Three hull-less barleys, Washonupana (WSNP), Waxbar (WXB), and Bangsa (BGS), were fed to broiler chicks in 21% protein diets containing 0.5% cholesterol in replicate trials. A corn-based diet, with added cholesterol, served as a control. Alternate diets were supplemented with -glucanase (ENZ). -glucan content ranged from 4.9% to 6.1% and soluble dietary fiber (SDF) from 3.6% to 7.5% in the barleys. Data from the two trials were pooled for statistical analysis by the SAS General Linear Models procedure. In body weight gain, chicks fed WSNP — ENZ were lower (P<0.05) than all other treatments. The -glucanase supplement to the WXB and BGS barley tended to improve gains, but the differences were not significant for either barley. Feed to gain ratios were lowest (P<0.0001) for corn fed chicks and lower (P<0.05 toP<0.0001) for those fed the barley+ENZ diets compared to barley –ENZ. Chicks fed barley diets had lower (P<0.05) total serum cholesterol (TSC) and LDL-cholesterol than those fed corn diets, regardless of ENZ supplementation. For chicks on barley –ENZ diets, TSC levels for WSNP, WXB, and BGS were 146, 152, and 142 mg/dl respectively and for chicks on barley +ENZ diets, 218, 200, and 178 mg/dl. LDL-cholesterol levels followed the same trend and there was little difference in serum triglycerides. The BGS+ENZ lowered TSC 30% from the corn control compared to 10.7% and 18% for WSNP+ENZ and WXB+ENZ, suggesting additional hypocholesterolemic factors, possibly tocotrienol and SDF other than 13, 14 -D-glucans.Contribution No. J-2487, Montana Agricultural Experiment Station. Effect of full-fat or defatted rice bran on serum cholesterol   总被引:6,自引:0,他引:6  
Rice bran has been shown to lower serum cholesterol in hamsters. Leghorn cockerel chicks were fed 60% full-fat rice bran (FFRB) and corn/soy (CS) diets with 0.5% added cholesterol. Both diets contained 19% protein. All reported parameters are on blood serum. Significant differences (p<0.05) were found in total cholesterol (TC), triglycerides (TG), high-density and low-density lipoprotein cholesterol (HDL and LDL). In a second study, chicks were fed FFRB, defatted rice bran (DFRB), and CS diets balanced for 18% protein, 14.47% total dietary fiber and 10.78% lipid with 0.5% added cholesterol. Both TC and TG were significantly lower (p<0.05) in chicks fed FFRB and CS diets. Significant differences were found in HDL values for all diets with FFRB exhibiting the highest mean value (155 mg/dl) and CS exhibiting the lowest mean value (114 mg/dl). All diets were significantly different (p<0.05) in LDL, with mean values of 249, 318 and 275 mg/dl for FFRB, DFRB and CS, respectively. To simulate the effects of nutritionally adequate and inadequate vegetariandiets, rats were fed, for 28 days, an isonitrogenous, isocaloric, amino acidunbalanced cereal diet (CD) deficient in lysine and tryptophan or abalanced cereal-legume diet (CLD). The impact of these diets on enzymesresponsible for digestion of proteins and carbohydrates were measured.Neither experimental diet significantly affected the animal's final weight orfeed consumption in comparison with controls fed a standard mixed dietfrom plant and animal sources. However, during the first three weeks, theweight gain of rats fed the CD was significantly lower (p<0.01;p<0.05) than that of the controls. CD fed rats also had a higher feedefficiency ratio (p<0.05), demonstrating increased feed consumptionper unit of body weight. They also had decreased pancreatic-amylase activity (p<0.05), serum phytolytic and zoolytic-amylase activity (p<0.05) and serum protein level(p<0.05) than the controls. Activity of pancreatic trypsin and intestinalenzymes (sucrase, maltase, aminopeptidase N) were the same as in thecontrols. In rats fed CLD, growth, food consumption, and enzyme activitiesdid not change, however serum protein and glucose levels were higher(p<0.025; p<0.005) than in the controls. It is hypothesized thatdecrease in -amylase activity was mostly related to the tryptophandeficiency in the CD because this enzyme contains the highest amount oftryptophan units among all tested enzymes.  相似文献

Barley varieties of differing fungal disease resistance were grown in triplicate plots at Lacombe and Lethbridge, Alberta with the disease resistant variety (FR) sprayed with a foliar fungicide to maximize differences in field fungal disease. Both varieties were harvested at soft dough and ensiled in minisilos to assess differences in fungal contamination on ensiling properties, nutritional quality, aerobic stability and associated bacterial and fungal microbiomes. Data were analysed as repeated measures with the effect of treatment × time (duration of ensiling or aerobic exposure) included in the model. The percentage leaf area diseased by net form net blotch was higher (p < 0.05) in the untreated barley cv. Sundre (UN, 59.1% leaf area affected at Lacombe and 25.2% at Lethbridge) than in the FR barley cv. Chigwell (0.7% leaf area affected at Lacombe and 0.1% at Lethbridge). Fungal resistant barley had a lower (p < 0.01) acid and neutral detergent fibre content. Relative abundance of Xanthomonadales was higher (p = 0.02) for FR than UN, while Lactobacillales dominated the bacterial microbiome after 60 day of ensiling in both silages. Bacillales dominated both FR and UN after 21 day of aerobic exposure. Fungal resistant fresh barley forage had a tendency (p = 0.10) for a greater relative abundance of Pleosporales, while UN had higher (p < 0.01) Hypocreales. Mould counts were lower (p = 0.01) for FR than UN after 7 day of ensiling. Fungal resistant barley had minimal influence on the fungal community that contributed to the aerobic deterioration of barley silage.  相似文献

Serum and liver lipids of rats fed rubber seed oil   总被引:1,自引:0,他引:1  
Crude rubber seed oil (RSO) was incorporated at the 5% level in diets free of cholesterol or containing 1% cholesterol, respectively. These studies were initiated for the purpose of evaluating the palatability and potential toxicity of RSO. Corn oil was used as a control. A considerable amount of unsaponifiable matter was detected in RSO. In addition, RSO was found to possess a fatty acid profile which was fairly different from that of corn oil, primarily due to a much higher content of linolenic acid and a lower content of linoleic acid in RSO. No adverse effects on food intake and average daily gain were observed in rats fed RSO in both cholesterol-free and cholesterol diets. The presence of RSO in cholesterol-free diets results in lower (p<0.05) serum and liver total cholesterol levels than in control animals. A relative hypercholesterolemic effect compared to corn oil was observed however, when RSO was added to diets containing 1% cholesterol. In summary, the physicochemical properties of RSO as well as the presence of cholesterol in the diet are important factors in evaluating the cholesterolemic effect of RSO.  相似文献

Low cost weaning mixtures were prepared by mixing (i) malted pearl millet (Penicitum typhidium L), roasted amaranth (Amaranthus sp.); roasted green gram (Vigna radiata); jaggery and (ii) malted barley (Dehusked barley); roasted amaranth grain; roasted green gram; jaggery in proportion 60204045 wt/wt and were nutritionally evaluated. Both the blends had a nutrient composition within the range prescribed by the Indian Standard Institute (ISI) for processed weaning foods. The processing of grains resulted in lower levels of phytic acid, polyphenols and saponins and higher in vitro protein digestibility than those of the raw grains used for preparing mixtures. Both the mixtures were acceptable to trained panelists and children.  相似文献

Diets containing 0, 25, 50, or 75% finely ground barley (high in soluble fiber and soluble -glucans) were fed to groups of hamsters. After four weeks, serum total cholesterol (CH) levels in these animals were most elevated in the group fed the barley-free (0% barley) diet. Compared to animals eating this diet, the 25% barley diet lowered CH by 16.4%. However, the 50% barley diet lowered CH further by only 4.1% while the 75% barley diet caused virtually no further lowering of CH. Thus, the CH-lowering response to barley cannot be viewed as a dose dependent response. The lowering pattern for serum triglycerides, however, suggested a dose dependent response. Serum total-CH: high-density-lipoprotein (HDL)-CH or low-density-lipoprotein (LDL)-CH:HDL-CH ratios were not significantly affected by barley level in the diets.  相似文献

Grain compositional components impacting barley (Hordeum vulgare L.) use in food, feed and fuel products, must be combined with improved agronomic traits to produce a commercially viable barley cultivar. Little current information is available on grain composition and variability among winter barley genotypes. This study was conducted to determine the variability among modern hulled and hulless winter barley genotypes in grain composition. Barley types varied significantly in grain and kernel weight, starch, beta-glucan, oil and ash content, but not in protein concentration. Hulless barley had significantly higher grain test weight and starch concentration than hulled and malting types, and significantly higher beta-glucan than malting barley. Hulless barley had significantly lower kernel weights, oil, and ash concentrations than hulled and malting types. Higher starch and lower fiber and ash in grain of hulless barley versus hulled feed or malting type barley are characteristics that increase hulless barley desirability. Selection for high starch concentration among all barley types is feasible and will facilitate development of barley cultivars better suited for use in feed, malt, and ethanol production.  相似文献

Previous research has demonstrated that the total replacement of corn oil (CO) with cottonseed oil (CSO) in the diets of growing male rats results in a lowering of the total cholesterol (TC) concentration in the serum. It is not, however, known if a partial replacement of dietary CO with CSO would be sufficient to lower TC levels, nor is the effect of replacing dietary CO with CSO on other indices of cholesterol status (e.g., the levels of high-density lipoprotein cholesterol [HDL-C], non-HDL-C [i.e., very-low and low-density lipoprotein-cholesterol], or the TC/HDL-C ratio). Growing male rats were fed diets having CO, CSO, or a CO/CSO (1:1, w/w) oil mixture (OM) as the source of dietary oil (diet groups CO, CSO, and OM, respectively). There were no differences between CO and OM groups for TC, HDL-C, non-HDL-C, or the TC/HDL-C ratio. However, TC was significantly lower (p 0.05)for the CSO group than the CO group (2.85 vs. 3.23 mmol/l, or 110 vs. 125 mg/dl, respectively) as was HDL-C (1.83 vs. 2.13 mmol/l, or 71 vs. 82 mg/dl, respectively), but there were no differences between these groups for non-HDL-C or the TC/HDL-C ratio. Diet had no effect on serum triglycerides (TGs) or on total liver content of either cholesterol or TGs. Thus, partial (50%) replacement of CO with CSO was without effect on any of these serum indices of cholesterol status, but total replacement resulted in lower TC and HDL-C, without affecting non-HDL-C or the TC/HDL-C ratio. Because, relative to CO, CSO has higher levels of saturated fatty acids but lower levels of monounsaturated and polyunsaturated fatty acids, the cholesterol-lowering effect of CSO appears to be unrelated to its fatty acid composition, and may be caused by a component of its nonsaponifiable fraction.  相似文献

The availability of -carotene from Spirulina as compared to standard all trans -carotene was studied by the liver and kidney vitamin A storage method. After 21 days of vitamin A depletion, the rats were repleted with -carotene from Spirulina and a standard source at two dietary levels (60 and 120 µg/day) for a 10 day period. At lower levels, the liver storage levels of vitamin A and the percent of -carotene absorption were comparable to those of the standard. At higher levels both these parameters of the Spirulina fed group were significantly (P<0.01) inferior to the standard source fed group. However, the Spirulina fed group showed better (P<0.05) growth than the standard fed group did at both low and high levels of feeding.  相似文献

There have been few studies on the effect of cottonseed oil (CSO), one of the most commonly used vegetable oils in the United States, on indices of lipid status either in the rat or in any other species. Previous studies with rats have focused on the effect of CSO, versus that of other vegetable oils, on the concentration of cholesterol in serum and liver or on a limited number of fatty acids in serum, adipose tissue, or liver. The present study was designed to compare more fully than in previous studies the effect of CSO to that of corn oil (CO) on the fatty acid composition of serum, adipose tissue, and liver. Two groups of male rats (n=10 each) were used, each fed one of two purified diets containing 100 g/kg of either CO or CSO. Between-group differences included higher values (mol% total fatty acids) in adipose tissue for palmitic acid and stearic acid, but lower values in serum, adipose tissue, and liver for cis-vaccenic acid and oleic acid (C18:1n-9) for the CSO group than the CO. In addition, values in serum, adipose tissue, and liver for -linolenic acid (C18:3n-3) and its metabolite, docosahexaenoic acid (C22:6n-3), were lower for the CSO group than the CO. There was no effect of diet on serum or tissue levels of n-6 fatty acids (linoleic acid, dihomo--linolenic acid, and arachidonic acid). Differences in fatty acid compositions noted, e.g., those for C18:1n-9 and C22:6n-3, mainly reflected compositional differences between the two oils. Thus, use of CSO rather than CO affected serum and tissue concentrations of saturated, monounsaturated, and n-3 polyunsaturated fatty acids (PUFAs) but had no effect on n-6 PUFA status.  相似文献

In recent years, there has been an ever-increasing interest in the research of polyphenols obtained from dietary sources, and their antioxidative properties. The purpose of this study was to determine the effect of boiling buckwheat and barley groats on the antioxidant properties and dietary fiber composition. Antioxidative properties were investigated using methyl linoleate model system, by assessing the DPPH (2,2-diphenyl-1-picrylhydrazyl) radical scavenging activity and metal chelating activity. The results were compared with butylated hydroxytoluene (BHT). Raw barley and buckwheat groats extracts showed higher DPPH scavenging ability compared to boiled barley and buckwheat groats extracts. Raw barley groats extract exhibited higher antioxidant activity than boiled groats extract in the methyl linoleate emulsion. Higher chelating ability in relation to Fe (II) ions was observed for boiled groats extracts as compared to raw groats extracts. BHT showed small antiradical activity and metal chelating activity, while showing higher antioxidative activity in emulsion system. The analysis of groats extracts using HPLC method showed the presence of rutin, catechin, quercetin, gallic, p-hydroxybenzoic, p-coumaric, o-coumaric, vanillic, sinapic, and ferulic acids. Differences in the content of dietary fiber and its fractions were observed in the examined products. The highest total dietary fiber content was detected in boiled buckwheat groats, while the lowest - in boiled barley groats. The scientific achievements of this research could help consumers to choose those cereal products available on the market, such as barley and buckwheat groats, which are a rich source of antioxidative compounds and dietary fiber.  相似文献

Banana starch was isolated and used for preparation of two types of cookies. Chemical composition and digestibility tests were carried out on banana starch and the food products, and these results were compared with corn starch. Ash, protein, and fat levels in banana starch were higher than in corn starch. The high ash amount in banana starch could be due to the potassium content present in this fruit. Proximal analysis was similar between products prepared with banana starch and those based on corn starch. The available starch content of the banana starch preparation was 60% (dmb). The cookies had lower available starch than the starches while banana starch had lower susceptibility to the in vitro -amylolysis reaction. Banana starch and its products had higher resistant starch levels than those made with corn starch.  相似文献

Barley (Hordeum vulgare L.) that is infested with Fusarium head blight (FHB, ‘scab’) is unsuitable for malting and brewing because it may contain mycotoxins and has unacceptable malting quality. Fungal proteinases are apparently often involved in plant-microbe interactions, where they degrade storage proteins, but very little is known about the enzymes that the fungi produce in the infected grain. We have shown previously that one plant pathogenic fungus, Fusarium culmorum, produced subtilisin- and trypsin-like enzymes when grown in a cereal protein medium. To establish whether these proteinases were also synthesized in FHB-infested barley in vivo, field-grown barley was infested as the heads emerged. Extracts were prepared from the grain as it developed and matured and their proteolytic activities were measured with N-succinyl-Ala-Ala-Pro-Phe p -nitroanilide and N-benzoyl-Val-Gly-Arg p -nitroanilide. The heavily infested barleys contained both subtilisin- and trypsin-like activities. These enzymes reacted with antibodies prepared against each of the two F. culmorum proteinases, indicating that those produced in the laboratory cultures and in the field-infested barley were the same. The presence of these proteinases correlated with the degradation of specific buffer-soluble proteins in the infested grains. These enzymes readily hydrolyzed barley grain storage proteins (C- and D-hordeins) in vitro. The presence of these Fusarium proteinases in the barley indicates that they probably play an important role in the infestation, but exactly how and when they function is not clear.  相似文献

Ileal endogenous N losses (ENL) were measured, using the15N isotope dilution technique, in piglets (17 kg) fed different barley genotypes (naked, spring, winter with low/high beta -glucan content) or diets containing 330, 530, 730 or 930 g of a blend of barleys/kg diet. The apparent protein and amino acid digestibilities of the naked variety and the winter variety with a high beta -glucan content were, on average, significantly higher than those for the other two varieties. The ENL were inversely correlated (p<0·01) with the apparent digestibilities but the difference between each of them was not significant (p>0·05). The ENL increased linearly with the inclusion level of barley in a N-free basal diet (2 mg endogenous N/g barley). Isolated hulls added to a N-free diet at the rate of 100 or 200 g/kg diet exerted no significant effect on the ENL (1·80 g endogenous N/kg diet in both cases vs. 1·76 g for the basal level). On the contrary, the effect of isolated bran, measured under similar conditions, was significantly higher and dependent on fibre intake (2·59 and 3·31 g N/kg diet, respectively). It is concluded that the ENL are affected by the insoluble bran fibre but not by the hulls, nor by the level of beta -glucan.  相似文献

Barley was milled into flours with extraction rates between 100 and 69%. The nutritive value of the flours was studied by chemical analyses and in balance trials with growing rats. The concentration of essential nutrients decreased when the extraction rate was lowered. The protein content in the 69% extraction flour was reduced to 82% of that in whole barley. Lysine (g/16 g N) decreased from 3.30 in whole barley to 2.82 in the most refined flour, however, the biological value was not significantly affected by the degree of milling. The content of minerals was reduced to 40% of that in whole barley, but only rats fed refined flours were able to maintain their femur zinc concentration. Factors present in the outer part of the kernel interfere strongly with utilization of zinc; and it appears that phytate is not solely responsible for the adverse effects on zinc utilization. In rats fed whole barley, femur zinc could be maintained and protein utilization improved by zinc supplementation. It could be concluded that unless barley is milled into refined products, or zinc is supplied from external sources, zinc utilization is adversely affected and protein utilization is limited by a poor zinc status.  相似文献

The possibility of using naked barley for food products is gaining popularity due to its dietary fibre content, especially β-glucans. The technological process (dough preparation, fermentation and baking) influences bread quality but also may contribute to degradation or preservation of valuable grain components. The aim of the study was to investigate the effects of different wholemeal barley flour share and bread production method on the quality of bread and non-starch polysaccharides content and solubility.Barley enriched bread contained more both soluble and insoluble dietary fibre and β-glucans, products of 40% barley share contained 67% more total dietary fibre and 160% more β-glucans than control. However, barley incorporation decreased the amount of soluble arabinoxylans. High barley contents contributed to the breads’ volume reduction by 14% and change in their crumb and crust colour. However, barley enriched breads gained higher ratings of taste than wheat bread. Barley sourdough fermentation improved breads’ volume, colour and sensory properties. Sourdough fermentation also resulted in higher concentration of dietary fibre, arabinoxylans and β-glucans. The beneficial effect of barley addition to wheat bread may be successfully enhanced by using barley wholemeal sourdough fermentation.  相似文献

Mango (Mangifera indica) is a fruit that grows in tropical regions. The aim of this work was to isolate the starch from two varieties of mango highly consumed in Mexico (criollo and manila), and to evaluate its chemical composition, along with some morphological, physicochemical and functional properties. Mango starch had an amylose content of about 13%, the fat content of criollo variety starch (0.1–0.12%), was similar to that of commercial corn starch used as control (0.2%); both mango starches had higher ash amount (0.2–0.4%) than corn starch. Mango starches presented a smaller granule size (10 m) than corn starch (15 m), along with an A-type X-ray diffraction pattern with slight tendency to a C-type. All values of water retention capacity (WRC) increased with the temperature. When the temperature increased, solubility and swelling values increased and in general, mango starches had higher values than corn starch. Both mango starches had gelatinization temperatures lower than the control, butcriollo variety starch presented higher enthalpy values thanmanila variety and corn starches. Overall, it was concluded that due to its morphological, physicochemical and functional properties, mango starches could be a feasible starch source with adequate properties, suitable for using in the food industry.  相似文献

Carotenoids and tocols of 20 genotypes of colored barley divided into three groups (A, B, C) were investigated. These included 16 F8 recombinant inbred lines obtained from crosses of four parental lines: 2005 FG, K4-31, L94 and Priora. The aim of the present study was to identify, quantify and profile characterize of tocols and carotenoids. Tocols profile is characterized by the prevalence of tocotrienols on tocopherols. The α-tocotrienol was the most represented tocol isomer, contributing about 53.03% of the total content. The highest α-tocotrienol content (33.67 μg g-1) was found in the blue naked parental genotype 3007 (C-Group). The most abundant carotenoid was lutein on average 86% of total followed by zeaxanthin 10% and by α-carotene 3.40%. The Priora cultivar (C-Group) was the genotype with the highest lutein content (4.10 μg g-1). The study found great variability in the content of carotenoids and tocols along the lines of each group.  相似文献

The influence of heat processing of African yam bean seed flour on the growth and organ weights of rats was studied. Body weight change, feed utilization and feed conversion ratio were improved by heat processing. All rats significantly (p0.05) gained weight except those fed raw African yam bean and basal diets (diets 3 and 1 respectively). Raw African yam bean diet decreased the growth of rats and had negative effect on the organ weights especially the pancreas which was enlarged. The results indicate that heat processing improved the growth of rats and organ weights due to heat inactivation of toxic factors especially trypsin inhibitors.  相似文献
