1. Textural and rheological differences among broiler breast meat ranging from pale, soft and exudative (PSE) to dark, firm and dry (DFD) in their fresh and frozen (and thawed) forms were investigated. 2. The PSE meat showed significantly higher lightness values and lower pH and water holding capacity values than normal and DFD meats; DFD meat was also significantly different from normal meat. 3. During cooking, PSE meat lost significantly more liquid and produced a softer gel than normal or DFD meats; texture profile analysis parameters were lower for the PSE meat. 4. The storage modulus values (G', rigidity of elastic response of the gelling material) showed that DFD meat produced a more rigid gel during cooking (especially above 54 degrees C) and later during cooling (back to 30 degrees C) compared with the PSE meat. 5. Freezing resulted in a trend of lower G' values before, during and after cooking. The results indicated that meat proteins were damaged during freezing and PSE meat was more severely affected, or that more protein denaturation occurred in the PSE meat.  相似文献

The occurrence of qualitative changes in meat was studied in a set of 1008 pigs slaughtered in four sanitation slaughter houses for the period of 12 months. PSE meat was found in 206 pigs (20.43 per cent) and DFD meat only in 9 pigs (0.89 percent) of the total number of pigs examined. The rule was applied that the defect should be demonstrated by two of three commonly used parameters (the pH value, colour and water loss by dripping). The highest occurrence of qualitative changes in meat of PSE type was registered in the group of animals with a defect of the respiratory organs (32.53 per cent) and the lowest in animals with diseases of sexual organs, including parturition complications (5.00 per cent). A similar trend was recorder even in the DFD meat occurrence. As to the seasons, the highest percentage of occurrence of PSE defects was in July and August (35.41 and 29.06 per cent) and the lowest (8.64 and 10.97 per cent) in March and January. The actual disease is proved to be only one of the secondary stress to induce the PSE meat formation.  相似文献

This study was conducted to evaluate the effect of dietary vitamin E (VE) on broiler meat quality, especially focused on PSE (pale color, soft and exudative), under chronic heat stress (HS) conditions. Twenty‐eight‐day‐old female Ross broilers were kept in independent cages with a controlled temperature of 24°C (normal temperature: NT) or 30°C (high temperature: HT). The NT chickens were fed basal feed. The HT chickens were fed basal feed (HT) or VE (200 mg/kg) added feed (HT + E). Broilers were weighed and slaughtered at 38 days old. The breast muscle was removed immediately and then the samples were used for determination of meat color, pH, water holding capacity (WHC) and shear force value (SFV). Body weight gain and feed intake were significantly decreased in the HT and HT + E groups compared to the NT group. VE supplementation did not affect the growth performance. Chronic HS at 30°C for 10 days may cause deterioration of meat quality such as PSE. The effects of chronic HS on meat quality were most significant in the toughness of broiler breast meat. Supplementation of VE in broiler feed would be effective to prevent the extent of PSE on broiler meat by chronic HS.  相似文献

1. The occurrence of the pale, soft exudative (PSE) problem in broiler breast meat was monitored in 700 birds (random samples from 7 flocks). A rapid method of colour measurement was used in the plant to assess the colour of skinless pectoralis muscles at 24 h post mortem. In addition, 10 selected samples from each flock were further evaluated for pH, water holding, cook loss, and texture.

2. The average L* value (lightness) was 47.1 with a variance of 5.38, skewness 0.33 and kurtosis 0.66. Minimum and maximum L* values recorded during the study were 35.3 and 55.5 respectively.

3. Correlations between colour and most of the physical measurements were observed, suggesting that a rapid colour measurement method could be used to recognise PSE meat or identify flocks with a high incidence of PSE.

4. Breast muscle samples with L*>49 showed poor water holding capacity, which indicated that these samples would be classified as PSE meat. Using this criterion it was shown that the occurrence of PSE ranged from 0% to 28%. However, the precise cut off point for PSE muscle should be determined by each processor depending on final product requirements.  相似文献

Throughout the chicken production chain, transport from farm to the commercial abattoir is one of the most critical sources of stress, particularly heat stress. The aim of this work was to describe the performance of a new prototype truck container designed to improve the microenvironment and reduce the incidence of pale, soft and exudative (PSE) meat and dead on arrival (DOA) occurrences. Experiments were carried out for four different conditions: regular and prototype truck, both with and without wetting loaded cages at the farm (for bird thermal stress relief) just before transporting. While there was no difference in the DOA index (P ≥ 0.05), the prototype truck caused a reduction (P < 0.05) in the occurrence of PSE meat by 66.3% and 49.6% with and without wetting, respectively. The results of this experiment clearly revealed a low‐cost solution for transporting chickens that yields better animal welfare conditions and improves meat quality.  相似文献

As in recent years laboratory diagnostics of listeria has become part of food microbiology, the frequency of occurrence of the bacteria Listeria monocytogenes has been followed in various kinds of foods for a year. A total of 51 strains of L. monocytogenes (7.2%) was isolated from 700 kinds of samples (raw milk, pasteurized milk, meat surface, poultry, cheeses, thermally not treated meat products, food--industry machinery). As can be seen in Tab. I, the highest number of strains was isolated from meat surfaces (13.5%), followed by meat--industry machinery (12.72%), poultry (10%) and cheeses (5%). The lower numbers of strains were found out in thermally not treated meat products (3.8%) and in raw milk (3.3%). Pasteurized milk did not contain any strains. Our findings in raw milk (3.3%) and in pasteurized milk (0) are in agreement with the data cited e. g. by authors from the USA (Lovett et al., 1987), who mention the value of 4.2% in raw milk and the zero value in pasteurized milk. The percentage of strains monitored in cheeses (5%) can be evaluated as low as the assortment of investigated cheeses was small (all strains were isolated from soft ripening cheeses). German authors (Tham et al., 1988) speak about the 2.5% percentage of L. monocytogenes strains; this is in keeping with our findings. The findings in thermally not treated meat products (3.8%) can be evaluated as low although the number of strains found in raw meat was high.(ABSTRACT TRUNCATED AT 250 WORDS)  相似文献

1. Colour distribution of mature turkey hen breast meat was evaluated during the year in 7 commercial flocks (100 samples/flock) to assess the occurrence of the pale soft and exudative (PSE) problem. Evaluation was done on the processing line 24 h post mortem.

2. In addition, 10 selected samples/flock were analysed for pH, water holding capacity (WHC), and texture. The average L* value (lightness) was 48.9 with a variance of 15.3, skewness of 0.16, and kurtosis of 0.17. Minimum and maximum L* values recorded during die study were 37.7 and 58.5, respectively.

3. The pH ranged from 5.68 to 6.64 (mean 5.96), WHC ranged from 7 to 102% (mean 41%), and gel strength for the cooked samples ranged from 30 to 54 N (mean 44N).

4. Correlations between colour and WHC indicated die potential use of a fast colour measurement to identify PSE meat.

5. Breast muscle samples with L*s52 exhibited poor WHC. When this value was used as a cut off point for identifying PSE meat, die lowest incident observed was 5% and the highest was 40%.  相似文献

1. Within a large flock of turkey toms (2000 BUT9 conventionally reared and slaughtered), early muscle pH measurements were randomly done to distinguish two groups of birds presenting low (fast glycolysing, GR) or normal (normal glycolysing, GN) values. 2. Subsequently, ultimate pH values and meat quality parameters were also recorded. Meat quality parameters from GR or GN samples differ more or less indicating more or less severe PSE conditions. Proteins extracted from the samples at 20 min post mortem were similar while they differed greatly at 24 h post mortem. Moreover, among the GR birds, a subgroup of animals (called AB) presented SDS-PAGE profiles largely different from other GR or GN birds. 3. All the subsequent analysis developed on meat quality parameters as well as for protein extractabilities also differed between AB and other animals indicating that they must be considered differently in term of PSE syndrome development. 4. Western blots against Myosin Heavy Chain and actin at 24 h post mortem indicate that myofibrillar protein alterations are different in AB and GR or GN samples. 5. At 20 min post mortem, glycogen content was lowest in AB samples while the glycolytic potential was similar in all samples at the time of death. Measurements of PFK enzyme specific activity did not indicate a different regulation of post mortem glycolysis in AB samples. 6. Our results suggest that a unique pH measurement at 20 min post is insufficient to detect animals more prone to developing a severe PSE syndrome in turkeys. In consequence, it is suggested that a more precise evaluation of the kinetics of pH and temperature decrease has to be conducted to understand the aetiology of meat quality parameter alterations in poultry.  相似文献

The presence of the halothane gene results in PSE meat. However, the exact mechanisms linking the halothane gene and the incidence of PSE meat remain unclear. We hypothesize that the presence of the halothane gene accelerates energy consumption in postmortem muscle, which activates adenosine monophosphate-activated protein kinase (AMPK), leading to enhanced glycolysis and PSE meat. To test our hypothesis, energy status, AMPK activity, and glycolysis in the postmortem LM of the halothane gene carrier and halothane-negative pigs were compared. The results showed that the presence of the halothane gene accelerated energy depletion in postmortem muscle immediately after exsanguination, leading to rapid and early depletion of ATP, as shown by an increase in the (adenosine monophosphate + inosine monophosphate):ATP ratio in postmortem LM. In addition, an early AMPK activation was observed in LM from halothane carriers. The fructose-2,6-diphosphate concentration in postmortem LM was well correlated with AMPK activation. To be a potent stimulator of phosphofructose kinase, the increase in fructose-2,6-diphosphate is expected to activate phosphofructose kinase, a key enzyme controlling glycolysis, leading to enhanced glycolysis and early accumulation of lactic acid. In summary, this study showed that the presence of the halothane gene induced early energy depletion, which could be a primary reason causing AMPK activation, leading to accelerated glycolysis and an increased incidence of PSE meat. However, AMPK might also be activated by other mechanisms besides energy depletion, which warrants further studies.  相似文献

The experimental materials comprised 44 hybrid [female (Polish Large White x Polish Landrace) x male Duroc] growing-finishing pigs. The animals were randomly divided into two groups: 24 pigs were slaughtered immediately after transport and 20 pigs were slaughtered after a 24-hour rest period in the lairage. The meat content of pork carcasses, carcass dressing percentage, the proximate chemical composition, physicochemical and sensory properties of meat and shear force values were determined. Serum creatine kinase activity and cortisol levels were determined in blood samples collected before transport and during carcass bleeding. Pigs slaughtered immediately after transport, compared with those slaughtered after a 24-hour rest period, were characterized by a higher meat content of the carcass and a higher carcass dressing percentage. Pre-slaughter handling had no effect on pork quality. The incidence of normal-quality meat, partially PSE (pale, soft, exudative) meat and PSE meat was similar in both groups. Chemical analysis showed that the content of dry matter, total protein, fat and minerals in meat was comparable in both groups. As regards the functional properties of the pork, samples from the carcasses of pigs that had rested before slaughter had a higher contribution of the red color component. Meat from pigs slaughtered immediately after transport had more desirable sensory properties. Pre-slaughter resting had a significant effect on those analyzed physiological parameters which were found to be good indicators of pre-slaughter stress. Serum creatine kinase activity and cortisol levels were higher in blood samples collected after transport (during carcass bleeding) than in samples collected before transport, pointing to a strong stress response of animals to pre-slaughter treatment. The decrease in serum cortisol levels in blood samples collected during bleeding from the carcasses of pigs slaughtered after a 24-hour rest period, compared with samples collected from animals slaughtered immediately after transport, suggests that rest before slaughter alleviated stress induced by pre-slaughter handling operations.  相似文献

The purpose of the paper is to describe research carried out in Denmark in areas associated with PSE.In the carcass, meat colour is used as an expression of meat quality. Meat quality deteriorated until 1972 but has improved substantially during the last 6–7 years.The incidence of halothane susceptibility in the Danish Landrace breed is low. Approximately 60% of the halothane-susceptible pigs had PSE carcasses compared to 22% for the non-susceptible pigs. However, pigs heterozygous at the Hal locus are intermediate in meat quality, and elimination of the gene for halothane susceptibility will lead to a substantial improvement in meat quality. A proportion of halothane-susceptible pigs as well as heterozygous carriers can be detected indirectly by using the H blood group system alone or in combination with the PHI system. This is due to linkage disequilibrium between the three systems within the Danish Landrace breed. Use of the H and PHI systems and the halothane test in combination with full sib information on KK index may increase the genetic gain by 5–30%. However, a greater extra gain is easily obtained by a slight increase in selection intensity based on the KK index alone. Thus, it does not seem profitable to use blood and enzyme types or halothane test as a routine in selection against PSE under Danish conditions. The objective of this study was to determine the effects of lairage time (short vs. long), behavior (aggressive vs. non‐aggressive) and gender (gilts, barrows and boars) on stress and meat quality parameters in pigs (n = 100). In the group with short lairage, aggressive behavior of gilts and boars was observed. At exsanguination, blood samples were collected and levels of blood lactate and plasma cortisol were determined. Post mortem pH value, temperature, drip loss, sensory and instrumental color and meat quality class were determined on the muscle Longissimus dorsi. Higher blood lactate concentration (P < 0.05) and skin blemish score (P <0.001), lower temperature (P < 0.05) and drip loss (P < 0.01), as well as darker, less red and yellow meat color (P < 0.001) were found after long lairage compared to short lairage. Gilts had higher plasma cortisol concentrations than barrows (P < 0.05), while barrows had lower skin blemish scores (P < 0.05) than gilts and boars after long lairage. The highest incidence of PSE (pale, soft and exudative) meat was observed in barrows (100.00%) and boars (91.67%) after short lairage, while the lowest incidence of PSE meat was found in barrows (28.89%) after long lairage. Aggressiveness affected meat temperature, as aggressive pigs had higher meat temperature (P < 0.05) than non‐aggressive pigs.  相似文献

:对 3 0 1头瘦肉型新品系苏钟 系和 系仔猪进行氟烷测验 ,阳性率为 1 .3 3 %。随机抽取氟烷阴性猪 3 4头进行基因型检测 ,有 6头为杂合子 ,由此得知 NN、Nn和 nn3种基因型的频率分别为 81 .2 6%、1 7.4 1 %和 1 .3 3 %,N和 n2种基因的频率分别为 89.97%和 1 0 .0 3 %。对 3种基因型猪的肉质进行评定结果显示 ,4头氟烷阳性猪 ( nn)肉质最差 ,出现 3头严重 PSE肉和 1头轻度 PSE肉 ,而氟烷阴性猪 ( NN或 Nn)未发生 PSE肉。2 0头苏钟 系氟烷阴性猪用阳性公猪测交 ,对产出的 2 0 8头后代进行氟烷测验 ,共检出 4窝中的 2 1头阳性猪。对测交后代进行肥育性能和肉质测定 ,发现阳性猪的日增重和饲料报酬等较低 ,屠宰率、眼肌面积和瘦肉率较高 ,肉质较差  相似文献

White light from a xenon arc was focused onto the upper surface of 25-mm-thick transverse sections of pork longissimus muscle. A servo motor moved an optical fiber across the lower surface of the muscle to collect transmitted light, which then was passed through a grating monochromator and onto a photomultiplier for spatial measurements of scattering (SMS) and transmittance spectra. The SMS were calculated as the slope of the logarithm of transmittance relative to path length through the sample (which was calculated trigonometrically). Pale, soft, exudative (PSE) pork was measured with an index that included a subjective evaluation of meat color and objective measurements of reflectance, drip loss, and centrifugation fluid loss. The strongest correlation of SMS with PSE was at 610 nm (r = .86, P less than .005) and the strongest correlation of transmittance with PSE was at 650 nm (r = -.95, P less than .005). This supports the use of a red laser at 633 nm for the detection of PSE pork.  相似文献

Information on the effect of road transportation conditions and lairage times on the meat quality of pork under South African conditions is very sparse. In this investigation, the effects of 2 road conditions (rough road with frequent stops - A; smooth road, few stops - B) and 2 lairage holding periods (2 h and 24 h) on the physical meat quality attributes of commercially produced pigs during summer (ambient temperatures > 30 degrees C) in the Western Cape (South Africa) were investigated. Pig meat from pigs transported on a road that caused more stress (A), had lower pH 45 (measured 45 min post mortem) values after 2 h lairage than pigs transported over a smoother road. Pigs B had a lower muscle pH 24 (measured 24 h post mortem) than group A, indicating that they had more glycogen reserves available for post mortem glycolysis. Road conditions A were more stressful resulting in a higher incidence of PSE pork, as shown by the percentage drip loss and the L* values. When the lairage period was increased to 24 h prior to slaughter, pigs transported under road conditions A had time to replenish their energy reserves and the pH 45, drip loss and L* values were within an acceptable range. However, pigs transported under road conditions B had lower pH 45 and higher pH 24 values, indicating that the lairage period was too long and that energy reserves were depleted in order to adapt to the stressful conditions. Results from this investigation indicate that improvement of the transport/road conditions will result in better pork quality.  相似文献

The susceptibility of a carcass to PSE (pale, soft, exudative muscle) can be assessed by measuring the pH value in the lumbar region of the longissimus dorsi muscle at 45 min post-mortem (pH1). The effect of breed, station, sex and season on pH1 was investigated, on a total of 2 775 pig records, including the progeny of 129 Irish Landrace and 126 Large White boars, from two test stations. The heritability of pH1 and its genetic correlation with other performance characteristics were determined within each breed. Landrace pigs had significantly lower values than Large White pigs, indicating a greater susceptibility to PSE in the former. There was no significant difference between the values for boars, castrates and females. There were marked differences from month to month, but no definite seasonal pattern was present nor was there any apparent long-term trend. The heritability for the Landrace breed was higher than that for the Large White breed, and both values indicate that pH1 would respond to selection. The genetic correlations between pH1 and daily gain, food conversion efficiency and backfat (four measurements) were for the most part low and the standard errors relatively high, indicating that there was no strong relationships between pH1 and these performance characteristics.  相似文献

1. The aim of this work was to evaluate the shelf life of turkey meat from different colour categories (Pale, Soft and Exudative (PSE)-like), intermediate and dark), packaged under aerobic or modified atmosphere (MAP) conditions; also to establish a relationship between microbial quality and total volatile basic nitrogen (TVB-N), evaluating its capacity for shelf life determination. 2. Breasts were selected according to luminance (L*) and pH(24): L >/= 51 and pH < 5.8 for light colour, 43 < L < 51 for intermediate colour, L 5.8 for dark colour. Sliced meat was packaged under aerobic or MAP conditions with 50% N(2) and 50% CO(2), then stored in the dark at 0 +/- 1 degrees C for periods of 12 or 25 d. Meat under aerobic conditions was evaluated for microbiological characteristics and TVB-N on d 0, 5 and 12. This evaluation was extended to include d 19 and 25 when samples were under MAP conditions. 3. The dark meat group after 12 d of storage in aerobiosis presented significantly higher plate counts of aerobic mesophilic, psychrotrophic micro-organisms and higher TVB-N than other meat colour categories. The shelf life of turkey meat under MAP was one week longer for intermediate and light colour meat (20 d) than for dark meat. TVB-N values of 20 to 30 mg NH(3)/100 g turkey meat correspond to advanced spoilage stages. We proposed 14 mg NH(3)/100 g as the limit of freshness acceptability for turkey meat. 4. TVB-N was an indicator of turkey meat microbial spoilage but was not a suitable early predictor for microbial spoilage and in particular for turkey meat stored under MAP conditions because counts of micro-organisms were moderately correlated (Pseudomonas spp. and Enterobacteriaceae) with this index, as they were inhibited by MAP gas mixture and storage temperature used in the present study.  相似文献

The objectives of the current experiment were to determine whether boars heterozygous for the mutation in skeletal ryanodine receptors (sRyR), known to cause porcine stress syndrome, differed from wild-type boars in hypothalamic-pituitary-adrenal axis (HPA) function. We have examined basal plasma ACTH, cortisol, and corticosteroid-binding globulin (CBG) concentrations; plasma ACTH and cortisol responses to a nose-snare stressor and at slaughter; dexamethasone suppression of plasma ACTH and cortisol concentrations; and glucocorticoid receptor (GR) density in the pituitary gland, hippocampus, hypothalamus, and frontal cortex. We have also examined carcass yields, composition, and meat quality to determine whether differences in HPA activity were accompanied by an increased incidence of meat quality characteristics associated with pale, soft, exudative (PSE) meat. Thirty boars either heterozygous or wild-type (n = 15 per genotype) for mutated sRyR were tested for HPA function at 7 mo of age. Heterozygous boars had lower basal plasma ACTH (P < .05) and cortisol (P < .04) concentrations. Integrated basal plasma ACTH and cortisol levels were also lower (P < .05 and P < .005, respectively). Genotype had no significant effect on basal CBG, stressor-induced (nose snare or slaughter) or dexamethasone suppression of plasma ACTH or cortisol concentrations. No differences in immunoreactive GR levels were found in the pituitary gland or any brain region examined. We did find a significant, negative correlation (r = -.62, P < .02) between peak (0800) basal plasma ACTH concentrations and hippocampal GR levels. The alterations in basal HPA function in heterozygous boars were accompanied by lighter body weights (P < .03), decreased carcass fat depth (P < .04), and increased carcass lean yields (P < .02). There was a higher incidence of meat quality characteristics associated with PSE meat in heterozygous boars indicated by higher carcass temperatures (P < .04) and meat brightness (P < .0001) with lower carcass pH at slaughter (P < .03) and after chilling (P < .003). In conclusion, we have found differences in basal and not stressor-induced HPA function between boars heterozygous and wild-type for mutated sRyR. This altered basal HPA activity was accompanied by an increased incidence of meat quality aspects associated with PSE meat in heterozygous boars.  相似文献
