Approximately 4,400 crossbred lambs from Southdown sires and Romney ewes were slaughtered at approximately 18, 23, and 28 wk of age over a 16-yr period. Live weights, carcass measurements, and chemical percentages were analyzed to estimate genetic and phenotypic parameters. Heritabilities of postweaning weights and gains were about .20. Heritabilities of fat and water percentages were about .35 adjusted for age. Heritability of kidney fat percentage was .53. Heritabilities of fat depth and muscle measurements ranged from .21 to .37. Crutch depth (h2 = .73) and cannon bone length (h2 = .74) were the most highly heritable carcass measurements. The genetic correlation between carcass fat and fat-free weight was .47 when lambs were slaughtered at a constant age. Fat-free weight was nearly uncorrelated with percentages of fat, water, and protein when lambs were slaughtered at the same age. Carcass measurements increased accuracy of selection for fat-free weight at a constant age very little compared with using only carcass weight. However, this does not mean that additional measurements are useless. The addition of carcass measurements to the selection criteria would result in correlated responses in chemical composition that more closely resembled direct selection for fat-free weight. Carcass weight would be of little value when used by itself to reduce fat weight adjusted for carcass weight. Direct measurement of carcass composition resulted in 1.6 to 2.6 times more predicted response for reduced fat weight than any combination of carcass weight and one fat depth measurement. 相似文献

The rate of gain, carcass measurements and three muscles were evaluated in 65 crossbred boars representing 13 litters that were allotted at 4 wk of age to slaughter weight and treatment groups as follows: 1) 105 kg, castrated; 2) 105 kg, intact; 3) 118 kg, intact; 4) 132 kg, intact and 5) 145 kg, intact. One barrow and four boars within a litter constituted a replicate and each replicate was penned separately. The growth rate of all boars to 105 kg constituted one group and was compared with the growth rate of barrows to 105 kg live body weight. Average daily gain from 4 wk until 105 kg did not differ significantly between boars and barrows. Growth rate of the boars continued at an increasing rate until they reached 87.3 kg live weight, while maximum daily gain of barrows occurred at 76.3 kg live weight or 11 kg less than that of boars. At 105 kg, boars had 31.3% less 10th rib backfat thickness and 2.9% greater carcass length than barrows, but longissimus muscle area did not differ. Barrows had greater backfat thickness at 105 kg than 145-kg boars. As live weight increased from 105 to 145 kg, carcass length, 10th rib backfat thickness and longissimus area of boars increased (P less than .01) linearly. Fat-free muscle weights of the brachialis (BR), semitendinosus (ST) and longissimus (L) did not differ between boars and barrows at 105 kg. Boars at 105 kg had 1.3 and 1.7% more moisture in the BR and ST, respectively, than barrows. Percentage protein, total intramuscular fat and fiber diameter in the BR, ST and L muscles did not differ between boars and barrows at 105 kg or with increasing live weight in boars. Growth and carcass merit of Dorset-(DO) and Dorper-sired (DP) lambs were compared over 3 yr in matings with 50% Dorset, 25% Rambouillet, 25% Finnsheep ewes. The DP were slightly lighter (P = 0.09) at birth than the DO lambs. In the first year of the study, DP lambs produced by AI using imported South African sires were heavier than DO lambs when weaned at 60 d of age (21.7 vs. 19.5 kg; P = 0.05). In yr 2 and 3, however, offspring of natural-service Dorper sires produced in the U.S. did not differ in weaning weight from DO lambs (16.9 vs. 17.8 kg; P = 0.02 for breed x year interaction). Lamb survival was also affected by breed x year interaction (P = 0.04). In 2000 and 2001, with 12 to 16% triplet or larger litters, mortality was higher for DP lambs (14.9 vs. 7.7%; P = 0.12). However, in 2002, with approximately 33% triplet or larger litters and with higher mortality levels in all birth types, DP lambs had fewer death losses than did DO lambs (23.2 vs. 36.1%; P = 0.11). No differences between DO and DP lambs were observed in postweaning gain during summer grazing or in drylot in autumn. At chilled carcass weights of approximately 25 kg, DP lambs were somewhat fatter than DO lambs, with greater body wall thickness (P < 0.01; 22 vs. 19 mm) and slightly greater backfat thickness (P = 0.15; 6.4 vs. 5.5 mm) and yield grades (P = 0.15; 2.9 vs. 2.6). The DP lambs also had more desirable leg scores (P = 0.01; 11.6 vs. 10.9) and slightly larger LM area (P = 0.13; 14.1 vs. 13.5 mm2) than did DO lambs, confirming acceptable muscling and conformation in carcasses from Dorper-sired lambs. However, differences were not observed in the percentage of carcass weight in the leg or loin, or in the lean:bone ratio in the dissected leg. Ultrasonic measurements of backfat thickness and LM area taken in live lambs before slaughter were positively associated with direct measures on chilled carcasses with correlations of 0.77 for backfat thickness and 0.51 for LM area. 相似文献

The effect of feeding system and sex on intake, growth and carcass and meat characteristics of Assaf fattening lambs was studied. Twenty four weaned Assaf lambs, half males and half females were used. After an adaptation period, lambs were randomly assigned to one of the two feeding systems studied. Control lambs received ad libitum commercial concentrate (70% barley, 22% soybean meal, 4.8% wheat, 0.5% bicarbonate, 2.7% mineral–vitamin premix) and barley straw. Free Choice lambs had ad libitum and separate access to whole barley grain and a protein supplement (73.3% soyabean meal, 16% wheat, 1.7% bicarbonate, 9% mineral–vitamin premix). Lambs were slaughtered at 25 kg LBW. Feed intake was not significantly affected by sex (P > 0.05) but Free Choice lambs showed higher dry mater intake than the Control lambs. Nevertheless, only males from the Free Choice group showed an improvement in feed efficiency rate (P < 0.05) and average daily gain (P < 0.01) relating to the Control lambs. Neither feeding system nor feeding system × sex interaction significantly affected non-carcass weight, fat depots, cold carcass weight, dressing percentage, main proportions of commercial cuts and meat characteristics (P < 0.05). As it was expected, female lambs showed a lower average daily gain and a higher feed conversion efficiency than male lambs (P < 0.001) which was related to a greater fat deposition. Meat characteristics were unaffected by sex, with the exception of longissimus lumborum fat content, which was higher in female lambs.The present results suggest that Free Choice feeding system might be suitable for intensively reared male lambs since improvements in daily weight gain and feed conversion rate were achieved, with no adverse effect on carcass and meat quality. Despite the selected diet of both, males and females, did not differ in the crude protein content, the use of Free Choice feeding system for female lambs did not improve performance compared to the Control group. 相似文献

Two experiments were conducted to determine the effects of sex on carcass traits and cooked beef steak palatability. In Exp. 1, steers (n = 99), heifers (n = 51), and intravaginally spayed heifers (n = 46) were fed a high-energy diet for 161 d. No implants were administered, and heifers were not fed melengestrol acetate to suppress estrus. In Exp. 2, 60 steers and 60 intact heifers from the same ranch source used in Exp. 1 were fed in 2 locations (sites 1 and 2). All management factors were equal across experiments except that intact heifers were fed melengestrol acetate to suppress estrus in Exp. 2. Steers in Exp. 1 were 25 kg heavier (P < 0.01) in HCW than heifers at comparable (P = 0.39) carcass fat thickness. Spayed heifers (Exp. 1) had a 5.7% smaller (P < 0.05) LM area compared with steers and intact heifers, which were similar. In Exp. 2, there was no difference (P = 0.2) in carcass weight, and heifers had greater (P < 0.01) 12th rib fat thickness compared with steers. Calculated yield grades were similar (P = 0.21) among treatments in Exp. 1 and tended (P = 0.08) to be greater for heifers compared with steers in Exp. 2. In Exp. 1, USDA quality grades and marbling scores were lower (P < 0.01) for steers compared with intact and spayed heifers, which were similar. The effects of sex on tenderness were examined at a common level of fat-thickness and marbling by covariate analysis. Steaks from steers, compared with those from nonimplanted, intact heifers, in the 2 experiments combined were: (a) superior (P < 0.05) in 2 of 9 palatability assessments when subcutaneous fat thickness (at the 12th rib) was adjusted to a common level, and (b) superior (P < 0.05) in 6 of 9 palatability assessments when marbling score was adjusted to a common level. In Exp. 1, steaks from nonimplanted steers compared with those from nonimplanted spayed heifers were: (a) superior (P < 0.05) in 0 of 8 palatability assessments when subcutaneous fat thickness (at the 12th rib) was adjusted to a common level, and (b) superior (P < 0.05) in 3 of 8 palatability assessments when marbling score was adjusted to a common level. These findings suggest that sex should be added to the list of antemortem factors contributing to variation in cooked beef steak tenderness. However, more research is needed to precisely identify those factors contributing to the lower tenderness observed for steaks from heifer carcasses. 相似文献

The effects of bovine growth hormone (GH) and thyroxine (T4) on growth and carcass characteristics were assessed in Dorset ram lambs. Lambs in four groups (n = 10/group) were treated for 30 d as follows: controls, 3.33 mg (6 IU) GH/d (s.c.); 5-mg T4 implant (s.c.) on d 1 and a 10-mg T4 implant 21 d later; GH + T4. Blood samples were collected at 3-d intervals for analysis of GH, T4, triiodothyronine, somatomedin-C and testosterone concentrations. Six lambs/group were slaughtered for carcass measurements and composition. Daily GH injections increased (P less than .005) baseline plasma GH levels 10-fold, whereas plasma T4 concentrations were increased 10% (P less than .10) by the implants. Somatomedin-C increased with time in all groups, but the increments from d 0 to d 30 were higher (P less than .05) with GH treatment. Average daily gain (mean = 352 g/d), feed consumption and feed to gain ratio were not affected (P greater than .1) by GH or T4 treatment in ram lambs. Hot carcass weight and dressing percentage were increased (P less than .05) by T4. Growth hormone increased carcass protein content (P less than .005) and muscle weights while reducing carcass fat (P less than .05). Carcass composition was not altered by T4 alone, and the T4 x GH interaction was not significant; however, the combination of T4 and GH resulted in greater muscle and protein weight than did either hormone alone or no hormone administration. There were no differences in bone length or in the metacarpal growth plate width among groups. The beneficial effects of GH on carcass composition were not further enhanced by administration of thyroxine. 相似文献

The objectives of this study were to determine the effects of finishing lambs on concentrate (C) or by grazing ryegrass forage (F) to slaughter end weights of 52 (N) or 77 kg (H) on carcass characteristics and organoleptic properties. This experiment included 64 Targhee x Hampshire lambs (average BW = 24 +/- 1 kg) in a 2 x 2 x 2 factorial arrangement of treatments to compare wethers vs. ewes, C vs. F, and N vs. H slaughter weights. No interactions (P > 0.10) were observed between gender and other main effects. Hot carcass weight and dressing percent were greater (P < 0.001) for C- than for F-fed lambs. Backfat thickness also was greater (P < 0.001) for lambs fed C than for those fed F. Moreover, USDA lean quality score and USDA yield grades were higher (P < 0.001) for C- than for F-fed lambs, as well as for lambs slaughtered at H vs. N market weights. There was a higher (P < 0.005) incidence of off odors and off flavors in cooked muscle from F- vs. C-fed lambs, and also from H vs. N slaughter-weight lambs. The heavy C-fed lambs had juicier (P < 0.001) meat than other treatment combinations. Cooked meat from C-fed lambs received higher (P < 0.001) overall acceptability scores. Concentrate-finished lambs produced fatter carcasses and more palatable meat than forage-finished lambs; however, forage finishing allowed for slaughter at heavier weights without excessive fat deposition. 相似文献

The effects of cimaterol, a beta agonist, on basal metabolic rate, heat increment, maintenance requirements and carcass characteristics were determined using six treated and six control Suffolk ewe lambs. The lambs were fed a pelleted diet (18.7% CP, 2.64 Mcal ME/kg) with or without .5 mg cimaterol/kg BW.75 daily for 70 d. Heat production was monitored for 2 d on each animal at three levels of intake by respiration calorimetry. A 7-d total collection digestion trial was conducted on each animal at both high and low levels of intake. Cimaterol-fed lambs gained more (P less than .05) weight (174 vs 107 g/d) and had a higher (P less than .01) gain/feed ratio (151 vs 90 g/kg) than controls. Cimaterol did not affect diet digestibility or methane production. It reduced (P less than .01) urinary N excretion by 12% and improved (P less than .001) N retention by 18%. Cimaterol also increased carcass weight (26.9 vs 22.1 kg), dressing percentage (57.2 vs 53.9), longissimus muscle area (22.5 vs 15.0 cm2) and leg score (14.3 vs 12.2). Heat production was, on the average, elevated 7 to 10% on d 1 to 4 of cimaterol feeding but reverted to control levels by d 10. Cimaterol did not have any long-term thermogenic effects, either expressed as partial efficiency of ME use for growth (.48 vs .49), as maintenance ME requirements (76 vs 75 kcal/kg BW.75) or as fasting heat production (84 vs 80 kcal/kg BW.75) for treated vs control lambs, respectively. Angus-crossbred steers (n = 216) were used in a 3-yr study to assess the effects of winter stocker growth rate and finishing system on finishing performance and carcass characteristics. During winter months (December to April) steers were randomly allotted to 3 stocker growth rates: low (0.23 kg x d(-1)), medium (0.45 kg x d(-1)), or high (0.68 kg x d(-1)). Upon completion of the winter phase, steers were randomly allotted within each stocker treatment to a corn silage-concentrate or pasture finishing system. All steers regardless of finishing treatment were finished to an equal-time endpoint to eliminate confounding of treatments with animal age or seasonal factors. Upon completion of the finishing period, steers were slaughtered in 2 groups (one-half of pasture and one-half of feedlot cattle each time) and carcass data were collected. Winter data were analyzed as a completely randomized design, with winter treatment, pen replicate, year, and the winter x year interaction in the model. Finishing performance and carcass data were analyzed in a split-plot design with finishing system in the whole plot, and winter growth rate and winter x finish in the split-plot. Winter treatment mean within finishing replication was the experimental unit, and year was considered a random effect. Winter stocker phase treatments resulted in differences (P < 0.001) in final BW, ADG, and ultrasound LM area between all treatments for that phase. Pasture-finished cattle had lower (P < 0.001) final BW, ADG, HCW, LM area, fat thickness, KPH, dressing percent, USDA yield grade, and USDA quality grade. Winter stocker treatment influenced (P < 0.05) final BW and HCW, with low and medium being less than high. Steers with low stocker gain had greater (P < 0.05) finishing ADG. Dressing percent was greater (P < 0.001) for high than low, and USDA quality grade was greater (P < 0.05) for high than low and medium. Carcass LM area, fat thickness, KPH, and USDA yield grade were not influenced (P > 0.05) by winter rate of gain. Cattle on low during winter exhibited compensatory gain during finishing but were unable to catch the high group regarding BW or HCW. The USDA quality grade was greater for high than low or medium. Animal performance during the winter stocker period clearly impacts finishing performance, carcass quality and beef production in both pasture- and feedlot-finishing systems, when cattle were finished to an equal-time endpoint. 相似文献

Carcass and live-animal measures from 1,029 cattle were collected at the Iowa State University Rhodes and McNay research farms over a 6-yr period. Data were from bull, heifer, and steer progeny of composite, Angus, and Simmental sires mated to three composite lines of dams. The objectives of this study were to estimate genetic parameters for carcass traits, to evaluate effects of sex and breed of sire on growth models (curves), and to suggest a strategy to adjust serially measured data to a constant age end point. Estimation of genetic parameters using a three-trait mixed model showed differences between bulls and steers in estimates of h2 and genetic correlations. Heritability for carcass weight, percentage of retail product, retail product weight, fat thickness, and longissimus muscle area from bull data were .43, .04, .46, .05, and .21, respectively. The corresponding values for steer data were in order of .32, .24, .40, .42, and .07, respectively. Analysis of serially measured fat thickness, longissimus muscle area, body weight, hip height, and ultrasound percentage of intramuscular fat using a repeated measures model showed a limitation in the use of growth models based on pooled data. In further evaluation of regression parameters using a linear mixed model analysis, sex and breed of sire showed an important (P < .05) effect on intercept and slope values. Regression of serially measured traits on age within animal showed a relatively larger R2 (62 to 98%) and a smaller root mean square error (RMSE, .09 to 8.85) as compared with R2 (0 to 58%) and RMSE (.31 to 67.9) values when the same model was used on pooled data. We concluded that regression parameters from a within-animal regression of a serially measured trait on age, averaged by sex and breed, are the best choice in describing growth and adjusting data to a constant age end point. 相似文献

The objectives of this experiment were to determine the effects of replacing ground corn with soybean hulls (SH) in high-concentrate diets on the growth (56-d period), carcass characteristics, and eating behavior of feedlot lambs. Sixty-four Santa Inês ram lambs (18.3 ± 2.8 kg of BW and 69 ± 5 d of age) were assigned to a randomized complete block design experiment with 8 blocks and 4 diets. The control diet contained 10% coastcross (Cynodon sp.) hay, 70% corn, and no SH (SH0) in the dietary DM. In the remaining diets, SH replaced corn at the rate of 15 (SH15), 30 (SH30), or 45% (SH45) of the original corn concentration, resulting in 0, 10.5, 21.0, or 31.4% SH in the dietary DM. Dry matter intake increased linearly (P < 0.01) when SH replaced ground corn (1.0, 1.0, 1.1, and 1.1 kg/d for SH0, SH15, SH30, and SH45, respectively). There was no effect on ADG of lambs, with values of 276, 278, 282, and 287 g for SH0, SH15, SH30, and SH45, respectively. Feed efficiency decreased linearly (P < 0.01) with SH inclusion. Carcass measures were not affected by SH as a replacement for ground corn. Eating time, expressed as minutes per day and minutes per gram of NDF, showed a quadratic effect (P < 0.05), whereas no effect was observed when expressed as minutes per gram of DM. Rumination, in minutes per day, was not influenced by dietary SH inclusion, but a linear decrease (P < 0.01) was observed when this variable was expressed as minutes per gram of NDF. Soybean hulls can replace up to 45% of the ground corn (31.4% of SH in the dietary DM) in high-concentrate diets fed to feedlot lambs without negative effects on ADG and carcass measures. The linear decrease in feed efficiency (11.6% reduction from SH0 to SH45) suggests that optimal dietary SH inclusion rates should be dictated by the relative costs of SH and corn. 相似文献

The objective of this study was to determine the fattening performance and carcass and meat quality characteristics of Kivircik twin male lambs. Twelve lambs at approximately 5?months of age were subjected to a finishing diet for 60?days. Average live weight of lambs at the beginning and the end of the fattening were 23.14?±?0.84 and 39.0?±?1.01?kg, respectively. Daily live weight gain and feed conversion efficiency were found as 0.265?±?0.007 and 6.14?kg, respectively. Hot carcass weight, cold carcass weight, and dressing percentage were 19.6?±?0.6 and 18.9?±?0.6?kg and 48.1?±?0.3%, respectively. Kidney-pelvic fat weight, internal fat weight, and m. longissimus dorsi area were 0.117?±?0.023 and 0.364?±?0.041?kg and 15.26?±?0.70?cm(2), respectively. The percentages of leg, back loin, forearm, shoulder, neck, flank-chest, kidney-pelvic fat, and internal fat in carcasses of the lambs were found as 34.1?±?0.4%, 19.6?±?0.3%, 21.0?±?0.2%, 7.0?±?0.3%, 10.5?±?0.3%, 7.2?±?0.2%, 1.3?±?0.1%, and 1.8?±?0.1%, respectively. Averages water content, ash, protein content, and fat content of meat samples were 73.4%, 1.0%, 19.5% and 3.6%, respectively. pH and thiobarbituric acid reactive substances values of meat samples were 5.55 and 0.056?±?0.017. L*(lightness), a*(redness), and b*(yellowness) values were recorded as 43.87, 12.69, and 10.22, respectively. Thus, we conclude that fattening performance, carcass, and meat quality of Kivircik lambs are satisfactory levels than that of other native breeds. 相似文献

Growth and metabolism in somatotropin-treated steers: I. Growth, serum chemistry and carcass weights
Growth, feed conversion, serum chemistry and gross slaughter characteristics were determined in 20 steers (initially 9 mo of age, 231 +/- 18 kg) receiving daily injections of either saline (S) or recombinantly derived bovine somatotropin (rBST, 20.6 mg/d) for 112 d. Live weight gains were 15% greater for steers treated with rBST than for those treated with S. Feed intake was not different between S- and rBST-treated steers; thus, feed conversion was 12% more efficient in rBST steers. Scanogram backfat measurements were not affected by treatments. Serum electrolytes, protein, glucose and most enzyme activities were similar in S and rBST steers. Serum urea, creatinine and cholesterol (toward the end of treatment) concentrations, however, were lower (P less than .05) in rBST steers, suggesting that nitrogen retention was increased and lipid turnover was decreased by rBST. Total (P less than .1) and conjugated (P less than .05) bilirubin concentrations and glutamate-pyruvate transaminase activity (P less than .05) were lower in rBST steers. Carcass weights were not altered, but dressing percentages were lower (P less than .05) in rBST steers. This indicated that weight gain response to rBST was primarily in noncarcass components; further examination showed that this gain was predominantly in gut fill (approximately 2/3 of the greater live weight gain in rBST steers). Alternative protocols, such as administering the hormone to younger animals and (or) for a longer duration, may be necessary in order to achieve desirable responses in carcass growth. 相似文献

Polyclonal antisera were collected from a mare immunized with ovine adipocyte plasma membranes. Ten crossbred wether lambs received three consecutive daily intraperitoneal injections of horse antisheep adipocyte plasma membrane immunoglobulin (ASIg) or nonimmune serum immunoglobulin (NSIg). Each injection delivered 1.5 ml serum Ig protein equivalent to either 53.4 mg ASIg or 51.1 mg NSIg per kilogram of live body weight. Lambs were housed in individual metabolic crates during the 28-d experiment and given ad libitum access to a pelleted, high-concentrate diet. Daily feed consumption was monitored individually over the experimental period and N retention was determined. Blood was collected on d 0, 4, 7, 14 and 28 for determination of nonesterified fatty acid (NEFA), triacylglycerides (TG) and hematocrit. At the conclusion of the experiment, lambs were slaughtered and carcasses were evaluated. Passive immunization against sheep adipocyte plasma membrane reduced (P less than .05) perirenal adipose tissue weight and decreased ether extract content of both subcutaneous and perirenal fat. Treatment tended to reduce average backfat thickness (24%) and estimated kidney pelvic fat (16%). Treatment with ASIg reduced (P less than .05) blood plasma NEFA but did not alter blood TG or hematocrit values. Average daily weight gain was lower (P less than .01) in the ASIg-treated group. However, the efficiency of carcass production, measured as carcass weight, was not affected by ASIg treatment. 相似文献

Foundation cows were selected using prior records from one of two sources, private herds or other projects at the Research Center. Comparing twinning rates before and after selection, the repeatability was lower for those from the first (.08) than for those from the second (.16) source with a combined value of .12. Realized heritability of single-parity twinning rate estimated from selection of parents and response in daughters of foundation females was .06. Paternal half-sib estimate of heritability of twinning rate was .02 +/- .07. Estimates of repeatability computed from calving records of females born in the project indicate that permanent environmental effects on twinning rate in cattle are small. Mean calving rate of females born in the project was 1.11 in the data set that included all data and 1.09 in the data set that excluded females from highly selected parents. Twinning rate was greater (P less than .05) in fall than in spring calving (1.13 vs 1.06). Data on twinning rate of a sample of the Swedish Friesian breed were summarized. Mean twinning rate of the Swedish Friesian breed is 2.57%. Age adjusted mean twinning rate of daughters of 32 half-sib sons of one particular Swedish Frieisan sire averaged 5.4% and ranged from .9% to 13.6%. There was no indication of a bimodal distribution, which would be expected if a single gene with a major effect on twinning rate were segregating. The estimated genetic standard deviation (sigma-xn) for mean twinning rates of the 32 sire progeny groups was 1.8%. Observed range among son progenies was .127 or 7.2 sigma-xn, in reasonable agreement with the hypothesis that twinning rate in this population is inherited as a quantitative trait. 相似文献

Knowledge of breed effects on carcass and pork quality traits is required to develop commercial crossbreeding programs that emphasize product quality. A 2 x 2 diallel mating system involving Landrace and Duroc pigs was used to estimate individual heterosis, direct breed effects and reciprocal cross differences for post-weaning growth, real-time ultrasound, carcass, and pork quality traits. Data from 5,649 pigs and 960 carcasses representing 65 and 49 sires, respectively, were analyzed assuming animal models. Duroc-sired pigs had 2.1 cm shorter carcasses with 7.3 mm less 10th rib backfat (BF), 4.4 cm2 larger longissimus muscle area (LMA), yielded 2.1 kg more estimated fat standardized lean (FSL), gained 16.5 g more estimated lean per day of age (LDOA), and had 1.0% less water (PWAT) and 1.9% more intramuscular fat (IMF) in the longissimus muscle than did Landrace-sired pigs (P less than .01), adjusted to an off-farm live weight of 111 kg. Reciprocal cross differences were detected for BF, LMA, FSL, LDOA and for subjective marbling, firmness, and muscling scores (P less than .01). Durocsired F1 barrows had 6.3 mm less BF and 5.9 cm2 larger LMA, yielded 3.2 kg more FSL, gained 22.3 g more LDOA, and had less marbling in the longissimus muscle and heavier ham muscling than reciprocal cross barrows. Heterosis estimates (P less than .05) were 27.6 g/d (3.2%) for ADG, -5.8 d (-3.6%) for off-test age, 2.7 cm (3.4%) for carcass length, 1.5 kg (7.2%) for FSL, 14.7 g (5.7%) for LDOA, -.07 (-3.6%) for muscle color, -.5% (-13.2%) for IMF, and .3% (.3%) for PWAT. Breed effects were not detected (P greater than .10) for muscle pH, cooking loss, shear value, and water-holding capacity or for eating quality traits. Reciprocal cross differences suggest an advantage in using the Duroc as a terminal sire, but improved carcass composition and higher intramuscular fat did not seem to affect eating quality traits. 相似文献

Quality food for human consumption will always be the aim for animal producers. Quantity and composition of fat deposits (fatty acid profile) strongly influences meat quality in ruminants, especially via increasing conjugated linoleic acid (CLA) concentration, which is known to have beneficial anticarcinogenic, antiatherogenic, antidiabetic and cholesterol reduction properties for human health. Awassi lambs are one of the main and most consumed meat sources in the Middle East area; however, studies addressing the fat content of CLA and methods to enhance its concentrations in this breed are still rare. For this reason, the aim of this study was to evaluate the effect of adding two different oil sources (soybean oil (SBO) and sunflower oil (SFO) at two levels (1.8 and 3%)) on growth performance, carcass characteristics and fatty acid profile of fat in Awassi lambs. Oil supplementation had no effect on growth performance or carcass characteristics, while fatty acid composition changed according to the site of extraction. CLA concentrations were increased in the tail fat deposit, with 1.8% SBO and in intermuscular fat deposit with 3% SFO.
