In vitro anaerobic incubations were used to determine the effect of different oils (LO-linseed, SO-sunflower, FO-fish oil) on trans fatty acid production in rumen fluid and to test if combining of monensin (MON) with the oils affects the interactions on trans fatty acid concentrations in mixed cultures of ruminal microorganisms. Two different sources of rumen fluid were used; the inoculum from the sheep fed hay and barley (80:20%)--the inoculum A and the inoculum from the sheep fed alfalfa and barley (80:20 %)--the inoculum B. The analyses showed that inoculum B contained more short chain fatty acids (SCFA), medium chain fatty acids (MCFA) and saturated fatty acids (SFA) than inoculum A. In contrast, inoculum A contained more unsaturated fatty acids (UFA) than inoculum B. The results show, that the oils affected the biohydrogenation of fatty acids (FA) by increasing the concentration of C18:0 (3-7 times) and trans C18:1 isomers (2-9 times). The concentration of two main intermediates of FA biohydrogenation-- cis 9, trans 11 C18:2 (CLA) and trans 11C18:1 (TVA) were increased with the oils, but FO was more efficient than other plant oils on CLA and TVA production.The monensin treatment had similar effect on FA metabolism as the oil treatment in comparison to unincubated control. The interactions of monensin treatment with the oils were characterized with decrease (LO+MON, SO+MON) or increase (FO+MON) of the proportions of C18:0 and trans C18:1 isomers in comparison to oil treatment.The highest concentrations of two main isomers--CLA,TVA were found in the samples containing fish oil and monensin. In conclusion, fish oil treatment and monensin with fish oil treatment was more efficient than other plant oils in the effect on trans fatty acid production (mainly CLA and TVA) in fermentation fluid in vitro.  相似文献

The effect of conjugated linoleic acid (CLA) on blood lipids [total cholesterol, high-density lipoprotein (HDL), low-density lipoprotein (LDL) and triacylglycerols (TAG)] and the fatty acid distribution of the lipoprotein fractions, backfat, muscle fat, and liver lipids were examined in an experiment with two groups of 40 pigs [Pietrain x (Landrace x Large White)] each. The 20 female and 20 male castrated pigs of each group were fed with isoenergetic and isonitrogenous diets supplemented with either 20 g/kg rapeseed oil (control) or 20 g/kg CLA-TAG. The CLA preparation contained 54.2% pure CLA consisting of approximately two-thirds cis,trans/trans,cis-isomers and one-third trans,trans-isomers. The fatty acids of lipoproteins, backfat, muscle lipids and liver lipids were analysed by gas chromatograph (GC). CLA supplementation did not significantly influence blood lipids and the LDL to HDL ratio. In the CLA-fed pigs the very low-density lipoprotein (VLDL) contained higher saturated fatty acid (SFA) concentrations at the cost of the monounsaturated fatty acids (MUFA). The percentage of polyunsaturated fatty acids (PUFA) remained unchanged. The highest CLA content was analysed in VLDL (4.00%) followed by LDL (2.78%) and HDL (1.45%). The ratio of cis,cis to trans,trans isomers increased from VLDL over LDL to HDL. The content of SFA, probably in backfat and muscle lipids, increased whereas the part of MUFA decreased as a result of reduced Delta9-desaturase activity. The percentage of PUFA (without CLA) was higher in backfat of the control group in accordance with the dietary PUFA supply. This shift in the fatty acid distribution was not observed in the liver lipids. In all the three tissues analysed, the CLA-fed pigs had a significantly increased CLA content: the highest increase was in the backfat (5.65%), followed by liver lipids (2.41%), and muscle lipids (1.47%). An isomer-specific accumulation was observed for cis,cis-CLA isomers in muscle, and for trans,trans-CLA isomers in backfat. We conclude that CLA supplementation results in a higher SFA content in backfat and muscle lipids but not in liver lipids. There is a discrimination of the trans-10, cis-12 isomer and the trans,trans isomers in the formation of the cell membranes.  相似文献

Thirty-six Angus x Hereford heifers (365 +/- 60 kg) were used to determine the effects of supplemental dietary lipid sources on fatty acid composition of i.m., perianal (p.a.), and s.c. lipid depots. Lipid was supplied to diets as either corn oil or a rumen-protected conjugated linoleic acid (CLA) salt for two specific treatment periods of either the final 32 or 60 d on feed. Following an initial 56-d feeding period, heifers were fed one of three dietary treatments (DM basis): 1) basal diet containing 88% concentrate and 12% grass hay (CON), 2) basal diet plus 4% corn oil (OIL), or 3) basal diet plus 2% rumen-protected CLA salt (RPCLA) containing 31% CLA. The trans-10, cis-12 CLA concentration was greatest (P < 0.05) for heifers fed RPCLA and OIL diets and least (P < 0.05) for CON, regardless of time on dietary treatment. Heifers fed supplemental RPCLA had greater (P < 0.05) total CLA content than either CON- or OIL-fed heifers. Adipose tissue concentration of trans-11 vaccenic acid (TVA) was less (P < 0.05) for CON than OIL or RPCLA, which did not differ (P > 0.05). Percentages of C18:1 trans-10 were least (P < 0.05) in i.m. lipid compared with p.a. and s.c., which did not differ (P > 0.05). Following 60 d of lipid supplementation, heifers fed OIL and RPCLA had lower (P < 0.05) concentrations of oleic acid and total monounsaturated fatty acids (MUFA) compared with CON. The ratio of cis-9, trans-11 CLA:TVA was higher (P < 0.05) for heifers fed 60 vs. 32 d, but did not differ (P > 0.05) between adipose depots. Feeding OIL increased (P < 0.05) adipose concentration of C18:2 fatty acid, whereas feeding RPCLA increased (P < 0.05) total CLA isomers by 22%. Intramuscular lipid contained the lowest (P < 0.05) percentage of cis-9, trans-11 CLA, total CLA, C18:1 cis-9, C18:1 trans-10, and TVA. Total CLA and cis-9, trans-11 CLA isomers were increased (P < 0.05) in p.a. and s.c. adipose depots, whereas i.m. adipose tissue contained increased (P < 0.05) amounts of total PUFA. Results from this study indicate that short-term lipid supplementation to feedlot cattle can increase adipose tissue CLA concentrations, but only marginally (8.3 to 17.5%). Moreover, observed decreases in oleic acid and total MUFA concentrations of adipose tissues from heifers fed rumen-protected CLA or corn oil suggest that lipid supplementation may decrease delta9 desaturase activity in adipose tissues, which in turn would lower the conversion of TVA to cis-9, trans-11 CLA isomer.  相似文献

This study estimated genetic parameters for fatty acids of different sites of fat tissue, meat production, and meat quality traits of Duroc pigs selected during 7 generations for ADG, LM area, backfat thickness (BF), and intramuscular fat (IMF). For this study, 394 barrows and 153 gilts were slaughtered at 105 kg of BW. High heritabilities for C18:0 of outer and inner subcutaneous fat tissue were estimated, respectively, as 0.54 and 0.51; those of intermuscular and intramuscular fat were 0.40 and 0.51, respectively. Genetic and phenotypic correlations of ADG and BF with saturated fatty acids of outer and inner subcutaneous fat were positive, but those with C16:1 and C18:2 were negative, and those with C18:1 were nearly zero. Genetic and phenotypic correlations between LM area and respective fatty acids showed opposite results. Respective genetic and phenotypic correlations of melting points with C18:0 and C18:1 were positive and high, and negative and high, respectively. Genetic correlations between cooking loss and SFA (C14:0, C16:0, and C18:0) of IMF were positive and moderate: 0.56, 0.47, and 0.47, respectively. On the other hand, monosaturated fatty acid of C18:1 was highly and negatively correlated with cooking loss (-0.61). Moreover, high genetic correlation between meat color (pork color standard and lightness) and fatty acid compositions of IMF suggest that the SFA (C14:0, C16:0, and C18:0) were correlated genetically with meat lightness and that unsaturated fatty acid compositions (C18:1 and C18:2) were correlated with meat darkness. Results of this study suggest that the fatty acid composition of adipose tissue is correlated genetically with meat production and meat quality traits.  相似文献

In two experiments with growing-finishing pigs six different dietary fats were added to a conventional diet (control--C) to study the effects of dietary monounsaturated (MUFA) and polyunsaturated fatty acids (PUFA) on the fatty acid composition of backfat and kidney fat at similar amounts of double bonds in feed (Exp. 1:7% pork fat--PF, 4.95% olive oil--OO, 3.17% soybean oil--SO) or a constant amount of 5% of processed fats (Exp. 2: partially hydrogenated fat--SAT, fractionated pork fats: olein--OLE, stearin--STE). Compared with the control, PUFA were only slightly increased in backfat of pigs fed PF, OLE, STE or OO, although dietary PUFA intake was up to 70% higher. With SO PUFA were significantly increased in adipose tissues, predominantly at the expense of MUFA. Consequently, a non-linear relationship was found between PUFA intake and proportion in backfat. MUFA were incorporated at the expense of SFA, therefore, adipose tissues of OO fed animals were lowest in SFA. Despite comparable amounts of double bonds in feed (Exp. 1), the degree of unsaturation measured as fat score (sum of double bonds) was in the order SO > OO > PF > C. In contrast, the proportion of SFA was C > PF = SO > OO. Regarding the decisive role of SFA for fat consistency it may be concluded that MUFA should also be considered in feeding recommendations for pigs. Furthermore, in case of a high dietary supply of MUFA, a simple index of double bonds might not be sufficiently conclusive to judge pig fat quality.  相似文献

This study investigated the effect of modifying the n-6:n-3 fatty acid ratio (FAR) of diets using linseed, soybean, and cottonseed oils on apparent digestibility, ruminal fermentation characteristics, growth performance, key circulating hormones, and the fatty acid profile of ruminal digesta, liver, and fore-shank muscle of growing lambs fed a high concentrate diet. Forty individually housed Katadhin Dorper lambs (average of 20.0 kg of BW) were fed Bermudagrass hay in ad libitum amounts and concentrates at 3.7% of BW daily. The concentrate contained 68.9% corn, 23.8% soybean meal, 3.3% limestone, and 4.0% oil supplements (DM basis). The treatments consisted of dietary n-6:n-3 FAR of 2.3:1, 8.8:1, 12.8:1, and 15.6:1. After feeding for 35 d in metabolism crates, lambs were slaughtered 15 h after feeding, and samples of ruminal digesta, blood, liver, and foreshank tissue were collected. Increasing dietary n-6:n-3 FAR did not affect the intake of DM nor the apparent digestibility of DM, ether extract, NDF, or ADF, but did increase apparent digestibility of CP (linear, P < 0.05). Concentrations of ruminal butyrate increased linearly (P < 0.05) with increasing dietary n-6:n-3 FAR, whereas the valerate concentration decreased linearly (P < 0.001). Concentrations of plasma insulin and IGF-I were not affected by dietary n-6:n-3 FAR. Concentrations of C18:3n-3 increased linearly (P < 0.001), whereas that of C18:2n-6 decreased linearly (P < 0.001) in ruminal digesta with decreasing dietary n-6:n-3 FAR. Concentrations of transisomers of fatty acids in ruminal digesta did not change. Proportions of C18:0 in liver and foreshank muscle were unchanged by diet. The proportion of trans11 C18:1 and cis-9 trans11 CLA decreased (P < 0.05) in liver but increased (P < 0.05) in foreshank muscle as dietary n-6:n-3 FAR decreased. Proportions of all measured n-3 fatty acids were greater in liver when diets contained more C18:3n-3 from linseed oil. By decreasing the dietary n-6:n-3 FAR, the proportions of n-6 fatty acids in foreshank muscle decreased dramatically; specifically, C18:2n-6 decreased linearly (P < 0.001) from 28.0 to 16.5% and C20:4n-6 decreased linearly (P < 0.001) from 14.7 to 8.6%. Although feeding a diet that contained more n-3 fatty acids increased the n-3 fatty acid concentration of muscle, the ratio of PUFA to SFA was decreased.  相似文献

Carcass composition, meat quality characteristics and changes in backfat fatty acid composition of swine that were allowed to obtain part or all of their weight gain during the growing-finishing period from gleaning peanuts remaining in the field after harvest were evaluated. Thirty-six cross-bred pigs (18 barrows, 18 gilts) were allotted evenly among the following six treatments: 1) fed a corn-soybean meal-based diet (C) from 26 to 104 kg (CCC); 2) gleaned peanuts (P) from 26 to 102 kg (PPP); 3) C from 26 to 78 kg and P from 78 to 103 kg (CCP); 4) P from 26 to 55 kg and C from 55 to 105 kg (PCC); 5) C from 26 to 56 kg and P from 56 to 103 kg (CCP); 6) P from 26 to 79 kg and C from 79 to 106 kg (PPC). Carcasses from all treatment groups were similar in composition. Carcass fat of pigs in CPP, PPC and, in particular, PPP groups was softer than that from pigs in CCC, CCP and PCC groups. Ratio of unsaturated to saturated fatty acids in backfat increased in proportion to the amount of weight gained while pigs gleaned peanuts. Loins from pigs in the PPP and CPP treatment groups received lower marbling scores than those from the CCC group, but the fat content of the loin was not affected by treatment. The aims of this study were 1) to investigate the potential application of near-infrared spectroscopy (NIRS) to predict intramuscular fat (IMF) and fatty acid (FA) composition of individual meat samples, 2) to estimate heritability of IMF and FA NIRS-based predictions, and 3) to assess the statistical relevance of the genetic background of such predictions by using the Bayes factor (BF) procedure. Young Piemontese bulls (n = 1,298) were raised and fattened on 124 farms, and slaughtered at the same commercial abattoir. Intramuscular fat content and FA composition were analyzed on a random subset of 148 samples of minced and homogenized longissimus thoracis muscle. Near-infrared spectroscopy spectra were collected on all samples (n = 1,298) in reflectance mode between 1,100 and 2,498 nm (every 2 nm) using fresh minced meat samples. Calibration models developed from the random subset of 148 samples were used to predict IMF and FA contents of the remaining 1,150 samples. Intramuscular fat content and FA predictions were analyzed under a Bayesian univariate animal linear models, and the statistical relevance of heritability estimates was assessed through BF; the model with polygenic additive effects was favored when BF > 1. In general, satisfactory results (R(2) > 0.60) were obtained for 6 out of the 8 major FA (C14:0, C:16:0, C16:1, C18:0, C18:1n-9 cis/trans, and C18:1n-11 trans), 6 out of the 19 minor FA (C10:0, C12:0, C17:0, C17:1, C18:2 cis-9,trans-11, and C20:2), and the total SFA, MUFA, and PUFA. Bayes factors between models with and without a genetic component provided values greater than 1 for IMF, C14:0, C16:0, C18:1n-9 cis/trans, C17:0, C17:1, C20:2, SFA, MUFA, and PUFA. The greatest BF was reached by C20:2 (BF >10), suggesting strong evidence of genetic determinism, whereas IMF, C18:1n-9 cis/trans, C17:0, C17:1, MUFA, and PUFA showed substantial evidence favoring the numerator model (3.16 < BF < 10). Point estimates of heritabilities for FA predicted by NIRS were low to moderate (0.07 to 0.21). Results support that NIRS is a useful technique to satisfactorily predict some FA of meat. The existence of an important genetic determinism affecting FA profile has been confirmed, suggesting that FA composition of meat can be genetically modified.  相似文献

Because of the potential benefits to human health, there is interest in increasing 18:3n-3, 20:5n-3, 22:6n-6, and cis-9,trans-11 CLA in ruminant foods. Four Aberdeen Angus steers (406 ± 8.2 kg of BW) fitted with ruminal and duodenal cannulas were used in a 4 × 4 Latin square experiment with 21-d periods to examine the potential of fish oil (FO) and linseed oil (LO) in the diet to increase ruminal outflow of trans-11 18:1 and total n-3 PUFA in growing cattle. Treatments consisted of a control diet (60:40; forage:concentrate ratio, on a DM basis, respectively) based on maize silage, or the same basal ration containing 30 g/kg of DM of FO, LO, or a mixture (1:1, wt/wt) of FO and LO (LFO). Diets were offered as total mixed rations and fed at a rate of 85 g of DM/(kg of BW(0.75)/d). Oils had no effect (P = 0.52) on DMI. Linseed oil had no effect (P > 0.05) on ruminal pH or VFA concentrations, whereas FO shifted rumen fermentation toward propionate at the expense of acetate. Compared with the control, LO increased (P < 0.05) 18:0, cis 18:1 (Δ9, 12-15), trans 18:1 (Δ4-9, 11-16), trans 18:2, geometric isomers of 9,11, 11,13, and 13,15 CLA, trans-8,cis-10 CLA, trans-10,trans-12 CLA, trans-12,trans-14 CLA, and 18:3n-3 flow at the duodenum. Inclusion of FO in the diet resulted in greater (P < 0.05) flows of cis-9 16:1, trans 16:1 (Δ6-13), cis 18:1 (Δ9, 11, and 13), trans 18:1 (Δ6-15), trans 18:2, 20:5n-3, 22:5n-3, and 22:6n-3, and decreased (P < 0.001) 18:0 at the duodenum relative to the control. For most fatty acids at the duodenum, responses to LFO were intermediate of FO and LO. However, LFO resulted in greater (P = 0.04) flows of total trans 18:1 than LO and increased (P < 0.01) trans-6 16:1 and trans-12 18:1 at the duodenum compared with FO or LO. Biohydrogenation of cis-9 18:1 and 18:2n-6 in the rumen was independent of treatment, but both FO and LO increased (P < 0.001) the extent of 18:3n-3 biohydrogenation compared with the control. Ruminal 18:3n-3 biohydrogenation was greater (P < 0.001) for LO and LFO than FO, whereas biohydrogenation of 20:5n-3 and 22:6n-3 in the rumen was marginally less (P = 0.05) for LFO than FO. In conclusion, LO and FO at 30 g/kg of DM altered the biohydrogenation of unsaturated fatty acids in the rumen, causing an increase in the flow of specific intermediates at the duodenum, but the potential of these oils fed alone or as a mixture to increase n-3 PUFA at the duodenum in cattle appears limited.  相似文献

The dietary dose responsiveness of conjugated linoleic acid (CLA) addition relative to the fatty acid profile of edible lean tissue was examined in grower pigs treated with or without porcine somatotropin (pST). Gilts and barrows were fed CLA at 0, 0.25, 0.5, 1.0, or 2.0% of diet by weight from 20 to 55 kg BW. Additional pigs were administered (pST) at 0 or 100 microg x kg BW x d(-1) and fed either 0.5 or 2.0% CLA. Animals were fed diets containing 18% CP, 1.2% lysine, and 3.5 Mcal of DE/kg at 110% of ad libitum intake. The fatty acid profile in latissimus dorsi and dorsal s.c. adipose tissue samples was determined by gas chromatography. Dietary CLA replacement of corn oil increased the percentage of total fatty acids as stearic acid, whereas the percentages as oleic and linolenic acids were reduced in lattisimus muscle. Treatment with CLA + pST increased the percentages of linoleic and arachidonic acids while reducing the percentages of palmitic and oleic acids in lattisimus muscle. Dietary CLA increased the percentages of palmitic and stearic acids in s.c. adipose tissue while reducing the percentages of oleic, linoleic, linolenic, and arachidonic acids. The percentage of palmitic acid was reduced in s.c. adipose tissue, whereas linoleic acid was increased with CLA + pST. No synergistic effect was detected between CLA and pST for reducing carcass lipid content in grower pigs. However, pST increased the percentage of polyunsaturated fatty acids in lattisimus muscle and s.c. adipose tissue while reducing the percentages of saturated fatty acids in swine fed CLA.  相似文献

Forty Large White barrows were used to determine whether the effects of dietary fat source (tallow or soy oil at 5% of the diet) on lipogenesis and fatty acid profile of porcine adipose and lean tissue were dependent on dietary digestible energy density (8.8 vs 14.0 MJ DE/kg). Barrows were allocated to one of four groups and offered a fixed amount of feed (170 g x BW0.569/d) from 27 to 105 kg BW. The fatty acid composition of the backfat layers (BF), omental fat (OF), and i.m. adipose tissue of longissimus muscle as well as the activity of lipogenic enzymes of the adipose tissues were determined. Growth performance and carcass characteristics were affected by the dietary energy level (P < 0.01) but not by fat source. In accordance with the lower carcass fat deposition, the activity of lipogenic enzymes were decreased in the low-energy groups (P < 0.01). Within dietary energy level, inclusion of soy oil resulted in increased proportion of PUFA that was compensated by decreased saturated (SFA) and monounsaturated fatty acid (MUFA) proportions (P < 0.01). The SFA changes accounted for 23 (BF) and 24% (OF) of the PUFA changes in the high-energy and 31 (BF) and 39% (OF) in the low-energy diets. The differences in the fatty acid proportions between the soy oil and tallow group were more pronounced in the low-energy groups (fat source x energy density interactions: P < 0.01). Pigs fed the soy oil, low-energy diet had decreased SFA (BF: 28%; OF: 30%) and MUFA (BF: 13%; OF: 19%) concentration, whereas PUFA concentration was increased (BF: 59%; OF: 88%) compared with pigs fed the soy oil, high-energy diet. However, in the tallow groups, pigs fed the low-energy diets had slightly decreased SFA (BF: 14%; OF: 12%) and relatively constant MUFA (BF: 3%; OF: 1%), whereas PUFA concentration increased (BF: 39%; OF: 62%) relative to pigs fed the tallow high-energy diet. Lipid content of the i.m. adipose tissue was decreased in the low-energy groups (P < 0.05). Contrary to what was observed in the adipose tissues, increased PUFA concentration in the neutral and polar lipid fractions of the longissimus muscle was predominantly compensated by reduced MUFA deposition. In the polar lipid fraction, the proportions of both SFA and MUFA were decreased by the low-energy diet. Thus, the extent to which tissue concentration of fatty acids are altered from dietary fats differing in the degree of unsaturation depends on the dietary energy level.  相似文献

The incorporation and elimination rate of dietary PUFA in pork fat was investigated in this study. Experiment 1 examined the incorporation of dietary PUFA into backfat (BF) and into the triglyceride (TG) and phospholipid (PL) fractions of the i.m. fat of the loin. Experiment 2 examined the elimination of PUFA from BF due to withdrawal of PUFA from the diet. In Exp. 1, Piétrain x Seghers Hybrid pigs (70 barrows and 70 gilts averaging 11 wk of age and 30 kg initially) were assigned to five dietary treatments in a 2 x 5 factorial arrangement during a 16-wk feeding period. Pigs received a diet containing about 2.5% tallow (T) for 8, 10, 12, 14, or 16 wk, followed by a diet containing about 15% full-fat soybeans (FFS) for 8, 6, 4, 2, or 0 wk, respectively. Additionally, BF biopsies were taken every 2 wk from eight pigs on the 8-wk FFS dietary treatment, starting from the time pigs were switched to the FFS diet. Linoleic acid [18:2(n-6)], linolenic acid [18:3(n-3)], eicosadienoic acid [20:2(n-6)], arachidonic acid [20:4(n-6)], and PUFA contents in BF increased (P < .01) with time on the FFS diet, but contents of these fatty acids were similar for pigs fed FFS for 6 or 8 wk. The PUFA content of the biopsies rose throughout the FFS treatment; the greatest increase in PUFA occurred during the first 2 wk of feeding FFS. The PUFA content of the TG and PL fractions in i.m. fat of the longissimus muscle tended to increase with time on the FFS diet. The increase was significant (P < .01) in the TG fraction for 18:3(n-3) and in the PL fraction for 20:4(n-6) and 22:6(n-3). In Exp. 2, 11-wk-old pigs (10 barrows and 10 gilts) were fed a FFS-based diet from 11 to 19 wk of age, followed by the T-diet for an additional 8 wk. During the latter period, biopsies were taken every 2 wk. The elimination of PUFA from BF was greatest during the first 2 wk after the dietary change. The PUFA reached the lowest level at the age of 25 wk. These experiments show that the PUFA: saturated fatty acid ratio of BF can be increased from .34, corresponding with a T-based diet, to .55, by feeding a FFS diet for 6 wk before slaughter.  相似文献

试验旨在研究南阳黑猪脂肪酸组成及含量,以期为中国地方猪种遗传资源的保护及开发利用提供理论依据。以南阳黑猪和大白猪为研究对象,每品种猪各12头,测量背最长肌脂肪酸含量及种类,以脂肪酸种类及数量、单不饱和脂肪酸(monounsaturated fatty acid,MUFA)、多不饱和脂肪酸(polyunsaturated fatty acid,PUFA)、饱和脂肪酸(saturated fatty acid,SFA)、12-16碳饱和脂肪酸(饱和脂肪酸1,SFA1)、其他饱和脂肪酸(饱和脂肪酸2,SFA2)、不饱和脂肪酸(unsaturated fatty acids,UFA)、SFA2/SFA1、PUFA/MUFA、必需脂肪酸(essential fatty acid,EFA)、共轭亚油酸(conjugated linoleic acids,CLA)、PUFA/SFA、ω-6 PUFA/ω-3 PUFA等为指标,从营养、健康、风味及储存方面综合评价两个猪种猪肉脂肪酸品质。结果显示,两个猪种背最长肌中共检出30种脂肪酸,其中23种脂肪酸在两个猪种间有显著或极显著差异(P<0.05;P<0.01);除SFA2/SFA1和ω-6 PUFA /ω-3 PUFA外,南阳黑猪其他指标均高于大白猪;SFA1、MUFA、PUFA、SFA、UFA、UFA/SFA、SFA2/SFA1、PUFA/MUFA、EFA、CLA、PUFA/SFA、ω-6 PUFA/ω-3 PUFA 11个指标在两个猪种间存在显著或极显著差异(P<0.05;P<0.01),SFA2和PUFA/MUFA在两个猪种间无显著差异(P>0.05)。综合以上结果,南阳黑猪肌肉脂肪酸品质总体优于大白猪。  相似文献

The experiment was carried out to study the composition and contents of fatty acids of Nanyang Black pig, and to provide a theoretical basis for the protection and exploitation of local pig genetic resources in China. 12 Nanyang Black pigs and 12 Large White pigs were chosen, and the composition and contents of fatty acids in longissimus dorsi muscle were measured, and the quality of fatty acids was comprehensive evaluated from nutrition, health, flavor and storage aspects. Monounsaturated fatty acid (MUFA), polyunsaturated fatty acid (PUFA), 12-16 carbon saturated fatty acids (SFA1), other saturated fatty acids (SFA2), unsaturated fatty acids (UFA), saturated fatty acids (SFA), SFA2/SFA1, MUFA/PUFA, essential fatty acid (EFA), conjugated linoleic acids (CLA), PUFA/SFA and ω-6 PUFA/ω-3 PUFA were used as the indexes of multiple comparison. The results showed that there were 30 kinds of fatty acids were detected and 23 of them had significant or extremely significant differences between the two pig breeds (P<0.05;P<0.01). Nanyang Black pig had higher values of above measured indexes than that of Large White pig in addition to SFA2/SFA1 and ω-6 PUFA/ω-3 PUFA. 11 indexes such as SFA1,MUFA,PUFA,SFA,UFA, UFA/SFA,SFA2/SFA1,PUFA/MUFA, EFA,CLA, PUFA/SFA and ω-6 PUFA/ω-3 PUFA differed significantly or extremely significantly between the two pig breeds (P<0.05;P<0.01), while SFA2 and PUFA/MUFA had no significant differences between the two pig breeds (P>0.05). The effects of dietary algal supplementation, a source of docosahexaenoic acid, on the fatty acid profile of rumen lipids in cattle were evaluated, with special emphasis on CLA and trans fatty acids produced by rumen microbes. A diet based on corn silage was fed with supplements containing the following: 1) no algal meal and fed at 2.1 kg of DM/d (control), 2) algal meal and fed at 1.1 kg of DM/d (low algal meal), 3) algal meal and fed at 2.1 kg of DM/d (medium algal meal), and 4) algal meal and fed at 4.2 kg of DM/d (high algal meal). A modified lipid extraction procedure was developed to analyze the lipid changes in rumen fluid. The percentage of stearic acid (18:0) in rumen fluid was decreased by algal meal supplementation (P < 0.001) compared with control and was linearly dependent on the level of algal meal supplementation (P = 0.005). Total trans-18:1 in rumen fluid of cattle fed the control diet was 19% of total fatty acids. Addition of algal meal increased (P < 0.001) total trans-18:1 up to 43%, mostly due to 18:1 trans-10 that increased (P = 0.002) to 29.5% of total rumen fatty acids. This increase in 18:1 trans-10 seems to suggest a change in the rumen microbial population. Vaccenic acid (18:1 trans-11) increased quadratically (P = 0.005) with increasing level of algal meal supplementation in the diets. The total CLA content was low in the control (<0.9%) and increased with dietary algal meal addition, although not significantly; the greatest level was 1.5% with the medium algal meal diet. The increase of rumenic acid (cis-9, trans-11 CLA) was quadratic (P = 0.05) with algal meal supplementation, whereas trans-10, cis-12 CLA increased linearly with increased level of algal meal from 0.08 to 0.13% (P = 0.03). The ratio of trans-11 (cis-9, trans-11 CLA + 18:1 trans-11) to trans-10 (trans-10, cis-12 CLA + 18:1 trans-10) decreased from 2.45 to 0.77, 0.87, and 0.21 for the control, low algal meal, medium algal meal, and high algal meal diets, respectively. The content of docosahexaenoic acid in rumen fluid increased (P = 0.002) from 0.3 to 1.4% of total fatty acids with increasing level of algal meal supplementation in the diets. Our results suggest that algal meal inhibits the reduction of trans-18:1 to 18:0, giving rise to the high trans-18:1 content. In conclusion, algal meal could be used to increase the concentration in rumen contents of trans-18:1 isomers that serve as precursors for CLA biosynthesis in the tissues of ruminants.  相似文献

The effects of different inclusion levels of oil palm fronds (OPF) on the fatty acid profile of the longissimus dorsi (LD), biceps femoris (BF) and infraspinatus (IS) muscle of goats fed for 100 days are described. Twenty‐four individually housed Kacang crossbred male goats (averaged 21.7 ± 0.97 kg BW) were allocated to three groups receiving either a 100% concentrate control diet (CON), diet with 25% inclusion level of OPF (HAF) or a diet with 50% inclusion of OPF. The diets were adjusted to be isocaloric and isonitrogenous and fed at 3.0% of BW daily. Samples of LD, BF and IS muscles were taken at slaughter for the determination of fatty acid profiles. The total saturated fatty acids (SFA) in the LD and BF muscles of the OPF group were significantly (p < 0.05) lower than the CON group. For all muscles, C18:3n‐3 and total n‐3 polyunsaturated fatty acid (PUFA) were significantly higher (p < 0.05) in the OPF group than the CON group with minimal impact on the C18:2n‐6 and total n‐6PUFA. Consequently, the n‐6:n‐3 ratio significantly (p < 0.05) decreased in the OPF group compared to the CON group. The LD muscle had a significantly higher conjugated linoleic acid 18:2 c19t11 compared to other muscles. There were no interactions between muscle x diet except for total SFA. It is concluded that OPF at 25–50% inclusion levels may decrease the SFA and increase the n‐3PUFA content in chevon, with no apparent adverse effects on the growth performance of the animals, can be used as a feed ingredient to support goat farming in countries that lack grazing pasture.  相似文献

Our objective was to determine the effect of oil supplementation of pasture fed, beef cattle on the fatty acids, particularly CLA and PUFA, of muscle and s.c. adipose tissue. Forty-five Charolais crossbred heifers were blocked on BW and randomly assigned to 1 of 3 dietary regimens in a randomized complete block design (n = 15). The 3 treatments were: unsupplemented grazing (GO), restricted grazing plus a sunflower oil-enriched ration (SO), or restricted grazing plus a linseed oil-enriched ration (LO). Heifers were fed the experimental diets for approximately 158 d. Samples of LM muscle and s.c. adipose tissue were taken postmortem, the muscle fat was separated into neutral lipid and polar lipid (no separation was performed on the s.c. adipose tissue), and the fatty acid profile was determined by GLC. No effect of dietary treatment on carcass weight or total fatty acid concentration (mean 2,571 mg/100 g of muscle) in muscle fat was detected. Heifers offered SO had a greater (P < 0.001) proportion of CLA and C18:1trans-11 (1.90 and 9.35 vs. 1.35 and 6.89 g/100 g of fatty acids, respectively) in neutral lipid of muscle fat compared with those offered LO, which had a greater proportion of CLA and C18:1trans-11 than heifers offered GO (0.78 and 3.37 g/100 g of fatty acids, respectively). Similar effects were observed in the polar lipid and s.c. lipid. The PUFA:SFA ratio was greater in muscle fat and s.c. adipose tissue from supplemented heifers than in those offered GO (P < 0.001). Compared with LO, the PUFA:SFA ratio was greater (P < 0.05) in muscle fat of heifers offered SO, but there was no difference between SO and LO for this ratio in s.c. adipose tissue. The n-6:n-3 PUFA ratio was similar in muscle and s.c. adipose tissue for GO and LO, but it was greater (P < 0.05) for SO. It is concluded that supplementation of pasture-fed cattle with plant oil-enriched concentrates resulted in an increase in beef fat of some fatty acids considered to be of benefit to human health. Concentrates enriched with sunflower oil were more effective in increasing the CLA concentration, whereas linseed oil-enriched concentrates resulted in a more favorable n-6:n-3 PUFA ratio. The relevance to human health of the associated increase in C18:1trans-11 merits investigation.  相似文献

An 8-wk study of the effects of CLA, rendered animal fats, and ractopamine, and their interactive effects on growth, fatty acid composition, and carcass quality of genetically lean pigs was conducted. Gilts (n = 228; initial BW of 59.1 kg) were assigned to a 2 x 2 x 3 factorial arrangement consisting of CLA, ractopamine, and fat treatments. The CLA treatment consisted of 1% CLA oil (CLA-60) or 1% soybean oil. Ractopamine levels were either 0 or 10 ppm. Fat treatments consisted of 0% added fat, 5% choice white grease (CWG), or 5% beef tallow (BT). The CLA and fat treatments were initiated at 59.1 kg of BW, 4 wk before the ractopamine treatments. The ractopamine treatments were imposed when the gilts reached a BW of 85.7 kg and lasted for the duration of the final 4 wk until carcass data were collected. Lipids from the belly, outer and inner layers of backfat, and LM were extracted and analyzed for fatty acid composition from 6 pigs per treatment at wk 4 and 8. Feeding CLA increased (P < 0.02) G:F during the final 4 wk. Pigs fed added fat as either CWG or BT exhibited decreased (P < 0.05) ADFI and increased (P < 0.01) G:F. Adding ractopamine to the diet increased (P < 0.01) ADG, G:F, and final BW. The predicted carcass lean percentage was increased (P < 0.05) in pigs fed CLA or ractopamine. Feeding either 5% fat or ractopamine increased (P < 0.05) carcass weight. Adding fat to the diets increased (P < 0.05) the 10th rib backfat depth but did not affect predicted percent lean. Bellies of gilts fed CLA were subjectively and objectively firmer (P < 0.01). Dietary CLA increased (P < 0.01) the concentration of saturated fatty acids and decreased (P < 0.01) the concentration of unsaturated fatty acids of the belly fat, both layers of backfat, and LM. Ractopamine decreased (P < 0.01) the i.m. fat content of the LM but had relatively little effect on the fatty acid profiles of the tissues compared with CLA. These results indicate that CLA, added fat, and ractopamine work mainly in an additive fashion to enhance pig growth and carcass quality. Furthermore, these results indicate that CLA results in more saturated fat throughout the carcass.  相似文献

采用气相色谱法对牦牛酥油和普通奶油进行测试,分析其脂肪酸含量和组成,尤其是共轭亚油酸(CLA).结果表明:酥油中硬脂酸含量(83.23 g/kg)高于普通奶油(57.15 g/kg),棕榈酸含量(155.73 g/kg)比普通奶油(178.26g/kg)低;酥油中反式油酸(C18:1,t11)的含量是普通奶油的近8倍,酥油中总CLA含量是普通奶油的2倍多,尤其是C18:2,c9t11CLA异构体,在普通奶油中含量为3.38 g/kg,在酥油中为9.86 g/kg,是普通奶油的近3倍.相对于普通牛乳来说,牦牛乳具有更高的营养价值.  相似文献

Longissimus dorsi muscle tissue was biopsied between the 12th and 13th ribs of 96 purebred Jersey, purebred Limousin and Jersey × Limousin crossbred calves at the age of 9–10 months. Fatty acids of the phospholipid fraction were extracted and analysed for sex and breed differences. Heterosis, additive and maternal variances were estimated. All calves grazed pasture in a single management group and were biopsied from the same anatomical site. Steer calves had significantly higher proportions of the 14 : 0, 14 : 1, 18 : 2, 20 : 3 fatty acids and less of the 16‐di‐methyl‐acetal than heifer calves. Significant breed differences were observed: Limousin calves had the highest proportions of 16 : 0, 24 : 0 and saturated fatty acids (SFA), whereas Jersey×Limousin calves had the most 18 : 0 and elongation index. Dominant effects were evident in the proportions of 16 : 0, 18 : 0, SFA and elongation index. Additive genetic effects were significant in the proportions of 16 : 0, 18 : 0, 18 : 1n‐9, total SFA and desaturation and elongation indices. Combined maternal and additive effects were significant for long chain polyunsaturated fatty acids 18 : 2, 20 : 3 and 20 : 4.  相似文献
