摘    要:真菌毒素是一类由产毒真菌产生的次级代谢产物。由于其种类多、毒性强、污染范围广的特点,对人和动物的健康存在威胁。因此建立精准、高效的真菌毒素检测技术对农产品中真菌毒素的监测和防控具有重要意义。免疫分析技术因其灵敏度高、检测速度快和对操作人员要求低等优点被广泛应用于农产品的检测。本文重点介绍了近年来黄曲霉毒素B1、玉米赤霉烯酮、赭曲霉毒素A、脱氧雪腐镰刀菌烯醇及伏马菌素B1等典型真菌毒素快速免疫检测技术,分析了各检测技术的优缺点,并概述了其检测技术产品化,展望了今后真菌毒素检测技术的发展方向。

Research progress in immunoassay of typical mycotoxins in agricultural products and its applications

Abstract:Mycotoxins are secondary metabolites produced by toxic fungi. They are very harmful to human and animals due to their diversified variety, strong toxicity and wide pollution range. Therefore, the establishment of accurate and efficient detection technology for mycotoxins is of great significance for the monitoring of mycotoxins in agricultural products. Immunoassays are widely used for the detection of mycotoxins in agricultural products because of their high sensitivity, fast detection speed and low requirements for operators. This review focused on the rapid immunoassay methods of detecting typical mycotoxins such as aflatoxin B1, zearalenone, ochratoxin A, deoxynivalenol and fumonisin B1 developed in recent years, analyzed the advantages and disadvantages of each method, summarized the commercialization of immunoassay methods, and discussed the future development of mycotoxins detection technology.
