Proximate and mineral composition, seed protein fractions, amino acid composition, fatty acid profiles and antinutritional factors were analysed for the seeds of the tribal pulse,Bauhinia malabarica. The seeds contained higher amount of crude lipid when compared with most of the domesticated pulses. The seeds were rich in minerals like Ca, Mg and Fe. Glutelins (45%) constituted the major seed protein fraction followed by globulins which accounted for about 34%. Cystine and methionine were found to be the limiting essential amino acids; whereas tyrosine and phenylalanine content were fairly high when compared with WHO requirement pattern. The unsaturated fatty acids, oleic acid and linoleic acid, were predominant in seed lipids. Presence of antinutritional substances like total free phenols, tannins, L-DOPA and haemagglutinating activity also were analysed/assayed.  相似文献

The chemical composition of samh seed have been investigated. Proximate analysis showed a composition of 22.25% protein, 5.7% moisture, 5.6% fat, 4.0% ash, 9.7% crude fiber, and the remainder being total carbohydrates. Mineral element analysis revealed that potassium, magnesium, sodium and calcium were present as the major elements. Iron, manganese, zinc and copper were found at lower levels. However, lead was not detected in the samh seeds. Gas-liquid chromatographic analysis of the methylester of the fatty acids of the samh seeds oil revealed the presence of fourteen fatty acids. Linoleic and oleic acids were the principle unsaturated fatty acids. While palmitic acid was the main saturated fatty acid. Amino acid analysis of the samh seeds showed the presence of seventeen amino acids including eight essential amino acids. Glutamic acid, arginine, and aspartic acid were the major amino acids. Cystine and proline were present in trace amounts. These results some of which have not been reported elsewhere indicate the high nutritional potential of Saudi samh seeds. The total aerobic bacterial count and total sporeformers of seeds were 19×107 and 5×104 cfu/g respectively, thus the enterobacteriaceae,B cereus and yeast and molds were 5×102, 1×102 and 7×102 respectively. The seeds were Staph. free and the samh extract had no antimicrobial effect.  相似文献

Seeds of 28 wild growing legumes of India were analysed for their protein content and amino acid compositions. A wide variation was observed in protein contents (18.3 to 50.9%). The amino acid composition and protein content of some of these seeds were in close proximity to that of soybean; however, some legumes registered a higher level of certain amino acids and protein as compared to the latter.  相似文献

An investigation of the composition of two varieties ofLupinus termis seeds showed the presence of proteins, free amino acids, lipids, lignin, polysaccharides and mannitol. The polysaccharide materials (27.47 – 34.33%) consisted of starch, combined galacturonic acid, galactose, arabinose, xylose and rhamnose. Combined galactose and rhamnose comprised the major components of polysaccharide materials. Protein's constituted 46.11 – 50.57% ofL. termis seeds. The amino acid composition of the seeds as well as those of the proteins isolated with different agents were determined. The amino acid patterns of free and combined amino acids varied according to the extracting agent.  相似文献

The edible fruit tissue of Indian laburnum fruit (Cassia fistula L.), a member of the leguminosae family, was analyzed for certain organic compounds and mineral nutrients. Of the nine macro- and micronutrients studied, K was the most highly concentrated such that 100% of the US Recommended Dietary Allowances (RDA) for adults could be met by the consumption of about 100 g of the fresh fruit. Na contents in pulp and seeds are relatively low. Ca content at 827 mg per 100 g of dry matter is one of the highest of any fruits, and could contribute towards the RDA requirement of 800 mg of Ca for adults per day. The fruit is a good source of Fe and Mn, and their concentrations are considerably higher than those found in apple, apricot, peach, pear, and orange. Aspartic acid, glutamic acid, and lysine constituted 15.3, 13.0, and 7.8% of the total amino acids respectively in the pulp. In the seeds the same amino acids constituted, 16.6, 19.5, and 6.6%. The relatively high energy content of the fruit at 18 kJ/g could enhance the daily energy requirement of people in need of adequate caloric intake. The results of the present study demonstrate that the Indian laburnum fruit could be a source of some important nutrients and energy for humans.  相似文献

The nutritional quality of protein in quinoa seeds has been determined by amino acid assay and by animal feeding experiments. The amino acid composition of the protein in raw quinoa and washed quinoa show similar pattern. The first limiting amino acids were the aromatic amino acids thyrosine + phenylalanine giving a chemical score of 86 for protein in raw quinoa and 85 for protein in washed quinoa. Threonine was the next limiting amino acid followed by lysine. The amount of lysine and sulfur amino acids (methionine + cystine) was relatively high. In general, the content of essential amino acids in quinoa is higher than in common cereals. The animal experiments showed NPU values of 75.7, BV of 82.6 and TD value of 91.7 for the protein in raw quinoa. Results of the in-vitro enzymatic methods showed that the digestibility of the protein in quinoa is comparable to that of other high quality food proteins. The corresponding experiments carried out with samples of guinoa seeds, which have been processed to remove the saponins, showed that, the saponins do not exert any negative effect on the nutritive quality of the protein.  相似文献

Both the pericarp and the unripe seeds of the unripe fruits ofGlossonema edule were separately analysed. The crude protein content of the unripe seeds is double that of the pericarp. Investigation of the amino acids of both parts revealed slight quantitative differences with chemical scores of 40, 40 for each of methionine and tryptophan and 65 for lysine. The ratio of essential total: amino acid averages 34.5, compared to a corresponding value of 47.4 for the reference egg proteins. The analysis of the fatty acids showed that the ratio of saturated to non-saturated fatty acids averaged 73:27; palmitic acid makes up 60% of the total fatty acids. The soluble carbohydrate content of the pericarp is slightly higher than the corresponding value in the unripe seeds. Paper chromatography of the free sugars of both parts revealed qualitative differences. The oligosaccharide reffinose was detected in both parts. The ash was analysed for its content in four trace minerals: iron, zinc, manganese and copper.  相似文献

Milkweed (Asclepias spp.) is a crop grown mainly for the production of floss used as hypoallergenic fillers in comforters and pillows. The seeds end up as by-products. Milkweed seed contains 21% oil and 30% crude protein (dry basis). The oil is similar in quality to soybean oil, but there is no information on the properties of milkweed protein. This study determined the MW of major fractions, soluble classes, amino acid composition, and functional properties of milkweed seed protein. Ground milkweed seeds were analyzed for proximate composition and amino acid profile, as well as, subjected to SDS-PAGE and protein functionality tests. Reduced proteins showed eight distinct bands with MW ranging from 6.5 to 59.3 kDa. The dominant protein classes were water-soluble (22%) and salt-soluble (15%). Solubility of milkweed seed protein was lowest (12%) at pH 4, 40% at pH 7, and reached a maximum (60%) at pH 10. The protein produced substantial foam volumes, but foam stability was poor. Its emulsifying capacity was excellent, especially at pH 10, and emulsions formed were stable. Water-holding capacity and surface hydrophobicity index values were higher at pH 7 than at pH 10. These results showed that milkweed seed protein has functional properties that may find use as a thickener, protein extender in adhesives, or emulsifier in paints.  相似文献

Seeds ofCleome dolichostyla were analysed for proximate composition, mineral element contents and amino acid composition, in-vitro protein digestibility (IVPD) and calculated protein efficiency ratio (C-PER). The seeds (dry basis) were rich in oil (32.1%), protein (24.6%) and fiber (17.8%) content. The contents of various mineral elements mg/100 g) were: Ca=1970, P=493, Mg=127, Na=35, K=465, Fe=71.97, Zn=2.25, Cu=0.44 and Mn=1.45. Aspartic acid, glutamic acid, glycine, arginine and histidine were the major amino acids inC. dolichostyla seed protein accounting for half of the total amino acids. Lysine was the most limiting essential amino acid (FAO/WHO, 1973 reference pattern) with a chemical score of 45 for the protein. The IVPD of cleome seed protein was 72.2% and C-PER was 1.08 relative to the IVPD and C-PER values of 90.0% and 2.50 for the Animal Nutrition Research Council casein.  相似文献

Fenugreek seeds were boiled in water for various lengths of time (5, 10 and 15 min). Changes in weight, volume, moisture content, total sugars, nitrogen compounds, minerals, phosphorus compounds, phytic acid, amino acids and the in vitro digestibility of the seeds as well as the total solids of the boiling water were determined. Data indicated that there was an increase in both weightand volume as well as the in vitro digetibility of fenugreek seeds especially after the first 5 minutes of boiling. On the other hand, a decrease in the content of total sugars, protein compounds, calcium, magnesium, phytic acid, phosphorus and amino acids was observed. The reduction was accompanied by a gradual increase in the total solids of boiling water.  相似文献

As the search for alternative sources of food to alleviate hunger continues, this study was undertaken to determine nitrogen and amino acid content, chemical score, protein digestibility corrected amino acid score, available lysine and in vitro digestibility of 8 lesser known, wild tropical seeds, gathered in Nigeria. Results were contrasted with a tropical soybean variety (Glycine max, TGX 1660-15F). The investigated seeds wereMillettia thonningii, Gliricidia sepium, Lonchocarpus sericeus, Albizia zygia, Daneillia ogea andAfzelia bella from the family of Leguminosae,Diospyros mespiliformis (Ebenaceae) andEntandrophragma angolense (Meliaceae). The crude protein content, based on nitrogen determination, was found to be lower in the wild seeds compared to soybean, which was partly due to the relatively high content of non-protein nitrogen. With reference to amino acid requirement and digestibility in most seed samples, lysine, followed by sulphur amino acids and threonine, were the limiting amino acids. It was concluded, that these less familiar wild seed plants may be used as valuable food or feed complements. However, further investigation is necessary to elucidate potential toxic and antinutritional factors.  相似文献

氨基酸通透酶1(AAP1)是位于细胞膜上与氨基酸转运有关的载体蛋白。以转组成型启动子(UBI)的AAP1玉米植株(N7-30、N7-26)、转胚乳特异性启动子(Glu)的AAP1玉米植株(KF8-33、KF8-39、KF9-22)为材料,探究转AAP1基因玉米中游离氨基酸和可溶性蛋白质含量之间的变化关系。结果表明,转AAP1基因玉米的根部和叶片中游离氨基酸含量在抽丝期最高;根部可溶性蛋白质含量在成熟期最高;叶片中可溶性蛋白质含量在抽丝期最高。叶片中游离氨基酸含量与可溶性蛋白质含量随着生育期的变化均呈现低-高-低的趋势,抽丝期达到最高值;种子中游离氨基酸的含量与可溶性蛋白质含量呈显著正相关性。转胚乳特异性启动子玉米种子中游离氨基酸含量、脯氨酸含量、赖氨酸含量均显著高于转组成型启动子玉米种子。AAP1可以提高植物对游离氨基酸的吸收与转运,进而提高植物对氮素的利用效率。  相似文献

Amaranth was a major crop among the Aztecs. In Mexico the seed is popped and eaten with brown sugar. The crude protein content of the seed is 14±2% but its contents of lysine and tryptophan are 6.2 and 1.6 g/16 g N respectively. We developed a popping method based on a fluid bed system (FBS) whereas the traditional method (TM) is just to pop the seeds manually in a hot plate. Assays carried out were evaluation of racemization of the amaranth protein due to heat treatment, amino acid composition of the raw and heat treated seeds and a biological experiment testing whether leucine was the most limiting amino acid of amaranth protein. Male rats were fed both popped amaranths and roasted amaranth. Parboiled amaranth and casein were controls. The results were: (a) Lys, Arg and Cys were damaged in the heat treated seeds; (b) Asp, Met, Glu, Ala and Phe were racemized in that decreasing order in the seeds popped and roasted by the TM; (c) the estimated net protein retention (NPR) and estimated net protein utilization (NPU) of popped amaranths by either method were not different, but were lower than for the parboiled amaranth. The parboiled amaranth was not different from casein; (d) Leu was not the most limiting amino acid in any of the amaranth seeds tested. After Lys, sulfur amino acids appear to be the next most limiting in severely heat treated amaranth. The FBS seems to be a promising method for popping amaranth at industrial level.  相似文献

The nutritional value of three pale seeded and one dark seeded variety ofAmaranthus caudatus was studied by chemical analyses and in balance experiments with growing rats. Effects of processing: popping, toasting and flaking were also examined. The pale seeds contained about 14% protein, 10% fat, 2.5% ash, 64% starch and 8% of dietary fibre. The black seeds had a much higher content of fibre (16%). The concentration of essential amino acids were high. Lysine ranged from 5.2–6.0 g/16 g N in the grains, and the limiting amino acids were leucine followed by valine or threonine. The grains contained small amounts of tannin (0.3%) and heat-labile protease inhibitor activity, at levels typical of common cereal grains. Digestibility of protein in the pale seeds was high (87%) and quite unaffected by processing. Protein digestibility of the black seeds was lower, and the digestibility was further reduced by toasting. The biological value of the protein was similar in all products, and very high. The content of minerals varied among varieties and was also affected by processing. Phytate: zinc molar ratios were high in most products, and rats fed the amaranth samples with the lowest zinc contents were in negative zinc balance. In general, femur zinc concentrations were rather low. However, amaranth is an unconventional crop which deserves further attention.  相似文献

Two varieties of mesta (Hibiscus sabdariffa) seeds were analysed for their proximate composition. Their protein (18.8–22.3%), fat (19.1–22.8%) and dietary fiber (39.5–42.6%) contents were found to be high. The seeds were found to be a good source of minerals like phosphorus, magnesium and calcium. Their lysine and tryptophan contents were also high. Sulphur containing amino acids were limiting in this seed protein and the chemical score of mesta seed protein was 40 and 57 for AMV-2 and Bhimili-1 varieties respectively. Mesta seed oil is rich in unsaturated fatty acids (70%), of which linoleic acid constituted 44%. Weanling rats were fed with 10% mesta seed protein before and after cooking for 4 weeks. Food intake of animals receiving raw mesta seed diets was significantly lower than those receiving cooked mesta seed diets as well as the casein control diet. Protein and dry matter digestibilities of raw and cooked mesta seed diets were lower than that of casein control diet. Cooking improved the food intake, gain in body weight, dry matter and protein digestibility of mesta seed diets. PER and NPU of cooked mesta seed diets were significantly higher than the corresponding raw diets. These results indicate that cooked mesta seed protein is of relatively good quality.  相似文献

Garden cress (Lepidium sativum) belonging to the family Cruciferae grown in India, Europe and US is an underutilized crop. The edible whole seed is known to have health promoting properties. Hence, it was assumed that these seeds can be a functional food. A preliminary work on chemical composition of seeds was carried out and the possibility of using it as nutraceutical food ingredient in dietary fiber formulation was explored. Three fractions namely whole meal (WM), endosperm and bran were analyzed for chemical composition. The yield of the endosperm and the bran fraction were 72 and 28%, respectively. The WM, endosperm and bran had 22.5, 27.7 and 12.6% protein, 27.5, 33.1 and 6% fat, 30, 13.6 and 75% dietary fibre (DF), and 1193.00, 945.15 and 1934.57 mg% potassium respectively. The major protein on SDS-PAGE was of 29.5 kDa. The most abundant amino acid was glutamic acid (19.3%) and the essential amino acid, leucine was the highest (8.21 ± 0.01%) and methionine the lowest (0.97 ± 0.02%). The major fatty acid was linolenic acid (30.2%) and low amount of erucic acid (3.9%) was also present. Bran having high water holding capacity and high DF, its use as source of DF was explored. The product contained 12% protein, 4% fat and 74.3% DF and exhibited desirable functional properties such as dispersibility, gelling ability, stability, formed homogenous mild alkaline suspension and was comparable to proprietary DF.  相似文献

Seeds of Teramnus labialis (L.) Spreng.(Fabaceae), used as food by Malayali tribals in theKollihills of Salem District, Tamil Nadu in SouthIndia, were investigated for their nutritional value. These seeds were analyzed for proximate composition,total (true) seed proteins, seed proteinfractions, amino acid composition, fatty acidcomposition, minerals and antinutritional factors. Crude protein, crude fat, ash, and nitrogen freeextracts constituted 22.86%, 6.10%, 4.62%, and,58.15%, respectively, of the seed weight. The caloricvalue of 100 g dry matter of seed material was 378.94kcal. The essential amino acids lysine, leucine +isoleucine, arginine, valine and histidine werepresent in relatively large quantities. Theunsaturated fatty acids constituted more than 60% ofthe crude fat. Concentrations of minerals such aspotassium, magnesium, calcium, and, phosphorus werehigh. Antinutritional factors such as total freephenols, tannins, L-DOPA, hydrogen cyanide andphytic acid were present in minute quantities. Theseantinutritional factors are potentially eliminated using the conventional method of soaking the seeds in water,boiling with water and decanting prior to consumption.  相似文献

The effect of 40 h solid-state fermentation with Rhizopus oligosporus on selected parameters of white and coloured quinoa was studied, as compared to standard (30 h) product and cooked seeds.The reducing power (RP) and the activity against synthetic free radicals of standard tempe were higher by on average 140% (white) and 64% (coloured quinoa) than that of cooked seeds. The OH scavenging activity was increased by more than 7 fold (white), and over 2 fold (coloured quinoa). Prolongation of the fermentation caused further improvement in this potential, on average by 27% (OH, RP) and 24% (DPPH, ABTS+ assays). The soluble phenols i.e. vanillic acid, protocatechuic acid and rutin levels in 40 h tempe were significantly higher than in cooked quinoa. Fermented products contained 470% (white) and on average 150% (coloured quinoa) more riboflavin and 100% more thiamine (white quinoa) than cooked seeds. The levels of total protein, free amino acids and proteins releasable during the in vitro digestion, were improved as a result of 40 h fermentation. The essential amino acids profile of quinoa tempe was consistent with the reference pattern.The prolonged tempe-type fermentation of quinoa can be recommended as a method of the value-added food production.  相似文献

本研究利用氨基酸自动分析仪对 4 种不同颜色的香水莲花茶的水解氨基酸成分及含量进行检测与分析,并对 香水莲花茶进行营养价值评价,同时测定香水莲花茶中矿质元素含量,从而了解香水莲花茶氨基酸及矿质元素营养价 值。研究结果表明:香水莲花茶中氨基酸种类丰富,4 种不同颜色的香水莲花茶均含有 17 种氨基酸,氨基酸总量为 27.19%~31.69%,其中含量较高的为谷氨酸(Glu)及天门冬氨酸(Asp);香水莲花茶含有人体所需各种必需氨基酸, 占氨基酸总量的 28.76%~36.60%,鲜味氨基酸占总量的 25.02%~32.44%,药用氨基酸含量丰富,占总量的 60.65%~ 64.39%;香水莲花茶的氨基酸比值系数分 SRC 值为 77.67~79.94,第一限制氨基酸是甲硫氨酸+半胱氨酸(Met+Cys), 其他氨基酸含量均与模式蛋白含量相当;花茶中矿质元素含量丰富,Na、K、Ca、Mg 含量较高,且重金属元素含量在 安全范围之内。因此,香水莲花茶具有较高的营养价值和保健功能,有很大的开发潜力。  相似文献

Total sulphur was determined in seed meal of 30 chickpea and 24 pigeonpea cultivars by the wet digestion procedure and by using the Leco sulphur analyser. Methionine and cystine were determined after performic acid oxidation in an amino acid analyser. The two methods used for total sulphur determinations were highly correlated (r=0.943). Percent meal protein was significantly correlated (r=0.476) with total sulphur in chickpea but not in the case of pigeonpea. Total sulphur content exhibited a significant positive correlation (r=0.651) with sulphur amino acids of pigeonpea when expressed as percent of protein but not in the case of chickpea. Correlation coefficients between total sulphur and sulphur amino acids when the results were expressed as percent of sample were positive for both chickpea (r=0.494) and pigeonpea (r=0.534). The amount of sulphur in methionine and cystine accounted for 54.8% of the total sulphur in chickpea and for 75.5% in pigeonpea. In both chickpea and pigeonpea, methionine was positively and significantly correlated with cystine when they were expressed either as percent of sample or as percent of protein.Submitted as J.A. no. 159 by the International Crops Research Institute for the Semi-Arid Tropics (ICRISAT).  相似文献
