A rapid analytical procedure was investigated for measuring the fluoride content of deboned meat, using a specific ion electrode. The method involves a defatting procedure followed by chelation with EDTA before final solubilization and measurement. Fluoride content is determined by comparison to a standard curve on 2-cycle semi-logarithmic graph paper of fluoride ion vs. millivolt readings. The method is applicable to hand and mechanically deboned pork, beef, and poultry within a range of from 0.7 to 25.0 ppm fluoride. Higher concentrations may be measured by analyzing additional standards and extending the curve into a third cycle. The curve is not linear below 0.7 ppm. Samples less than 0.7 ppm may be estimated by extrapolation. Studies with fortified samples indicate average recoveries of 92 +/- 4.2%. The standard deviation of duplicates within the laboratory is 0.5 ppm in the range stated above.  相似文献

An ultrasonic technique has been developed for measuring the composition of chicken meat. The relationship between the composition and ultrasonic velocity of chicken meat was determined using chicken analogues of different composition, prepared from dried chicken powder, corn oil, and distilled water. The ultrasonic velocity of chicken analogues was measured at temperatures from 5 to 35 degrees C using an ultrasonic spectrometer. The ultrasonic velocity increased with solids-nonfat (SNF) content at all temperatures but had a more complex dependence on fat content. Around 15 degrees C the ultrasonic velocity was independent of fat content; however, at lower temperatures it increased with fat content, and at higher temperatures it decreased. Semiempirical equations were developed to describe the relationship between ultrasonic velocity and chicken composition. To determine the usefulness of these equations, the ultrasonic velocities of various chicken meats were measured. The compositions of the chicken meats predicted on the basis of ultrasonic measurements were in good agreement with those determined by using standard methods (r(2) > 0. 97). The ultrasonic technique could also be used to measure the solid fat content of chicken fat. This study shows that ultrasonic velocity measurements can be used to characterize chicken composition. This method has great potential for application in the food industry because it is simple, fast, nondestructive, and reliable.  相似文献

Enzyme-linked immunosorbent assays (ELISA) are described for the detection of poultry and pork in cooked and canned meat foods. These assays are based on species-specific, polyclonal antibodies raised against heat-resistant antigens. The heat-resistant antigens were isolated from raw skeletal muscle tissue of pork and chicken and were found to be immunoreactive even after heating to 120 degrees C for 15 min. The poultry ELISA could detect chicken or turkey at the 126 ppm level, and the pork ELISA could detect pork at the 250 ppm level. Samples of frankfurters, bolognas, pressed meats, canned baby foods, and canned spreads were prepared by simple aqueous extractions.  相似文献

The upper limit of fluoride concentration in water for human consumption is 1.5?ppm. Many studies have been carried out concerning the water fluoride concentration in wide areas around the world, but none have studied the change of fluoride concentration as a function of geographical coordinates and through time. This paper describes ??microvariation?? of fluoride concentration among wells separated by less than 500?m in a month. On the other hand, ??macrovariation?? is also studied describing changes among cities that are separated by more than 10?km and compared with fluoride concentrations measured 65?years ago. Fluoride concentration was measured in a wide geographical area of Argentina, which is 133,000?km2. Samples of water were collected from different regions. Macrovariation: Differences in fluoride concentration in well water among regions were found, as well as an increase in water fluoride concentration during seven decades. Microvariation: Daily water fluoride concentration in a specific area displayed a great variation in the measurements through time. In addition, wells with no more than 500?m of separation were measured at the same time and were significantly different. These results indicate that in order to determine the fluoride concentration of a region, different samples of the same area should be obtained and a sampling through time should also be done.  相似文献

A previously described monoclonal antibody-enzyme immunoassay system for dairy products was examined to determine its potential for detecting Listeria in naturally contaminated ground meats. In addition, a microtiter plate system was developed which has potential in the rapid detection of Listeria species in foods. Experience in Canada with the U.S. Food and Drug Administration procedure for dairy products, the cold enrichment procedure, and the U.S. Department of Agriculture procedure for meats is discussed. Also, the status on attempts to devise improved selective media for the isolation of Listeria species from foods is described.  相似文献

This study evaluated the effectiveness of synthetic and natural antioxidants, green tea, commercial grape seed extracts/combinations, and TBHQ, with varying concentrations of lipid oxidation of nonirradiated and irradiated chicken breast meats stored at 5 degrees C for 12 days. Fresh boneless and skinless chicken breast meats were vacuum-infused with varying concentrations of antioxidants: green tea, grape seed extracts alone/in combination, and TBHQ. The irradiation dosage was 3.0 kGy. Carbonyl values of raw chicken meat and thiobarbituric acid reactive substances (TBARS) values of raw and cooked chicken meat were determined for 0-12 days at 5 degrees C storage. TBARS values for 0-12 days of storage at 5 degrees C ranged from 1.21 to 7.3 and 1.22 to 8.51 mg malondialdehyde/100 g chicken for nonirradiated and irradiated raw chicken, respectively. TBARS values of cooked chicken ranged from 2.19 to 35.83 and 2.45 to 45.72 mg malondialdehyde/100 g chicken for nonirradiated and irradiated chicken, respectively. Irradiation increased TBARS values of both controls and plant extracts. The carbonyl content in meat lipid ranged from 1.7 to 2.9 and 1.7 to 4.41 micromol acetophenone/10 g of nonirradiated and irradiated chicken meat, respectively, and meat protein ranged from 1.4 to 2.07 and 1.41 to 2.72 micromol/10 g meat. Infusion of chicken meat with selected plant extracts is an effective method to minimize lipid oxidation and volatiles developments caused by irradiation.  相似文献

The sources and mechanisms regulating fluoride (F) in Norwegian lake waters are studied using data from regional surveys of precipitation chemistry, lake water chemistry and bedrock geology. Fluoride concentrations in Norwegian lakes range from < 5 to 560 μg L?1. Fluoride content in the bedrock is the most important factor controlling F levels in lake waters, as shown by significant differences in median value of F concentrations between lakes situated in different geological provinces. There are also weak but significant correlations between F in the lakes and components typical for weathering such as non-marine Ca, Mg, Na and K. The regional picture of F concentration in lake water shows elevated F concentrations in the acidified areas in southern and southeastern Norway compared to other regions of the country with comparable geology. There is a weak but significant correlation between F and SO4, a typical indicator of acidification in surface water. Mass balance calculations in three catchments show that F is retained in soils in pristine areas, while F output exceeds precipitation input in acidified areas. This both demonstrates the strong retention capacity for F in soils and indicates that anthropogenic F added through polluted rain is a minor source of F in surface waters. Fluoride is mobilized in acidifies areas, probably due to complexation with Al.  相似文献

适量氟对动物和人类健康有益, 而过量氟对动物和人类健康有害。为研究氟对玉米产量品质及土壤性质的影响, 采用盆栽试验研究了添加0、100 mg·kg-1、200 mg·kg-1、500 mg·kg-1、1 000 mg·kg-1 和1 500 mg·kg-1 氟(NaF)对玉米产量、粗蛋白和淀粉含量及土壤pH、水溶性钙和微生物数量的影响。结果表明: 随氟处理浓度的增加玉米产量显著降低, 减产9.9%~85.4%; 玉米籽粒蛋白质含量显著增加, 从91.8 g·kg-1 增加到108.8 g·kg-1。加入氟100 mg·kg-1 和200 mg·kg-1 时, 淀粉含量表现为下降趋势,而当加入氟500 mg·kg-1、1 000 mg·kg-1 和1 500 mg·kg-1 时, 淀粉含量表现为上升趋势。玉米不同部位氟含量基本上随氟浓度的增加而增加, 玉米根部和籽粒含氟量与氟添加量的相关性达极显著水平, 相关系数分别为r=0.998**r=0.915**; 叶含氟量与氟添加量的相关性达显著水平, r=0.852*; 玉米不同部位氟含量的大小顺序为根>叶>叶鞘>茎>籽粒。氟浓度在200 mg·kg-1 时, 籽粒含氟量已超过无公害农产品标准1.0 mg·kg-1。石灰性土壤添加氟后, 可使土壤pH 增加,从8.05 增加到8.70; 水溶性钙含量显著下降, 由2.71 g·kg-1 下降到1.02 g·kg-1。随氟浓度的增加土壤放线菌数量显著降低, 与对照相比, 降低0.92%~65.22%; 低浓度的氟可以促进土壤细菌、真菌的生长, 而高浓度的氟可以抑制细菌、真菌的生长。  相似文献

HPLC was used to analyze the content of ascorbic acid (AA) in tubers of four Korean potato cultivars (Chaju, Sumi, Deso, and Dejima), in a series of baked, boiled, braised, fried, microwaved, pressure-cooked, and sauteed potato slices from the Dejima cultivar and in 14 commercial Korean and 14 processed potato foods sold in the United States (chips, snacks, mashed potatoes, fries). The AA content for the four cultivars ranged from 16 to 46 mg/100 g of fresh weight. The distribution of AA in each of the eight potato slices (sticks, plugs) cut horizontally from the stem end of the Dejima potato ranged from 6.8 to 19.3% of the total. The corresponding distribution in seven sticks cut vertically was much narrower, ranging from 11.7 to 17.5% of the total. Losses of AA in water (pH 5.2) were significantly greater than in 5% metaphosphoric acid (pH 1.0). Less degradation occurred in water solutions of the vitamin stored at 1 degree C than at 25 degrees C. Losses of AA observed during home-processing of three varieties with low (Dejima, 16 mg/100 g), intermediate (Sumi, 32 mg/100 g), and high (Chaju, 42 mg/100 g) AA contents were as follows: boiling in water, 77-88%; boiling in water containing 1-3% NaCl, 61-79%; frying in oil, 55-79%; sauteing, 61-67%; pressure-cooking in water, 56-60%; braising, 50-63%; baking, 33-51%; and microwaving, 21-33%. The content of the Korean foods ranged from trace amounts to 25 mg/100 g and that of the U.S. foods from 0.4 to 46 mg/100 g. These results permit optimization of the vitamin C content of the diet by (a) using high-vitamin C potato varieties such as Chaju, (b) selecting sticks cut horizontally for frying, (c) baking or microwaving rather than boiling or frying, and (d) selecting commercial potato foods with a high vitamin C content.  相似文献

Biochar is a carbon-rich product derived from biomass through pyrolysis. Fluoride adsorption potential of the biochar derived from orange peel (OP) and water treatment sludge (WS) at different pyrolytic temperatures (400, 600, and 700?°C) was investigated in a batch mode as a function of pH. With respect to adsorption, two types were considered, i.e., actual and apparent adsorption where fluoride combined with metal complexes in solution were counted and not counted, respectively. The highest actual fluoride adsorption was observed in the pH range of 2.0 to 3.9 for OP biochar and 5.1 to 6.2 for WS biochar, respectively. For the WS biochar, apparent fluoride adsorption showed nearly 100?% in the pH range of 2.0 to 4.5, and then the adsorption capacity diminished drastically as the pH increased from 5.0 to 10.0. There was no significant difference between apparent and actual fluoride adsorption for OP biochar. In the Fourier-transform infrared spectroscopic analysis of WS biochar, a strong and sharp band was observed at around 2,364?cm?1 after adsorption of fluoride. Elemental content analysis by the energy-dispersive X-ray method revealed that the fluorine content was higher at pH 6.0 than at pH 3.0 and 9.0 as the results of actual fluoride adsorption. From these results, we may conclude that the biochar derived from OP and WS can be reused as an economical and effective adsorbent for fluoride removal in acidic aqueous phase.  相似文献

Mixtures of amino acids, creatine, and glucose simulating the composition of six different kinds of meats (beef, chicken breast, chicken thigh, turkey breast, pork, and fish) were dry-heated to simulate the formation of heterocyclic amines in meats. The presence of 16 heterocyclic amines was investigated in the model systems and in the six meats and their corresponding meat drippings to determine the importance of meat composition to heterocyclic amine formation. Nine mutagenic amines (IQ, MeIQ, 8-MeIQx, 4,8-DiMeIQx, PhIP, IQx, IFP, DMIP, and TMIP) were found to be present at concentrations >0.1 ng/g in some of the model systems and in some of the meats or pan residues. Heterocyclic amine concentrations clearly are affected by precursor composition in this model system, and the same nine heterocyclic amines formed in the meat and in the model system show that this is a well-controlled surrogate for the reaction conditions that occur in meats during cooking.  相似文献

The reaction between soil and added fluoride was accelerated by incubating at a high temperature. Desorption of the fluoride was then studied using solutions of chloride salts of several cations at a range of solution : soil ratios and for periods which ranged from 1 h to 4 days. Fluoride desorbed was related to the experimental variables by a regression equation. When the solution : soil ratio was small and hence only small amounts of fluoride were desorbed, decreasing the concentration of salts increased the concentration of fluoride in the solution. The concentration in the solution was lower for calcium chloride than for sodium or potassium chloride. Amongst the monovalent cations, the concentration of fluoride was highest for salts of the cations of lowest atomic number. Thus the greater the average distance between the charge conveyed to the surface by the adsorbed fluoride and the cation which balanced it, the higher the fluoride concentration in the solution. As the solution : soil ratio was increased, the differences between the cations in their effects on fluoride desorption decreased and seemed to disappear as the solution : soil ratio became very large. This contrasts with previously observed effects on phosphate. It is suggested that the difference may have arisen because appreciable desorption of fluoride occurs by exchange with hydroxyl ions rather than by escape of the fluoride ion together with its counter ion.  相似文献

Fluoride, a common phytotoxic air, water and soil pollutant is commonly released to the environment by a number of industrial processes. Agricultural soils high in fluoride are common due to long term accumulation of fluoride from multi-sources and extensive application of phosphate fertilizers. The effect of sodium fluoride (0, 50,100,150 mM) on growth, pigments content, changes in biochemical parameters, along with fluoride and other ions accumulation was investigated in Salicornia brachiata grown in solution cultures under controlled conditions. With fluoride treatment growth as fresh or dry mass accumulation increased marginally. However, higher concentrations decreased the biomass and shoot tip became blunt; margin of the shoot changed its colour to reddish brown and developed necrotic spots. Photosynthetic pigments (chlorophylls and carotenoids) content decreased, while, anthocyanin content increased significantly with fluoride treatment. Peroxidase (POX), superoxide dismutase (SOD), ATPase and acid phosphate activities were negatively regulated. In addition F?, Na+, Mn2+ and Fe2+ ions concentration increased while, K+, Ca2+ and Mg2+ contents decreased with fluoride treatment. To our knowledge this is the first report on fluoride tolerance in a marshy halophytes using as high as 150 mM concentration and the results suggest that S. brachiata is a moderately fluoride tolerant annual halophyte and may be useful to vegetate the fluoride contaminated marshy lands.  相似文献

利用给鸡饲喂50mg·kg-1和80mg·kg-1洛克沙生得到的鸡粪进行盆栽试验,研究两种含砷鸡粪对青菜和番茄中砷含量、砷富集因子的影响。结果表明,含砷鸡粪施肥后青菜和番茄植株中砷含量均明显提高;青菜砷含量、砷富集因子高于番茄植株,青菜有明显的砷富集作用;番茄植株中砷含量与其生物量呈负相关、未表现出对砷的富集作用。不同种属蔬菜在含砷鸡粪施肥后对砷有不同的摄入,青菜对砷有明显的富集现象,提示青菜在含砷鸡粪施肥后砷水平有较大影响,存在着砷超标风险。  相似文献

The occurrence of fluoride in groundwater has been reported in many countries, mainly because the excess fluoride in drinking water can lead to dental or skeletal fluorosis. Fluoride removal by coagulation with Moringa oleifera seeds, followed by separation with membranes, was investigated in this work. Artificially fluoridated water, at a starting fluoride concentration of 10?mg?L?1, was submitted to a coagulation process with aqueous extracts of M. oleifera seeds. The coagulation process was followed by ultrafiltration with membranes at different pressures. The coagulation process with 2.5?g?L?1 of M. oleifera promoted a reduction of 90.90?% in the fluoride content of the treated water, making it possible for poor communities to consume this water. It is noteworthy that the combined coagulation/filtration process using raw coagulant showed the highest values of colour and turbidity, which, however, were still below the limits set for drinking water by Brazilian legislation. The advantage of proposing a sequential process using membrane separation is that it removes colour and turbidity, caused by the use of M. oleifera as a coagulant, resulting in water that meets potability standards.  相似文献

This study was carried out from June 1995 to December 1998 to explore the current status of fluoride pollution, fluoride deposition, and sources of fluoride in Beijing. The mean fluorideconcentration of ambient aerosols in Beijing was 0.61 μg m-3, with a range of 0.08 to 1.61 μg m-3. The highest concentration (1.61 μg m-3) occurred in winterand was 20 times higher than in summer. This maximum concentration is to compare with annual volume-weighted averagefluoride concentration in Chongqing, Sichuan Province, an areaseriously polluted with fluoride. Fluoride pollution occurred inwinter in Beijing, because of the increased consumption of coal for heating, which resulted also in the highest dry deposition during winter and lowest in summer. The seasonal variations intotal fluoride were different from those of dry deposition. Thehighest total deposition was observed in summer, when 75% of theannual precipitation falls. Soil dust and coal combustion wereconsidered the main sources of fluoride in Beijing.  相似文献

Fluoride (F) accumulation and transport in soil columns near the aluminium smelter at Årdal in Western Norway are studied together with fluoride sorption capacity, and the effect of pH and ionic strength on F solubility in soil. Unpolluted soil columns of 50 cm height placed at different distances from the smelter (1–0 km) accumulated from 0.27 g F m-2 to 1.5 g F m-2 during a 5 months period. Fluoride accumulation was high in the upper 0–10 cm of the soil columns where 50–90% of the accumulated F was found. Laboratory sorption experiments showed that the sorption of added F in the Ah-horizons increased with increased distance from the smelter at Årdal, in accordance with decreasing previous pollution from the smelter. The B-horizons sorbed considerably more F than the Ah-horizons, due to higher content of Al-oxides/hydroxides. Maximum sorption of F occurred at pH 4.8–5.5. Fluoride solubility increased with increased ionic strength. Continued deposition of F may increase the availability to plants and soil organisms. Leaching of F from soil to groundwater or surface water will be strongly dependent on the presence and thickness of a B-horizon, and probably also on underlying horizons.  相似文献

Mixtures of the free amino acids, creatine and glucose, were dry-heated to model the potential formation of heterocyclic amines in meats. The formation of the mutagenic amine IFP (determined to be 2-amino-(1,6-dimethylfuro[3,2-e]imidazo[4,5-b])pyridine) was investigated by varying heating time, heating temperature, and precursors. With an optimized mixture of glutamine, creatine, and glucose, heated at 200 degrees C for 60 min, 2 mg of IFP was purified for studies to define its structure. Trideuteriomethyl-IFP was made from trideuteriomethylcreatinine in the model system for use in LC-MS detection of IFP in foods. Analysis of well-done meats purchased from restaurants showed about half to contain IFP at levels from 1.4 to 46 ng/g of cooked meat, demonstrating human exposure to this mutagen.  相似文献

Hydrofluoric acid (HF) is one of the air-pollutants known to be harmful to plants, and is emitted by industries and volcanoes. Fluoride affects plant metabolism and its effects on respiration are fully understood (2). However, little is known about the effect of fluoride on photosynthesis as has been reviewed by Chang (2). Fluoride reduces syntheses of chlorophyll and protochlorophyll, induces the degradation of chloroplast structure in bush bean and soybean (5), and inhibits the Hill reaction (1). When orange leaves were fumigated with HF, the main site of fluoride accumulation was the chloroplasts (3). Although it may therefore be presumed that the rate of photosynthesis of intact leaves decreases during HF fumigation, fluoride-effects on APS have not been fully determined.  相似文献

Total dietary fiber was determined in Japanese foods by the Prosky-AOAC method. To accomplish the analyses of unsuitable samples, we introduced a few minor modifications to the versions for (i) seaweed and fruits, (ii) cereals, and (iii) fish and meats. These modified methods were used together with the standard method to obtain results with reasonably good relative standard deviation for 231 foods and 21 groups of mixed foods. In this study, dietary fiber was defined so as not to exclude the nondigestible polysaccharide portions of animal foods. A method was proposed which could estimate more accurately the fiber components of animal foods by measuring the "nondigestible protein" of the fiber sample of the fiber sample by the Biuret colorimetric method, instead of the Kjeldahl method, to avoid deducting the values for aminopolysaccharides. In Japanese diets, the amount of fiber obtained from animals foods was less than 5% of the total intake of dietary fiber.  相似文献
