水产胶原蛋白的特性及应用研究进展

摘    要:水产胶原蛋白是一种天然高分子物质,在水生动物体的皮、鳞、骨、韧带中含量较高,不仅来源广泛而且具有独特的结构和功能,其结构主要以Ⅰ型胶原蛋白为主.本文论述了水产胶原蛋白的理化特性及其应用现状,并对今后的研究方向与前景作了展望.

Abstract:Aquatic collagen is a kind of high polymer,which exists widely in the skin,scale,bone and ligament of aquatic animal.The aquatic collagen not only has extensive sources,but also has special structures and functions.TypeⅠcollagen is the main form of aquatic collagen.The physicochemical properties and application status of aquatic collagen were reviewed and the prospects for the future research directions of aquatic collagen were made in this paper.
