魔芋葡甘聚糖溶胶粘度的对数(lgη)与浓度正相关,表现出非牛顿流体特征。而且在浓度<0.5%、浓度为0.5%~1.0%、浓度为1%~2%、浓度>2%时,分别出现稀溶液、中间过渡溶液、浓溶液、冻胶(含部分切变稀化过渡范围)特性。溶胶粘度随温度上升而降低。在增塑剂作用下,浓度增加,流动性增强;补强剂使其粘度增加,而流动性减弱。魔芋葡甘聚糖溶胶流变特性的研究为魔芋高强度可食性薄膜的成膜提供了理论依据。 相似文献

通过研究魔芋葡甘聚糖(KGM)溶胶粘度(η)分别与浓度、温度、溶胀时间及剪切速率的相关性,结果表明KGM的流变特性呈明显的非线性变化规律。KGM的η随浓度(C)增加呈指数关系递增;用三次多项式能良好拟合温度效应曲线和溶胀速率曲线;KGM溶胶属典型的假塑性流体,其流变曲线符合幂定律,进一步得出了粘性系数K和流动指数n随浓度和温度的变化趋势,其关系曲线可分别用幂函数和二次多项式拟合。实验得到效应的非线性曲线拐点,即浓度(0.70%)、温度(50℃)、时间(40 min),以及K和n的非线性变化曲线,为KGM在食品工业中的合理应用和其质量评价提供可靠依据。 相似文献

针对魔芋葡甘聚糖(KGM)分子结构特性进行羧甲基化方法的改进,在乙醇介质中先混合醚化试剂,再进行碱化催化反应制备羧甲基魔芋葡甘聚糖(CMK)。通过单因素和正交试验,对其改性反应条件进行优化,以取代度(DS)和表观黏度(η)为评价指标,综合二者确定羧甲基化的最佳条件为:55℃、pH12反应3.0 h。产物DS可高达0.5278,最大η为15.57 Pa·s。同时,运用红外光谱分析对KGM羧甲基化反应历程进行了探讨,所得CMK溶胀速率快,水溶胶透光率高。 相似文献

该文研究了魔芋葡甘聚糖-丙烯酸接枝共聚物(KSAP)和通用干燥剂硅胶、蒙脱石在几种环境湿度下的吸湿特性,并分析它们吸湿后在干燥环境(RH(10±1)%,(25±1)℃)中的解吸性能。结果表明:在RH(30±1)%,(25±1)℃下,硅胶和蒙脱石在9 d时的吸湿率为15%,KSAP为12%,而在RH(75±1)%,(25±1)℃和RH(90±1)%,(25±1)℃的环境中,KSAP在9 d时吸湿率分别达到70%和120%,且干燥环境中的保水能力强。同时运用红外光谱(IR)和扫描电镜(SEM)对KSAP进行结构分析,IR结果表明KSAP富含-OH和-COO-亲水基团,SEM图说明KSAP为多网格物理结构。 相似文献

以魔芋葡甘聚糖为原料,分别采用苯甲酸、醋酸和没食子酸对魔芋葡甘聚糖进行酯化改性,研究了改性pH值、温度及改性处理时间对改性产物吸附空气中SO2和抑菌效果的影响,优化了改性工艺参数,得到了有较好使用效果的天然的有机大分子空气净化材料.研究结果表明:当采用苯甲酸为魔芋葡甘聚糖酯化改性剂时,改性产物对空气中的SO2吸附效果和抑菌作用效果优于使用醋酸和没食子酸的改性产物.其改性处理温度50℃,反应时间2 h,pH值3,改性反应产物对空气中SO2的吸附率可达98.7%,抑菌率可达到86.3%. 相似文献

Enzymes from a balanced human gut flora are promising tools to design prebiotic oligosaccharides. In this study, we investigated the action of enzymes from fecal bacteria on the complex polysaccharide konjac glucomannan (KGM). The oligosaccharides produced were compared to oligosaccharides from KGM digests with fungal endo-β-(1,4)-glucanase (EG) or endo-β-(1,4)-mannanase (EM). For this purpose, the oligosaccharides from the different digests were first studied for their structural characteristics like monosugar composition and exo-enzymatic degradability, as monitored by capillary electrophoresis with laser-induced fluorescence detection. Whereas the oligosaccharides produced by EG and EM were characteristic for the selectivity of the respective enzyme in cleaving the mannose-/glucose-sugar linkages of KGM, oligosaccharides produced by the fecal enzymes did not point to a sugar-selective degradation. The oligosaccharide fragments from the different digests indicated the KGM polysaccharide to be composed of a backbone composed of short mannose and glucose sequences, to which branches rich in mannose are attached. 相似文献

魔芋葡甘聚糖(konjac glucomannan, KGM)和聚乙烯醇(poly(vinyl alcohol), PVA)以戊二醛进行交联,成功制备了一种新的互穿聚合物网络(interpenetrating polymer networks, IPN)。以传统的流延法于室温下干燥2 d,得40 μm厚透明IPN膜。以傅立叶红外光谱、扫描电镜、示差扫描量热法、X-射线衍射和紫外可见光谱等表征了膜的结构。结果表明:由于交联键的产生,PVA和KGM分子间发生了强烈的相互作用,当反应时间达到4 h时,分子间达到了完全混溶。拉伸强度、断裂伸长率大大高于而吸湿性显著低于纯PVA膜、KGM膜以及它们的简单共混膜,亦即IPN结构的产生赋予了膜优异的性能。 相似文献

The aim of this study was to determine effects of konjac glucomannan (KGM) in a high fat corn oil diet on risk factors of colon carcinogenesis, that is, fecal β-glucuronidase, mucinase, and bile acids, and on preventive factors, that is, fecal microflora and cecal short-chain fatty acids (SCFAs). Sprague-Dawley rats (n = 8 animals per group) were fed a normal-fat fiber-free (5% corn oil, w/w) or high-fat (25% corn oil, w/w) diet containing no fiber, KGM (5%, w/w), or inulin (5%, w/w, as a prebiotic control) for 4 weeks. Results indicated that the high-fat fiber-free diet significantly elevated the fecal β-glucuronidase and mucinase activities and total bile acid concentration and decreased cecal SCFA contents, as compared with its normal-fat counterpart. The incorporation of KGM, as well as inulin, into the high-fat fiber-free diet beneficially reduced the fecal β-glucuronidase and mucinase activities and lithocholic acid (secondary bile acid) concentration. Although KGM elevated the daily fecal total bile acid excretion, the change was due to the primary, instead of the secondary, bile acids. In addition, KGM beneficially promoted the daily fecal excretion of bifidobacteria and lactobacilli and cecal SCFA contents, as compared with the high-fat fiber-free diet. Therefore, the present study suggests that KGM potentially attenuated the high fat-induced risk in colon carcinogenesis. 相似文献
