The association between salmonellosis in man and the infection in food animals has been clearly established. There is, moreover, little doubt that abattoir by-products, effluent and solid waste may allow the recycling of infection in animals. The potential hazard posed by salmonellosis to human and animal health will be reduced only by a greater control over the slaughter of infected farm livestock, improved isolation and casualty slaughter accommodation, a stricter control of slaughterhouse hygiene and the provision and full utilisation of adequate laboratory facilities for the bacteriological examination of meat and the abattoir environment.  相似文献

Detection of a case of BSE in slaughtered cattle causes considerable expenses. It seems therefore desirable to screen cattle before slaughtering and exclude suspect animals from slaughter. The object of this study was to determine the practicability of such screening under realistic conditions in a large slaughterhouse and to evaluate the specificity of the tests proposed by BRAUN et al. (1997). 949 cattle over 24 months old were examined in the Munich slaughterhouse. Spontaneous behaviour and the reaction to tactile, acoustic, and optical stimuli only could be tested. The evaluation of locomotion was not possible without interference with the routine processing of cattle before slaughter. The examination took about three minutes per animal. The results were evaluated using a modification of the scheme of BRAUN et al. (1997). The specificity of the classification "BSE very likely" was 97.8%. If all animals that exhibit any signs suggestive of BSE were to be excluded, the specificity would drop to 63.7%. This pre-slaughter clinical screening is not useful.  相似文献

In the slaughter processing of cattle, contaminated hides have been identified as one of the major sources of Escherichia coli O157 carcase contamination. Logistic regression analysis was applied to data collected in a large scale study in Scotland involving 222 cattle forming 34 groups sent for slaughter from 30 farms to 10 slaughterhouses. Aspects of individual animal characteristics, farm management practices and slaughterhouse features were examined to identify potential risk factors for hide contamination at harvest. Two models were developed, the first in which slaughterhouse was modelled as a fixed effect, and a second model where slaughterhouse and farm groups were modelled as random effects. In the first model, there was a significantly increased risk of a carcase testing positive for E. coli O157 on the hide if either the hide of the carcase immediately before or after it on the line was contaminated (OR 3.6; 95% CI: 1.4–9.9). If both adjacent carcases had contaminated hides, the odds ratio for the study carcase having a contaminated hide rose to 11.5 (95% CI: 4.4–32.5). If animals were held in lairage, receiving hay as feed appeared to have a protective effect on hide contamination. Transportation to the slaughterhouse by haulier, as opposed to transport by the farmer, was associated with a 5.4 increase in the odds of E. coli O157 contamination. The use of a crush in the lairage, often employed when reading ear tags, was also found to significantly increase the odds of hide contamination with E. coli O157. In the second model, the inclusion of slaughterhouse and farm group as random effects resulted in two of the previously identified factors being associated with hide contamination. If at least one of the adjacent carcases on the line had a contaminated hide, the associated odds ratio was 6.6 (95% CI: 2.8–15.9), which rose to 22.7 (95% CI: 9.3–55.5) if both adjacent hides were contaminated. Receiving hay in lairage was found to be important to the model, although not significant in itself (OR 0.005; 95% CI: 1.2e−6–20.7). These results suggest that modifiable risk factors for hide contamination exist. However, in order best to reduce the prevalence of hide contamination at slaughter, individual slaughterhouse risk assessment and intervention strategies are appropriate.  相似文献

Dromedary camels are implicated as reservoirs for the zoonotic transmission of Middle East Respiratory Syndrome coronavirus (MERS‐CoV) with the respiratory route thought to be the main mode of transmission. Knowledge and practices regarding MERS among herders, traders and slaughterhouse workers were assessed at Athi‐River slaughterhouse, Kenya. Questionnaires were administered, and a check list was used to collect information on hygiene practices among slaughterhouse workers. Of 22 persons, all washed hands after handling camels, 82% wore gumboots, and 65% wore overalls/dustcoats. None of the workers wore gloves or facemasks during slaughter processes. Fourteen percent reported drinking raw camel milk; 90% were aware of zoonotic diseases with most reporting common ways of transmission as: eating improperly cooked meat (90%), drinking raw milk (68%) and slaughter processes (50%). Sixteen (73%) were unaware of MERS‐CoV. Use of personal protective clothing to prevent direct contact with discharges and aerosols was lacking. Although few people working with camels were interviewed, those met at this centralized slaughterhouse lacked knowledge about MERS‐CoV but were aware of zoonotic diseases and their transmission. These findings highlight need to disseminate information about MERS‐CoV and enhance hygiene and biosafety practices among camel slaughterhouse workers to reduce opportunities for potential virus transmission.  相似文献

The aim of this study was to assess the diversity of thermotolerant Campylobacter spp. isolated from turkey flocks at six rearing farms 1-2 weeks prior to slaughter (360 faecal swab samples) and from 11 different stages at the slaughterhouse (636 caecal, environmental, neck skin and meat samples). A total of 121 Campylobacter isolates were identified to species level using a multiplex PCR assay and were typed by pulsed-field gel electrophoresis (PFGE) and flaA-short variable region (SVR) sequencing. All Campylobacter isolates were identified as Campylobacter jejuni. PFGE analysis with KpnI restriction enzyme resulted in 11 PFGE types (I-XI) and flaA SVR typing yielded in nine flaA-SVR alleles. The Campylobacter-positive turkey flocks A, C and E were colonized by a limited number of Campylobacter clones at the farm and slaughter. The present study confirms the traceability of flock-specific strains (PFGE types I, V and IX; flaA types 21, 36 and 161) from the farm along the entire processing line to meat cuts. It seems that stress factors such as high temperature of the defeathering water (54-56 °C), drying of the carcass skin during air chilling (24 h at 2 °C), and oxygen in the air could not eliminate Campylobacter completely. Campylobacter-negative flocks became contaminated during processing by the same subtypes of Campylobacter introduced into the slaughter house by preceeding positive flocks even if they were slaughtered on subsequent days. Proper and efficient cleaning and disinfection of slaughter and processing premises are needed to avoid cross-contamination, especially in countries with a low prevalence of Campylobacter spp. The majority of flaA SVR alleles displayed a distinct association with a specific PFGE type. However, a linear relationship for all strains among both typing methods could not be established. To specify genetic relatedness of strains, a combination of different genotyping methods, is needed.  相似文献

The pre-slaughter handling, behaviour and blood composition of beef cattle at slaughter was studied in a commercial slaughterhouse. The main problems identified were the routine use of driving instruments and delays caused by stoppages in the slaughter line. The plasma concentration of cortisol at the time of slaughter was positively correlated with the time spent standing still and with the time spent in the pre-stun pen. The plasma activity of creatine kinase was positively correlated with the time spent in the race, but no correlations between creatine kinase and physical activity in the race were found. The plasma concentration of glucose was positively correlated with the time spent trotting and the number of times that struggling occurred. The proportions of cattle struggling, vocalizing and defaecating were greatest when they were confined in the race and pre-stun pen. Cattle kept overnight in the lairage had a greater concentration of free fatty acids at the time of slaughter than those slaughtered on the day of arrival. There were no other significant differences in either the blood composition or the handling and behaviour of cattle kept overnight in the lairage, compared with those slaughtered on the day of arrival. Some of the handling problems observed were caused by incorrect design of the handling facilities. There should be some means of removing cattle from a race if delays are encountered and some means of handling the cattle in the race other than by using an electrical goad. The optimal dimensions of races and passageways to prevent crowding and turning around should be assessed at the design stage. Non-slip floors are essential.  相似文献

Most Salmonella control programmes are based on serological testing in the slaughterhouse. However, from a point of view of carcass contamination, it is rather the presence of Salmonella spp. in the animal at the time of slaughter that is important. The aim of this cross-sectional study was to investigate the possible discrepancies between the isolation of Salmonella spp. in the mesenteric lymph nodes and the results of serological screening. In total, 1821 fattening pigs originating from 60 Belgian farrow-to-finish herds were sampled in the slaughterhouse. The serum samples were analysed using an indirect mix-ELISA for the presence of Salmonella antibodies and evaluated at 3 cut-off values namely 10, 20, and 40% Optical Density (OD). All mesenteric lymph node samples were submitted to qualitative Salmonella isolation and a representative number of isolates was serotyped. From each herd, 30 animals were screened both serologically and bacteriologically and the herd was considered as positive when at least one sample was positive. At the herd level, 83.6% (cut-off OD 40%) to 100.0% (cut-off OD 10%) of the herds from which Salmonella had been isolated were evaluated as seropositive. At the individual level, only 34.5% (cut-off OD 40%) to 82.8% (cut-off OD 10%) of the animals from which Salmonella had been isolated were seropositive. Overall, a weak agreement was found between bacteriology and serology for Salmonella diagnosis. If pig herds are categorised using serological tests in the slaughterhouse, one should be aware of the fact that slaughter pigs can still harbour Salmonella spp. in the mesenteric lymph nodes, without being detected in serological tests. The cut-off value used to evaluate a sample as serologically positive and the number of samples per herd are of major importance to classify herds correctly in order to protect human health.  相似文献

Three groups of farmed red deer were shot in the field, three groups were slaughtered on the farm and three groups were transported to commercial slaughterhouses. The behaviour of the animals was observed and peripheral plasma cortisol concentrations were measured immediately after slaughter and neck muscle pH was measured 24 hours after slaughter. The deer could be handled and herded without agitation when only one unhindered direction was open to them and nothing in the environment caused alarm. Shallow angled loading ramps were preferable. Deer shot in the field and deer penned without handling had low average plasma cortisol concentrations (less than 7 ng/ml) and a muscle pH less than 5.74 whereas deer which had been herded on the farm, or transported to a slaughterhouse, had high cortisol concentrations (greater than 20 ng/ml) and a muscle pH above 5.74. However, only four of 66 male deer transported to a slaughterhouse had a muscle pH above 6.0, the pH associated with dark cutting meat in red deer.  相似文献

An investigation was conducted in Morogoro municipality to assess the likelihood of slaughter cattle posing public health risk of contaminating carcasses with thermophilic Campylobacter. Butchers and meat shopkeepers were interviewed on source of slaughter cattle, method of animal and carcass transportation, carcass dressing, meat storage facilities, access to clean water and availability of food hygiene practices. Faecal samples were collected from 107 slaughter cattle and after slaughter; four different parts of dressed carcasses (i.e. from ham, neck, pelvis and thigh muscles) were also sampled. In addition 107 cattle meat samples for Campylobacter culture were collected in different meat shops. The samples were subjected to standard bacteriological examination using Skirrows protocol. It was found that cattle slaughter, dressing and meat handling in meatshops was done under unhygienic condition. Thermophilic Campylobacter prevalence in slaughter cattle was 5.6% while contamination rate of dressed carcasses and cattle meat at shops was 9.3% and 1.9%, respectively. The majority of thermophilic Campylobacter isolated were C. jejuni (88.9%) while C. coli was isolated at 11.1%. Findings of this study suggest possibility of humans acquiring zoonotic Campylobacter infections from cattle meat particularly when meat preparation and processing is not done properly. More work is required to establish the magnitude of zoonotic enteric Campylobacteriosis in humans and epidemiological role of cattle and other animals in the study area.  相似文献

The reported number of human enteric diseases caused by thermotolerant campylobacters increased in the last few decades worldwide. The microorganism gets into the food chain mostly with poultry meat or meat products. We are not aware of the way the campylobacters infect the broiler flocks, and there is little information about the real prevalence, about the reaction of thermotolerant campylobacters to the environmental factors and about the possibilities of elimination of the bacteria from the food chain. As a part of the long study, samples were collected from a broiler flock from the first day of life to the slaughter of the animals, in summer and in winter. In the summer period, at the first two sampling days (days 0 and 12) all of the samples were negative. At day 26, one cloaca sample, one sample from the surface of the wall near the ventilation aperture and an insect-sample were positive. At day 42, we found Campylobacter spp. on every sampling point at the slaughterhouse. In the winter period, we could not find Campylobacter spp. either from 0 day old, or from 10- and 31-day-old chickens, but we found them at 42 days of age on the slaughter plant. At the slaughtering place, 93.3% of the live birds were infected with Campylobacter spp., and at the end of the processing line, the infection rate was 100%. We could isolate campylobacters from the hands of the workers and from the processing environment as well. Out of the positive samples, 95.5% was contaminated with Campylobacter jejuni.  相似文献

The judgement of the German Constitutional Court from February the 15th in 2002 allows Moslems to perform ritual slaughter, provided that they can state compelling religious reasons. Animal protection was assessed just as a public interest in contrast to the constitutional rights of religious and professional freedom. However this can not be kept up any more as it is aimed to integrate animal protection into the German constitutional law. The authorities now have the duty to investigate each request for ritual slaughter carefully. This investigation must include a close look at the compelling religious reasons, the expert knowledge of the applicant (which includes stunning methods), the local facilities of the slaughterhouse and which is more for whom the meat is for. It is also important whether the animal is slaughtered for sacrificial or commercial reasons. Furthermore the consequences which threaten the religious community, if their members don't live according to the rules, have to be shown. Electric stunning and the fact that it is accepted by Islamic authorities has also to be pointed out. It seems to be possible to turn down a request for ritual slaughter referring that to the fact that animal protection is aimed to be part of the constitutional law.  相似文献

The aim of this study was to evaluate the impact of the pre-slaughter process on Salmonella caecal contamination of pigs at slaughter. An observational study was carried out in 2001 on 101 conventional farrow-to-finish pig farms. On each farm, one batch of contemporary pigs was followed from the end of the fattening period until slaughter. The Salmonella bacteriological status of the batches was assessed by environmental samples of faecal material. The serological Salmonella status was obtained on 30 individually identified market-age pigs using an indirect ELISA test. At the slaughterhouse, 25 g of caecal contents were taken from 10 of the identified pigs. Faecal and caecal material were analysed according to a classical bacteriological method. A questionnaire was designed to obtain information about the type of feeding during the fattening period (dry versus wet), the duration of fasting on the farm before leaving for the slaughterhouse, the duration of transport between the farm and the slaughterhouse, the holding time in lairage at the slaughterhouse and loading and unloading conditions on the farm and at the slaughterhouse. To assess the relationships between these factors and the Salmonella caecal status of the pigs and the batches, two logistic models were fitted at the individual and at the batch level, respectively. The first analysis was performed using a random effects logistic regression model. The second analysis was based on a cumulative logit model with a positive caecal rate classified into three classes as the outcome variable. The results showed that the Salmonella status of market-age pigs assessed on the farm either by serological or bacteriological examinations and the time spent in lairage before slaughtering played a crucial role on caecal contamination. In the light of these results, actions should be considered both on the farm and at the slaughterhouse to decrease the risk of Salmonella contamination of the caecal contents.  相似文献

A review of the scientific literature and the historical publications regarding the use of animal by-products as an animal feed ingredient was conducted. Recent reports of animal cases and human cases associated with bovine spongiform encephalopathy and transmissible spongiform encephalopathy agents have resulted in safety questions regarding the use of animal by-products as animal feed ingredients. A review of published literature indicates that the risk associated with the utilization of these products is very minimal risk to the human population. In addition, the environmental and economic consequences of not utilizing these products in proven and safe systems will have greater adverse consequences for the general population.  相似文献

In 1978 an agreement was made among the Danish authorities, the slaughterhouse association and the pig produces to develop and operate a national swine herd health scheme based on data from the routine slaughter inspection.This review of the health scheme first presents available evidence of the diagnostic validity of slaughter inspection data in terms of correlation with clinical history and with detailed post-mortem findings of internal organs. The epidemiological basis for the program further includes the use of slaughter inspection findings in estimating the poor beneficial effects of medical treatment procedures in common, multifactorial disorders, their considerable variation within and among herds of different sizes, their correlation with environmental and managerial herd factors, and some obvious associations among different clinical pictures of these economically important herd health problems.Finally, an overview is presented of the current program, its design and operation, and preliminary results from its first few years of operations are given.  相似文献

A longitudinal survey was conducted in France in a subclinically Salmonella-infected farrow-to-finish pig farm to describe the time-course of the serological response to Salmonella enterica in growing pigs. We used three batches of sows and their corresponding litters (n = 31 litters). Among these, 256 pigs randomly selected and individually identified were followed from the first week of age until slaughter. Serial individual blood samples were submitted to indirect Salmonella-ELISA testing. Salmonella shedding was investigated by bacteriological testing of faecal material regularly collected from the sows and pigs and by environment swabs taken from the pens. Caecal contamination was checked at the slaughterhouse. Information about litter composition (filiation), location of the pigs in post-weaning and fattening pens, sanitary events, sex and body weights was recorded. 11.6% of the pigs shed S. enterica; 52% of pigs seroconverted before slaughter. The age-related variation of the natural logarithm of calibrated optical densities (COD) of pigs was described with two linear mixed models. From 8 to 61 days of age, the decrease in COD with age was fitted with a model including random effects of the animal and the dam on the intercept and slope, a batch random effect on the intercept and an individual birth-weight fixed effect on the intercept. The dam random effect was explained by the parity of the sow, Salmonella shedding by the sow during the farrowing phase and the value of the optical density of colostrum collected at parturition. A second model fitting the increase in COD from 61 days of age until slaughter included the random effect on intercept of the batch and the random effects on slope and intercept of the animal, the dam and the pen in which the followed animals were located during the fattening phase and the environmental contamination as fixed effect. In this second model, no relation was found between individual slaughter-bacteriological results and increasing COD values. Considering seroconversion time between 61 days of age and slaughter, survival function were constructed using the Cox proportional-hazards model. Both methods suggested that seroconversions generally occurred during the last third of the fattening phase (from 140 days of age to slaughter), while shedding was observed during the first half of the fattening period. The nutritive value of residue (palm calyx leaves (PCL)) and by-products (palm press fiber (PPF) and palm oil sludge (POS)) of palm fruit processing were studied through analysis of their chemical components and degradability of their dry matter (DM) in the rumen of steers. Chemical analysis showed that the materials have similar organic matter components (mean = 95.2%), while crude protein (CP, g/100 g) and metabolisable energy (ME, MJ/kg DM) were highest in POS (10.02 and 9.43), followed by PPF (7.02 and 8.61) and least in PCL (5.42 and 8.04). An opposite trend of CP and ME was noticed in NDF and ADF contents, being 61.53 and 49.11% in PCL, 44.84 and 32.08% in PPF and 25.35 and 20.29% in POS. Mineral contents showed that PPF and POS had the lowest and highest concentration, respectively, of Mg (0.07 vs. 0.11%), Cu (58.5 vs. 143.9 mg/kg) and Fe (1374.5 vs. 4086.0 mg/kg). Dry matter degradation characteristics and effective degradability varied significantly ( P  < 0.05) and were consistently highest in POS and least in PCL. Results have generally shown that the residue and by-products could be ranked for their potential feeding value as POS > PPF > PCL. It is concluded that POS and PPF can be harnessed directly as feed resources for ruminant animals, while PCL will require some treatments to enhance its nutritive value in ruminants.  相似文献

The preslaughter handling and behaviour, and subsequent bruising was observed in 49 groups of sheep in a commercial slaughterhouse. A greater percentage of bruised carcases was found in lambs (71%) than in ewes (49%) (P less than 0.01). A greater percentage of severely bruised carcases was found in lambs from markets (20%) than in those direct from farms (12%) (P less than 0.05). Significant correlations were found between the occurrence of recent bruising and wool-pulls during unloading, riding by another sheep, and hits and squashes against structures at the slaughterhouse. However, even assuming that each potentially traumatic event observed in the slaughterhouse caused a bruise, only about one-quarter of the bruising could have been attributed to handling problems at the slaughterhouse. Eight-eight per cent of all bruises were estimated to have been caused within about 24 h of death, indicating that most bruising probably was caused by handling problems during loading on the farm, during transit and particularly at markets.  相似文献

In this study performed between 1993 and 1997, infectious bursal disease virus (IBDV) antibody titers and performance data were recorded in a vertically integrated monitoring scheme in order to make a follow-up from day-old parents down to the broilers at slaughter. All measured data were used two by two in a simple correlation study to calculate the degree to which they were linearly correlated. It appeared that high and/or uniform antibody titers in the parents were correlated with increased daily weight gain and decreased mortality and slaughterhouse condemnation in the broilers. Antibody titers and their CVs were negatively correlated in broiler parents and their offspring at day-old and even at slaughter. Results indicate that high and uniform antibody titers against IBDV in broiler parents are important for good performance of the broiler offspring, at least under the epidemiologic conditions of this study, which included the presence of very virulent IBDV strains in the field and the sole use of live intermediate vaccines in broilers as well as broiler parents.  相似文献
