregnancy rate in female cattle was approximately 6.7%. The average hot carcass weight was 357 kg (s = 40) in steers, 325 kg (s = 41) in heifers, 305 kg (s = 53) in cows, 388 kg (s = 62) in virgin bulls and 340 kg (s = 39) in mature bulls. The average ribeye area in all cattle was 84 cm2 (s = 12); range 29 cm2 to 128 cm2. Grade fat was highly variable and averaged 9 mm (s = 4) for steers and heifers, 6 mm (s = 6) for cows, 5 mm (s = 1) for virgin bulls, and 4 mm (s = 0.5) for mature bulls. The average lean meat yield was 59.7% in cattle (s = 3.4); range 39% to 67%. One percent of the carcasses were devoid of marbling, 1% were dark cutters, and 0.05% of the steer carcasses were staggy. Six percent of the carcasses had poor conformation, 3.7% were underfinished, and 0.7% were overfinished. Yellow fat was observed in 4% of the carcasses; 10% of carcasses were aged. Based on January 1996 prices, the economic analysis showed that the Canadian beef industry lost $70.52 per head or $189.6 million annually from quality nonconformities. Methods identified to reduce these nonconformities included improvements in management, animal identification, handling, genetic selection, marketing, grading, and information transfer.  相似文献

1. Six emus (Dromaius novaehollandiae) were slaughtered at 13 months of age in order to determine carcase, by-product and muscle yields. 2. Emus had a lower percentage of hot carcase weight (52%) and total fat (28%) to body weight but a higher lean meat to carcase weight (69%) than ostriches or rheas. 3. The amount of trimming of connective tissue from muscles of the lower leg (Gastrocnemius, Fibularis longus) has an influence (P<0.05) on the yields from these muscles.  相似文献
