Two 120-d trials (May to September, 1988 and 1989) determined the effects of grazing tall fescue (two varieties) or orchardgrass on forage intake and performance by beef cows. Each summer, 48 cow-calf pairs grazed endophyte-infected Kentucky-31 tall fescue (KY-31), endophyte-free Mozark tall fescue (MOZARK), or Hallmark orchardgrass (OG) pastures (16 pairs/treatment). Forage OM intakes and digestibilities were determined during June and August each year. Cow and calf BW and milk production were determined every 28 d. During June of both years, OM intakes did not differ (P greater than .10) among treatments. During August of 1988, intakes were 18% lower (P less than .05) by KY-31 cows (1.6% of BW) than by MOZARK or OG cows (average 1.95% of BW); however, no differences (P greater than .10) were measured in August of 1989. Estimates of ergovaline consumption during June from KY-31 were between 4.2 (1988) and 6.0 mg/d (1989), whereas August estimates were between 1.1 (1988) and 2.8 mg/d (1989). Ergovaline in MOZARK estrusa was below detection limits, except in August of 1989. Cows that grazed KY-31 lost three times (P less than .01) more BW than cows that grazed MOZARK or OG (42 vs 9 and 13 kg, respectively). Milk production by KY-31 cows was 25% lower (P less than .01) than that by cows that grazed MOZARK or OG (6.0 vs average of 8.0 kg/d). Similarly, slower (P less than .01) calf gains were noted for KY-31 than for MOZARK or OG (.72 vs .89 and .88 kg/d, respectively). Cows grazing KY-31 experienced accelerated BW loss and reduced milk production and weaned lighter calves than did cows grazing MOZARK or OG. Decreased performance was not explained by consistently reduced forage intakes; hence, altered nutrient utilization was suspected.  相似文献

Livestock grazing endophyte (Acremonium coenophialum Morgan-Jones and Gams)-infected tall fescue (Festuca arundinacea Schreb.) perform poorly due to tall fescue toxicosis, especially when animals are under heat stress. In order to determine whether thiamin promotes recovery from tall fescue toxicosis, 1 or 0 g of thiamin per day, as mononitrate, was fed orally to adult Angus (Bos taurus) cows (380 +/- 8 kg) grazing either tall fescue pasture with and without endophyte or alfalfa (Medicago sativa L.). A tethered grazing system employing a split-plot design was used to estimate intake and components of ingestive behavior. No significant differences attributable to thiamin supplements were seen in rates of intake and biting, grazing time and intake per bite when cows grazed endophyte-infected tall fescue during the first 4 d of exposure. When cows grazed endophyte-infected (greater than 95%) tall fescue with 2,091 micrograms/g loline alkaloids after 4 d of exposure, the untreated animals ingested herbage dry matter (DM) at 1.19 kg/h, whereas the cows receiving thiamin ate 1.57 kg/h (P less than .05). Cattle achieved these rates of DM intake by forming bites of 1.0 and 1.2 g DM at 24 and 26 bites/min when treated with 0 and 1 g of thiamin per day, respectively. Thiamin supplements had no effect on ingestive behavior of cows grazing endophyte-free tall fescue or alfalfa after exposure to these forages for 4 d. Responses to thiamin generally were greater when cattle grazing endophyte-infected tall fescue were exposed to heat stress. Oral thiamin supplementation may alleviate tall fescue toxicosis of beef cattle during warm weather.  相似文献

Genetic parameters were estimated to investigate the relationships between meat quality traits and fatty acid composition from 11 855 Japanese Black cattle. The meat quality traits included beef marbling score (BMS), beef color score, firmness of beef (FIR), texture of beef (TEX) and beef fat color score (BFS). The data on fatty acid composition included oleic acid and monounsaturated fatty acids (MUFA) contents, the ratio of MUFA to saturated fatty acids (MUS) and the ratio of elongation. The heritability estimates for meat quality traits ranged from moderate (0.30) to high (0.72). The strong genetic correlations between them were useful for simultaneous genetic improvement. In addition, high heritability estimates of fatty acid composition, ranging from 0.60 to 0.63, indicated that they could also be improved genetically. The genetic correlations of fatty acid composition with BMS, FIR and TEX were weak and negative. In contrast, positive and stronger genetic correlations were found between BFS and fatty acid composition, in particular, related to the level of unsaturation (0.77 and 0.79 for MUFA and MUS, respectively). This implies that improving the level of unsaturation makes fat darker (more yellow) and thus requires balancing with BFS.  相似文献

A grazing trial was conducted with six half-sib yearling Angus steers (average initial weight 281 kg) to quantitate nutrient composition and voluntary intake of vegetative regrowth forage in low-endophyte (Acremonium coenophialum Morgan-Jones and Gams) Kentucky-31 tall fescue (Festuca arundinacea Schreb.) pasture. A new .6-ha section in each of two 3.0-ha pastures (three steers/pasture) was clipped to a 5-cm height on five consecutive days to establish a series of plots that could be grazed continuously during 5-d test periods at uniform stages of vegetative regrowth; each period represented a specific regrowth stage (7, 14, 21, 28 and 35 d). Steers were conditioned by training them to graze to satiety while tethered with an adjustable-length rope to a 1-m galvanized steel post. Grazing time was limited to two sessions daily beginning at 0800 and 1400, and satiety was achieved after no more than 2.5 h of continuous grazing in each session. Forage DM availability was controlled by adjusting tether length and was set each day at 4% of steer BW. Fecal DM output was measured by chromic oxide dilution. A quadratic (P less than .05) effect of regrowth stage was observed for forage contents of NDF and ADF due to abrupt increases in both fractions at wk 5; values for ADL were unaffected by stage of forage regrowth. Forage contents of CP and ash showed a cubic (P less than .05) response to advancing stage of regrowth, with highest (23.6 and 11.0%, respectively) and lowest (14.7 and 9.1%, respectively) values for both fractions occurring at wk 1 and 5, respectively.(ABSTRACT TRUNCATED AT 250 WORDS)  相似文献

文章旨在评估不同非常规饲料原料替代浓缩料对肉牛生长性能、胴体性状及肉品质的影响。试验选择初始体重为(291.69±5.7)kg的肉牛80头,随机分为4组,每组20头,每头牛为1个重复。对照组肉牛在8周试验期每天自由采食水稻秸秆粗饲料并补充基础浓缩料,处理组肉牛自由采食水稻秸秆粗饲料并分别补充用8%米糠、亚麻籽和葵花粕替代基础浓缩料混合物。结果:与米糠组相比,对照组和亚麻籽组肉牛的平均日增重分别显著提高10.74%和12.40%(P<0.05),同时米糠组肉牛的料重比较对照组和亚麻籽组分别显著提高11.69%和15.52%(P<0.05)。亚麻籽组肉牛的背膘厚度较对照组和米糠组分别显著提高7.84%和8.65%(P<0.05)。对照组肉牛眼肌C14:0脂肪酸含量显著低于处理组(P<0.05),而米糠组肉牛眼肌饱和脂肪酸含量较对照组显著提高16.55%(P<0.05),单不饱和脂肪酸含量显著降低11.95%(P<0.05)。亚麻籽和葵花粕组眼肌中蛋氨酸含量较对照组和米糠组分别显著提高168%、179.17%和154%、164.58%(P<0.05)。结论:在本研究条件下,用8%亚麻籽替代浓缩料饲喂肉牛可以提高肌肉蛋氨酸含量,对肉牛生长表现及肌肉脂肪酸组成无负面影响。 [关键词]非常规原料|肉牛|生长性能|胴体性状|肉品质  相似文献

Three levels (0, 1 and 2%) of conjugated linoleic acid (CLA) were combined with two levels (low and high) of monounsaturated fatty acids (MUFA) for pig feeding. Productive, carcass and meat quality traits were studied. Large White ♂ × Landrace × Large White ♀ gilts (= 288) weighting 70 kg were randomly allotted to 6 different feeding treatments and fed to a final average weight of 107 kg. Loins were taken from 48 animals (8 animals randomly selected from each treatment). No differences due to dietary CLA, MUFA or CLA × MUFA interaction were found on average daily gain, average daily consumption, feed conversion ratio, carcass yield, backfat thickness, loin weight, loin pH and loin colour. A significant increase in intramuscular fat content (= 0.010) and in saturated fatty acids (SFA) (< 0.001), and a decrease in MUFA (= 0.001) and desaturase indices were found as consequence of dietary CLA, regardless the MUFA level. Therefore, dietary CLA, MUFA and their interaction did not influence productive and carcass traits of pigs. However, the use of CLA for swine feeding increased the intramuscular fat content and modified the fatty acid profile, regardless the MUFA level of the diets.  相似文献

The effects of three finishing systems on carcass composition and other characteristics of meat were studied in 15 young Eastern Anatolian Red bulls in Eastern Turkey. For 93?days, five bulls grazed pasture (P), five grazed the same pasture and were given concentrate supplementation (P + C), and five grazed the same pasture for 93?days, and then for an additional 40?days, they received concentrate in a barn (PF). The effect of true milk use in the diet of Spanish Brown Swiss male calves on animal performance, carcass and meat quality, and fatty acids composition was studied. In experiment 1, the effect of milk intake [ad libitum continuous (ADLIB) feed vs. restricted 0.7 during 75 days followed by ad libitum feed (RESTR)] and slaughter endpoint (225 kg vs. 5 month) were studied. In experiment 2, ad libitum concentrate feeding [grain-fed (GF)] was compared with milk supplementation until slaughter [milk-fed (MF)] in calves slaughtered at 345 kg. As regards to milk intake, carcass weight and degree of fatness were higher in the ADLIB group (P<0.05). The RESTR group revealed a higher percentage of saturated fatty acids (P<0.05). In experiment 2, the MF group exhibited a higher fat percentage (P<0.05), lower press and cooking losses (P<0.05), and higher scores for tenderness and juiciness (P<0.05) than the GF group. The percentage of saturated fatty acids was higher in the MF group (P<0.05). The results suggest that true milk use in veal production could be an advantageous alternative in terms on production costs, animal performance, and carcass and meat quality.  相似文献

Studies with different populations are required to properly characterize the robustness of associations of polymorphisms in candidate genes with economically important traits across beef cattle populations before this sort of genetic information can be used efficiently in breeding and management decisions. The objective of this study was to evaluate the association of previously reported SNP in the bovine leptin gene with carcass and meat quality traits from a large sample of crossbred beef cattle. Five SNP (UASMS1, UASMS2, UASMS3, E2JW, and E2FB) were genotyped on 1,111 crossbred bulls, heifers, and steers. The measured traits included fat, lean, and bone yield (%) by partial rib dissection, grade fat, LM area, HCW, quality grade, LM i.m. fat, and tenderness evaluation of LM and semitendinosus muscle. Only four SNP were analyzed (UASMS1, UASMS2, E2JW, and E2FB), because UASMS1 and UASMS3 were completely linked. A uni-variate mixed-inheritance animal model was used to evaluate the association of either genotypes or haplo-types with the traits. The two leptin exon 2 SNP were associated with fat and lean yield and grade fat (E2JW, P < 0.01; E2FB, P < 0.05), and they interacted in their effect on LM tenderness (P < 0.01). The leptin promoter SNP were either not associated with any of the traits (UASMS2) or with fat yield only (UASMS1). Three haplotypes (TCAC, CCAT, TTAC) were at high frequency in the population (88%) and had similar effects on all the traits. Compared with the common haplotypes, one haplotype (CCTT) showed a significantly different effect on fat and lean yield and grade fat (P < 0.01), and one haplotype (TTTT) had a different effect on LM tenderness (P < 0.03). Therefore, important associations between SNP within the leptin gene with lean yield, fatness (fat yield and subcutaneous fat), and tenderness were detected. Results confirm some of the previously reported associations, but diverge with respect to others, showing that further efforts are required to validate some prospective associations.  相似文献

Seventy-one bulls representing six breed types: Brahman (BR), F1-Romosinuano (F1ROMO), F1-Limousin (F1LIMO), F1-Angus (F1ANG), F1-Gelbvieh (F1GELB) and ¾ Bos taurus (BT) were used to study the effect of breed type and supplementation on carcass traits and meat quality. Slaughter weight endpoint was at approximately 500 kg. In the non-supplemented group, carcasses of F1ANG and BR surpassed the 56% dressing value, whereas those from F1ROMO, F1LIMO and BT dressed less than 56%. However, F1ROMO and BT groups improved their carcass dressing in two percentage points approximately (P < 0.05), with supplementation. Carcass weight was only affected by supplementation treatments (P < 0.05). At slaughter, the supplemented group dressed higher (56.1%) and produced heavier, less mature, better shaped carcasses than the control group. F1 GELB and F1LIMO showed larger (> 68 cm2) longissimus muscle area (LMA) whereas F1ANG and BR carcasses had better external fat finishing scores and thicker 12th-rib fat thickness (< 1.3 mm). Breed types significantly differed in the yield of most-valuable boneless cuts. Carcasses from supplemented bulls yielded 0.8% more trimmed fat and 1.5% less total retail product.The supplementation × breed type interaction was significant for Warner–Bratzler shear force (WBSF) and overall tenderness. Steaks from BR, F1GELB and BT resulted with higher WBSF values and lower scores for overall tenderness when animals were supplemented (P < 0.05) whereas the highest tenderness score and lowest WBSF value were obtained by non-supplemented BT bulls. The small differences found between BR and crossbred types allows for describing a similar carcass/beef quality performance under the present grazing conditions. Supplementation on pasture, as designed herein, proved to be a useful practice to improve carcass dressing and overall carcass finish but had detrimental effects on bull meat quality. Other management strategies such as castration, and (or) implants, combined with alternate fattening regimes on tropical savannahs, must be designed to improve meat quality of Zebu-influenced bulls.  相似文献

Calpastatin (CAST) is a naturally occurring protein that inhibits the normal tenderization of meat as it ages postmortem. A SNP was identified in the CAST gene (a G to C substitution) and genotyped on crossbred commercially fed heifers (n = 163), steers (n = 226), and bulls (n = 61) from beef feedlots, and steers (n = 178) from a University of Guelph feeding trial. The association of the CAST SNP with carcass and meat quality traits was studied. Carcass traits included fat, lean, and bone yield; grade fat; LM area; and HCW. Meat quality traits included marbling grade; i.m. fat content of LM; tenderness evaluation of LM (Warner-Bratzler shear force) at 2, 7, 14, and 21 d of postmortem aging; and tenderness evaluation of semitendinosus muscle at 7 d of postmortem aging. The mixed model used in the analyses included fixed effects of CAST genotype, sex, slaughter group, and breed composition (linear covariate); sire was a random effect. For the analysis of shear force, i.m. fat content of LM was also included in the model as a linear covariate. Shear force measures were analyzed within days of postmortem aging and by repeated measures analysis. The CAST SNP allele C was more frequent (63%) in the crossbred population than allele G. The CAST SNP was associated with shear force across days of postmortem aging (P = 0.005); genotype CC yielded beef that was more tender than GG (-0.32 kg +/- 0.13), and CG had intermediate tenderness. The corresponding average allele substitution effect (G to C substitution) was also highly significant (-0.15 +/- 0.05 kg, P = 0.002). A lower percentage of unacceptably tough steaks (shear force > 5.7 kg) at 2 and 7 d postmortem was associated with an increasing number of C alleles (P < or = 0.05). At 7 d postmortem, the percentage of unacceptably tough steaks decreased by 24 and 35%, respectively, for animals carrying 1 and 2 copies of the C allele relative to animals with no C alleles. However, genotype CC had a greater fat yield (+1.44 +/- 0.56%; P = 0.037) than genotype GG, with a corresponding allele substitution effect of 0.67 +/- 0.27% (P = 0.015). Therefore, the CAST SNP allele C was associated with increased LM tenderness across days of postmortem aging and, importantly for the beef industry, had a significant reduction in the percentage of steaks rated unacceptably tough by consumers based on an assumed threshold level.  相似文献

Eighteen Angus steers (438 +/- 4 kg of BW) were supplemented with varying levels of corn oil (0 g/kg of BW, none; 0.75 g/kg of BW, MED; or 1.5 g/kg of BW, HI) on rotationally stocked, endophyte-free tall fescue to determine the effect of supplemental oil level on in vivo digestibility, intake, performance, and carcass traits. Pelleted cottonseed hulls were used as a carrier for the oil supplements, and all supplements were offered to steers using Calan gate feeders for individual intake determination. On d 49, each steer was dosed with a controlled-release capsule containing chromium sesquioxide, and fecal samples were obtained 12 d later over a 7-d period to estimate fecal output that, with forage, supplement, and fecal indigestible NDF concentration, was used to estimate DMI and in vivo total diet digestibility. Steers were slaughtered at the end of the 116-d grazing period, and carcass data were collected at 24 h postmortem. Total fatty acid intake linearly increased with corn oil supplementation, and forage DMI, total DMI, and total DE intake were linearly decreased (P < 0.01). The decrease in total DMI was reflected in forage substitution rates greater (P < or = 0.01) than 1, with a trend (P = 0.09) for a greater substitution rate in HI than in MED. In vivo DM, OM, and NDF digestibility were linearly decreased (P < 0.01) by corn oil supplementation. Average daily gain and final BW tended (P = 0.09) to increase linearly in response to oil level. Oil conversion (0.36 kg of BW gain/kg of corn oil) was greater (P < or = 0.05) than zero and did not differ (P = 0.15) between MED and HI. Dressing percent (P = 0.09), carcass weight (P = 0.01), and carcass backfat thickness (P = 0.01) increased linearly with oil supplementation. No treatment effect was observed for carcass LM area, KPH percentage, marbling score, or yield grade (P > 0.10). Oil supplementation to grazing steers linearly reduced forage DMI intake; however, animal performance was maintained and tended to be greater for oil-supplemented cattle. Oil supplementation increased carcass fat thickness and weight without altering other carcass quality parameters.  相似文献

Isonitrogenous amounts of two protein sources differing in rumen degradation rate and in lipid composition were fed to sheep with or without a rapidly fermentable cereal grain. The effects on intake, carcass leanness, and muscle fatty acid (FA) composition were examined. Thirty-eight crossbred wether lambs (9 mo, 35 to 48 kg) were allocated by stratified randomization to six treatment groups: 1) basal diet of alfalfa hay:oat hay (20:80) ad libitum = basal; 2) basal + lupin (358 g DM/d) = lupin; 3) basal + fish meal (168 g DM/d) = fish meal; 4) basal + barley (358 g DM/d) = barley; 5) basal + barley + lupin (179 + 179 g DM/d) = barley/lupin; or 6) basal + barley + fish meal (179 + 84 g DM/d) = barley/ fish meal. Lambs were fed individually. Dietary treatments were imposed for 8 wk, and the supplements were offered at 2-d intervals. Daily feed intake and weekly BW of lambs were recorded. At the end of the feeding period lambs were slaughtered after an overnight fast. Hot carcass weight (HCW) and fat depth (GR; total fat and muscle tissue depth at 12th rib, 110 mm from midline) were recorded. At 24 h postmortem samples of longissimus thoracis (LT) and longissimus lumborum (LL) muscles were taken from chilled (4 degrees C) carcasses for the assessment of FA composition and meat tenderness, respectively. Lambs fed lupin or fish meal with or without barley had heavier slaughter weights (P < 0.004) and HCW (P < 0.001) than lambs fed basal or barley when initial BW was included as a covariate. The lupin diet also resulted in heavier carcasses (P < 0.05) than the fish meal or barley/fish meal diets. With GR as an indicator, fish meal and barley/ fish meal diets produced leaner carcasses (P < 0.01) than lupin and barley/lupin lambs. Long-chain n-3 FA content [20:5n-3 (P < 0.001), 22:5n-3 (P < 0.003), and 22:6n-3 (P < 0.001)] in the LT muscle were substantially higher with the fish meal and barley/fish meal diets, whereas muscle total n-6 FA was increased (P < 0.003) by lupin and barley/lupin compared with all other diets. Thus, increased muscle long-chain n-3 FA content occurred without an increase in fatness measured as GR, whereas increased muscle n-6 FA content was associated with an increase in carcass fatness. Under these circumstances, a reduction in carcass fatness had no effect on meat tenderness measured as Warner-Bratzler shear force.  相似文献

A three-year study was conducted to investigate the effects of endophyte-free (E−), endophyte-infected (E+) and novel endophyte-infected (EN) tall fescue on the growth and pregnancy rate of beef heifers during the spring. Each year, 48 beef heifers were strip-grazed on stockpiled fescue from December through February, fed fescue hay during late February to early April and then rotationally grazed on spring growth of fescue until June. At the end of the trial, heifers had been maintained on E+, E− or EN (pasture or hay) for a total of 152, 188 and 191 d in years 1, 2, and 3, respectively. In late March, heifers were synchronized using a controlled intravaginal drug-releasing device, (CIDR®) for 7 d followed by injection with PGF2α (Lutalyse®). Heatmount detectors (Kamar®) and observation for behavioral estrus were used to detect estrus for 63 d. Heifers were artificially inseminated 8 to12 h after the onset of standing estrus. Conception was determined by transrectal ultrasonography at approximately 30, 60 and 90 d after synchronization. Reproductive performance did not differ among treatments (P ≥ 0.20). Pregnancy rate was 54, 65, and 65% for E+, E− and EN, respectively. However, during the spring, growth and prolactin were decreased (P < 0.01) for heifers on E+. Gains on spring pasture were 0.24, 0.75, and 0.71 kg/d (SEM ± 0.03) for E+, E− and EN, respectively. Based on these results, the wild type endophyte-infected fescue can be used in production systems as a source of winter forage but producers should consider placing heifers on alternative forage (such as the novel endophyte-infected fescue) in the spring.  相似文献

Previous studies have indicated that some leptin gene polymorphisms were associated with economically important traits in cattle breeds. However, polymorphisms in the leptin gene have not been reported thus far in Japanese Black cattle. Here, we aimed to identify the leptin gene polymorphisms which are associated with carcass traits and fatty acid composition in Japanese Black cattle. We sequenced the full‐length coding sequence of leptin gene for eight Japanese Black cattle. Sequence comparison revealed eight single nucleotide polymorphisms (SNPs). Three of these were predicted to cause amino acid substitutions: Y7F, R25C and A80V. Then, we genotyped these SNPs in two populations (JB1 with 560 animals and JB2 with 450 animals) and investigated the effects on the traits. Y7F in JB1 and A80V in JB2 were excluded from statistical analysis because the minor allele frequencies were low (< 0.1). Association analysis revealed that Y7F had a significant effect on the dressed carcass weight in JB2; R25C had a significant effect on C18:0 and C14:1 in JB1 and JB2, respectively; and A80V had a significant effect on C16:0, C16:1, C18:1, monounsaturated fatty acid and saturated fatty acid in JB1. The results suggested that these SNPs could be used as an effective marker for the improvement of Japanese Black cattle.  相似文献

文章旨在研究育肥期肉牛日粮中添加不同水平的青贮艾草对生长性能、胴体品质及肌肉脂肪酸组成的影响。试验选择15月龄平均体重为(326±22)kg的肉牛24头,随机分为4组,每组6个重复,每个重复1头牛。试验分为育肥前期和育肥后期两个阶段,对照组饲喂基础日粮+水稻秸秆,试验组在基础日粮中分别补充5%、10%和15%的青贮艾草,两个阶段精料补充料干物质、粗蛋白质、粗脂肪、中性洗涤纤维、酸性洗涤纤维、脂肪酸组成及主要脂肪酸含量相近。结果 :精料摄入量随日粮青贮艾草添加水平的升高表现为显著二次曲线效应(P <0.05);随着日粮艾草添加水平的升高,肉牛末重和平均日增重表现为显著二次曲线效应(P <0.05),而料比线性降低(P <0.05)。牛的屠体重、眼肌面积和大理石纹评分随日粮青贮艾草添加水平的升高表现为显著二次曲线效应(P <0.05),而背膘厚度表现为显著二次曲线降低(P <0.05)。眼肌C18:0、C18:1和单不饱和脂肪酸含量显著线性降低(P <0.05),亚麻油酸、C18:3、C20:4、C22:0和C24:1脂肪酸含量显著线性降低(P <0.05),多不饱和脂肪酸和多不饱和脂肪酸与饱和脂肪酸比值表现为显著二次曲线增加(P <0.05)。结论 :日粮青贮艾草添加水平对肉牛生长性能、肌肉脂肪酸含量的影响表现为二次曲线效应,但高水平青贮艾草降低了肉牛生长性能、屠宰性能及肉品质。肉牛育肥期日粮中适宜的青贮艾草添加水平为10%。  相似文献
