The purpose of this work was to determine the effect of transport of cattle from the farm to the abattoir on the animal's welfare and post mortem meat quality (instrumental and sensorial). Thirty-nine commercial journeys were followed in Spain from July 2000 to July 2001 at varying distances from a local abattoir in the city of Zaragoza. Blood samples were taken at the farm and at sticking and meat pH24 was measured at 24 hours post-mortem. Samples from the M. longissimus dorsi thoracis were taken from 48 slaughter bulls and analysed in terms of instrumental and sensorial qualities. Cortisol, glucose, CPK, lactate and N:L ratio increased during transport compared to control values. Cortisol was higher after 1-2 h transport compared to journeys that were less than 1 h or more than 2 h long. In general the parameters indicated slightly more stressful conditions under winter conditions than in the summer. Meat tenderness measured by a Warner-Bratzler device demonstrated that there was no significant effect of either transport time or season. There was no significant change in pH24 or meat colour at 24 h with transport time. Transport time had a significant effect (p < 0.05) on overall liking and animals transported in summer had slightly more tender meat and higher overall liking.  相似文献

A total of 150 Large White cross Landrace pigs (110-120 kg) of both sexes were used to investigate the effects of three different lairage times (0 h, 3 h, 9 h). Blood samples were collected at exanguination and cortisol, glucose, lactate, muscle enzymes and haematological parameters were determined. Post-mortem measurements of muscle pH were taken at 20 min, 2 h and 24 h from Longissimus thoracis and Semimembranosus. Lairage time showed a significant effect on pH24, internal muscle reflectance using the fibre optic probe (FOP24), red blood cells, neutrophils and lymphocytes, glucose and enzymatic activities. Changes in blood profile and meat quality parameters indicated that three hours of lairage in Spanish commercial conditions may reduce the amount of stress exhibited by pigs at slaughter and better meat quality can be obtained. No lairage or an excessively long lairage period without food may compromise animal welfare and meat quality.  相似文献

The analyzed material included 40 hybrid rabbits slaughtered at the age of 90 days. The control group was transported directly after weaning, while the transport group was transported directly prior to slaughter. The experiment was designed to assess the transport stress, carcass and meat quality implications, taking into account the muscle type and sex. The transported animals were characterized by a higher level of blood cortisol, glucose and triglycerides (P < 0.0001), and a lower level of insulin (P < 0.0001) compared to the control group. In the presented study the time post‐mortem affected the pH decline in both rabbit groups (P < 0.0001). The lightness, redness and yellowness of rabbit meat were affected by the transport (P < 0.0001, P = 0.001 and P < 0.0001). The percentage of free water and its share in the total water was higher for the non‐transported rabbits compared to the transported ones (P < 0.0001). Moreover, the meat from the control group was characterized by greater plasticity compared to the transport group (P = 0.003). The chemical composition of rabbit meat was not changed by the effect of transport (P = 0.643–0.979). To conclude, the quality traits of meat from the transported hybrid rabbits clearly indicated the development of dark firm and dry‐like lower quality of meat.  相似文献

随机选择36只黑白花兔和32只福建黄兔作为试验动物,对2个家兔种群早期生长发育、饲料转化率、屠宰性能和肉质特性进行比较研究。结果表明:黑白花兔不同日龄体重均低于福建黄兔;黑白花兔在生长后期(62~90日龄)饲料转化率极显著低于福建黄兔(P0.01);黑白花兔90日龄屠宰全净膛率与福建黄兔差异不显著(P0.05),其半净膛率比福建黄兔多1.57百分点,差异极显著(P0.01);背最长肌pH值、剪切力、滴水损失和后大腿肌熟肉率黑白花兔与福建黄兔差异均不显著(P0.05),说明黑白花兔也具有较好的肌肉品质,但生长速度相对较慢。  相似文献

Tannins were recently evaluated as feed additives in order to increase antioxidant compounds in animal diet, mainly to enhance resistance to lipid oxidation in meat. Rabbit meat is one of the most susceptible animal products, thus the main aim of this study was to evaluate the capacity of tannins to elongate shelf life of rabbit meat. Ninety hybrid rabbits were fed with three different diets: basal diet (control, C) and basal diet supplemented with 0.3% or 0.6% of tannins mix. Meat samples were refrigerated as raw at 4°C up to 11 days and analysed both as raw and cooked for physical‐chemical characteristics, fatty acids profile, lipid oxidation and antioxidant capacity. Results showed that dietary tannins affected meat colour of raw samples (mostly yellowness). Lipid peroxidation (TBARS) of raw samples was lower in tannins group than C group; a further inhibition of peroxidation was showed also in cooked samples only by the highest dose of tannins mix. Moreover, antioxidant capacity (ABTS) of raw samples increased with the percentage of tannins. In conclusion, supplementation with 0.6% of tannins mix seems to positively affect the lipid peroxidation and antioxidant capacity of meat without modifying the intrinsic characteristics of rabbit meat.  相似文献

Livestock transport exposes animals to a range of potential stressors that may compromise their welfare and final product quality, and those effects typically increase with the distance travelled. In North America, producers often use pot-belly vehicles for long hauls but little is known about their suitability for transporting lambs. We followed two long-distance trips using pot-belly trailers carrying 500 lambs (each) from Northern to Central Mexico in winter, to measure possible effects on animal welfare and meat quality. Sixty lambs per trip were placed at different locations within the pot-belly trailer. Animals were equipped with iButton Thermochron® temperature devices, which registered body temperature throughout pre- and post-slaughter stages. Despite the rather cool winter conditions, lambs placed in the “belly” and “nose” compartments had higher body temperatures at loading, during transport and lairage and after slaughter (carcass temperature). Those lambs also had higher levels of plasma cortisol, glucose and creatine kinase (CK), and a higher neutrophil/lymphocyte ratio. Regarding meat quality, ultimate pH (24 h) was higher in all locations, especially in LT4 location. Overall, the results suggest a link between thermal stress during transport, elevated physiological indicators of stress and poorer meat quality.  相似文献

This study determined whether transporting lambs on paved (PR) or unpaved roads (UR) for 3 h had an effect on plasma stress indicators (cortisol, lactate, glucose, creatine kinase [CK], red blood cells, white blood cells, hematocrit, and neutrophil/lymphocyte [N/L] ratio) and instrumental meat quality (pH24, bruising score, water holding capacity [WHC], color, and texture). A total of 48 Rasa Aragonesa male lambs were used that were approximately 100 days old (12.5 kg ± 1.64, carcass weight). The results suggest that transport on unpaved roads had a significant influence on physiological and hematological stress parameters. Road type had a significant effect on all variables, except for white and red blood cells, and hematocrit levels. The UR lambs had significantly higher (at least p ≤ 0.01) cortisol, lactate, glucose, and CK levels and a higher N/L ratio than PR lambs. Meat from UR lambs had some dark-cutting characteristics, with a darker color, higher ultimate pH, and higher tenderness values than PR. In conclusion, lambs transported on unpaved roads had a more intense stress response and poorer meat quality than lambs transported on paved roads. An effort to improve the logistics associated with route planning is necessary to prevent welfare problems during transport to slaughter.  相似文献

Relationships between residual feed intake (RFI) and other performance variables were determined using 54 purebred Angus steers. Individual feed intake and BW gain were recorded during a 70-d post-weaning period to calculate RFI. After the 70-d post-weaning test, steers were fed a finishing ration to a similar fat thickness (FT), transported to a commercial facility, and slaughtered. A subsample of carcasses (n = 32) was selected to examine the relationships among RFI, meat quality, and palatability. Steers were categorized into high (> 0.5 SD above the mean; n = 16), medium (mid; +/- 0.5 SD from the mean; n = 21), and low (< 0.5 SD below the mean; n = 17) RFI groups. No differences were detected in ADG, initial BW, and d 71 BW among the high, mid, and low RFI steers. Steers from the high RFI group had a greater DMI (P = 0.004) and feed conversion ratio (FCR; DMI:ADG; P = 0.002) compared with the low RFI steers. Residual feed intake was positively correlated with DMI (r = 0.54; P = 0.003) and FCR (r = 0.42; P = 0.002), but not with initial BW, d 71 BW, d 71 ultrasound FT, initial ultrasound LM area, d 71 ultrasound LM area, or ADG. The FCR was positively correlated with initial BW (r = 0.46; P = 0.0005), d 71 BW (r = 0.34; P = 0.01), and DMI (r = 0.40; P = 0.003) and was negatively correlated with ADG (r = -0.65; P = 0.001). There were no differences among RFI groups for HCW, LM area, FT, KPH, USDA yield grade, marbling score, or quality grade. Reflectance color b* scores of steaks from high RFI steers were greater (P = 0.02) than those from low RFI steers. There was no difference between high and low RFI groups for LM calpastatin activity. Warner-Bratzler shear force and sensory panel tenderness and flavor scores of steaks were similar across RFI groups. Steaks from high RFI steers had lower (P = 0.04) off-flavor scores than those from low RFI steers. Cook loss percentages were greater (P = 0.005) for steaks from low RFI steers than for those from mid RFI steers. These data support current views that RFI is independent of ADG, but is correlated with DMI and FCR. Importantly, the data also support the hypothesis that there is no relationship between RFI and beef quality in purebred Angus steers.  相似文献

Because of the increasing demand for raw cuts and processed products, there is a trend to producing very heavy broilers. Breeds that are used for such kinds of production have been intensively selected for growth rate and breast meat yield, and birds are reared for a longer period than standard broilers. This study was to evaluate the effects of increasing slaughter age on technical and economic factors, including production efficiency and environmental costs, bird welfare, and breast meat quality in a modern heavy broiler line. Five groups of 300 male Ross 708 chickens were reared until slaughter ages of 35, 42, 49, 56, or 63 d. Increasing age at slaughter from 35 to 63 d resulted in a 7.4-fold increase (P < 0.01) in mortality rate (5.21 vs. 0.70%). It also increased (P < 0.001) the slaughter weight and ADFI of birds 2.5- and 1.4-fold, respectively, without affecting their G:F. Under our experimental conditions, economic profit evaluated through the net gain reached a maximum at 42 d. The moisture and ammonium content of litter increased (P < 0.05 and P < 0.01, respectively) rapidly during rearing concomitantly with increased (P < 0.05) occurrence and severity of contact dermatitis and decreased (P < 0.05) walking ability and activity of birds. Thermal comfort also decreased (P < 0.05) greatly as early as 42 d of age. Changes in carcass quality occurred mainly between 35 and 56 d of age, with a progressive increase (P < 0.001) in breast and leg yield, whereas body fatness was barely affected by age. Major changes in breast meat traits were observed between 35 and 49 d of age, with an increase in muscle pH at 15 min (P < 0.01) and 24 h (P < 0.001) postmortem and reduced (P < 0.001) lightness and drip loss. The protein and lipid content of raw breast meat also increased (P < 0.05 and P < 0.01, respectively) with age. Taking into account the main aspects of sustainability, we could recommend slaughtering chickens of heavy line at 42 d of age.  相似文献

Birth and rearing conditions were evaluated for their effects on pig growth, body composition, and pork quality using 48 barrows during the spring and summer months. Pigs were either farrowed in indoor crates or outdoor huts. At weaning, indoor-born and outdoor-born pigs were randomly allotted to indoor or outdoor treatments for growing/finishing. Body weight data were collected. Pigs were transported 5 h to a commercial processing plant, allowed 2 h of rest, and then processed as a group under commercial conditions. Boneless loins were collected from the left side of each carcass and aged for 14 d. Objective and subjective color measurements were taken on the longissimus muscle at the 10th rib on d 14 postmortem. Loin chops were evaluated for sensory attributes, shear force, and retail display features. Pigs born outdoors were heavier and had greater ADG at all growth intervals after weaning (d 28, 56, 112, and final weight, P < 0. 05) than pigs born indoors. Outdoor-born pigs had heavier carcass weights (91.2 vs 81.3+/-3.4 kg, P < 0.001), larger loineye areas (54.6 vs 49.7+/-0.2 cm , P < 0.05), and higher pork flavor intensity scores (6.5 vs 6.1+/-0.10, P < 0.01) than indoor-born pigs. Birth x rearing environment interactions were not significant for most measures. Backfat measurements at the last rib were greater (3.2 vs 2.8+/-0.05 cm, P < 0.05) for the pigs reared outdoors than for the pigs reared indoors. Pigs finished outdoors had more reddish pink color scores, lower shear force values, and lower L* values, indicating darker-colored pork, compared with pigs finished indoors (P < 0.05). Pig birth environment played a significant role in improving growth rates of outdoor-born pigs and increasing pork flavor intensity scores of loin chops from pigs born outdoors. Finishing pigs outdoors may improve pork color and tenderness but also may increase backfat thickness when they are fed conventional diets.  相似文献

The objective of this experiment was to determine the effect of diverse production systems on pig performance, muscle characteristics, and their relation to pork quality measures. Birth and rearing conditions were evaluated using 48 barrows during the fall/winter months. Pigs were farrowed in either indoor crates or outdoor huts. At weaning, indoor- and outdoor-born pigs were allotted randomly to treatments arranged in a 2 x 2 factorial design with two birth (indoor vs. outdoor) and rearing (indoor vs. outdoor) environments. Pigs housed indoors were on concrete-slatted flooring (1.2 m2/pig), and pigs housed outdoors were on an alfalfa pasture (212 m2/pig). Body weight data were collected. Muscle samples were removed within 1 h postmortem from the longissimus (LM) and semimembranosus (SM) muscles. Muscle samples were stained histochemically to identify type I, IIA, and IIB/X muscle fibers. Boneless loins were collected from the left side of each carcass and aged for 14 d. Objective and subjective color measurements were taken on the longissimus muscle at the 10th rib on d 14 postmortem. Loin chops were evaluated for sensory attributes, shear force, and retail display features. Pigs born outdoors were heavier and had a greater ADG at most growth intervals postweaning (d 28, 56, and 112; P < 0.05) than pigs born indoors. Pigs reared outdoors were heavier (P = 0.02) at d 140 (120.1 vs. 112.9 +/- 4.9 kg), and had higher (P = 0.01) ADG (2.2 vs. 1.9 kg/d) and gain:feed ratios (0.41 vs. 0.37) than did pigs reared indoors. Birth x rearing environment interactions were not significant (P > 0.10) for most measures. Carcass and meat quality measures did not differ (P > 0.05) among treatment groups, but loin chops from outdoor born or reared pigs had higher (P < 0.05) a* values than chops from pigs born or reared indoors. The LM muscle of pigs born outdoors had a higher (P < 0.01) percentage of type I, and a lower (P < 0.05) percentage of type IIA fibers than did pigs born indoors. Pigs reared outdoors had a higher (P < 0.01) percentage of IIA fibers and a lower (P < 0.05) percentage of IIB/X fibers than did pigs reared indoors for the LM and SM muscles. Outdoor production systems may influence growth, pork color, and muscle fiber types.  相似文献

Reducing water waste, and therefore the total volume of manure produced, is one of the ways to lower the environmental impact of intensive pig farming. The aim of this trial was to verify whether the absence of additional fresh drinking water could compromise the production traits or behaviour of liquid-fed heavy pigs. Sixty animals (initial BW 78 kg) were divided into two experimental groups, both fed a liquid diet (water-to-feed ratio 3:1 w/w). All pens were equipped with nipple drinkers; one of the groups had permanent access to fresh water (working drinkers—WD), whereas the other group had no water supply except that delivered with food (dry drinkers—DD). The pigs were housed in temperature- and humidity-controlled rooms. They were brought to a weight of 160 kg and then slaughtered. Hams were dry-cured according to the directives for Parma ham production. No significant differences (P>0.05) were observed between the experimental groups with respect to growth parameters (ADG and FCR), behavioural traits, blood parameters or the qualitative traits of carcasses (dressing out, lean meat yield, backfat thickness), meat (pH, colour, WHC, fatty acid composition of subcutaneous fat and tenderness) and cured hams (weight losses, sensory properties, chemical composition and oxidative status). With respect to drinking behaviour, a low number of visits to the drinker were recorded for both groups and data seem to indicate a high amount of water wasted by pigs provided with additional water delivery by nipple drinkers. Liquid feeding did not suppress drinkers use or drinker manipulation in both groups.  相似文献

Four experiments were conducted to determine the effects of supplemental Trp on meat quality, plasma and salivary cortisol, and plasma lactate. Experiment 1 was a preliminary study to measure plasma cortisol concentrations in 4 barrows (50 kg of BW) that were snared for 30 s at time 0 min. Pigs were bled at -60, -30, -15, 2, 4, 6, 8, 10, 15, 20, 25, 30, 45, 60, 90, and 120 min. Plasma cortisol was near maximum 10 min after the pigs were snared. In Exp. 2, 20 barrows (50 kg of BW) were allotted to a basal corn-soybean meal diet or the basal diet with 0.5% supplemental l-Trp for 5 d. After the 5-d feeding period, pigs were snared for 30 s and bled at -10, 0, 2, 4, 6, 8, 10, 15, 20, 25, 30, 45, 60, 90, and 120 min after snaring. Pigs fed the diet with supplemental Trp had a lower (P < 0.01) mean plasma cortisol than pigs fed the basal diet. Plasma lactate also was decreased (P < 0.07) by supplemental Trp. In Exp. 3, the same pigs and treatments were used as in Exp. 2, but 5 pigs were snared and 15 pigs adjacent to those being snared were bled to determine if pigs are stressed when they are adjacent to pigs being snared. For pigs adjacent to snared pigs, the area under the curve (P < 0.06) and mean for plasma cortisol was lower (P < 0.01) in pigs fed Trp relative to those fed the basal diet. In Exp. 4, 90 barrows (initial BW of 106 kg) were allotted to 6 treatments in a 3 x 2 factorial arrangement. Three diets with Trp (basal diet, basal supplemented with 0.5% Trp for 5 d, or pigs fed the basal diet with a 0.1 g/kg of BW Trp bolus given 2 h before slaughter) were combined with 2 handling methods (minimal and normal handling). Dressing percent, 24-h pH, and 24-h temperature were reduced in the minimally handled pigs (P < 0.10) compared with the normally handled pigs. Pigs fed Trp in the diet relative to those fed the basal diet had increased 45-min temperature, Commission Internationale de l'Eclairage (CIE) redness (a*) and yellowness (b*) values, and drip and total losses (P < 0.10). Tryptophan in bolus form decreased 45-min pH in the minimally handled pigs but increased 45-min pH in the normally handled pigs (handling x Trp bolus interaction, P = 0.08). Tryptophan in the diet increased CIE lightness (L*) in minimally handled pigs but decreased CIE L* in the normally handled pigs (handling x Trp diet interaction, P = 06). No other response variables were affected by handling method or Trp. Results indicate that Trp decreases plasma cortisol but has no positive effect on meat quality.  相似文献

The study was conducted to evaluate the effects of different lairage time after 8 h road transport on some blood indicators of welfare and meat quality traits in sheep. A total of 84 Ujimqin male sheep (average body weight 27.5 kg, 6 months old) were randomly allotted to one of seven groups: one control group (untransported) and six lairage groups (8 h road transport with 0, 2, 6, 12, 24 and 48 h lairage times respectively). No significant lairage time effects were observed on weight loss. Sheep in 48 h group showed lower hot carcass weight, dressing percentage and higher pH24 h than that in other groups. The total haem pigment contents in sheep meat rose and were higher in 24 and 48 h groups than that in the control group. After transport, sheep in 0, 2, 24 and 48 h groups showed higher serum creatine kinase activities, cortisol and glucose concentrations than that in control group. Sheep in lairage groups had higher serum triiodothyronine and thyroxine levels compared with the control sheep. Sheep in 48 h group showed significant higher packed cell volume, total protein and blood urea nitrogen than that in other groups. Compared with the control group, the white blood cell counts were higher in 0 and 48 h groups. The neutrophil counts in 24 or 48 h groups were higher than that in the control group. The opposite was true for lymphocyte counts. A 6–12 h lairage is recommended in terms of the present transported pattern.  相似文献

The beta-adrenergic agonist Salbutamol was administered to pigs at 3 ppm in the feed between weaning and slaughter at 85 kg. Growth rate was not affected by Salbutamol. Treated pigs had a higher dressing percentage (2.6%) and produced carcasses that were less fat (17%) and had longissimus (LD) muscles of larger (11%) cross-sectional area. They also had smaller livers that contained less glycogen. The thinner backfat in treated animals was less firm and tended to separate from the underlying lean. However, these changes were attributable solely to the reduced fatness and there was no direct effect of Salbutamol. There were no differences in pH 45 min postmortem, percentage drip loss during storage or reflectance value of the LD between the two groups, indicating no greater propensity for Salbutamol-treated pigs to develop pale, soft, exudative muscle. However, treated pigs had higher final pH values in the muscles; this was reflected in slightly reduced hue and saturation values. These results suggest that the propensity of the pigs to develop dark, firm, dry meat was slightly increased. Salbutamol-treated pigs produced LD muscles that were slightly tougher (22%), had reduced concentration of heme pigments in the muscle, reduced plasma glucose and increased plasma creatine phosphokinase activity. Salbutamol improved lean meat yield but slightly increased the potential to produce dark, firm, dry meat and reduced tenderness.  相似文献

It has been demonstrated previously that regularly stroking and letting calves suck fingers leads to less avoidance and more approach behavior of the calves toward people. To examine whether these positive contacts affect the welfare and productivity of calves and the quality of veal meat we used 22 veal calves housed in individual crates. Half of them received minimal contact with the stockperson (controls), and the other half were given additional gentle contacts around meals, by stroking the calves and allowing them to suck the stockperson's fingers, during the entire fattening period (21 wk). Welfare was assessed through behavioral reactivity (reactions to handling, to surprise stimuli, and to novelty), neuroendocrine responses to stress (cortisol in response to an ACTH challenge, catecholamine-synthesizing enzymes), and health (number of medical treatments, abomasal lesions). Calf productivity was assessed through growth rates and meat quality through glycolytic potential (an estimator of resting glycogen level in muscle), pH, and color. Calves that received gentle contacts were less agitated (P < .01) and tended to defecate less (P = .08) when handled in a cart on wheels than the control calves, but no treatment effects were found in reactivity to novelty and surprise stimuli, responses to ACTH, and catecholamine synthetic potential. Calves given gentle contacts had fewer abomasal lesions than controls (0/11 vs 4/11, P = .05). The glycolytic potential of the semimembranosus muscle was higher in calves that received gentle contacts than in controls (172.6 vs 154.1 micromol/g, P < .05), but no treatment effects were observed on meat pH, meat color, or growth rates. It is concluded that gentling veal calves reduces their reactions to handling. Gentle contacts reduce the reaction to transport shown by differences in glycolytic potential. In addition, the reduction in reactions to handling and the decreased incidence of abomasal lesions can contribute to an improvement of the calves' welfare.  相似文献
