Bambara groundnut, an indigenous African legume, was subjected to fermentation by three strains of Rhizopus. One strain B. arrhizus could not ferment the substrate. Mycelial penetration and binding was good when strains NRRL 2710 ( R. oligosporus) and NRRL 1477 ( R. stolonifer) were used. Fermentation by both strains resulted in increases of pH, moisture, protein and fat while total carbohydrate decreased by 50%. Sensory evaluation showed that bambara groundnut tempes rated similar (p>0.5) in taste and texture and higher (p<0.05) in color and flavor than soybean tempe. Bambara groundnut would be an acceptable food product in the diet as a good protein supplement. 相似文献

The influence of constant photoperiods of 10, 12, 14 and 16 h on development and growth in two bambara groundnut genotypes (Vigna subterranea (L.) Verdc., syn. Voandzeia subterranea (L.) Thouars) was studied in a greenhouse experiment in the Netherlands. Data on dry matter accumulation were collected by sequential harvesting. Photoperiod influenced the onset of flowering in one genotype (‘Ankpa 4’) and the onset of podding in both (‘Tiga Nicuru’ and ‘Ankpa 4’). Under 14- and 16-h photoperiods plants of ‘Ankpa 4’ produced no pods. Photoperiod did not influence total aboveground dry matter production per plant in ‘Ankpa 4’ and had only a slight effect on ‘Tiga Nicuru’. Photoperiod indirectly affected dry matter partitioning via its influence on development: in both genotypes assimilate distribution changed after the photoperiod-induced onset of podding. In addition, a direct influence of photoperiod on partitioning was observed. Firstly, just after the onset of flowering (40 DAS), ‘Tiga Nicuru’ plants under 10- and 12-h photoperiods had accumulated more dry matter as leaf blades and less as stem material than plants under 14- and 16-h photoperiods. Secondly, for ‘Ankpa 4’ the increase in pod dry weight per plant under the 10-h photoperiod was nearly double the increase under the 12-h photoperiod. This difference was associated with a smaller number of developing pods under the 12-h photoperiod. Photoperiod apparently strongly affects the number of developing sinks and, as a consequence, the total sink-strength of the plant, irrespective of the numerous ovaries present on plants of all treatments (including plants of ‘Ankpa 4’ under 14- and 16-h photoperiods). 相似文献

Thirteen promising strains of Rice bean (Vigna umbellata) were analysed for their proximate compositions and antinutritional factors. Protein content in these varieties ranged from 17.50 to 23.10 per cent, ash from 3.06 to 4.48 per cent, ether extract from 2.4 to 3.9 per cent and crude fibre from 1.70 to 4.25 per cent. Trypsin inhibitor activity ranged from 112.63 to 163.98 units/g and polyphenols ranged from 0.58 to 1.19 per cent. Phytohemagglutinating activity was present in all the strains, except one, RB-32. Oligosaccharides, viz., raffinose, stachyose and verbascose, ranged from 0.32 to 0.91, 0.95 to 1.98 and 1.40 to 2.58 per cent, respectively. Attempts have been made to compare the results with a standard variety each of cowpea (Vigna unguiculata), moong (Vigna radiata) and mash (Vigna mungo). 相似文献

Sainfoin is a non‐bloating temperate forage legume with a moderate‐to‐high condensed tannin (CT) content. This study investigated whether the diversity of sainfoin accessions in terms of CT structures and contents could be related to rumen in vitro gas and methane (CH4) production and fermentation characteristics. The aim was to identify promising accessions for future investigations. Accessions differed (P < 0·0001) in terms of total gas and CH4 productions. Fermentation kinetics (i.e. parameters describing the shape of the gas production curve and half‐time gas production) for CH4 production were influenced by accession (P ≤ 0·038), but not by PEG. Accession, PEG and time affected (P < 0·001) CH4 production, but accession and PEG interaction showed only a tendency (P = 0·08). Increase in CH4 due to PEG addition was not related to CT content. Further analysis of the relationships among multiple traits (nutritional composition, CT structure and CH4 production) using principal component analysis (PCA) based on optimally weighted variables revealed differences among accessions. The first two principal component axes, PC1 (57·6%) and PC2 (18·4%), explained 76·0% of the total variation among accessions. Loading of biplots derived from both PCAs made it possible to establish a relationship between the ratio of prodelphinidin:procyanidin (PD:PC) tannins and CH4 production in some accessions. The PD:PC ratio seems to be an important source of variation that is negatively related to CH4 production. These results suggested that sainfoin accessions collected from across the world exhibited substantial variation in terms of their effects on rumen in vitro CH4 production, revealing some promising accessions for future investigations. 相似文献

Bambara groundnut (Vigna subterranea) was fermented to produce a dawadawa-type product using a starter culture of Bacillus licheniformis isolated from naturally fermenting bambara groundnut beans. Fermentation was carried out at 30 and 37 °C for four days and at 45 °C for two days. The pH of the substrate decreased after 24 hours and then rose at 30 and 37 °C but remained constant at 45 °C after the initial drop. Total titratable acidity of the fermenting beans mimicked the pH values. Proximate analyses for moisture, protein and fat of the cotyledons showed an increase in all three constituent at each of the three fermentation temperatures. At the end of fermentation, total available carbohydrate was 55%, 59% and 62% of the original value at 30, 37 and 45 °C, respectively. Fermentation of bambara groundnut at 45 °C for two days is recommended as the ideal fermentation temperature and time. 相似文献

Simple wet heat treatments like simple boiling (atmospheric pressure, 100 °C) and pressurized boiling (higher than 100 °C) reduced the polyphenol content of mature dark red seeds of cowpea (Vigna unguiculata (L.) Walp.) cultivar UPL Cp 3 by 61 to 80% and improved in vitro protein digestibility (IVPD) by 6 to 26%. Pressurized steaming (higher than 100 °C) removed 48 to 83% of the polyphenols but increased IVPD by only 1.1 to 4.2%. Dry heat as exemplified by roasting and microwave treatment inactivated 58 to 71% of the tannins but increased IVPD by only 1%. All the heat treatments were effective in removing/inactivating polyphenols though different responses were observed with the resulting in vitro protein digestibilities. 相似文献

The application of dry heat to seeds and meal was not effective in inactivating the TI and reducing the polyphenol content. Soaking for 24 h followed by cooking for 20 min, was equally effective in destroying the TI activity. Pentaphyllous mutants in black gram were isolated in M2 generation of a segregating family, irradiated at 20kR. The genetic nature of mutants was tested by hybridizing with controls, and chi-square tests applied to the F2 population, proved it to be a monogenic recessive. The pentaphyllous mutant had a greater number of pods and leaves per plant and larger and more root nodules. Fifteen accessions of sainfoin (Onobrychis viciifolia Scop.) were characterized for morphological and phenological traits at Reckenholz in the Swiss lowlands (Experiment 1). The effects of accession, harvest time and site on dry‐matter yield, condensed tannin (CT) concentration and forage value (Experiment 2) were determined at three sites in Switzerland varying in altitude from 440 to 559 m. Three to four harvests were taken in the first year after establishment (second year of stand) with harvests 1 and 2 chemically analysed. From the characterization in Experiment 1, a clear grouping of single flowering (Communis) and multiple flowering (Bifera) accessions emerged. Additionally, within the Communis accessions, distinct groupings were identified (historical landraces and newly collected ecotypes) based on morphological characteristics. Experiment 2 showed that Communis and Bifera accessions had a similar chemical composition in the first harvest. In the second harvest, Communis accessions were higher in crude protein and CT and lower in neutral and acid detergent fibre concentrations than Bifera accessions. Total dry‐matter yields were higher for Bifera accessions. Among the Communis accessions, ecotypes had consistently higher CT concentrations than landraces. In vitro organic matter digestibility did not significantly differ among accessions. There were clear effects of harvest time and site for most variables, with clear harvest time × sainfoin group interaction but no site × sainfoin group interactions. The results clearly demonstrate that historical landraces and newly collected ecotypes expand the range of available genetic variation for sainfoin breeding. 相似文献

The effects of cooking, germination, and fermentation on the chemical composition of cowpea were studied. There were noticeable trends in the protein, carbohydrate and crude fiber as a result of the different treatments. Both the germinated and fermented samples contained more ether extractable lipids than the raw and cooked samples. Untreated raw cowpea contained 5.9 mg/g phytic acid, 1.66 mg/g phytate phosphorus, 3.3 mg/g total phosphorus, 56.8 mg/g total sugar, and no reducing sugar. Cooking the dry beans at 100°C for 1 1/2 hours had little effect on the phytic acid and phytate phosphorus. There were, however, significant decreases in total phosphorus and sugars of the cooked beans. After germination for 24 hours, 48 hours and 72 hours respectively, there was a significant decrease in phytic acid and total sugar and increase in total phosphorus and reducing sugar. Similar results were also obtained when the dry beans was fermented for 24 hours, 48 hours and 72 hours respectively. 相似文献

Proximate composition and selected functional properties of four cultivars of bambara groundnut ( Voandezeia subterranea Thoura) were ascertained. Crude protein ranged from 17.5 to 21.1 percent; crude fat 7.3–8.5 percent; total ash 4–5 percent; crude fiber 1.8–2.0 percent; carbohydrate and moisture content for the different cultivars were 53.0–60.8 percent and 7.5–12.3 percent, respectively. The results of functional property determinations indicated that the bulk density ranged from 0.65 to 0.75 g/ml; water binding capacity 2.1–2.9 g/2g sample; oil binding capacity 0.9–1.6 g/2g sample; emulsifying activity 55.-1–60.0 percent and emulsifying stability 10–12 percent. The results show that bambara groundnut has great potential for incorporation into various human foods where it could provide useful plant proteins. 相似文献

Phytic acid, saponin and polyphenol contents in grains of various varieties of black gram (Vigna mungo) Mung bean (Vigna radiata L.) amphidiploids ranged from 697 to 750, 2746 to 2972 and 702 to 783 mg/100 g, respectively. Domestic processing and cooking methods including soaking, ordinary and pressure cooking of soaked and unsoaked seeds, and sprouting significantly lowered phytic acid, saponin and polyphenol contents of the amphidiploid seeds. Soaking for 18 h removed 31 to 37% of the phytic acid; the extent of removal was higher with long periods of soaking. Saponins and polyphenols were relatively less affected. Loss of the antinutrients was greater when soaked instead of unsoaked seeds were cooked. Pressure cooking had a greater effect than ordinary cooking. Antinutrient concentrations declined following sprouting; the longer the period of germination the greater was the reduction. 相似文献

Bambara groundnut (BGN) seeds were pretreated by soaking, dry-milling or autoclaving and used to produce pastes which were then used to prepare akara. Proximate analysis and organoleptic tests were conducted. Method of pretreatment affected the proximate composition of the akara. The moisture, protein and fiber contents of akara prepared from BGN seeds, which were cracked and soaked or autoclaved, were significantly (p 0.05) different than those from soaked whole grains and flour. The cooked batch weights of the akara ranged from 258–272 g, akara from soaked whole and autoclaved seeds having the lowest and highest values, respectively. Akara from autoclaved BGN seeds was more highly preferred by panelists compared to akara from other pretreatments. Except for appearance and color, no significant differences were found between BGN akara and the cowpea akara used as reference. Heat treatment of BGN seeds prior to dehulling appeared to influence the level of acceptability of the akara. 相似文献

The chemical, sensory and rheological properties of porridges made from blends of sprouted sorghum, bambara groundnuts and fermented sweet potatoes were examined. Sorghum and bambara groundnuts were sprouted for 48 h while sweet potatoes were fermented for the same period. Blends were formulated from the processed ingredients in the ratio of 60:40:0, 57:42:1, 55:44:1 and 52:46:2 (protein basis) of sorghum, bambara groundnuts and sweet potatoes. Porridges were prepared from the composite flours and the traditional sorghum complementary food. Standard assay methods were used to evaluate the flours for nutrient composition. The porridges were also tested for sensory properties and viscosity. Processing increased the levels of most of the nutrients evaluated. Relative to the sorghum traditional complementary food, thecomposite flours had higher levels of lipids, protein, ash, crude fiber and minerals (p<0.05). The porridges from the composite flours were generally liked slightly by the panelists and were about seven times less viscous than the porridge from the traditional sorghum complementary food. Use of the composite flours, particularly the 52:46:2 blend, as a traditional complementary food should be encouraged in Nigeria especially with the increasing cost of commercial complementary foods. 相似文献

Examination of the substrate specifity of the carboxypeptidase activity of ungerminated and germinated mung beans (Vigna radiata (L.) Wilczek) reveals the presence of two distinct enzymes. The first of these, carboxypeptidase I, is maximally active against carbobenzyloxy-Ala-Phe. It is present in large amounts in the cotyledons of ungerminated seeds, and declines rapidly during germination. The second, carboxypeptidase II, is most active against carbobenzyloxy-Phe-Ala. This enzyme increases in the cotyledons during germination and seedling growth.The possible involvement of one or both of these enzymes in the degradation of the native mung bean trypsin inhibitor (MBTI - F) and its proteolytically modified forms (MBTI - E, - C, and - E') during germination was also examined. The enzyme catalyzing one step in the conversion of MBTI - E to MBTI - C has been isolated with 557-fold purification from germinated mung beans. The inhibitor-degrading enzyme has a molecular weight of approximately 60,000. It is optimally active against MBTI - E at between pH 4.0 to 4.5. No activity was found with MBTI - F, - E', or - C as substrates. The enzyme has been identified as the carboxypeptidase II on the basis of (1) coelution during chromatography, (2) action on synthetic and natural substrates, (3) sensitivity to enzyme inhibitors, and (4) temporal variation during germination. The Escumite bean (Phaseolus acutifolius) is an edible legume which in raw form is highly toxic to rats. Proteins were separated by DEAE cellulose and affinity chromatography. Hemagglutinating activity, trypsin inhibitory effect, cytotoxicity on human peripheral lymphocytes and on intestinal epithelial cells of rats, and mitogenic activity were assayed with each protein fraction. Hemagglutinins and trypsin inhibitory fractions showed differential toxicity with lymphocytes as compared to intestinal epithelial cells. A protein fraction without the previous activities was cytotoxic mainly to intestinal epithelial cells. 相似文献

Influence of six (10, 20, 30, 40, 50 and 60%) levels of bruchids infestation on the contents of selected antinutritional factors-phytic acid, saponins, trypsin inhibitors activity (TIA) of three (chickpea, red gram, and green gram) pulses was studied. Comparisons of infested samples were made with uninfested controls of each pulse. The three antinutritional factors viz TIA, phytic acid and saponins were found to increase with the increase in the level of infestation. All the control pulse values of the phytic acid, saponins and TIA were significantly lower than those of the infested samples. Barring a few exceptions, the differences in the contents of antinutritional factors in pulses infested at different levels were significant (P<0.05). 相似文献

Germinated bambara groundnut was dried by three methods – oven-drying at 50 °C, in a solar drier at 38–42 °C, and sun drying at 28 ± 2 °C. The samples were milled into flour, and made into okpa, a steamed gel. Flour yield increased only in oven-dried malts. The yield and chemical composition of thirteen Lotus corniculatus varieties and one Lotus uliginosus variety, when grown and ensiled in the UK, were investigated. Replicate plots of each variety were established in a randomized block design. Dry‐matter (DM) yield was measured over two harvest years. At cuts 1 and 2 of the first harvest year, 1 kg of each variety was ensiled and sub‐sampled for chemical analysis. At cut 2 of the second harvest year, sub‐samples of forage were analysed for condensed tannins. Two L. corniculatus varieties, Oberhaunstaedter and Lotar, had higher DM yields (with Oberhaunstaedter having the highest DM yield at cut 3) in both harvest years compared with other varieties (P < 0·001). Chemical analyses showed differences among silages of varieties of L. corniculatus (P < 0·001) and that the ammonia‐N concentration of L. uliginosus silage was higher than that of L. corniculatus (P < 0·001), despite its lactic acid concentrations being within the range observed for L. corniculatus (17 g kg?1 DM vs. 13–19 g kg?1 DM). Differences (P < 0·001) in HCl/Butanol test absorbance units were found among varieties of L. corniculatus, indicating possible differences in concentrations of condensed tannins. Overall, the variety Oberhaunstaedter was found to be the most suitable variety for silage production. Based on its agronomic performance, L. corniculatus does not compare well with other legumes such as red clover. 相似文献

Dehulled and defatted flour of urdbean (Vigna mungo), Var T-9, contained 25% protein with maximum contribution by globulins (63%). Albumins and glutelins contributed 12% and 21% respectively, whereas prolamins were present only in traces (1%). Globulins were further fractionated into legumin and vicilin type proteins which were present in the ratio of 4:1. All the protein fractions were heterogenous in nature as revealed by high performance liquid chromatography. SDS-polyacrylamide gel electrophoresis revealed the total protein sample to contain 21 different components with molecular weights ranging from 8.92 to 117.49kd. Albumins, globulins, prolamins and glutelins resolved into 4, 8, 6 and 13 different sized components of molecular weights ranging from 10.23 to 25.53, 10.84 to 112.72, 10.33 to 51.52 and 8.91 to 112.72kd, respectively. Amino acid analysis of all fractions revealed that glutamic acid was present in maximum concentration followed by aspartic acid and lysine. Just like other pulse proteins, the urdbean proteins were also deficient in sulphur containing amino acids. 相似文献
