Anabolic steroid implants are commonly used to increase growth performance and carcass leanness. The objective of this study was to determine the effects of various trenbolone acetate implants on Warner-Bratzler shear force (WBSF), slice shear force, and consumer palatability ratings for USDA Choice and Select beef strip steaks aged for 14 and 21 d from cattle implanted before slaughter. Beef steers (n = 1,740) were subjected to the following treatments: 1) nonimplanted control (CON); 2) Revalor-IS on d 0 and Revalor-S on d 70 (IS/S); or 3) Revalor-XS (RXS) on d 0, and were randomly assigned to pens within blocks. A subsample of USDA Choice (n = 82) and USDA Select (n = 81) carcasses was selected. Strip loins from these carcasses were collected, and steaks measuring 2.54 cm were fabricated and aged for 14 or 21 d postmortem. Select steaks aged 14 d from RXS cattle had decreased (P < 0.05) WBSF values compared with IS/S steaks, but CON steaks did not differ from either implant treatment. Warner-Bratzler shear force did not differ among treatments (P > 0.05) from USDA Choice steaks aged 14 and 21 d or from Select steaks aged 21 d. Consumer scores for flavor and overall liking for USDA Choice 14-d aged RXS steaks were less (P < 0.05) than CON steaks; however, there were no differences between RXS, IS/S, and CON for tenderness or juiciness, or for tenderness and overall acceptability. Select steaks aged 14 d from IS/S cattle had less (P < 0.05) tenderness, tenderness acceptability, overall acceptability, overall liking, juiciness, and flavor scores than RXS and CON steaks; however, consumers also rated RXS steaks less for tenderness, juiciness, and tenderness acceptability when compared with CON steaks. Consumer scores for overall liking, flavor, and tenderness for USDA Choice steaks aged 21 d from RXS, IS/S, and CON did not differ. However, implant affected (P < 0.05) overall liking, flavor, juiciness, and tenderness for USDA Select steaks aged 21 d. Even so, there were no differences between RXS, IS/S, and CON steaks for tenderness or overall acceptability for steaks aged 21 d, regardless of quality grade. Results indicated that tenderness differences exist among implant strategies when strip steaks were aged 14 d; however, tenderness and overall consumer acceptability were only influenced by implant in Select steaks aged 14 d. Furthermore, aging for 21 d can minimize and even eliminate implant differences in WBSF and slice shear force, as well as tenderness and overall consumer acceptability.  相似文献

Effects of ractopamine hydrochloride (RAC) supplementation and postmortem aging on palatability of beef from steers differing in biological type were evaluated using LM samples from British, Continental crossbred, and Brahman crossbred calf-fed steers (n = 98/type). Equal numbers of steers within each type were assigned to treatments of 0 or 200 mg.steer(-1).d(-1) of RAC fed during the final 28 d of the finishing period. Warner-Bratzler shear force (WBSF) was measured at 3, 7, 14, and 21 d postmortem, and trained sensory panel (TP) evaluation was conducted using LM samples aged for 14 d postmortem. A RAC x type interaction (P = 0.006) was detected for WBSF. Within each type, steers fed RAC produced steaks with greater (P < 0.05) WBSF values than steaks from control steers; however, the magnitude of the effect of RAC on WBSF was more pronounced among Brahman cross-breds (5.53 vs. 4.96 +/- 0.10 kg) than among Continental crossbred (4.16 vs. 3.96 +/- 0.10 kg) and British steers (4.10 vs. 3.75 +/- 0.10 kg). The effect of RAC on WBSF, though diminished slightly by aging (mean WBSF difference: 3 d = 0.49 kg; 21 d = 0.24 kg), was not completely mitigated by 21 d of postmortem storage (P(RAC x AGE) = 0.16). Steers fed RAC produced steaks that received lower (P < 0.05) TP ratings for tenderness (8.09 vs. 8.95 +/- 0.18) and juiciness (7.41 vs. 8.07 +/- 0.16 kg), along with slightly lower (P = 0.06) ratings for beef flavor (6.67 vs. 6.93 +/- 0.10 kg), compared with steaks from unsupplemented steers, regardless of biological type. Among the 3 biological types, Brahman crossbred cattle produced steaks with the greatest (P < 0.05) WBSF values at each aging period; WBSF values for steaks from British and Continental type steers did not differ (P > 0.05) at any aging time. Sensory panel ratings of tenderness, juiciness, and beef flavor were greatest (P < 0.05) for steaks from British steers, and least (P < 0.05) for steaks produced by Brahman-type steers. Results from this study suggest that RAC supplementation slightly decreases LM tenderness (WBSF and TP) of British, Continental crossbred, and Brahman cross-bred steers, and that the effect of RAC on WBSF may be more pronounced in steaks from Brahman crossbred cattle than among stenks from Continental type or British steers.  相似文献

Vitamin D3 was orally supplemented to determine the supplemental dose that improved beef tenderness in different cattle breed types. Feedlot steers (n = 142) were arranged in a 4 x 3 factorial arrangement consisting of four levels of supplemental vitamin D3 (0, 0.5, 1, and 5 million IU/steer daily) administered for eight consecutive days antemortem using three biological types (Bos indicus, Bos Taurus-Continental, and Bos Taurus-English). Warner-Bratzler shear force (WBSF) was measured at 3, 7, 10, 14, and 21 d postmortem, and trained sensory analysis was conducted at 7 d postmortem on LM, semimembranosus, gluteus medius, and supraspinatus steaks. Concentrations of vitamin D3 and the metabolites 25-hydroxyvitamin D3, and 1,25-dihydroxyvitamin D3 were determined in the LM, liver, kidney, and plasma. Biological type of cattle did not interact (P > 0.10) with vitamin D3 supplementation for sensory or tenderness traits, suggesting that feeding vitamin D3 for 8 d before slaughter affected the different biological types of cattle similarly. Supplementing steers with 0.5, 1, or 5 million IU/(steer(d) decreased (P < 0.05) LM WBSF at 7, 10, 14, and 21 d postmortem compared with controls, and vitamin D3 treatments of 0.5, 1, and 5 million IU decreased (P < 0.05) semimembranosus WBSF at 3, 7, and 14 d postmortem. In general, vitamin D3-induced improvements in WBSF were most consistent and intense in LM steaks. Sensory panel tenderness was improved (P < 0.05) by all vitamin D3 treatments in LM steaks. Sensory traits ofjuiciness, flavor, connective tissue, and off-flavor were not (P > 0.05) affected by vitamin D3 treatments. All vitamin D3 treatments decreased micro-calpain activity and increased muscle Ca concentrations (P < 0.05). Vitamin D3 concentrations were increased (P < 0.05) by supplementation in all tissues tested (liver, kidney, LM, and plasma); however, cooking steaks to 71 degrees C decreased (P < 0.05) treatment residue effects. The vitamin D metabolite 1,25-dihydroxyvitamin D3 was increased (P < 0.05) only in plasma samples as a result of the vitamin D3 treatments. These results indicate that supplementation with vitamin D3 at 0.5 million IU/steer daily for eight consecutive days before slaughter improved tenderness in steaks from different subprimal cuts by affecting muscle Ca concentrations, micro-calpain activities, and muscle proteolysis, with only a small effect on tissue residues of vitamin D3.  相似文献

An experiment was conducted to determine the effects of zilpaterol hydrochloride mM supplementation (ZH; 8.3 mg/kg on a DM basis for 20 d) and calcium chloride injection [CaCl(2), 200 at 5% (wt/wt) at 72 h postmortem] on palatability traits of beef (Bos taurus) strip loin steaks. Select (USDA) strip loins were obtained from control (no ZH = 19) and ZH-supplemented carcasses (n = 20). Right and left sides were selected alternatively to serve as a control (no INJ) or CaCl(2)-injected (INJ) and stored at 4°C. Before injecting the subprimals (72 h postmortem), 2 steaks were cut for proximate, sarcomere length, and myofibrillar fragmentation index (MFI) analyses. At 7 d postmortem each strip loin was portioned into steaks, vacuum packaged, and aged for the appropriate period for Warner-Bratzler shear force (WBSF; 7, 14, 21, and 28 d postmortem), trained sensory analysis (14 and 21 d postmortem), purge loss (7 d), and MFI (3, 7, 14, 21, and 28 d postmortem). Results indicated steaks from both ZH supplementation and INJ had reduced WBSF values as days of postmortem aging increased. The WBSF values of ZH steaks were greater (P < 0.05) than no ZH steaks at each postmortem aging period. The INJ steaks had lower WBSF values (P < 0.05) than non-injected steaks. A greater percentage (91 vs. 71%) of steaks had WBSF values < 4.6 kg from steers with no ZH supplementation at 7 d postmortem, but the percentage did not differ (P > 0.05) due to ZH at 14, 21, or 28 d or due to INJ at any aging period. Trained panelists rated tenderness less in ZH steaks than steaks with no ZH at 14 d and 21 d. However, INJ improved (P < 0.05) the tenderness ratings and flavor intensity of the trained panelists, compared with their non-injected cohorts at 21 d. Zilpaterol hydrochloride supplementation reduced (P < 0.05) MFI values, but INJ resulted in greater (P < 0.05) MFI values compared with no INJ. Subprimals from ZH and INJ showed greater purge loss (P < 0.05). Although no interactions were found with ZH and CaCl(2), injecting USDA Select strip loins from ZH-fed cattle can help reduce the normal WBSF variation as it does in steaks from non-ZH-fed cattle.  相似文献

Beef carcasses (n = 150) of A-maturity were selected randomly to determine baseline shear force and sensory panel ratings, assess variation in tenderness, and evaluate mean value differences between Certified Angus Beef (CAB), commodity Choice, and Select steaks. Three steaks were removed from the triceps brachii (TB), longissimus lumborum (LL), gluteus medius (GM), semimembranosus (SM), biceps femoris (BF), and quadriceps femoris complex (QF), and assigned to Warner-Bratzler shear (WBSF) and sensory panel analyses. As anticipated, marbling score and measured percentage of i.m. fat were greatest (P < 0.05) for CAB, intermediate (P < 0.05) for Choice, and least (P < 0.05) for Select carcasses. A muscle x quality level interaction (P < 0.05) was observed for WBSF values and sensory panel tenderness ratings. The TB, LL, GM, and BF steaks from CAB carcasses had lower (P < 0.05) WBSF than Select steaks from the same muscles. Even though WBSF values did not differ (P > 0.05) between CAB and Choice QF and TB steaks, the LL and GM steaks from CAB carcasses were more tender (P < 0.05) than Choice-grade LL and GM steaks. The TB from Select carcasses had higher (P < 0.05) WBSF values than TB steaks from CAB or Choice carcasses, but sensory panel ratings indicated that quality level showed little consistency among the GM, SM, BF, and QF. Trained sensory panelists rated CAB LL steaks more tender (P < 0.05) than LL steaks from Choice and Select carcasses, and Choice LL steaks were evaluated as more (P < 0.05) tender than those from Select carcasses. These results demonstrate that the influence of marbling on tenderness was more evident in muscles of middle meats than in end cuts, particularly in muscles of the round.  相似文献

Our objectives were to determine the effects of zilpaterol hydrochloride (ZH) and the release rate of trenbolone acetate and estradiol-17β on the Warner-Bratzler shear force (WBSF) and slice shear force (SSF) of longissimus lumborum (LL) and the WBSF of gluteus medius (GM) and psoas major (PM) in response to various aging periods. British × Continental steers (n = 168) were assigned to treatments in a 3 × 2 factorial. The main effects of treatment were implant (no implant, Revalor-S, Revalor-XS, Intervet/Schering Plough Animal Health, De Soto, KS) and ZH (0 or 8.3 mg/kg of DM for 20 d). Slaughter group was included as a random effect to account for the variation in days on feed (153 or 174 d). Loins (n = 96) were fabricated to obtain strip loin, top sirloin butt, and tenderloin subprimals. Five 2.54-cm steaks were cut from each subprimal and assigned to 1 of 5 aging periods (7, 14, 21, 28, or 35 d postmortem). Feeding ZH increased (P ≤ 0.01) LL WBSF and SSF values at each aging period compared with controls. Implanting increased (P < 0.05) LL WBSF values at 14 and 21 d, but did not affect LL SSF values (P > 0.05). Only Revalor-S increased (P ≤ 0.05) WBSF values at 28 and 35 d compared with no implant or Revalor-XS. The percentage of LL steaks with a WBSF value below 4.6 kg did not differ (P > 0.05) between ZH supplementation or implant strategy at any aging period, and by d 28, more than 99% of LL steaks registered WBSF values below 4.6 kg. Feeding ZH increased (P < 0.05) GM WBSF values only on d 21. Implant had no effect (P > 0.05) on GM WBSF values. The percentage of GM steaks with a WBSF value below 4.6 kg did not differ (P > 0.05) between ZH supplementation or implant strategy at any aging period. Neither ZH nor implant strategy affected PM WBSF values (P > 0.05). All PM WBSF values were below 4.6 kg on d 7. The results of this study indicated that feeding ZH increased WBSF and SSF of LL steaks, regardless of the aging period; however, the percentage of steaks with WBSF below 4.6 kg did not differ because of ZH or implant. Implanting increased LL WBSF values, but not SSF values. These results showed that although differences existed between implanting, as well as ZH supplementation of British × Continental steers, 99% of LL steaks were classified as tender based on WBSF values by extending aging to 28 d postmortem. It should be noted that 21.2% of 7-d, 13.8% of 14-d, and 17.3% of 21-d ZH steaks had WBSF values greater than 4.6 kg, but 0% of nonsupplemented steaks were greater than 4.6 kg at these aging periods. However, because ZH and implants can increase retail yield of valuable subprimals, such as the tenderloin, considerable value could be captured through ZH supplementation with anabolic implants because shear force was not affected in PM steaks.  相似文献

The objective of this study was to determine the influence of beef LM nutrient components on beef palatability traits and evaluate the impact of USDA quality grade on beef palatability. Longissimus muscle samples from related Angus cattle (n = 1,737) were obtained and fabricated into steaks for trained sensory panel, Warner-Bratzler shear force (WBSF), lipid oxidation measured by thiobarbituric acid reactive substances (TBARS), fatty acid, and mineral composition analysis. Pearson phenotypic correlations were obtained by the correlation procedure of SAS. Beef palatability data were analyzed by the GLM procedure of SAS with USDA quality grade as the main effect. Specific mineral concentrations did not demonstrate strong correlations with WBSF or sensory traits (r = -0.14 to 0.16). However, minerals appeared to have a stronger relationship with flavor; all minerals evaluated except Ca and Mn were positively correlated (P < 0.05) with beef flavor. Stearic acid (C18:0), C18:2, C20:4, and PUFA were negatively correlated (P < 0.05) with all 3 panelist tenderness traits (r = -0.09 to -0.22) and were positively correlated (P < 0.05) with WBSF (r = 0.09 to 0.15). The MUFA were positively correlated (P < 0.05) with panelist tenderness ratings (r = 0.07 to 0.10) and negatively associated (P < 0.05) with WBSF (r = -0.11). The strongest correlations with juiciness were negative relationships (P < 0.05) with C18:2, C18:3, C20:4, and PUFA (r = -0.08 to -0.20). Correlations with beef flavor were weak, but the strongest was a positive relationship with MUFA (r = 0.13). Quality grade affected (P < 0.05) WBSF, TBARS, and all trained sensory panel traits, except livery/metallic flavor. As quality grade increased, steaks were more tender (P < 0.05), as evidenced by both WBSF and sensory panel tenderness ratings. Prime steaks were rated juiciest (P < 0.05) by panelists, whereas Select and Low Choice were similarly rated below Top Choice for sustained juiciness. Quality grade influenced (P < 0.05) beef flavor, but not in a linear fashion. Although there were significant correlations, these results indicate tenderness, juiciness, and flavor are not strongly influenced by individual nutrient components in beef LM. Furthermore, the positive linear relationships between USDA quality grade and beef palatability traits suggest quality grade is still one of the most valuable tools available to predict beef tenderness.  相似文献

Anabolic growth promotants influence beef grade factors and Warner-Bratzler shear force of steaks. No study has assessed the consumer acceptability of beef derived from implanted cattle. This study determined beef carcass grades and consumer acceptability for cooked beef from unimplanted (control) cattle and from cattle implanted with one of seven different implant strategies (initial implant/implant at 59 d = Encore & Component T-S/no implant, Ralgro/Synovex Plus, Ralgro/Revalor-S, Revalor-S/Revalor-S, Revalor-S/no implant, no implant/Synovex Plus, and Synovex Plus/no implant). British crossbred steers (n = 448) were allocated randomly into one of eight pens for each of the control and seven treatment groups. Carcass quality and yield grade (n = 403) and Warner-Bratzler shear force (n = 298) data were collected by trained personnel. Twenty steaks per control or treatment group were selected randomly for use in consumer sensory evaluation. Steaks were evaluated by consumers for overall like, tenderness like, tenderness level, flavor like, flavor intensity, and juiciness level using 9-point, end-anchored hedonic scales. Control carcasses had smaller (P < .05) longissimus muscle areas than carcasses in all treatment groups except those receiving Encore & Component T S/no implant, Ralgro/Synovex Plus, or Revalor S/no implant. Control carcasses had higher (P < .05) marbling scores than carcasses in all treatment groups except those receiving Ralgro/Revalor-S or Encore & Component T-S/no implant. Steaks from control steers had lower (P < .05) Warner-Bratzler shear force values than steaks from steers given Revalor-S/no implant. Consumer ratings for tenderness like and tenderness level were influenced (P < .05) by implant strategy. Effects of implant strategy on overall like, flavor like, and flavor intensity approached significance (P = .07 to .09). Consumers rated steaks from unimplanted steers as more tender (tenderness level; P < .05) than steaks from all treatment groups except that involving Encore & Component T-S/no implant. Consumers rated steaks from unimplanted steers as more desirable (P < .05) for tenderness like than steaks from all treatments except those involving Encore & Component T-S/no implant or Revalor-S/no implant. Although use of implants in this study resulted in heavier hot carcass weights and larger ribeyes, some of the implant strategies reduced consumer preference of tenderness of steaks.  相似文献

Two experiments were conducted to determine the effectiveness of using mechanical probes and objective color measurement on beef LM to predict cooked tenderness. In Exp. 1, sharp needle (SN), sharp blade (SB), blunt needle (BN), blunt blade (BB), and plumb bob (PB) probes were used to measure uncooked LM (n = 29) at 2 d postmortem in both a perpendicular and parallel orientation to the long axis of the strip loin. Additionally, instrumental color measurements were measured on uncooked muscle at 2 d postmortem. Steaks for trained sensory panel (TSP) and Warner-Bratzler shear force (WBSF) measurements were aged 14 d postmortem before cooking. Probe measurements taken perpendicular to the long axis of the LM were not correlated (P = 0.22 to 0.82) to TSP tenderness. Probe measurements (BB, BN, SN, SB, and PB) taken parallel to the long axis were correlated to TSP tenderness (r = -0.57, -0.40, -0.77, -0.52, and -0.53, respectively). A regression equation using the SN probe to predict TSP tenderness had a R2 value of 0.74. The SB probe combined with L* accounted for 45% of the variation in TSP tenderness, whereas the PB probe combined with L* accounted for 56% of the variation in TSP tenderness. A second experiment (n = 24) was conducted using the SN, SB, and PB probes on uncooked sections at 2 d and on cooked steaks at 14 d postmortem. Probe measurements on cooked steaks were not correlated to TSP tenderness. New regression equations were calculated using the probe measurements on uncooked steaks from both experiments. Prediction equations formulated with L* values and either SN, SB, or PB probes accounted for 49, 50, and 47% of the variability in TSP tenderness scores, respectively. An equation using WBSF of cooked steaks to predict TSP tenderness had an R2 of 0.58. Of the steaks predicted to be tender (predicted tenderness > 5.0) by the equations using the SN, SB, and PB probes on uncooked steaks and WBSF on cooked steaks, 85, 88, 80, and 84%, respectively, were actually tender (TSP tenderness > 5.0). Mechanical probe measurements of uncooked steaks at 2 d postmortem can potentially classify strip loins into groups based on tenderness, as well as WBSF measurements, which are more costly and time consuming.  相似文献

Four experiments were conducted in two commercial packing plants to evaluate the effectiveness of a commercial online video image analysis (VIA) system (the Computer Vision System equipped with a BeefCam module [CVS BeefCam]) to predict tenderness of beef steaks using online measurements obtained at chain speeds. Longissimus muscle (LM) samples from the rib (Exp. 1, 2, and 4) or strip loin (Exp. 3) were obtained from each carcass and Warner-Bratzler shear force (WBSF) was measured after 14 d of aging. The CVS BeefCam output variable for LM area, adjusted for carcass weight (cm2/kg), was correlated (P < 0.05) with WBSF values in all experiments. The CVS BeefCam lean color measurements, a* and b*, were effective (P < 0.05) in all experiments for segregating carcasses into groups that produced LM steaks differing in WBSF values. Fat color measurements by CVS BeefCam were usually ineffective for segregating carcasses into groups differing in WBSF values; however, in Exp. 4, fat b* identified a group of carcasses that produced tough LM steaks. Quality grade factors accounted for 3, 18, 21, and 0% of the variation in WBSF among steaks in Exp. 1 (n = 399), 2 (n = 195), 3 (n = 304), and 4 (n = 184), respectively, whereas CVS BeefCam output variables accounted for 17, 30, 19, and 6% of the variation in WBSF among steaks in Exp. 1, 2, 3, and 4, respectively. A multiple linear regression equation developed with data from Exp. 2 accurately classified carcasses in Exp. 1 and 4 and thereby may be useful for decreasing the likelihood that a consumer would encounter a tough (WBSF > 4.5 kg) LM steak in a group classified as "tender" by CVS BeefCam compared with an unsorted population. Online measurements of beef carcasses by use of CVS BeefCam were useful for predicting the tenderness of beef LM steaks, and sorting carcasses using these measurements could aid in producing groups of beef carcasses with more uniform LM steak tenderness.  相似文献

Previous studies have shown that supplementation of vitamin D3 to cow diets for 4 to 10 d before slaughter lowers Warner-Bratzler shear force (WBSF) values and increases sensory tenderness scores in beef cuts. The present study was conducted to evaluate the effects of vitamin D3 supplementation on muscle calcium concentration, WBSF values, and sensory tenderness ratings of LM and semitendinosus (ST) muscles from cull, predominately Angus, cows (eight cows per treatment). Treatments included 0 (control), 5 million IU, or 7.5 million IU of vitamin D3 supplemented daily for 7 d preslaughter. Twenty-four hours after slaughter, 2.54-cm-thick LM and ST muscle steaks were cut; aged for either 0, 7, 14, or 21 d (ST steaks aged for 7 d only); and frozen at -20 degrees C for WBFS and sensory analysis. Mean values for LM calcium concentration tended to increase (P = 0.14) with vitamin D3 supplementation (154, 176, and 183 microig/g, fresh basis, for 0, 5, and 7.5 million IU/d, respectively). After 7 d of aging, LM steaks from cows fed 7.5 million IU had lower (P < 0.05) WBSF values than 7-d steaks from controls and cows fed 5.0 million IU/d aged 7 d; however, vitamin D3 supplementation had no (P > 0.05) effect on WBSF values of ST steaks aged 7 d. Vitamin D3 supplementation did not (P > 0.05) affect sensory tenderness ratings for either LM or ST steaks at any aging period. Aging, however, had a linear (P < 0.001) effect on tenderness, with an increase in tenderness as aging time increased from 0 to 21 d. Thus, results from the present study indicate that vitamin D3 supplementation, at these levels and duration before slaughter, provided little benefit to muscle tenderness of beef from cull cows.  相似文献

Forty USDA Select and 40 upper two-thirds USDA Choice beef carcasses were used to determine the effects of postmortem aging on tenderness of 17 individual beef muscles. Biceps femoris-long head, complexus, gluteus medius, infraspinatus, longissimus dorsi, psoas major, rectus femoris, semimembranosus, semitendinosus, serratus ventralis, spinalis dorsi, supraspinatus, tensor fasciae latae, teres major, triceps brachii-long head, vastus lateralis, and vastus medialis muscles were removed from each carcass. Seven steaks (2.54-cm thick) were cut from every muscle, and each steak was assigned to one of the following postmortem aging periods: 2, 4, 6, 10, 14, 21, or 28 d postmortem. After completion of the designated aging period, steaks were removed from storage (2 degrees C, never frozen), cooked to a peak internal temperature of 71 degrees C, and evaluated using Warner-Bratzler shear force (WBSF). Analysis of WBSF revealed a 3-way interaction (P = 0.004) among individual muscle, USDA quality grade, and postmortem aging period. With the exception of the Select teres major, WBSF of all muscles (both quality grades) decreased with increasing time of postmortem storage. Nonlinear regression was used to characterize the extent (aging response) and rate of decrease in WBSF from 2 through 28 d postmortem for each muscle within each quality grade. In general, WBSF of upper two-thirds Choice muscles decreased more rapidly from 2 to 10 d postmortem than did corresponding Select muscles. Muscles that had greater aging responses generally had greater 2-d WBSF values. The upper two-thirds Choice psoas major, serratus ventralis, and vastus lateralis muscles required similar aging times to complete a majority of the aging response (< or =0.1 kg of aging response remaining) compared with analogous Select muscles. The upper two-thirds Choice complexus, gluteus medius, semitendinosus, triceps brachii-long head, and vastus medialis muscles required 4 to 6 d less time to complete a majority of the aging response than did comparable Select muscles. Aging times for Select biceps femoris-long head, infraspinatus, longissimus dorsi, rectus femoris, semimembranosus, spinalis dorsi, supraspinatus, and tensor fasciae latae muscles were > or =7 d longer than those for corresponding upper two-thirds Choice muscles. Results from this study suggest that muscle-to-muscle tenderness differences depend on quality grade and aging time and that postmortem aging should be managed with respect to individual muscle and USDA quality grade.  相似文献

We investigated the effects of calpain-system genetic markers on consumer beef quality ratings, including interactions of marker effects with hormonal growth promotant (HGP) use and tenderstretch hanging. Brahman cattle in New South Wales (NSW; n = 164) and Western Australia (WA; n = 141) were selected at weaning from commercial and research herds to achieve balance and divergence in calpastatin (CAST) and calpain 3 (CAPN3) gene marker status. Genotypes for μ-calpain (CAPN1-4751 and CAPN1-316) were also determined. Angus cattle (49 in NSW, 17 in WA) with favorable CAST and CAPN3 alleles, balanced for CAPN1-316 status, were also studied. Half the cattle at each site had HGP (Revalor-H, containing 200 mg trenbolone acetate and 20 mg 17β-estradiol) implants during grain finishing. One side of each carcass was suspended from the Achilles tendon (AT) and the other from the pelvis [tenderstretch (TS)]. Meat Standards Australia consumer panels scored 7-d aged striploin steaks from both AT and TS sides, and 7-d aged rump and oyster blade steaks from the AT side of each carcass. Two favorable CAST alleles increased tenderness ratings of AT-striploin, TS-striploin, rump, and oyster blade steaks by, respectively, 6.1, 4.2, 4.2, and 3.1 units, and overall liking by 4.7, 2.8, 2.9, 3.7 (all P < 0.04). Two favorable CAPN1-4751 alleles increased tenderness of AT-striploin, TS-striploin, and rump steaks by 6.5, 4.3, and 3.9 units, and overall liking by 5.6, 3.1, and 4.1 units. Two favorable CAPN3 alleles improved rump steaks by 3.7, 3.3, 3.7, and 3.5 units, for tenderness, juiciness, liking the flavor, and overall liking. There were no significant CAPN1-316 effects. The effect of HGP was greatest for the AT-striploin (reducing tenderness and overall liking by 8.2 units, P < 0.001), then TS-striploin (-5.6 for tenderness, -5.0 for overall liking, P < 0.001), and then rump (-4.4 for tenderness, -3.3 for overall liking, P < 0.007). Processing conditions differed considerably between NSW and WA. Rump steaks from NSW scored about 10 units greater than those from WA, but Angus and Brahman steaks from the same location with the same marker alleles had similar scores. In contrast, NSW Angus striploin steaks scored about 15 units greater for tenderness and overall liking (P < 0.001) than cattle with the same marker alleles at the other 3 location × breed combinations, which had generally similar scores. Therefore, calpain-system gene markers have beneficial effects on eating quality, consistent with our previous findings for objective meat quality.  相似文献

Two experiments were conducted to investigate mechanical measures of tenderness on uncooked USDA Select longissimus muscle as a means to predict Warner-Bratzler shear force (WBSF) and trained sensory panel tenderness (SPT) of cooked steaks. In Exp. 1, strip loins (n = 24) were aged 14 d postmortem and fabricated into steaks (2.54 cm). Medial, center, and lateral locations within uncooked steaks were evaluated by a plumb bob device and correlated with WBSF and SPT of cooked steaks. In Exp. 2, 24 strip loins were used to evaluate how well plumb bob and needle probe devices used on uncooked steaks predicted WBSF and SPT of cooked steaks. At 2 d postmortem, two steaks were fabricated from the anterior end. One uncooked steak (2.54 cm) was assigned to the plumb bob treatment and the other uncooked steak (5.08 cm) was assigned to needle probe treatment. At 14 d postmortem, one uncooked steak (5.08 cm) was assigned to needle probe treatment, a second uncooked steak (2.54 cm) was assigned to plumb bob treatment, whereas the remaining steaks (2.54 cm) were cooked and evaluated by a trained sensory panel and WBSF device. In Exp. 1, average plumb bob values were negatively correlated (P < 0.05) to average SPT scores (r = -0.48). However, correlations between WBSF and plumb bob values for medial, lateral, and average of all sections were not significant (P > 0.05). In Exp. 2, regression models to predict SPT from needle probe and plumb bob measurements individually taken at 2 d postmortem had R2 of 0.54 and 0.51, respectively. Combining needle probe and plumb bob measurements resulted in an R2 of 0.76; when quadratic terms for both variables were in the model, the R2 was 0.80. Regressing needle probe and plumb bob measurements at 2 d postmortem with WBSF produced R2 values of 0.51 and 0.45, respectively. If linear terms of both probes were combined to predict WBSF, the R2 increased to 0.77. An equation to predict WBSF, including both the linear and quadratic terms of needle probe and plumb bob measurements, resulted in an R2 of 0.84. Using plumb bob and needle probe devices on uncooked longissimus muscle at 2 d postmortem can predict cooked WBSF and SPT of USDA Select Grade steaks at 14 d postmortem.  相似文献

The present experiment was conducted to provide a validation of a previously developed model for online classification of US Select carcasses for LM tenderness based on visible and near-infrared (VISNIR) spectroscopy and to determine if the accuracy of VISNIR-based tenderness classification could be enhanced by making measurements after postmortem aging. Spectroscopy was conducted online, during carcass grading, at a large-scale commercial fed beef-processing facility, and the strip loin was obtained from the left side of US Select carcasses (n = 467). Slice shear force (SSF) was measured on fresh steaks at 2 and 14 d postmortem. Online VISNIR tenderness classes differed in mean SSF values at both 2 d (29.4 vs. 33.6 kg) and 14 d (18.0 vs. 21.2 kg) postmortem (P < 10(-7)). Online VISNIR tenderness classes differed in both the percentage of carcasses with LM SSF values greater than 40 kg at 2 d postmortem (5.1 vs. 21.0%; P < 10(-6)) and the percentage of carcasses with LM SSF values greater than 25 kg at 14 d postmortem (6.8 vs. 23.2%; P < 10(-5)). Whereas 15.0% of the carcasses sampled for this experiment had LM SSF values greater than 25 kg at 14 d postmortem, only 6.8% of the carcasses classified as tender by VISNIR had LM SSF values greater than 25 kg. All the carcasses sampled that had LM SSF values greater than 35 kg at 14 d postmortem were accurately classified as tough by VISNIR. Before measurement of SSF on d 14, VISNIR spectroscopy was conducted on the SSF steak. Tenderness classes based on d 14 VISNIR spectra differed both in mean SSF value at 14 d postmortem (17.7 vs. 21.6 kg; P < 10(-11)) and the percentage of carcasses with LM SSF values greater than 25 kg at 14 d postmortem (7.3 vs. 22.7%; P < 10(-5)). These data support our previous work showing that VISNIR spectroscopy can be used to classify US Select carcasses noninvasively for LM tenderness, and the results establish that this technology could also be applied to aged US Select strip loins. This technology would allow packing companies and other segments of the beef marketing chain to identify US Select carcasses or strip loins that excel in LM tenderness for use in branded beef programs.  相似文献

Calpastatin (CAST) is a naturally occurring protein that inhibits the normal tenderization of meat as it ages postmortem. A SNP was identified in the CAST gene (a G to C substitution) and genotyped on crossbred commercially fed heifers (n = 163), steers (n = 226), and bulls (n = 61) from beef feedlots, and steers (n = 178) from a University of Guelph feeding trial. The association of the CAST SNP with carcass and meat quality traits was studied. Carcass traits included fat, lean, and bone yield; grade fat; LM area; and HCW. Meat quality traits included marbling grade; i.m. fat content of LM; tenderness evaluation of LM (Warner-Bratzler shear force) at 2, 7, 14, and 21 d of postmortem aging; and tenderness evaluation of semitendinosus muscle at 7 d of postmortem aging. The mixed model used in the analyses included fixed effects of CAST genotype, sex, slaughter group, and breed composition (linear covariate); sire was a random effect. For the analysis of shear force, i.m. fat content of LM was also included in the model as a linear covariate. Shear force measures were analyzed within days of postmortem aging and by repeated measures analysis. The CAST SNP allele C was more frequent (63%) in the crossbred population than allele G. The CAST SNP was associated with shear force across days of postmortem aging (P = 0.005); genotype CC yielded beef that was more tender than GG (-0.32 kg +/- 0.13), and CG had intermediate tenderness. The corresponding average allele substitution effect (G to C substitution) was also highly significant (-0.15 +/- 0.05 kg, P = 0.002). A lower percentage of unacceptably tough steaks (shear force > 5.7 kg) at 2 and 7 d postmortem was associated with an increasing number of C alleles (P < or = 0.05). At 7 d postmortem, the percentage of unacceptably tough steaks decreased by 24 and 35%, respectively, for animals carrying 1 and 2 copies of the C allele relative to animals with no C alleles. However, genotype CC had a greater fat yield (+1.44 +/- 0.56%; P = 0.037) than genotype GG, with a corresponding allele substitution effect of 0.67 +/- 0.27% (P = 0.015). Therefore, the CAST SNP allele C was associated with increased LM tenderness across days of postmortem aging and, importantly for the beef industry, had a significant reduction in the percentage of steaks rated unacceptably tough by consumers based on an assumed threshold level.  相似文献

Consumer acceptance of calcium chloride-marinated top loin steaks   总被引:1,自引:0,他引:1  
In this study, a multi-city, retail consumer survey was used to determine whether marinating in calcium chloride at 72 h postmortem improves consumer and trained sensory panel evaluations of beef loin steaks, Warner-Bratzler shear force (WBSF) values, and the value of CaCl2 marinades to improve tenderness in a national consumer market. Boneless strip loin subprimals (n = 8) were obtained from eight, not electrically stimulated, USDA Standard-grade carcasses, halved, and alternating ends were marinated with 200 mM CaCl2 at 5% (wt/wt) or not injected (controls). Strip loins were then aged for 7 d in vacuum packages at 2 degrees C before WBSF, trained or consumer evaluations. Four trained research teams traveled on the same 7-d period to collect the consumer data. Consumers (n = 393; minimum of 10 consumers/panel, three panels/store, three stores/city, and four cities) varying widely in income level, education, and gender evaluated the steaks for tenderness, beef flavor, juiciness, and overall quality in each of three supermarkets in major cities (Los Angeles, CA; Baltimore, MD; Chicago, IL; and Dallas, TX). The average improvement (P < 0.05) in WBSF for steaks marinated with CaCl2 was 1.39 kg. Trained panelists scored marinated steaks higher (P < 0.05) than control steaks in sustained juiciness (6.00 vs. 5.09), beef flavor (6.31 vs. 5.64), and overall mouth-feel (5.98 vs. 4.93). Consumers also rated marinated steaks higher (P < 0.05) than control steaks in juiciness (5.98 vs. 5.45), beef flavor (6.70 vs. 6.05), tenderness (6.75 vs. 5.89), and overall quality (6.68 vs. 6.20). Consumers in this study would pay dollar 0.95/kg more for steaks marinated with CaCl2, adding dollar 21.64 to the value of a loin from tough carcasses. These results indicate that consumers can differentiate tenderness levels and are willing to pay a premium for calcium chloride marinating to effectively improve the quality of beef loin steaks.  相似文献

Jersey cattle are known for producing carcasses with a greater amount of marbling, but they require more days on feed to achieve acceptable market weights compared with other breeds. The objective of this study was to evaluate the effect of dietary forage (12 vs. 24% sudangrass:alfalfa hay, DM basis) in steam-flaked, corn-based finishing diets on carcass characteristics, beef palatability, and retail color stability of steaks from Jersey beef compared with conventionally fed commodity beef strip loins (COM) of identified quality (Choice(-) and Select(+)). Jersey steers (n = 77) were blocked by BW and randomly assigned to 1 of the following treatments for a 383-d trial period: Jersey low 12% (JL; n = 38) or Jersey high 24% (JH; n = 39) forage (DM basis). A comparison group was selected from conventionally fed cattle on the same day of slaughter as the Jersey treatments, and strip loins from USDA Select(+) (COM; n = 20) and Choice(-) (COM; n = 20) were removed for data analysis. Seventy-two hours postmortem, strip loins were removed, vacuum-packaged, and aged at 3°C for 18 d postmortem. After the aging period, steaks from the LM were sliced, vacuum-packaged, and frozen (-20°C) until analyzed. Jersey steaks had reduced (P < 0.05) Warner-Bratzler shear force values compared with COM steaks. Trained sensory panelists rated JL greater (P < 0.05) for initial and sustained tenderness and initial juiciness than COM, whereas JH was intermediate. As expected, marbling was greater (P < 0.05) for both JL and JH compared with COM, and trained sensory panel sustained juiciness, beef flavor intensity, and overall acceptability scores were greater (P < 0.05) for both JL and JH compared with COM; however, no differences (P = 0.14) were reported for consumer tenderness and flavor. Objective color (L*, a*, b*) measurements decreased (P < 0.05) over time across treatments. There were no differences among treatments for lightness (L*); however, overall during retail display JL were less (P < 0.05) red (a*) and yellow (b*) than JH and COM. Subjective color scores indicated both JL and JH were less red (P < 0.05) than COM. Steaks from Jersey were equal to and on some measurements more desirable than steaks from COM carcasses for both color stability and palatability. These results suggest that dietary forage level had minimal effects on carcass characteristics and beef palatability. However, feeding a low-forage diet decreases input cost and potentially results in a greater valued carcass. Finishing long-fed (383 d) Jersey steers can meet beef industry expectations with respect to quality grade.  相似文献

Boneless top loin subprimals (n = 320) from Slight and Small marbled carcasses were fabricated into 2.54-cm thick steaks to determine core location effects on tenderness. In Exp. 1, top loins were aged to 7 d before steaks were cut and cooked to an internal temperature of 71 degrees C. After cooking, a maximum of 15 1.27-cm diameter cores were removed and sheared with a Warner-Bratzler shear force (WBSF) device. There was not a marbling score x core location interaction (P = 0.36). However, there was a main effect of core location (P < 0.01). Cores from the medial, middle, and lateral portion of the longissimus muscle (LM) aged for 7 d differed, with less resistance (P < 0.05) in the medial than the lateral end. Also, there was an effect of marbling score on WBSF, with Small-marbled steaks having lower (P < 0.02) WBSF values than Slight-marbled steaks. In a second experiment, steaks were removed from the middle of the top loin subprimals and aged an additional 7 d to produce 14-d aged steaks. Shear values decreased (P < 0.05) from Exp. 1 to 2 for all core locations. Neither the main effect of marbling score nor the core location x marbling score interaction was significant (P > 0.40); however, the same lateral to medial gradient in WBSF values was discovered again in Exp. 2. Both experiments indicated there were regions of WBSF values that differed (P < 0.05) across the cross section of the LM producing a shear-force/tenderness gradient, with the most medial cores having the lowest WBSF values in both experiments independent of marbling score. Regression analyses indicated the middle and center portions of LM steaks tended to have the most predictive capacity of average WBSF. Because of the variability in tenderness caused by location within the LM, care should be exercised when selecting sampling areas for the measurements of tenderness using the WBSF measure.  相似文献
