柞蚕蛹壳聚糖对草莓的保鲜作用研究

摘    要:利用柞蚕蛹壳制取的壳聚糖是柞蚕副产物综合利用的高附加值产品。采用不同浓度的柞蚕蛹壳壳聚糖涂膜,研究壳聚糖对草莓的保鲜作用。结果表明,以质量分数为1.5%的壳聚糖涂膜的草莓,其可溶性糖含量、维生素C含量和丙二醛含量与新鲜草莓最接近,保鲜效果明显,在常温下可贮藏4 d以上。

Abstract:The chitosan extracted from the Antheraea pernyi puparaium is a comprehensive utilization product with great value.The effect of different concentration of chitosan coating on the freshness keeping of strawberry was investigated.The results showed that coating 1.5% of chitosan has the best inhibition effect on strawberry respiration.The contents of soluble sugar,vitamin C and MDA in strawberry treated with 1.5% chitosan are closest to that in the fresh strawberry.The fresh strawberry coated with 1.5% chitosan can be preserved for more than 4 days under the normal temperature.
