This study was designed to test the hypothesis that the stability and physical properties of starch gels could be improved by adding small amounts of corn fiber gum (CFG). In the differential scanning calorimeter measurement, the enthalpy of retrogradation was 7.30 J/g for starch without CFG and 4.30 J/g for starch composite gel with 1.0% CFG. The addition of 1.0% CFG to starch significantly (p < 0.05) decreased the degree of retrogradation during the long-term storage from 61.6% to 36.5%. The addition of CFG retarded the syneresis of the starch system from 17.97% and 34.93%–6.15% and 26.57% after storage for 7 and 14 days respectively. The crystallization peak of starch containing 0.5–1.0% CFG was quite diminished. When compared with the starch gel alone, the addition of CFG significantly lowered the hardness of the composite starch gel from 60.92 to 45.81 N after 14 days storage. The starch gel without CFG showed the lowest rapidly digestible starch content and the highest resistant starch content in comparison to starch/CFG composite gels after 7 and 14 days storage. Over all, the addition of CFG considerably inhibits the retrogradation of corn starch gels during long-term storage.  相似文献

AS, HMT-AS and CS starches were studied for amylose content, swelling power, water absorption capacity, color, particle size (PSA), pasting profile (RVA) and thermal (DSC) properties. Based on the laboratory scale experiments, noodles with good expansion, minimum cooking time and firm texture were prepared. Noodles were successfully prepared from AS, HMT-AS and CS starches. Noodles prepared from native amaranth starch (AS) and heat moisture treated (HMT) were tested for different functional properties and compared to cornstarch noodles. Standardized noodles were evaluated for cooking loss, texture profile (TPA), sensory and micro-structural analysis by SEM. HMT-AS noodles had experience less cooking loss of 20.15 g/100 g in comparison to AS noodles (22.20 g/100 g). The HMT-AS based starch noodles shown firmer texture, along with augmented taste and distinct flavor in comparison to AS and CS noodles.  相似文献

Starch is the main glycemic dietary carbohydrate, and its nutritional quality is associated with the amount of slowly digestible starch (SDS) that is beneficial to glycemic control. In the current study, a microencapsulation of normal corn starch by zein protein and its slow digestion property were investigated. A significant increase of SDS and RS was shown for starch capsules (weight ratio of zein to starch: 1:6) containing plasticizers of glycerol and oleic acid after high temperature (≥70 °C) treatment. Further studies showed a substantially decreased viscosity and the formation of an amylose–lipid complex after starch gelatinization. Thus, the hydrophobic physical barrier of the zein matrix and the amylose–lipid complex might together limit the water accessibility and starch swelling leading to a dense packing of starch materials with a high amount of SDS. The acceptable sensory property makes it an ideal ingredient for specialty food preparation and glycemic control.  相似文献

A 23 full-factorial study was designed to study the effect of corn preparation methods (flaking and grinding) on dry-grind ethanol performance using raw starch hydrolysis (RSH) process. Moisture content (15, 22%), flaker roller gapsetting (0.508 mm, 1.016 mm), and grinding were studied. Fifteen hundred g of corn samples were cracked, roller pressed, and were either ground further or retained, along with control ground corn. A bimodal size distribution was observed for ground corn, regardless of flaking. Moisture at 22% resulted in bigger-sized flakes with d50 between ∼1.3 and 1.8 mm, compared to ∼138–169 μm for ground corn. Not all ground corn resulted in higher ethanol concentration in fermentation beer; the ethanol levels in beer did not reflect the starch hydrolysis trend that favored ground corn. In a related study, the beer ethanol concentration did not show a clear trend with rollermill gapsetting while fermenting the flakes produced at 0.203, 0.305, 0.406, and 0.508 mm gapsettings. Generally, flakes from corn at 22% moisture resulted in higher ethanol content in beer. Rollermill flaking was found comparable to hammermill grinding for dry-grind corn ethanol via raw starch hydrolysis and yeast fermentation.  相似文献

A set of 13 waxy rice genotypes prepared by chemical-induced mutation of rice variety TNG67 and 7 waxy rice varieties widely grown in Taiwan were compared for structural, rheological and retrogradation characteristics of starches. Wide differences in retrogradation enthalpy (ΔHret), gel firmness and storage modulus (Gret) were observed for 2-week stored gels of 20 starches. Ratio of short-to-long amylopectin chains was significantly higher (p < 0.05) in starches from mutant genotypes than in commercial varieties. ΔHret and Gret of starch pastes stored over 4 weeks showed stronger correlation with amylopectin chain-profile compared to those stored for 2 weeks. Amount of long amylopectin chains was correlated positively (p < 0.05) with ΔHret and gel firmness. Overall, ratio of short-to-long amylopectin chains affected almost all the rheological and retrogradation parameters. Results of this study can be useful to plant breeders and food industry for quality improvement and selection of waxy rice mutants for various applications.  相似文献

Lipids have an important effect on starch physicochemical properties. There exist few reports about the effect of exogenous lipids on native corn starch structural properties. In this work, a study of the morphological, structural and thermal properties of native corn starch with L-alpha-lysophosphatidylcholine (LPC, the main phospholipid in corn) was performed under an excess of water. Synchrotron radiation, in the form of real-time small and wide-angle X-ray scattering (SAXS/WAXS), was used in order to track structural changes in corn starch, in the presence of LPC during a heating process from 30 to 85 °C. When adding LCP, water absorption decreased within starch granule amorphous regions during gelatinization. This is explained by crystallization of the amylose-LPC inclusion complex during gelatinization, which promotes starch granule thermal stability at up to 95 °C. Finally, a conceptual model is proposed for explaining the formation mechanism of the starch-LPC complex.  相似文献

Reduced glutathione (GSH) commonly exists in wheat flour and has remarkable influence on gluten properties. In this study, effect of GSH on the gelatinization and retrogradation of wheat flour and wheat starch were investigated to better understand the GSH-gluten-starch interactions in wheat flour. Compared with wheat starch, wheat flour showed significant decreases in peak and final viscosity, and gelatinization onset temperature with increasing GSH concentration. GSH depolymerized gluten and thereby broke down the protein barrier around starch granules to make the starch easily gelatinized. However, the interaction between GSH and wheat starch restrained starch swelling. GSH addition resulted in weakened structure with higher water mobility in freshly gelatinized wheat flour dispersions but decreased water mobility in wheat starch dispersions. After storage at 4 °C for 7 d, GSH increased elasticity and retrogradation degree in wheat flour dispersions but retarded retrogradation in wheat starch dispersions. The results indicated that GSH promoted retrogradation of wheat flour, which mainly attributed to the depolymerized gluten embedding in the leached starch chains, and inhibiting the re-association of amylose, and subsequently promoted the starch intermolecular associations and starch retrogradation. This study could provide valuable information for the control of the quality of wheat flour-based products.  相似文献

Vital wheat gluten and lecithin (GL) (50:50, w/w) were dry blended in a coffee grinder and a 9.5% (w/v) aqueous slurry was jet-cooked (steam pressures of 65 psi/g inlet and 40 psi/g outlet) to disaggregate wheat gluten and facilitate better dispersion of the two components. The jet-cooked material was freeze-dried and stored at 0 °C for future use. The GL blend was added to pure food grade common maize and rice starch at concentrations of 0 (control), 6, 11, 16, and 21%. Starch gelatinization and retrogradation temperature transitions were determined using Differential Scanning Calorimetry (DSC). From the DSC profiles, the change in the ΔH value was used as an indication of starch retrogradation, where a higher ΔH value indicated higher retrogradation. The ΔH values of the blends at 4 °C had higher values than the −20 °C and the ambient (25 °C) storage temperatures. Overall, the 21% GL/starch blends reduced retrogradation by 50%. The lower amylose content of rice starch relative to maize starch was reflected in Rapid Visco Amylograph (RVA) measurements of peak viscosity, and similarly, Texture Analyzer (TA) measurements indicated that maize starch gel is firmer than rice starch gel. Retrogradation was also evaluated by observing G′, the shear storage modulus, as a function of time after running a standard pasting curve. Using this method, it appears that GL has a significant effect on maize starch retrogradation, since low concentrations (<0.4%, w/w) reduced G′ up to 40%. The opposite behavior was seen in rice starch, where G′ increased directly with added GL. It appears that the amylose level in the rice starch is too low to be affected by the GL, and the increase seen in G′ is most likely due to added solids.  相似文献

This work fractionated waxy and normal wheat starches into highly purified A- and B-type granule fractions, which were representative of native granule populations within parent native wheat starches, to accurately assess starch characteristics and properties of the two granule types. Wheat starch A- and B-type granules possessed different morphologies, granule specific surface area measurements, compositions, relative crystallinities, amylopectin branch chain distributions, and physical properties (swelling, gelatinization, and pasting behaviors). Within a genotype, total and apparent amylose contents were greater for A-type granules, while lipid-complexed amylose and phospholipid contents were greater for B-type granules. B-type (relative to A-type) granules within a given genotype possessed a greater abundance of short amylopectin branch chains (DPn < 13) and a lesser proportion of intermediate (DPn 13–33) and long (DPn > 33) branch chains, contributing to their lower relative crystallinities. Variation in amylose and phospholipid characteristics appeared to account for observed differences in swelling, gelatinization, and pasting properties between waxy and normal wheat starch fractions of a common granule type. However, starch granule swelling and gelatinization property differences between A- and B-type granules within a given genotype were most consistently explained by their differential amylopectin chain-length distributions.  相似文献

Native corn (Zea mays L.) starch granules were hydrolyzed using glucoamylase at 50 °C for 1–8 h. The degree of hydrolysis over time was analyzed by the concentration of glucose released into solution. The pore sizes of hydrolyzed starch granules increased gradually with the degree of hydrolysis, as evidenced by scanning electron micrographs. It was deduced that every pore on the surface of granules was formed by hydrolysis of one enzyme molecule, so the size of pores distributed on the surface of starch granules was almost homogeneous for the same hydrolysis time. The specific surface area (SBET), porosity, adsorptive capacity and mean pore radius of porous starch granules were determined to analyze the effect of digestion time on granule properties.  相似文献

Retrogradation of gelatinised starch is the main phenomenon that influences the texture of cooked rice. The rate of retrogradation is affected by several factors including amylose and amylopectin ratio, protein and fibre. The objective of this study was to analyse the pasting properties and the retrogradation behaviour of six traditional and five aromatic Italian rice varieties. The pasted gels, after cooling, were evaluated by dynamic rheological measurements for up to 7 days of storage at 4 °C. The samples were also analysed by a NIR spectrometer. The pasting properties and the retrogradation behaviour of milled rice flours strongly depended on the rice varieties. During gel ageing, a noticeable increase of G′ and G″ was observed only for the milled rice varieties Asia, Gange, Fragrance and Vialone Nano, characterised by a high amylose content. No further hardening was found either for the other milled varieties or for all the brown samples. The methods used in this work (dynamic oscillatory rheometry and FT-NIR spectroscopy) turned out to be very useful in the definition of rice starch gels ageing.  相似文献

Waxy corn starch was modified by dry heating (130 °C, 2 h) in the presence of octenyl succinic acid (OSA) at different pHs (4, 6, and 8), and the physicochemical properties of the modified starch were evaluated. The dry-heated octenyl succinylated (DH-OS) starch was also evaluated as a partial fat substitute in a muffin. Dry heating of starch under a more acidic condition resulted in lower degree of polymerization (DPn) but lower degree of substitution (DS). The pasting viscosity of the DH-OS starch prepared under basic conditions was higher than that of the unheated counterparts, whereas that under acidic conditions was lower. It was because the substitution favored basic conditions, and thermal degradation was accelerated by acids. The gelatinization characteristic was not significantly altered by OSA substitution and dry heating. The muffin containing the DH-OS starch had a higher specific volume and a softer texture than the muffin containing maltodextrin. Among the DH-OS starches tested, the starch prepared under acidic conditions produced muffins that had a greater volume, which was most likely due to its low molecular size. The muffin prepared with DH-OS starch at pH 6 was the softest in texture and had characteristics that were relatively close to the full-fat muffin.  相似文献

Experimental gluten-free (GF) rice cookies were formulated with 100% rice flour (CTR) or by substituting 50% of rice flour with native waxy rice starch (WRS) or with three different resistant starch (RS) ingredients obtained from debranched, annealed or acid and heat-moisture treated WRS (RSa, RSb and RSc, respectively). Chemical composition, in vitro starch digestibility and physical and textural characteristics were carried out. Among cookies, RSa-cookies had the highest total dietary fibre content, the lowest rapidly digestible starch and the highest RS contents. All the three RS preparations have proved effective in increasing the proportion that tested as RS with respect to native WRS. However, the estimated RS loss for each applied RS ingredients caused by the baking process followed the order of RSa < RSc < RSb. Last, the lowest vitro glycaemic index value was measured for RSa-cookies. Among cookies, differences in colour and hardness were reported. The partial replacement of commercial rice flour with RSa could contribute to formulate GF cookies with higher dietary fibre content and likely slowly digestible starch properties more than equivalent amounts of RSb and RSc.  相似文献

The films produced from pure starch are brittle and difficult to handle. Chemical modifications (e.g. cross-linking) and using a second biopolymer in the starch based composite have been studied as strategies to produce low water sensitive and relatively high strength starch based materials. A series of corn starch films with varying concentrations (0-20%, W/W) of citric acid (CA) and carboxymethyl cellulose (CMC) were produced by casting method. The effects of CA and CMC on the water vapor permeability (WVP), moisture absorption, solubility and tensile properties were investigated. The water vapor barrier property and the ultimate tensile strength (UTS) were improved significantly (p < 0.05) as the CA percentage increased from 0 to 10% (W/W). At the level of 15% (W/W) CMC, the starch films showed the lowest WVP values (2.34 × 10−7 g Pa−1 h−1 m−1) and UTS increased from 6.57 MPa for the film without CMC to 16.11 MPa for that containing 20% CMC.  相似文献

Normal corn, Hylon V and Hylon VII starches were partially degraded by acid-ethanol treatment and applied to heat-moisture treatment (HMT) for improving the enzymatic resistance of starch. The weight-average degree of polymerization (DPw) of acid-ethanol-treated (AET) corn starches ranged from 6.75 × 105 to 181, 4.48 × 105 to 121, and 1.94 × 105 to 111 anhydrous glucose units for normal corn, Hylon V and Hylon VII starches, respectively. Starch retained its granular structure after AET and HMT, recovery of starch granules after modifications were higher than 92%. Resistant starch (RS) content and boiling-stable RS content of corn starch increased after dual modification, and the increment increased with increasing duration of AET. The boiling-stable RS content of dual-modified starch increased from 1.5 to 9.2, 12.2 to 24.1, and 18.0 to 36.2% for normal corn, Hylon V and Hylon VII starches, respectively. Increments of RS content and boiling-stable RS content of dual-modified starches were significantly correlated (r2 > 0.700) with DPw of starch, revealing that the enzymatic resistance of dual-modified corn starch granules increased with decreasing molecular size of starch. Result also suggested that starch granules partially degraded with AET could improve the molecular mobility and ordering during the consequent HMT.  相似文献

Milled rice from 11 varieties, with amylose levels from 1.2 to 35.6% dry base, were collected to study the impacts of amylose content on starch retrogradation and textural properties of cooked rice during storage. The relationship between amylose content and different properties was determined using Pearson correlation. Starch retrogradation enthalpy (ΔHr) of cooked rice was determined by differential scanning calorimetry. ΔHr values were found to be positively correlated with amylose content (0.603 ≤ r ≤ 0.822, P < 0.01) during storage. Textural properties were determined by a Texture Analyser. The hardness of cooked rice showed a positive correlation with amylose content (0.706 ≤ r ≤ 0.866, P < 0.01) and a positive correlation with ΔHr of cooked rice (r = 0.650, P < 0.01) during storage. The adhesiveness showed a negative correlation with amylose content (−0.929 ≤ r ≤ −0.678, P < 0.01) and a negative correlation with ΔHr of cooked rice (r = −0.833, P < 0.01) during storage. Hardness showed a negative correlation with adhesiveness (r = −0.820, P < 0.01). These results indicated that amylose content has significant effects on starch retrogradation and textural properties of cooked rice. The cooked rice with high amylose content is easy to retrograde, the cooked rice with low amylose content retrograded slowly. Sarch retrogradation contributes to the changes of textural properties of cooked rice during storage.  相似文献

Tea Polysaccharides (TPS) has been acknowledged of one of the most important components with various bioactivities in tea.The extraction of TPS from wide tea sources was the previous and determinant work before further studies done.While the extraction procedures of TPS would be different due to the later utilization.In this work,the extraction conditions of TPS were previously optimized by respond surface methodology.A quadric model was obtained as Y =3.16 +0.31X1-0.55X2-0.47X3-0.034X1X2 +0.022X1X3-0.041X2X3-0.90X12-0.40X22-0.73X32.The model was tested and proved through the ANOVA with F-value and p-value.Furthermore,the optimal condition was achieved as extraction temperature of 82℃,extraction time of 106 min and ratio of water to material of33∶1 (mL/g),meanwhile the highest yield of TPS showed 3.39% ±0.08%.The crude TPS was later refined to be of purity of 81.3%.The refined TPS was incorporated with starch as to state the role of TPS in the starch retrogradation of starch-based food.The results showed that TPS-wheat starch mixture has a relatively low degree of retrogradation,which indicated that TPS has a delayed or resistant effect on wheat starch retrogradation.This work may provide a practical evidence for the promising starch-based food incorporated tea.  相似文献

Commercially available corn starches containing 0, 25, 50 and 70% amylose were extruded with 10, 20 and 30% soy protein isolate (SPI) or wheat gluten (WG) at 22% moisture content (dry basis) in a C.W. Brabender single screw laboratory extruder using a 140°C barrel temperature and a 140 rpm screw speed. True, solid and bulk densities; percent total, closed and open pores; and shear strengths of the extrudates were determined. The microstructures of the extrudates were studied by scanning electron microscopy (SEM). The total pores of the extrudates were affected significantly (p < F=0.0001) by type of protein (SPI or WG) and starch amylose. The open or closed pores, were affected by protein type only. The interaction between amylose and protein contents was highly significant <(p < F=0.0001). In general, the total pores and bulk densities were higher for WG-starch extrudates compared to SPI-starch extrudates. These values decreased as amylose content increased from 0 to 25% and then increased thereafter. The open pores, on the other hand, increased with increasing protein content from 10 to 20% and then decreased. Extrudates containing WG had higher shear strengths than those containing SPI.  相似文献
