The lipid profiles of wheat flour doughs containing exogenous lipase were studied under different mixing conditions using a microscale mixer. An experimental design comparing the effects of dough water content (52–68%), the speed of mixing (50–100 rpm), and the mixer temperature (18–32°C) showed that the hydrolysis levels were positively influenced by temperature and speed of mixing and negatively influenced by water content. The positive effect of temperature was enhanced both by highspeed mixing and low water content. The lipid oxidation levels were positively influenced by the speed of mixing and negatively influenced by the water content. The positive effect of temperature on the oxidation levels was less important. A series of experiments conducted with different types of industrial and semi-industrial mixers with equal concentrations of lipase added to the dough showed large differences among the rates of lipid hydrolysis and oxidation. However, the mixing conditions proposed by bakers to obtain doughs with similar handling properties led to similar dough lipid profiles. Sodium chloride did not change the lipid profile when added to dough. Conversely, calcium chloride promoted a large increase of lipid hydrolysis and oxidation due to its activation of lipase activity. Addition of yeast increased the lipid hydrolysis and slightly decreased lipid oxidation.  相似文献

A high throughput centrifugal mixer capable of using smaller amounts of flour (50 g) was evaluated for the production of oriental alkaline noodles. The unit requires a small footprint on a laboratory bench and offers variable speed mixing (300–3,500 rpm) for 5–60 sec. Three different mixing bowls, plain, pin, and paddle, were evaluated for the small‐scale production of alkaline noodles using straight‐grade flour derived from Canada Western Red Spring (CWRS) and Canada Prairie White Spring (CPSW) wheat. Under optimized mixing conditions (3,000 rpm for 30 sec), the pin and paddle bowls produced noodle dough with crumb size distribution and adhesion characteristics consistent with commercial requirements. The plain bowl produced dough with larger undesirable dough chunks and showed excessive heat buildup. Noodle sheets produced from this dough were not comparable in color characteristics to conventionally produced noodle sheets. Noodles prepared using the paddle mixer also displayed some significantly different color and texture characteristics than conventionally prepared noodles. However, raw noodle sheets or cooked noodles of either wheat class, prepared using the pin bowl mixer, displayed color values (L*, a*, and b*) at 2 and 24 hr and cooked noodle texture characteristics (bite, chewiness, resistance to compression, and recovery) comparable to a conventional laboratory‐scale Hobart type mixer. In addition to the very short mixing time and small equipment footprint for the centrifuge mixer, rapid throughput is enhanced by the ability to rapidly clean or interchange bowls and to potentially vary sample size to as little as 5 g. These attributes should be particularly useful in earlier generation breeder programs where large numbers of samples require rapid screening.  相似文献

The effect on O2 uptake during the mixing of yeasted dough, either unsupplemented or supplemented with glucose oxidase (GOX), horsebean flour (HB), soybean flour (SB), or combinations thereof, was studied using an airtight mixer. Two wheat flours with a low (flour A) and a high (flour B) content of free polyunsaturated fatty acids were used. Addition of HB or SB provokes a similar increase of O2 uptake for both wheat flours, whereas addition of GOX causes a larger increase for flour A than for flour B. When the wheat flours were supplemented with HB or SB, addition of GOX caused a small but significant increase of O2 uptake for flour A. This increase was not observed for flour B. The mixing tolerance of dough A, determined with the Chopin Consistograph, is increased by GOX addition. However, this effect is less pronounced when flour A is supplemented with HB or SB. Similarly, the relaxation index of dough B is decreased by GOX addition, but the decrease is less distinct in the presence of HB or SB. These results can be explained by a competition among yeast, GOX, and lipoxygenases (present in wheat, HB, and SB flours) for the O2 uptake by dough, which likely decreases the amount of hydrogen peroxide produced by GOX during dough mixing. This competition for O2 consequently also modifies the rheological properties of dough.  相似文献

为了解低水分面条面团中水分的存在状态,明确真空度及和面时间对水分状态的影响,该研究以3个小麦品种(济麦20、宁春4号、济麦22)磨制的面粉为材料,采用真空和面制作低水分面条面团(含水率35%),采用低场核磁共振技术(LF-NMR,low-field nuclear magnetic resonance)和差示量热扫描(DSC,differential scanning calorimetry)2种技术,测定不同真空度(0、0.06、0.09 MPa)和搅拌时间(4、8、12 min)下面团中水分的形态和分布,并进一步分析2种技术测定水分形态结果的相关性。结果表明,在低水分面条面团中,水分主要以弱结合水形态存在。不同品种的小麦粉面团的水分形态及分布存在差异,强筋小麦粉(济麦20)制作面团的水分自由度较低。真空和面(0.06 MPa)可以促进水分与面筋蛋白的相互作用,降低面团中水分子流动性,促进水分结构化;而非真空或过高真空度均会导致面团中水分自由度增加。济麦20、济麦22小麦粉和面时间为8 min时,面团水分流动性较低;而宁春4号小麦粉面团在4 min时,水分自由度较低;继续搅拌,深层结合水减少、弱结合水增多。LF-NMR和DSC测得面团水分状态的结果具有一致性。LF-NMR测得的弱结合水峰面积百分比与DSC测得的可冻结水百分比具有相同的变化趋势(r=0.695),且深层结合水峰面积百分比与非冻结水百分比具有相同的变化趋势(r=0.564)。研究结果为认识制面过程中水分的作用,优化和面工艺和调整产品特性提供参考。  相似文献

A new method for measuring dough densities is presented, based on weighing small dough samples in air and immersed in xylene. The method can be used to evaluate the air content of low‐density doughs and to follow the changing density of a proofing dough sample. The method is applied to evaluate the effect of flour strength and surfactant addition on dough aeration and subsequent proofing. Doughs were mixed in a high‐speed mixer from two flours, a strong breadmaking flour and a weak flour. Surfactants sodium stearoyl lactylate (SSL) and diacetyl tartrate esters of monoglyceride (DATEM) were added at three levels, and the air content, proofing dynamics, and baked loaf quality were evaluated. The air content of dough was proportional to headspace pressure in the mixer, while the strong flour occluded less air than the weak flour. Surfactants greatly improved the volume of baked loaves but appeared to have no significant effect on air incorporation during mixing. The addition of surfactants appeared to increase the rate of growth of the dough piece during proofing, possibly due to increased bubble breakup during mixing or to increased rates of mass transfer of CO2 into bubbles during proofing.  相似文献

This study applied the use of a new small‐scale apparatus, the micro Z‐arm mixer, which has analogous mixing action to that of the traditional valorigraf and farinograph. A novel methodology has been developed for prediction of water absorption replacing the traditional titration method. The basis of this technique is a common characteristic of wheat flour samples: a reasonably constant slope (20–25.7 BU%) of the relationship between dough resistance and the amount of water present during mixing. Using an average slope value, prediction of water absorption was possible from a single measurement using a simple equation and with a standard error of 1.65%. Applications of the new mixer to cereal research are highlighted, including investigation of the effects of flour protein content and protein composition on mixing properties and water absorption. When protein content and protein composition have been systematically altered by the addition of isolated proteins into the flour, both dough development time (DDT) and water absorption increased when protein content was increased by glutenin addition and decreased when protein content was decreased by starch addition. Gliadin addition decreased DDT; gluten addition slightly increased DDT; glutenin addition significantly increased DDT. Water absorption was not affected by altering the glutenin‐to‐gliadin ratio, but it changed in proportion to the amount of protein added. The effect of HMW‐GS composition on the mixing requirement obtained with the micro Z‐arm mixer and with the 2‐g mixograph was also investigated using a set of single‐, double‐, and triple‐null lines for HMW‐GS coding genes. While subunits coded on the GluD1 locus were most important for determining the mixing requirement in both cases, the sample ranking was different in the two mixing actions. A better differentiation ability of the micro Z‐arm mixer was established for triple‐ and double‐null lines.  相似文献

This study examined the effect of cell‐wall‐degrading enzymes added to temper water on wheat milling performance and flour quality. An enzyme cocktail consisting of cellulase, xylanase, and pectinase and five independent variables (enzyme concentration, incubation time, incubation temperature, tempered wheat moisture content, and tempering water pH) were manipulated in a response surface methodology (RSM) central composite design. A single pure cultivar of hard red winter wheat was tempered under defined conditions and milled on a Ross experimental laboratory mill. Some treatment combinations affected flour yield from the break rolls more than that from the reduction rolls. However, a maximum for flour yield was not found in the range of parameters studied. Though treatments did not affect the optimum water absorption for breadmaking, enzyme‐treated flours produced dough exhibiting shorter mixing times and slack and sticky textures compared with the control. Regardless of differences in mixing times, specific loaf volumes were not significantly different among treatments. Crumb firmness of bread baked with flour milled from enzyme‐treated wheat was comparable to the control after 1 day but became firmer during storage up to 5 days.  相似文献

Undermixing or overmixing the dough results in varied experimental loaf volumes. Bread preparation requires a trained baker to evaluate dough development and determine the stop points of the mixer. Instrumentation and electronic control of the dough mixer would allow for automatic mixing. This study used a 200 g mixer that provided an output signal during dough mixing to evaluate potential mixing stop points. The effect of varied mixing time on the baked loaf volume was tested by using three flours with protein contents of 10.6, 12.4, and 13.8%. Dough samples were undermixed, mixed to peak, and overmixed. Overmixing by 0.6 min reduced the loaf volume in all flours tested, by 16–50 cm3 at 90 rpm and by 29–68 cm3 at 118 rpm. When the high‐protein flour sample was undermixed, the largest baked loaves were produced, with an average volume of 922 cm3. A second objective studied the similarities and differences between a 200 g mixer and a 35 g mixograph. The same flours were mixed on both units. The mixing peaks for the 200 g mixer were normalized with the 35 g mixograph peaks. When flour and water were used, the mixing times for the 200 g mixer averaged 0.7, 1.2, and 1.6 min shorter than the 35 g mixograph, at 90, 104, and 118 rpm, respectively. Although both the 200 g mixer and the 35 g mixograph system look mechanically similar, they both have unique mechanical motion, speeds, and sample sizes. Their results may show similar trends, but their measured values are usually different. However, when other baking ingredients were included in the 200 g mixer at 90 rpm, the mixing times were within 0.2 min of the 35 g mixograph times for three of four flours.  相似文献

和面是小麦面条加工过程中重要的一道工序,主要依据人工经验判断和面终点,缺少基于客观分析的自动化评价方法。为了实现和面过程的自动化,该研究依据小麦面条和面过程中面絮颗粒宏观状态,通过面絮状态图像的数据分析,并且从面条质构、水分状态及分布、蛋白质分子特性及微观结构揭示和面阶段划分的依据。结果表明,和面过程可以划分为初始面粉(阶段1)、润湿黏连(阶段2)、聚集成形(阶段3)、破裂分散(阶段4)和稳定平衡(阶段5)5个阶段,阶段5占和面总时间的50%左右;从阶段2到稳定平衡阶段初期(阶段5-1),面片的硬度、弹性和咀嚼性逐渐增加并达到最大,在稳定平衡阶段中后期(阶段5-2、5-3),面片硬度等指标数值下降;低场核磁共振与核磁共振成像分析结果表明,阶段2的水分自由度高,和面过程加速了水分在固、液、气三相之间的交换,并在阶段5达到稳定;所有和面阶段中氢键、离子键的强度明显低于疏水相互作用的强度,游离巯基含量在阶段5-2、5-3逐渐降低至稳定,二硫键含量在此阶段逐渐增多并保持稳定,蛋白质实现充分交联,决定了面条微观结构和宏观状态。构建基于深度学习的Transfer-ResNet50网络模型,实现和面阶段面絮图像的自动识别,模型识别准确率达98.5%,具有良好的可靠性,可以实现和面终点的自动判断。综上所述,面絮宏观颗粒状态可以作为和面过程划分的可靠依据,深度学习也为小麦面条和面过程自动控制提供新的思路。  相似文献

Interest has been growing in whole grain products. However, information regarding the influence of the ultracentrifugal mill on whole grain flour quality has been limited. An experiment was conducted to produce whole wheat flour with hard red spring (HRS) wheat using an ultracentrifugal mill. This study determined the effect of centrifugal mill parameters as well as grain moisture (10–16%) on producing whole wheat flour and its final products. Mill parameters studied were rotor speed (6,000–15,000 rpm) and feed rate (12.5–44.5 g/min). Results showed that fine particle size (<150 µm) was favored by low seed moisture content (10–12%) and high rotor speed (12,000–15,000 rpm). Flour moisture content was positively related to seed moisture content. Wheat grain with low seed moisture content (10–12%) milled with high rotor speeds (12,000–15,000 rpm) produced desirable whole grain wheat flour quality, with 70–90% of fine particle size portion and low damaged starch (less than 11%). This whole wheat flour produced uniform and machinable dough that had low stickiness and formed bread with high loaf volume.  相似文献

The Rheo Extrusion Meter (REM) measures the time for vertical upward extrusion of wheat flour dough (subsequently referred to as extrusion time, ET) as a measure of its consistency. ET evidently increases with dough consistency. ETs are highly reproducible and sensitive to differences in dough moisture content. A single REM analysis takes 20 min, and the measured ET can be converted into the correct baking absorption at a given temperature. The heights of the extruded dough pieces are negatively correlated with straight‐dough bread loaf specific volume, both when comparing different flour samples and when adjusting moisture content of dough prepared from a given flour sample. The REM also allows determination of the consistency of complex wheat flour based systems and the impact of vital wheat gluten or ascorbic acid thereupon. Furthermore, in contrast to the farinograph, it detects the impact of endoxylanases hydrolyzing water‐extractable arabinoxylan on dough consistency.  相似文献

为揭示小麦粉面团形成过程水分状态和比例、面团结构的变化,以及这种变化与粉质仪和拉伸仪表征的质量特性之间的关系;认识面团形成过程表征筋力强弱的物质基础和变化机理。选用中筋(宁春4号)和强筋(师栾02-1)小麦品种为试验材料,利用低场核磁共振技术测定粉质仪和面过程、拉伸仪醒发拉伸过程不同时间点面团水分状态和比例的变化;利用红外显微成像技术分析面团形成过程不同取样点蛋白质和淀粉的分布及结构变化。结果表明,面粉原料中主要为弱结合水。面粉在粉质仪加水搅拌形成面团后,水分状态和比例发生显著变化,面团中的水可以分为强结合水(T_(21))、弱结合水(T_(22))和自由水(T_(23))。面团搅拌形成过程中,中筋小麦品种宁春4号面团中的强结合水比例显著降低;师栾02-1的强结合水的弛豫时间在和面终点消失,弱结合水的弛豫时间显著延长,而自由水的比例显著增加(P0.05)。强筋小麦粉强结合水的保持时间较长。拉伸过程加盐和不加盐对同一取样点、同一种水分状态之间的水分弛豫时间和比例无显著影响;宁春4号自由水的弛豫时间在加盐和不加盐处理时都显著缩短(P0.05)。湿面筋含量高、筋力较强面团的蛋白质网络结构致密。粉质仪和面过程强结合水和弱结合水弛豫时间和比例的变化,与面筋含量和强度有关。该结论可为面制品加工过程和面工艺选择与优化等方面提供一定的理论参考。  相似文献

Various whole‐kernel, milling, flour, dough, and breadmaking quality parameters were compared between hard red winter (HRW) and hard red spring (HRS) wheat. From the 50 quality parameters evaluated, values of only nine quality characteristics were found to be similar for both classes. These were test weight, grain moisture content, kernel size, polyphenol oxidase content, average gluten index, insoluble polymeric protein (%), free nonpolar lipids, loaf volume potential, and mixograph tolerance. Some of the quality characteristics that had significantly higher levels in HRS than in HRW wheat samples included grain protein content, grain hardness, most milling and flour quality measurements, most dough physicochemical properties, and most baking characteristics. When HRW and HRS wheat samples were grouped to be within the same wheat protein content range (11.4–15.8%), the average value of many grain and breadmaking quality characteristics were similar for both wheat classes but significant differences still existed. Values that were higher for HRW wheat flour were color b*, free polar lipids content, falling number, and farinograph tolerance. Values that were higher for HRS wheat flour were geometric mean diameter, quantity of insoluble polymeric proteins and gliadins, mixograph mix time, alveograph configuration ratio, dough weight, crumb grain score, and SDS sedimentation volume. This research showed that the grain and flour quality of HRS wheat generally exceeds that of HRW wheat whether or not samples are grouped to include a similar protein content range.  相似文献

This research was initiated to investigate associations between flour breadmaking traits and mixing and empirical dough rheological properties under thermal stress. Thirty hard spring wheat flour samples were analyzed by a Mixolab standard procedure. Mixolab profiles were divided into six different stages, and torque measurements of individual stages were modeled by nonlinear curve fitting using a compound of two solution searching procedures, multidimensional unconstrained nonlinear minimization and genetic algorithm. Mixing patterns followed exponential equations. Dough torque patterns under heat constraint, specifically dough thermal weakening and pasting profiles, were described by a sigmoid logistic equation as a function of time. Dough stability during heating appeared important for bread loaf volume increase from significant correlations between bread loaf volume and parameters generated from models of a dough thermal weakening stage. Multivariate continuum regression was employed to calibrate prediction models of baking traits using Mixolab parameters. Coefficients of determination estimated from prediction models and cross‐validation were greater than 0.98 for bake water absorption, mixing time, and bread loaf volume, indicating that the Mixolab parameters have a potential to enhance evaluation of flour breadmaking quality.  相似文献

The baking performance of a set of flours from 13 wheat cultivars was determined by means of two different microscale baking tests (10 g of flour each). In the micro‐rapid‐mix test the dough was mixed for a fixed time at a high speed, whereas the microbaking test used mixing to optimum dough consistency in a microfarinograph. Quality parameters such as sedimentation value, crude protein content, dough and gluten extension data, and microfarinograph data were also determined. Finally, quality‐related protein fractions (gliadins, glutenins, SDS‐soluble proteins, and glutenin macropolymer) were quantitated by extraction/HPLC methods with reversed‐phase and gel‐permeation columns. All quality parameters were correlated with the bread volumes of both baking tests. The results demonstrated that the microbaking test (adapted mixing time) was much more closely related to the quality parameters than the micro‐rapid‐mix test (fixed mixing time), which hardly showed any correlation. Among the standard quality parameters, only the crude protein content showed a medium correlation with the bread volume of the microbaking test (r = 0.71), whereas the contents of gliadins (r = 0.80), glutenins (r = 0.76), and glutenin macropolymer (r = 0.80) appeared to be suitable parameters to predict the baking performance of wheat flour. All other quality parameters were not or were only weakly correlated and unsuitable for predicting baking performance.  相似文献

Two field trials using four New Zealand wheat cultivars were undertaken to observe the effects of nitrogen and sulfur fertilization on protein composition, mixing requirements, and dough strength and to compare the results with that observed with a single cultivar, Otane. The results confirmed that adequate sulfur fertilization was necessary to ensure lower dough mixing requirements. The existence of a nexus between mixing requirements and dough strength was confirmed and genotype has significant effects on it. Variation in the content of HMW‐GS in the protein corresponded to changes in dough mixing requirement of Otane. Across the four cultivars, dough mixing requirements (mechanical dough development work input and mixograph development time) and dough strength (Extensigraph resistance to extension) depended on different aspects of protein composition. As the content of polymeric proteins increased, MDD work input increased, but mixograph development time decreased, while the effect on Rmax was small. Rmax, however, was more affected by either the content of small monomerics in the flour or the ratio between HMW‐GS peak area to total gliadin peak area. The ratio of MDD work input to Rmax was largely explained by the gliadin content of the flour. Thus, depending on the genetic background, it should be possible to adjust dough mixing requirements by modifying overall HMW‐GS, LMW‐GS, or gliadin content while maintaining dough strength.  相似文献

Dough rheological characteristics obtained by alveograph testing, such as extensibility and resistance to extension, are important traits for determination of wheat and flour quality. A challenging issue that faces wheat breeding programs and some wheat research projects is the relatively large flour sample size of 250 g required for the standard alveograph method (AACCI Approved Method 54‐30.02). A modified dough preparation procedure for a small flour sample size was developed for the alveograph test method. A dough was prepared by mixing 80 g of flour with 60% water absorption (2.5% salt solution) for 4 min in a 100 g pin mixer; it was then sheeted and cut into three patties of defined thickness. Data generated by the modified dough preparation method were significantly correlated with the results from the approved alveograph method. The correlation coefficients (r) for each of six alveograph dough characteristics of 40 different advanced breeding lines and wheat varieties were 0.92 for P (mm H2O), 0.73 for L (mm), 0.83 for W (10–4 J), 0.90 for P/L, 0.90 for le (%), and 0.76 for G. The modified dough preparation was easier and more convenient than the approved method, and test time for the modified dough preparation was shorter by 20–25 min. This modified dough preparation procedure for the alveograph may be useful for wheat breeding programs as well as an alternative to the approved alveograph method for milling and baking industries and wheat quality research.  相似文献

Gluten, starch, lipids, and water-soluble material were separated from seven wheat samples with a range of protein contents and breadmaking quality. The isolated glutens were further partitioned into gliadin- and gluteninrich fractions using pH precipitation. Protein content and glutenin-togliadin ratio were systematically altered by blending these fractions into the original flours in calculated amounts. Mixing properties, extension-tester parameters, and baking performance of composite flours were determined using small-scale techniques. Results of dough testing with blends of constant glutenin-to-gliadin ratio showed increases in the mixing time, mixograph peak resistance, maximum resistance to extension, extensibility, and loaf volume as the protein content increased. At constant protein content, increases in glutenin-to-gliadin ratio were associated with increases in mixing time, mixograph peak resistance, maximum resistance to extension, and loaf volume, and with decreases in extensibility. Thus, total protein content and glutenin-to-gliadin ratio independently affected dough and baking properties. The results have allowed the separation of the effects of flour protein quantity and composition on breadmaking properties.  相似文献

A modified AACC 45‐g flour cookie procedure using asymmetrical centrifuge mixing as a replacement for conventional mixing has been developed. Ingredients are added to a pin cup in the same proportion as in the Approved Method 10‐50D (AACC 2000) sugar‐snap cookie test and mixed in a single step for 15 sec at 2,500 rpm. The dough is then processed and the resulting cookies are scored according to the AACC Approved Method 10–52 40‐g flour micro cookie test method. Cookies produced from a control cookie flour and four commercial soft wheat flours with the new mixing method did not show the characteristic surface cracking patterns normally obtained with conventional three‐stage mixing. However, with the exception of one spread value, no significant differences in spread, thickness, or the ratio of spread to thickness were evident when results were compared with those obtained with the AACC Approved Method 10‐50D 225‐g flour test method using a Hobart mixer equipped with a paddle. Cookies produced from two sets of advanced soft white spring wheat breeder lines, including control cultivars, using the asymmetrical centrifuge mixing procedure were also very comparable in spread, thickness, and ratio compared with those produced using 225 g of flour in the AACC Approved Method. Reproducibility of test results for all cookie parameters for both commercial and advanced plant breeder samples were comparable to the AACC Approved Method 10‐50D 225‐g flour test method. The very short mixing time and the ability to quickly clean or use multiple pin cups should allow very high throughput of flour samples relative to the use of conventional mixers for cookie testing.  相似文献

The impact of varying levels of endoxylanase activity in wheat flour on arabinoxylan (AX) in mixed and rested dough was studied using eight industrially milled wheat flour fractions with varying endoxylanase activity levels. Analysis of the levels of reducing end xylose (RX) and solubilized AX (S-AX) formed during mixing and resting and their correlation with the endoxylanase activity in the flour milling fractions showed that solubilization of AX during the mixing phase is mainly due to mechanical forces, while solubilization of AX during resting is caused by endoxylanase activity. Moreover, solubilization of AX during the dough resting phase is more outspoken than that during the mixing phase. Besides endoxylanase activity, there were significant xylosidase and arabinofuranosidase activities during the dough resting phase. The results indicate that wheat flour-associated endoxylanases can alter part of the AX in dough, thereby changing their functionality in bread making and potentially affecting dough and end product properties.  相似文献
