膳食纤维的生理功能及其提取方法的研究进展

摘    要:功能性食品是21世纪食品的主流.膳食纤维的生理功能已经成为食品领域研究的热点,并被列为保健食品的功能成分之一.本文综述了膳食纤维具有预防肠道疾病、冠心病和糖尿病,降血压,抗乳腺癌等生理功能以及膳食纤维的提取方法:粗分离法、化学法、酶法、膜分离法、酶-化学结合法和发酵法的研究概况,以供研究者和生产者参考.
