中华绒螯蟹种质特性研究——江苏主要产区养殖河蟹生物学特性的比较

研究结果表明:江苏主要产区八大养殖品牌河蟹,雌蟹平均体重130．3 g,雄性体重170．5g,符合农业行业标准大规格等级要求,呈现长江水系河蟹特征。10月下旬的养殖河蟹雌性群体可食部分占体重的34．16％,雄性群体为32．70％;雌蟹肥满度、肌肉指数、性腺指数、肝脏指数分别为:0．48、18．47％、7．57％、8．12％,性肝比达到96．77％;雄性分别为0．56、22．49％、 2．07％、8．14％、26．33％。雌蟹可食部分平均水分含量68．68％,蛋白质含量20.37％、脂肪含量10．97％;雄蟹分别为61．27％、 16．55％、8.37％。

Study on the Idioplasm Characteristic of Eriocheir sinensis——Comparative Analysis on Biological Characteristics for Cultivation Crab in Jiangsu Main Production Area

The results showed that female crab average body weight was130.3 g and male, 170.5g in eight main crab culitivation areas of Jiangsu province. The eatable part accounted for 34.16% of the female body weight and 32.7% of the male one in late October. The female crabs ponderal index, the muscle index, the germ cell index and the liver index was 0.48, 18.47%, 7.57%,and 8.12%,respectively and the sexual gland and liver ratio was 96.77%; The male was 0.56, 22.49%, 2.07%, 8.14% and 26.33%, respectively. The average moisture was 68.68%, protein was 20.37%,and fat was 10.97% of eatable part of female crab; The one of male was 61.27%, 16.55%,and 8.37%,respectively.
