The effect of electron-beam ionizing radiation stress and storage on mango fruit antioxidant compounds was evaluated in a dose range of 1-3.1 kGy. Phenolic high-performance liquid chromatography (HPLC) profiles were not affected right after the irradiation process; however, an increase in flavonol constituents was observed after 18 days in storage (3.1 kGy). Total phenolics by the Folin Ciocalteu method and antioxidant capacity (ORAC) were not affected, while reduced ascorbic acid decreased approximately 50-54% during storage (>/=1.5 kGy). No major changes in carotenoid HPLC profiles indicated a delay in ripening of irradiated mangoes (1-3.1 kGy) compared to nonirradiated fruits. However, irradiation dose >/=1.5 kGy induced flesh pitting due to localized tissue death. A summary of the potential roles of reactive oxygen species generated by the irradiation stress on different antioxidant constituents of mango fruits is presented.  相似文献

Sweet cherry cultivars ('Cristalina' and 'Prime Giant') harvested at commercial ripening stage were treated with salicylic acid (SA), acetylsalicylic acid (ASA) or oxalic acid (OA) at 1 mM and then stored for 20 days under cold temperature. Results showed that all treatments delayed the postharvest ripening process, manifested by lower acidity, color changes and firmness losses, and maintained quality attributes for longer periods than controls. In addition, total phenolics, anthocyanins and antioxidant activity increased in untreated fruit during the first 10 days of storage and then decreased, while in fruits of all treatments, these parameters increased continuously during storage without significant differences among treatments. Thus, postharvest treatments with natural compounds, such as SA, ASA or OA, could be innovative tools to extend the storability of sweet cherry with higher content of bioactive compounds and antioxidant activity as compared with control fruits.  相似文献

The influence of high oxygen concentrations on total phenolic, total anthocyanin, individual phenolic compounds, and antioxidant capacity (measured as oxygen radical absorbance capacity, ORAC) in highbush blueberry fruit (Vaccinium corymbosum L. cv. Duke) was investigated. Freshly harvested blueberries were placed in jars ventilated continuously with air or with 40, 60, 80, or 100% O(2) at 5 degrees C for up to 35 days. Samples were taken initially and at 7-day intervals during storage. Whereas the quality parameters of titratable acidity, total soluble solids, and surface color were only slightly affected by the superatmospheric O(2) treatments, the antioxidant levels were markedly increased by 60-100% O(2) treatments as compared with 40% O(2) treatment or air control during 35 days of storage. Elevated O(2) between 60 and 100% also promoted increases of total phenolics and total anthocyanins as well as the individual phenolic compounds analyzed by HPLC. Fruit treated with O(2) concentrations of >/=60% also exhibited significantly less decay. Data obtained in this study suggest that high-oxygen treatments may improve the antioxidant capacity of blueberry fruit. Furthermore, antioxidant capacity may be correlated with total phenolic and anthocyanin contents in blueberries.  相似文献

The effects of different edible coatings on mango fruit ripening and ripe fruit quality parameters including color, firmness, soluble solids concentrations, total acidity, ascorbic acid, total carotenoids, fatty acids, and aroma volatiles were investigated. Hard mature green mango (Mangifera indica L. cv. Kensigton Pride) fruits were coated with aqueous mango carnauba (1:1 v/v), Semperfresh (0.6%), Aloe vera gel (1:1, v/v), or A. vera gel (100%). Untreated fruit served as the control. Following the coating, fruits were allowed to dry at room temperature and packed in soft-board trays to ripen at 21+/-1 degrees C and 55.2+/-11.1% relative humidity until the eating soft stage. Mango carnauba was effective in retarding fruit ripening, retaining fruit firmness, and improving fruit quality attributes including levels of fatty acids and aroma volatiles. Semperfresh and A. vera gel (1:1 or 100%) slightly delayed fruit ripening but reduced fruit aroma volatile development. A. vera gel coating did not exceed the commercial mango carnauba and Semperfresh in retarding fruit ripening and improving aroma volatile biosynthesis.  相似文献

Interest in the consumption of fresh fruits and vegetables is, to a large extent, due to its content of bioactive nutrients and their importance as dietary antioxidants. Among all of the selected fruits and vegetables, strawberries and black grapes have relatively high antioxidant capacities associated with high contents of total phenolic compounds, ascorbic acid, and flavonols. More interesting, the results of this study indicated that in most fruits and vegetables storage did not affect negatively the antioxidant capacity. Better, in some cases, an increase of the antioxidant capacity was observed in the days following their purchase, accompanied by an increase in phenolic compounds. In general, fruits and vegetables visually spoil before any significant antioxidant capacity loss occurs except in banana and broccoli. When ascorbic acid or flavonoids (aglycons of flavonols and anthocyanins) were concerned, the conclusions were similar. Their content was generally stable during storage.  相似文献

The effect of postharvest dips in a 1-methylcyclopropene-generating solution of the formulation AFxRD-038 (Rohm & Haas) on plum fruit (Prunus salicina Lindell cv. 'Harrow Sun') quality and ripening during storage was determined. Fruit weight loss, tissue firmness, soluble solids content (SSC), titratable acidity (TA), ethylene production, respiration, and the activities of the cell wall modifying enzymes polygalacturonase (PG), 1,4-beta-D-glucanase/glucosidase (EGase), beta-galactosidase (beta-gal), and pectin methylesterase (PME) were measured. Fruit reddening, anthocyanin content, and phenylalanine ammonia-lyase (PAL) activity were also analyzed. The 1-MCP-treated fruit showed reduced ethylene production and respiration rate and delayed softening, which was associated with the reduction in the activity of PG, EGase, and beta-gal. The immersion in 1-MCP-generating solutions also decreased weight and acidity loss without modifying the fruit SSC. The immersion treatment was particularly effective in the fruit stored at 5 degrees C, keeping higher overall quality, maintaining lower levels of anthocyanins and PAL activity, and preventing flesh reddening. The present data show that beneficial effects in delaying plum fruit ripening and controlling chilling injury can be obtained by dipping the fruits in a solution of this novel 1-MCP-generating formulation.  相似文献

Sour cherry (Prunus cerasus L.) variety 'English Morello' fruits were stored for up to 20 days at 2°C in air or controlled atmosphere (CA) consisting of 25% CO2+10% O2, 15% CO2+10% O2, or 5% CO2+10% O2. The effects were compared on decay, juice optical density, titratable acidity, pH, soluble solids content and firmness. CA treatment has a great potential for sour cherry storage in maintaining quality and in extending the length of the storage period. The study has indicated that the decay of sour cherry can be greatly reduced by 25% CO2. High CO2 concentration gave the best retention of red colour and titratable acidity throughout the storage period. Fruit juice optical density and firmness increased with storage time. Fruits stored in 25% CO2+10% O2 had higher soluble solids content compared with fruits stored in air.  相似文献

Calcium chloride (CaCl2) sprays increased calcium (Ca) concentrations in d'Anjou fruit (Pyrus communis L.), reduced the incidence of cork spot and improved shelf‐life by increasing fruit firmness in a critical year that had lower fruit Ca concentrations due to record high spring and late season temperatures. The third and final harvest in late September resulted in larger fruit size, lower fruit Ca concentrations, higher incidence of cork spot, more extractable juice and yellow fruit skin color, higher soluble solids and sucrose concentrations, but lower acidity than earlier harvested fruits. Fruit held longer in cold storage (145 days) had higher concentrations of fruit Ca, lower concentrations of carbon dioxide (CO2) and ethylene (C2H4), less fruit firmness, soluble solids and acidity, lower concentrations of sucrose, glucose and fructose, and less green color of fruit skin than short term storage (45 days). Shelf‐life of CaCl2‐sprayed fruit was improved because of higher concentrations of fruit Ca that resulted in a lower incidence of cork spot and brown core, fruit firmness was higher, levels of CO2 and C2H4 were lower, and soluble solids, acidity, and extractable juices were affected less for ripened fruit.  相似文献

Fruit firmness testing of strawberries was carried out with five methods. Four instruments, Instron, Texture Analyser, penetrometer PNR10 (SUR Berlin) and Bareiss HHP-2001-Fff, were tested. In addition "Eisenhuth's method" was tried, which involves putting the fruits into a cylinder, placing a load on the top and measuring the compression. Eisenhuth's method was found to be cheap, time-saving and easy to use, and is a promising method for firmness testing of strawberries. Bareiss is a small instrument, which was found to be easy and quick to use, and gave reliable results. The results were easily transmitted to a personal computer. Instron and Texture Analyser are good and advanced instruments with reliable results, but they are expensive, complicated and time-consuming. The PNR10 is quite easy to use but time-consuming, and the results showed large variations. Relatively large natural variability in strawberry firmness was found; therefore, the sample size should be at least 25 fruits. Strawberry fruit firmness was tested in 18 cultivars by two methods. Considerable cultivar differences were found and the ranking of the cultivars was different by the two methods. Large variations in fruit firmness and in soluble solids between individual fruits within samples were observed, especially for cv. 'Korona'. The correlations between firmness and soluble solids content were not significant. Small fruits tended to be firmer than large ones. Ripe fruits were softer than pink ones, but the difference was reduced during storage. The fruits were softer when the internal fruit temperature was 20°;C than at lower temperatures. Fruit colour measured by a Minolta Colorimeter showed smaller variations than in firmness and soluble solids. Only low correlations between colour and other fruit characteristics were found.  相似文献

Since quality requirements for table grapes are mainly related to their physico-chemical and mechanical features, the aim of this work was to provide useful data for grape producers and consumers concerning the quality characteristics of table grapes of five new Vitis vinifera L. cultivars created in Romania and tending to spread within the temperate climate vineyards. During grape maturation, sugar content increased in a lesser extent than the reducing of total acidity, a balanced taste of grapes was given by the decrease in total acidity rather than sugar accumulation. Grapes of analysed cultivars showed lower concentrations of ascorbic acid and a higher content of organic nitrogenous compound. Berries with higher weight and volume (Transilvania cv.) incurred a higher mechanical deformation, while long berries (Gelu cv.) showed higher resistance to detachment from the pedicel, indicating higher resistance of grapes to packing, transport and storage. Antioxidant activity of mature grapes was high, but involvement of nonflavonoids in increasing the antioxidant capacity was statistically non-significant. Seeded table grapes of new Vitis vinifera L. cultivars showed superior physico-chemical and mechanical characteristics, indicating their high quality in the conditions of temperate continental climate, and promoting the studied cultivars as important grapevine germplasm resources.  相似文献

Different fractions of sea buckthorn fruits were investigated for antioxidant activity and its relationship to different phytonutrients. Capacity to scavenge radicals of the crude extract, like the phenolic and ascorbate extracts, decreased significantly with increased maturation. The changes were strongly correlated with the content of total phenolics and ascorbic acid. Antioxidant capacity of the lipophilic extract increased significantly and corresponded to the increase in total carotenoids. The phenolic fractions made a major contribution to the total antioxidant capacity due to the high content of total phenolics. The lipophilic fractions were most effective if the comparison was based on the ratio between antioxidant capacity and content of antioxidants. The crude extract of fruits showed the highest inhibitory effect in both 2,2-azobis(2,4-dimethylvaleronitrile) (AMVN) and ascorbate-iron induced lipid peroxidations. The aqueous and ascorbate-free extracts showed higher inhibition in the AMVN assay, but lower inhibition in ascorbate-iron induced peroxidation, than the lipophilic extract.  相似文献

Yellow passion fruit juice (PFJ, Passiflora edulis f. flavicarpa) is an important component of many tropical fruit beverages, but limited data exist on its antioxidant chemical composition and stability during processing and storage. PFJ fortified with ascorbic acid (450 mg/L) and sucrose (10%) was compared to a nonfortified control, and each was evaluated with and without vacuum deaeration to remove dissolved oxygen. Following pasteurization, juices were stored for 28 days at 37 degrees C to accentuate physicochemical changes. Pasteurization (85 degrees C for 30 min) resulted in minor changes to physicochemical attributes, but appreciable changes occurred during storage that resulted in termination of the study after 28 days. Oxygen control strategies proved to be ineffective for quality retention and indicated oxygen-independent reactions affecting juice color, phytochemical content, and antioxidant activity. Ascorbic acid and sucrose fortification had an overall preservation effect on total carotenoids, the former resulting in hyperchromic shifts in absorbance, indicating their chemoprotection. Pasteurization resulted in a 25% loss in l-ascorbic acid, which was completely destroyed after 14 days of storage; losses coincided with increased juice browning and formation of 5-hydroxymethylfurfural. Numerous polyphenolics were present in PFJ, and 16 of them were tentatively characterized on the basis of spectral similarities to known standards. Individually, polyphenolics increased during pasteurization, only to decline during storage at elevated temperatures. Antioxidant activity was measured in PFJ and in two subfractions (hydrophilic and lipophilic) after processing and storage, but antioxidant values were nonadditive. A significant chemical interaction affecting antioxidant capacity was found for hydrophilic juice components, but none was observed in the presence of lipophilic phytochemicals. Physicochemical attributes and overall quality of PFJ were retained following pasteurization but were significantly impacted by degradative reactions during accelerated storage.  相似文献

In this study the main chemical parameters, ascorbic acid and polyphenol content, and antioxidant activity of two varieties of prunes, dried by high-temperature (85 + 70 degrees C) and low-temperature (60 degrees C) procedures, were monitored during storage. Ascorbic acid content was higher in the prunes dried at 60 degrees C but significantly decreased in both varieties during storage. The different classes of polyphenols analyzed (cinnamates, anthocyanins, flavonols) showed different stabilities during storage. Neochlorogenic acid decreased only in the President variety, whereas chlorogenic acid increased in both varieties; anthocyanins, present only in the President prunes, disappeared in the first months of storage, and the flavonol content fell significantly in both cultivars during the year of the study. Drying temperature significantly affected the polyphenol content, with different effects according to the class of polyphenols. Antioxidant activity showed a significant increase at the end of the storage period and in the President variety was higher in the sample dried at the higher temperature.  相似文献

Fruit of two apricot cultivars 'Bagheri' and 'Asgarabadi' were treated with putrescine (Put) or spermidine (Spd) at 1 mM and then were stored at 1 °C for 21 days. Fruit were sampled weekly and stored 2 days at 20 °C for shelf-life study. The treatments reduced ethylene production and maintained the firmness and color of the fruit. Peroxidase (POX), catalase (CAT), superoxide dismutase (SOD), and polyphenol oxidase (PPO) activities and total phenol (TP) concentrations were measured during storage. Both cultivars showed chilling injury (CI) incidence, and the severity in control fruit was higher than either Put or Spd treatments. CI incidence in Spd-treated fruit was lower than that of Put-treated fruit. Polyamine (PA) treatment generally increased antioxidant enzyme activity of fruit during storage. PA treatments may help maintain the quality of apricot fruit during storage by inhibiting ripening and decreasing CI incidence.  相似文献

以山东大瓜枣为试材,研究1-甲基环丙烯(1-MCP)负压渗透处理对鲜枣贮藏期间生理指标及抗氧化能力的影响。结果表明:1-MCP处理可以维持鲜枣果实体内较低的活性氧水平(H2O2),提高果实自身抗氧化能力(T-AOC、OH·、O2·-、DPPH),维持果实自身的抗氧化物质抗坏血酸(AsA)及总酚含量;1-MCP处理对果实过氧化氢酶(CAT)呈现抑制表达作用,而对于抗坏血酸过氧化物酶(APX)、超氧化物歧化酶(SOD)、多酚氧化酶(PPO)和过氧化物酶(POD)则有一定的激活作用。  相似文献

Apple and pear fruits are important sources of secondary plant metabolites and one of the major sources of dietary phenolics consumed all year round. The aim of this work was to identify the main variables influencing phenolic content and antioxidant capacity in apples. Higher phenolic and antioxidant contents were observed in some varieties (such as the Delbar Estival apple and Durondeau pear). Storage conditions were important. Our results also showed that fruits should be consumed rapidly after purchase and with their peel. After one week of domestic storage, the ascorbic acid content was found to decrease by 75%. Peeling led to a more than 25% decrease in total phenolics and ascorbic acid. The harvest time (at normal ripeness) had only a limited impact, but significant year-to-year variations were observed. In conclusion, well-chosen and well-stored apples and pears may contribute to an antioxidant-rich diet if consumed rapidly and with their peel.  相似文献

通过对呼吸速率、总可溶性固形物、可滴定酸、pH值、果肉硬度、维生素C、失重率和品质及感官指标的变化进行分析,研究了薄膜气调包装对枇杷(Eriobotrya japonica Lindl.,品种:解放钟)果实冷藏期间呼吸和品质特性的影响,气调包装用的薄膜为低密度聚乙烯薄膜(LDPE,厚度20 μm),以打孔的低密度聚乙烯薄膜包装为对照。结果表明,低密度聚乙烯薄膜包装枇杷果实后,3~4 d后可维持一个相对稳定的适宜枇杷贮藏的O2和CO2的气体浓度,即CO2(4.8±0.67)%,O2(11.5±0.85)%;薄膜气调包装结合低温可明显地降低枇杷果实的呼吸速率;薄膜气调包装可以最大限度地减小冷藏期间的枇杷果实的失重率、果肉硬度、维生素C、总可溶性固形物、可滴定酸和固酸比的变化,维持枇杷的新鲜品质,延长货架期。因此,低密度聚乙烯薄膜(LDPE,厚度20 μm)气调包装可用于枇杷的贮藏保鲜。  相似文献

Apricots (Prunus armeniaca L. cv. Boccuccia spinosa) picked at the commercial ripening stage [soluble solids content (SSC) 12.6%] were left to reach full ripening in continuously humidified air at 20 degrees C. Changes in the rate of ethylene production, firmness, soluble solids concentration, and titratable acidity were measured. The alpha-D- and beta-D-glucosidases, alpha-L-arabinofuranosidase, alpha-D- and beta-D-galactosidases, beta-D-xylosidase, and alpha-D-mannosidase activities were assayed. To evaluate the influence of ethylene on glycosidase activity, propylene (500 microL x L(-1)) was applied to apricots for 24 and 48 h. In apricots ripened in air, ethylene production increased on the first day and exhibited a typical climacteric pattern. Good edible quality was reached in 5 days when SSC was at least 14% and acidity was between 1.1 and 1.2% (% malic acid). During postharvest ripening, alpha-L-arabinofuranosidase activity increased from 1.9 to 11.6 nkat until day 7. alpha-D-Galactosidase, alpha-D-mannosidase, and beta-D-galactosidase activity increased continuously but at a lower rate. beta-D-Xylosidase activity also increased, but the level of activity was lower than the other glycosidases assayed. Pectinmethylesterase (PME) decreased during the postharvest ripening, and propylene enhanced this pattern, by stimulating ethylene production. Even the activities of alpha-L-arabinofuranosidase, beta-D-xylosidase, alpha-D-mannosidase, and beta-D-galactosidase were greatly stimulated by the propylene treatment, which consequently induced rapid softening of the fruits.  相似文献

The effect of storage time on pH, titratable acidity, degrees Brix, organic acids, sugars, amino acids, and color of minimally processed cantaloupe melon (Cucumis melo L. var. reticulatus Naud. cv. Mission) was determined at 4 degrees C and 20 degrees C. Changes in most of the biochemical parameters with storage time were relatively slow at the lower temperature. At 20 degrees C, a 17% loss in soluble solids and a 2-fold increase in acidity occurred after 2 days. Organic acid content also increased considerably with time at this temperature as a result of the production of lactic acid. Oxalic, citric, malic, and succinic acids were the organic acids, and glucose, fructose, and sucrose were the sugars present in the freshly cut cantaloupe. Malic acid concentration decreased concurrently with lactic acid production indicating the possible involvement of anaerobic malo-lactic fermentation along with sugar utilization by lactic acid bacteria. The effect of storage on microbial growth was determined at 4, 10, and 20 degrees C. Gram-negative stained rods grew at a slower rate at 4 degrees C and 10 degrees C than the Gram-positive mesophilic bacteria that dominated microorganism growth at 20 degrees C. Eighteen amino acids were identified in fresh cantaloupe: aspartic acid, glutamic acid, asparagine, serine, glutamine, glycine, histidine, arginine, threonine, alanine, proline, tyrosine, valine, methionine, isoleucine, leucine, phenyl alanine, and lysine. The dominant amino acids were aspartic acid, glutamic acid, arginine, and alanine. Total amino acid content decreased rapidly at 20 degrees C, but only a slight decrease occurred at 4 degrees C after prolonged storage. Changes in lightness (L), chroma, and hue at both temperatures indicate the absence of browning reactions. The results indicate the potential use of lactic acid and lactic acid bacteria as quality control markers in minimally processed fruits.  相似文献

The effect of ozone treatment on the postharvest quality of strawberry was evaluated. Strawberry fruits (Fragaria x ananassa Duch. cv. Camarosa) were stored at 2 degrees C in an atmosphere containing ozone (0.35 ppm). After 3 days at 2 degrees C, fruits were moved to 20 degrees C to mimic retail conditions (shelf life). The changes in several quality parameters such as fungal decay, color, sugar and acids distribution, and aroma were evaluated during the strawberries' shelf life. Ozone treatment was ineffective in preventing fungal decay in strawberries after 4 days at 20 degrees C. Significant differences in sugars and ascorbic acid content were found in ozone-treated strawberries. At the end of cold storage, the vitamin C content of ozonated strawberries was 3 times that of control fruits. A detrimental effect of ozone treatment on strawberry aroma was observed, with a 40% reduced emission of volatile esters in ozonated fruits.  相似文献
