An understanding of variation in fruit quality in relation to tree age can help understand the issue of poor fruit quality in young orchards; however, limited information is available on the citrus fruit. In this study, the endogenous nutritional status in rind, rag, and leaves; pectin status in rind and rag; and anatomical fruit growth parameter in rind tissues were studied in ‘Kinnow’ mandarins fruit during their development on trees from three age (6-, 18-, and 35-year-old) groups. In older (35-year-old) trees, rind, rag, and leaf nitrogen (N), phosphorus (P), and potassium (K) concentrations were superior. In fruit from all tree age groups, total pectin and protopectin reduced; however water-soluble pectin (WSP) improved. In rind tissues harvested from young (6-year-old) trees, cell density was more while cell size was less. In all tree age groups, cell density in rind tissues correlated negatively with rind WSP.  相似文献

柑橘果实发育中果胶酸钙、草酸钙和果胶动态的研究   总被引:5,自引:0,他引:5  
以单性结实的龟井蜜柑和自花结实的鄂柑1号橘为试材,对整个果实发育期的子房(幼果)、果皮和果肉的果胶酸钙、草酸钙和果胶含量变化进行了测定。结果表明,1)两品种子房(幼果)果胶酸钙含量呈类似的下降趋势;草酸钙则相反,龟井花后趋下降,而鄂柑1号却明显上升;而且鄂柑1号子房(幼果)果胶酸钙、草酸钙和果胶含量均相对较高。2)在果实增大期内,两品种果皮和果肉的果胶酸钙含量均出现显著上升,对应果皮草酸钙含量虽有波动但居相对较高水平,而果肉草酸钙则趋明显下降。3)两品种果皮和果肉水溶性果胶含量均在增大期内呈显著上升,对应原果胶含量均相对较高,进入增大后期均明显下降。  相似文献

六种果皮原料果胶的理化及凝胶特性比较   总被引:4,自引:2,他引:2  
为了解不同品种水果的果皮(柚子皮、西番莲皮、脐橙皮、石榴皮、榴莲皮)以及向日葵盘所提取果胶的理化和质构特性,研究了不同原料果胶的得率、色泽、果胶酸含量、甲氧基含量、酯化度、黏度及质构特性,特别是采用高效液相色谱准确测定了各类果胶的分子量。结果表明:柚子皮、向日葵盘和脐橙皮果胶质量分数较高,分别为18.06%、14.61%和14.43%;西番莲皮果胶质量分数为8.76%;而石榴皮及榴莲皮果胶质量分数较低(均<3%)。从分子量看,石榴皮、脐橙皮果胶分子量较大(>1000kDa),向日葵盘果胶分子量最小(483kDa)。此外,几种果胶的溶胶均属低黏度值果胶(<25厘泊),且在pH值为7.0时黏度最大、在pH值为5.0时黏度最小。结合凝胶质构分析表明:石榴皮果胶分子量最大,凝胶强度最大,但为高甲氧基果胶,且得率较低;而向日葵盘果胶分子量最小,但得率较高,且为低甲基果胶,在非糖及含糖体系中均可形成性能优良的凝胶,因此是生产果胶的良好原料。该文为果胶的生产及应用提供参考。  相似文献

Within the framework for searching for new dietary fiber (DF) sources to remedy the increasing shortage of currently available sources, connected to an upsurge of diabetes, colon cancer, and other diverticular diseases in certain Ivorian areas, yellow passion fruit (Passiflora edulis f. flavicarpa) rind, a byproduct from the juice industry that is available in large quantities, was investigated. The results showed that, as determined by the AOAC enzymatic-gravimetric method, the total dietary fiber (TDF) in alcohol-insoluble material (AIM) from yellow passion fruit (YPF) rind was >73% dry matter of which insoluble dietary fiber accounted for >60% (w/w). The determination of DF using the Saeman hydrolysis method revealed that nonstarchy polysaccharides were the predominant components (approximately 70%, w/w), of which cellulose appeared to be the main fraction. The water holding and oil holding capacities of the fiber-rich material were >3 g of water/g of fiber and >4 g of oil/g of fiber, respectively. All these results lead to the conclusion that DF from YPF rind, prepared as AIM, may be suitable to protect against diverticular diseases.  相似文献

Purple passion fruits were processed by the flash vacuum-expansion process. Volatile components were analyzed in purees from steam-heated fruits, steam-heated then vacuum-expanded fruits and their aromatic liquors, and fruit rind, in comparison with a reference single-strength juice. After steam heating, the puree was enriched in esters arising from the rind. Steam-heated then vacuum-expanded fruits yielded a puree impoverished in volatiles due to evaporation of approximately 10% of water. These volatile compounds were mostly recovered in aromatic liquors.  相似文献

Organic passion fruit fiber is obtained from organic passion fruit rind and is an interesting source of dietary fiber with potential for use in food products such as breakfast cereals. However, various researchers have confirmed the presence of cyanogenic compounds in passion fruit. The objective of this study was to evaluate the effect of the thermoplastic extrusion process on the residual quantity of total cyanogenic compounds (TCC) in extruded organic breakfast cereal produced with corn flour and different levels of passion fruit fiber added to the formulation. For the production of the extrudates, a 23 complete factorial design was followed, that permitted the analysis of the results by response surface methodology. The effects of the quantity of passion fruit fiber (0–30%), feed moisture content (18–28%) and barrel temperature (120–160°C) on the residual quantity of TCC were studied. The raw passion fruit fiber presented 748.3 mg/kg of TCC. The extruded products presented TCC contents of 0–254.1 mg/kg, increasing significantly with the increase of the quantity of passion fruit fiber. The residual quantity of TCC was influenced by feed moisture, while temperature had no significant effect on this response. Nevertheless, only a small reduction of cyanogenic compounds was verified in the breakfast cereals produced by thermoplastic extrusion. Thus, it was concluded that the toxicity of the cereal blends was not improved by the extrusion process.  相似文献

A study on the determination and standardization of endopolygalacturonase (EPG) activity is reported, with emphasis on the influence of the degree of substrate esterification using pure yeast EPG. Differences in the results, depending on how the EPG activity unit was defined, are described and discussed. From a theoretical analysis of the expressions established, a general equation for expressing EPG activity in standard international units was obtained, together with the proportional coefficient for each of the substrates studied. It was observed that for a wide range of enzyme concentrations good linear correlations were obtained. Analysis of the comparison ratio (CR) values calculated revealed that these do not differ significantly, except for low-methoxyl apple pectin, confirming the validity of the general expression obtained for pectins with different degrees of esterification. The anomalous CR value found for low-methoxyl (LM) apple pectin is discussed.  相似文献

Biopolymer interactions have many potential applications in pharmaceutical, cosmetic, nutraceutical, and functional food industries. Attractive interactions between proteins and polysaccharides can lead to the formation of complexes. Binding parameters of beta-lactoglobulin (beta-lg)/pectin complexes were determined using frontal analysis continuous capillary electrophoresis and the overlapping binding site model. At pH 4, approximately 23 beta-lg molecules were cooperatively complexed on low-methoxyl pectin, where each beta-lg molecule covered an average of 12 galacturonic acid residues. The calculated binding constant was 1431 M(-1). The interactions between pectin and four selected peptides located on the outer surface of the beta-lg were investigated in order to identify which part of the protein was likely to interact with the pectin. The peptide beta-lg 132-148, which corresponds to the alpha-helix zone, and the peptides beta-lg 76-83, 41-60, and 1-14 would be involved in the interaction with the pectin.  相似文献

为探讨草酸处理对低温冷藏下芒果冷害及细胞壁代谢的影响,本试验以桂七芒果果实为试材,采用5 mmol·L-1草酸溶液浸泡处理,以清水浸泡处理为对照,并于4℃贮藏,分析芒果的冷害指数、丙二醛(MDA)含量、相对电导率、硬度、细胞壁物质含量、细胞壁代谢酶的变化。结果表明,与对照组相比,草酸处理显著降低了低温贮藏14 d后桂七芒果果实冷害指数、MDA含量、相对电导率、原果胶和纤维素含量,显著降低了低温贮藏28 d后果实的硬度;显著提高了低温贮藏14 d后果实水溶性果胶含量及多聚半乳糖醛酸酶(PG)、果胶甲酯酶(PME)、纤维素酶(Cx)活性,显著提高了贮藏21 d后果实β-半乳糖苷酶(β-Gal)活性。综上所述,草酸处理能减轻桂七芒果冷害,维持采后果实细胞壁降解酶较高活性和水溶性果胶含量。本研究为揭示草酸减轻芒果果实冷害机制提供了依据,可为草酸应用于其他冷敏型果实的贮藏保鲜提供理论参考。  相似文献

The aim of this research was to understand the involvement of the carbohydrate metabolism in physiological disorders occurring during the postharvest storage of citrus fruit. These disorders, manifested in the rind, depreciate fruit quality and often originate important losses. There has been increasing interest in the use of nonharmful treatments, such as high-temperature conditioning, to avoid citrus peel damage during fruit storage at low temperature in chilling-sensitive cultivars, but their influence in postharvest disorders occurring at nonchilling temperatures and the mechanisms related to them are poorly understood. The data obtained showed that heat conditioning (3 days/37 degrees C) increases the chilling tolerance of cv. Navelate fruit and favored sucrose, but not hexoses, accumulation and its maintenance after the fruit was transferred to low temperature. This effect was related to heat-induced increase in the activities of the sucrose-synthesizing enzymes sucrose phosphate synthase (SPS) and sucrose synthase (SS). Furthermore, sucrose levels and the activities of both enzymes were higher in cv. Pinalate oranges, a chilling-tolerant spontaneous abscisic acid deficient mutant of Navelate. In contrast, carbohydrates appeared not to be involved in the susceptibility of oranges to rind staining, a physiological disorder different from chilling injury, which mainly occurred at a nonchilling temperature (12 degrees C) and was not reduced by heat conditioning. The effect of low temperature in SS and SPS activities was less than that of high temperature, which might be related to the lower changes occurring in sucrose during fruit storage at 2 degrees C.  相似文献

Volatile organosulfur compounds (VOSCs) are high impact aroma chemicals characteristic of tropical fruits which are active as both free thiols and the respective thioesters. Using a simple and sensitive colorimetric enzyme assay, a thioesterase activity toward VOSCs has been identified in ripening purple passion fruit ( Passiflora edulis Sims). The assay was based on determining the release of free thiols from 2-methyl-3-furanthiol acetate using Ellman's reagent. The major thioesterase in the fruit was found to be a wall-bound protein in the mesocarp. The extracted enzyme activity was purified 150-fold and shown to be associated with a 43 kDa monomeric serine hydrolase which was selectively labeled with a fluorophosphonate suicide probe. MS-MS sequencing identified the thioesterase as a class 13 glycoside hydrolase, most similar to pectin acetylesterase, an enzyme involved in cell wall modifications in the peel of a number of fruit. Our results suggest that cell wall hydrolases in tropical fruit may have additional useful roles in biotransforming VOSCs.  相似文献

Chemical characterization by gas chromatography-mass spectometry (GC-MS) of the aromatic profile of yellow passion fruit essence and the juice of the fruit yielded a total of 62 and 34 components, respectively. Four new components have been identified and quantified for the first time in this fruit: 3-methyl-2-butanone; ethyl lactate (quantified only in the fruit juice); diethyl malonate (quantified only in the essence); and 3-penten-2-ol (quantified in both samples). Analysis of these samples by gas chromatography/olfactometry (GC/O) yielded a total of 66 components which appear to contribute to the aroma of passion fruit juice and its aqueous essence. Of these, four could not be quantified by GC-MS: acetic acid, ethyl propionate, ethyl 3-oxobutyrate, and propyl hexanoate. New components were described for the first time as constituents of the aromatic profile in this fruit including acetal, 1,3-dimethyl benzene, and 2-methylbutyl hexanoate. Aroma extract dilution analysis (AEDA) allowed for the detection of the most potent odorants in the commercial essence (2-methylbutyl hexanoate and hexyl hexanoate) and in the fresh juice (1,3-dimethyl benzene and 2-methylbutyl hexanoate). 2-Methylbutyl hexanoate, considered as one of the most potent odorants in this fruit, has been described for the first time as an aromatic constituent of yellow passion fruit.  相似文献

In southern Jiangxi province of China, ‘Newhall’(Citrus sinensis Osbeck) navel orange presented a conspicuous symptom of boron (B) deficiency in mature leaves, whereas B deficiency symptoms were not manifested on ‘Skagg's Bonanza’(C. sinensis Osbeck) navel orange. In this study, changes in concentrations of B, calcium (Ca), potassium (K), magnesium (Mg), manganese (Mn), and zinc (Zn) were comparatively investigated in the structural parts of the fruit (rind and pulp) and leaves (old leaves from last season and spring-flush leaves from current year) of ‘Newhall’ and ‘Skagg's Bonanza’ navel orange during the growing season. Two peaks of B concentrations were observed in the rind of the two cultivars during fruitlet growth and fruit enlargement, respectively. Boron concentrations were relatively high in the rind during fruitlet growth, and then decreased in both rind and pulp, whereas, during middle and late fruit enlargement significant increases were found for B in both rind and pulp of the two cultivars. Boron concentrations in old leaves of ‘Newhall’ decreased progressively and remained relatively low, whereas that of ‘Skagg's Bonanza’ was relatively high and changed slightly as the season progresses. Both Ca and K concentrations were above the critical threshold values, while their dynamics were reverse to that of B in fruit and leaves during certain times. Old leaf Mg concentrations of samples at 140 days after full bloom from the two cultivars and spring-flush leaves from ‘Newhall’ were below the threshold limit for sufficiency. In addition, Mg in old leaves was much lower from ‘Newhall’ than from ‘Skagg's Bonanza’. Spring-flush leaf concentrations of Mn and Zn and Mn concentrations in old leaves from ‘Newhall’ were relatively lacking during middle and late season, which accelerated the occurrence of B deficiency symptoms on mature leaves of ‘Newhall.’  相似文献

Creasing is a physiological disorder in oranges fruits that affects rind quality. This disorder has been associated with insufficient or imbalances of nutrients in the fruit. A study was carried out in an orange orchard cv. Fukumoto. At harvest, fruit samples were selected with and without creasing, according to visual symptoms. External and internal fruit quality was evaluated in whole fruit, then dry matter and mineral content and concentration (nitrogen N, potassium K, calcium Ca and magnesium Mg) was analyzed in flavedo, albedo and pulp. Oranges with creasing had larger weight and fruit size, higher water content in the pulp and whole fruit, lower coarse rind grading, thinner peel, higher nitrogen content in the pulp and the whole fruit, higher potassium content in all fruit components and lower calcium content and concentration. Magnesium content, only in flavedo showed significant differences, being higher in fruit without creasing. Fruit size and Ca were key factors related to the expression of creasing disorder, as well as nutrient balance.  相似文献

Seasonal changes in nutrient concentrations of leaf and fruit structural parts (rind and pulp) from ‘Newhall’ (Citrus. sinensis Osbeck) and ‘Skagg's Bonanza’ (C. sinensis Osbeck) navel oranges were investigated during fruit development in two successive years. Leaf calcium (Ca), manganese (Mn), and potassium (K) concentrations were relatively constant throughout the whole season with the exception of an increase of K at stage 1, the period of fruitlet growth [before 80 days after full bloom (DAFB)], whereas the magnesium (Mg), boron (B), iron (Fe), and zinc (Zn) concentrations declined distinctly during stage 2 (80–180 DAFB), the period of fruit rapid enlargement. In rind, Ca, B, Fe, and Mn concentrations reached the greatest levels at stage 2, different from K and Mg, which increased at stage 1 and decreased thereafter. In pulp, concentrations of Ca, K, Mg, and Mn declined gradually with time, whereas a small rise in B toward the end of sampling and a clear increase of Fe at stage 2 were observed. It was suggested that ‘Newhall’ required greater B inherently in fruits as the cultivar had greater B concentrations in fruit parts and had greater rind/leaf B concentration ratios than ‘Skagg's Bonanza.’ ‘Newhall’ had relatively greater rind Ca content and exhibited Ca distribution more uniformly within its fruit parts, which probably enhanced the crack resistance.  相似文献

This study evaluated P. edulis f. edulis intraspecific variation at DNA level using AFLPs and SSRs. About 60 specimens were collected from Colombian commercial plantations in the departments of Antioquia, Boyacá, Cundinamarca, Huila, Quindío and Tolima. Ten specimens were also included from Corpoica’s La Selva research center Passiflora germplasm bank. A non-commercial purple passion fruit plant and three species from the Passiflora genus (Passiflora maliformis, Passiflora edulis f. flavicarpa and Passiflora ligularis) were included as controls. The six most informative ones were selected from the initial screening of 49 different AFLP primer combinations; 52–92 DNA fragments for each combination in each genotype (total 419 fragments) were obtained by using these six combinations. 17 SSR primers reported in P. edulis f. flavicarpa and Passiflora alata were tested on purple passion fruit. Eight of them were successfully amplified but none showed polymorphism. Relationships among individuals were assessed on AFLP data using cluster analysis by Dice coefficient, UPGMA algorithm and the multiple correspondence analysis ordination method based on Greenacre measurement. The similarity coefficients ranged from 0.75 to 1.00 giving an average of 0.96 within the different purple passion fruit materials, showing low genetic variability for the purple passion fruit material used in this study.  相似文献

The flavonoids present in passion fruit (Passiflora edulis) leaves were identified by a high-performance liquid chromatography-diode array detection-tandem mass spectrometry (HPLC-DAD-MS/MS) method. Sixteen apigenin or luteolin derivatives were characterized, which included four mono-C-glycosyl, eight O-glycosyl- C-glycosyl, and four O-glycosyl derivatives. With the exceptions of C-hexosyl luteolin and C-hexosyl apigenin, all the compounds exhibited a deoxyhexose moiety. Moreover, the uncommon C-deoxyhexosyl derivatives of luteolin and apigenin have been identified for first time in P. edulis by HPLC-DAD-MS/MS. The antioxidative capacity of passion fruit leaves was checked against DPPH radical and several reactive oxygen species (superoxide radical, hydroxyl radical, and hypochlorous acid), revealing it to be concentration-dependent, although a pro-oxidant effect was noticed for hydroxyl radical.  相似文献

Piceatannol is present in passion fruit (Passiflora edulis) seeds in high amounts. In this study, we isolated the second major polyphenolic compound of passion fruit seeds and identified it as scirpusin B, which is a dimer of piceatannol. We investigated the antioxidant activities and vasorelaxing effects of these polyphenols. Their antioxidant effects were measured using an in vitro 1,1-diphenyl-2-picrylhydrazyl (DPPH) radical scavenging assay, and their vasorelaxant effects were determined ex vivo in rat thoracic aorta. Both polyphenolic compounds exhibited potent antioxidant activities and significant vasorelaxant effects in endothelium-intact aortas. More specifically, scirpusin B exerted a greater antioxidant activity and vasorelaxant effect compared with that of piceatannol. Additionally, the vasorelaxation effects of the compounds were induced via the NO derived from the endothelium. This study provides the possibility that polyphenols in passion fruit seeds are effective against cardiovascular diseases (CVDs).  相似文献
