The effect of bran prehydration on the composition and bread‐baking quality was determined using bran and flour of two wheat varieties. Bran was hydrated in sodium acetate buffer (50mM, pH 5.3) to 50% moisture at 25 or 55°C for 1.5 or 12 h. The soluble sugar content in bran increased with prehydration. Decreases in phytate and soluble fiber were observed in prehydrated bran, but insoluble fiber was not affected by prehydration. Likewise, free phenolic content decreased, and there was little change in the content of bound phenolics in prehydrated bran. The compositional changes were greater in the bran prehydrated at 55 than at 25°C, and for 12 than for 1.5 h. Addition of prehydrated bran delayed dough development of bran and flour blends and slightly increased water absorption of dough. A higher loaf volume of fresh bread and lower crumb firmness of bread stored for 10 days were observed in bread containing bran prehydrated at 25°C than in bread containing nonhydrated bran or bran prehydrated at 55°C. The prehydration of bran at 25°C before being incorporated into refined flour for dough mixing improved bread quality by altering bran compositional properties, allowing enough water to be absorbed by fibrous materials in the bran and preventing water competition among dough constituents.  相似文献

The aim of this investigation was to study the influence of different bran proportions and particle sizes, addition of fungal phytase, and α‐amylase addition on bread quality and phytate levels, and how these treatments affect availability of iron to intestinal epithelial (Caco‐2) cells. Potential mineral contributions to dietary reference intakes and phytate‐to‐mineral molar ratios were also evaluated. Wheat bran supplementation significantly affected bread quality. Smaller bran particle size affected crumb firmness negatively, whereas the use of α‐amylase, in some cases in combination with phytase, could improve technological bread quality. The use of phytase in the formulation significantly reduced the level of phytates, and phytate hydrolysis also led to smaller bran particle size. Increasing the bran proportion used in the bread formulation increased the iron concentration in bread samples by 18.9%. Phytase addition proved to be a useful strategy to improve iron dialyzability; however, incomplete dephytinization still had an inhibitory effect on iron uptake, with the exception of samples formulated with 10% bran. The inhibitory effect of phytate could be predicted from the values of the phytate‐to‐iron ratios. Reduction of particle size did not improve iron availability or uptake by Caco‐2 cells.  相似文献

Wheat bran is a low‐cost by‐product abundantly produced by the wheat flour industry. As a staple food of China, Chinese steamed bread (CSB) represents about 40% of China's wheat consumption. This study investigated the effects of incorporating wheat bran into the CSB at different levels (5, 10, and 15%). The dough behavior was measured by analyzing rheological properties. Quality of CSB was analyzed from two perspectives: physical properties and nutritional quality. For physical properties, specific volume, loaf height, moisture, and texture were measured by 1 . The predicted glycemic response of the bread was analyzed by using an in vitro digestion method. The results illustrated that the incorporation of wheat bran into wheat flour reduced the extensibility of the dough, decreased specific volume, and increased bread hardness, gumminess, and chewiness. However, this study also showed that addition of wheat bran can decrease the predicted glycemic response of steamed bread by up to 39%.  相似文献

We compared the effects of spontaneous fermentation of the bran fraction and fermentation with added yeast or added yeast and lactic acid bacteria (Lactobacillus brevis) on the quality of wheat bread supplemented with bran. Prefermentation of wheat bran with yeast or with yeast and lactic acid bacteria improved the loaf volume, crumb structure, and shelf life of bread supplemented with bran. The bread also had added flavor and good and homogenous crumb structure. Elasticity of the crumb was excellent. Spontaneous fermentation of the bran fraction did not have the same positive effects on bread quality. The microstructure of the breads was characterized by light microscopy. The positive effect of fermentation of bran on bread quality was evident when comparing the well‐developed protein network structure of the breads baked with fermented bran with the control bread. Prefermentation of the bran with yeast and lactic acid bacteria had the greatest effect on the structure of starch. The starch granules were more swollen and gelatinized in the breads made with prefermented bran. The pretreatments of the bran fraction had no detectable effect on the microstructure of the cell wall particles in the test breads.  相似文献

本研究利用亚基5和10的特异PCR标记,对19个已知HMW-GS组成的品种(包括中国春及其缺体1D-四体1A、缺体1D-四体1B)进行了扩增。结果表明,具有5亚基的8个品种[如钱尼(CNN)和荔垦2号],能扩增出450bp的特异带;而其它品种[如中国春(CS)及其1D缺体-四体],则没有这一特异带。具有10亚基的品种[CNN和荔垦2号等]能扩增出576bp的特异带;具有12亚基的品种(如CS等)能扩增出612bp的特异带。结果与HMW-GS的蛋白质电泳结果一致。用这两个标记对同一组合内的15个F6品系进行PCR扩增,发现其中12个品系HMW-GS组成为1Dx5 1Dy10。  相似文献

The effect of protein quality, protein content, bran addition, diacetyl tartaric acid ester of monoglycerides (DATEM), proving time, and their interaction on hearth bread characteristics were studied by size‐exclusion fast protein liquid chromatography, Kieffer dough and gluten extensibility rig, and small‐scale baking of hearth loaves. Protein quality influenced size and shape of the hearth loaves positively. Enhanced protein content increased loaf volume and decreased the form ratio of hearth loaves. The effect of protein quality and protein content was dependent on the size‐distribution of the proteins in flour, which affected the viscoelastic properties of the dough. Doughs made from flours with strong protein quality can be proved for a longer time and thereby expand more than doughs made from weak protein quality flours. Doughs made from strong protein quality flours tolerated bran addition better than doughs made from weak protein quality flours. Doughs made from high protein content flours were more suited for hearth bread production with bran than doughs made from flours with low protein content. DATEM had small effect on dough properties and hearth loaf characteristics compared with the other factors.  相似文献

Wheat grain may be attacked by different insect species. Among them, some Heteroptera species (e.g., Aelia spp. and Eurygaster spp.) reduce wheat breadmaking quality; others, such as Nysius simulans , commonly extract water and nutrients from soy plants. The aim of this study was to assess the effect of N. simulans infestation on breadmaking quality of different bread wheat cultivars. Twelve wheat cultivars (damaged and undamaged by N. simulans ) were studied. Infested grain percentage varied between 51 and 78%, depending on cultivar. Protein and gluten quantity and quality were significantly reduced in damaged flours, as shown by gluten index, solvent retention capacity, and SDS sedimentation index. SDS‐PAGE from water‐extractable proteins evidenced an important proteolytic activity in damaged samples. Dough rheological properties showed a reduced dough viscoelasticity in damaged samples. Microbread specific volume changed from 3.26 cm3/g for samples made with undamaged flour to 2.77 cm3/g for bread made with damaged flour. No evidence for modification in starch properties was found. The infestation by N. simulans reduced wheat breadmaking quality in all cultivars studied, as a result of proteolytic activity occurring after dough hydration. Results suggest that the presence of N. simulans should be considered as a factor affecting wheat crops, mainly those located next to soy crop areas, which is the usual host for this insect.  相似文献

Flours from five spelt cultivars grown over three years were evaluated as to their breadbaking quality and isolated starch properties. The starch properties included amylose contents, gelatinization temperatures (differential scanning calorimetry), granule size distributions, and pasting properties. Milled flour showed highly variable protein content and was higher than hard winter wheat, with short dough‐mix times indicating weak gluten. High protein cultivars gave good crumb scores, some of which surpassed the HRW baking control. Loaf volume was correlated to protein and all spelt cultivars were at least 9–51% lower than the HRW control. Isolated starch properties revealed an increase in amylose in the spelt starches of 2–21% over the hard red winter wheat (HRW) control. Negative correlations were observed for the large A‐type granules to bread crumb score, amylose level, and final pasting viscosity for cultivars grown in year 1999 and to pasting temperature in 1998 samples. Positive correlations were found for the small B‐ and C‐type granules relative to crumb score, loaf volume, amylose, and RVA final pasting viscosity for cultivars grown in 1999, and to RVA pasting temperature for samples grown in 1998. The environmental impact on spelt properties seemed to have a greater effect than genetic control.  相似文献

In this study, effects of increasing levels of wheat bran and barley flour on dough properties and bazlama quality were investigated. Bazlama is a flat bread commonly consumed in Turkey. Flours of wheat cultivars Gün and Gerek, flour of barley cultivar Tokak, and Gerek bran mixture were used. Part of the wheat flours were replaced with barley flour at 10, 20, 30, and 40% levels and Gerek bran mixture at 5, 10, 15, and 20% levels. Farinogram properties of mixtures were determined. Bazlama samples were subjected to sensory analysis for external appearance, shape and symmetry, crust color, crumb color and structure, mouthfeel, taste and aroma. Increasing levels of bran and barley flour caused decreases in all sensory properties. The deteriorative effect of barley flour on bazlama properties was generally more obvious when compared to bran supplementation. However, all bazlama samples were considered acceptable. Penetrometer values of bazlama samples showed that increasing levels of barley flour created significantly softer bazlama. However, in bran-supplemented bazlama samples, effect of bran on softness was found to be insignificant in both cultivars. Bazlama samples supplemented with bran had lower L values and higher a and b values for color when compared to those supplemented with barley flour. In all samples, effect of increasing levels of barley flour on residual β-glucan was found to be insignificant in both cultivars. Acid detergent fiber and neutral detergent fiber values increased with increasing levels of bran, and the changes in both cultivars were similar.  相似文献

The in vitro bile acid binding by rice, oat, wheat, and corn brans was determined using a mixture of bile acids normally secreted in human bile at a physiological pH of 6.3. The objective of the study was to relate bile acid binding of cereal brans to health promoting properties. Three experiments were conducted testing substrates on an equal weight (dry matter) basis, an equal total dietary fiber (TDF) basis, and an equal TDF and equal fat basis. Each experiment was repeated to validate the results (for a total of six experiments). The relative in vitro bile acid binding of the cereal brans on an equal TDF basis considering cholestyramine as 100% bound was rice bran 51%, wheat bran 31%, oat bran 26%, and corn bran 5%. The data suggest that cholesterol lowering by rice bran appears to be related to bile acid binding. The primary mechanism of cholesterol lowering by oat bran may not be due to bile acid binding by soluble fiber. Bile acid binding did not appear to be proportional to the soluble fiber content of the cereal brans tested. Bile acid binding by wheat bran may contribute to cancer prevention and other healthful properties.  相似文献

This research studied developing quick cooking brown rice by investigating the effect of ultrasonic treatment at different temperatures on cooking time and quality. The medium grain brown rice was ultrasonically treated in water at temperatures of 25, 40, and 55°C for 30 min and then dried by air at 25°C to its initial moisture content (11.0 ± 0.6%, wb) before cooking. The microstructure of rice kernel surface, chemical composition, and optimal cooking time of treated brown rice were determined. The pasting and thermal properties and chemical structure of flour and starch from treated brown rice were also examined. The results showed that the optimal cooking times were 37, 35, and 33 min after treatment at 25, 40, and 55°C, respectively, compared to the control of 39.6 min. The ultrasonic treatment resulted in a loss in natural morphology of rice bran, allowing water to be absorbed by a rice kernel easily, particularly at high‐temperature treatment. Even through rice flour still maintained an A‐pattern in the pasting properties, the crystallinity significantly increased after treatment at 55°C. Ultrasonic treatment increased the peak, hold, and final viscosities and decreased the onset temperature (To) and peak temperature (Tp), significantly. Thus, ultrasonic treatment could be used for reducing cooking time of brown rice.  相似文献

The aim of this work was to assess the influence of wheat bran addition on the rheological properties of dough and on subsequent wheat bread volume and texture. Two types of bioprocessed bran (fermentation with yeast or with yeast plus enzymes) were studied in breadmaking at a substitution level of 20% (sufficient to deliver 6 g of dietary fiber per 100 g of product, the minimum for the European Food Safety Authority high‐fiber nutrition claim). Fermentation activated endogenous enzymes of bran, which together with exogenous enzymes modified the state of fiber in bran, resulting in solubilization of arabinoxylans and slight degradation of the insoluble fiber. Fermentation and enzyme treatment of bran compensated for the increased hardness (+100%) and the volume‐decreasing (–21%) effect observed with untreated bran. Analysis with partial least squares regression suggested the efficacy of bioprocessing to be based on solubilization of arabinoxylans, smaller particle size of bran, lower pasting viscosity of starch, improved resistance to extension, and accelerated CO2 production.  相似文献

为促进大豆副产物资源利用,开发新型营养面制品,本试验以豆渣为原料,利用柠檬明串珠菌E12为发酵剂制作豆渣酸面团,探究不同豆渣酸面团添加量(0%、20%、30%和40%)对馒头面团(对应编号分别为S0、S20、S30和S40)发酵活力、动态流变特性、抗氧化特性以及膳食纤维含量的影响,并研究豆渣酸面团馒头(对应编号分别为CS0、CS20、CS30和CS40)的感官品质,以及在贮藏期间馒头质构和水分含量的变化。结果表明,添加豆渣酸面团会降低馒头面团的弹性、黏性和综合黏弹性。馒头面团的抗氧化特性以及膳食纤维含量随着豆渣酸面团添加量的增加而显著增加;当添加量为40%时,S40馒头面团的1,1-二苯基-2-三硝基苯肼(DPPH)自由基清除率和2,2-联氮-二(3-乙基-苯并噻唑-6-磺酸)二铵盐(ABTS)自由基清除率分别达到15.61%和79.59%,比S0增加了5.10和15.02个百分点,总膳食纤维含量达到3.91 g·100g-1,比S0增加了138.79%。豆渣酸面团的添加量为20%时,CS20馒头的比容和延展率与CS0相比无显著差异,但对馒头的外观、色泽、风味和口感产生了积极影响,整体可接受度达到7.8。在贮藏5 d后,CS0的硬度、咀嚼性和胶着性分别增加了180.85%、69.62%和98.08%,而CS40分别增加了76.19%、30.88%和33.96%,与CS0相比增加量显著减小,且在贮藏期间CS40的水分含量始终高于CS0,表明豆渣酸面团有利于减缓馒头的老化。本研究为实现豆渣资源的合理化应用以及新型营养的酸面团产品开发提供了一定的理论基础。  相似文献

Amylose content in wheat endosperm is controlled by three Wx loci, and the proportion of amylose decreases with successive accumulation of Wx null alleles at the three loci. The proportion of amylose is believed to influence end‐use quality of bread and Asian noodles. The objectives of this study were to determine influence of the allelic difference at Wx‐B1 locus on bread quality, bread firmness, and white salted noodle texture in a spring wheat cross segregating for the Wx‐B1 locus and in a set of advanced spring wheat breeding lines differing in allelic state at the Wx‐ B1 locus. In addition, we examined the relationship between amylose content and flour swelling properties on bread and noodle traits. Fifty‐four recombinant inbred lines of hard white spring wheat plus parents were grown in replicated trials in two years, and 31 cultivars and breeding lines of hard spring wheat were grown in two locations. Bread and white salted noodles were processed from these trials. The presence of the Wx‐B1 null allele reduced amylose content by 2.4% in a recombinant inbred population and 4.3% in a survey of advanced breeding lines and cultivars compared with the normal. The reduced amylose was accompanied by an average increase in flour swelling power (FSP) for the Wx‐B1 null group of 0.8 g/g for the cross progeny and 2.3 g/g for the cultivar survey group. The Wx‐B1 allelic difference did not affect flour protein in cross progeny where the allelic difference was not confounded with genetic background. Bread from the Wx‐B1 null groups on average had increased loaf volume and was softer than the normal group for the cross progeny and cultivar survey group. The Wx‐B1 allelic difference altered white salted noodle texture, most notably noodle springiness and cohesiveness where the Wx‐B1 null groups was more springy and more cohesive than the normal groups for both sets of genetic materials. Flour protein was more highly related to loaf volume than were FSP or amylose. Both flour protein and FSP were positively related to noodle textural traits, but especially noodle springiness and cohesiveness.  相似文献

The effect of hydration level on processing properties and the effects of hydration level, concentration of buckwheat bran flour and drying temperature on the physical and cooking quality of spaghetti were determined. Specific mechanical energy transferred to the dough during extrusion decreased 69% for semolina and 79% for semolina containing 30%, w/w, buckwheat bran flour, as hydration level increased 29–32% absorption. Little or no postdrier checking occurred in spaghetti made from semolina or spaghetti containing buckwheat bran flour when dried at high (70°C) or ultrahigh temperature (90°C). When dried at low temperature (40°C), tolerance to postdrier checking of spaghetti decreased as buckwheat bran flour increased 0–30% (w/w). Hydration level before extrusion did not affect cooking loss of spaghetti made from semolina. However, cooking loss was greater from spaghetti made with semolinabuckwheat bran flour that was hydrated to 32% compared with 29–31% absorption. Cooked firmness of spaghetti containing buckwheat bran flour decreased from 0.588–0.471 Nm as hydration increased from 29–32% absorption. Cooking loss was lower and cooked firmness was greater when spaghetti containing buckwheat bran flour was dried at ultrahigh than at low temperature.  相似文献

为生产高品质南方馒头,确定优质南方馒头专用小麦粉原料特性的取值范围,本研究以20种小麦粉为原料制备南方馒头,探究小麦粉的理化特性、糊化特性、拉伸特性、粉质特性对南方馒头品质的影响,通过逐步回归分析法筛选出影响南方馒头综合品质的小麦粉关联性指标,结合聚类分析得到适宜加工南方馒头的小麦粉原料关联性指标范围。结果表明,小麦粉原料的灰分、降落数值、峰值黏度、形成时间、稳定时间、弱化值、延伸度、拉伸面积、拉伸比、最大拉伸比与南方馒头品质综合得分存在显著(P < 0.05)相关性。影响南方馒头综合品质的关键指标为延伸度、形成时间和峰值黏度,适宜加工南方馒头的小麦粉参考关键指标范围为:延伸度126.00~158.00 mm、形成时间1.70~5.00 min、峰值黏度 1 027.00~1 326.00 Pa·s。小麦粉原料选择模型的建立和关键性指标范围的确定可预测南方馒头品质。本研究为南方馒头原料选择提供了依据,并可用于进一步改善南方馒头的综合品质。  相似文献

[目的]研究山西省北部人工华北落叶松纯林质量精准提升中的树种混交策略,为该地区的森林经营提供参考。[方法]在管涔山设置华北落叶松不同混交模式和不同起源的固定样地,2010年和2015年夏分别对样地内胸径≥5.0cm的样木进行每木检尺。采用单因素方差分析和t检验比较不同起源、不同混交模式下混交树种生长量的差异显著性。[结果](1)与华北落叶松混交的树种,胸径生长量ΔD表现为:ΔD白桦ΔD白杄ΔD山柳,胸高断面积生长量ΔS表现为:ΔS白桦ΔS白杄ΔS山柳,蓄积生长量ΔV表现为:ΔV白桦≈ΔV白杄ΔV山柳。(2)不同混交模式下,华北落叶松的ΔS和ΔV差异不显著。(3)天然中幼林条件下,混交树种的生长量为:白杄白桦山柳;人工中幼林条件下,混交树种的生长量白桦最大。(4)白杄与天然华北落叶松混交的生长量大于与人工华北落叶松混交,白桦与人工华北落叶松混交的生长量大于与天然华北落叶松混交。[结论]在人工华北落叶松纯林的幼龄阶段,林间空地栽植白桦,构建华北落叶松—白桦斑块混交结构。通过针阔树种的混交,营造较为稳定、接近天然状态的生态环境。当白桦生长量下降、生态功能减弱后,采伐长势不良的白桦,在林冠下层补植白杄,形成稳定的华北落叶松—白杄混交、复层、异龄林。  相似文献

为选育高油酸、高产花生新品种,以高油酸亲本CTWE为父本、高蔗糖亲本06-I8B4为母本搭配杂交组合,结合近红外分析技术与分子标记辅助选择技术育成FAD2B/ FAD2A双突变高油酸小花生新品种花育662.该品种油酸含量82.11%,油亚比25.98,出米率高达79.7%.在2012年山东省花生研究所莱西试验农场产量试验中,子仁产量5 132.4 kg·hm-2,略低于对照品种花育33号5 224.5kg·hm-2的产量水平,2014年通过安徽省品种鉴定.本研究为加速高油酸花生育种进程提供了良好的技术方法.  相似文献
