水果提取物对羔羊生长性能、抗氧化及肉品质的影响

摘    要:本研究旨在研究日粮添加水果提取物对羔羊生长和屠宰性能、组织器官抗氧化及肉品质的影响。试验将60只体重接近的羔羊随机分为2组,每组6个重复,每个重复5只。在为期4周的饲养期间,对照组饲喂基础日粮,处理组饲喂基础日粮+150?mg/kg水果提取物。结果:粮添加150?mg/kg水果提取物对羔羊屠宰率、热胴体重、冷胴体重、内脏器官相对重量及腿长度、胸宽度的影响无显著差异(P>0.05)。水果提取物组羔羊的末重和胴体长度较对照组分别显著提高3.54%和3.61%(P<0.05)。水果提取物组肌肉的系水力、多汁性、肉色L和b值显著高于对照组(P<0.05),但滴水损失和肉色a值显著低于对照组(P<0.05)。水果提取物组羔羊肌肉和血清硫代巴比妥酸反应物含量较对照组分别显著降低41.27%和17.86%(P<0.05),但肌肉和血清超氧化物歧化酶、谷胱甘肽过氧化物酶及血清过氧化氢酶活性分别显著提高104.40%、46.71%、156.68%、40.38%和43.83%(P<0.05)。结论:在本研究条件下,日粮添加150?mg/kg水果提取物可以提高羔羊体重,改善肉品质,降低肌肉和血清脂质过氧化物含量,同时提高抗氧化酶活性。 关键词]水果提取物|羔羊|生长性能|抗氧化|肉品质

Abstract:The purpose of this study was to investigate the effects of fruit extracts on growth and slaughter performance,tissue and organ antioxidant and meat quality of lambs.Sixty lambs with similar body weight were randomly divided into 2 groups with 6 replicates per group and 5 lambs per replicate.During the 4-week feeding process,the control group was fed a basal diet,and the treatment group was fed a basal diet+150 mg/kg fruit extract.Results:Dietary 150 mg/kg fruit extract had no significant effects on dressing percentage,hot carcass weight,cold carcass weight,relative weight of internal organs,leg length and chest width of lambs(P>0.05).Compared with the control group,the final weight and carcass length of lambs in fruit extract group were significantly increased by 3.54%and 3.61%(P<0.05),respectively.The muscle hydraulics,juiciness and meat color L and B values in fruit extract group were significantly higher than those in control group(P<0.05),but the drip loss and meat color A values in fruit extract group were significantly lower than those in control group(P<0.05).The contents of thiobarbituric acid reactants in muscle and serum of lambs in fruit extract group were significantly decreased by 41.27%and 17.86%compared with control group(P<0.05),respectively.However,the activities of superoxide dismutase,glutathione peroxidase and catalase in muscle and serum were significantly increased by 104.40%,46.71%,156.68%,40.38%and 43.83%(P<0.05),respectively.Conclusion:Under the conditions of this study,dietary 150 mg/kg fruit extract can increase the weight of lambs,improve meat quality,decrease the content of lipid peroxides in muscle and serum,and increase the activity of antioxidant enzymes.
