Effect of particle size and blend composition (wheat semolina: pearl millet flour) on quality of pasta were investigated in this study. Initially, the pasta was prepared from 100% pearl millet flour of different particle sizes (241–780 μm). Observation indicated that it was not possible to make pasta from 100% pearl millet flour as these disintegrated after cooking. Particle sizes of pearl millet flour showed significant effect on nutritional and cooking quality of pearl millet pasta. Pasta from pearl millet flour of particle size 425 μm had least cooking loss, high protein, iron and zinc contents. Further, with increase in the level of pearl millet flour in the blend composition, protein, ash and cooking loss of pasta increased whereas hardness, cohesiveness, springiness, gumminess and chewiness showed decreasing trend. Blend composition (wheat semolina: pearl millet flour) in the ratio of 70:30 was found to be satisfactory for making pasta with desirable quality characteristics like cooking loss (<8%), protein content (>10%), ash content (<0.7%), colour and texture. However, with the objective of maximum incorporation of pearl millet flour in the final product, a blend composition of 50:50 could be used to make pasta with acceptable quality.  相似文献

Different grades of maize flour were produced by dry milling of yellow maize. The chemical composition of wholemeal, three semi-sifted flours and degermed maize was determined, and the nutritional value of the flours were investigated in balance experiments with growing rats. Distinct differences in nutrient and fibre content were found. Amino acid composition was significantly different in the milled fractions, and the content of minerals and phytate in the flours was determined by the extent to which the germ was retained. Phytate: zinc molar ratios ranged from 43 to 2. Weight gain of rats was closely correlated to the concentration of lysine (r=0.99) and tryptophan (r=0.97). Weight gain of rats fed degermed maize was reduced to half of that of rats fed wholemeal. True protein digestibility was high, but protein quality varied widely between the different flour fractions. Energy density of the flours was quite similar. Rats fed wholemeal had the highest intake of zinc and the highest apparent zinc absorption and retention but the lowest femur zinc concentration. Factors present in whole maize may interfere with zinc utilization. The results might indicate an interaction between phytate and fibre. Supplementation of wholemeal with lysine and tryptophan increased the biological value of the protein and the weight gain considerably, but apparent absorption and retention of zinc as well as femur zinc concentration were similar in unsupplemented and supplemented rats. The percentage of zinc absorbed from degermed maize flour was high, but degermed maize has a very low content of minerals and is highly deficient in lysine and tryptophan.  相似文献

为明确安徽大田生产环境下软质小麦籽粒和终端产品品质表现,评价优质软麦品种的加工适用性,本研究选取该区当前推广种植的24个软质小麦品种,对其籽粒和面粉的主要品质性状及其制品南方馒头和曲奇饼干的品质进行差异性、相关性分析,并以美国软白麦近五年的主要品质性状平均值为理想指标进行灰色关联度比较。结果表明,供试材料的硬度、面粉色泽b*、湿面筋含量、面团形成时间、稳定时间等籽粒品质性状变异系数较大,而容重、面粉L*值和吸水率变异系数较小。南方馒头品质性状中,白度差异最小,比容差异最大;曲奇饼干品质性状中,感官评分变异系数较大,饼干直径均值和变异系数都较小。蛋白质含量、湿面筋含量、稳定时间均符合弱筋标准(GB/T 17320-2013)的样品数为0。相关分析表明,容重、降落值、面粉L*、b*、白度与大部分性状间相关性不显著;籽粒硬度与水SRC和乳酸SRC均呈显著正相关,与湿面筋含量和面粉a*值均呈显著负相关。蛋白质含量与面粉a*值等7个指标均呈显著正相关,与面粉b  相似文献

The quality of nine spaghetti typologies, produced by using wheat durum semolina as a base plus the addition of buckwheat and durum wheat bran, was investigated. The quality of the produced spaghetti was compared with that of spaghetti made only of durum semolina (CTRL). Tests were run on the samples to determine breakage susceptibility and colour of dry spaghetti, the cooking resistance, instrumental stickiness at optimal cooking time (OCT) and overcooking, the cooking loss and sensorial attributes at the optimal cooking time. Results suggest that the breakage susceptibility decreases with the addition of 15% and 20% bran, the spaghetti dry colour changes with the addition of buckwheat flour and bran compared to the spaghetti made only of durum semolina, while the cooking resistance, instrumental stickiness and the cooking loss, in general, were equal to that of the CTRL. However, the addition of buckwheat flour and bran affected the sensorial attributes differently.  相似文献

以18个鲜食玉米品种为试验材料,针对寒地西部半干旱地区的气候条件,研究不同类型鲜食玉米子粒鲜食期的营养成分的积累动态及品质变化。结果表明,鲜食玉米灌浆期子粒的可溶性糖、粗淀粉、蛋白质、子粒含水率和维C含量在不同灌浆期、不同品种间差异极显著。随着子粒的发育,不同类型鲜食玉米品种的可溶性总糖、可溶性蛋白含量和子粒含水率呈下降趋势,粗淀粉含量呈上升趋势,维C含量呈先上升后下降的动态曲线变化。根据鲜食玉米营养成分与品质的关系,通过子粒含水率结合蛋白质含量和粗淀粉含量确定糯玉米的最佳采收期,子粒含水率结合可溶性糖含量和维C含量确定甜玉米的最佳采收期。  相似文献

为了解河北省主推强筋小麦品种的籽粒品质和面包加工品质,评选优质面包小麦品种,对河北省9个强筋小麦品种的31个籽粒品质和8个面包加工品质指标进行了测定。结果表明,除千粒重、容重、籽粒硬度、出粉率、面粉色泽L*值、面粉色泽b*值、面粉白度、籽粒蛋白质含量、湿面筋含量、糊化温度、吸水率外,其余被测指标的变异系数均大于10%,说明河北省强筋小麦品种多数品质性状的遗传多样性比较丰富。藁优9415、冀师02-1、藁优2018和金麦1号4个小麦品种制作的面包达到国家优质面包标准。面包评分与面团拉伸曲线面积和最大拉伸阻力极显著正相关,与形成时间、稳定时间、粉质质量指数、延伸度和拉伸阻力显著正相关,与面包质构的粘聚性极显著正相关,与面包质构的硬度、胶着性、咀嚼度、坚实度均极显著负相关。  相似文献

Mixtures obtained by the addition to semolina of wholemeal flour derived from durum wheat kernels harvested at the milky phase were analysed for their levels of fructans, vitamin C, glutathione and for their rheological characteristics to evaluate the possibility of obtaining wholemeal with increased nutritional value for preparing functional foods, without addition of exogenous additives or antioxidants. Wholemeal from immature kernels (WIK) contained almost three times more fructans than semolina from mature kernels (SMK). Moreover, wholemeal from immature kernels contained much higher amounts of ascorbate and glutathione than SMK. Consistently, wholemeal from immature kernels also had higher total antioxidant capability than SMK. The addition of a certain percentage of WIK to SMK conferred an increased tenacity to the dough. The role of the different biochemical properties, mainly related to the ascorbate redox enzymes, of WIK versus SMK in determining the rheological properties of the mixtures is discussed.  相似文献

Samples of extruded high protein weaning foods were produced using blends of peanuts, maize and soybean to achieve the desired level of protein. The extruded products, based on a raw and a preroasteds mix of ingredients, were developed and characterized in terms of the hot paste viscosity characteristics, chemical and nutritional quality, amino acid composition, and storage stability. A comparative evaluation of the extruded products was undertaken in relation to two similar existing products: the traditional roasted maize flour weaning food, and thecommercial version. In general, the extruded products were found to have better nutritional quality as indicated by the high protein content of 16.5–18.7% and quality, and excellent rat growth response. For both types of extruded weaning foods developed, between sixty- and one hundred-fold increases in mean weight gain of test rats were recorded over those eating the traditional sample. Correspondingly, the PER values which were between 2.3 and 2.5, were almost thrice the values obtained for the existing products. Significantly higher feed efficiency ratios were also obtained for the extruded products. Hematological data of test animals showed normal values for white blood cell (WBC) count, red blood cell (RBC) count, hemoglobin (Hb) levels and packed cell volume (PCV) for all the weaning foods studied, except the existing traditional roasted maize flour. In terms of storage stability of the extruded products, predicted shelf life periods of 7.8–10.4 months were obtained for the extruded raw blend, and 5.6–7.1 months for the extruded preroasted blend when stored at the average ambient temperature of about 30,°C in Ghana. In general, the preroasting treatment was found to reduce the quality characteristics of the extruded product.  相似文献

Samples of Canadian amber durum wheat varieties, of various protein content and a composite of export cargo samples, were milled to yield straight-grade and patent flours by reducing semolina and processed into yellow alkaline noodles (YAN). Samples of Canada Hard White Spring (CWHWS) and Canada Western Red Spring (CWRS) were included for comparative purposes. YAN from durum wheat displayed a colour advantage over CWRS and CWHWS YAN. The durum YAN displayed an approximate 9–20 unit greater b* (yellowness) value than CWRS and CWHWS at 2 and 24 h after preparation. This relates to greater yellow pigment and flavonoid contents in the durum flours. All durum wheat YAN exhibited excellent noodle brightness, which was retained over time due to lower levels of the enzymes polyphenol oxidase (PPO) and peroxidase (POD). Durum noodles displayed significantly fewer specks than CWRS and were comparable to CWHWS. Durum wheat YAN cooking quality was equal to or slightly superior to CWRS and CWHWS. Durum wheat flour refinement imparted no significant effects on cooked noodle texture (maximum cutting stress, recovery, resistance to compression). However, the various texture parameters improved with durum wheat protein content and gluten strength.  相似文献

The physiological development of laboratory rats fed with a typical indigenous tortilla diet was studied for two generations. The experiment compared casein control diet and five different types of diets: (1) a diet of tortillas obtained from fresh masa (FM); (2) regular tortillas produced from enriched dry masa flour containing vitamins B1, B2, niacin, folic acid, and the microminerals iron and zinc (REDMF); (3) tortillas produced from enriched dry masa flour fortified with 6% defatted soybean meal (FEDMF); (4) tortillas produced from enriched quality protein maize flour (EQPM); and (5) and, tortillas produced from enriched quality protein maize flour fortified with 3% defatted soybean meal (FEQPM). The growth of rats fed FEDMF and FEQPM diets was significantly higher (P<0.05) in both generations than their counterparts fed EQPM, REDMF, or FM diet. Animals fed quality protein maize (QPM) tortilla had the highest protein digestibility, but the FEQPM and FEDMF diets had the highest biological value (BV), net protein utilization (NPU), and protein-digestibility-corrected EAA scores (PDCEAAS). The difference among treatments was more evident in the second-generation rats. The pregnancy rate, number of newborns/litter, litter weight, and newborn survival rate was also higher for rats fed FEDMF, EQPM, and FEQPM diets than their counterparts fed REDMF and FM.  相似文献

为明确小麦面粉及鲜面片色泽的影响因素,选取10个江苏沿淮及淮南地区大面积推广小麦品种进行2年3点种植,比较不同品种、不同地点和不同年份面粉及鲜面片色泽差异并分析其影响因素,探讨面粉及鲜面片色泽与品质性状间的相关性。结果表明,扬麦11、扬辐麦4号和宁麦14的面粉及鲜面片色泽较好,亮度高、黄度低。基因型是决定面粉白度、亮度(L~*值)和黄度(b~*值)的主要因素;环境因素亦影响面粉及鲜面片色泽。扬麦16、宁麦14和郑麦9023在不同年度及不同地点的色泽表现稳定。面粉与鲜面片放置24h内的色泽间呈显著正相关;面粉白度与籽粒硬度和出粉率呈极显著负相关;面粉及鲜面片L~*值与蛋白质含量、湿面筋含量、揉混仪参数和粉质仪参数呈显著或极显著负相关,与糊化特性参数呈显著或极显著正相关。综上所述,面粉色泽主要由基因型决定,鲜面片色泽与面粉色泽显著相关,二者与籽粒品质具有显著相关性。在小麦育种中,可通过面粉色泽指标筛选高白度及品质的品种。  相似文献

The effects of cowpea and amino acid supplementation on the protein quality and chemical characteristics of a maize-based West African traditional weaning food were studied. Process optimization for improved nutritive value was also determined. Supplementation of the traditional weaning food with cowpea increased the lysine, tryptophan and threonine content while the sulphur-amino acids decreased with increasing levels of cowpea. Further supplementation of 70:30 maize/cowpea blends with lysine, threonine or methionine did not significantly improve (p>0.05) protein quality in terms of the biological value (BV) and net protein utilization (NPU), although significant increases in the protein scores were noted. However, considerable improvements in the BV and NPU were recorded in blends fortified with either tryptophan alone or a combination of lysine, tryptophan, methionine and threonine. Cooking whole cowpea seeds for 45 min before incorporating in the blend formulation also significantly improved (p<0.05) the protein quality of maize/cowpea blends. The BV and NPU of blends containing 30% pre-cooked cowpea increased from 52 to 76% and 50 to 71% respectively compared to pure maize porridge. The protein content increased from 10 to 14% and the utilizable proteins more than doubled. The weight increase of experimental rats fed with these blends was comparable to that of rats on casein diet. A 30% supplementation of the maize-based weaning food with cowpea therefore greatly enhances the nutritive value especially when the cowpea is pre-cooked for 45 min. Use of chemical scores alone for such blends cannot be a reliable index of blend quality.  相似文献

Nutrient composition and digestibility of stover contribute markedly to the nutritive value of forage maize in cattle feeding. Low stover digestibility limits the quality of whole plant maize silage (WPMS) and should therefore be prevented by optimizing management of WPMS production. A project was carried out to analyse nutrient composition and ruminal nutrient degradability of ensiled stover of nine different current maize varieties, which were planted in 3 years and harvested at three maturity stages (50, 55 and 60% ear dry‐matter [DM] content). Variety and harvest date had a significant impact (< 0.05) on crude protein (CP) and metabolizable energy content, whereas fibre content and non‐fibre components were not affected by these factors. In contrast, the potential and effective degradability (ED) of organic matter (OM), CP and neutral detergent fibre (NDF) were significantly influenced by variety and harvest date. The ED5 (ED at 5% per hour passage rate) of different varieties ranged from 22.9% to 29.3% for OM, from 66.2% to 71.4% for CP and from 17.3% to 20.5% for NDF. The ED5 of OM, CP and NDF declined significantly by 4.1%, 2.5% and 2.1% units between the second and third maturity stage. Almost all investigated parameters were significantly influenced by year. Significant differences between varieties indicate that there is a potential for improvement of stover degradability through breeding. Harvest ear DM content should not exceed 55%, because nutritive value of ensiled stover declines significantly beyond this value, which could negatively affect WPMS quality in cattle feeding.  相似文献

为提高小麦品种的面粉白度,以来自不同种植区的216个小麦品种(系)为材料,研究了小麦面粉白度的分布规律及与其他品质指标的相关性,并初步探讨了储藏时间对面粉白度的影响。结果表明,面粉白度在小麦品种(系)间存在极显著差异(P0.01),年份间极显著正相关;参试材料的面粉白度平均为72.9,变幅为54.1~80.1,高于80的品种较少,大多数品种(系)的白度值在70~75之间。来源于西南冬麦区的小麦品种(系)的面粉白度值最高,显著高于黄淮冬麦区和北方冬麦区(P0.05),长江中下游冬麦区的白度值也较高;国外引进品种的白度值普遍较低,平均值为69.53;软麦的白度值显著高于硬麦(P0.05)。面粉白度与出粉率、籽粒硬度、蛋白含量和粉质参数等指标均呈负相关,尤其与硬度的负相关性最强(r=-0.798)。储藏一段时间可略微增加面粉白度,但增幅不明显。同时,筛选出一批优质高白度材料,可作为培育强筋高白度小麦品种的优良亲本。  相似文献

A brief review of literature on sorghum for human foods and on the relationship among some kernel characteristics and food quality is presented. The chief foods prepared with sorghum, such as tortilla, porridge, couscous and baked goods are described. Tortillas, prepared with 75% of whole sorghum and 25% of yellow maize, are better than those prepared with whole sorghum alone. A porridge formulation with a 30:40:30 mix of sorghum, maize and cassava respectively, has been shown to be the most acceptable combination. The cooked porridge Aceda has lower protein digestibility and higher biological value than the uncooked porridge Aceda. Sorghum is not considered breadmaking flour but the addition of 30% sorghum flour to wheat flour of 72% extraction rate produces a bread, evaluated as good to excellent.  相似文献

Processing is important both for the sensory and nutritional quality of grains. In the case of whole grains, it especially may influence the levels and bioavailability of the bioactive compounds. Yeast, lactic acid and mixed fermentation were shown to vary in their effects on native and germinated wholemeal rye flour. The presence of Saccharomyces cerevisiae was important for enhanced levels of the analysed compounds. The levels of folates, free phenolic acids, total phenolic compounds, lignans and alkylresorcinols were increased especially by fermentation of germinated rye, which also resulted in lower pH when compared with native rye flour, the level of folate was increased up to seven-fold and that of free phenolic acids by up to ten-fold after germination and fermentation. Tailored fermentation thus offers a tool to further increase the bioactive potential of wholemeal rye.  相似文献

The effects of the replacement of einkorn flour on pasta proteins aggregation were studied by sodium dodecyl sulfate polyacrylamide gel electrophoresis and size exclusion high performance chromatography. Pasta was produced replacing durum wheat semolina with an increasing amount of einkorn flour (30, 50 and 100%). The polymeric protein structure of flours and related pasta and pasta mixture was determined by protein subunits composition and size of polymeric proteins. The unextractability of polymeric protein was related to the unextractable protein fraction and to the determination of –SH/-SS groups. Durum wheat semolina and einkorn flours increased their unextractable and polymeric fractions during pasta processing. The unexpected results derived from the areas of unextractable fractions and total and large unextractable polymeric fractions of 70/30 semolina/einkorn pasta mixture that were lower than those of 50/50 semolina/einkorn pasta mixture. Although the semolina flour contained more gluten proteins than einkorn flour, a higher aggregation was registered for 50/50 semolina/einkorn flour pasta. These results suggested that a different assessment of gluten network occurred in pasta mixture and it was regulated by a self-assembling machine influenced by nature of HMW-GS. The 50/50 semolina/einkorn pasta mixture determined a supramolecular structure in the developing of its network architecture.  相似文献

The manufacture and characterization of gluten-free spaghetti based on maize flour and different vegetable flours (artichoke, asparagus, pumpkin, zucchini, tomato, yellow pepper, red pepper, green pepper, carrot, broccoli, spinach, eggplant and fennel) were addressed in this study. The screening of the vegetable flours showed that homogeneity, color, fibrous, taste and odor were the parameters that have most influenced the overall quality of the dry spaghetti. The spaghetti added with yellow pepper flour was chosen for further analysis because of its highest sensory quality; in contrast, it recorded low carotenoids content due to the high temperature of the drying process (cycle named as HTDC). Therefore, an optimization of the drying cycle was performed (lower temperature) on the yellow pepper flour (cycle named as LTDC) that resulted in an increase of the carotenoids content. Although the spaghetti with low temperature yellow pepper flour had a higher cooking loss and lower instrumental hardness when compared to the spaghetti made with only maize flour (CTRL) it however had a significantly higher protein and dietary fiber content. Moreover there was no significant difference in the amount of glucose released during in vitro digestion for this spaghetti sample with respect to the CTRL sample.  相似文献

Comparison of quality of refined and whole wheat tortillas   总被引:1,自引:0,他引:1  
The use of whole wheat flour instead of refined flour significantly improves the nutritional profile of flour tortillas. However, whole and refined flours differ in properties and in how they process, thus needing process modifications to get the desired product quality. To understand these differences, refined and whole wheat flours, dough and tortillas were evaluated and compared for physical and rheological properties. Overall, whole wheat flour required more water (59% of flour weight) than refined wheat (53%) to make machineable dough. Refined flour doughs were more extensible and softer than whole wheat flour doughs, thus easier to process. Whole wheat flour tortillas were larger, thinner and less opaque than refined flour tortillas. In general, refined wheat tortillas were more shelf-stable than whole wheat tortillas. Smaller particle size and less fiber in the refined wheat flour mainly contributed to the observed differences. Among the whole wheat samples, tortillas from strong flours had excellent shelf-stability, which must be considered when whole wheat tortillas are processed. This will minimize the need to add vital wheat gluten or other dough strengtheners.  相似文献
