This study evaluated the physicochemical properties of high‐temperature, single‐pass dried rough rice. Pureline cultivars Wells (long grain) and Jupiter (medium grain) and hybrid cultivar CL XL729 (long grain), at initial moisture contents of 17.9–18.1% were dried in a single pass to approximately 12.5% moisture content with drying air temperatures of 60, 70, and 80°C and relative humidities of 13–83%. Immediately after drying, the samples were tempered for 1 h at the drying air temperatures in sealed plastic bags. Color, degree of milling, pasting viscosity, and thermal properties of the milled rice were evaluated. Results showed that color, degree of milling, and thermal properties were not affected by drying treatments. However, peak and final viscosities increased with increasing drying air temperatures in all three cultivars.  相似文献

Head rice yield (HRY) is the primary parameter used to quantify rice milling quality. However, HRY is affected by the degree of milling (DOM) and thus HRY may not be comparable between different lots if the DOM is different. The objective of this study was to develop a method by which HRY values can be adjusted for varying DOM values when measured by surface lipid content (SLC). Seventeen rough rice lots including long‐grain and medium‐grain cultivars and hybrids were harvested from two 2003 and five 2004 locations. Duplicate subsamples of each lot were milled in a McGill No. 2 laboratory mill for 10, 15, 20, or 40 sec after zero, one, two, three, and six months of storage. HRY and SLC were measured. The average HRY versus SLC slope across all milling duration data sets was 9.4. As such, it is suggested that, when milling with a McGill No. 2 laboratory mill, the HRY of a rice lot can be adjusted by a factor of 9.4 percentage points for every percentage point difference between the rice lot SLC and a specified SLC.  相似文献

Fissuring caused by rapid moisture adsorption generates broken kernels upon milling; brokens are often ground to flour. The recent increase in demand for rice flour has promoted interest in brokens. This study investigated the physical and functional characteristics of brokens resulting from milling lots with various levels of moisture adsorption‐induced fissuring. Two long‐grain (LG) cultivars and one medium‐grain (MG) cultivar were conditioned to five initial moisture contents (IMCs), rewetted, and then reconditioned to 12% moisture content. Brown rice fissure enumeration and milling analyses as well as size distribution and functionality analyses of brokens were conducted. As IMC decreased, the percentage of fissured kernels increased and, consequently, the amount of brokens generated increased. Although the number of fissures/kernel also increased with decreasing IMC, the mass distribution of the resultant brokens was not affected by IMC. Across all IMC levels, the mass percentage of the medium‐sized brokens was greatest for the LG cultivars, whereas that of the large‐sized brokens was greatest for the MG cultivar. Regardless of IMC, peak, setback, and final viscosities were greatest for head rice and decreased significantly with decreasing size of brokens. Thus, brokens of different sizes have different functional properties and, hence, may be fractionated for different end‐use applications.  相似文献

Germinated brown rice is considered a more nutritious and palatable cooked product than conventional brown rice. However, germination usually decreases rice milling yield and alters some physicochemical properties. Parboiling is commonly used to increase milling yield and retain nutrients, but it also changes rice color and texture. The objective of this study was to investigate the effect of parboiling on milling, physicochemical, and textural properties of a medium‐grain and a long‐grain rice after germination at varying durations. Germinated rice samples of three germination durations were prepared with one germination time before the optimum time at which 70% of rice revealed hull protrusion, the optimum time, and one time after. Germinated rice was then immediately parboiled at 120°C for 20 min and was then immediately dried. The milling, physicochemical, and textural properties of parboiled germinated rice from both cultivars were determined. Parboiling significantly decreased the percentage of brokens, whiteness, and the apparent amylose content and increased γ‐aminobutyric acid content (GABA) in the nongerminated rice and rice at the first germination duration for both cultivars. Parboiling reduced pasting viscosities for both cultivars, but Jupiter still exhibited higher pasting viscosities than Wells. Cooked parboiled germinated rice was overall softer than nonparboiled rice because of kernel splitting, but Wells remained harder and less sticky than Jupiter. In conclusion, it is beneficial to combine parboiling with germination to enhance nutritional values and improve milling properties without affecting textural properties for both rice cultivars.  相似文献

The objective for this study was to investigate the effectiveness of scaled‐up infrared (IR) heating followed by tempering steps to dry freshly harvested rough rice. An industrial‐type, pilot‐scale, IR heating system designed to dry rough rice was used in this study. The heating zone of the equipment had catalytic IR emitters that provided heat energy to the sample as it was conveyed on a vibrating belt. The sample comprised freshly harvested rough rice of long‐grain pureline (Cheniere), long‐grain hybrid (6XP 756), and medium‐grain (CL 271) cultivars at initial moisture contents of 23, 23.5, and 24% wb, respectively. Samples at a loading rate of 1.61 kg/m2 were heated with IR of radiation intensity 5.55 kW/m2 for 30, 50, 90, and 180 s followed by tempering at 60°C for 4 h, at a product‐to‐emitter‐gap size of 450 mm, in one‐ and two‐pass drying operations. Control samples were gently natural air dried in an equilibrium moisture content chamber set at relative humidity of 65% and temperature of 26°C to moisture content of 12.5% wb. The effects of IR treatments followed by tempering on percentage points of moisture removed, head rice yield, energy use, rice color, and pasting characteristics were evaluated. For all cultivars, percentage point moisture removed increased with increase in IR drying duration. For all rice cultivars, one‐pass IR treatments for 180 s resulted in head rice yield significantly lower than that of rice dried with natural air in the controlled‐environment conditions (P < 0.05). Energy required to dry rice increased with increase in drying duration. Viscosity values of all the experimental samples were significantly greater (P value < 0.05) than that of the control samples for all the cultivars, except those treated with IR for 180 s. There was a significant difference (P < 0.05) in the color index (ΔE ) of treated milled samples and the controls. In conclusion, the study provided information crucial to understanding the effects of scaled‐up radiant heating and tempering of rough rice on drying rates and rice quality for long‐grain pureline, long‐grain hybrid, and medium‐grain rice cultivars.  相似文献

Germinated brown rice is popular in Asia for its increased γ‐aminobutyric acid (GABA) content and sweeter and softer texture compared with conventional brown rice. However, most studies investigated germinated rice properties on medium‐grain or aromatic rice. The objective of this study was to compare differences between a medium‐grain (Jupiter) and a long‐grain (Wells) rice under similar germination conditions on their milling, physicochemical, and textural properties over the course of germination. Rough rice was soaked in water at 25°C for 12 h and then incubated at 30–34°C for four germination durations. Wells had a higher breakage percentage and a greater weight decrease than Jupiter during germination. Wells had a significantly lower GABA content before germination and at the first two germination durations than Jupiter, but the GABA content in Wells significantly increased at the third germination duration to become significantly higher than that of Jupiter. There were no significant changes in gelatinization temperatures and pasting properties of germinated rice from both cultivars at different germination durations. The cooked rice hardness from Wells decreased at the longest germination duration, whereas Jupiter showed a more significant decrease in cooked rice stickiness from germination. The results demonstrate that the impacts of germination on physical, chemical, and textural properties of rice were affected by grain type and germination duration.  相似文献

Rice grain breakage during milling is a problem in many parts of Asia. It has been suggested that nitrogen (N) fertilizer can improve the milling quality of rice. Therefore, this study investigates effects of N fertilization on grain N concentration, endosperm storage protein distribution, and milling quality of rice. Four Thai extra long grain commercial rice cultivars (KDML105, KLG1, PTT1, and CNT1) were grown at Chiang Mai University in the wet season of 2001 with 0 or 120 kg of N/ha at flowering. Anatomical sections showed that there was more storage protein accumulated in the lateral regions of polished grain of high N concentration than in grain of low N concentration. Percent (%) unbroken rice was positively correlated with relative abundance of storage protein in the lateral region of the endosperm in all cultivars. Applying N increased head rice N concentration in all cultivars, whereas % unbroken rice was increased in KLG1 and CNT1. KDML105 cultivar, on the other hand, already had high % unbroken rice and more abundant storage protein in the lateral region with the grain of low N concentration. It is hypothesized that high density of storage protein in the lateral region of the endosperm provides resilience and lessens grain breakage during milling. The additional protein may increase hardness in rice grains and thus could make the rice more resistant to breakage during milling. Furthermore, N fertilization may enhance the nutritional quality of rice grain by increasing the glutelin content, which is rich in lysine.  相似文献

During storage, the milling, physicochemical properties, and eating quality of rice change, which is generally termed “aging.” Aged rice is preferred by processors because of better processing characteristics, and therefore there are attempts to develop accelerated aging processes. In this study, the effects of various heat treatments and their influences on the milling, physicochemical, and cooking properties of two long‐grain rice cultivars during storage were investigated with a randomized complete block design with an 8 × 5 × 2 full‐factorial treatment design. Two long‐grain rice cultivars, Wells and XP723, were treated with eight different heat treatments, including two levels of UV irradiation, two levels of autoclaving, three levels of convection oven heating, and one control, and then stored for 180 days at room temperature. The heat treatments significantly influenced all properties, including head rice yield (HRY), surface lipid content, peak gelatinization temperature, pasting properties, and cooked rice texture. All properties except HRY exhibited a significant two‐way interaction of cultivar and heat treatment. The severe autoclaving treatment resulted in rice of significantly different protein compositions when compared with the control. Storage impacted all properties except HRY and peak gelatinization temperature. Autoclaving (particularly severe autoclaving) produced samples with more distinct characteristics for most properties. Cooked rice hardness and stickiness exhibited not only significant main effects but also significant two‐ and three‐factor interactions.  相似文献

The expansion of value‐added uses for rice has created a demand for quantitative models of functional changes during postharvest handling. Consequently, this study evaluated the effects of postharvest parameters on the functional properties of long‐grain (cvs. Cypress and Kaybonnet) and medium‐grain (cv. Bengal) rice. The experimental treatments included rough rice drying conditions (low vs. high temperature drying), storage moisture content (10, 12, and 14%), storage temperature (4, 21, and 38°C), and storage duration (up to 36 weeks). Milling, cooking, and amylograph pasting properties were analyzed. Polynomial models (up to third‐order) were developed to describe the effects of postharvest factors on the functional properties. Drying treatments, storage moisture content, and storage duration affected (P < 0.05) all of the functional properties. Storage temperature influenced (P < 0.01) cooking and pasting properties, but not milling properties. Overall, there were significant interactions among the postharvest parameters. Additionally, these factors were related to the functional properties by higher‐order relationships.  相似文献

Rice bran contains high amounts of beneficial antioxidants including tocopherols, tocotrienols, and oryzanols. Current rice milling technology produces rice bran from different layers of the kernel caryopsis. Under current practices, these layers are combined and then steam‐extruded to form a stabilized rice bran pellet that is storage‐safe prior to oil extraction. Each of these rice bran intermediates can vary in antioxidant content. The objective of this study was to investigate the changes in selected antioxidants in rice bran from both long‐ and medium‐grain rice during commercial milling and bran processing. Rice bran collected from various milling breaks of a commercial system had varying antioxidant levels. Bran collected after milling break 2 had the highest levels of tocopherol and tocotrienol. Oryzanol concentration was significantly higher in outer bran layers. Results also indicate that the long‐grain rice bran averaged ≈15% more antioxidants than the medium‐grain rice bran.  相似文献

Elevated nighttime air temperatures (NTATs) occurring during critical grain‐filling stages affected rice physicochemical properties, which impacted functional quality. Six cultivars were grown at multiple field locations from northern to southern Arkansas during 2007 to 2010. Nighttime temperatures were recorded throughout production at each of the locations, and 95th percentiles of NTATs were calculated for each cultivar's reproductive (R) stages. Amylose content and crude protein content decreased linearly, whereas total lipid content increased linearly, with increasing NTATs occurring during the grain‐filling stages (R6–R8). Effects of NTAT on proximate composition influenced functional properties. Peak viscosities increased linearly as NTAT increased, whereas setback viscosities decreased. Setback viscosities were linearly correlated to NTATs for medium‐grain cultivars, but correlations were quadratic for the long‐grain cultivars. Gelatinization temperatures increased linearly with increasing NTAT. The R stages in which correlations were strongest varied by cultivar and by property, hypothesized to result from differences in kernel development patterns among cultivars. These findings have significant implications for rice production scientists and processors, in that understanding the effects of NTAT on physicochemical and functional properties may help explain and reduce quality variation.  相似文献

The surface lipid content (SLC) of rice is often used to objectively measure the degree to which bran has been removed from rice kernels, commonly known as degree of milling (DOM). This study was conducted to evaluate new, rapid extraction technology for potential timesaving measurements of SLC of milled rice. The SLC of two long‐grain rice cultivars, Cypress and Drew, were determined using three extraction systems: Soxtec, accelerated solvent extraction (ASE), and supercritical fluid extraction (SFE). Before milling, rough rice was separated into three thickness fractions (<1.84, 1.84–1.98, and >1.98 mm) and samples from each thickness fraction were milled for durations of 10, 20, and 30 sec. Head rice collected from each milling duration was extracted using each of the three methods. Results showed that regardless of the extraction method, thinner kernels had lower SLC measurements than thicker fractions. In most cases, both the ASE and Soxtec produced SLC greater than that of the SFE. The ASE also showed SLC measurements at least as great as those from Soxtec extraction, suggesting that the ASE is as thorough in extracting lipids as commonly used methods.  相似文献

为明确未来气候变暖对双季优质稻产量和稻米品质的影响,采用开放式主动增温系统,早稻以金早47(常规籼稻)、两优287(杂交籼稻),晚稻以象牙香珍(常规籼稻)、万象优华占(杂交籼稻)和甬优5550(籼粳杂交稻)为试验材料,研究花后增温对双季优质稻产量和稻米品质的影响。结果表明,花后増温(早稻1.29℃,晚稻1.73℃)对早晚稻产量均无显著影响。增温条件下,早稻加工品质和垩白粒率均无显著变化,垩白度平均提高了16.0%;晚稻糙米率、整精米率、垩白粒率和垩白度分别平均提高了1.8%、3.5%、30.3%和27.2%;早晚稻蛋白质含量平均提高了6.27%,但直链淀粉含量平均降低了3.53%,淀粉颗粒的平均粒径提高了0.09 μm。增温对稻米RVA谱特征值的影响在季别和品种间存在较大变异。综上,花后增温对早晚稻产量无显著影响,有利于改善稻米的加工品质和营养品质,但降低了稻米的外观品质。本研究结果为未来气候变暖下双季优质稻的优质丰产栽培提供了理论依据。  相似文献

不同生育期类型粳稻品种垩白性状对施氮水平的响应   总被引:3,自引:0,他引:3  
以长江中下游地区5种生育类型中有代表性的56个粳稻品种为供试材料,研究了4种施氮水平下粳稻品种垩白性状的变化规律,并对其垩白变化的氮素敏感性及其品种类型特征进行了聚类分析和筛选评价。结果表明,在施N 0~300 kg/hm2范围内,随着氮肥水平的增加,各品种类型的垩白度呈现不同程度的上升趋势,但垩白米率的变化则因品种的生育期类型不同而异。其中,中粳品种在高氮水平下的垩白米率有所增加,而晚粳品种则有所下降。根据粳稻垩白度对氮肥响应的敏感程度,供试品种可分为迟钝型、中间型和敏感型3种;并据此推荐了利于生产实践中改善外观品质的两类品种:一类是垩白度较低且在各氮肥水平下表现比较稳定的品种,另一类在高氮肥水平下垩白度较高,但其对氮肥响应较为敏感,通过适当减少施氮量也能获得较好外观品质。  相似文献

The influence of amylose content, cooking, and storage on starch structure, thermal behaviors, pasting properties, and rapidly digestible starch (RDS), slowly digestible starch (SDS), and resistant starch (RS) in different commercial rice cultivars was investigated. Long grain rice with high‐amylose content had a higher gelatinization temperature and a lower gelatinization enthalpy than the other rice cultivars with intermediate amylose content (Arborio and Calrose) and waxy type (glutinous). The intensity ratio of 1047/1022 cm–1 determined by Fourier Transform Infrared (FT‐IR), which indicated the ordered structure in starch granules, was the highest in glutinous and the lowest in long grain. Results from Rapid ViscoAnalyser (RVA) showed that the rice cultivar with higher amylose content had lower peak viscosity and breakdown, but higher pasting temperature, setback, and final viscosity. The RDS content was 28.1, 38.6, 41.5, and 57.5% in long grain, Arborio, Calrose, and glutinous rice, respectively, which was inversely related to amylose content. However, the SDS and RS contents were positively correlated with amylose content. During storage of cooked rice, long grain showed a continuous increase in pasting viscosity, while glutinous exhibited the sharp cold‐water swelling peak. The retrogradation rate was greater in rice cultivars with high amylose content. The ratio of 1047/1022 cm–1 was substantially decreased by cooking and then increased during storage of cooked rice due to the crystalline structure, newly formed by retrogradation. Storage of cooked rice decreased RDS content and increased SDS content in all rice cultivars. However, no increase in RS content during storage was observed. The enthalpy for retrogradation and the intensity ratio 1047/1022 cm–1 during storage were correlated negatively with RDS and positively with SDS (P ≤ 0.01).  相似文献

以武育粳3号为材料,设置低、中、高3个氮素穗肥处理,开放环境下使用加热器进行日间增温处理,研究灌浆结实期不同施氮水平下稻米品质对日间增温响应的差异。结果表明: 1)灌浆结实期日间增温使各氮肥处理精米率和整精米率下降,垩白粒率和垩白度增加,糙米率和子粒长宽比各氮肥处理变化不一,低氮和中氮处理糙米率和子粒长宽比减小,高氮处理则变大;加工品质和外观品质各指标变化幅度均以中氮处理最大,减少或增加氮肥施用量均可以有效地缓解高温对稻米加工品质和外观品质的负面效应,尤以增施氮肥效果较佳。2)增温条件下,减少和增加氮肥施用量均能降低稻米直链淀粉含量,其中增施氮肥降低幅度较大;增温后各氮肥处理蛋白含量均增加,增加幅度与施氮量呈负相关关系,高温高氮处理直链淀粉含量最低,蛋白含量最高。3)增温后各穗肥处理结实率和千粒重均下降,以中氮处理下降最显著;减少和增加穗氮施用量均能有效地缓解高温对水稻产量的影响,其中也以增施氮肥相对较好。综上所述,适当地增加氮肥施用量能较有效地缓解高温对稻米品质和产量的负面影响。  相似文献

Dehulled glutinous black rice (cv. Kam Doi Saket) was abrasively milled (0–60 s) to make a degree of milling (DOM) curve. The curve showed a nonlinear relationship between milling time and DOM. The slope sharply increased in the first 20 s; after this point, the increase was moderate. The redness of grain and flour surprisingly increased after milling, and the highest value was found at 20 s of milling. Protein, fat, and crude fiber were not uniformly distributed in the dehulled rice kernel. The rice retained only 76.95, 32.79, 20.24, and 36.57% of protein, fat, crude fiber, and ash, respectively, after milling for 60 s. Anthocyanins, γ‐oryzanol, and α‐tocopherol decreased by 74.49, 55.35, and 70.36%, respectively, after 10 s of milling. The scavenging activity decreased sharply when milling was carried out for longer than 30 s. The methanolic extract from rice milled for 60 s showed the lowest activity, which was 21.1 times lower than that of the dehulled rice extract. It was concluded that milling for 20 s was sufficient to remove most of the bran layer of the black rice sample, but 10 s of milling retained higher contents of nutritional components and rice antioxidants.  相似文献

Whole grain wheat products are a growing portion of the foods marketed in North America, yet few standard methods exist to evaluate whole grain wheat flour. This study evaluated two flour milling systems to produce whole grain soft wheat flour for a wire‐cut cookie, a standard soft wheat product. A short‐flow experimental milling system combined with bran grinding in a Quadro Comil produced a whole grain soft wheat flour that made larger diameter wire‐cut cookies than whole grain flour from a long‐flow experimental milling system. Average cookie diameter of samples milled on the short‐flow mill was greater than samples milled on the long‐flow system by 1 cm/two cookies (standard error 0.09 cm). The long‐flow milling system resulted in more starch damage in the flour milling than did the short‐flow system. The short‐flow milling system produced flours that were useful for discriminating among wheat cultivars and is an accessible tool for evaluating whole grain soft wheat quality.  相似文献

The structural features of rice starch that may contribute to differences in the functionality of three long‐grain rice cultivars were studied. Dried rough rice samples of cultivars Cypress, Drew, and Wells were analyzed for milling quality, grain physical attributes, and starch structures and physicochemical properties. Drew was lower in head rice yield and translucency and higher in percentage of chalky grains compared with Cypress and Wells. Apparent amylose content (21.3–23.1%), crude protein (8.3–8.6%), and crude fat (0.48–0.64%) of milled rice flours were comparable, but pasting properties of rice flours as measured by viscoamylography, as well as starch iodine affinity and thermal properties determined by differential scanning calorimetry were different for the three cultivars. Drew had higher peak, hot paste, and breakdown viscosities, and gelatinization temperature and enthalpy. Molecular size distribution of starch fractions determined by high‐performance size‐exclusion chromatography showed that the three samples were similar in amylose content (AM) (20.0–21.8%) but differed in amylopectin (AP) (64.7–68.3%) and intermediate material (IM) (10.9–13.5%). Drew had highest AP and lowest IM contents, whereas Cypress had the lowest AP and highest IM contents. High‐performance anion‐exchange chromatography of isoamylase‐debranched starch indicated that the AP of Drew was lower in A and B1 chains but higher in B2, B3, and longer chains.  相似文献

Grain morphological characteristics were thought to play a significant role in genotypic variation in Fe concentration in white rice. Comparing 17 rice cultivars representing six major grain morphological categories, the present study systematically investigated the relationship between grain morphology, the degree of milling (DOM), and the loss of Fe during the polishing process. The relative importance of key morphological parameters in this relationship was also investigated. The grain morphological characteristics of different rice cultivars significantly affected the degree of Fe loss during polishing to produce white rice. This variation in Fe loss from polishing among the six categories of rice cultivars is mainly due to their difference in DOM (r = 0.73**) and this loss in Fe was the primary factor determining the level of Fe concentration in the white rice. Among the morphological parameters investigated, grain length and length-to-width ratios played the most significant role in determining the DOM, which suggests that these two grain attributes may serve as the initial screening parameters when selecting cultivars for high Fe white rice production. Degree of Fe loss was lowest in short-bold grain shape category compared with the other grain shapes.  相似文献
