摘    要:屠宰后胴体pH变化是衡量羊肉品质的重要指标之一。本文主要综述了羊肉胴体pH变化的特点以及可能影响肌肉pH变化的因素,诸如品种、饲料类型、饲养方式、环境温度、性别等;此外,还对造成羊肉pH变化的根源和肌肉内糖原代谢机制进行了相关阐述,以期望为通过糖原代谢通路来调控羊肉pH提供一些参考资料。

Abstract:The change of carcass pH after slaughter is one of the important indexes to measure the quality of mutton.This paper mainly reviewed the characteristics of carcass pH change of mutton and the factors that may affect the change of muscle pH,such as breed,feed type,feeding mode,environmental temperature and sex of mutton.In addition,the causes of changes in carcass pH and the mechanism of glycogen metabolism in mus?cle were discussed in order to provide some references for the regulation of carcass pH through glycogen metab?olism pathway.
