The objective of the study was to investigate and assess the impact of trainings on the levels of meat contamination produced from local livestock slaughter facilities in the North-West region of Somalia (Somaliland). The investigation considered slaughter facilities where workers had been trained or not. The survey was carried out in four local slaughter facilities. A pre-tested questionnaire on abattoir hygiene and food safety standards was administered to International Aid Organizations, government officials, abattoir workers and supervisors. In addition, a total of 320 surface meat swab samples were collected from randomly selected small ruminant carcasses slaughtered from four purposefully selected local slaughter facilities. The samples were analyzed at Analabs laboratories in Nairobi, Kenya, for total viable counts, total coliforms count and presence of Salmonella species. Meat contamination risk factors associated with hygiene practices based on training offered or not was identified. It was noted that slaughter facilities where abattoir workers had not received trainings on minimum meat hygiene standards and quality assurance systems of good hygiene practices and sanitary standard operating procedures produced carcasses with high levels of bacterial contamination in comparison with those where workers had received the said trainings. The laboratory results were in agreement with poor hygiene meat handling practices and lack of compliance with minimum meat hygiene and food safety standards in Berbera and Burao local livestock slaughter facilities where personnel had not been trained.  相似文献

In Argentina, Trichinella infection in pigs is endemic. The first report of human trichinellosis in Argentina was from 1898 in Buenos Aires. The number of human cases increased from 908, between 1971 and 1981, to 6,919, between 1990 and 2002. In pigs slaughtered in official establishments, the prevalence of Trichinella infection was 0.46% in 1914 and 0.01--0.03% during the period 1990--2004. T. spiralis is typically found in the domestic cycle that includes pigs, humans and rodents. Trichinella spp. from a sylvatic cycle has also caused human outbreaks resulting from the consumption of meat from puma, armadillo and wild boar. European migration to Argentina (principally Spanish and Italian) during the first years of the 20th century brought the tradition of preparing and eating raw sausages. This increased the risk of human exposure to Trichinella. Detection in pigs was initially made at slaughter by compression of muscle tissue (trichinoscopy) and continued this way until 1996, when artificial digestion was adopted for use in preventing human trichinellosis in Argentina. Objectives: Evaluation of dogs with elevated plasma thyroxine concentration fed raw food before and after changing the diet. Method: Between 2006 and 2011 all dogs presented with an elevated plasma thyroxine concentration and a dietary history of feeding raw food were included. Thyroxine (reference interval: 19·3 to 51·5 nmol/L) and in many cases also thyroid-stimulating hormone concentrations (reference interval: <0·30 ng/mL) were measured initially and after changing the diet. Results: Twelve dogs were presented with a median age of five years. The median plasma thyroxine concentration was 156·1 (range of 79·7 to 391·9) nmol/L; in six dogs, thyroid-stimulating hormone concentration was measured and was <0·03 ng/mL in five dogs and 0·05 ng/mL in one dog. Six dogs showed clinical signs such as weight loss, aggressiveness, tachycardia, panting and restlessness while six dogs had no clinical signs. After changing the diet eight dogs were examined: thyroxine concentration normalised in all dogs and clinical signs resolved. Clinical Significance: Dietary hyperthyroidism can be seen in dogs on a raw meat diet or fed fresh or dried gullets. Increased plasma thyroxine concentration in a dog, either with or without signs of hyperthyroidism, should prompt the veterinarian to obtain a thorough dietary history.  相似文献

Cattle transported to the government-run cattle market and slaughter slab in Akinyele, Oyo State, Nigeria on their final voyage are facing a disturbingly cruel, filthy and unsafe environment that is also raising the risk of contamination of meat sold for human consumption. This report gives a picture of what the cattle have to go through before they are slaughtered. This study also reveals cattle awaiting slaughter in abysmal health conditions, cows pulled with extreme force towards lairage and slaughter slab. Equally disturbing is the filthy situation inside the abattoir where the risk of contamination of meat is significant. Also, poor meat handling, transportation and sales practices subject meat to contamination leading to poor quality and exposure of human consumers to health risk. Development of hygienic slaughter slab operations, improved transportation system for both livestock and meat is therefore recommended; not only for Akinyele, but all abattoirs and slaughter slabs in Nigeria.  相似文献

The public veterinary administration was founded in July 1817 by the "Supreme Act" and developed from the public medical administration during the first half of the 19th century to finally an adequate position in 1913. In the beginning prior objectives were animal disease campaigns and participation in animal breeding activities. Towards the end of the last century the public veterinary administration also dealt with hygiene control concerning food of animal origin and meat hygiene. Further fields of activities followed, for example the control of the disposal of animal carcases, trade with animal drugs, vaccines and feedstuff, protection of animals and poultry meat hygiene. It was of special importance to the medium level of the public veterinary administration when in 1981 a chemist engaged in the supervision of food for human consumption was employed by the "Regierungspr?sident" Cologne. It was then possible to lump together both control in the complete field of supervision of food for human consumption and public veterinary administration.  相似文献

The experimental materials comprised 44 hybrid [female (Polish Large White x Polish Landrace) x male Duroc] growing-finishing pigs. The animals were randomly divided into two groups: 24 pigs were slaughtered immediately after transport and 20 pigs were slaughtered after a 24-hour rest period in the lairage. The meat content of pork carcasses, carcass dressing percentage, the proximate chemical composition, physicochemical and sensory properties of meat and shear force values were determined. Serum creatine kinase activity and cortisol levels were determined in blood samples collected before transport and during carcass bleeding. Pigs slaughtered immediately after transport, compared with those slaughtered after a 24-hour rest period, were characterized by a higher meat content of the carcass and a higher carcass dressing percentage. Pre-slaughter handling had no effect on pork quality. The incidence of normal-quality meat, partially PSE (pale, soft, exudative) meat and PSE meat was similar in both groups. Chemical analysis showed that the content of dry matter, total protein, fat and minerals in meat was comparable in both groups. As regards the functional properties of the pork, samples from the carcasses of pigs that had rested before slaughter had a higher contribution of the red color component. Meat from pigs slaughtered immediately after transport had more desirable sensory properties. Pre-slaughter resting had a significant effect on those analyzed physiological parameters which were found to be good indicators of pre-slaughter stress. Serum creatine kinase activity and cortisol levels were higher in blood samples collected after transport (during carcass bleeding) than in samples collected before transport, pointing to a strong stress response of animals to pre-slaughter treatment. The decrease in serum cortisol levels in blood samples collected during bleeding from the carcasses of pigs slaughtered after a 24-hour rest period, compared with samples collected from animals slaughtered immediately after transport, suggests that rest before slaughter alleviated stress induced by pre-slaughter handling operations.  相似文献

The livers which are discolored yellowish and have a large amount of lipids (liver degeneration) are frequently observed in slaughtered pigs. Dark firm dry (DFD) meat and liver degeneration have a common etiological agent of exhaustion in pigs before slaughter. The correlation between them was examined. In 65 cases of 77 slaughtered pigs with the degenerative liver, which contained more than 6.6% total lipids of liver wet weight, the carcasses showed early rigor mortis and the higher final pH above 6.0. R values of the muscles, which indicated the decrease of ATP, were higher. The meat had a DFD appearance and the muscle fibers had no tendency to shrink. These data showed that the pigs with liver degeneration produced DFD meat at a high rate. In 4 cases of 5 pigs exhausted experimentally by 53 hr fasting and hard exercise before slaughter, both liver degeneration and DFD meat were produced simultaneously. The livers of them were discolored and contained about 8.0% or more total lipids. The carcasses of them showed early rigor mortis and the higher final pH above 6.0. From these data, it was suggested that the exhaustion in pigs before slaughter caused both liver degeneration and DFD meat.  相似文献

For the purpose of investigating the mechanism of obesity‐induction/re‐induction including weight‐cycling in beagles, a study was conducted using commercially available dog food combined with human food to mimic at home‐snacking and diet‐supplementation behaviours. Adult female beagles, which had free access to water and exercise, were used (n = 9). All dogs were initially offered two times their daily calculated number of calories using a dry extruded diet plus blend of canola and soybean oils and allowed to eat ad libitum. After 3 weeks, Pecan shortbread cookies were added to the diet mixture. Obesity was induced during a 19‐week period with 1875–2250 kcal/day consumed, on average, during this period. The dogs were then subjected to a weight‐loss regimen while consuming 490–730 kcal/day. After weight loss, a similar degree of obesity was re‐induced for 17 weeks even though dogs consumed only 1125–1250 kcal/day. Body weight, body condition scores, kcal consumption and food efficiency were recorded. Results indicated that less time and fewer kcal were required to re‐induce the same degree of obesity compared with the initial obesity induction. Human snack foods appeared to stimulate appetite and thus contribute to the obese state. Food efficiency was also increased during the obesity‐reinduction period compared with the induction period. This information may help pet owners better understand the need to limit table scraps and human‐type food snacks in dogs prone to obesity as well as weight maintenance after weight loss.  相似文献

Localized thyroid carcinoma involving the base of the tongue was diagnosed in 3 dogs examined because of a midline cervical mass rostroventral to the larynx. These masses had been present for 4 to 12 months and were firm, nonsensitive, and fixed in position. One dog had progressive dysphagia and dyspnea. Masses were surgically excised together with the base of the tongue and portions of the hyoid apparatus. Severe dyspnea that developed immediately after surgery in 1 dog was managed by tracheostomy intubation for 4 days. Transient dysphagia developed in all dogs. Hydration was maintained by IV fluid administration until water and food of gruel consistency could be swallowed 1 to 6 days after surgery. Consistency of food was gradually thickened to normal, as swallowing improved 6 days to 2 months after surgery. One dog developed aspiration pneumonia that resolved after antimicrobial administration and improved swallowing that prevented further aspiration. After 9 months, 3 years, and 6 years, the dogs were clinically normal.  相似文献

The carcasses of 370 very young slaughter calves condemned for various diseases and defects at routine post-mortem meat inspection were subjected to further and more detailed macroscopic examination as well as histopathological examination of some tissues. Of the carcasses examined, 138 were condemned for navel ill, and in the majority of these cases the lesions extended beyond the umbilicus, particularly involving the umbilical vein and the urachus. Enzootic pneumonia was the most common cause of pleuritic lesions in the carcass, and 75 carcasses were condemned for this lesion. Arthritis, whether localised or involving a number of joints, was the primary lesion in 32 carcasses. Focal interstitial nephritis was observed in the kidneys of 36 carcasses, while 23 carcasses were condemned for wounds and bruising. A number of other miscellaneous diseases and defects, including generalised peritonitis, jaundice, hepatic abscesses and fever, were observed at low rates in condemned carcasses. Resolution or localisation of lesions had occurred at the time of slaughter on average in 35% of the condemned carcasses and the judgment of total condemnation was difficult to justify on a scientific basis and would not have been applied to other classes of slaughtered livestock. In the case of wounds and bruising, 95.6% of the carcasses could have been trimmed. There was also considerable variation in the likely pathogenesis and systemic effects of the diseases and defects observed. A need for clear and specific judgment criteria to be applied to the carcasses of very young slaughter calves at post-mortem meat inspection was identified.  相似文献

1. An experiment was conducted with 98 male and 98 female broiler chickens (Ross 308) to study the effect of growth rate, induced by different dietary means, sex and live weight (1500?g and 2000?g) at slaughter on production parameters, bone strength and sensorial characteristics of the breast meat.

2. The birds were divided into four groups and individually fed a standard commercial diet, a high energy diet or low energy diet from d?11 to slaughter at between d 28 and 39. Three groups were fed ad libitum and a further group was fed a restricted amount of the high energy feed. Half of the birds in each group were slaughtered at approximately 1500?g and the other half at 2000?g live weight.

3. The diets resulted in different growth rates. The chickens fed the high energy and the commercial diet had the highest growth rate at both live weights at slaughter. The restricted fed chickens had lower bone strength than the chickens fed the low energy diet.

4. Breast meat from male broilers was juicer, more tender and less hard than breast meat from females. Chickens slaughtered at 2000?g live weight were juicer than those slaughtered at 1500?g. Chickens given the high energy feed ad libitum and restricted had different growth rates, but the sensory parameter related to texture showed no difference.

5. It was concluded that an increased slaughter weight might improve meat quality due to improved juiciness.  相似文献

The measures used to control the epidemics of foot-and-mouth disease in Canada in 1951/52 (29 outbreaks) were compared with those used in the epidemic in Hampshire in 1967 (29 outbreaks). In both epidemics the disease spread more from premises where the disease was reported late and the imposition of quarantine or restrictions on infected premises was delayed. In Hampshire, area restrictions were imposed, susceptible livestock on infected premises and on premises in direct contact were slaughtered, and contacts were traced. In Canada, the initial diagnosis was vesicular stomatitis, no area restrictions were imposed, no tracing was carried out and the animals on infected premises were allowed to recover. However, apart from the disease's spread through infected meat and by unknown or airborne routes, it did not spread from infected premises once quarantine was imposed, partly owing to the low population density of livestock in the area. The effects of the slaughter of infected premises and direct contacts in the Fareham area of Hampshire in 1967 and in the Chathill area of Northumberland in 1966 were compared with what might have happened if, in addition, culling on contiguous premises or culling on premises within 3 km or emergency vaccination had been put into effect. The slaughter of cattle, sheep, goats and pigs on premises within 3 km two days after confirmation of the first outbreak would have resulted in fewer outbreaks and a shorter period to complete slaughter, but more animals would have been slaughtered. In the Chathill area, the slaughter of sheep, goats and pigs only on premises within 3 km two days after confirmation of the first outbreak would not have resulted in fewer outbreaks and more animals would have been slaughtered. Fewer premises and animals would have been slaughtered by a contiguous cull than by a 3 km cull but more than by the slaughter of infected premises and direct contacts. Emergency vaccination within 3 km, providing protection at four days (but not to animals already infected before the development of immunity), would have resulted in the fewest animals being slaughtered and could have reduced the number of outbreaks in the Fareham area by one and in the Chathill area by two or three. All the procedures would have had a greater effect the sooner they were introduced. However, with many foci of infection, priorities for action would have had to have been established. Earlier tracing of the last outbreak in the Fareham area could have shortened the Hampshire epidemic. Surveillance of a farm identified as at risk through animal movements and by the use of an airborne-prediction model could have eliminated the source of further outbreaks in the Chathill area.  相似文献

The Polynesian migrations included the rat and the dog. There is no historical link to connect the two endemic New Zealand species of bats with any migration. With these exceptions there were no mammals introduced into New Zealand until early in the 19th century. Today the WHO yearbook records the cattle and. sheep population as 8.9 and 59.9 million, respectively; 40.3% of total export income is derived from meat and by-products. Total export income from meat, wool, dairy produce, livestock on the hoof and horses exceeds 80%. All are the harvest from the medium energy, high protein crop — pasture.  相似文献

The ultimate pH of the longissimus muscle was measured in 1536 lambs routinely slaughtered at a meat export works in the southern part of the North Island during the 1981/82 season. The mean ultimate pH of ail samples was 5.60, and 7.2 percent of the carcases had values equal to, or above, 6.00 whereas 85.3 percent of carcases had values below 5.80 which is considered to be optimal. The ultimate pH values of samples from lambs slaughtered during the summer period was significantly higher than those obtained during three other seasonal sampling periods and Perendale lambs had significantly higher ultimate pH values as compared to Iambs of other breeds. There was no statistical association between distance travelled before slaughter and the ultimate pH of carcases but there was a highly significant direct correlation between holding periods of lambs in the stockyards and ultimate pH of their meat. There was also a highly significant inverse correlation between fleece weight and ultimate pH and it is suggested that both this effect and the seasonal pattern of ultimate pH values indirectly reflect the major role that nutrition may play in the development of high ultimate pH meat in lambs. It is further suggested that washing of animals prior to slaughter and the length of subsequent resting periods are important factors in relation to the development of undesirably high ultimate pH values.  相似文献

Pigs, sheep and rabbits were given carbamates per os. The animals were slaughtered one to thirty days after application. The examination of the slaughtered animals and meat was supplemented by determining the residues of carbamates in the meat and by physico-chemical, bio-chemical and bacteriological examinations. In the case of sevin, TMTD and/or zineb intoxication, pigs and sheep may be slaughtered after 20 to 30 days and rabbits seven to 12 days after intoxication. Meat containing sevin, TMTD and/or zineb may not be used for human consumption. After long-term storage of meat in freezing units and two-hour boiling the substance in the meat is not destroyed. From the veterinary and hygienic aspect the meat of the intoxicated animals may be used only after a complex examination.  相似文献

If it was decided to reject for slaughter lines with CPD, approximately 1 1/4 million lambs would be returned to farms each year. The purpose of this study was to determine pet‐related management factors that may be associated with the presence of Salmonella spp. in feces of pet dogs from volunteer households. From October 2005 until May 2006, 138 dogs from 84 households in Ontario were recruited to participate in a cross‐sectional study. Five consecutive daily fecal samples were collected from each dog and enrichment culture for Salmonella spp. was performed. A higher than expected number of the dogs (23.2%; 32/138) had at least one fecal sample positive for Salmonella, and 25% (21/84) of the households had at least one dog shedding Salmonella. Twelve serotypes of Salmonella enterica subsp. enterica were identified, with the predominant serotypes being Typhimurium (33.3%; 13/39), Kentucky (15.4%; 6/39), Brandenburg (15.4%; 6/39) and Heidelberg (12.8%; 5/39). Univariable logistic regression models were created with a random effect for household to account for clustering. Statistically significant risk factors for a dog testing positive included having contact with livestock, receiving a probiotic in the previous 30 days, feeding a commercial or homemade raw food diet, feeding raw meat and eggs, feeding a homemade cooked diet, and having more than one dog in the household. In two‐variable models that controlled for feeding raw food, the non‐dietary variables were no longer statistically significant. These results highlight the potential public health risk of including raw animal products in canine diets.  相似文献

Several Danish investigations were carried out in order to elucidate the influence of nutrition, sex and slaughter weight on the body composition in pigs. In this paper we discuss whether selection of breeding animals should be based mainly on: (1) per cent meat in the carcass, (2) a combination of per cent meat, daily gain and feed consumption per kg live weight gain, or maybe better, (3) a combination of per cent meat and feed consumption per kg meat produced.Investigations comprising five different energy and protein levels and 1100 pigs slaughtered at live weights varying from 80 to 120 kg showed that both feeding intensity and slaughter weight influenced the carcass composition. Increasing feeding intensity and increasing slaughter weight caused a deterioration in the ratio between meat and subcutaneous fat. The feeding intensity had only little influence on kg meat produced whereas increasing feeding intensity caused an increase in kg subcutaneous fat produced.The females contained more meat than did the male castrates. Besides, the deterioration in carcass composition due to increasing slaughter weight and feeding intensity were lower in the females than in the male castrates. Daily gain increased with increasing feeding intensity. The investigations indicate maximal protein synthesis to take place within the live weight area of 90–100 kg.High correlations were found between the chemical composition of the different anatomical fractions in 90-kg pigs. The empty pigs (live weight minus the content of the digestive tract) weighed on average 80.8 kg, of which 42.0% was dry matter. The dry matter contained 41.1% protein, 51.1% chemical fat, 7.7% ash and 7080 kcal per kg. The meat fraction contained 55% of the protein, 30% of the chemical fat and 38% of the energy in the empty pigs.  相似文献
