摘    要:为确定木瓜蛋白酶酶解斑鰶鱼的条件。研究了酶解温度、酶浓度、酶解时间、加水量、pH值对斑鰶鱼氨基氮含量和总氮得率的影响。结果表明:温度小于55℃。随着酶解温度的提高、酶浓度的增加、酶解时间的延长斑鰶鱼酶解液氨基氮含量和总氮得率均增加;pH值对水解效果及氮回收率影响不大。综合考虑,最佳水解条件为:温度55℃。加酶量6.0‰。酶解时间1.5h.原料:水=1:2.5,pH值6.8。此时。氨基氮生成率达26.7%。总氮得率2.28%。

Abstract:In order to determine the enzymolysis conditions,this paper deals with the effects of hydrolysis temperature,enzyme concentration,hydrolysis duration,water and pH of papain on content of amino-N and T-N proportion from Clupanodon Punctatus.The results are as follows: With the increase of hydrolysis temperature,enzyme concentration and hydrolysis duration,T-N proportion and the content of amino-N raise.T-N proportion increases with the increases of water and pH has no little effect on hydrolysis and T-N proportion.In a word,the suitable hydrolysis condition are given as hydrolysis temperature of 55 ℃,enzyme concentration of 0.6 g/100g Clupanodon Punctatus,hydrolysis duration 1.5 h,proportion between Clupanodon Punctatus and water 1∶2.5 and pH7.0.The substrate concentration need not to heat.The content of amino-N is 26.1% and the T-N proportion is 2.28%.
