木聚糖酶耐热性研究进展

摘    要:作为饲用酶制剂的主要成分,木聚糖酶在制粒阶段处于湿热环境中的耐热性能一直是饲用酶应用研究中的重点领域,也是困扰其在饲料工业中进一步发展的重要因素。为加速解决这一问题,本文综述了近年来木聚糖酶耐热性方面的最新研究进展。具体介绍了耐热性能的实验室评价方法,并浅析了其各自的特点和适用范围,详细叙述了酶蛋白耐热机理的部分研究成果和常见的提高木聚糖酶耐热性能的优化措施。

Abstract:As a major component of feed enzymes, heat resistance of xylanase in the hot and humid environment of granulation stage has been a hot research. Thermal instability of xylanase hindered its further development in the feed industry. To speed up the solution to this problem, the research advance in heat resistance of xylanase in recent years was summarized. Characteristics of different evaluation methods and their scope of application, heat-resistant mechanism and optimization measures were reviewed.
